e welcome you to Hong Kong and to CityLife , the monthly magazine for visitors to Asia’s world city. This month sees the city’s booming art scene take centre stage as Hong Kong Arts Month offers art activities as varied as your imagination – exhibitions, seminars, tours and many more events are sure to impress and set your creative juices flowing. Leading the charge is Art Basel, a key fixture on the international art calendar. The show runs from 24 to 26 March, but loads of happenings carry on throughout the month (see p12 for the full schedule). For those sharing a penchant for the silver screen, the Hong Kong International Film Festival plays host to a strings of special screenings and seminars with feted filmmakers from around the world from 21 March to 4 April. For the third consecutive year, local film star Louis Koo Tin-Lok will be the festival ambassador. With spring upon us, the weather is getting warmer, but if you fancy an early taste of summer, be sure to head to the Beach Boys live concert at the Queen Elizabeth Stadium in Wan Chai on 18 and 19 March. Teaming up with the Hong Kong Philharmonic Orchestra, the iconic Californian outfit will deliver fresh takes on classics such as Surfin' USA, Fun Fun Fun and California Girls. Finally, fans of gastronomy are in for a treat as Taste of Hong Kong takes over the Central Harbourfront from 10 to 13 March. This massive food festival showcases delicacies from award-winning and locally respected restaurants across the territory including Amber, Tin Lung Heen, Yardbird and more. Masterclasses and artisan stalls are set to inspire avid home cooks, while exciting live entertainment is sure to delight the crowds. From arts to films to music to food, the fragrant harbour has it all covered. On behalf of us all, we wish you a memorable visit to Hong Kong.

'Arirang of Mount Paektu' by Yanbian Song and Dance Troupe
'Arirang of Mount Paetku' leads us to appraise the human condition and the place of nature, in harmony amid mankind. The piece has been presented on the nation’s 60th anniversary as well as at Expo Shanghai. Koreans in Yanbian enjoy expressing their feelings with singing and dance during festivals and farm work. Korean dance is a fine mixture of lyrical elegance and sensual valour, characterized by sword dance, drum dance and clapper dance. Full of rhythm and vitality, this remarkable group of Koreans are acclaimed as ‘a singing and dancing tribe’.

A垂 柳Willow Pattern Wonderland 依依 人間仙境 Those intrepid souls who ventured out of Europe to trade with China were surely quizzed by family and friends about what ‘the East’ was like. We look at what they took back to answer those questions. 那些鼓起勇氣離開歐洲前往中國經商的人，一定都曾被家人和朋友問過 東方究竟是怎麼樣的。現在我們一起來看看他們從東方帶回來的答案。

he traders who plied the China coast dealt mainly in silk, porcelain and tea. Tea came to dominate as the British became hooked on it much as the Chinese came to be hooked on opium. However, there were other trade goods that emerged as important in themselves. To people in the West, China was an exotic place about which they knew nothing. There was a thirst for information but also a demand for the exotic objects that the Chinese produced. Chinese artisans soon learned to cash in on this demand. Some of the most popular items were paintings of the environs where the traders lived and worked. Views of their residences, offices and warehouses at Canton (today’s Guangzhou), called factories or hongs, were being produced at least as early as 1760. Recent studies have shown that these were very accurate at the time they were produced, so that when they arrived in England they served as fine conversation centrepieces. Along with developments in building

structures, the various flags that were flown are very helpful in dating the pieces. Paintings could also be bought that showed the way of life of the Chinese. Sets showing the different stages of silk, tea and porcelain production were favourites, but there were a whole range of subjects including not only gardens but also pictures of flora and fauna. Paintings were not enough and exotic articles soon discovered a ready market. Crates of Chinese fans soon found their way onto the ships and were snapped up at home – fans were in common use in society at the time. The materials ranged from ivory to tortoiseshell to feathers as well as different woods. A particular style was termed a Mandarin fan, not because it would have been used by a mandarin but because mandarins and their ladies were painted on them. Very often the faces were painted on slivers of ivory. Fancy parasols were another fashion item that became popular. The handles again provided ground for displaying the carver’s

