Chinese Dragons 中國龍 Powerful and dynamic, the dragon has been worshipped by Chinese people for thousands of years. This supernatural beast represents China itself and has appeared on robes, coins and the national flag. 幾千年以來，中國人都十分崇拜龍，認為它擁有無窮的力量和活力。這種虛構的動物代表中國，經常出現在長袍、硬幣和國旗上。

n the West, dragons were beasts to be feared. Breathing fire, they were symbols of destruction. Saint George, the patron saint of England, famously slayed a dragon and brought civilisation to his people. Why then did the Chinese view dragons so differently? To them, when a dragon spoke, its voice boomed like thunder, while its breath brought forth fire or rain, vital to a nation that relied on agriculture for its livelihood. Hence they were sacred and benevolent creatures to be revered by all. The dragon was believed to make an appearance in the heavens before the birth of an emperor and was seen as a symbol of masculine vigour and fertility. Thus the dragon was the symbol of imperial authority, the emperor wore dragon robes emblazoned with nine dragons, all with outstretched limbs each bearing five claws. These robes could be worn only by the emperor, the heir apparent and high-ranking princes. The dragon is often depicted chasing the flaming pearl, a Buddhist emblem representing enlightenment, with the

whole symbolising the emperor’s search for divine truth for the benefit of the great Chinese empire. Yin and yang, positive and negative forces in nature, were an important influence on dragon robes. The dragon, and by extension, the emperor, was the embodiment of yang, symbolising power and masculinity. They were shown with eighty-one scales, a product of nine times nine, the most powerful yang number. The five claws conveyed another yang number, in contrast with dragons worn by the lower ranking officials which had four claws, a yin number. The Emperor could, however, bestow the honour of wearing the five-clawed dragon, long, on noblemen or officials on merit. Apart from robes, other items were also decorated with dragons. There are nine ways the Chinese have traditionally represented these dragons, each one revealing a different dragon characteristic. There are dragons carved on the tops of bells and gongs, because of the beast's habit of calling loudly when attacked. A second type is carved on the screws of fiddles, since

most dragons are fond of music. The third is carved on the tops of stone tablets, because of dragons' love of literature, and a fourth is found at the bottom of stone monuments, as dragons can support heavy weights. A fifth is placed on the eaves of temples, as dragons are ever alert to danger and will protect the building. A sixth position is on the beams of bridges, since dragons are fond of water. A seventh is carved on Buddha's throne, as dragons like to rest. An eighth is placed on the hilts of swords, since dragons are known to be capable of slaughter, and the ninth is carved on prison gates, as these are dragons that are fond of quarrelling and troublemaking. Everyday items were also decorated with dragons. Porcelain plates and bowls have them cavorting across the design, often chasing the flaming pearl. The dragons are depicted in seeming pursuit, reaching out to clutch at the elusive object; swirling through mists and shadows, mouth agape and eyes bulging in anticipation of the prize afforded by clutching the pearl, often identified as ball lightning, the sun, the moon or rolling thunder. Of course the dragon designs appealed to foreigners and the early trade goods, such as silver bowls, were also embossed with writhing dragons. Another aspect that has become a favourite with foreigners and Chinese alike is

the Dragon Boat Festival, referred to by the Chinese as "Tuen Ng". Dragon boat races are held regularly in Hong Kong on the 5th day of the 5th Chinese lunar month, which this year falls on 9th June. The use of dragon boats for racing is believed by scholars to have originated in southern central China more than 2500 years ago, in Dongting Lake and along the banks of the Yangtze River. The Dragon dance is a traditional performance that, like the lion dance, is most often seen in festive celebrations. The team of dancers manipulate a long flexible figure of a dragon using poles positioned at regular intervals along the length of the dragon. The dance team mimics the supposed movements of this spirit in a sinuous, undulating manner. The dragon dance is often performed during Chinese New Year and is believed to bring good luck; the longer the dragon in the dance, the more luck it will bring to the community. Finally, the dragon is one of the twelve auspicious animals of the Chinese zodiac. What is dim sum?

