A Pork Roast Fit For The Season
CBG Christmas Party Glows in the Park

“It’s the most wonderful time of the year With the kids jingle belling And everyone telling you ‘be of good cheer’ It’s the most wonderful time of the year.” Season’s Greetings CBG Family! Are you ready for the most wonderful time of the year?
Ever since I was a kid, Christmas has always been that for me. The crisp and bright morning skies, the cool gentle breeze in the day and the sun setting before 6pm all make it special. Seeing friends you haven’t seen all year, spending quality time with the family you love and just sharing in the Christmas spirit with complete strangers you pass on the road always renews my feelings of hope in humanity and brings ideas for the future. Christmas is also a time to reflect on our lives, acknowledge that higher power for all our blessings, make amends where necessary and truly give God thanks for all that is good. This year, however, I’d like to extend my special thanks to some people who get so little praise, who are so often overlooked, but who we all, literally, couldn’t live without. No matter what you’re doing this season, whether you’re travelling, socializing, worshipping or simply resting, I’m sure that your season will be full of the usual suspects like gungo peas soup, roasted chicken, bbq pork, glazed ham, curry goat, rice and peas, macaroni and cheese, a fresh green garden salad and more. Whether you’re going to Christmas breakfast, lunch, dinner (or all 3!) at Grandma’s or Mom’s or Auntie’s place or if you are hosting them, I’m sure your days will be full of lots and lots and lots of good food. And whether you wash it down with a little sorrel, some rum punch, a beer or just some juice, do we ever stop to think how all of this ended up on our table? Where did it come from? How was it grown? And most importantly, who grew it? We forget sometimes, that our food comes from farmers. That is why, this year, I’m giving special thanks to our Jamaican farmers. Without them, Christmas just would not be the same! So if you have a good 1

meal this Christmas, I encourage you to —THANK A FARMER. And while everyone may not know, certainly we do, that farmers alone don’t get food to the table, so a very special thanks also goes out to you! Thank you to each and every member of this CBG Family. Like the farmers, you play a great part in delivering holiday cheer to so many. Your hard work, dedication and love allow families all over Jamaica to gather, eat a meal together and create memories that last a life time. Whether you’re in our grow out operation, part of a processing team, a member of our sales and distribution network or if you help to support all of these functions, I hope you feel proud knowing how much your work means to others. I am tremendously happy and thankful to be a part of this great team.. Wishing you and your families a Merry Christmas, a Happy New Year and God’s richest blessings.

Taste the Season, Unwrap the Flavour with Caribbean Passion It’s the most wonderful time of the year! It’s still the festive season, and celebrations continue straight into 2019 with good food, friends and family. This season, you’ll notice something slightly different with our hams… We’ve switched out the old red netting to a royal purple, which aligns with the brand. So, it’s easier to associate the beautiful bright purple with the brand, and spot it quickly in supermarket freezers. Ham promotions began on November 23rd in stores with samplings beginning at Mega Mart Waterloo, Loshusan and Bascho Spanish Town. Tastings only ramped up from there, at supermarkets and large wholesales island wide, right up until Christmas Eve. Caribbean Passion took the road not just to our trade customers, but we went to corporate customers and pop-up artisan expos like Moda Market and at our sister company - National’s “Jamaica Made Christmas” that led patrons to their new outlet at 9-11 2

Balmoral Road. There, you’ll find our CB Foods’ products - and certainly our hams. The overall feedback has been overwhelming; the taste and flavour that we love, others are loving too. We tip our hat and congratulate the staff at Lucea, who had worked extra hard and long hours to complete their ham production on time and get supply to the market early. And don’t forget, hams are not just for Christmas! After Christmas Day, ham is great for Boxing Day brunch or dinner, a New Year’s Eve dinner, or any other meal of the day. Our top picks ýý For breakfast, served with your favourite style of Chippenham Eggs and Johnny cakes ýý Diced and cooked down with ackee and calalloo and roast breadfruit (Roast or fry?!) ýý Ham sandwiches - always an easy, delicious favourite! Hardo bread or wheat bread? ýý Diced for a yummy ham pasta - pesto or Bolognese sauce. ýý Simply sliced and served with rice and gungo peas for dinner Check out highlights from some of the tastings. Joins Grand Opening of National’s New Outlet at Balmoral Avenue December 8 saw the Grand Opening of National’s newest outlet at 9-11 Balmoral Avenue, just in time for Christmas shopping. To officially open the new location, there was a midmorning ribbon-cutting ceremony. Jamaica Manufacturers and Exporters Association President Metry Seaga and Private Sector Organisation of Jamaica President Howard Mitchell, both participated and congratulated Gary “Butch” Hendrickson and the company on the opening of outlet. The wholesale is approximately 6,500-sq-ft facility and represents a large investment by our sister company National, that now makes shopping more convenient. Majority of the customers are bulk, not retail customers, so this provides a more convenient option for them. There 4

