e welcome you to Hong Kong and to CityLife , the monthly magazine for visitors to Asia’s world city. The weather begins to cool in September and that means more outdoor activities, including cycling, which is increasingly popular in Hong Kong. This month, the second annual Sai Hung Kai Properties Hong Kong Cyclothon takes place on 25 September when the Tsim Sha Tsui area will turn into a giant cycling bazaar. A number of elite races will be run, including the International Criterium and the 50 km Open Challenge Road Race that take cyclists over some of Hong Kong’s most iconic landmarks. Turn to our cover story on page 12 for all the details. Lantau, Hong Kong’s largest island, has undergone a tremendous transformation in the last 20 years with the building of the Hong Kong International Airport. Yet, Lantau still retains much of its natural beauty and heritage. Read our feature story on how man and nature coexist in harmony on Lantau on page 16. On 15 September, the city celebrates the MidAutumn Festival, one of more popular and colourful Chinese festivals. Families will gather for dinner and enjoy mooncakes, gaze at the full moon and the children will play with colourful lanterns. Visit Victoria Park on Hong Kong island where the Lantern carnival will be held and be sure to try some mooncakes before you depart. The culture scene is alive and well this month. On 9 and 10 September, world-acclaimed cellist Yo Yo Ma will perform for the opening of the Hong Kong Philharmonic’s 2016 season. His first appearance in eight years here is sure to be a night to treasure and remember. And for the first time ever, the legendary American band Earth, Wind & Fire will perform in Hong Kong on 24 September. The Chicagobased band, despite the recent death of its founder Maurice White, is still going strong in its fifth decade. Expect to see fans dancing to the sound of “September”, “Boogie Wonderland” and “Let’s Groove”. If you love the R&B, soul and funk music of the 1970s, this is a rare chance to take a journey back to the past. Another Asian favourite, the charming Lea Salonga, who starred in the title role of Kim in Miss Saigon and also performed on Broadway in Les Miserables, is back by popular demand and will join the Hong Kong Philharmonic Orchestra to perform Disney Broadway Magic. Expect the crowd to be thrilled humming to their favourite Disney tunes. Sports, music, nature and much more, Hong Kong is full of fun-filled and memorable experiences. Mid-Autumn Festival

This ancient Chinese festival traces its roots back to a time when farmers rejoiced in bountiful harvests. Every year people purchase millions of mooncakes to celebrate the festival. The main celebration falls on the full moon, but the city will be holding cultural events for days. The grandest of these are the Tai Hang Fire Dragon Dances (MTR Tin Hau) and Lantern Carnivals at Victoria Park (MTR Causeway Bay).

Hong Kong is celebrating all things cycling with the Sun Hung Kai Properties Hong Kong Cyclothon. Gilding the Lily 珠光寶氣錦上添花 In today’s world we aim to be dressed and out of the house as quickly as possible. Not so in Qing dynasty China, especially for ladies at court. 如今我們總是想以最短時間穿著完畢然後出門，但在清朝時並非如此，特別是對於有權勢地位的女子來說，穿衣打扮更為重要。

n times past, getting properly dressed could take hours, as with the Empress Dowager who virtually ruled China at the end of the 19th century. Countless handmaidens were summoned each morning to help her dress. Trays of richly embroidered gowns were brought for selection, and rejected, until Her Majesty finally made a decision. After this it was the turn of her jewellery. Lady-in-waiting Princess Der Ling reveals how a “room was covered with shelves from top to bottom, on which were placed piles of ebony boxes all containing Her Majesty’s jewels. There were about three thousand boxes in this room and she had a lot more locked up in her safety room.” The imperial workshops within the Forbidden City were kept busy producing these beautiful pieces. Craftsmen combined the very best materials together with delicate workmanship for the regulation jewellery, as well as for less formal items such as hair ornaments, pendants, rosaries, bracelets and rings, producing real works of art. Jewellery was decorated or inlaid with enamel or ivory, or rubies and sapphires, turquoise, rose quartz and lapis lazuli. Certain stones, like jade, coral and agate, were worn in wintertime, while cedar and carved ivory were brought out in hot weather. Gold and jewels have always been important in China. For the ancient Chinese

