e welcome you to Hong Kong and to CityLife , the monthly magazine for visitors to Asia’s world city. This month, the Cathay Pacific/HSBC Hong Kong Sevens, the city’s premier international sporting event, takes centre stage. For the increasingly popular seven-a-side rugby game, the Hong Kong Sevens is the granddaddy of the HSBC World Rugby Sevens Series. The main tournament, held from 8 to 10 April, caps a full week of rugby competition and entertainment activities. Thousands the world over will invade the city for a week of non-stop fun and games, drinking and partying. Be sure to soak up the atmosphere at bars or other venues even if you don’t have a ticket to the event itself. (Look for a copy of CityLife’s Hong Kong Sevens Official Visitors Guide for all the details) Immediately after the Hong Kong Sevens, close to 100,000 visitors will be in town to attend the Hong Kong Electronics Fair and International ICT Expo at the Hong Kong Convention and Exhibition Centre. In their thirteenth year, the two fairs provide a high-profile platform for around 3,300 exhibitors to showcase the latest products and services. Expect the bars and restaurants of Wanchai district, in which the HKCEC is located, to be packed with patrons. But there is a lot more to do in Wanchai than eating and drinking: our feature story describes a charming walking tour around this historic and vibrant district of Hong Kong. (See page 20) With mild temperatures, sunny skies, and generally pleasant weather, what better way to enjoy the city in April than spend some time outdoors – whether at the beach, in Hong Kong’s many hills and mountains, or on a beautiful island! Our cover story recommends a diverse set of activities that many visitors will be surprised to find available in this famously dense metropolis. In a burst of nostalgic spring cheer, legendary crooner Tom Jones will perform at the HKCEC on 7 April. Jones, whose singing career spans more than five decades, is sure to evoke memories and impressions of the 60s and 70s with hits such as Delilah and Green Green Grass of Home. The 10th Chinese Drama Festival (Hong Kong·2016)
The biennial Chinese Drama Festival will take place in Hong Kong in April 2016, offering nine wonderful performances by art groups from Mainland China, Taiwan, Macau and Hong Kong. In addition, a number of forums, seminars and an exhibition will be held during the Festival.
Cantonese opera playwright Yip Fei Hung, in his last letter to his son Eric, reveals his yet-to-be produced script, currently hidden in the “Ying Seung”(“condensation box”). As he searches for the script, Eric recollects more about his father’s life and love, and also an ambiguous relationship with a retired male actor. Join this discovery of the playwright’s unrevealed feelings and unique artistic vision, following in his footprints.

粵劇編劇家葉飛鴻，離世前曾以一頁家書告知 已移民美國多年的兒子Eric，透露尚有一個未曾 面世的劇本，藏於「凝箱」處。Eric回港辦理後 事，得知某新派粵劇團願意把此劇作，以巨資 搬上舞台，以作承傳。在Eric搜尋劇本之際，得 知其父親生平往事，並發現其父曾與已退息之 男花旦常映輝，有一段不尋常的關係。一個遺 世劇本，是劇作家的雪泥鴻爪，也是一份放不 開的感情，更是兩個世代戲曲藝術的爭持。

"Little Pieces" by City Contemporary Dance Company
Memory is incomplete – a puzzle. Every experience, every treasured relationship – they’re pieces. And throughout our lives, we search for missing pieces – in ourselves, in those we love, anywhere and nowhere. Maybe we get lucky – maybe we recover these pieces. But there is still a long way to go, a long journey until we each complete our personal puzzle. In Little Pieces, celebrated choreographer Dominic Wong with his creative team, stage designer Yuen Honwai and lighting designer Low See Hoe, explore possibilities – in costume, stage design, lighting, choreography – guiding the audience, encouraging them to complete their own puzzle.

In this concert, he will be performing Richard Strauss’ Horn Concerto No 1 in E-flat with Hong Kong Sinfonietta under the baton of Principal Guest Conductor Christoph Poppen. The programme also includes Haydn’s Symphony No 100 and Brahms’ Symphony No 1.

