The weather this time of the year is hot and humid, so there is no better time than now to visit the many beaches of Hong Kong. You may be surprised to learn that Hong Kong has over 40 beaches that are more than suitable for swimming with most providing life guard services. Please check out our cover story on page 12 for our recommendations. This month, Summer Fun, the umbrella program organized by the Hong Kong Tourism Board, continues with a series of spectacular events and performances, shopping promotions in the city’s many malls, and of course cool neighbourhoods to visit and explore. It’s a perfect way to spend a funfilled vacation with family and friends. Our famous harbour lights up more than usual with the display of the Hong Kong 3D Pulse Light Show which is held nightly from 5-28 August at the open plaza of the Hong Kong Cultural Centre in Tsim Sha Tsui. It’s 8 minutes of dazzled music, sound and light that surely will enthrall the audience young and old. For music lovers, the exciting Asian Youth Orchestra will perform again at the Hong Kong Cultural Centre. Led by its founder, Richard Pontizious, and its lead conductor James Budd, the Orchestra will perform works by famed composers including Copeland, Dvorak and Tchaikovsky. “I’ll be back!”- yes, he is back- Ar nold Schwarzenegger is coming to Hong Kong to host the first annual Arnold Classic Asia Multi-sport Festival featuring live sports, health and fitness seminars and activities and sports stars! Just meeting the Arnold maybe a thrill enough. A highlight of the month is the Summer PopLive in Hong Kong which feature works of renowned lyricist Jolland Chan as he invites celebrated singers Alan tam, Vivian Chow, Keeny bee, Shirley Kwan and many more to perform some of his most classic works. Don’t miss it if you can get tickets to the concert. Children of the Gods 眾神之子 In the past child mortality was high and Chinese parents wanted to do everything to protect their offspring from the evil spirits who wanted to carry them off. 過去中國小孩的死亡率很高，父母會想盡一切辦法保護後代，讓他們不被邪靈傷害。

t has always been the ambition of Chinese parents to have many sons since girls married out and went to live with their husband’s family, usually in another village albeit close by. Sons stayed in the home and hopefully brought good fortune. In poorer families, boys were needed to help with manual labour, while for those more fortunate families, the success of sons in the imperial civil service examinations, which were not open to girls, brought continuing wealth and honour to the family and clan. Moreover, male heirs were needed to ensure the continuation of the clan as well as to perform the very necessary ritual ceremonies of ancestor worship. Symbolism and superstition play an important part in Chinese folklore, with certain objects or species being endowed with protective or propitious properties. Because the Chinese language is homophonic, many things are symbolic simply because their name sounds the same as something that is thought to be lucky. Accordingly, children’s clothing was

embroidered with flowers, fruit, animals, and insects, all designed to ward off evil as well as to bring future success to the wearer. At the celebration of the first month after birth, the maternal grandmother presented sets of clothing for the infant, tailored along the same lines as the parents’. These comprised a red jacket, a green sleeveless waistcoat and divided trousers, a navel cover, and a hat. Later, a navel cover embroidered with lucky symbols was worn. Colors were bright, with reds and pinks favorites because these hues were considered auspicious. Often an apron (toutou) was the only item of clothing worn by the child in the summer months until it was two or three years old. As long as the garment was embroidered with lucky charms, the mother felt the child was quite safe. A silver or bai tong (German silver) padlock was often given to the child, inscribed with propitious characters and symbols around the neck to “lock the child to earth.” Another common item was an anklet

with silver bell charms to sound the alarm if an evil spirit was attempting abduction. There were other silver charms and a common one was Shou Xing riding a qilin. Hats might also be decorated with a set of silver figures of the eight immortals. Children’s hats are often in delightful forms. A common type is an animal hat made to represent a lion, tiger or dog, which would emulate the strength and ferocity of the animal. All hats had ears to hear evil approaching, large protruding eyes to spot danger, and a mouth full of bared teeth. Some animal hats had another animal on top of the hat to give greater protection to the child. An embroidered back flap was added to cover the back of the neck in cold weather. No evil spirit would dare come close! As the child grew older he might have a scholar’s hat to attract good fortune when taking the important examinations. As mentioned above success in the imperial civil service examinations was always the ultimate aim as it led to appointment as a Government official of Mandarin. This was in effect a guarantee to wealth and status. Carrying a baby on the mother’s back was the custom in Hong Kong until the latter years of the twentieth century. For any woman who had to do manual work, it was a safe place to keep a child out of mischief. The maternal

