T

o those living in the Midwest or the North, Charleston seems like a year-round pool party—a veritable fest of tanning, crabbing, and barbecuing. Of course, we know better. Last winter was particularly frosty, making this spring and summer a welcome change. So, now is the time to live up to what the rest of the country expects we do every day of the year—soak up our incredible surroundings. The first step in that venture is to check out Recreation Education, a feature which includes lessons about how to beautify and functionalize your outdoor living areas. Of course, with the summer heat comes the potential for storms, so also be sure to pick up a few tips from home professionals in the business of protecting homes from inclimate weather in Hurricane Safeguards. y granny made biscuits—dozens upon dozens of delicious biscuits—for over eighty years. She fed them to countless school children in the 1960s when she served as one of the lunch ladies

She froze cookie sheets full of them so that my mom could claim the signature treats as her own creation (and effectively woo my dad with her faux baking abilities). When I was a child, Granny would remove her dented gold rings, mix the flour, milk, and Crisco with her wrinkling hands, and let me mold the dough into a myriad of imaginative shapes before browning them

distributors in the Southeast to sell freezer-to-oven delights, written a cookbook, and developed the plans for Callie’s Hot Little Biscuit, a specialty shop opening this summer on King Street. Taking a moment away from running her business and raising her three joyous daughters with her husband, Carrie chatted with me on her back porch about the undeniable connection between food, family, and the feeling of home.

Faux Your House Originally, faux painters gained their job title by specializing in the replication of building materials—like marble, wood, and stone—using merely a paintbrush. Today, the craft has evolved, and modern faux painters use their skills not only in the traditional manner, but also to apply intricate wallpaper-like

patterns and a multitude of textures to blank walls using high-quality paints. The team at CH+D was delighted to sit down with Mike Keegan of Palmetto Faux Studio to discuss his business and his craft.

What is your background in faux painting?

I started out painting Victorian homes in Oregon many years ago. When I moved to Florida, I wanted to use my artistic talents, so I took classes at Faux Effects International in Vero Beach. While there, I learned all the basics. Here in Charleston, my wife, Patricia, and I work together to bring customers a cohesive look. Patricia is an interior designer, and she uses her expertise at each job to match wall paint or plaster with the interior décor.

With all of these options, how does a customer go about selecting a custom faux finish? We help every step of the way, beginning with a consultation to assess the homeowner’s needs. We provide free custom samples of the different finishes that we feel will best suit the tastes and needs of the customer. Once a decision has been made, we begin working to apply the paint and design the room.

What are some examples of the work that you have completed in the Lowcountry? We’ve done all types of painting and finishes from A to Z, including abalone, animal print, crackle, leather, marble, metallic, patina, slate, stencils, stone, and suede. These textures and prints can be applied to anything from walls and ceilings to furniture and

Venetian plaster is also a unique way to finish walls. Do you work with this material? If so, what makes its application unique? Yes, I do install Venetian plaster, which is an often-shiny wall coating that appears textured but is smooth to the touch. Authentic Venetian plaster is made from

marble dust and ground limestone. It is handtrowled onto the wall in layers, burnished, and polished. The look is classic, and the plaster gives the walls a distinctive texture. For more information, contact Palmetto Faux Studio at (843) 214-5253 or patinapat@gmail.com.

He Said: He Said: Salt systems are a great option for pool owners because they eliminate the need to handle chlorine. The system produces sodium chloride, which is the most common compound found in chlorine (so it still effectively sanitizes your pool). The salinity makes the water feel softer on the skin and less harsh on your eyes and hair.

He Said: I really enjoy designing and building both. To add a third category to that, I’ve had the opportunity to build some amazing elevated pools. These pools are a fantastic option when there is not a lot of yard space.

He Said: Winterizing enables pool owners to let their equipment rest and save energy. Covering the pool during the winter also keeps leaves and debris out. However, maintaining service year-round allows the homeowners to continually enjoy the beauty of their pool. It will also be conveniently ready for use on the first day of summer.

She Said: Salt System or MineralChlorine Sanitation?

Freeform Shape or Rectilinear?

Winterize or Maintain?

She Said: If a homeowner would rather utilize chlorine or is worried about the effects of erosion caused by the salt content, I recommend using a mineral-chlorine combination. This option allows pool owners to use less chlorine than traditional treatments. The minerals lead to cleaner pool water, and fewer irritants are present since less chlorine is required.

She Said: Freeform pools are able to really take advantage of nature. Rectilinear pools will maximize the surface area when compared to a free-form pool with the same length and width. So, I really like both styles of pools, depending upon the space and the homeowners' tastes. She Said: In particular, I’m a fan of automatic pool covers, which make winterizing the pool a breeze (if you chose to do so). With the turn of a key, your pool can be covered in less than a minute, which provides peace of mind, knowing you have a safe environment for small children.

