A highlight every June in the city is the celebration of the Dragon Boat Festival, capped by the Hong Kong Dragon Boat Carnival featuring hundreds of races over the three-day CCB (Asia) International Dragon Boat Races, one of the world’s premier dragon boat competitions. Giselle is a classical ballet from the 19th century romantic era. Count Albrecht, who disguises himself as a peasant, has fallen in love with the peasant girl Giselle. However, Albert is already engaged to Bathilde. The shock is too great for Giselle and she dies of a broken heart. The grieving Albert visits Giselle’s grave, where he is attacked by spirits.

A MOVING EXPERIENCE: HONG KONG’S HILLSIDE ESCALATOR 中環至半山扶手電梯體驗之旅 A century-old mosque, shops crammed to the ceiling with Chinese ceramics, and more restaurants than you can shake a spoon at, all within arm’s length? Step on board the hillside escalator, Hong Kong’s engineering marvel, for an easy ride to all this and much, much more. 上百年歷史的清真寺，眾多陶瓷商店，數之不盡的餐廳，通通都在一步之遙？踏上被稱為香港工程奇跡的中環至半山扶手電梯，體驗無盡精彩。 1993年才投入使用，至雖然中環至半山扶手電梯在今不足四分之一世紀，但它早已成為香港歷史的

lthough less than a quarter of a century old (opened 1993), the Midlevels Escalator is already part of Hong Kong’s history. It provides a link between the hustle and bustle of the commercial centre of Hong Kong and the smarter residential area of MidLevels. Built to relieve the traffic on the roads, it surpassed expectations and has become a part of life for many living nearby. The escalator system was quite a revolutionary idea but the Government decided to go ahead with one link as a trial. The basic route chosen was along Cochrane Street and Shelley Street but there were deviations along the way. The full route is shown in plan of the route.

Starting at the existing elevated walkway along the north side of Connaught Road it was to run southwards through the new Hang Seng Bank building due to be built on what was the site of the old Central Fire Station. The existing footbridge system had a span across Connaught Road and a staircase to ground level. However, advisers to Hang Seng Bank believed that this was a bad Fung Shui feature. It would direct the evil spirits directly into the bank! The design was therefore modified, at the Bank’s expense, to remove the existing

After leaving the market the route starts to become the hillside escalator proper. The area it now passes was a typically congested Hong Kong space with small shops and market stalls. It makes a change from the designer label boutiques that fill the streets in Central. Part-way up, just to the side of the route is Graham Street market. Not a market building but a length of road given over to small market stalls.

The Central Market building itself is a historic structure. It was built in 1939 in the Bauhaus style. Once a busy market it currently sits idel, pending redevelopment. The first floor though which the walkway passes has some small shops. As one of the few preWar buildings left there is a strong lobby to preserve it although good ideas for how it can be used are hard to come by.

A footbridge crosses Hollywood Road

一部分。它連接著香港熱鬧繁榮的商業中心以及半山住宅區。建造這個扶手電梯系統本是為了舒緩道路交通壓力，但它的實際作用早已遠超於此，並成為附近居民生活不可或缺的一部分。當初興建這個扶手電梯系統是一個革新性的想法，政府最終決定嘗試先建造一條扶手電梯。當時選擇的基本路線是沿著閣麟街和些利街建造，但實際路線有些許偏差，完整的路線請參照扶手電梯系統網絡圖。當時沿著干諾道北部有一條行人天橋，原計劃扶手電梯從行人天橋開始，一直向南通往恆生銀行大廈總行（前身是中環舊消防局）。當時的行人天橋只有一個拱，橫跨干諾道，設有樓梯通往地面。然而，恆生銀行的顧問認為這在風水上來說是不利的，會將邪氣帶進銀行。因此設計師又進行了一些改動，用兩個拱代替原有的一個拱，分別設於大廈的兩邊。這個連通大廈的設計能驅散邪氣，雙拱橋更橫跨德輔道，通往中環街市。中環街市本身就是一座歷史悠久的建築物，建於 1939年，採用包浩斯風格。往日繁忙熱鬧的中環街市如今已截然不同，人行天橋直通1樓，裡面設有一些小商店。中環街市是僅余的少量戰前建築物，許多團體都認為應該對其進行保育，但對於如何好好利用它卻始終沒有定論。離開街市後，我們正式踏上中環至半山扶手電梯。過去這片區域有許多小商店和市集攤檔，如今已成為設計師小店的聚集地。繼續往上走，旁邊是嘉咸街市集，這不是一幢大廈，而是一個有許多小攤檔的露天市集。然後您可以看到一條橫跨荷李活道的行人天橋，左邊是舊中區警署。這幢建築物建於 1864年，多年來經過數次加建。面向街道的灰白色大樓建於 1919年，如今被活化成一個藝術和休閒中心。荷李活道建於十九世紀，是香港最早建成的道路之一，也是香港古董店舖集中地。這裡的古董和小玩意真假混雜，您可找到中式銅