grandmother presented the child with a carrier when it was a month old and able to leave home for the first time. This was made from a square of cotton or hemp cloth, with long strips of fabric extending from the corners of the square to form straps. The centers were embroidered or else left plain. Like the other accessories, footwear was often made in the form of a dog, cat, tiger, or pig to frighten away bad spirits. Features such as large eyes to see evil lurking, large ears to hear it, and whiskers to feel it, combined to suggest the creature being represented. On special occasions, very young children wore satin booties when carried in a baby carrier. Viewed from the front as the mother and child approached, they looked very colourful as most were made in bright colours and embroidered with designs of the dragon or phoenix, a mythical bird signifying goodness and benevolence and the hope the wearer would rise high in society. Clothed in garments all designed to give the child good fortune it is a wonder that some did not achieve greatness. However, the child could not look back later in life and say that his parents hadn’t done their best. Often mothers would preserve their child’s garments and examples can often been found in antique shops. They are a delight and who knows, they might even bring you good luck. ■

ong Kong, surprisingly, boasts having one of the longest coastlines for a major city, and, as a ratio to its area, Hong Kong is one of the highest in the world: 733 kilometers of coastline out of 1,104 square kilometers of land area. This is due to the meandering nature of its coastline plus the many islands the city has within its boundary - 233 in all, to be precise. Better yet, Hong Kong’s coastline contains many beaches and bays with mild, gentle waves, with many suitable for swimming. By contrast, Singapore has a land area of 719 sq. km but only has a coastline of 193 kilometers. And the city has some of the regions’ best and prettiest beaches. In all there are over 100 beaches in Hong Kong suitable for swimming, of which over 40 are managed by Government which usually means provision of services, life guards, and shark prevention nets. The variety of beaches in Hong Kong will astound you, so, depending on the time you have available and preference, be sure to visit as many as you can.

Prepare yourself for real adventure at these beaches each with their own claim to fame:

Sai Kung: Tai Long Wan & Long Ke Wan

We won’t beat around the bush – in Hong Kong’s northeastern wild frontiers lie the best beaches in the territory. But be warned, their beauty is matched only by the difficulty of getting there. Delicate, white sand and blue waters await the patient traveller that makes the two-hour journey by land or sea.

Tai Long Wan

Over the years, more and more people have been making the pilgrimage to these four breath-taking interconnected beaches. These gems sit on the most easterly fringes of the New Territories, a great escape from the concrete, high-rise jungle of urban Hong Kong. You can either hike to the first beach from Sai Wan Pavilion (1-2 hours) or take a boat from Sai Kung Town (~30 minutes). Beach #1: Sai Wan Grab a bite here to reward yourself. The adventurous can pop into the small waterfall flowing into Sheung Luk stream (follow it from the bridge) and cliff-jump 8 metres to the small rock pool. Beach #2: Ham Tin Rent your surfboards and camping gear. Many stop here to set up shelter for the night; this is the last stop for food and drink. Beach #3: Tai Wan Isolated in its beauty. High waves make this a surfer’s paradise. Be careful of the strong currents. Beach #4: Tung Wan A smaller strip of sand that most never arrive at.

From MTR Diamond Hill Station Exit C2, take bus 92 to Sai Kung Bus Terminus. At Sai Kung Town (outside McDonald's) take NR29 minibus to Sai Wan Pavilion, the start of the hike. Or take a taxi. To skip the hike, hire a boat to Tai Long Wan from Sai Kung Town.

Long Ke Wan

The beautiful geological formations, beyond the seclusion and powdery white sand, are what make this beach special. From the beginning of the hike (East Dam, part of the Unesco Geopark network), to the far reaches of the wide beach, the landscape is stunning. Don’t forget to bring food and water, as the area is bereft of vendors. From Sai Kung Town, take a green cab to East Dam. Follow the trail down to the beach (~30 minutes).