HIDDEN TREASURE

The 1950s decade was the heyday of children’s toys. With World War II and the days of careful rationing in the past, toy companies began to mass produce children’s toys with the help of a handy, new substance: plastic. Much like today, plastic was inexpensive for manufacturers to purchase and use, and as a result, toy sales began to skyrocket. Many timeless treasures, such as Play-Doh, Mr. Potato Head, and the universally recognized Barbie, were invented. Originally created as wallpaper cleaner, Play-

Doh found its way into children’s hands as an alternative to clay. Mr. Potato Head was invented to help kids have fun with their food. And Barbie, well, Barbie was an outlet for little girls’ imaginations. The list goes on and on. Local antique shops take you back in time to an era of childhood simplicity by selling everything from vintage puzzles and dolls to well-made yard games. the Martins of Tom Martin and Son General Contracting Tom and Tommy Martin share more than just a name and a father-son bond; they share a business and a passion for constructing quality custom homes in the Lowcountry. Tom began his career in the building industry in the mid-1980s, and his son, Tommy, developed his own skills through years of observing and mimicking his father’s craftsmanship. In 2004, the duo established Tom Martin and Son General Contracting. Take a look at the family’s Wadmalaw Island home built with the Martin men’s trademark precision and vision.

The Martins’ house had to be large enough for the growing family to gather, so Tom and Tommy installed a zinc island that seats four people and left enough space adjacent to the kitchen to fit a large dining-room table. In order to create an old-world feel, they chose distressed custom cabinets and reclaimed barnwood for the walls and range hood.

The great room features a stone fireplace (a lifelong wish of Tom’s wife, Dawn) with a hand-hewn timber mantle and a ceiling lined with the same barnwood found in the kitchen.

Accentuated by stained-concrete floors and countertops, the claw-foot tub is the focal point of the master bathroom. The mirror continues the rustic theme; it is framed with the barnwood found in other areas throughout the house, making each room look cohesive and connected.

Liberty Cedar creates top-quality, naturally decay-resistant exterior wood products such as Endure Trim, decking, wood roofing, and siding products.

THE BACKSTORY:

Liberty Cedar, originally formed by Dave Goss, Brock Goss, and Joe Davies in Rhode Island, expanded their operation to the Lowcountry with the help of Russ Fogg six years ago. The owners saw an opportunity in the Southern sea-island millwork industry to market high-end specialty woods.

THE PROCESS:

For every project, one of Liberty Cedar’s five Charleston employees calculates radiuses, makes templates, and either sends out the fabrication job to a local millwork shop or performs the millwork in-house. What sets Liberty Cedar apart from the rest of the lumberyards, however, is that they only focus on selling high-quality woods (such as Western Red Cedar, Alaskan Yellow Cedar, Douglas Fir, and Garapa) to high-end builders, architects, and contractors. Their process results in products that have a 30-year warranty on the treatment process and substrate and a 15-year warranty on the primer. In addition to millwork, Liberty Cedar offers a dry, stable exterior trim product (Endure Trim) that is not as likely to check or crack like most other exterior wood products made from wet, pressure-treated wood. Savings are incurred when subcontractors do not have to spend extra time fixing the flawed, checked wood with Bondo, extra sanding, and priming.

Jessica Pares of New Leaf Tree Service

8:45am

For the first weekend in a long while, Jessica and her husband, Marcello, did not work, so there are an abundance of phone messages that Jessica must return on this Monday morning. She attributes the unusual quantity of messages to not only the weekend, but also the impending hurricane season. Around this time, homeowners are going outside more and noticing what needs to be done to their yards.

10:20am

Jessica travels to Mt. Pleasant to give an estimate. The homeowners want her to analyze the health of their trees. She concludes that their maple tree is being eaten by borers, which have made the root system extremely weak. She writes an estimate for tree removal, discusses it with the homeowners, and emails them a statement.

11:55am

Already on the job earlier in the morning, Jessica’s crew works to take down a few weakened trees (that are far too close to the homeowner’s roof ) in a planned West Ashley community. When developing new neighborhoods, builders often clear cut the land, leaving few trees behind. The remaining trees’ root systems are greatly weakened by this process. The trees left in the neighborhood are tall and skinny with leaves only near the top (because they were once vying for sunlight in a dense forest). Thus, the trees are top-heavy and vulnerable to storms.

Jessica Pares, otherwise known as “Tree Girl,” became a certified arborist through the International Society of Arboriculture (ISA) with the hope of maintaining the health of Lowcountry trees—big and small. The CH+D team shadowed this pro on the go on a typical day of tree diagnosis, trimming, removal, and composting.

Jessica arrives at the job site in West Ashley to make sure everything is going smoothly, and she follows up with the homeowner. While New Leaf’s crew member, Moses, belays himself up the tree, Jessica verifies that the crew is pruning to ISA standards and is cleaning up the property sufficiently, which involves a lot of raking, blowing, and repairing of turf. She takes it upon herself to pick up some remaining sticks and bark.