with the former Central Police Station on the left. This was built in 1864 and was then added to over the years. The grey and white building fronting onto the street dates from 1919 and is now being adapted as an arts and leisure centre. Hollywood Road, the main drag for antique shopping in Hong Kong, was one of the earliest roads to be developed in the 19th century. Here fabulous finds and fakes sit side by side. Rare Chinese bronzes, expensive Ming porcelain, elegant furniture and old silver jewellery mingle with ‘antiques’ fabricated yesterday. It takes a good eye to tell the difference. Continue up to Staunton Street and enter SoHo, ‘South of Hollywood Road’. This district is renowned for its eclectic mix of restaurants with prices said to be more reasonable than nearby Lan Kwai Fong. Carry on up the escalator, and cross the bridge over Caine Road. The road is named after the first Magistrate in the Colony, Major William Caine of the British Army, whose frequent use of the rattan cane left him feared as well as respected.

Rednaxela Terrace. A Chinese workman, so the story goes, was given the task of painting the name, Alexander Terrace, but the paper it was written on was thin, and he read it from the wrong side! Though the escalator leads onward and upward, ending at Conduit Road and numerous apartment blocks, our last bit of history is right here, opposite the Orange Tree. Wrought iron gates lead to the Jamia Mosque, painted in a cool shade of green. The present building, with its arched stained glass windows, towers and turrets, dates to 1915. It was erected on the site of another mosque built in the mid 19th century, and the front minaret of the original building still remains. Bird song evokes a sense of days gone by, and the clatter of Central is far, far below. Pause here for a panoramic view of Hong Kong and the harbour in the distance, before a fifteen-minute stroll down the steps at the side of the escalator to the crowds of Central district once more. ■

Hong Kong is one of the most densely populated cities in the world, with serried skyscrapers and thronging crowds as its most iconic images. It comes as a surprise to many visitors that Hong Kong is also one of the greenest metropolises in the world, with 70 percent of its area being countryside, and fully 40 percent conserved as country parks. But it’s not just any garden variety green environment that the city possesses: astoundingly, in its tiny domain of just 1100 square kilometres, Hong Kong boasts one of the world’s most geographically and biologically diverse environments, a rare twin feat for any country, let alone a major city. Exploring Hong Kong's geo- and biodiversity – one of the territory’s great underappreciated aspects – is a must for visitors and locals alike. This unique endowment is a blessed outcome of Hong Kong's geography and location. The mostly steep mountainous terrain along indented coastlines gives rise to a variety of landforms that include imposing mountains with steep ravines, rugged coastlines with fantastic rock formations, bays and coves interspersed with white sand beaches, alluvial plains and wetlands, and islands of all shape and sizes. Hong Kong's climate sits between tropical and sub-tropical, which confluence helps create incredibly rich diversity of fauna and flora. Fully one-third of China's bird species are found in Hong Kong, the territory being a major stopover in Asia for migratory birds. The city also has almost a tenth of the total butterfly species in China. We even have dozens of terrestrial animals including wild cats and wild boar. The marine environment is equally rich, thanks to a mix of tropical and temperate currents traversing the South China Sea. Our marine fauna encompasses 1800 species of fish, along with numerous amphibian and crustacean creatures such as green turtles, and notable but endangered Chinese White dolphins. Over 3000 species of plants and flowers can be found all around our country and urban parks including the Bauhinia blakeana, Hong Kong's official plant. It bears mentioning that in many ways, Hong Kong's diverse geographical landforms help give rise to its biodiversity, a highly symbiotic relationship that is becoming much more widely understood and appreciated. The Hong Kong Government acted proactively over the years to preserve both our geological and ecological treasures. We are pleased to highlight a few of the noteworthy sites for visitors to explore Hong Kong's natural wonders. It is tranquil and has a good collection of plants, birds and even animals. Tucked away in a quiet street in Sai Wan Ho in the eastern part of Hong Kong Island, this unassuming five-storey building is home to a fascinating repository of the Hong Kong film industry’s glorious past. The archive regularly hosts screening of old movies and its resource centre has all the information a movie bluff could dream of.