The Catholic Cathedral 天 主 教 大 教 堂 By the time it took over Hong Kong, Britain was increasingly accepting of Roman Catholicism, alongside its official Anglican religion. Given the presence of their co-religionists in nearby Macau, it is not surprising that Hong Kong’s Catholics established a church at the earliest opportunity. 英國的官方宗教是聖公會，但當香港成為英國殖民地時，羅馬天主教已被大眾接受。天主教在澳門出現後，香港 很快也有了第一間天主教教堂。

he parish was established in 1842 by Theodore Joset, the first Prefect Apostolic of Hong Kong, and work began on a new and permanent church soon afterwards. The new church was located at the junction of Pottinger Street and Wellington Street. Construction was completed in 1843. Over the next few years, the number of Catholics in the parish grew significantly, bolstered by arrivals from neighbouring Macau. The importance of Macau declined as Hong Kong’s grew and many people moved to seek better opportunities in the prospering new colony. In 1859, just sixteen years after it was built, the church was destroyed by fire. Parishioners took it in their stride, as devastating fires frequently plagued the developing colony, and a new cathedral was quickly built on the same site. It featured iconic twin towers on its facade. However, the waterfront area where the church was situated was becoming overcrowded as Hong Kong flourished. It became apparent that a larger cathedral was necessary. As a result,

plans were made for a new church on a more elevated area in Mid-Levels, located close to the Botanical Gardens. The new site for the cathedral was just above Caine Road, by the Glenealy valley and the foundation stone was laid on 8 December 1883. Crawley and Company of London were hired as architects and five years later, construction was completed of the building that is with us today. The church opened on 7 December 1888 and was blessed the following day. The construction of this cathedral cost US$15,400, and since a Catholic church can only be consecrated once it has become free from debt, the cathedral did not hold its rite of consecration until 8 December 1938, exactly fifty years after it first opened. The ceremony was officiated by the Vicar Apostolic of Hong Kong Enrico Valtorta, the Bishop of Macau José da Costa Nunes and the Bishop Emeritus of Canton. Three of the cathedral's altars were also consecrated at the same time. The cathedral, built in the English Gothic

style, is traditionally cruciform in plan. The exterior walls of the church were built from brick and stone, while its base and columns were made of granite. Apart from the main altar there are a number of other altars. It has undergone various renovations, with the most recent completed in 2002. To the right of the main altar and sanctuary is the altar of St. Joseph. It was given to the cathedral by King Victor Emmanuel II of Italy and the donation was facilitated by Joseph Mary Sala, an expatriate living in Hong Kong who was from the Italian nobility. It is adorned by the royal coat of arms of the House of Savoy. This connection with Italy was said to have helped the cathedral during the War as it claimed to be Italian rather than British and of course the Italians were the allies of the Japanese. This connection with Italy also affected some of the clergy as I recall Brother Collione telling me that he had been interned by the British and then released when the Japanese took over. The cathedral suffered some relatively minor bomb damage but survived the war otherwise intact. Located to the left of the main altar is the altar of the Sacred Heart. It was previously used as the high altar of the original cathedral at Wellington Street. It now houses the Blessed Sacrament and is reserved for Eucharistic adoration. To the right of the cathedral's sacristy is
the side chapel of Our Lord's Passion. Given by J.J. Braga, a Portuguese parishioner, it was rededicated to the Chinese Martyrs after the 1997–2002 renovation. The chapel was chosen out of the four to commemorate the then-newly canonised saints because it was the most thematically similar, in that the martyrs gave up their lives for the faith, emulating Jesus' sacrifice to save mankind. New stained glass windows were installed depicting the saints. A crypt was constructed beneath the former Chapel of St. Anthony in 2009 to house the remains of former Bishops of Hong Kong. These comprise two Vicar Apostolics and all five deceased bishops. The inspiration for the crypt came from the design of a traditional Chinese family house, which would contain the remains of ancestors. The Bishop at the time, Joseph Cardinal Zen, felt that the crypt would be a "symbolic move to inherit the teachings of previous generations in order to inspire future ones". The Catholic Church has prospered in Hong Kong and as well as the Cathedral there are many churches spread throughout the territory. One is close by on Garden Road. Although the number of Portuguese has declined, all the churches are busy on a Sunday as the majority of Hong Kong’s 150,000 Philippine domestic helpers are Catholic. Indeed the church is for many of them a great support as they work far away from home. ■