emperors, it was their one wish, above all others, to gain everlasting life. Since gold does not corrode easily, it represents loyalty and longevity. So gold jewellery was worn, not just to display wealth and position, but because it carried much greater significance. Each piece was endowed with symbolism for good fortune and for protection from evil forces all around. Bedecked in glittering gold to ensure immortality, it seems a cruel twist of fate then, that while the body crumbled, the jewels survived. Sources of pure gold in China were quite limited – some mines in Yunnan and Sichuan provinces, and a few in Guangxi and Guangdong. Strict regulations governed its use and it became a symbol of wealth, power and status. The lucky few who could eat and drink from gold vessels believed that by doing so they would prolong life. Another widely held belief was that gold and jade could prevent the body from decaying. So emperors were buried in suits made of pieces of jade sewn together with gold wires, while lesser mortals had gold and jade ornaments placed on the body. The Tang dynasty (618-907) was China’s gilded era, with a glittering cosmopolitan civilization centred on the capital at Chang’an (modern day Xi’an). Technical skills improved and the fashion grew for exotic dress, gained

controlled the supply of gold, and there were strict regulations regarding its use, except for gold earrings, which even commoners could wear. Filigree and inlay were the most popular techniques used. In the Qing dynasty (1644-1911) the Manchu rulers from beyond the Great Wall numbered a tiny fraction of the population they gover ned. Their customs became over-shadowed by those of the Chinese, so in 1759 the Qianlong Emperor issued regulations, to which everyone associated with the government must follow. Called the Huangchao liqi tushi, the regulations covered formal dress, of which jewellery was a significant part. To indicate rank, members of the imperial family, noblemen and government officials wore hat finials of ruby, sapphire, crystal, or gold. The colours were based on the Manchu banners of the military divisions, whose flags were red, blue, white and yellow. The regulations also covered Manchu women whose jewellery included delicate gold phoenix hair ornaments, a gold diadem inlaid with lapis lazuli, and a filigree collar set with pearls. Even today gold has a special place in the Chinese heart and this explains the myriad of jewellers’ shops, their windows laden with gold ornaments. It’s all about status and long life! ■

from contact with foreigners at home and abroad. Motifs on gold ornaments reflected their widespread origins. The dragon, phoenix and seahorse were all traditional Chinese designs, while others – like the lion and strange exotic birds – came from Central Asia and India, showing the close contact with the West. In the Song dynasty (960-1279) gold ornaments were no longer the sole privilege of the nobility, and were marked with the names of the workshops, proving that production was by then large-scale. Styles became less ostentatious than in the Tang, and the subject matter was more natural, taken from flowers, birds and animals. The Mongols, led by Ghenghis Khan, governed the country during the Yuan dynasty (1271-1368), and his vast empire stretched from the China Sea almost all the way to the Arctic Ocean. Trade flourished as routes opened between Europe and China, and gold wares became more sophisticated, often inlaid with semi-precious stones and mother of pearl. Then, in the Ming dynasty (1368-1644), the country reverted to Chinese rule once more. In what is often referred to as China’s golden age of artistic achievement, goldsmiths refined their techniques even further, as seen in the magnificent works of art found in imperial tombs north of Beijing. Still, first images can be illusory and, indeed, cycling is alive and well in Hong Kong as a growing sport and leisure activity. And on September 25, cycling fever descends upon the city as the second annual Sun Hung Kai Properties Hong Kong Cyclothon will be held as cycling’s capstone event. Organised by the Hong Kong Tourism Board, thousands of spectators and participants are expected to join in the thrill and excitement. Ground zero of the event will be Tsim Sha Tsui, Hong Kong’s iconic tourist and shopping district, which will turn into a giant bicycle bazaar. The Cyclothon, an allday event starting early in the morning, will feature several marquee races plus fun rides for cyclists of all levels and ages. It promises to be a festive and exciting occasion, so be sure to grab a spot with an excellent vantage point.

活動概覽 The Cyclothon features nine races and events in two formats: criterium, in which participants will ride around a closed circuit course over the streets of Tsim Sha Tsui; and road events, in which participants will ride through some of Hong Kong’s most iconic landmarks including the 118-storey International Commerce Centre on West Kowloon and Tsing Ma Bridge and Stonecutters Bridge, two of Asia’s tallest bridges. or centuries, Hong Kong’s largest island, Lantau, was remote and sparsely inhabited, save for the occasional fishing village. Getting there took an effort and the mountainous nature of the island limited easy movement. All that changed when the 1980s Hong Kong Government, then still under the British, chose the island of Chek Lap Lok, just off Lantau, as site of the new airport – to replace the iconic but terribly overcrowded Kai Tak Airport. Today, Hong Kong International Airport, opened in 1998 – along with the truly impressive supporting cast of transport infrastructure that connects it to the city – is arguably the crown jewel of Hong Kong’s built environment, a city already known for its modern and ultra-efficient infrastructure. The Airport Express, a super-efficient train service from the city, runs beside a specially constructed express motorway, via three architecturally stunning bridges and tunnels through a mountain and under the