skill. The gentlemen could satisfy themselves with a cane, again with a carved handle. Chinese lacquerware was also popular. The detail of the designs was a particular Chinese skill. One such item is the tea caddy illustrated below. What better receptacle could there be in which to keep one’s precious China tea? You could then serve it up in Chinese porcelain cups on a Chinese lacquer tray. The technique also extended to items such as gaming sets and sewing boxes. The articles in the sewing boxes were often intricately carved in ivory. There were many other items ranging up to larger pieces of furniture. Ivory was a particularly favoured material and was used for many small items. One such was the card case. These were used to hold calling cards; a bit like today’s business card. Apart from ivory, they were produced in a range of materials, always intricately carved or otherwise decorated. Another material that the Chinese workmen were skilled at using was silver. Silver goblets decorated with elaborate patterns of dragons and the like found a ready market. In fact there were many such decorated silver items including brush and mirror sets and bowls. These were all popular as silver was much used in Europe and the cheaper prices in the East made it a worthwhile import even if the design was not

exotic. Indeed sometimes the craftsmen were asked to copy European examples, which they did so well that it is sometimes difficult to tell that they were made in the East. There was also demand for embroidered silks and the Canton shawl became quite common. Such was the fashion for all things Chinese that eventually the Chinoiserie style came to the fore and European workmen adopted the Chinese motifs and set them in their own work. The supreme example is of course the Brighton Pavilion, built for George, Prince of Wales (later George IV). It was designed by John Nash between 1815 and 1822 and incorporated not only Chinese themes but also those from India – the ultimate instance of eastern splendour. Perhaps for the common man the most enduring design was the willow pattern used on many a dinner and tea service. This showed a Chinese style garden, so different from English gardens that it must truly have seemed a wonderland. Even today, for many in the West, China remains an exotic place that retains its mystery despite the modern wonders of the internet. Chinese workmen still produce fancy curios for tourists and no doubt they too become conversation pieces to impress friends and family on their return. Really nothing much has changed. ■

While you’ll enjoy the works at the international shows and fairs, pieces created by local talent could well be as inspirational and pleasing to the senses as those by the big names. In Kowloon, a slaughterhouse comprising a few blocks of redbrick buildings was converted into a village for artists in 2001, spawning the Cattle Depot Artist Village, which now thrives as a hotbed of local art. The Jockey Club Creative Arts Centre in Shek Kip Mei, originally a factory estate, was also converted into a multi-disciplinary artists’ centre. Across the harbour on the island, the former industrial districts of Chai Wan and South Island are picking up the pace of developing into the next big art neighbourhoods, regularly hosting exhibitions and festivals popular among locals.

A
celebrated culinary capital, Hong Kong has a diverse dining scene. At one end are the fancy, celebrity-chefrun restaurants listed in international food guides, while at the other, a cornucopia of low-budget eateries put their focus solely on the quality of food, capturing customers’ hearts with authentic and affordable dishes. Many of the latter nestle in the government-run cooked food centres, which are the offspring of the nearly extinct hawker stalls known as dai pai dong. These no-frills culinary spots, usually situated above wet food markets, are hidden gems where you can have a real taste of the local food culture. Here we introduce some of our favourites, as well as some of the unmissable attractions close-by.

This dining spot in the old North Point district is famed for Tung Po Seafood Restaurant, following its appearance on Anthony Bourdain’s travel and food show No Reservations back in the noughties. The joint highlights the punchy and rich flavours of Cantonese cuisine, with such signature dishes as Wind Sand Chicken and Sweet and Sour Pork. Beer is served in traditional rice bowls, a feature much-loved by expats. If you’re lucky you’ll catch a glimpse of the owner’s moonwalking – he also likes blaring music late in the evenings.

