Weather in November in Hong Kong is usually lovely and perfect to venture outdoors or explore the city on foot. Our cover story (on page 10) suggests three urban walking tours to explore the city’s neighbourhoods: Central and neighbouring Sheung Wan, which together have become one of the most culturally diverse and dynamic areas of Hong Kong; Wanchai and Causeway Bay, another fascinating part of Hong Kong Island undergoing transformation that blends the new with the old; and Nathan Road in Kowloon, the renowned “Golden Mile” and the main thoroughfare from Tsim Sha Tsui to Sham Shui Po, with a bewildering variety of things to do and see. Be sure to save some time to do one of the walking tours, if not all – it’s the best way we know to get to appreciate all Hong Kong has to offer. Hong Kong’s skyline is world renowned, owing to its natural geography of steep mountains, great natural harbour, and of course endless skyscrapers that dominate the cityscape – it’s a real treat for lovers of architecture. So why not also explore on foot or otherwise some of the iconic buildings designed by internationally famous architects? Our feature story on page 16 highlights some of these buildings and the architects behind them, including the Bank of China Tower by I.M. Pei and the HSBC Building by Norman Foster. It would be a pity to miss them while you are here. November also sees the city celebrate the Hong Kong Great November Feast with a number of culinary events taking place across the city including the Marco Polo German Bierfest, Queen Road East Festival and Lan Kwai Fong Carnival – there’s something for everyone, from dedicated foodies and lovers of good wine to those with a more passing curiosity. There are plenty of cultural events taking place as well: the highly popular Clockenflap, Hong Kong’s premier music and arts festival, returns this month – the three-day extravaganza has a new venue at the Central Harbourfront Event Space, but the programme’s activities and performances are as diverse and popular as ever. You do not want to miss it for sure! And creative arts of all sorts make their presence felt in Hong Kong with the hosting of New Visions Arts Festival 2016, its eighth edition. The festival serves as a creative platform where various artistic genres and cultural insight converge to creative new viewing experiences – what a pleasant way to be surprised, visually at least! Whether it’s walking tours, food festivals, arts events and just random exploration, you have picked a great month to visit Hong Kong, the perfect time to get acquainted with the city – you will be more than pleasantly surprised! ong Kong is a great place to choose and buy antique Chinese furniture, sourced from all over China. Some dealers send the pieces to workshops across the border, where they have more space to clean and restore the pieces. Others prefer to have their own workshops in Hong Kong where restoration is done under close supervision.

Furniture styles U n t i l t h e Ta n g d y n a s t y ( 6 1 8 - 9 0 6 A D ) sleeping, working and eating all took place at ground level using low pieces of furniture. Later, by the Song dynasty, high form furniture such as stools and chairs developed and was used by everyone. With the refinements in manufacturing and fashion over the next few centuries, the Ming and early Qing dynasties were a golden age of Chinese furniture. Ming furniture is simple and clean in design. It is scarce, since pieces are over 400 years old, and not so long ago old furniture in China was broken up to reuse the

wood. Chinese craftsmen of this period are unsurpassed. In a sophisticated system of joinery, each two pieces were fitted together, without the use of nails or glue, then a small peg was inserted into the joint to make it solid. The pieces included ingenious features such as tables with floating panels that could be altered to compensate for shrinking wood (as all wood shrinks with time).

Ming chairs Like upright horseshoe or yoke-back chairs, Ming chairs are very elegant, while folding chairs were used by officials when travelling. A scholar’s desk had a top which lifted off two side sections that held the drawers, allowing it to accompany the official on his travels. Display cabinets held books or small items of aesthetic value such as porcelain or snuff bottles. Square tables were used for dining, while long rectangular tables were for practising calligraphy or Chinese painting. Beds were canopied and often included drawers to hold possessions.