大浪灣

大浪灣共有四個沙灘，均坐落於新界西貢最東部，沿海岸由南向東依次排列，其風景之美，攝人心魄，是逃離城市鋼筋水泥叢林不可多得的世外去處。幾年間，不畏長途，遠道而來的遊客越來越多。你可以從西灣亭徒步遠足至西灣（1-2小時），或者從西貢市坐船前往（大約30分鐘）海灘 #1: 西灣 – 先在這裡填下肚子犒勞自己。熱愛探險的人則可以前往雙鹿石澗，登上瀑布串連的四疊潭崖頂，縱身從8米高的崖上躍入水潭中。海灘 #2: 鹹田灣 – 許多人在這裡紮營過夜，你可提前租好露營裝備和衝浪板。這裡也是沿途能獲得補給的最後一站。海灘 #3: 大灣 – 此處風景優美，彷彿與世隔絕，而海面巨浪使其成為衝浪者的天堂，但需小心避免受到巨浪衝擊。海灘 #4: 東灣 – 能夠最終到達這塊小沙灘的人並不多。由港鐵鑽石山站C2出口搭乘92號巴士到達西貢巴士總站。在西貢市（麥當勞外面）乘坐NR29號小巴前往西貢亭，開始遠足。或者搭乘出租車，跳過遠足環節，在西貢市僱船前往大浪灣。

浪茄灣

在細膩的沙灘，遺世獨立的海景風光之外，此處優美的地質結構為這一地方更添別緻。從此次遠足的起點（萬宜水庫東壩，屬於香港地質公園一部分）到這一片廣闊沙灘的盡頭，沿途風景動人，令人摒息。別忘了自備水和食物，因為這一帶沒有任何小店。從西貢市乘坐綠色出租車到達東壩，沿着小徑一直走到海灘（約30分鐘）。

Lamma Island

Enjoy the slow life on this island, appreciated for its hippie lifestyle. Crash a BBQ party or make your own at Hung Shing Yeh Beach, with supplies taken from Yung Shue Wan Village. Alternatively, check into one of the many seafood restaurants by the pier – expect fresh catch on your plate. The beach is great for stargazing if you can ignore the power plant with its giant chimneys jutting out from the island rock. Take a ferry from Central Pier 4 to Yung Shue Wan (~30 minutes). From the Pier turn right and walk along the family trail to the beach.

Cheung Chau Island: Tung Wan Beach

An Olympic windsurfing champion once trained on these waves. From the beach, you can canoe your way around the island to see the remarkable rock formations of Cheung Chau, including the Reclining Rock. On a cooler day (sunset is the best time), you can make for the North Lookout Pavilion, the highest point on Cheung Chau, with splendid views of the distant islands. End your day with your meal at Cheung Chau Seafood Street. Ferry from Central ferry pier 5 to Cheung Chau.

So we arrived at ALTO, the just opened restaurant at V Point, also a brand new trendy highrise food-centric complex in the heart of Causeway Bay- which itself is destined to be a popular gathering point, eagerly exploring the food to come. ALTO occupies the entire top floor of V Point, from which the panoramic views overlooking the Victoria and Happy Valley Race Course are simply stunning- the effect enhanced by unobstructed full length windows wrapping the entire floor. The restaurant is designed by internationally acclaimed British designer Tom Dixon’s Design Research Studio. The décor, befitting a sophisticated and glamorous restaurant such as ALTO, draws inspiration form alchemy and the four classical elements with a monochrome backdrop, gold Mini Melt lights, brass fittings and marble floors. Executive Chef Michael Boyle, who hails from Chicago and has been in Hong Kong for over 6 years, is the mastermind creating the menu. The cuisine, which is contemporary grill, draws on Chef’s almost 20 years cumulative experience at famed restaurants working with renowned chefs, provides a seasonal menu of quality items driven by French and Asian influences. We started our meal in earnest with several starters that are shared: Foie Gras ($178) with almond spice waffle, grilled peach, pink peppercorn which blends the foie gras’ tender, salty flavour with

