It’s December already and another calendar year has just whizzed pass! Personally, December is my favourite month. December is the month in which I was born, the month I celebrate my wedding anniversary each year and the month when family and friends come together for the holidays. This year, the CB hams are back with a bang and the reviews so far have been great. So, go ahead and secure your ham and make this holiday season with family and friends just special.

December is also a time to reflect on our accomplishments for the past year and to think about our plans as the New Year approaches. By any measure, 2017 has been a great year for the CB family. In late November, we completed the transition of all our certified facilities from ISO 9001:2008 to ISO 9001:2015. We were the first company in Jamaica to start the transition process with Copperwood Farms Limited processing plant, CB Egg Farms Limited, Newport Mills Limited and Newport Wharf and Storage Limited successfully transitioning in 2016. In 2017, all other certified companies within the Group completed the transition and the CB Group now boasts the highest number of ISO 9001: 2015 certified companies in the Caribbean. Then, can you remember another year when the CB Group was in the news for so many positive things? Homegrown, PAN, the Nest ‌ I think the marketing team really out did itself this year! We all must feel so proud to be a part of such a great company that is changing lives and making a difference for Jamaica. These achievements, and many more that we could mention, did not just come about by accident. Remember LEAP, FOCUS and our Golden Circle? Malcolm X said that those who prepare for the future today will own it. So, having articulated our core values, our 3-year plans and what our landing in 2025 will look like, we are now executing. 2017 was good and 2018 can be better for all of us if we remain focused and stick to the task at hand. As we close out 2017, I encourage you to think about what happened in 2017. What did we get right? Where could we have done better? How can we improve? Be determined to move closer to a better version of yourself and collectively a better version of our company. Be aware that the only thing that lies between who we are now and who we can potentially become are the sacrifices we are willing to make to accomplish our dreams. Finally, let us not forget to be grateful for what we have achieved. Know that a closed fist that does not open to give is also not open to receive. So, as we think about the holidays, let us remember the less fortunate amongst us. Be prepared to give of your time, effort and resources and experience the greater joy which comes with giving. JL: How long have you been cooking? EB: From 1994 until now I been cooking on my own. Before I cooked with a lady but ‘94 I got a shop at Faiths Pen (#27) and I would jerk chicken, cook up ackee and selfish, roast yam and pork. JL: Why did you choose to enter PAN this year? EB: To be honest I just never got the vibe before. But, in 2014 somebody I know from Faiths Pen won; 2015, another lady from St Ann made it to the final but got disqualified; then 2016 Cassius and Terry Ann both entered and they are both from Faiths Pen. I was the Second for Cassius Gayle and so it was the first time seeing the competition from the inside. We went Portland and Half Way Tree and we enjoyed it.
Then it was around politics time, the councillor come in and push me, friends push me, I get nuff support. Everybody would say ‘Eagle, the chicken it bad! Eagle, a you next year! You a go enter, you a guh win!’
JL: How has it been after PAN? EB: Faiths Pen not so busy like one time. The shop always open and running. I get some calls to cook up, mi a gwaan.
Me and Cassius did deh pon the road right through. We prepare, we practice, we train. We try different different tings with the season, just experiment and plot how to do it.
JL: How did you find the Workshops? EB: I never went.
JL: Why the nickname ‘eagle’? EB: It just stick pon me since school days. Dem seh mi coulda run. JL: How did you feel when they announced your name? EB: I did go wid a confidence. Judge seh ‘well done, every judge seh well well done!’ so I was happy, I was confident.
JL: What’s next for Eric Beavers? EB: I do mason work and farming. I farm cassava and pine but I want to set up with pigs. I’m thinking to get a loan to set up for hogs. JL: What do you do when not working? EB: Always fi a work because I also do construction, so when I not in the field, not out as tall, I just amongst mi friends a talk and reason. I nuh stray from my community unless is for work.

Hot off the heels of Jamaica Food & Drinks Festival came the first ever open-to-the-public Restaurant Week launch. CB Foods was a Top Sponsor this year, and our growingly popular CB Foods Village was a sight to behold that Sunday afternoon on the lawns of Devon House. Patrons were offered juicy Bad Dawg Sausages which never fails to deliver where flavour and service are concerned, and Bonafide Burgers which is gaining brand equity in the market. Oh! And guess what‌ Bonafide Burgers has its very first cart! Straight Beef and Spicy Scotch Bonnet burgers are a hit! Restaurant Week then ran from November 10-17th where our other brands also stole the show, such as with the Food Fight between Fromage Brasserie and 876 Terrace Bar and Grill, powered by Copperwood Pork where the 2 restaurants brought the best pork dish forward, and left it up to the public to vote. 4