Dim sum, a Cantonese style of eating, is a small dish serving just a few pieces of food. The many, many dim sum dishes available allows a large group of people to share a cornucopia of options, making for an enjoyable and social experience. In Hong Kong, families commonly get together with their older relatives on the weekend, especially Sundays, for a dim sum lunch. This ritual serves as a valuable bond holding together the social fabric of the Chinese family. A dim sum meal is usually taken at lunchtime. The traditional habit of “Yum Cha” – drinking tea – in the morning together with a couple of dim sum dishes is still practised today in older restaurants. Some even serve dim sum all day along, and why not – it tastes good at any time. Dim sum was historically served by ladies pushing around carts stacked high with various dim sum items. While this conveniently allowed out-of-towners to point and order on sight, patrons sometimes had to hustle to find their favourites. So the practice has given way for the most part to ordering off a menu by ticking items off a piece of paper with printed items and prices. Dim sum in most restaurants is grouped into a few price categories and indicated as such. Usual grouping: small, medium, large, special, and top.

The more people at a dim sum meal the merrier as it allows for sharing of greater variety of dishes. Three or four people should allow you to sample 8 to 10 choices. Tea is a must at a dim sum meal both as a social custom and as a way to help digest the food. Popular varieties are Jasmine, Te Kwun Yam, Oolong, and Po Er or Po Le, which is basically a black tea and very good for digestion. Along with your selection of classic baked, fried and steamed items, try some roast meat dishes, then finish the main meal with either a rice or noodle dish, capped by a simple sweet dessert. Local cuisine includes a good selection of desserts including mango pudding, sago cream, red or green bean paste soup or bean curd pudding in addition to Chinese pastries.

There are literally hundreds of restaurants of all sizes serving dim sum in Hong Kong. We suggest you try a high quality establishment where you can take your time ordering and ask for recommendations if needed. Many five-star hotels have excellent Chinese restaurants serving dim sum for lunch. Victoria City Restaurant, in Causeway Bay, is also renowned for quality dim sum. To enjoy cart-pushing style serving, the best-known option is City Hall Maxim Palace Restaurant. For a really authentic experience, try either Lin Heung Tea House or Lin Heung Kui, or the famous Luk Yu where long-time patrons still bring their bird cages with them. It is no surprise that some are experimenting with fusion style variations of dim sum; try Yum Cha, a new style restaurant serving eye-pleasing and innovative dim sum dishes.

Chef Interview: Secrets of dim sum making 名廚專訪：製作美味點心的奧秘 We spoke with Chef Tsoi Hing Hung, the dim sum chef at Victoria City Restaurant, about making dim sum and more. Learning to make dim sum requires an apprenticeship – you learn by watching and practising; it takes at least three or four years just to learn the basics of making various dim sum dishes. That is why it is becoming harder to find new blood. Young people just don’t have the patience to work in this profession, Tsoi Hing Hung tells us. Dim sum is pretty much a restaurant business because it is so difficult to make at home from scratch. Each one requires hours of preparation, so imagine trying to make five or six different dim sums in a home kitchen, he explains. While certain popular dim sum dishes – such as Har Gao, Siu Mai, or Cha Siu Bao – can be bought from the supermarket to be reheated, the taste is vastly different from freshly prepared and cooked dim sum, not to mention making for a completely different dining experience. There are basically three cooking styles to make dim sum. Steaming is by far the most prevalent as it is fast and can keep the food fresh and warm. The other two are deep frying and baking. But it is the preparation of the dim sum itself that requires so much time. The key to making good dim sum, besides good technique and quality ingredients, is freshness, freshness and freshness. This means buying and preparing the ingredients in the morning, preparing at the restaurant kitchen rather than a central kitchen, and most importantly, making the dim sum to order – to ensure freshness all the way through. “That is what we practise at Victoria City and why our dim sum are so famous. Discerning dim sum lovers can easily tell a freshly made dim sum from something that is prepared a day or even a few hours earlier,’ cautions Tsoi Hing Hung. Condiments such as soy sauce, Worcester Sauce and chilli oil play an important part in the dining experience, which is why we select only quality accompaniments. The same goes with tea; it’s an integral part of the visit and it helps digestion – I recommend Po Er with dim sum as it cuts the oiliness, so to speak. Tsoi Hing Hung’s recommendations: Our classic sim sum dishes such as Har Gao, Siu Mai, Char Siu Bao and Spring Rolls are all very famous. In addition, I recommend customers try our Steamed Rice Rolls, Steamed Vegetarian Dumplings, Baked Minced Meat Pies, and then top it off with mango pudding and sago cream for desserts.

ong Kong has arguably the best and most efficient public transportation system in the world in terms of the variety of transport modes offered and extent of the territory that is covered. It doesn’t take long for a first time visitor to notice that a car rental business, of the kind found in most countries, is practically nonexistent here in Hong Kong as few strangers would relish navigating the city’s mosaic of streets and unforgiving traffic system. The backbone of Hong Kong’s bus system is the fleets of the five major bus companies plus the 16-seat public light buses (‘minibuses’). The overlapping networks of Kowloon Motor Bus (KMB), Citybus, and NW First Bus carry the vast majority of passengers. Hong Kong’s buses and minibuses carry a total of 5.72 million passengers daily. You may wish to hop off either at Repulse Bay to visit the beach or all the way to Stanley, known for its street market, waterfront promenade and beaches. (Probably avoid routes 6A and 6X, which reach the same destination rather less interestingly via a tunnel.)