the sweet taste of the condiments. The Watermelon Salad ($118) with chili roasted feta cheese thyme & raisin vinaigrette is a house specialty, the combination refreshing amidst the summer heat. The Bibb Salad ($118) with fresh herbs, candied walnut and goat cheese introduces a sweeter but equally refreshing flavor. They were all quickly consumed. Three main courses awaited us: A generous portion of USDA Ribeye ($398) from the grill was the centerpiece, the meat grilled to perfection. ALTO also offers Argentinian grass fed beef as well as Japanese Wagyu beef and Australian lamb, all to the delight of meat lovers. Pan-roasted Duck Breast ($228) with beetroot, grapefruit, watercress and Roasted Branzino ($228) with fennel, cherry tomatoes and French Beans made up the other mains. The duck breast was succulent and tender; the fish was deboned which allows us to eat as much of the fish as possible, its texture is finely grained. The side courses come in generous portions: Grilled Corn ($68), Roasted Cauliflower ($68) , and Brussel Sprouts ($68), all healthy tasting vegetables that helped lessen our guilty pleasure of eating too much. The atonement was short-lived, however, as tempting desserts awaited us; amazingly we still found room to finish the Apple Crumble ($68) and Crispy Banana ($78) before we called it a day. Given its location and stunning views, ALTO is destined to be the latest hotspot on Hong Kong’s exuberant dining scene- be sure to give it a try and spend a most relaxed evening dining on exquisitely prepared food, and at surprisingly reasonable prices! ■

t’s hard to overemphasise Hong Kong’s status as a dining paradise not just for Cantonese food, but practically any regional or international cuisine. And that includes Japanese food, a favourite of Hong Kong locals, and for which the city boasts a number of outstanding restaurants serving a variety of Japanese cuisines. So for a Japanese meal to remember, we visited Unkai, the well-reputed restaurant located in the Sheraton Hotel in Tsim Sha Tsui, to try out its Omakase Dinner, meaning “Chef’s Choice”. We arrived at the restaurant full of anticipation and were warmly received by a friendly crew of sushi chefs whose pleasure and pride in what they serve us were plainly evident and who were more than willing to tell us the secrets of sushi making. The restaurant, which serves a full range of Japanese cuisines including Teppanyaki, was bustling. The ambience was relaxed, elegantly comfortable and appetite inducing. Seated at the sushi counter, we made clear to the chefs our hopes to try their freshest sashimi and they did not disappoint. After whetting our appetite with a simple but tasty cold spinach dish, we got right down to business. We started with thin slices of stripped Jack sashimi accompanied by diced onion and red radish dipped in sour sauce, and beautifully presented. Sashimi is best savoured rather than devoured, so to allow the raw meat texture lingers in the mouth. Next came the scallops and giant clams served together – the tender succulent scallops contrast nicely with the crunchy texture of the clams. The pieces are, shall we say, quickly savoured, aided by an excellent choice of

cold sake suggested by the helpful staff. We are in a rhythm now; next came the Toro Muscle, lightly grilled, which is one of the house specialties and which they serve only when available – be sure to ask for it. The Botan Shrimp, a large fresh shrimp that tastes meaty and slightly sweet, completes our sashimi selection. The head of the Botan shrimp is used in the miso soup that provides a welcome and flavourful break before we embark on our next session of chef’s delights which are, of course, sushi. Our sushi chefs were definitely in a good mood; in all, six sushi dishes were served: amber jack, the much-coveted blue fin fatty tuna (subject to availability), mackerel, rosy seabass, the mouth-watering Hokkaido sea urchin which is always a favourite, and finally the Coral Crab. Meticulously and lovingly prepared, the meat and the rice blend perfectly into a nice single bite each. Undoubtedly, the making of sushi and sashimi is a studied skill, but it also forms an integral part of Japanese culinary culture at its finest: refined, thoughtful, and above all an occasion to be respected and treasured. Preparation and presentation aside, the key to a great sushi meal is still the quality and freshness of the fish, and the chefs at Unkai clearly ensure that only the finest and freshest fish and seafood are chosen. Between great food, lively conversation, soothing sake and relaxed setting, we finished off a most pleasant dinner with ice cream and fresh fruit. And at the quite reasonable price of $1,200 per person for the Deluxe Omakase dinner set, the dinner is excellent value for money indeed. ■