Types of wood Much of the best furniture was made from hardwood huang huali, (yellow flower pear wood) which has a very fine texture with colour ranging from pale honey to dark reddish brown. It is renowned for its fine grain and warm feeling. Zitan, tzi tan, is another hardwood, dense and very heavy, and prized as it is now extinct. It is distinguished by fine silvery cobwebs on the surface of dark purplish black wood. Generally it is too dark for more than a smallish piece. Jichiumu (chicken wing wood, as the grain resembled the neck feathers of a chicken), and ying mu (burl wood cut from a large knot or twisted root) are other popular hardwoods. In theory, hardwoods are from deciduous trees and softwoods from coniferous trees. But 'softwoods', used to describe Chinese furniture refers to miscellaneous woods that were indigenous to China and include elm, willow and walnut as well as cedar, cypress, pine and camphor wood. Blackwood was the name given by westerners to 19th century decorative Chinese furniture but the term has no real meaning. Actually a rosewood, which is the commercial name for the wood of several tropical trees, the colour is reddish purple often streaked with black and further blackened to popular taste. Hong mu, literally redwood, is a general term now in use. Modern furniture in period designs is still extensively made and the degree of darkness can be specified by buyers. In the 1970s it was particularly popular with expatriates in

Hong Kong as at that time good western style furniture was hard to come by..

Late Qing and Hybrid Pieces Late Qing dynasty furniture is more plentiful and includes country style furniture and socalled provincial pieces – although they were also used in Beijing and other major cities. Other types of furniture are stools, kitchen cabinets and wedding cupboards painted red or green with large circular brass fittings. Mostly made from softwood, they are less expensive than hardwood. Although catering to the less well off, the results are often splendid, albeit skimping on finishing in parts not normally seen. Today they are more affordable as the supply of classic pieces is limited. Inexpensive pieces of furniture are easily acquired but these are often hybrids, made up of parts from several different pieces of furniture. There is a constant demand for these ‘decorator' pieces from the late Qing dynasty and most dealers specialising in furniture have a steady supply. Some pieces can be altered to suit today's lifestyle. A small dining table may be cut down to make a coffee table or a cupboard can have its interior reworked to hold a TV. Whatever is done the elegance of many pieces fits in well with modern decor and can add a special element to any design. Although there are shops in many districts, the main antiques area is the western end of Hollywood Road, just a short walk from Central. ■

Use the tram track as the spine and you can wander off the side streets as needed. Start at the beginning of Hennessy Road just after Admiralty. uch like performance art, the practice of a rc h i t e c t u re i s a n e g o p ro f e s s i o n – l e s s flamboyant for sure, but intrinsically only different in its execution. Who among us wouldn’t want to have a building of their own design stand in posterity, if not perpetuity? And to have an iconic building that stands out here in Hong Kong, a city known for its skyscrapers and its skyline (the most skyscrapers in the world and one of the world’s most stunning and beautiful skylines), is an unbeatable ego boost for any architect. So it is no surprise that many of the world’s most renowned architects seek a legacy in Hong Kong. It is noteworthy, however, that while the city is dotted with architecturally impressive and interesting buildings, not that many are designed by internationally significant architects. There are a number of reasons for this: the practical approach of Hong Kong’s developers means that most buildings here are commercial while many architects prefer public buildings such as museums as vehicles of their architectural expression; rules requiring that submitted building plans comply with local building codes may discourage the use of international architects for the added costs and time; and finally local architects do deliver well designed buildings fit-for-purpose, a testament to their standards and quality indeed. Whatever the case, the city does have its fair share of buildings designed by world renowned architects. It’s well worth your time to take an architectural tour of Hong Kong and check out the monuments left by these global masters of their trade!

A recent arrival among Hong Kong’s architectural collection, the late Iraqi-born British architect, who two years later designed the 2012 London Olympics Aquatics Centre, created this seamless fluid structure blurring the tower and podium concept commonly seen in Hong Kong. The Shanghai-born American Chinese architect, now 99 years old, bequeathed one of his masterpieces in designing the triangular, 72-storey Bank of China Tower, which was Hong Kong’s tallest building until overtaken by Central Plaza in Wanchai. Also designer of the controversial Glass Pyramid at the Louvre in Paris, Pei’s BOC building is often touted as Hong Kong’s most iconic building, and for good reason, although the building’s sharp edges were once controversial and are considered bad feng shui, even to this day.