Sai Kung is the gateway to Hong Kong’s great outdoors and we highly recommend you set aside a full day for a most enjoyable visit to mountains, hiking trails, villages and beaches. Take the 92 bus from Diamond Hill in Kowloon to Sai Kung Town. The scenery along the way alternates between spectacular and rustic. Enjoy the iconic waterfront promenade and board bus number 94 to Wong Shek Pier where you can hike part of the Maclehose Trail and visit the remote Tai Long Wan, arguably Hong Kong’s most beautiful beach.

hanghainese food, one of China’s major regional cuisines, broadly describes the food from Shanghai and its neighbouring provinces Jiangsu and Zhejiang. Known for its refined presentation and milder, sweet taste, the cuisine is widely popular in Hong Kong owing in part to the large influx of Shanghainese refugees from China during the Communist revolution in the late 1940s. The style of the cuisine lends itself to providing a fine dining experience, and the restaurant we picked, King Mang Jardin de Jade, probably tops the list. Don’t let the English name intimidate you; its Chinese literal name “Su Zhe Hui” means “gathering of Jiang Su and Zhejiang”, which more aptly describes this elegant establishment. The restaurant’s ambience is plush and luxurious, its décor is modern Chinese with generous seating space, including several private dining rooms. We started our meal with a selection of cold appetiser dishes, a distinctive feature of Shanghainese cuisine. You can seriously fill up on appetisers alone. Luckily we paced ourselves and sampled just three: “Jardin De Jade” Vegetarian Abalone (HK$88), House Special Simmered Radish with Soy Sauce (HK$56), and Smoked Eggs with Black Caviar (HK$38/2pcs). The vegetarian abalone tastes almost like the real thing and looks it too, a testimony to the preparation effort put into converting large mushrooms into abalone lookalikes. The radish is superb – crunchy and fresh, as is the egg with caviar.

Our main dishes were real treats unto themselves. The Fried Prawn with Onion in Chili Sauce (HK$98) is mildly spicy and tangy sweet, as typical of Shanghainese food, with tender but firm shrimp meat. This gives way to one of the restaurant’s signature dishes, Jardine de Jade Jasmine Smoked Duck (HK$248/whole, HK$128/half), another Shanghainese staple, and a must-order item. The smoked duck’s skin is crispy with a delightfully lingering taste. Served with small, sweet, bread buns, it is easy to pop back five or six without pause. The final main course, the “House Special Marinated Beef Ribs” (HK$380), is 100 percent worth the wait. Generous portions of beef ribs marinated with the restaurant’s own special sauce and grilled to perfection. Tender morsels of beef peel easily off the rack, tasting as good as any grilled steak or prime rib. There is a hint of fusion about this dish, which makes it an inspiration. Our dim sum choice was the “House Special Steamed Juicy Pork Dumplings” (HK$68/6pcs), a refined form of Siao Long Bao, the Shanghainese staple that is becoming popular worldwide. The skin is thin but holds the dumpling well, and the sauce inside tastes heavenly, extracting fully the flavour of the pork and its soup base. By the end, all our gastronomical senses were fully sated and we are already looking forward to a return visit. ■