harbour – and that’s before one considers the vast reclamation that created the airport itself, or the whole new satellite city of Tung Chung, and a new urban district, West Kowloon, The transformation was completed with the arrival of Disneyland – on the other side of Lantau, connected by its own branch line of the MTR (subway) – and then Ngong Ping 360 Cable Car, a stunning attraction in its own right, which since 2006 has lofted visitors effortlessly to the Big Buddha, and beyond. Despite the development, Lantau remains largely unoccupied and green, its varied expanses of natural beauty still untouched, making it a fascinating place to visit and an example of how nature and man can co-exist in harmony. Be sure to set aside a day or more to visit Lantau and enjoy all its beauty and man-made wonders.

One of Hong Kong’s top attractions, the Ngong Ping 360 Cable Car is also the link to other tourist attractions on Lantau. Named one of the ten best cable car rides in the world by CNN, the trip offers breathtaking views of Lantau Island and the South China Sea. For a little extra, you can board the Crystal cabin with a glass bottom to enhance your ride experience. The ride passes through a sea channel before steeply ascending the mountain. The trees below resemble a never-ending field of broccoli heads, a waterfall or two glimmer in the distance and the spectacular vista of the airport below is in full view. Off in the distance you can see partial installments of the latest infrastructure showpiece, the Hong Kong–Zhu Hai bridge, a 42km engineering marvel across the mouth of the Pearl River, connecting Hong Kong to the whole of the Western Pearl River Delta. The iconic Big Buddha is just adjacent. At 34 metres high, it is one of the largest Buddha statues in the world. Climb the 268 steps to get a close-up view of the massive figure. The adjacent Po Lin Monastery is an important Buddhist monastery in Hong Kong. Visitors can tour its pleasant garden, visit the Grand Hall which houses over 10,000 Buddha statues, and enjoy a vegetarian meal. From the village, you can book bus tour packages or just take a public bus to visit the ancient fishing village of Tai O where fishermen still live on stilt houses over the water, and where its heritage and culture are still preserved. Visitors flock to purchase local handmade food products including shrimp paste, XO sauce, salted fish and dry seafood. Or try out street food such as Chinese egg waffles – after waiting in line, or have a meal at the beautifully renovated Tai O Heritage Hotel. A few minutes away by bus are Cheung Sha and Pui O beaches where long stretches of soft sand welcome visitors. Besides swimming or enjoying the beach, clam digging during low tide is highly popular with locals and worth trying if you come prepared. Lantau’s beauty doesn’t stop there: the island is dotted with hiking trails, hidden waterfalls and mountain streams; along the way you can spot wildlife such as wild cattle, black-eared kites and myriad butterflies.

Fried Mutton with Apricot in Sweet and Sour Sauce 它似蜜

ong Lai Shun is as Beijing authentic as you can get. A renowned name in mainland Chinese dining, from humble origins on the streets of Beijing and made famous by its Shuan Yang Rou (Mutton Hotpot), it has since expanded into many cities in China, and Hong Kong as well. This recently opened Dong Lai Shun is located in the trendy Soundwill Plaza II Midtown in Causeway Bay. We arrived for lunch and were greeted by the restaurant’s enthusiastic chef, Tony Lam, who regaled us with tales of Dong Lai Shun’s rich history and its many signature dishes. The restaurant décor is Chinese and traditionally elegant, as befitting a fine dining establishment of its reputation. The restaurant is offering an “Old Beijing” menu and that suited us just fine. Old Beijing cuisine, according to Chef Lam, is influenced largely by Chinese Imperial cuisine, Shandong (a nearby province) cuisine, and Islamic cuisine. We know we are in for a treat then. As customary, the lunch started with a few cold appetizer dishes – four, to be exact: Braised Oxtongue ($88), Minced Mutton Egg Rolls ($98), PanFried Bean Curd Roll Stuffed with Chinese Celery ($78), and the Minced Fresh Yam with Blueberry Sauce ($78). All of them are light in taste, unlike some Northern Chinese cuisines, and together they blend and complement each other pleasingly. The yam in particularly could almost pass as a dessert, and a delightful one at that, with the blueberries adding a pleasant sourness to the sweet yam.