This American architect, known for his ‘minimalist’ design concept, designed the distinctive Lippo Centre in Admiralty. It was formerly called Bond Centre – for notorious Australian developer Alan Bond, who acquired the project mid-stream. The two towers feature hexagonal pop outs that accentuate the building’s zig-zag form – you can’t help but stare at it. Rudolph designed a similar building in Singapore called the Concourse, on Beach Road, with less startling effect though.

I.M Pei在上海出生，是一名美籍華裔建築師，如今已有99 歲高齡。中銀大廈外型為稜柱狀，樓高72層，直到灣仔中環廣場建成前一直是香港最高的建築物。I.M Pei也是具爭議性的巴黎羅浮宮金字塔的設計師。中銀大廈常被認為是香港最具代表性的建築物，雖然其刀鋒般的形狀曾引起不少爭議，至今仍有人認為設計存在風水問題。

HSBC Main Building, Hong Kong International Airport, Cyberport, the Lily. Lord Foster has made his mark on Hong Kong with his thriving practice. It is the HSBC Main building, built in 1982, that is his most famous legacy. Touted as the world’s most expensive office building at the time it was built, the aluminium-Steel-and-glass structure is designed to provide external views for all of its occupants. Legend has it all the building pieces can be dismantled and re-assembled if necessary. The building also is influenced by local feng-shui notions, as evidenced by its passthrough ground floor, a haven for some of Hong Kong’s many domestic helpers who gather there on Sundays. Hong Kong International Airport’s Passenger Terminal is another Foster masterpiece with his signature floating roof adorning the airport building, similar to his design at London’s Stansted Airport.

國際金融中心二期 This elegant and striking skyscraper, Hong Kong’s second highest, was designed by Argentine-American architect Cesar Pelli, who also designed the Petronas Towers in Kuala Lumpur, which were the tallest buildings in the world until eclipsed by Taipei 101 in 2004. This iconic eight-storey building on Victoria Peak overlooking the harbour certainly catches the eye, with its “wok” shaped inverted tower housing the Peak Tram station and a number of tourist attractions. The Hong Kong Club Building 香港會所大廈

This American architect, who designed the famed Guggenheim in Bilbao, was absent from Hong Kong’s skyline until Swire Properties commissioned him to design the Opus, an ultra-luxury apartment building on Stubbs Road on Victoria Peak. Completed in 2012. The 12-storey building, with a most unusual helical structure and enclosed glass column twisting their way up the building, has one 6000-square-foot unit on each floor, with outstanding views of the harbour and its surrounding mountains. 這位美國建築師同時也是西班牙畢爾包的古根漢美術館的設計師，太古地產聘請他設計位於太平山頂司徒拔道的豪宅傲璇，傲璇於 2012 年落成，樓高12層，呈獨特的螺旋形，玻璃包圍的鋼柱包圍整座大樓，每層一個6000呎單位，可觀賞壯麗的維港景色及醉人山景。