由於國共內戰，大批上海難民逃到香港，這是上海菜在香港大受歡迎的主要原因之一。上海菜精緻優雅的風格要求高質素的用餐環境，這次我們選擇的餐廳蘇浙匯(King Mang Jardin de Jade)正是其中的表表者。不要被它的英文名嚇到，它的中文名的意思是“江蘇和浙江美食的匯聚”，這更切合這間高雅的餐廳的定位。餐廳環境豪華舒適，配上現代中式裝潢，座位寬敞，更設有幾個房間，為您提供私人用餐空間。我們首先品嚐的是幾款冷菜，這是上海菜的一大特色，光吃冷菜就可以填飽肚子。幸好我們沒有過分貪心，只嘗試了其中的三款：招牌素鮑魚（HK$88/隻）、醬蘿蔔（HK$56/例）及黑魚籽煙燻蛋（HK$38/2隻）。素鮑魚的口感和味道均與真正的鮑魚相差無幾，醬蘿蔔十分爽脆、新鮮，黑魚籽煙燻蛋同樣令人回味無窮。主菜登場了，乾燒明蝦球（HK$98/隻）微辣而帶有酸甜味，充分體現出上海菜的特色，蝦肉鮮嫩而結實。而接下來的招牌樟茶鴨（HK$248/隻，HK$128/半隻）則更勝一籌，這是著名的上海菜，是食客必點項目。外皮香脆，味道齒頰留香，再配上小片的甜麵包，令我們完全停不下筷子，一下子就吃了五六片。最後的主菜是秘制牛肋骨（HK$380/例），這道壓軸出場的招牌菜絕對值得等待。牛肋骨份量十足，配上蘇浙匯特製醬汁，火候控制得恰到好處，輕易就能將肉和骨頭分離，味道和所有烤牛扒和上等牛肋骨一樣，讓人食指大動。這道菜也許是創新的融合菜，顯然是很成功的嘗試。點心時間到！我們選擇的是蘇浙湯包（HK$68/6隻），這是由著名的小籠包改良而成的菜式，在全世界越來越受歡迎。湯包外皮透薄，將肉和湯汁緊緊包裹著，湯汁充分吸收了豬肉的精華，味道十分鮮美。蘇浙匯一系列精心製作的美饌讓我們大呼過癮，希望很快有機會再次品嚐。■ MAY 2016

Still, a fine Chinese meal exquisitely prepared and served in an elegant ambience remains an unmissable dining memory for any visitor to the territory. Spring Moon, the Peninsula Hotel’s famous Chinese restaurant, offers just such a dinner experience. Opened in 1986, the restaurant is elegantly decorated in classical Chinese décor and the service by the attentive but discreet staff is impeccable, as you would expect from a restaurant of such stature. Our meal started out with a bang as “Roasted Peking Duck” (HK$780) was served. Mouthwatering crispy skin, tender meat, sweet plum sauce, fine condiments all wrapped in small, thin pancakes are beautifully presented and delicious; the temptation to overeat is overwhelming! Our next dish was the “Double-boiled snow goose with gringo in organic soy-milk” (HK$290) which tastes as healthy as it sounds. “Double boiled” is a prominent Cantonese cooking style for soup in which the soup urn is partially immersed in slowly boiling water, to bring out and capture the flavour of the ingredients. The soup tastes fresh and velvety smooth; we lapped it up in seconds and begged for more. It’s supposed to be good for the skin as well, Then we tried the “Pan-fried garoupa fillet with supreme soy sauce” (HK$750), which contrasts wonderfully with the soup. Fillets of the highly prized

garoupa, which is a large grouper, is lightly pan-fried with a specially made soy sauce that is aromatic and not too salty. The skin is crispy but the meat inside is tender, juicy and firm, a tribute to both the cooking style and, of course, the quality of the fish. The next item on the menu is “Spare ribs and pear seasoned in dark vinegar” (HK$290), which is a highly refined version of the classic sweet and sour pork. The coating of the pork is thinner, the meat is tenderer, and the seasoning of the dark vinegar is subtler. The pear, a distinctive Korean variety, was steeped in a special syrup and its refreshing state and red colour provide a visually pleasing and appetising complement to the spare ribs. We wound up our dinner with “Stir fried broccoli with garlic” (HK$200), just what we needed to cleanse the palate. Chinese desserts are underrated internationally compared with, say, French pastries. But be assured the Chinese have as sweet a tooth as anyone else. Our dessert was “Chilled mango pudding infused with purple glutinous rice and coconut” (HK$58), which cleverly blends two desserts into one. The sweet rice and the tangy mango pudding go surprisingly well together and the combination was eagerly consumed. Top off your visit to Hong Kong with a special dinner at the Spring Moon – we are confident it will be as memorable as ours! ■