This month we visit a prestigious joint frequented by the social elite and a hip casual-dining place popular among young professionals

sland Tang, a Chinese place located at the junction of Queen’s Road Central and Ice House Street, is dubbed the “celebrities’ canteen” for good reason. Inspired by Hong Kong’s colonial heritage, the dining space sports slick furnishings such as pendant lamps, ceiling fans and wood panelling that, along with mellow Chinese pop classics in the background, give the restaurant a classy and warm ambience. Food-wise, it touts upscale, well-crafted fare rooted in the Cantonese tradition. We kicked things off with the Island Tang Appetiser Delights (HK$228 per person). Among the four components, we particularly loved the rich textures of the Roasted Pigeon Leg Stuffed with Preserved Sausage, and the refreshing balance in the Deep-Fried Scallops Stuffed with Pear and Shrimp Mousse. Next was served the Steamed Fresh Crab Claw with Chicken Essence and Far Dew Wine (HK$268 per person), which brings together fleshy crab meat and a full-bodied sauce. per person) is in the same vein, while the Stewed Wagyu Beef with Onions, Peking Scallions and Spring Onions (HK$328 per person) delivers the meaty oomph that a proper dinner needs. After that, the Wok-Fried Hairy Crab Coral Stuffed in Bean Curd Pockets (HK$128 per person) keeps the momentum going, though more subtly. Steeped in a thick and sapid sauce, the crab meat and bean curd coating are smooth and delicate. Following a few dishes characterised by bold flavours, the simple Simmered Pea Shoots in Bouillon (HK$228) is a smart addition – with just the veggies and a light soup, it managed to cleanse our palate before the Braised Fried Rice with Diced Chicken, Black Truffle and Wild Mushroom (HK$288) took things up a notch again with its enticing taste and aromas. Finally, the luscious Double-Boiled Fresh Milk Custard with Taro Puree (HK$42 per person) has a creaminess echoing the previous courses, concluding our meal on a high, satisfying note. One of our current favourites, Island Tang sets itself apart from other Chinese eateries with the intelligent menu and skilled execution. Served in a perfect flow, our dishes worked brilliantly as a whole. In fact, since its launch, the restaurant has never engaged in any pretentious promotional campaign; instead, it lets the food speak for itself, building a loyal fanbase through the finesse of its dishes and the inviting setting. Highly recommended. ■

pened just a few months ago, Yum Cha, whose name literally means “drink tea” in Cantonese, has become one of the hippest dim sum places in Central district. Touting a setting reminiscent of a New York-style loft, it serves up authentic flavours accompanied by playful names and presentations. During our visit the place was packed with young professionals, and even had a long queue at the door. In an effort to discover the secret of this popularity, we sampled a string of its signature dishes. We kicked things off with Crab Roe Spinach (HK$59), a cold starter featuring fresh vegetables and a creamy sauce with a pleasant hint of acidity. Next came the Orange Wintermelon (HK$49), composed of blocks of wintermelon soaked in freshly made orange juice. Having threads of orange peel on top is a stylish move – they not only enhance the presentation but also add an aromatic layer to the dish. Then we tried two kinds of buns. The BBQ Piggy Buns (HK$49/ 3 pieces), which are traditional BBQ pork buns in the form of cartoonish pigs, are fluffy and soft, but we were more impressed by the Hot Custard Buns
(HK$49/ 3 pieces), which ooze sweet custard once you bite into them. The sweetness is spoton, making the dish one of our favourites of the meal. Next came the Sticky Honey Balsamic Chicken Wings (HK$79), which look and taste a bit like Korean fried chicken. The skin, coated with a well-balanced sauce, is crispy, and the meat is still moist on the inside. It’s not the most traditional dish here, but definitely worth trying out. A Chinese meal wouldn’t feel complete without fried rice or noodles, so we opted for the Shrimp and Fish Fried Rice (HK$109), which didn’t disappoint. Accompanied by the seafood, the rice is flavourful but not so heavy. Just right to share with your dining companions. Having tasted the food here, we understand why the restaurant is so loved by its customers. The flavours are bright and punchy, while the appearance is colourfully eye-catching, breathing new life into the presentation of dim sum. Visually, there’s a lot of creativity involved here so if you are looking to experience the quirky and fun side of Chinese cuisine, Yum Cha is a good place to visit. ■