A museum converted from a military fort sitting on a steep hillside overlooking the entrance to Hong Kong’s magnificent harbour – you won’t find a more stunning setting. Yet, this intriguing museum with a spacious outdoor area offers much more. Inside the converted building are a series of multimedia galleries chronicling Hong Kong’s military history, including against Japan during World War Two. The scenery alone is worth the visit.

You may be surprised by the important part that rail transport played in Hong Kong’s development, with the famous Hong KongCanton Railway providing the primary link to Mainland China for many decades from 1910. Located in Tai Po Market in the New Territories, the Railway Museum has been converted from the Old Tai Po Market Railway Station building and features images, photographs as well as sample track, a locomotive, coaches and other train paraphernalia.

This hidden gem tucked away near Stubbs Road on the way to the Peak is worth a visit as it tells the story of Hong Kong from the vantage point of Hong Kong’s police force, now 173 years old and arguably Asia’s finest. The quaint building packs a lot more artefacts and photographs than expected. Besides a comprehensive review of Hong Kong’s police force, visitors can view sobering displays of heroin-making devices as well as rare photographs of the city’s notorious triad activities and ceremonies.

This small but visually impressive waterfront promenade is an integral part of the Kai Tak Promenade Redevelopment Project, on the site of a freight transfer wharf. A quirky tower structure evokes a stack of compressed recycled paper bales, typical of its former role, with fantastic lighting and mist effects at night. Visitors can enjoy a different view of the harbour and the promenade also has a performance area, children’s play zone, a boardwalk and a plaza. It’s a great place to sit and watch the locals.

This urban park in Sai Yin Pun in the western part of Hong Kong Island is a hidden gem even for locals as it is shielded from view by elevated expressways and a crossharbour tunnel. That just doubles the pleasure of finding it: a well-landscaped park with a water fountain, a promenade with a spectacular vista of the harbour, and spacious lawn for kids to run around on – a perfect respite from a busy day of sightseeing.

Heritage 歷史遺跡 Mei Ho House, Shek Kip Mei: Hong Kong is renowned for its high housing density and small living spaces. The public housing estates of Hong Kong, which played an important part in the Territory’s development, best exemplify the crowded conditions. Shek Kip Mei was the site of the first public housing estate built in 1954, most of which has been torn down. Visit Mei Ho House, one of the original buildings preserved and converted into a youth hostel, and the nearby Jockey Club Creative Arts Centre, converted from a flatted factory building, to get a glimpse of how people lived in those formative times.

Markets 市集 Sham Shui Po: The flea markets in Sham Shui Po are not exactly hidden gems, as they have become well-trodden tourist landmarks in their own right. Still, walking from street to street, scouting for bargains – whether electronics, fabrics, souvenirs or junk collectibles – surely is the ultimate treasure hunt experience. Vinyl album lovers should head to Vinyl Hero, which houses over 3000 albums of various vintages.

midst the dizzying diversity that defines Hong Kong’s culinary scene, where waves of new restaurants vie constantly to offer the latest gastronomic razzle-dazzle, it is sometimes reassuring to go back to the tried and true establishments, with reputations that have stood the test of time and whose food quality and service standards are barometers against which others are judged. That certainly is the case with Petrus, the venerable French fine dining outlet which sits atop – physically and figuratively – the Island Shangri-La Hotel at Pacific Place. As fine dining goes, the internationally renowned and award-winning restaurant is an institution around town. Its classic French décor oozes luxury, comfort and opulence, it expansiveness certainly matches the spectacular harbour view it commands. Under acclaimed Chef De Cuisine Ricardo Chaneton, Petrus serves modern interpretations of classic French fare with uncompromising attention to excellence in food quality and presentation. And its unmatched wine list is widely recognised as one of the best anywhere, with highly decorated Master Sommelier Yohann Jousselin overseeing a cellar with over 20,000 choice bottles. Our lunch started with two delicious entrees froides (cold starters): Daniel Sorlut Brittany Oysters, Melon, Shallot Cream and Beef Tartare, Paris Mushroom, Quail Egg and Dijon Mustard. The oyster is fresh with meat that bites with full flavour, the tartare complements well, and both were lovingly savoured. We then sampled a number of warm appetisers: Red Prawn Ravioli, Bisque Sauce and Buckwheat; Crispy Frog Legs, Wild Mushrooms, Clams, Pink