pril is one of the pleasantest months in Hong Kong: mostly bright and sunny days with low humidity, and temperatures from 20°C (68°F) to 25°C (77°F). So how better to enjoy this great city than by exploring its great outdoors. As we never tire of telling our visitors, Hong Kong is, paradoxically, both one of the most densely populated cities in the world and yet one of its greenest metropolises. The astonishing fact is that 70 percent of Hong Kong’s land area is countryside, with more than half of it unspoiled and designated as country parks. Equally astounding is the variety of green spaces on offer, from mountains to beaches to islands to ecological and geological protected sites, all easily accessible to the city visitor. With many out-and-about options just a few minutes away from the urban areas, you can easily spend a day or so exploring. 龍脊行山樂 The name refers to the hiking trail along the mountain ridge behind Shek O, itself an idyllic beach on the southeastern part of Hong Kong Island. Voted the “Best Urban Hiking Trail in Asia” this trail overlooks a sweeping view of the sea on one side and the dramatic landscape of the mountains on the other. You can either take the shortcut or go the whole distance. New Territories: What could be more enjoyable on a pleasant spring day than cycling along the Shing Mun River overlooking the beautiful Tolo Harbour. The 16 km ride along a dedicated bike path is mostly flat with clear signage. Perfect for a family outing, you can take your time and stop as often as you wish to take in the gorgeous views of verdant mountains all around. Bike rental shop are easily found at either end of the bike paths.

港島區深水灣、淺水灣及麗海堤岸路 on the south of Hong Kong Island: Only minutes away from the heart of the city, Deep Water Bay and Repulse Bay, two of the most popular beaches in Hong Kong, are linked by the picturesque Seaview Promenade. Start at Deep Water Bay, a beautiful beach framed by the quaint Hong Kong Golf Course tucked in the valley. Gawk at the beautiful houses overlooking the beaches, known to be the priciest real estate in Hong Kong, and indeed the world, where many of Hong Kong’s wealthiest live. Then stroll along the Seaview Promenade linking the two beaches and take in the gorgeous view of yachts and dinghies on the shimmering waters, with Middle Island and Ocean Park in the background – this is as relaxing as it gets! The longer and wider Repulse Bay has much to offer: beside playing on the beach, try visiting the Pulse, the new dining and entertainment complex just behind the beach, for food and refreshments and the large Tin Hau temple at the end of the beach, which features two large statues, of Tin Hau and Kwun Yam, the Goddess of Mercy, plus many other smaller ones. You will inevitably linger longer than planned.

長洲 This pretty outlying island in the waters west of Hong Kong is a favourite retreat for locals and tourists alike. ne of the best places to witness the continuing transformation of Hong Kong is Wanchai, that iconic district on Hong Kong Island nestled between Admiralty and Causeway Bay. It achieved international fame, or perhaps notoriety, as Hong Kong's red light district in Richard Mason's 1957 novel, The World of Suzy Wong, and the subsequent film, starring William Holden and Nancy Kwan. While some of those seedy bars sparkle on, trendier establishments have emerged to diversify the mix. But reach out further and the rest of Wanchai is perhaps more fascinating still: a frenetic and mesmerising representation of Hong Kong's tireless ability to adapt to cultural and economic change. The heart of Wanchai covers an area roughly two kilometres long and at most one kilometre wide, so the best way to explore is on foot. The district divides naturally into three parts: Wanchai North, a master-planned commercial area dotted with shiny skyscrapers built on land reclaimed in the 1970s and 80s; the original bar district along and around Lockhart Road, which remains a pulsating night spot; and Wanchai South, the historic former waterfront area along Queen’s Road East and Johnston Road that has recently emerged as one of Hong Kong's trendiest localities. So, take a half-day or so and wander the streets of Wanchai to your heart’s delight!