香港美食天堂的地位毋庸置疑，除了粵菜，還有各式各樣的地方美食及國際美食，其中當然包括最受香港人歡迎的日本菜。城中有不少出色的日本菜餐廳，每天為饕客提供豐富的日式美饌。在眾多日本菜餐廳中，位於尖沙咀喜來登酒店的雲海日本料理享負盛名，這次我們選擇了餐廳最新推出的「每日嚐鮮廚師發辦壽司精選」，懷著充滿期待的心情到達餐廳後，壽司師傅熱情地接待了我們，在為我們準備食物的過程中，他們臉上流露出難以掩蓋的愉悅和自豪，更毫不吝嗇地與我們分享製作壽司的秘訣。雲海提供的日本菜式種類繁多，包括各款深受食客喜愛的鐵板燒。餐廳用餐環境優雅舒適，更是令人食慾大增。我們坐在壽司和清酒吧，主動提出想吃最新鮮的刺身，師傅當然沒有令我們失望。品嚐了簡單而美味的凍菠菜後，我們胃口大開，摩拳擦掌準備享用這頓饕餮盛宴。首先登場的是深海池魚薄切，伴有洋蔥粒、蘿蔔蓉及酸醬汁，光是賣相已令人印象深刻。吃刺身應細細品嚐，絕不能狼吞虎咽，讓頂級刺身獨有的鮮味不斷在口腔徘徊。下一道菜式是北海道帆立貝刺身及象拔蚌刺身，帆立貝肉質鮮嫩飽滿，與象拔蚌的爽脆口感形成鮮明對比。在店員的建議下，我們選擇了一款清酒，這款清酒與帆立貝及象拔蚌刺身搭配得恰到好處，於是我們很快便把眼前的食物一掃而光。熱身完畢，正式踏上這趟嚐鮮旅程。燒拖羅筋是餐廳的招牌菜式之一，供應數量有限，記得主動向師傅詢問。牡丹蝦刺身選用帶有淡淡鮮甜味的新鮮大蝦，在開始品嚐精選壽司之前，師傅利用牡丹蝦頭煮成美味的麵豉湯，讓我們稍作歇息。壽司師傅的心情明顯很好，為我們準備了六款壽司，包括鱆紅魚壽司、極其珍貴的藍鰭吞拿魚腩壽司（數量有限，售完即止）、醋鯖魚壽司、赤鯥壽司，還有最受歡迎的壽司之一北海道紫海膽壽司，最後是松葉蟹膏壽司。細心周到的師傅將肉類及米飯的份量控制得十分精準，每件壽司都剛好是一口的份量。壽司及刺身的製作無疑是一門高深的手藝，也是日本飲食文化的重要組成部分之一：精緻、細心、令人敬重。製作過程及賣相固然重要，但製作美味壽司的關鍵始終是食材的質素及新鮮度，雲海的師傅們只採用高質素的新鮮魚穫，為客人度身訂造頂級料理。在一片歡聲笑語及舒適的環境中享用日式佳餚，呷一口冰凍的清酒，最後以雪糕及新鮮水果作結。「每日嚐鮮廚師發辦晚市豪華料理」價格為每位1,200港幣，絕對物超所值。■

