In celebration of Chinese New Year, the region’s best-loved festival, streets and buildings are bedecked with festive decorations, spreading a joyous mood of liveliness and auspiciousness, while locals take part in ageold cultural practices such as family reunions, giftgiving and religious rituals. The calendar is chock-full of exhilarating celebrations such as traditional lion dances, exciting parades, state-of-the-art 3D light shows and more for those looking to revel among the crowd. This month also sees the opening of another hugely popular annual event – the 44th Hong Kong Arts Festival, which kicks off on 19 February and runs through to 20 March. Showcasing the city’s booming arts scene, the event features more than 1400 international artists and local talent in 119 performances, along with a wide variety of outreach activities including film screenings, masterclasses, cultural walks and workshops. Meanwhile, music fans will be over the moon as the queen of pop Madonna finally makes her Hong Kong debut at the AsiaWorld-Expo on 17 and 18 February as part of her Rebel Heart World Tour. Be prepared to sing along with more than 10,000 fans as she performs the classics that have helped cement her unshakable status in the music scene. If you are into film and stage scores, don’t miss the Rodgers & Hammerstein on Stage and Screen concert presented by the HK Phil on 12 and 13 February, which highlights the legacy of the eponymous Broadway musical writing duo. Classics such as The Sound of Music, The King and I, South Pacific, Oklahoma! and Carousel will be revisited with visuals running on both the stage and the big screen at the Hong Kong Cultural Centre Concert Hall. North of Lion Rock

獅子山以北

Kowloon is separated from the New Territories by the Kowloon Hills, whose most vivid and evocative feature is Lion Rock, a formation that resembles a crouching lion. 九龍和新界以九龍群山為界，它們的主要特點是岩石的形狀像一隻蜷伏的獅子，因此也被稱為獅子山。

lthough the British took possession of Hong Kong in 1841 it was not until 1898 that the New Territories was leased. The lease covered all the land north of Boundary Street but it was only the areas north of the Kowloon Hills that became known as The New Territories. The portion south of the Hills was initially known as New Kowloon but the ‘New’ was soon dropped and it just became part of Kowloon. T h e p re - B r i t i s h s e t t l e m e n t o f N e w Territories was formed by clans arriving from different provinces of China. The socalled Five Great Clans arrived over several centuries, the first being the Tang Clan who settled at Kam Tin in the 10th century. They were followed by the Pang clan who settled at Fanling, the Hau clan at Ho Sheung Heung, the Liu clan at Sheung Shui and finally the Hau clan at San Tin. The clans farmed the land and as their numbers increased they founded offshoot villages that spread their descendants over the whole area. A few market towns were established, such as Tai Po, where the

villagers could bring their produce for sale. Although the Imperial authority was present in the form of magistrates, the hand of government was light and most villages were in effect self-regulating entities. The villagers did not have a single unifying religion. Instead, the Chinese believe in good and evil spirits and to ensure prosperity for yourself and descendants it was necessary to appease the spirits so that they helped you. One major spirit group was one’s ancestors and each village would usually have a Tsz Tong or ancestral hall. Here regular ceremonies would be held to make sure that the ancestors smiled on you. Usually major achievements, such as passing the Imperial examinations would be recorded. Also when someone died a tablet – known as a soul tablet – would be placed on the altar. Ancestral tablets are made of wood with Chinese characters on the front. The Chinese believe that on death, the soul divides itself between the ancestral tablet and the grave. Worshipping the ancestral tablets is a way of continuing the relationship of the clan by acknowledging your ancestors and the good

fortune that they have brought to the clan. There were other temples dedicated to deities thought to be propitious and able to bring prosperity to the village. Whatever you wanted there was likely to be a particular god that you prayed to. The other matter of importance was education. The Lius were one of the first clans in the New Territories to believe in education not only for boys but girls as well and also they were one of the first clans to introduce western education for their children. Their study hall is Man Shek Tong which was also their ancestral hall. In 1932, it was decided to convert the hall into a school. Alterations were made to the side chambers on the outside and again on the inside turning the hall into classrooms. They kept the ancestral hall at the back as it was, enclosing it to keep the original features without destroying anything. It was converted and restored back to its original state in 1985 and can be visited today. The hall is built on traditional lines for ancestral halls with three main buildings and two courtyards which are open to the sky, letting in good fortune and light – for good fung shui. The centre hall is used for banquets at the Lunar New Year, the birthdays of the 1st and 2nd generation Lius on 14th day of the 3rd month and 18th day of the 10th month of the Lunar Calendar, and during the spring (3rd moon) and autumn (ninth moon) ancestor-

Its purpose is to prevent evil spirits from coming through the main gateway to disturb the ancestral tablets at the far end of the hall. The Chinese believe that evil spirits can only travel in a straight line, so any wanting to attack the tablets would have to make a detour and, hopefully, get lost. The simple life of the villagers changed very little when the British took over and even in the early 1970s the only signs of the British presence were the District Offices and the line of the Kowloon Canton Railway. There was some increase in the population from the influx of refugees from China but most of those headed to the urban areas of Hong Kong and Kowloon. Nevertheless it was that large increase in Hong Kong’s population that led to a transformation of the New Territories. Space for housing was short and the Government’s solution was to build ‘new towns’ – and the only space available for them was north of Lion Rock. The new town closest to Lion Rock is Sha Tin. Its population has grown from about 30,000 in 1970 to 660,000 today. Nevertheless there are still some areas of the New Territories that are cultivated and where you can escape the hustle and bustle of town life. There you can get some idea of what life in rural China was like in the past. ■

The seafood restaurants in Sai Kung need little introduction, but there’s more to explore in this coastal district. Berthed at this pier are small boats from which fishermen sell some of the freshest sea catch in town. Just watching the lively interaction between them and the customers is fascinating enough.