Many pedestrian bridges cross Gloucester Road, a major traffic artery, to Wanchai North, the most prominent of which leads directly from Wanchai MTR station to the Hong Kong Convention and Exhibition Centre. The HKCEC, an architectural landmark, plays a primary role in supporting Hong Kong’s position as Asia’s trade convention and trade show hub. Bauhinia Square at its northern tip is a sightseeing favourite for its fantastic vista of both sides of Victoria Harbour. You can also take in a play or musical at the Academy of Arts nearby. This old Wanchai area has seen tremendous change over the decades. Today it is a fascinating mix of old local culture, historic buildings and elderly residents, alongside trendy food, modern architecture and chic millennials. Specifically, the Governmentunder the auspices of the Urban Renewal Authority - has undertaken massive redevelopments between Queen’s Road East and Johnston Road, converting many city blocks of old buildings into upscale, high-rise residential and commercial towers. Thankfully, some of the old buildings’ architecture, or at least their facades, were preserved and integrated in to the new complexes, making for pleasing aesthetics. Yet, many older blocks remain with flourishing street-front shops and street markets, teeming with people. For starters, visit the newly opened Lee Tung Street complex. The site of the former Wedding Card Street, which once offered every aspect of preparation for the perfect wedding, has been transformed into an architectural masterpiece – high-rise luxury residential developments, open-air plazas with archways and decorated with

The heart of the bar zone runs along Lockhart Road and Jaffe Road between Fenwick Street and Fleming Road. While girlie bars from days gone by still spring to life at dusk, an eclectic mix of modern bars, restaurants and discos predominates. For bar hopping all night long, Wanchai is the place. And the action lasts truly till dawn. There are many good Filipino cover bands – what would Hong Kong do without them – playing at the more popular spots. Try Joe Bananas, which has been around for over 20 years, for music to dance or drink along to, or The Wanch, which has been here even longer, for honest jam sessions, popular local bands and excellent amateur improv on most nights. Then, to sate your appetite, Wanchai has become the city’s newest hip-and-happening dining spot. From Star Street, tucked up close to Admiralty, to the cross streets off Johnston Road, to the Hopewell Centre area, restaurants featuring all cuisines are taking root and flourishing. Try Bo Innovation, the Michelin 3-star restaurant, to sample the best in Chinese food, molecular style, or the Pawn, serving good English fare in the charming historic building overlooking the popular Southorn Playground, or Quemo, a Spanish restaurant serving excellent Iberian ham and paella in the QRE Plaza, a high-rise full of restaurants, across from Hopewell Centre. And to get a feel for the local scene, drop by the street markets on Tai Yuen Street and the neighbouring area and go bargain hunting for clothes, accessories and souvenirs. Finally, this area still offers some secrets in its several historic buildings: visit one of Hong Kong’s oldest Hung Shing temples on Queen’s Road East. Close by is the original district post office, built in the 1800s. Also stop by the famous Blue House on Stone Nullah Lane, another heritage building preserved. ne of the more popular regional cuisines in Hong Kong is undoubtedly Thai, and there are plenty of good restaurants serving familiar Thai dishes such as Tom Yam Kung soup, deep-fried prawn cakes and of course the many curry dishes. Few of these restaurants are considered fine dining as it relates to ambiance, service and food presentation. The recently opened Issaya Siamese Club, located in Hong Kong Island’s Causeway Bay in Soundwill Plaza II – Midtown is, however, a pleasant exception. Occupying the whole 25th floor with a large covered terrace overlooking Victoria Harbour, Issaya Siamese Club is the sister restaurant to its eponymous counterpart in Bangkok, which was ranked 19th in Asia’s 50 Best Restaurants 2016, sponsored by S. Pelligrino and Acqua Panna. The restaurant is the brainchild of internationally renowned Thai Chef Ian Kittichi who strives to create a new dining concept of innovative Thai dishes in a refined presentation but still using traditional and authentic Thai ingredients and cooking style, amidst a luxurious yet relaxed setting. The result – a pleasantly unique dining experience. We chose the semi-buffet lunch, which has become very popular. The lunch features Issaya’s signature appetizers and dessert buffet, with soup of the day and choice of main course. The prices range from HK$238 to $350 depending on the main course chosen. five desserts are on offer which by themselves would make a sumptuous lunch. The Seafood Broth and the Mushroom Broth (vegetarian) both taste zesty and refreshingly sour and mildly spicy – perfect as a starter. The appetizers are aesthetically presented, featuring interesting and quality ingredients. We recommend trying all of them. Particularly notable are the Iberico Pork Loin Salad, which is tender and aromatic, Banana Blossom and Heart of Palm Salad, one of Ian’s signature dishes, and the Thai Ceviche-style Salmon, which is sour but still accentuates the taste of the salmon fillet to perfection. The Beef Tenderloin Salad is also excellent – you’ll be tempted to double dip. For our main course, we chose Goong Pad Char (sautéed tiger prawn in a blended ‘pepper-holy’ basil sauce, $288), and Hor Mok Goong Mung Korn (fresh Maine lobster in curry custard, fresh coconut milk and sweet basil, $350). Both are tender and spicy. The lobster intriguingly combines non-traditional ingredients with Thai cooking. The main course comes with Issaya’s signature Chiang Mai Mushroom Rice. The rice, lightly fried and mixed with cashew nuts, is absolutely flavourful. We barely had room for dessert, but we managed to try all of them, including the snake fruit, Thai Style Macarons, and the homemade Thai Ice cream. Hong Kong keeps adding trendy, innovative restaurants to its list – and Issaya Siamese Club certainly among them. ■