We were just getting started: a parade of hot dishes soon followed, enjoyably bombarding our palates with a cornucopia of tastes and textures. We tried the Fried Mutton with Apricot in Sweet and Sour Sauce ($168), a signature dish, and marvelled at the combination of ingredients used – apricot in this case, which nicely set off the taste of mutton. The Braised Sliced Beef with Chilled Bean Curd and Pickled Vegetables and Chili ($228), is surprisingly tender and flavourful, making it easy to overindulge. The Steamed Sliced Mandarin Fish with Bean Curd Custard ($198), is another classic – this one prepared with the fish on a bed of custard, which it infuses with flavour and an engaging lightness of taste. The finale was the lauded Braised Lamb Chops with Sea Cucumber ($288), again an interesting combination, but the effect is, again, delicious and complementary. We were beginning to get the hang of the cooking philosophy here. Amazingly we found ourselves room for the Handmade Noodles with Shredded Chicken and Pickled Vegetables, just in case we needed a carb injection. And our sweet tooth was soothed with three desserts: Sweetened Pea Pudding ($48), Red Bean Paste Stuffed Glutinous Cake ($38) and Minced Yam Rolls with Red Dates and Osmanthus Honey Sauce ($72) – all lightly sweet. To taste such authentic Beijing Cuisine and try out its interesting use of ingredients was a real treat – an experience we highly recommend to any foodie. ■

東來順是內地著名的中菜食府，提供正宗北京風味美食。東來順最初只是北京街頭的一個小攤檔，後來以

涮羊肉馳名全國，在國內許多城市開設了分店，隨後東來順的美食版圖還擴展到了香港。最近開業的東來順位於銅鑼灣潮流商場金朝陽中心二期Midtown，我們於午餐時間到達餐廳，熱情好客的廚師林師傅接待了我們，他為我們介紹了東來順悠久的歷史以及這裡的招牌菜式。餐廳採用典雅的傳統中式裝潢，以配合其中式高級餐飲的定位。東來順提供老北京菜單，正好合我們的心意。林師傅說，老北京菜深受中國古代宮廷菜、山東菜及清真菜的影響，令我們十分期待這頓中式盛宴。按照習慣，首先登場的是冷盤，我們品嚐的四碟冷盤分別是醬牛口條 ($88) 、袈裟蛋卷 ($98) 、芹香腐皮卷 ($78)、藍莓山藥 ($78)。與其他北方菜式不同，這四碟前菜味道較清淡，不同菜式的味道配合得恰到好處。其中藍莓山藥甚至可以作為一道甜品，藍莓的酸味加上山藥的甜味，令人回味無窮。剛剛的冷盤只是前奏，一系列主菜悉數出場，以其豐富的味道及口感輪番轟炸我們的味蕾。東來順招牌菜它似蜜 ($168) 充分展現了大廚在食材搭配方面的功力，杏脯與羊肉的味道相得益彰。紅煨牛肉 ($228)同樣出色，牛肉肉質嫩滑，味道濃郁，令人完全停不下筷子。豆花鮮桂魚 ($198)是東來順的另一道經典菜式，以滿滿的一層豆花承托著新鮮桂魚，本身較為清淡的豆花完全吸收了醬汁的味道，是這道菜的點睛之筆。最後一道主菜是海參扒羊排 ($288)食材的搭配充滿新鮮感，創意十足，而味道則相輔相成，恰到好處，我們好像開始捉摸到了東來順的大廚們的烹飪哲學。中國人以碳水化合物為主食，不吃點粥粉麵飯總覺得少了點什麼。品嚐了一系列美味佳餚後，廚師還貼心地為我們準備了榨菜雞絲炒手擀麵。最後當然還有三款中式甜品：豌豆黃 ($48)、驢打滾 ($38)、糖卷果 ($72)甜味適中，為這一頓盛宴畫上圓滿的句號。我們誠意推薦您到東來順品嚐正宗北京菜，體會廚師在食材搭配方面的細膩心思和深厚功力。■ SEPTEMBER 2016