Miss Saigon Vietnamese Cuisine From Broadway musical to Kennedy Town, Miss Saigon Vietnamese Cuisine is the latest addition to the burgeoning dining scene in Hong Kong’s Western District. Specialising in modern Vietnamese cooking, Miss Saigon offers authentic Vietnamese Cuisine with fresh, handmade, ingredients. The simple yet stylistic green décor features a profile of Miss Saigon and window display mimics a local eatery in the old Saigon. Its signature dish, Miss Saigon’s House Special Pho, uses USDA Angus ribeye beef with locally sourced beef bones as soup stock which helps enhance the flavor. The Home Made Vietnamese Ham bites firm but succulent. In “Drawn Paintings,” Houseago renders the mask-as-face leitmotif in acrylic paint, oil paint, pencil, and colored pastel, offset by black charcoal; striations in pigment and pronounced graphic lines impel each likeness to the surface of the canvas, revealing a wealth of possibility in the subjective readings of these dissonant visages. Kristina: I was introduced to the hospitality industry at a very young age as my godparents owned a bed-and-breakfast hotel and I was able to observe their passion for serving guests- it seemed there was never a dull moment. I was very lucky to have been able to work in several renowned 5-star hotels both as trainee and afterwards, including the Upper House which I have been the Director of Guest Experience the last four years. CL: What do you like most about your job? Kristina: My favorite part of the job is interacting with people whether it’s guests or our own team who are so passionate and dedicated to providing our guests with a memorable stay. There is never a dull moment and every day is a fresh start. CL: Have you observed any changes in service requests from your guests? The travelers are so much more sophisticated as are their demands. And Hong Kong being an amazing 24-hour city, our guests want super-efficient service and they want them fast. CL: Any memorable requests from your guests that you can share? Kristina: There are too many interesting experiences to mention them all. One that stands out was helping picking an engagement ring for a guest for his bride- and you realize how much faith the guest is putting in which to make an insightful suggestion- really makes you think how to give advice. A two day itinerary for his hotel guests: Day One: Start with dim sum breakfast at Luk Yu Restaurant , then hike up to the Peak and walk around Lugard Road. Go to Repulse Bay and have lunch at the Limewood at the Pulse and also hangout at the Ocean Club there. Then in the afternoon, go see the Chi Ling Nunnery in Kowloon. In the evening, Sundowners at our hotel's Cafe Gray Deluxe to watch the light show, then go to Soho for a food safari at all these boutique restaurants which are walk in only. I would start with Chom Chom, then Yardbird, Ho Lee Fook and Little Bao. Then drinks at Ophelia, a new bar in Wanchai.

For over a century, trams on Hong Kong Island have been an inexpensive mode of transportation. You can ride the full length of the 15-kilometre track at $2.30 per adult, $1.20 per child and $1.10 for a senior. Bernard Chan

We spoke with Bernard Chan, General Manager of B P International, on his experience in the hospitality industry 龍堡國際總經理陳俊傑先生與我們分享他在酒店業的經歷 I started my hotel career in the 1990s in the accounting department with a famous hotel in Central which has since been converted to an office building. Back then it was a coveted job given the glamour image of the hotel industry. I then got into the sales area as I tended to be outgoing and loved interacting with people. This led me to an opportunity to join B P International in 1995 as Director of Sales and eventually became the General Manager a few years ago. My favorite part of the job as a GM is to be involved in all aspects of running the hotel and I get great satisfaction from finding creative solutions to improve our operations, and doing so as a team together, especially when the team can show initiative and pro-actively solve problems. The key to being a good General Manager is to exert overall leadership in the marketing, management and development of the hotel in order to engender strong relationships , trust and effective communication - all important elements in creating a strong team. B P is re-positioning itself to adapt to changing market conditions. We are known as a 4-star leisure hotel with tourists making up the bulk of our clientele. While the recent downturn in tourism has affected the hotel business city-wide, we are perhaps less affected since we’ve made a conscious effort to diversify our guest mix. We are currently emphasizing our food and beverage offerings new cuisine concepts and products, and expanding our MICE capability. Our hotel has a large facility; we have a large ball room, and our location is excellent and will be more so as West Kowloon continues to develop. We are in the heart of Tsim Sha Tsui, and within walking distance of Nathan Road, Park Lane Shopper's Boulevard, Harbour City, China HK City, Elements, MTR station. So we are quite well-positioned. The hospitality industry has changed a lot, in part because the visitors have changed. They are much less reliant on tour guides and are more independent and knowledgeable, as are their requirements. Generally, travelers require efficient and comfortable service so we try to provide that by keeping up the service standards and product offerings as well. Hong Kong is of course a large, fast-paced, dynamic city with so much that are happening. What I like about Hong Kong is that it remains an incredibly safe city to visit so guests can enjoy the city at all times and anywhere. There are so much to do here in Hong Kong. I do recommend that visitors be sure to try local Chinese food as much as possible. Also the street markets are a must; the Jade market nearby is world famous. ■