special culinary treat for visitors coming to Hong Kong in November is eating hairy crabs, a seasonal delicacy available only at this time of year, with November the best month. The most prized hairy crabs come from the lakes of Tai Hu and Yang Cheng, both in Jiangsu province near Shanghai. The crab derives its name from the chunk of hairy ‘moss’ that grows on its claws. The crab meat is fresh and sweet, but the part most valued by aficionados is the crab’s rich thick golden roe. The crab is steamed and served hot, and while deshelling a hairy crab is considered fun by some and arduous by others not so familiar with the technique, it is certainly part of the ritual. A good size crab is about 200 to 250 grams and is normally the featured dish of a dinner meal. Demand for hairy crabs is high in Hong Kong, and thankfully the city still manages to get preferred quality allocation from China despite rising demand elsewhere. We tried our hairy crab meal at the famed Man Wah, at the Mandarin Oriental Hotel, one of Hong Kong’s venerable, iconic hotels. The Michelin-starred restaurant serves primarily Cantonese cuisine plus classical, regional Chinese dishes. The impeccably decorated restaurant exudes elegance and luxury, and you know you are in for a special meal. Man Wah has created a special menu featuring dishes pairing minced crab meat and crab roe with different meat selections. The dishes can be ordered either a la carte or as part of a set menu ($768 and $1388 for six-course set lunch and dinner respectively). Our first course is the Deep Fried Boneless Chicken Wing with Crabmeat ($198), a refreshing choice as the tender chicken meat blends in well with the crab meat. Next is the Pan Fried Scallop with Shrimp

Paste and Crabmeat ($228) – we like the sweet taste of the scallops which the crab meat helps accentuate, aided by the salty shrimp paste flavour, a most pleasant sensation to the palate. The Braised Pork Ball with Crabmeat in Brown Sauce ($198) is served next. This highly popular Shanghainese dish , also called Lion’s Head in Chinese, is a staple in most restaurants’ menu. We like the effect of the crab meat flavour adding to the heavier sauced pork, creating a delightful balance. We saved the best for last: the Stir Fried King Prawn with Rice Cake and Crabmeat ($298). The flavours of both the prawn – which is really crunchy and tender – and the crab meat are soaked up by the bland, slightly chewy rice cake, and make for a delicious combination. We would be remiss not to mention that the meal was accompanied by a most delightful drink made from preserved plums that is slightly sour and sweet and light, and which lightens the meat flavours – be sure to ask for it if available. We finished our meal with two more courses: exquisitely presented Poached Shanghainese Cabbage in Supreme Broth – carved like a flower and a most welcome respite from the meats – and Braised Rice with Sea Cucumber and Chicken, the tasty rice serving as a fitting end to this wonderful meal. The restaurant will be serving steamed hairy crabs for the month of November and will fly in two lovely Shanghainese ladies to demonstrate and de-shell a hairy crab with the crab shell wholly intact afterwards in less than three minutes. 秋風漸起，又到了每年一度品嚐大閘蟹的最佳時節，十一月訪港的旅客可以大飽口福了！來自江蘇省太湖和陽澄湖的大閘蟹向來是最受歡迎的。大閘蟹又稱為毛蟹，這種蟹的特徵是蟹螯上有密集的絨毛，因而得名。大閘蟹的蟹肉味道鮮甜，但最令大閘蟹愛好者瘋狂的是那質感厚實、味道濃郁的金黃色蟹膏。大閘蟹通常用蒸的做法，去蟹殼的過程對部分人來說頗有樂趣，但也有人認為十分麻煩，但無論如何，這都是必要的步驟。大閘蟹每隻約200到250克重，通常都是晚宴中的主角。香港對大閘蟹的需求很大，幸好高質素大閘蟹的數量尚算充足。文華東方酒店是香港最老牌、最具代表性的酒店之一，這次我們來到酒店內頗負盛名的文華廳。這間米其林獲獎餐廳提供粵菜及各地區傳統中菜。餐廳裝潢優雅奢華，為賓客營造完美的用餐環境，一踏進餐廳就能預料到這一定是一頓特別的晚餐。文華廳特別為賓客設計了一款以蟹肉和蟹膏搭配不同肉類的特色菜單，可選擇單點菜單或六道菜的套餐菜單（午餐$768/位，晚餐$1,388/位）我們品嚐的第一道菜是蟹粉燒鳳翼 ($198)，嫩滑的雞肉和蟹肉是完美配搭，味道十分清新。下一道菜是蟹粉煎百花元貝皇 ($228)，蟹肉的味道突出了元貝的鮮甜，配上鹹香的蝦醬，滿足了我們挑剔的味蕾。接下來的紅燒蟹粉獅子頭 ($198) 是很受歡迎的上海菜，是很多餐廳都有的常見菜式，在獅子頭中加入蟹肉，是一道口感和味道都很均衡的菜式。我們最喜歡的是蟹粉年糕老虎蝦 ($298)，老虎蝦炸得外脆內嫩，年糕的味道清淡，口感軟糯，完全吸收了蟹肉的味道，滋味配搭令人回味。除了各款美饌之外，不得不提的是適合搭配以上各款菜式的酸梅湯，淡淡的酸甜味可稍稍平衡肉類的味道，別忘了問一問侍應當天是否有酸梅湯供應。除此之外，我們還品嚐了高湯津白菜，大廚獨具匠心地將津白雕琢成花狀，味道清新，令我們感覺十分舒適。最後一道菜是美味的海參雞粒炆飯，為這一頓完美作結。文華廳將於整個十一月供應大閘蟹，更將派出兩位服務員，以純熟技巧於席前為賓客三分鐘內拆解原隻大閘蟹。趕快訂座，一嚐蟹鮮吧！■