ong Kong is a diner’s nirvana as you can sample practically all the cuisines in the world here. Still, a sumptuous Cantonese meal in the city’s own unique style remains the apogee of culinary experience. We chose Loong Yuen, in the Holiday Inn Golden Mile in Tsim Sha Tsui, for such an occasion. Meaning “The Garden of Dragons”, Loong Yuen is tastefully and elegantly decorated in traditional Chinese courtyard style, giving it a charming classical Oriental ambiance. The restaurants serves dim sum, seafood and innovative dishes and also actively promotes wine paring dinners with its delicious dishes, which is what we tried. We began the meal with Pan-fried Fresh Shrimp with Premium Soy Sauce ($368) paired with a French Chardonnay by Baron De Rothschild in Languedoc Roussillion . The shrimp shell tastes crunchy and its meat tender; the mildly aromatic soy sauce brings out the shrimp flavour and the wine helps savour the lingering taste. Our next dish was the popular Sweet and Sour Pork with Pineapple ($188), accompanied by a New Zealand Riesling by Seifred in Nelson, which works well given the sweetness of the dish. The pork is deep fried just enough that it bites tenderly, and the sauce is delightfully tangy. As a centrepiece of the meal, the Peking Duck ($588) met all expectations. A Cabernet Sauvignon by Vinas Casablanca from Chile’s famed
Maipo Valley accompanies the dish. The duck is roasted golden brown and the best way to eat it is to pair a piece of crispy skin with a morsel of its succulent meat, dipped lightly in plum sauce, and wrap them in a pancake. Three types of pancakes – flour, carrot, and amaranth – are served, each giving a slightly different taste to the duck. This is a sumptuous dish indeed. Better yet, a second dish using the carcass and leftover meat of the duck is included in the price. Our final main course is Loong Yuen’s signature Braised Ox-tail in Tomato and Red Wine Sauce (with steamed buns) ($398), which is paired with a Malbec. We cannot recommend this dish highly enough. The Ox-tail is simmered overnight and the result is succulent meat that practically melts in the mouth. And in a neat reverse, the food itself helps bring out the flavour of this full-bodied wine. We finished the meal with the award-winning Fried Rice with Shrimp and Shrimp Paste ($188). The taste and presentation of the dish are superb. Undera thin layer of fried egg, the shrimp paste– flavoured rice is stir-fried to perfection – no wonder it won a prestigious award! Our dessert is the traditional Sweetened Beancurd Pudding ($98) in light syrup, which perfectly rounds off this delightful culinary outing. And wines paired with fine Chinese dining? Yes, the match is excellent – try it for yourself! ■