In celebration of the festive season, here we recommend two eateries that capture the essence of the Chinese culinary world

ituated on third floor of the JW Marriott Hotel Hong Kong in Pacific Place, one of the city’s prime shopping destinations, Man Ho Chinese Restaurant touts authentic Cantonese fare that brings together seasonal ingredients and solid cooking techniques. The traditionally decorated main dining hall is grand and spacious, and is complemented by three private dining rooms that can each accommodate 10 people. At the helm of the restaurant is Executive Chinese Chef Herman Ip, a friendly and knowledgeable chap with a wealth of experience across the region. We sampled a series of his signature dishes, which are inspired by the rich culinary tradition of Guangdong Province. We kicked things off with the Signature Roast Pork Leg (HK$320), distinguished by its glistening, mouth-watering crust. The succulent texture beneath the super-crisp skin is truly impressive, a result of the slow-cook technique similar to the sous-vide cooking method in high-end Western

cuisines. The grapefruit sauce is light and aromatic, with a slight acidity perfect for the meat. Next came the Deep-fried Crab Meat with Lobster Sauce in Shell (HK$160), another sumptuous dish that overwhelmed our palate. Again there is a nice crispy surface on top, and the crab meat scooped out from the shell is fresh and creamy. While we were awash in fantastic crab dishes during the freshwater crab season a couple of months back, we found this one here going neck and neck with the best of them. As might be expected, the Sautéed Australian Wagyu Beef Cubes with Matsutake Mushroom (HK$480), are richly flavoured, featuring dice of meat that melted in our mouth quickly. The asparagus is a clever addition, offering a refreshing balance to the flavour. Things then got slightly lighter with the Tomato, Bamboo Pith and Seasonal Vegetables in Fish Stock (HK$200), a rich and creamy soup accompanied by an assortment of veggies. We especially liked the silky texture of the bamboo pith, which absorbs all the essence of the dish. Free from any visual or gustatory gimmicks, our meal went back to the heart and soul of Cantonese cuisine – quality ingredients and spot-on techniques – delivering for us a delightful culinary experience in perfect time. art of the East Ocean Gourmet Group, a staple of Hong Kong’s dining scene for more than three decades, the aptly named East Ocean Seaview Restaurant is famed for its panoramic views and convenient location in Tsim Sha Tsui, the bustling tourist district with oodles of luxury malls and attractions. To celebrate Chinese New Year, the restaurant will present the Victoria Harbour Firework Feast, composed of two special menus namely the Deluxe Firework Set (HK$888 per person) and Grand Firework Set (HK$1688 per person), on the evening of 9 February, when diners can enjoy Chinese delicacies and the magnificent fireworks display in Victoria Harbour at the same time. We opted for the five-course deluxe set and began with the Bean Curd with Caviar, which has a light and inviting texture that contrasted with the rather overpowering Sichuan-style flavours of the Spicy Cuttlefish. Next, we tried the Buddha Jump over The Wall – as strange as its name sounds, this dish is traditional, a flavoursome soup made of lavish ingredients including dried scallops, fish maw and mushrooms, simmered for several hours to render the lush taste.

Our winner for the meal went to the Fried Kantō Sea Cucumber with Spring Onion – the black marine creature, believed by some to possess aphrodisiac qualities, is cooked beautifully in a full-bodied sauce, impressing with its tender texture and yummy flavours. Finally, we sampled the Double Boiled Bird's Nest with Red Dates & Lotus Seed, a fragrant dessert much-loved by the ladies thanks to its antiaging effect. The red dates give the dish a pleasant touch of sweetness, wrapping up our meal with finesse. A sumptuous feast like what we had highlights the luxurious side of Chinese cuisine, its strength lies in the quality of the ingredients. If you want to take it up a notch, consider the Grand Firework Set, which is even more grandiose with such dishes as Braised Whole Abalone in Oyster Sauce (3 Heads) and Double Boiled Bird’s Nest with Coconut Cream and Gold Foil. Whatever you choose, be sure to reserve a table early, as the restaurant will surely be fully booked when the fireworks explode. ■

Founded in Kyoto in the 17th century, the “Rinpa” style of painting used vibrant colors applied in a highly decorative and patterned manner to simple natural subjects such as birds, plants and flowers. The fastest way to get to the airport from Central. Trains depart Hong Kong Station (Central) every 12 minutes for the 24-minute trip to Hong Kong International Airport. Octopus Card 八達通卡 Stored-value cards for travel on the MTR, buses, minibuses, trams, and ferries. Available at service counters at the Airport Express and MTR stations. Each card comes with a refundable HK$50 deposit which covers the card cost. Initial stored value cost per card varies: Child (HK$20), Adult (HK$100), and Elder (HK$20). Simply place the card on the Octopus pad and the fare is automatically deducted. For over a century, trams on Hong Kong Island have been an inexpensive mode of transportation. You can ride the full length of the 15-kilometre track at $2.30 per adult, $1.20 per child and $1.10 for a senior.