anhai Number 1, located on the top floor of i-Square in Tsim Sha Tsui and with a commanding view of Victoria Harbour, is a favourite dining hotspot among both locals and visitors. Operated by Elite Concepts, a restaurant group specialising in contemporary and themed highend dining, the restaurant serves a broad collection of quality Chinese cuisines. The restaurant is spacious, modern and comfortable. The high ceiling creates an airy ambience, helped by the bright skyline that surrounds the restaurant – the famous Eyebar located at the same premises, where guests can enjoy the stunning harbour view from its open air terrace, further cements the restaurant’s status as a desired dining destination. Not surprisingly, the restaurant offers hairy crabs when in season, with their own proprietary supplies from Yang Cheng Lake. We tried the special dinner tasting menu ($1080) with the steamed hairy crab as the featured dish. The generously portioned menu starts off with Crab Roe Dumplings and the Crispy Shredded Yam with Peanuts as starters. The filling of this popular Shanghainese dumpling is juicy and tender, and is best eaten in a single swallow, allowing the flavour to linger in the mouth. The shredded yam is crispy fried, with the appetising sweet and sour sauce providing a nice contrast. The Steamed Hairy Crab comes next; ours was about 200 grams, which is a decent size. A special dark vinegar sauce mixed with ginger always goes with the dish so as to reduce the

“cooling effect” of the crab. Whatever the reason, the vinegar certainly complements the crab, especially the roe. The roe in our crab was golden brown in colour and creamy rich in taste. It was just a pity that there is only so much in each crab. The table became quiet as the focus turned to deshelling and savouring the crab. After the crab come the other dishes. First, the Steamed Grouper with Bean Curd and XO Chili Sauce – the texture of the fish fillet is firm and tender, and the steamed bean curd base soaks up the flavour. This is quickly followed by the Sautéed Chopped Yunnan Green Peppers with Clam Wrapped in Lettuce Cups. The dish name is self-explanatory, with the lettuce helping to provide a crunchy and refreshing texture to the tender clam meat and chopped peppers wrapped inside. The Roasted Pigeon, another local delight, and the E-fu Noodles with Crab Roe in Superior Soup comprise the last two dishes. The pigeon skin is crispy and its meat firm and flavourful. The E-fu noodles, a Cantonese specialty, are delicious, helped by the broth base and of course the crab roe. A Sweet Jujube Jello Dessert brings this meal to a satisfying end. By this time we are quite full, and we actually skipped two dishes that feature on the tasting menu: Shark’s Fin with Crab Roe and Simmered Asparagus in Broth. A hungry mind and empty stomach are required to make the most of this sumptuous dinner! ■