e will get to the food in due course, but the story of China Tang is worth telling. Created and designed by the estimable Sir David Tang – he of Shanghai Tang, the chic Chinese fashion brand – the original outlet opened in London at the Dorchester Hotel in 2007. Its smash success brought it to Hong Kong, with a first branch at the Landmark Atrium in Central, and just recently, at Harbour City in Tsim Sha Tsui, one of Hong Kong’s largest and best-known shopping malls. Our anticipation was much heightened by such pedigree. Our sense of arrival of this spacious, large restaurant was “wow”! As to be expected from Sir David, a master at creating westernised, sophisticated 1920s Shanghai–style décor, the restaurant was opulently furnished with plush carpets, floral pattern embroidered couches and cushions for its bar lounge, fabric chairs, and an elegant pagoda entrance, topped off by a panoramic view of the Victoria Harbour – all to set up an unforgettable and glamorous dining experience. Under the direction of the three-Michelinstarred Group Executive Chef Albert Au and the highly experienced Executive Chef Li Cheung, the restaurant serves cuisines from Canton, Jiangnan (Shanghai and surroundings) and Beijing – an excellent way for tourists to try out different foods in one setting. We started our gourmet jour ney with a potpourri of cold dishes – sample portion of Marinated Shrimps with “Far Dew” Wine and Plum ($138, full portion), Jellyfish Tossed with Spicy Sauce ($128), Pickled Turnip Pagoda ($68) and Bean Curd Sheet Rolls Filled with Assorted Mushrooms ($68), all served in one plate, all cool

and tasty. Next was Crispy King Prawn with white Pepper in Casserole ($188/piece), a seasonal item that we highly recommend if available, bursting with the flavour of the prawn accented by the pepper. Cantonese people love their soup, and a wellcooked soup is more than good for the soul – it’s considered to have recuperative properties. That is certainly be the case with the Double-boiled Almond Soup with Pig’s Lung and Heart of Green ($98 per person). Don’t be put off the ingredients, the soup is absolutely delicious – velvety smooth and tasty. We then sampled the Roast Barbecue Pork ($188) and Crispy Pork Belly ($158), both Cantonese classics, with the tender bites attesting to the quality of the meat selected. Switching cuisines again, we tried the Simmered Fish Fillets with “Sichaun” Chile, Peppercorns and Chili Oil ($258), another classic Sichuan hot dish. We are in Hong Kong, so thankfully the full blast of spicy, hot taste of the sauce is tempered, which allowed us to enjoy the tender fillet without getting our tongues numbed. We completed our meal with the Simmered Spinach with Preserved Eggs ($188), a refreshing contrast to the spicy fish and a good way to wind down the meal. Our desserts of choice were Ground Almond Cream ($42) and Green Tea Mochi Filled with Fresh Mango ($39), by which time we were completely sated. If you’re looking to wind down a busy day of shopping with a fine Chinese meal in an elegant setting, you can’t do better than book a place at China Tang Harbour City. ■

for example, tend to nurture knowledge workers with deep expertise but with perhaps less broad exposure in general areas. The opposite tends to be the case in, say, the US. So an effective solution needs to be tailored to cultural behavioral differences. The key to generating innovative ideas is for the organization and its members to be exposed to different facts, ideas, and perspectives and to develop a positive process to embrace those ideas and more importantly connect them to create useful, innovative ideas. This is a process I refer to as bricolage—to develop news ideas through unique combinations of existing resources.

On what drives innovation: Two fundamental steps drive innovation change in organizations: a process to generate novel ideas for how to address opportunities, and a mechanism for such ideas to be timely implemented which is a challenge for most organizations, especially large ones or market leaders. The process required for each is different. Companies often fail to effect innovation change even if they have the ideas because they can’t implement it practically. Scope of innovation: Innovation doesn’t just mean technological change only; impactful innovation can occur in other areas: organizational processes, product development and design, and operations, to name just a few. And given the speed of change in industry after industry, the ability to innovate often becomes a requirement for survival and the key to achieving a competitive advantage. Cultural challenges to innovation: Our research found that different cultures face different challenges in developing effective innovation. The Asian cultures,

Making innovation happen: The second key element to successful innovation is being able to implement or effect these new ideas being generated. Our program works on real time, action-based change mechanisms so that one can learn to get new ideas adopted immediately, however small or narrow in scope- we do that by being able to drive behavioral change. Highlight of the innovation program: The unique aspect of our program, called “Creating impact through innovations: How to design winning solutions for Business Challenges?”, is that we combine these two essential steps needed to innovate together in one single program, which I don’t think is done anywhere else. More importantly, the program is geared towards creating impact immediately, even before the program is completed through a set of exercises participants are encouraged to complete in advance. We at the University of Michigan Ross School of Business are very excited to offer this program this December and in the Spring 2017 in Hong Kong. It’s a four and half day program in which participants go through an intensive, interactive learning process that allows them to implement what they learn immediately. I am looking forward to teaching this program and help the participants energize their respective companies with new tool kits and a new mind-set and attitude towards innovation.