選擇，鼎鼎大名的半島酒店嘉麟樓正正能為顧客提供這種難忘的用餐體驗。嘉麟樓於1986年開業，餐廳裝潢走中式典雅路線，服務一絲不苟，讓人無可挑剔，符合餐廳的高標準定位。首先登場的是北京片皮鴨（HK$780）外皮香脆，令人垂涎欲滴，鮮嫩鴨肉配上香甜梅子醬，加入佐料，用薄麵粉皮包裹著，味道令人欲罷不能。下一道菜是健康美味的有機豆漿福果燉雪雁（HK$290）“燉”是經典的粵式烹調技術，將湯鍋浸在少量水中，慢火加熱，可帶出湯料的味道。湯底味道鮮甜，口感柔滑，很快就被喝光，令人回味無窮，據說對皮膚也大有裨益。接下來的頭抽小蔥焗花尾躉（HK$750）與之前的湯底形成強烈對比，花尾躉是一種珍貴的石斑，稍稍煎香後搭配特製的豉油，鹹味恰到好處，香氣四溢。廚師以純熟的技巧精心烹調高質素食材，令魚的外皮香脆但肉質依然鮮嫩多汁，口感結實。緊接著的桂花梨黑醋排骨（HK$290）就像是高級版的糖醋排骨：排骨外層較薄，肉質更嫩滑，選用黑醋作調味，令整道菜式再提升一個層次。桂花梨來自韓國，以特製糖漿浸泡，口味清新，顏色紅潤，除了視覺上令人更愉悅之外，也讓排骨更加清爽開胃。一系列美味佳餚之後，不妨以新鮮時蔬作結。蒜蓉炒西蘭花（HK$200）帶來清新口感，作為最後一道菜是最好不過了。與西式甜品特別是法國甜品相比，中式甜品似乎總是略遜一籌，但其實中國人同樣喜愛甜食。今天的甜品是椰汁紫米香芒布甸（HK$58）師傅巧妙地將兩種甜品合二為一，香甜的紫米和芳香撲鼻的芒果布甸配合得出乎意料的好，齒頰留香。來嘉麟樓享受饕餮盛宴，定能為您的訪港旅程留下美好回憶！■

Octopus Card 八達通卡 Stored-value cards for travel on the MTR, buses, minibuses, trams, and ferries. Available at service counters at the Airport Express and MTR stations. Each card comes with a refundable HK$50 deposit which covers the card cost. Initial stored value cost per card varies: Child (HK$20), Adult (HK$100), and Elder (HK$20). Simply place the card on the Octopus pad and the fare is automatically deducted. For over a century, trams on Hong Kong Island have been an inexpensive mode of transportation. You can ride the full length of the 15-kilometre track at $2.30 per adult, $1.20 per child and $1.10 for a senior. 香港置地文華東方酒店禮賓部副經理袁志豪與我們分享他對酒店業的獨特見解及個人經歷。 CityLife: What do you like most about your job? Mike: I love to interact and engage with our guests - I can learn so much from the many esteemed guests. I feel a great sense of satisfaction when I help them with problems and win their acknowledgement. CL: Any memorable requests from your guests that you can share? Mike: Three years ago, a Japanese collector stayed in our hotel and wanted us to help him find a rectangular clock that has three parts: clock, date, and the Lunar calendar. We tried all kinds of avenues but to no avail; our guest left Hong Kong disappointed. It stayed on my mind though and I finally found it on Tao Bao, which we then purchased and shipped directly to the guest. CL: Have you observed any changes in service requests from your guests? Mike: Guest requests used to be quite straight forward: where to visit, or eat or sightsee, needing only the basic information. With so much information available online, guests today may know more than I do. They would ask, for example, what signature dishes a restaurant might feature or whether a well-known chef might be on site at the restaurant- so this is much more of a challenge for us to keep up. CL: Where do you go to relax after work? Mike: I enjoy hitting bars after work which is helpful to my job as so many new restaurants and bars are opening up, This helps me to be in the know. I enjoy hiking during the day- Dragon’s Back and Saigon area are two of my favorites. ■

A two day itinerary for his hotel guests: First day: Go to the Peak, either by the Peak Tram or by bus, and then, if time allows, have lunch at the historic Luk Yu Tea House or Lin Heung Tea House on Stanley Street for dim sum and experience the local culture. Then take a tram to Sheung Wan and Western to take in the sights and sounds of the old districts. Then a brief rest at the hotel followed by taking the Star Ferry to Tsim Sha Tsui for the night scene and dinner. The ICC in West Kowloon has many fine dining restaurants and is a perfect place to enjoy good food and the harbour view. Second Day: Go to Shatin’s Ten Thousand Buddhas Monastery with its thousands of Buddha statues. Then Mongkok’s famous street market – Ladies Market – for bargain shopping. Back to the hotel after lunch for a relaxing spa session.