南海一號位於尖沙咀國際廣場頂層，可俯瞰維多利亞港迷人景色，向來是本地人和遊客最愛的美食熱點之一。南海一號屬主打新派主題高級餐飲的優意集團旗下，提供各式各樣的高級中菜。餐廳面積寬敞，裝潢充滿現代感，感覺十分舒適，高樓底的設計更營造出開揚、氣派的格調。食客可在餐廳旁邊享負盛名的 Eyebar 戶外露台觀賞維多利亞港海景，是休閒放鬆的最佳選擇。涼風送爽，又是品蟹的好時節。南海一號每年都會推出來自陽澄湖的時令大閘蟹。這次我們很榮幸率先品嚐全新大閘蟹套餐（$1,080）其中包括5兩重的清蒸大閘蟹。這次推出的大閘蟹套餐份量十足，頭盤是蟹粉小籠包和麥糖花生脆芋絲，小籠包柔軟的外皮包裹著美味湯汁，一口吃完，香氣縈繞在嘴裡。芋絲炸得十分香脆，與甜酸醬的味道形成鮮明對比，令人胃口大開。下一道菜就是這頓晚餐的重頭戲——清蒸大閘蟹，每隻約重 200克（5兩）。傳統中醫認為大閘蟹偏寒涼，因此通常會搭配黑醋和薑絲以驅寒氣，這裡當然也不例外。不過無論是什麼原因，黑醋的味道與大閘蟹的鮮甜味配合得恰到好處，特別是蟹膏那獨特香味，實在令人無法抵擋。大閘蟹一上桌，大家就安靜下來，仔細地去殼品嚐。金黃色的蟹膏十分粘稠，味道濃郁，可惜每隻蟹的蟹膏有限，我們都覺得意猶未盡。下一道菜是XO醬白玉蒸斑球，魚肉結實而鮮嫩，蒸豆腐完全吸收了醬汁的味道。接下來的皺椒蜆肉生菜盞同樣充滿驚喜，生菜口感爽脆，味道清新，包裹著美味的蜆肉和雲南皺椒，又是一道相當有特色的美食。最後兩道菜是充滿地道風味的紅燒乳鴿和蟹粉鴻圖伊麵。乳鴿皮脆肉嫩，滋味十足。伊麵是廣東特色美食，配上濃郁的湯底和香氣四溢的蟹膏，一試難忘。壓軸登場的甜品和田玉棗糕為這頓晚餐劃上完美句號。吃完這些我們已經非常飽了，但實際菜單上還有生拆蟹粉乾撈勾翅和上湯原條蘆筍兩道主菜，來品嚐大閘蟹套餐前要有大幹一場的心理準備哦！■

Il Moro Il Moro is a small Italian restaurant tucked away in a quiet area of Sheung Wan. If you want the feel and taste of home-made Italian food, lively conversation included, you should definitely try Il Moro. Its owner and chef, the energetic and loquacious Joseph, believes in embracing his guests with an informal and cosy dining experience, and happily prepares off-menu dishes as requested. For our meal, we trusted Joseph’s guidance and were richly rewarded. A procession of his favourites followed; the starters included the crispy and garlicky Bruschetta ($70), the fresh Roasted Cherry Tomatoes and Basil ($50), Coppa, Arugula and Shaved Pecorino ($85)- we loved the cheese and the meat combination, and the Prosciutto on a bed of Grilled Asparagus ($75)- all of which were quickly consumed. The entrees are equally appetising: Roasted Melanzane stuffed with Minced Beef served with Tomato Salsa ($170 for two), the Sicilian Clams with Chili and White Wine Sauce ($120), the Tortilli with Guanciale Di Manzo ($140), and the freshly made Red Snapper Fillet, Prawns on a Bed of Black Ink Squid ($180) round out the meal. Il Moro definitely is one of Sheung Wan’s hidden gems, and worth checking out if you want a zesty, hearty Italian meal in lively company, and all at reasonable prices!