2:30pm

The team at New Leaf takes a trip to the Bees Ferry Landfill, which composts about 20,000 pounds of yard waste each year. This waste will be turned into rich soil and reused in landscapes across the Lowcountry. Jessica is insistent upon recycling the tree debris that they collect from each job. In fact, for every tree that New Leaf cuts down, Jessica donates money to the Arbor Day Foundation to replace that tree somewhere else in the world.

4:00pm

To wrap up her day, Jessica arrives at another residential estimate. Her conclusion? The trees can be saved through a comprehensive plan, including the removal of dead wood, soil excavation, and fertilization. Jessica (a self-appointed tree hugger) is proud to prevent the removal of soon-to-be-healthy trees.

Freedom to Flow When flood waters rise, they exert pressure on your home's foundation, which can cause significant damage to the structure. An intelligent way to reduce the impact a flood could have on your home’s infrastructure is to install Smart Vents. Add a Well-Protected Sanctuary The enjoyment of a backyard space is greatly increased when homeowners can see the greenery, feel the breeze, hear the birds, and smell the earth. But, so often, those pleasant experiences are tainted by both bugs and weather. An addition of a screened-in porch solves those common Lowcountry complaints and adds value to the property. Which exterior element of this home that you built do you favor the most? My favorite exterior feature is definitely the front entry. I love timber framing, and to be able to incorporate that into one of my homes has been an extremely satisfying accomplishment for me. The entire exterior of this house is packed with detail. All of the handmade corbel brackets, shed roofs, cantilevered decks, and open rafter tails definitely make the house stand out.

How does the interior of the home illustrate your company’s custom work? In every home I build, I try to incorporate something different— something just from me. The master bedroom is a great space that captures an enormous amount of light and has 18-foot ceilings. From the beginning, I knew what I wanted to do with it. I told the homeowners that they could not come into the room until I was done, and they, being the wonderful people they are, agreed. When it was finished, the looks on their faces—seeing it for the first time—were priceless. It assured me that the design and hard work were a success.

In building this particular home, what were some of the obstacles you encountered? The greatest challenge faced when building the house was the weather. When it rains as much as it has this year, all of the lumber becomes saturated, and after it dries, it tends to move. I am very meticulous about straight walls, so as the lumber would move, I would replace the timbers. But I have to admit, in the end, after it was all said and done, to be able to walk in the home and see that everything is perfectly straight, makes all of those days worth it. What stands out about this Oak Terrace Preserve home? David: The vaulted third-floor guitars-and-martinis room opens onto a great living roof deck that provides a natural outdoor space and allows the homeowner to be close to the oak trees and stars at night. The home has many green-building features too, such as enhanced storm-water management, advanced air filtration, and increased insulation.

What was the greatest challenge in designing and building this home? David: The greatest challenge in building this home was working around the grand live oak trees. Amy and I knew the lot was special and that it would take an excellent design to preserve and take full advantage of those trees. So the house began with a small footprint; we designed vertically to avoid the trees’ crucial root zones as much as possible. We wanted to provide appropriate shelter for the homeowners, while maintaining optimal tree health.

Why should someone looking to build a home use the services of an architect? Amy: Placement and orientation of a house on a lot is one of the most important decisions, and often, ready-made plans do not consider a lot’s characteristics or limitations. An architect has knowledge beyond plan design and takes into account the natural surroundings, energy-saving features, and potential structural issues (foresight of which is especially important in our area because of the potential for floods, earthquakes, and hurricanes). Designer: Jennifer R. Mendelsohn, ASID Company: J. Rhodes Interior Design, Inc. Credentials: Jennifer has a bachelor of fine arts degree in interior design from Winthrop University. She has been a member of the American Society of Interior Designers (ASID) since 1996 and currently serves as the financial director of ASID Carolinas Chapter.

For this project, what ideas did the homeowners bring to you, and how did you transform those ideas to create this space? After approaching other designers, the clients had nearly given up on their dream of achieving a contemporary feel inside their 1950sera ranch-style home. With a modest budget in mind, they wanted their house to be ideal for entertaining, playing music, and enjoying fellowship. The couple already owned the piano, many of the furnishings, and some of the artwork, so it was my job to coordinate the new furniture, colors, and accessories with the existing pieces. Drawing inspiration from a painting (now hanging above the living room fireplace), the homeowners and I chose red, purple, and turquoise to be the dominant colors, which are set off by the stark white walls.

So many homes in the Lowcountry have a bland color palette; how did you design this house’s interior to be strikingly colorful, yet timeless? The challenge was not in the use of bold colors; I enjoyed working with such a strong palette. It was most important to curate the items in the room appropriately so that it did not appear as if a crayon box exploded. The homeowners and I were drawn to the mid-centurymodern style, so I utilized streamlined furniture and unique accessories to achieve a timeless look.