「飲茶」開業僅僅數月，已成為中區最熱門的點心好 去處。店內裝潢採用懷舊的紐約式閣樓，點心口 味正宗，菜名及賣相均走新派玩味路線。我們去的當天店 內坐滿了年輕上班族，入口處更大排長龍。為了一探究 竟，我們試吃了餐廳的一系列招牌菜。 首先登場的是太子麻菜（ HK$59 ）這是一道開胃冷 盤，新鮮蔬菜搭配柔滑醬汁，帶一絲醒神的酸味。下一道 菜是橙棍冬瓜（HK$49）塊狀的冬瓜吸收了大量鮮榨橙 汁，廚師別出心裁地將橙皮撒在表面，不僅令整道菜賣相 更吸引，還不時透出絲絲清香。 接下來我們嚐了兩種包子，一籠八戒（HK$49/3件） 是卡通豬頭造型的傳統叉燒包，口感十分鬆軟，但更令我 們印象深刻的是睇住流奶（HK$49/3件）用筷子將包子外 皮戳破，裡面的奶黃緩緩流出，甜度適中，這是這頓飯我 們最喜歡的菜式之一。 下一道菜是舉手雞花（ HK$79 ）味道有點像韓國炸 雞，醬汁調配均衡，雞翅外層十分香脆，而裡面依然肉汁 豐富，雖然不是最傳統的菜式，但絕對值得一試。 一頓中餐沒有炒飯或麵條總感覺缺了點什麼，所以我 們選擇了櫻花蝦飯(HK$109)果然沒有令我們失望，炒飯 伴著海鮮，味道鮮美而又恰到好處，最適合與親朋好友分 享。 吃過這一頓，我們終於知道為何這間餐廳如此受歡迎 了，菜式味道鮮明，賣相吸引眼球，為傳統點心注入新鮮 活力，廚師的無限創意不斷衝擊你的視覺。如果你想體驗 新奇有趣的中餐，「飲茶」是你的不二之選。■