is large and safe parking, and customers no longer have to request products to be served over a counter; they are able to pick up items as they wish, cash and go. In true partnership, it was only natural then that CB Foods joined National at this new space. CB Foods has cobranded a designated meat and eggs section where you can now purchase your favourite brands like CB Chicken, Copperwood Pork, Caribbean Passion, Chippenham Eggs and Smart Eggs. Of course, PAN Chicken and Bad Dawg were a hit for shoppers and walkersby while ZIP 03 FM led an Outside Broadcast and kept the entertainment rolling with trivia and tons of National and CB Foods’ giveaways. CBG family, spread the word to friends and family and stop by whenever you’re next in the area.

On a sunny day in Brown’s Town, Nutramix joined our future farmers at the 19th stage of the Minard Livestock Show and Beef Festival on November 8th. Decked out in denim, the Nutramix Livestock and Sales team, along with the support of Marketing joined forces to introduce the Future of Farming to our future farmers.
the amount of students in the EduZone increased, the team divided and c o n q u e re d; e n g a g i n g students at the showground, the nearby mechanical bull, and at neighbouring booths. At the Nutramix booth, our Sales team give students a chance to ‘Spin-the Wheel’ for a chance to win Nutramix prizes.
With bright faces and curious minds, students from across the island created lines for miles at the Nutramix booth to participate in the activities scheduled for the day. From Nutramix trivia games to tag sag races, the EduZone booth was the centre of excitement and engagement. Our livestock expertise Andre Williams and Stanford Hamilton started the day with a demonstration of Artificial Insemination (A.I.) in pigs. With a full house, and peeking heads from outside the tent, it was certain that everybody wanted become an A.I. expert.
The Drink Real Milk bar was the unexpected hero of the day, providing a nutritious and delicious relief to the unforeseen heat. Not your usual brown and pink milk, many crowded the bar to taste the newest flavour on the block; Kola Champagne. While everyone tried to figure how Kola Champagne Milk was so good, the day’s proceedings continued with the announcement of the Drink Real Poster competition winners. For the first time, Nutramix tripled its sponsorship to the competition, awarding 1st, 2nd and 3rd winners from primary and secondary schools.
The Drink Real Milk poster competition was without a doubt the star of the day. With over 25 entries, our team spent two hours judging beautifully designed posters from primary, secondary and tertiary students. As
From years of rain, to one beautiful day with our young budding farmers of tomorrow. Minard 2018 was definitely a success.

S ports Da y You know what they say, all work and no play makes Jack a dull boy.
The Lucea Team took this phrase seriously as they staged their very first annual Sports Day! The day was filled with fun and laughter as the teams Green, Yellow, Blue and Red faced off in events such as sprints, sack race, potato race, Bad Dawg eating contest, tug-of-war and three legged race. The day would not be complete without sumptuous PAN chicken and jerk pork sizzling on the grill, proceeds from which went to our community outreach project as Copperwood Farms adopts St. Simon Primary in Hanover. The Lucea Fire Department paid a visit to support the worthy cause, and insisted to show their strength as they demanded a tug of war with Copperwood’s finest. However, the mighty giants were left stunned on the ground as Copperwood’s gentlemen silenced them, and bid them adieu in the big red truck. Days leading to the event were filled with arguments and boasting talks all of which were settled on the field as Green Team emerged victorious, leaving the Red Team at the back of the pack.

R oad does Christmas Outreach
…And jolly were the children from Arnold Road Basic School when the outreach team visited them Thursday, December 13, 2018. The Arnold Road Outreach team came together and made gift bags containing books, pencils and not to mention toys! After all, it wouldn’t be Christmas if Santa didn’t send toys for all the good boys & girls! The kids were happy to receive their toy cars, bikes, Spiderman, Batman and Transformers glasses for the boys, and princess and Barbie sets with cute little bracelets for the girls. The toys, Smart Eggs notebooks and pencils were packed in Live Better with CB Foods drawstring bags and given to each child with a loving smile. The Arnold Road Outreach team wasn’t the only ones in a giving mood, representatives from JACAP and Kiwanis Club of Kingston also shared the Christmas spirit providing food, music and additional gifts. It was time well spent giving back and putting a smile on small beautiful faces.