What did you enjoy most about this project? I really enjoyed creating a lively, modern interior that is the antithesis of a typical Southern home. hen homeowners seek to install new technology in their homes, they almost always have two specific needs; tech expert Russ Pritchard of Audio Warehouse says, “Home systems must be intuitive and out of sight. I get these requests on almost every project.” Such were the requirements of two Lowcountry vacationers seeking to build this resort-style abode for their evergrowing family to enjoy. The technology’s user interface had to be simple enough for guests to operate and understand, yet hidden so as not to distract from the exquisiteness of the home and its surroundings. To accomplish these goals, Russ and his team installed a system that he stands behind 100 percent—Savant (a term

that means “knowing” in French). Savant’s Apple-based app is easy to use and downloads directly onto a mobile device. It truly acts as the all-knowing brain of the house, allowing the homeowner to control and monitor everything from the lighting to the security cameras. The keys to the Savant system working efficiently are the structured wiring, a strong WiFi signal, and hidden equipment racks. hen anyone asks why she and her husband left their home state of California, Jana Connolly always laughs and says, “California.” She clarifies, “There are high taxes and lots of traffic. My husband, Mike, and I were looking for a place where we could eventually retire, and that place needed be near the water because we’re boaters. We found the Lowcountry, particularly Daniel Island, and fell in love with it.” To fully transition into Southern culture, the Connollys needed something for their home that exuded Dixie charm: front-porch rocking chairs. Upon their arrival to South Carolina, Mike and Jana began researching local home décor companies to find furniture and accessories to punctuate each area of their newly constructed house. For the rocking chairs, they found Backyard Retreats, a local out-

porch, but also a screened-in back porch, a balcony, and a cozy windowseat alcove.

door furniture business owned by entrepreneur Sharon Campbell. Jana explains, “We immediately connected with Sharon and her personality. Mike and I started out just buying our rockers, and then we ended up going there on a weekly basis.” Sharon helped the Connollys furnish not only their front

Although screened in, the back porch is still highly susceptible to pollen accumulation. The wicker furniture that Sharon recommended to Mike and Jana is incredibly easy to clean. Mike expresses, “I can just throw the fabric covers into the washing machine on a gentle setting—with no spin cycle—and they come out looking like new. es. Constructed with the same materials used on top-of-the-line boats, the chaise lounge and two chairs hold up against the wear and tear of Charleston’s coastal climate. Sharon also created a blue-and-yellow bird-themed window seat in Jana’s office to top off the home’s design. Though choosing outdoor fabric for an indoor application may seem like a strange concept, Sharon explains its practicality. She instructs, “Jana has a great view and beautiful light coming in through the windows.

Blue Hue Kitchen Redo Murrells Inlet homeowners Josh and Jessica Tew completely renovated their kitchen using befitting splashes of intense color.

“W

e have never been afraid of color,” states Jessica Tew, owner of a recently remodeled Murrells Inlet kitchen that takes advantage of her brave love of color. Jessica and her husband, Josh, have always liked experimenting with bold shades because Josh is red-green colorblind (which is surprisingly very common); one of the few hues he can vividly distinguish is bright blue. The couple already had an azure kitchen, but the cornflower-painted walls (as well as

CH+D • Summer 2014

the kitchen’s footprint) were dated. So, working with Charleston-based company Authentic Kitchen and Bath Concepts, the Tews set out to recreate their kitchen to be both colorful and modern. Brenda Romito, kitchen designer extraordinaire of Authentic Kitchen and Bath, was delighted to work with homeowners who were so excited to veer away from monochromatic tones. Brenda explains, “The Tews’ home was already contemporary and vibrant, so we opted

to carry this style over to the new kitchen.” To achieve the look, the team chose to install flat-front cabinets (in Sherwin-Williams’s “Scanda” blue) around the range to accent the neutral cabinets in the rest of the kitchen and the lime green walls. An intricate matchstick mosaic tile backsplash and Dupont “Zodiaq” countertops in “Cygnus Pearl” complete the kitchen’s modern design. The remodel brought not only aesthetic appeal, but also functional updates to

the kitchen. The Tews wanted more storage, and they needed a more practical layout to achieve the oftdesired sink-refrigerator-range work triangle. The large island provides the sought-after storage space and helps to facilitate that triangle of convenience. Jessica describes, “In the island, I have a place for my cookbooks and organized recycling. It holds my dishwasher and sink. I love that they are now located so close to where my dishes are kept—as well as

near the stove and ovens. It makes cooking a more streamlined task.” The ease of use and the updated, dramatic design have made this room a new favorite of Jessica and Josh. Of the finished project, Brenda remarks, “The homeowners were ready for a big change, and a big change is exactly what we gave them.” v

Huger homeowners take a cue from the West Coast when expanding their home to make room for their adult daughter and pet poodles.