飲食指南

Praya Waterside Eatery Praya Waterside Eatery, on Kennedy Town Praya, and formerly the Irish restaurant Kinsale, reopened its doors recently. New executive chef Michael – who has worked extensively in both Melbourne and Hong Kong – has come up with an innovative concept using a broad palette of interesting and special ingredients. The signature dishes we sampled included Seared Scallops Paired with Candied Pork Belly and Aioli ($158). The fried scallops were crispy and tender, complementing the pork belly, which is cooked with a special sweet and lemon sauce. The Whole Roasted Seabass ($258) is mouthwatering with its crispy skin and tender fillet. The Smoky Slowed Cooked Pork Ribs ($238) practically melts in the mouth as the tender meat separates readily from the bones – the shallot potatoes provide a good complement. Besides the signature dishes, the Seafood Spaghetti ($228) is worth trying, as are the desserts, including the Sesame Fried Goat Cheese ($148) and the Chocolate Pavlova with Mango and Vanilla Cream ($78), both innovative and tasteful creations.

Praya Waterside Eatery前身為愛爾蘭餐廳Kinsale，早前已於堅尼地城新海旁隆重開幕。餐廳請來曾在墨爾本和香港多間知名餐廳任職的新任行政總廚 Michael，他擅長運用特色食材入饌，製作出獨具匠心的佳餚。香煎帶子配蜜餞豬腩肉 (HK$158) 是我們品嚐的第一道招牌菜，新鮮飽滿的帶子煎得外脆內嫩，加上微甜的五花肉和特製檸檬蛋黃醬，令人食指大動。烤原條海鱸(HK$258)將魚皮煎至香脆，但魚肉依然嫩滑。煙燻慢煮牛肋骨(HK$238)經長時間烹煮，肉和骨頭能輕易分離，再加上香蔥馬鈴薯沙律作為配搭，心思十足。招牌菜式以外，同樣充滿驚喜。雜錦海鮮意粉（HK$228）以魚湯和番茄醬作湯底，滿載鮮味，芝麻炸羊奶芝士 (HK$148) 外層香脆可口，入口充滿芝士香。朱古力蛋白酥配芒果及雲呢嗱忌廉（HK$78）在蛋白酥上鋪滿朱古力醬、香草忌廉和朱古力碎，再以鮮芒果和芒果乾點綴，是一道十分出色的新派甜品。

My passion is the study of leadership and specifically how leaders leverage relationships within and between organisations to unlock their own leadership potential and enhance their organisation’s performance. I’ve led talent development programmes with companies in over twenty countries. I have also experimented with delivery methods in leadership training: my colleagues and I launched an online course which has become the world’s most popular online leadership course with over 150,000 students all over the world. I am excited to bring our research insights and share them with our programme participants. The Strategic Leadership Program is an intensive five-day leadership development course that we offer to senior managers with, typically, director or similar titles, and who have significant strategic and operational responsibilities in their companies or business units. The programme is designed to improve and enhance their leadership skills. Our programme distills the many research and practical insights learned at the Michigan Ross which is a recognised world leader in organisation and leadership studies. Competing Values Framework is the cornerstone of Michigan Ross’s research on leadership. In short, it identifies dominant tendencies in the way we lead other people (e.g. the extent to which we focus on performance results versus people development). It also allows leaders to explore the tensions that arise from different dominant tendencies either between individuals or between the individual and the organisation. It’s a powerful concept that helps align the individual’s leadership style with both the culture and strategic objectives of the organization. In that sense the framework can be both diagnostic and prescriptive.