CBG’s Christmas Party Glows in the Park
Saturday December 8th saw the CBG family together at Sabina Park, decked in white, black, sparkles and everything in between to celebrate the Christmas season. Buses shuttled groups to the entrance, where we were greeted and given glow in the dark wrist bands and complimentary mason jars in true Live Better form to #GoGreen and use less plastic. 16

It was a real glow in the park event despite a slight generator hiccup. Blue lights and white Christmas lights cued guests to the various sections. Food catered by Celeste Gordon was non-stop all night. By the lounge, songbird Stephanie Hava took stage and performed, singing covers of local and international hits. DJ Narity and DJ Nico Bam Bam led the night’s entertainment by the dancefloor with oldies but goodies, leading up from the 90s to current dancehall, soca and R&B. Together, we ate, drank, danced, and laughed to celebrate the joyous season and another successful year for CB Group. To those of you who missed the party, we missed you. And to all team and volunteers who made this night one to remember, a very big

We are the Recycling Champions! At the start of September, we joined Wisynco’s corporate recycling challenge aiming to recycle 300,000 plastic bottles because we believe living better means taking care of our environment. We were one of six companies aiming to collect the most plastic bottles and win the title of recycling champions and $200,000 to an environmental initiative at a charity of choice. And as with everything CB does, we do it right. Our amazing “Eco-team” of volunteers from across the group got everyone involved; co-workers, friends, churches, communities, schools, other businesses were all excited to recycle with us. Once we spoke to our teams about the dangers of plastic on the environment, we realized people were more than eager to recycle! We brought recycling to all of our PAN events and to our Jamaica Food and Drink Festival events. Even our supermarkets recycled their plastic bottles with us. And finally, on November 28th, Wisynco’s team visited us at our Group Office with music, dancing and cake, to announce that we were the official winners of the Recycling Challenge! 20

In total, CB collected 110,592 plastic bottles. Between all the challengers, the competition collected well over 300,000 bottles! That’s 300,000 bottles that will no longer end up blocking our gullies, littering our beaches, and killing our fish. Of course, the celebrations continued at all of our facilities where we celebrated with more cake, and recognized some key individuals that made our victory possible. The prize for everyone’s hard work will go towards helping the Dare to Care Community (an apostolate of the Mustard Seed Communities) and St. Simon’s Primary in Hanover to help these communities have a cleaner environment. Congratulations everyone on a job well done! We truly could not have done it without each and every one of you. Did you know: last year Jamaica used about 600 million plastic bottles?

Copperwood A Pork Roast Fit For The Season
6 | 90 mins |
INGREDIENTS
DIRECTIONS
1 2kg Copperwood Pork shoulder, bone-in, skin on
1.
2 red onions 2 carrots
Remove the pork from the fridge for 1 hour and let come to room temperature
2. Preheat the oven to 425°F 3. Use a small sharp knife to make scores about 1cm apart through the skin into the fat, without cutting the meat. If the joint is tied, try not to cut through the string
2 sticks of celery
4. Rub the salt all over the pork and in between the scores. Turn it over and season the underside with a few pinches of salt and black pepper
1 bulb of garlic
5.
6-8 fresh bay leaves 2½ cups vegetable stock Sea salt
360 mins
Skin-side up, place the pork in a roasting tray and roast for 30 minutes, or until the skin has started to puff up and you can see it turning into crackling. At this point, reduce heat down to 325°F, cover the pork with a double layer of tin foil, put it back in the oven, and roast for a further 4½ hours
6. Meanwhile, halve the onions, carrots and celery, and break the garlic up into cloves 7. Remove the pork from the oven, remove the foil, and baste the meat with the fat from the bottom of the tray. Transfer to a board, and then skim excess fat if desired 8. Add all the veg, garlic and bay leaves to the tray and stir them into the fat then place the pork back in the tray. Place it back in the oven without the foil to roast for 1 more hour, or until meltingly soft and tender 9. Transfer the roast to a serving dish, cover again with tin foil and leave to rest 10. For the gravy, spoon away any fat in the tray, then add the stock (or replace with water, if you prefer) and place the tray on the hob 11. Bring to boil and simmer for a few minutes, stirring constantly. Once gravy is dark and thick, pour it through a sieve into jug. Season to taste, if needed 12. Serve the pork and crackling with the jug of gravy and all the trimmings and enjoy