W

hat were once rare, scattered mother-in-law suites are now quite common multigenerational additions. California and Texas have them popping up everywhere. And Alan Wheeler, owner of Coastal Design Builders, is at the forefront of this new housing movement that he sees coming to the Lowcountry. His first multigenerational project was for a poodle-breeding couple located in the far reaches of Huger. The homeowners had built their house only three years prior, but they wanted to expand it to include a space for their daughter, who enjoys helping her mother with the poodle operation. “The mother and daughter are re-

ally close,” says Alan. “The mother breeds, grooms, and raises poodles. Her daughter is an executive in the Charleston area now, but she also judges poodles in competitions. So, they have similar interests.” The homeowners’ plan was to give their daughter an independent space, including a fully functioning kitchen, master bedroom, walk-in closet, and laundry room, so that she could have her own home but be close to her parents and the family’s prized pups. Coastal Design Builders was able to fulfill those requests within a 900-squarefoot addition. Alan recalls, “When I was looking at the house, I realized

that there was vinyl siding and really nice 30-year architectural shingles, so we could remove the siding, and fairly seamlessly frame to the original house. And because the building is only three years old, there was no fading with the shingles, making them easy to match. Additionally, we were able to install the same windows that


are featured in the rest of the house.” The only areas in which the family and Alan decided to deviate from the style of the original home were the finishes— cabinetry, lighting, and bathroom fixtures. Intentionally, Alan suggested utilizing contemporary finishes in order to appease the younger tenant. For instance, the mother chose darker cabinetry for her own kitchen, but (with Alan’s help) she chose off-white painted cabinetry with an applied glaze for the addition. In order to connect the two homes, Alan cleverly suggested installing a

Dutch door between the poodle-grooming room and the daughter’s addition. So, just as the love of raising dogs connects the mother and daughter, the dog-grooming room connects each woman’s side of the house. After only a few months of construction, the result is an addition that fits the daughter’s personality and looks like it was there from the start. v

Head above Water An elevated pool (with all the bells and whistles) was added to this house so that the homeowners could take advantage of their Molasses Creek views.

D

oodling pools on napkins and notebooks since childhood is not what qualifies Shawn Thomas as a premier pool designer, builder, and plumber, but it sure shows his decades-long commitment to the industry. What does make Shawn qualified is the time he’s spent working on and studying swimming pools. Shawn grew up in Phoenix, where (from an early age) he demonstrated an eagerness to learn his father's craft­—building durable, handsome, functioning aquatic settings. This is why he and his wife, Jen, named their relatively new com-

CH+D • Summer 2014

pany just that. Their goal, after years of working for other pool companies, was to bring a fresh take on pool design and a fair price to the marketplace. “We’re not trying to be the biggest in town. We are confident that we’re the best,” jokes Jen. “We don’t take short cuts, and we don’t nickel and dime.” These reasons, among others, are why a Park Island homeowner chose the pair for her extensive elevated-pool project. The majestic home overlooks the marsh, so Shawn suggested raising the pool in order to take advantage of the

Shawn adds, “Also, if you’re afraid of snakes, alligators, bugs, lizards, or crabs, being up in the air gives you a better sense of security and privacy.” Additionally, the elevated pool and decking area allow the homeowner to combine her screened-in porch atmosphere with that of the new pool. As for the accoutrements, this pool

is stocked with vanishing edges, tanning ledges, and spillways. “It’s not only a tanning ledge,” Jen excitedly explains. “It serves well as a place for hors d’oeuvres, drinks, and additional seating. We put in a sun ledge that is about 18 inches deep. Shawn also ran a bench along the whole length of the pool (and a custom lounger in the corner) so that the homeowner could sit and look out at their view.” The most impressive feature that was selected, however, was the Pebble Tec “White Pearl” finish, which is flecked with seashells and boasts a 15-year warranty. “Their

warranty is the best in the industry. When you have a concrete pool, every 10 years or so, you would normally have to resurface it, which can be expensive. This takes the frequency of that obligation away because the product will easily last 20 to 25 years,” states Jen. After the project was complete, Shawn and Jen had racked up another happy customer, only adding to the testimonial fuel that powers their company. v

New and Improved River Reach homeowners chose to embrace a new construction method to improve efficiency, while maintaining the style they desired.

J

ust as there is more than one way to skin a cat (apparently), there is also more than one way to build a house. The style that most people are familiar with—the way homes have been built in the United States since the late 1800s—is casually called stick style, referring to the wood studs used to frame a home. While that does not sound very sturdy, many historic stickbuilt homes still stand on the peninsula. They are beautiful, but to their detriment, they are not very energy efficient.