CONCIERGE CHAT CityLife: What is the favourite part of your job? Woody: I like the variety of what we do every day. We constantly handle different guest situations, whether relating to our airport counter, concierge desk or front doors. I really enjoy having to be nimble and flexible in order to handle our guests’ problems and requests. Even the Front Desk doesn’t face the never-ending variety of challenges that we do. CL: Any memorable guest requests that you can share with us? Woody: One morning, a guest called after 10am to ask us to arrange a group photo shoot for his company at 11am that day at the Carnival’s iceskating rink along the Central Harbourfront, and they wanted to dress up in full ice hockey uniform. We weren’t sure whether the ice rink would allow it; we called around to a lot of people including concierges from other hotels and managed to find the person in charge. He agreed to the photo shoot and didn’t even charge anything. The guest was

Many of our mainland guests want prompter service and more detailed guidance than guests from overseas. Our guests are used to the speedy delivery of the internet and other telecommunication services, and they expect us to follow suit. CL: Where do you like to go in your spare time to relax? Woody: I aim to spend time with my family, so I take them on excursions all over Hong Kong. That way my kids get a complete exposure to the city and I can provide more personal recommendations to our guests. I especially like Cheung Chau as it reminds me of old Hong Kong; you can try the street food, relax at the beach, hike around and even rent bicycles – it has a special feel to it. ■

Octopus Card 八達通卡 Stored-value cards for travel on the MTR, buses, minibuses, trams, and ferries. Available at service counters at the Airport Express and MTR stations. GENERAL MANAGER Stephane Masse, General Manager of Le Meridien Cyberport Hotel shares his life experience in the hospitality industry 數碼港艾美酒店總經理麥勝文先生 (Stephane Masse)與我們分 享他在酒店業的經歷。
You can say I started my career at the grass roots. I joined a five-star hotel in Switzerland as a bus boy at the restaurant, progressing through the ranks in the F&B area, then moving into other management positions and eventually becoming a General Manager. Along the way, I was able to work at different hotels in many countries including Canada, China and Bangladesh. In particular, I was fortunate to work in many top-notch and memorable hotels, such as the old Furama Hotel in Central. My favourite part of the job is walking around the hotel, talking with my staff and our guests to get their feedback, especially any concerns or problems. I call it taking the temperature of the hotel. And to me, the key to being a good general manager is demonstrating leadership in all the management activities that I engage in daily. The Le Meridien Cyberport has a unique location, surrounded by gorgeous sea views and mountain greenery. We call the hotel an “urban retreat” as the setting and the hotel itself create a relaxed atmosphere, making it perfect for the MICE business. I would say that is our edge. The hotel industry has gone through tremendous changes in the last few decades, especially with staffing shortages. We have seen a steady decline in the staff to guest ratio so it’s difficult to maintain the same type of services at the same quality. On the other hand, the meaning of “quality” has changed, as guests now have a different set of expectations of services and standards. The thing I like about Hong Kong the most is its buzz, which has always been there, and is what defines the city. But Hong Kong also has its quiet spaces, our hotel being a good example. A hidden gem I highly recommend is Waterfall Bay Park, a beautiful waterfall and a beach near the hotel just below the Wah Fu estate, off Waterfall Bay Road. Before descending to the beach you can see hundreds of Kwun Yam statues erected in one place by villagers over the years – it’s an amazing sight, especially in Hong Kong. ■