The CB Group is proud of how this dream has become a reality, to not just improve the well-being of our Group, but to shape Kingston as a destination city. This year, the team expanded, and strategically expanded our reach, both locally and internationally, collaborating with international media, bloggers and the JTB to spread the word. We realized JFDF’s potential to truly shape Kingston as a destination city, and cement its place on the culinary stage. It was 6 days of unique food events to prove that our local chefs and restaurants can go head to head with anyone, anywhere in the world. Nutramix support remains strong @
Minard
Over 6000 students made their way to Minard Estate in St. Ann for the 18th staging of the Minard Livestock Show on November 9. The show is hosted by the Jamaica Cattle Breeders Society in association with the Ministry of Industry, Commerce, Agriculture and Fisheries, AgroInvest, Jamaica 4-H Clubs and of course, Nutramix, who is the show’s main sponsor. The-BIG-Feed sponsored $2.5M which contributed towards the overall execution of the show, as well as towards goats, rabbits, gate prizes and livestock housing. Nutramix also created an “EduZone” booth to educate the

students about the various types of cattle in Jamaica, and about the importance of revitalizing the industry. At the Nutramix booth, children learnt about the different feeds and supplement-products, and were engaged throughout the day with games and activities including a Drink Real Milk Poster Competition, School’s Challenge Quiz, Farm Pictionary, Milk drinking competitions and Bag-Feed Races. Oh, needless to say that the DRM booth was a major hit! On a hot day outdoors, what’s more refreshing than an ice-cold, strawberry, chocolate or Kola Champagne real milk mix?

Celebrating 6 years of
It was a beautiful, sunny Sunday morning at the UWI Mona campus on November 12 that saw corporate Jamaica throwing its weight behind the University’s efforts to assist students wishing to achieve a tertiary education. The event, now 6 years strong, attracts thousands of corporate and individual running and walking enthusiasts. Wheelchair participants also turned out in numbers, showing their athletic prowess as many got to the finish line faster than many the able bodied participants! How inspiring! Khadine "Miss Kitty" Hylton led activities on stage, and sponsor‑partners had breakfasts being served at their respective booths. Thank you to all those who registered, and encouraged friends and family to register as well!

The series of events that included PAN in Portland, St Elizabeth and Half Way Tree, Meet Street on the beautiful strip by the Waterfront Downtown, and the launch of Restaurant Week saw several thousand patrons collectively. They saw the colourful branding and massive stages, they tasted the flavours of our foods and they experienced the fun and festivities. What they didn’t see as often were the CB Foods’ soldiers who behind the scenes were busy ensuring that everything was always in place so the shows could go on smoothly! The volunteers went for a lyme on November 28 at Ribbiz where they ate and drank and had a good time. Everyone received movie vouchers, and there were 5 All-Stars who got an extra token of appreciation for their extra special efforts. our community — cb foods volunteers lyme

Bacon wrapped sorrel pimento ham Ingredients:

1. Preheat the oven to 350°

Boneless leg ham 5 pounds Streaky bacon 2 packs Fresh sorrel 1 cup Spicy sorrel chutney 2 teaspoons Pimento crushed 1 tablespoon Cloves crushed ½ teaspoon Unsweetened sorrel juice 1 cup Honey ½ cup
2. Wrap the ham completely in two to three layers of foil 3. Place in a baking dish half filled with water and warm in the oven 6 minutes per pound 4. A 5 pound boneless ham will take about thirty minutes to warm all the way through to the centre 5. In a saucepan make a rich sauce using the fresh sorrel, sorrel chutney, sorrel juice, honey, pimento and cloves 6. Once it’s slightly thick remove from the heat and set aside 7. Remove the ham from the oven, remove the foil and wrap completely in bacon pinning with toothpicks to secure 8. Place in a 470° oven to cook the bacon until almost golden for 8-10 minutes 9. Pour the sorrel glaze over the ham and put back in the oven for another 5 minutes 10. When the bacon is crispy and sauce is thick, remove from the oven and serve

Copperwood Roast Pork Party Kebabs Ingredients: • 2kg boneless pork loin, or 2x1kg pork loin joints, at room temperature • 1 small bunch fresh rosemary, leaves picked, plus a few more small sprigs • 3 heaped tablespoons fennel seeds • sea salt • freshly ground black pepper • 3 cloves garlic, peeled and finely sliced • 10 handfuls mixed salad leaves (such as baby chard, rocket, watercress and red or white chicory) • 1 small bunch fresh flatleaf parsley, leaves picked • 2 fresh red chillies, deseeded and finely chopped • 2 fresh green chillies, deseeded and finely chopped • 16 oz fat free natural yoghurt • 1 lemon • extra virgin olive oil • 10 pitta breads

Directions: 1. Preheat your oven to 500°F. Lay the pork loin out on a cutting board and use a sharp knife to score the skin about at 1cm intervals. 2. Mix well together the rosemary leaves, fennel seeds, garlic and a tablespoon of sea salt and then rub it all over the pork. Place the pork on a roasting tray, scatter with the whole rosemary sprigs then put into the oven. Reduce temperature to 400°F and roast the pork for 1 hour 20 minutes or until crisp and golden. If the crackling isn’t as crisp as you would like it, remove the skin from the pork and place under a hot grill for 5 to 10 minutes. 3. Meanwhile, get your salad together. Wash and spin-dry all of your leaves then put them in the fridge until you are ready to go. Next, make the yoghurt dressing. Chop the parsley leaves then add to a bowl with the chillies and yoghurt. Add a squeeze of lemon juice, a drizzle of extra virgin olive oil and a pinch of salt and pepper. Mix well then set aside. 4. Just before you want to serve the kebabs, put the pitta breads in the oven for a few minutes or warm them in a griddle pan. Serve the pork on a board with a big carving knife, salad leaves, a pile of warm pittas and bowls of chilli yoghurt.