This weakness in stick-built homes led the building industry to invent Insulated Concrete Forms (ICFs), which not only mirror the beauty of a stick-built home, but also provide an R-value of 50. The R-value measures the resistance a material has to heat transfer. To offer some perspective, traditional wood-framed homes (insulated with standard batt) only give an R-value of 19. Amvic, a Canadian company, was the ICF manufacturer of choice for lo-

cal builder Cook Bonner Construction on this cutting-edge residential project on River Reach in Mt. Pleasant. Cook Bonner branched out and began building with ICFs when the homeowners and architect, Anita King of Ink Architecture, requested the alternative. “There was a lot of input with the house from Anita and the client. We embraced it,” says Cook Bonner’s David Ebeling. “It’s a super house. It’s stronger because it is solid concrete.”

In order to completely insulate all sides of the home (not simply the walls), Cook Bonner chose to employ the team at Energy One America for their spray foam and encapsulation expertise. “Even with ICF walls, the roofline is still made of wood sheathing,” explains Dean Paulk of Energy One America. “That is where we come in. We increase the efficiency of the home by insulating the roof with spray foam. By encapsulating the crawlspace, we’re keeping all the outside elements away from the

Carrie Morey of Callie’s Charleston Biscuits Talks Entrepreneurship, Parenthood, and Homemaking at Her Family’s Old Village Abode Story by Megan J. Busch | Photography by Patrick Brickman

M

y granny made biscuits—dozens upon dozens of delicious biscuits—for over eighty years. She fed them to countless school children in the 1960s when she served as one of the lunch ladies at

Murrells Inlet Elementary School. She froze cookie sheets full of them so that my mom could claim the signature treats as her own creation (and effectively woo my dad with her faux baking abilities). When I was a child, Granny would remove her dented gold rings, mix the flour, milk, and Crisco with her wrinkling hands, and let me mold the dough into a myriad of imaginative shapes before browning them in the oven. Every Sunday dinner at Granny’s house included her flaky round pastries, each one bearing the imprint of her fingers that flattened it into the pan. The biscuit is the staple of a complete Southern meal (and the source of many sweet memories for me). No one today knows the baked good’s importance more than Carrie Morey, who has perfected her mother’s recipe to provide the South with the ideal supper trimming. Several years ago, Carrie traded her investment job and power suit for an apron in order to launch Callie’s Charleston Biscuits. Since then, she has established relationships with multiple distributors in the Southeast to sell her freezer-to-oven delights, written a cookbook, and developed the plans for Callie’s Hot Little Biscuit, a specialty shop opening this summer on King Street. Taking a moment away from running her business and raising her three joyous daughters with her husband, Carrie chatted with me on her back porch about the undeniable connection between food, family, and the feeling of home.

On several occasions, I have had the opportunity to indulge in one (or, let’s be honest, a whole pan) of your decadent biscuits. How did the treasured family recipe become Callie’s Charleston Biscuits? Most girls grow up wanting to be like their mom, right? I’m sure that’s probably the true beginning of Callie’s Biscuits. My mom is an incredible cook. She had always made these countryham biscuits for her catered parties. I would often work for her as a server through high school and college, and I saw the incredible reaction of people when they tasted those biscuits. Then, I moved on to living in New York and began working in sales. I would pack up my mom’s biscuits in my suitcase during each trip home and keep them in my

freezer. In New York, you’re trying to do whatever you can to get people’s attention, so I would write hand-written notes, heat the biscuits, and courier them over to my clients in the mornings. I realized that the country-ham biscuits weren’t just a Southern thing. I made a lot of sales that way. [laughs] My mom and I had, over the years, talked about opening up a specialty food business, but for a long time, we just couldn’t really figure it out. When I was on maternity leave with my first child, I thought that I wanted to be a stay-athome mom. And I say it took me until Caroline, my oldest, was six months old to realize I did not want to be a full-time mom. So we came up with a plan in Callie’s Charleston Biscuits that enabled me to be at home for my girls, but still work and build a career.

So many women, it seems, struggle with the work-family balance and often feel that they must choose one or the other. How do you manage to strike that balance? When I started the business, my goal was simple: I wanted to own a food business because I’m very passionate about food, but I also wanted to be a mom. I could have taken a lot of different paths to make my career progress a lot more quickly. The first three years had to move at a snail’s pace because my children were in school just a few hours each day. You can’t get a lot done when you’re only working three hours a day. [laughs] There are a million ways to do things, but for me, it was great for the business to evolve as my children grew up.

It really helps that, along that route, I hired some great people who understand how important it is to me to be able to walk out the door—no matter what’s happening—at two o’clock in the afternoon when my kids are finished at school. It’s just about building a culture and telling people upfront that my number-one priority is my family. Balancing both is daily frantic craziness. When it’s not like that, though, I’m kind of bored. I like life to be a little bit hysterical. [laughs] It’s obvious that your role as a mom is exceptionally important to you. How did your own mother help you build the business so that you could have the best of both worlds?