This multiplier effect is a highly effective way of leadership development for companies from both a cost and time standpoint. Such scholar items included huanghuali seal chests, used to store various seals and trinkets; zitan book chests to store rare and valuable books; and huanghuali or zitan brush pots, chess boxes, and tea trays. A groundbreaking conference to further the research of Chinese archaeology will take place on 4-5 November 2016 at the Chinese University of Hong Kong. Jointly organised by the Chinese Cultural Studies Centre and BA in Cultural Management Programme, the two-day conference on Shang and Zhou Bronzes and their Casting Technology will be the largest conference on ancient bronzes ever held in Hong Kong with an illustrious list of archaeologists from China, Canada, France, and Japan as expert presenters. In the long history of China the ritual bronzes from the Shang and Zhou Dynasties stand as some of the most stately and impressive artefacts. They have been much admired and copied through the centuries, by emperors and imperial scholars from the Song and Qing Dynasties, among others. Octopus Card 八達通卡 Stored-value cards for travel on the MTR, buses, minibuses, trams, and ferries. Available at service counters at the Airport Express and MTR stations. Each card comes with a refundable HK$50 deposit which covers the card cost. Initial stored value cost per card varies: Child (HK$20), Adult (HK$100), and Elder (HK$20). Simply place the card on the Octopus pad and the fare is automatically deducted. For over a century, trams on Hong Kong Island have been an inexpensive mode of transportation. You can ride the full length of the 15-kilometre track at $2.30 per adult, $1.20 per child and $1.10 for a senior. CONCIERGE CHAT CityLife: Can you tell us how you got started in the hotel industry? Ringo: A schoolmate introduced me to this industry back in 1979, and it’s now 37 years and counting. I was impressed by the concierge’s uniform and the golden key on its lapel, so I chose concierge as my job. I joined Kowloon Shangri-La in 1982 and became the Service Manager as I progressed. CL: What is your favourite part of the job and why? Ringo: I enjoy all the challenges that come with the job, which means I have to deal with anything and everything. A successful concierge needs to be experienced, have a broad network, and be resourceful. I am an outgoing person and like to help people, so this is a very enjoyable job for me. CL: Have you observed any changes in guests’ service needs? Ringo: Guests demands are clearly becoming more discerning. Most guests are already up to speed with the basics, from the internet, and are looking to us for more detailed and specific

information. So we have to raise our service standard and be highly attuned to their needs and preferences. CL: Any memorable requests from guests that you can share with us? Ringo: A couple from Europe who were staying at our Guangzhou Shangri-la came to Hong Kong for an excursion and checked into our hotel – the husband was Italian and wife French – and they had planned to return to Guangzhou to catch a flight back to Italy. But to their horror they discovered that their China visas were single entry only and it would take four days to apply for a new one, for a French citizen. We suggested they changed their flight to one leaving from Hong Kong, and we arranged for their luggage to be transferred to our Shenzhen Shangri-la. We then arranged for our staff to accompany the husband to Shenzhen, which grants same-day landed visas to Italian passport holders, to pick up the luggage. They were able to return home without further incident.

周：近年來顧客對服務的要求提高了不少，由於科技發展迅速，一般顧客向我們求助前已在互聯網上獲取一定信息，這就要求我們的服務更加細緻，更關注顧客的需求和喜好，而不再是只提供基本信息。東方之珠：顧客曾提出什麼讓你覺得很難忘的要求嗎？周：有一次一對夫妻下榻我們酒店，妻子和丈夫分別是法國人和意大利人，他們從廣州香格里拉酒店到香港遊玩，然後回廣州乘飛機到意大利。沒想到他們只有單程簽證，不能再從香港進入內地，而法國人辦理簽證需時四個工作天。我們建議他們將機票改為在香港起飛，並通知廣州香格里拉酒店打包好他們的行李，送到深圳香格里拉酒店，在我們的專人陪同下，丈夫利用落地簽證到深圳取得行李，兩人最終順利回到意大利。■

Favourite local Hong Kong food: Favourite local foods: First-time Hong Kong visitors should try the egg waffle and the Bu Zai Pudding, both wellknown local street food that I have not seen elsewhere. Two-day itinerary for visitors: Day 1: Take the Peak Tram to the Peak and enjoy a panoramic view of Hong Kong. Go to Aberdeen's fishing village and visit the Jumbo Restaurant there. Or go to Repulse Bay, enjoy a walk along the beach with your loved one and have a romantic dinner at the Veranda there. Day 2: Ride the Ngong Ping 360 Cable Car on Lantau Island and visit the Big Buddha, then head along to Tai O fishing village and explore its rich heritage.