Garlic and Yellow Wine Sauce; and Hokkaido Scallops, Salsify, Hazelnuts and Albufera Sauce. The choices offered are discernibly healthy, taking full advantage of Hong Kong’s access to fresh quality seafood and other choice ingredients. They all taste excellent, as expected, each allowing the underlying meat flavour to emerge cleanly. On to the main entrees, for which we picked Lobster, White Onion, Green Spiced Sauce and Coriander; Beef Fillet, Chanterelle and Fava Beans; and French Pork Belly, Grilled Baby Leak and Dijon Bearnaise. The traditional French cooking style comes through winningly in each of these dishes: quality meat, creative side ingredients, understated but rich sauces and thoughtful and aesthetically appealing presentation. These were superb choices all round. A trio of desserts and cheese rounded out our leisurely lunch: Chocolate Textures, Pistachio Panna Cotta and Vanilla Ice Cream; Paris Brest, Almond Praline and Pear, and an excellent selection of Artisan Cheeses, for which our preference tends to the more pungent and harder varieties. We would be remiss to omit that our lunch was paired with an excellent series of white and red wines chosen by our sommelier. For lunch, Petrus offers a 3-course set for $528 and a 4-course set for $618, both sensibly priced. And its wine paring at $88 per glass (75ml) represents excellent value indeed. One of the great pleasures of visiting Hong Kong is being able to enjoy the best of pretty much any cuisine one wishes. We would stack Petrus up against the best French food from anywhere. ■

n Omakase dining experience is always an occasion to look forward to, partly for the anticipated pleasure of being served something unknown but special, and partly for the close interaction with the chef, engendering a sense of intimacy not always present in other dining outings. Such is the case with our visit to Hanabi, a cosy and neatly decorated Japanese restaurant tucked away on a upper floor of a building in Knutsford Terrace in Tsim Sha Tsui. Hanabi is named after beautiful fireworks, symbolic of the burst of creative interpretation of the Japanese food culture served by Perry Lau, the friendly sushi chef. Lau apprenticed under a renowned Japanese chef and honed his skills at several quality Japanese restaurants and wears his passion for Japanese cuisine on his sleeve. His patience and helpfulness greatly enhanced our dining experience, including learning about the intricate process by which the fish are flown in daily from Tokyo’s famous Tsukiji Market, fresh and ready to serve. We began our omakase adventure with a few vegetarian starters that include Lotus Root Preserved in Vinegar, Spinach with Sesame Sauce, Sakura Jelly, Kanimiso Tofu, and Okinawa Seaweed, which together whet our appetite for what was to come. Our first delicacy was an absolute winner – Seared Tuna topped with Caviar and Hokkaido Oyster with Smoked Applewood; the slightly smoky flavour leaves quite a lingering taste. This was quickly followed by a sashimi combo of Houbou Fish Sashimi, Yellowtail Sashimi and Toro Sashimi, all of which meat tasted fresh and tender, and was all too quickly eaten. Next came

the sushi selections: we started with Minced Shrimp with Ikura Sushi and Seared Flounder Sushi which, garnished with ginger slices and freshly made wasabi bring out the underlying flavours. We were advised to go easy on additional seasoning and quickly learned to trust the chef’s judgement, much to our delight. The Angel Bomb, Hanabi’s signature dish, came next, and it can be aptly described as the mother of all sushi pieces. The dish is layered with seared otoro, chutoro, uni and negitoro, and the taste is simply superb. We really can’t think of a better way to indulge in sushi-gorging than this delightful dish, a fitting finale to the sushi part of our meal. Rounding out our dining experience was the Saikyo Miso Grilled Cod, in which the slightly flamed fish practically melts in the mouth. It goes without saying that a delicate meal such as ours must be accompanied by a nice bottle of sake, of which Hanabi boasts a fine selection. The beauty of Hong Kong’s amazing dining scene is that there are culinary pleasures waiting practically at every corner. Hanabi is a worthy addition to the already large selection of Japanese omakase sushi outlets and we recommend it wholeheartedly and without hesitation. And at $1,200 per person, the dinner set is reasonable value for money indeed. ■