Founded in Kyoto in the 17th century, the “Rinpa” style of painting used vibrant colors applied in a highly decorative and patterned manner to simple natural subjects such as birds, plants and flowers. Drawing from the Rinpa school and from his own acute observations of nature, revered Japanese artist Takahide Komatsu brings together the traditional background patterns of shimmering gold and silver leaf with detailed depictions of native plant and animal species in bold, vibrant colors. Stanley: I enjoy taking on new challenges. Our guests from around the world have different requests, and I learn a lot as I help them every day. CL: Can you share your most memorable request from a guest? Stanley: One time an Australian guest was looking for lotus seeds. I found them in a wholesale store, however the owner pointblank refused to sell them in small amounts. CL: What changes have you seen in guests’ service expectations over these years? Stanley: Nowadays guests expect quality service not just during their stay at the hotel, but also before and after the visit. We start helping them plan their itinerary before they come to the city, and introduce suitable companies to them when they need to post things back to their home country after they leave. CL: Where do you like to go or what do you do in Hong Kong when you are off from work? Stanley: I like going hiking in the countryside. A ‘hidden gem” to see or do for first-time visitors: Quite a few tea shops in Sheung Wan and Central offer firstrate Chinese tea, making them wonderfully relaxing spots to take a break. Things to do in Hong Kong in two days: Day 1: Start the day with a delicious breakfast at our hotel. Head to Stanley for a relaxing stroll along the waterfront, then enjoy a dim sum lunch there. Go to The Peak for a stunning bird's-eye view of the city.
Day 2: Check out the golden bloom sculpture at the Golden Bauhinia Square in Wan Chai. Then get around town on trams or Big Bus Tours. For over a century, trams on Hong Kong Island have been an inexpensive mode of transportation. GENERAL MANAGER Simone Hansen, General Manager at ibis Hong Kong Central and Sheung Wan, shares with us her love for the fragrant harbour 宜必思香港中上環總經理韓茜文小姐（Simone Hansen）與我們 分享她對香港的熱愛。 My first job in the hospitality industry was a breakfast waitress role at a hotel in my home country Australia. I was promoted to General Manager over four years of hard work. During the process, I expanded my skill set in the various departments of the hotel, including the front desk and housekeeping. I was the youngest female General Manager of my company in Australia back in the day. It was a memorable achievement to be recognised as a female leader, and I’m glad that the company supports diversity and there have been more female GMs since then. I came to Hong Kong two years ago, after working in Indonesia, Vietnam and Thailand. Each of these countries has a unique culture, such as in its religions and customs, but I really like the East-meets-West harmony here in Hong Kong. Patience and sympathy are key to being a leader. It’s vital to put yourself into others’ shoes and understand where they are coming from and what problems they are facing. In this way they’ll know they have the support they need. In the hospitality industry we deal constantly with change, especially in terms of technology, which has quite an impact on the services we provide. By being open to that change, we can learn a lot every day and constantly improve what we offer to customers. Our hotel is conveniently located and surrounded by many interesting attractions. Close-by there’s the dried seafood street, and the art communities on Hollywood Road and PMQ are just walking distance away. A quick cab ride will take you to Lan Kwai Fong, the heart of the city’s nightlife. Hong Kong is more than a shopping destination – there are many hidden charms in the city, including the beautiful landscapes in the countryside. I love going to the beaches and islands with my family in summer. The culinary scene in Hong Kong is vibrant and I suggest visitors try the various cuisines available here, from traditional dim sum to local street food to fine-dining crafted by celebrity chefs. Have a taste of the quirky dishes such as intestines and chicken feet at Chinese restaurants. It’ll be an interesting culinary experience. ■

我在酒店業的第一份工作是在我的祖國澳洲的一間酒店裡當早餐侍應，經過 四年的不懈努力後，我成為了酒店總經理。在這四年期間，我在酒店不同部 門學習了許多技能，其中包括前台服務及房間清潔。 我是當時所屬的澳洲公司裡面最年輕的女性總經理。作為一名女性，能成為 一位領導者是一項很值得紀念的成就。我很開心公司支持這種性別差異，自 此之後公司有更多的女性成為總經理。 我兩年前來到香港，之前去了印尼、越南和泰國。這些國家各自有獨特的文 化，宗教和習俗各不相同，但我十分喜歡香港這個東西文化和諧共處的城 市。 作為一名領導者，耐性和同情心缺一不可。設身處地為他人著想是十分重要 的，要了解他們來自哪裡，他們正面對什麼問題。這樣他們就知道自己有需 要的時候身邊總有人支持。 酒店業瞬息萬變，特別是在科技方面，這對我們的服務有很大影響。只要你 樂於接受新事物，每天都能學到很多新知識，從而為顧客提供他們真正需要 的服務。 我們的酒店位置方便，附近有很多有趣的旅遊熱點。酒店旁邊就是海味街， 荷里活道的藝術社區及PMQ元創方都在步行路程以內。乘的士很快便可到達 蘭桂坊這個香港夜生活據點。 香港除了是一個購物天堂，還有很多隱藏的魅力，例如郊外美麗的景色。我 很喜歡在夏天與家人前往海灘和島嶼。 香港的飲食行業百花齊放，我建議遊客盡情品嚐這裡的傳統點心、地道街頭 小吃和名廚主理的高級菜式。不妨試試一些奇怪的食物，例如中餐廳裡的動 物腸臟和雞腳，這一定會是一趟有趣的美食之旅。■