My mom and I officially went into business together in 2005. (She retired in 2009.) She is very elegant and makes incredible food. She has traveled the world making it her business to learn about all the different foods and flavors. I have to tell you, though, that I didn’t grow up with my mom. People think that Callie’s Charleston Biscuits is a nostalgic food business, but that’s not really how it happened. I wanted to start this business with my mom because I wanted to have a better relationship with her. We share this passion for food, but we didn’t spend a lot of time together when I was growing up. My parents divorced when I was two, and I lived with my father and my step-mom right here in the Old Village.

Does your dad have the same passion for food as you and your mother? My father could not be more of a simple, Lowcountry boy. He was born and raised in Charleston and was very poor. I grew up eating shrimp and grits. There was never a spice or anything put in the boiled shrimp—boll’d is how he would say it. He would use the shrimp water to make the grits. If you love shrimp, you should try this. But I didn’t love shrimp. My dad taught me that—in cooking and in life—simple is better. That is what my cooking is about: very simple, fresh ingredients. I love thinking about my food memories growing up with my dad. It was just the two of us for many years, and there was absolutely nothing fancy about the food.

It’s nice to have a mother and a father as role models who are so different. I’m somewhere in between both of them. Do you think that your love of baking and cooking is rubbing off on your girls? Oh, yes. My oldest’s new obsession is chopping and sautéing a whole onion. She makes it for a snack, or we eat it during a meal. She has perfected it. She sweats the onion and garlic down with butter and olive oil, and it’s fabulous. How many 10-year-olds do you know that would eat garlic and onions as an after-school snack? They love playing Chopped, too. Each girl makes her own dish, and my husband and I have to judge the food to de-

cide who made the best meal. This is what we do before homework—everyday. They have an appreciation for food, in general, and they like going out, too. Any birthday or special occasion, the girls get to pick where they want to eat. Their favorite place is Red Drum. We love to ride our bicycles there or to Pitt Street Pharmacy to get milkshakes. My first job was at that pharmacy. I was a soda jerk and grilled-cheese maker. It is nice to be able to take your daughters to some of the places that were so important to you growing up. Earlier you mentioned living in New York City—another special place you called home. What brought you back to Charleston from the Big Apple?

My husband. John lived in Wyoming while I was living in New York. One week, he was working with one of the zoos in the city, and he had been stood up by a girl who was supposed to come into town to meet him. He called his sister to ask if they knew anybody in New York because he was stuck there for the weekend. Katherine Good, a friend of mine from childhood, knew his sisters and gave him my number. I was not interested at all in entertaining this guy. Not to mention, I was almost engaged to another man named John. Long story short, I took him out with a group of friends to eat Mexican food, and we literally were engaged three months later. I had to break up with the other John that I was dating. It was a disaster, but there was

nothing we could do about it. We fell in love. I knew I wasn’t moving to Wyoming, and John wasn’t moving to New York. So, we moved to Charleston. When you moved, did you miss New York, or were you happy to be back in Charleston? I wasn’t quite ready to leave New York. I made John promise me that when our last child went to college, we would move back to New York for a year. It will be a while, but it will be fun for just the two of us to live in the city. I actually hope all my girls live there. I think it’s so good for any-

body—but especially a woman—to experience it. You learn so much about life and hard work. You’ll never work as hard anywhere else. You learn how far you can push yourself. It’s a good place to live—for a short period of time. When we got to Charleston, though, we found a great house on the water in West Ashley that we lived in for 10 years. I thought we would never leave. We were just in love with the view. I woke up every morning thinking, This is the best day of my life. So how did your family come to live on this side of the peninsula?

We just moved in September. Caroline and Cate go to Mount Pleasant Academy because we petitioned for them to go to school out of our zone. Our youngest daughter, Sarah, didn’t get in. So within two months, we had to sell our house and buy a new one in the right district. The girls love it here. There are 19 other children on this cul-de-sac that are all the same age. So, they’re in heaven. They go right outside and play until I ring the bell for them to come in for dinner. It’s a perfect way to call them. When they hear that bell, they all know it’s time to come home. CH+D • Summer 2014

The house and all the finishes, like the bell, seem to fit your personality. I’m surprised to hear that you bought the home instead of creating a custom plan with the builder.

it. Well, we finally came to see it. I walked in, and I saw that yellow barn door. I thought, Oh my gosh. I have to have this house. It just was my style: casual, coastal, but a little bit modern.

The house was almost done when we found it. The builder, Kirk Wood, and I went to high school together, and he had it on the market for about two months. John and I were frantically looking for a house in Old Village, and we kept seeing this one online. I thought, It just cannot be that nice. You never see a spec house that well done. Usually, the paint colors or fixtures aren’t right. It took us two weeks to see it because I kept thinking that there had to be something wrong with

The kitchen is pretty important to your lifestyle. Are you satisfied with it even though you didn’t have the opportunity to design it? I do love the kitchen. I love the stove, too. I had never even heard of this Italian oven [Bertazzoni].