Qi-Nine Dragons If you either crave Sichuan food or just fancy an occasional meal, you will enjoy Qi Nine Dragons, located on Peking Road, right in the middle of Tsim Sha Tsui. Its sister flagship outlet in Wanchai was recently awarded a coveted Michelin Star, a testament to quality of the food served. The restaurant’s name, Qi, is inspired by a key Sichuan cuisine ingredient – star anise – and the cooking style here offers a modern interpretation of traditional Sichuan fare. Our tasting menu highlighted many of Qi’s signature dishes. The appetisers Chili Oil Wontons and Mouth-watering Boneless Chicken are both classic favourites, spicy but not overpowering. The main courses on offer include Sugar Glazed Ginger and Scallion Beef, which is not commonly served in the city but definitely worth ordering, the tart and sweet flavours giving an extra kick to the chewy beef. The Braised Mandarin Fish Fillet in Chili Oil is another dish in which the tender texture of the fish fillet comes through nicely. Spicy Prawns is another dish well-known to test a chef’s skill but this passed with flying colours – the spicy sweet taste makes a good impression. The Cumin Pork Ribs are deep-fried and encased in foil to retain the aroma and keep the pork tender. Dan Dan Noodles, another classic, and refreshing Red Bean Pancake with Ice Cream round out a satisfying finish to a really good Sichuan meal.

Rech The eagerly awaited debut of a new restaurant to replace SPOON, the Alain Ducasse restaurant at the InterContinental Hong Kong that has served Hong Kong’s dining public so well for so many years, finally has arrived. Rech by Alain Ducasse is the first international outpost of Paris’s most famous restaurant, Rech. Rech by Alain Ducasse offers an authentic French seafood experience with the finest seasonal fish and oysters prepared in contemporary style. Most of the fish and shell fish at Rech are from Europe and sourced in France, and only the best are chosen, much of them off the coast of Brittany. Dishes of note include Hard-dived sea scallops, citron/gold caviar, Rock fish soup, saffron-gold caviar, ‘Club’ crab and mango, Cookpot of tiny pelt, squid and sesame seeds and four kinds of oysters to choose from. For fish, the Grenobloise-style skate wing is highly recommended as is Pan-seared large sole with half-salted butter, tiny potatoes. GENERAL MANAGER Shane Pateman, Managing Director of Cordis, Hong Kong, opens up about his hotel and the hospitality industry 香港康得思酒店董事總經理白夏安與我們分享他對康得思酒店及酒店業的看法。 I started my career at ground level, washing up in a local hotel restaurant as a teenager. My passion for food and my working for Mövenpick in Switzerland while still young helped cement my love for the industry. I was always wanting to learn new things and gain new experience; working in hotels was a logical step. My favourite part of the job is to see people excel and improve. This is an industry where people can still build careers from the bottom up and helping them to improve and develop is as big a reward as we can get. The key to being a good general manager is giving a clear sense of direction, being decisive and making sure people are clear on where you are going. You need to stay close to them, talk to them and listen back to help them believe in and share your vision or direction. A general manager is nothing without a great team moving in the same direction with the same passion. For our hotel, which was just rebranded in 2015, our location is our number one strength. Mongkok offers visitors a taste of the real Hong Kong, fascinating local markets, and great connectivity to the rest of the city. And we have all the facilities that one could ask for, including wow-factor views. The compliment we receive most though, of which I am very proud, is the level of care our staff put in going about their work; our guests are always stunned that we are a 600-room hotel as they receive time and attention from our staff that they only expect from a small hotel. Hong Kong has changed much over the years. As a tourist attraction, the city offers new and old along side each other, the modern and the traditional, and a cool factor that makes the city interesting to explore – and it’s as safe as ever! Serving international visitors is in people’s blood here - Hong Kong has one of the longest traditions of welcoming international visitors in Asia. What I love about Hong Kong is the contrast it offers between the hustle and bustle of the city and the great outdoors of the New Territories. I live in the New Territories and work in Mongkok, so I get to see the best of both sides. And it’s how accessible these areas are that makes Hong Kong so special. My recommendation for tourists in Hong Kong? 1) Hong Kong is a foodie’s paradise and a strong food culture is in our DNA. Eat in a Michelin-starred restaurant and a Cha Chaan Teng, to see the wealth and breadth of our food culture in this city. 2) Explore some of the hiking trails in Hong Kong’s country parks where the scenery is even more stunning than the city’s skyline. 3) You are in a very safe city; don’t restrict yourself to the typical tourist hotspots, explore the local districts such as Sham Shui Po where the real Hong Kong lives and breathes every day. ■