Steven: I like interacting with guests and helping them with their problems and requests. In my job, every day is a new day: we face different challenges based on our guests’ needs. I get real satisfaction from being able to help them. CL: Have you observed any changes in guests’ service needs? Steven: Yes, even in my time the changes have been substantial. Steven: One guest arrived late at night and needed to go to Macau early in the morning for a meeting. Around midnight, he found out his suit didn’t fit properly and needed alterations. All the tailor shops were closed and I finally got hold of a tailor that I knew who agreed to go back to the shop to do the necessary work. Our guest was very happy – he wrote us a thank you letter and now always stays with us, and always finds me to say hello. CityLife: What do you do to relax after work? Steven: I enjoy hiking; the Dragon’s Back is a nice scenic trail. If it’s good weather I may go to Tung Chung and hike from there. Favourite local Hong Kong food: First-time visitors should explore Hong Kong’s great restaurants. For dining, I highly recommend our own three-Michelinstar Tang Court which serves traditional Cantonese food. And visitors should definitely try out local foods such as egg tart, pineapple bun, roast goose and congee. A two day itinerary for his hotel guests: First Day: Dim sum at Lin Heung Tea House in Central and order food from the traditional carts being pushed around. Then take the Escalator from Central to Mid-Levels and see how locals live. Stroll along Hollywood Road, visit PMQ and Man Mo Temple and check out the many galleries and antique shops in the area. Have lunch in Soho where good restaurants abound. Herbivores is a vegetarian restaurant serving healthy food – it's worth trying. Then visit Sheung Wan – famous for its dried seafood and Chinese folk medicine shops – there are hundreds of them lined up along the main streets.

Second day: Visit Chi Lin Nunnery in Kowloon's Wong Tai Sin. The whole building, in traditional Chinese architectural style, was built with a single nail. Then go to the flower market, Goldfish Street, and Ladies Street in Mongkok. I then had a fantastic opportunity to go to a Cordon Bleu program run by a hotel school sponsored by the state government. I have been in this business ever since. I’ve worked in many countries, especially in Asia: in Malaysia I managed resorts, which are very different from hotels; in Dubai, where I was an owner’s rep for a larger group during its building craze; in China; and in Russia. And I have managed different types of properties and worked in different functions and from different perspectives. As a General Manager, I would describe myself as a “Jack of all trades and master of none” type. I think this serves me well as it allows me space to have the persona and leadership that means guests, work associates, owners and the community recognise me as master of the hotel. My favourite part of the job is working with our associates: interacting with them, guiding and mentoring them, then help them set agreed values and goals, and then seeing all that translated in improved skills which lead ultimately to more guest satisfaction – I really enjoy that! Our hotel is blessed with an excellent location in Tsim Sha Tsui that allows us to serve both leisure and business guests. Location aside, in this business, service is still most important. Our biggest advantage compared with others is our associates’ warmness, genuine care and sincerity, as borne out by our social media feedback. We continue to focus on the human touch and putting “hospitality” back in to hospitality business again. Hotel guests and travellers in general are getting savvier because of social media reviews, the proliferation of lifestyle and travel TV programmes, and ready access to information on the web. We have to continually find ways to meet our guests’ expectation and niche needs. There are many things to like about Hong Kong, my favourite is the plethora of dining and drinking options available in the city, for all occasions and at any time of the day or night. The quality and quantity on offer is truly amazing. My three recommendations for tourists to do in Hong Kong are; 1. Visit Sai Kung in the northeast New territories: it’s a great out-of-the cityand-into-nature experience where you can also eat, drink, and play. 2. The Chi Lin Nunnery in Diamond Hill, an oasis in the midst of the urban jungle, really beautiful and tranquil. 3. If you haven’t experienced it, the Dragon Boat races that takes place in June as part of the Dragon Boat Festival, are a must to watch at least once in your life. ■