When I saw it, I thought, Oh, I don’t know that I’m going to be able to cook with that. It’s turned out to be a great stove. The kitchen is not as big as my original kitchen in West Ashley, so I was a little nervous. But it flows well, and it suits me. Is that where your family gathers most often? The kitchen and the dining room. We eat at our table every night, whether it’s a formal meal or not. The table gets bigger. It has another leaf, and two of the ends pull out. You can fit almost 15 people at it, so it makes entertaining easy, too. I loved having our first Thanksgiving here; Thanksgiving is my meal. If I don’t cook it, then I’m pretty off. It’s the same meal every time; it is a tradition that we don’t change the menu. I always invite my whole extended family, and in-

evitably somebody says, “What can we bring?” I say, “Wine and maybe a charcuterie platter from Goat. Sheep. Cow.” But no, they may not bring the riffraff— the potato soufflé, the oyster pie, and all that stuff—because this meal is sacred to me. I do it like my grandmother did (probably not nearly as well as she or my mother). Everything is made in advance. I even pick out the turkey months before. It is my favorite day of the year. In the time between preparing next year’s Thanksgiving at home and cooking nightly meals for the family, what are you planning for the future of the bakery?

products. We’re doing a lot of testing for the shop, and the store will be our creative test room. My bakers will make something new and call me, and we’ll all look at the biscuits, feel them, taste them, touch them, and try to split them open. We’ve been working on a blackberry biscuit, and it’s so labor intensive because you only put jam on half; then, you flip the dough over. It’s kind of like a Pop Tart, but in a biscuit. It is so good, but it’s not one of those biscuits that we can package easily. So we always say, “This is a Hot Little Biscuit option.” We have different business ideas for what can be packaged and marketed to a grocery store and what could just be a special at Hot Little Biscuit.

Right now, we’re opening up a hot-biscuit shop—Callie’s Hot Little Biscuit—on King Street. Hungry Charlestonians can expect to get any of our flavors sold by the pair, hot. There will also be a special each day and a selection of our frozen and refrigerated

My long-term goal is to have 20 Hot Little Biscuits. I hope that it works. I hope that it is a wild success, and we can have them all over. For Callie’s to keep growing and adding more products—that’s what’s in my dreams. CH+D • Summer 2014

Flood Insurance Premiums Set to Rise at Slower Rate

Coastal Elevators and Lifts has expanded their product offerings with the addition of Stiltz, a brand new shaftless elevator system that can be installed virtually anywhere in the home. Coming in a variety of car-body styles, Stiltz has created a less intrusive and less expensive personal lift system for homeowners. Now, installing an elevator into a new home or retrofitting an older structure with an elevator is easier than ever before.

Currently, over 5,500 Charleston property owners are feeling the pressure of the rising expenses of flood insurance. The federal government is working to nullify the subsidy that, in the past, offset the cost of high premiums placed on older homes built near the water. In recent months, however, President Obama has passed a law that will slow this transition, raising rates a certain percentage each year until the policyholder reaches full-price for his or her plan. The rates are set to increase 18 percent per year for primary residences and 25 percent per year for vacation homes and office buildings. Even with the slower onset, residents living in flood zones can expect a substantial price increase over the next several years.

Architecture Plus Supports Philanthropic Homeowners to Raise Awareness for Crohn’s and Colitis Research While designing the Daniel Island home of Mark and Gisele Woodward, the principals at Architecture Plus became inspired by the couple’s gusto to find a cure for both Crohn’s Disease and Colitis, two conditions from which three Woodward family members suffer. Two years ago, Mark and Giselle founded the Woodward Crohn’s and Colitis Foundation, a local nonprofit aimed at raising funds to research the effect of a special, controlled diet on patients suffering from the gastrointestinal ailments. In the Woodwards’ experience, carefully monitoring each family member’s

food intake has enabled them to diminish the symptoms of Chrohn’s and Colitis without the use of medicine. The diet has even led Gisele and Mark’s daughter into remission. Because this is a more holistic treatment, the funding for research (usually garnered by pharmaceutical companies) is lacking. The Woodward Crohn’s and Colitis Foundation seeks to fill the monetary gap so that this important research can continue. Busch The team at Charleston Home + Design decided to spend one recent early afternoon imbibing during happy hour (though, we referred to it as research) at the new and highly extolled Edmund’s Oast. Upon walking through the heavy wooden doors with already-slightlyworn metal handles, I (along with a few of my coworkers) was greeted by owner Scott Shor, who pulled himself away from jovially chatting with the patrons at the bar to guide us to our cozy booth. He told us all about the
