Excitement fills the air as the city readies for its annual Dragon Boat Festival, one of Hong Kong’s key summer events. An ancient ritual of eating rice-dumplings and racing dragon boats has turned into an all-out festival of pulsating races, partying and drinking, and just plain old having fun. Hong Kong celebrates the Dragon Festival in two bites. On the day of the festival, locals flock to a dozen dragon boat racing events across the city, to eat rice dumplings to celebrate the occasion. Then a week later, the Hong Kong Tourism Board–organised Dragon Boat Carnival takes place over the weekend, featuring three days of international and local races, onshore entertainment, and music and food. It’s a festival not to be missed. Check out our Calendar section for details. Hong Kong is understandably proud of its homegrown Ocean Park, one of Asia’s premier theme parks, which remains a world-class attraction 42 years since it opened, thanks to its continuing investment and renewal. This month, we feature this beloved landmark, review what makes it such a unique draw, and highlight some of the top attractions. It should be a must-do item on your bucket list. Check out our cover story on page 10 for more details. We always encourage visitors to Hong Kong to explore the city’s many neighbourhoods and experience how the locals live – the genuine Hong Kong experience, you may say. An excellent way to do that is to spend a day roaming Hong Kong East, a string of neighbourhoods on the eastern part of Hong Kong Island. As with other areas of Hong Kong, Hong Kong East offers colourful neighbourhoods, plenty of local eats, scenic spots and cultural touchpoints. We highly recommend that you include a visit there in your itinerary. This month, Chinese Opera lovers are in for a treat as two world-class opera companies from Beijing and Shanghai perform at the Xiqu Centre, which is fast becoming the focal point for Cantonese and other genres of operas. Also, this month, the Chinese Opera Festival gets into full swing, with a full slate of performances scheduled over the next two months. Be sure to catch a show or two if you happen to be a Chinese opera fan or want to know what it’s all about. Several large fairs are held this month, including the Hong Kong International Travel Expo, the city’s only major travel show and the Hong Kong Jewellery and Gem Fair, one of Asia’s largest. Whether it’s immersing yourself in dragon boat racing action, visiting Ocean Park with your family and friends, checking out the city’s colourful neighbourhoods or catching an opera performance or two, Hong Kong offers visitors an endless choice of activities and memorable experiences. Hong Kong Dance Company: Grand Dance Drama Red Poppies

Adapted from the eponymous novel, which won China’s most prestigious book prize, established by writer Mao Dun, the grand dance drama Red Poppies draws from folk dance traditions of the Tibetan region where the book is set. Featuring Tibetan music and singing as well as colourful tribal costumes, Red Poppies is a testament to the changes of time, the destruction of old-world orders and the coming of a new age. It is also a meditation on karma, on good and evil, through Tibetan culture and traditions.

International Travel Expo Hong Kong

The annual ITE Hong Kong, t h e c i t y ’s o n l y t r a v e l f a i r, combines leisure and MICE, with about 600 exhibitors expected to attend, of which 180 are the MICE category. The Hong Kong Dragon Boat Carnival

The 10th edition of the Hong Kong Dragon Boat Carnival, arguably Asia’s premier Dragon Boat Festival event, promises to be its biggest yet. The carnival’s major event, the CCB (Asia) Hong Kong International Dragon Boat Races, features the best local and regional teams from across the world racing in the beautiful Victoria Harbour vying for major trophies. Titanic is a multiple Tony Award–winning musical based on the famous voyage and sinking of “The Ship of Dreams”. Presented by award-winning performing arts training company Face Productions, Titanic the Musical employs large cast to tell the tale and portray the interlaced stories of a selection of the ill-fated passengers.

Dragon Boat Festival

Join this ancient festival, known for its exciting dragon boat races and eating of sticky rice dumplings wrapped in bamboo leaves. It is widely celebrated in Chinese communities across Asia, and as usual, Hong Kong celebrates it in grand style as scores of energetic and visually stunning dragon boat races take place across the city, including in Stanley, Shatin, Sai Kung, Aberdeen and Tai O. Chinese Opera Festival 2019

Since the inception of the annual Chinese Opera Festival in 2010, the Leisure and Cultural Services Department has brought high-quality performances of regional xiqu genres to the stage, along with a broad programme of lectures, talks, film screenings and exhibitions. This year the recently opened Xiqu Centre serves as the focal point for the various events and performances.

Arthur Hacker reveals Hong Kong's first-ever flying machine 亞瑟·克赫回顧香港第一架飛機的歷史故事

ust inside the entrance to Hong Kong International Airport, suspended from the ceiling, is a replica of Charles Van Den Born’s Farman ll biplane, the first airplane to fly in Hong Kong. The idea of building the replica emerged over a few beers in the bar of the Volunteer Officers' Mess in Central. It was a stirring idea, but turning this alcoholic pipedream into reality took five long years. The Hong Kong Historical Aircraft Association was formed to provide support for the project. Finally, on 15 November 1997, American pilot Roger Freeman took to the skies at Chek Lap Kok – where the new airport is today – in the replica plane. The craft cost $1.5 million to build, with sponsorship from the local office of oil giant Shell covering much of the production cost. Belgian aviator Charles Van Den Born was a man who liked to win. The former champion cyclist was granted a pilot's licence in 1910, a year after Louis Bleriot's inaugural flight across the English Channel. ln Europe, competition in aviation was stiff and records were being broken almost every day by intrepid birdmen. So Van Den Born travelled east in his quest for glory.

ln January 1911, pioneering American aviator Captain Thomas Baldwin sought to arrange a flying exhibition in Hong Kong. ln 1891 he had made the first balloon ascent and also the first descent by parachute over the territory, so it was not expected that he would be refused permission by the Hong Kong Government to stage the event, but he was. A French attempt was also frustrated. The official line was: "Government, however well disposed towards airmen, cannot allow promiscuous flying about the Island and the Territory." The authorities finally relented and allowed Charles Van Den Born to attempt a flight at Shatin. Why a Belgian should be considered more trustworthy than a Frenchman or an American is not clear. On 18 March 1911, the Governor, Sir Frederick Lugard, and thousands of spectators travelled to Shatin on a special train to witness the colony's first flight. The cost of tickets ranged from 50 cents to five dollars, with a ride available in the plane – a Farman biplane named ‘Wanda’ – for the sum of 75 bucks. Unfortunately, strong winds prevented Wanda from taking off. Most of the disappointed

spectators caught the 5.10pm train back to Kowloon. However, after the Governor and the multitudes had departed, the wind dropped and Van Den Born did indeed take to the skies, watched by a few despondent water buffaloes, a handful of elderly Hakka peasants and an intrepid reporter from the Hong Kong Daily Press, who wrote: "Like a bird the biplane rose in less than 100 yards, soaring upwards to a height of 300 feet. At this level it encircled the aerodrome, then shot upwards. After sailing around at the greater altitude for some time the planes were adjusted and the machine dived until within a hundred feet or so from the ground. With the quickness and certainty of a bird its downward motion was changed and it sailed along at this height for some time and then alighted easily near the garage." A week later, there was another demonstration at Shatin. The aviation buffs that went along witnessed Hong Kong's first plane crash. With a sickening thud, Van Den Born's machine bit the dust while trying to avoid a crowd of schoolboys from Queen's College, who were playing football on the landing strip. The Winged Walloon was unhurt and lived to fly another day. He moved on to Canton (now Guangzhou) where he put on a flying show for the Manchu General, Fu Chi, known as the Guardian of the Cantonese. Unfortunately, just after the show, a republican gunman shot General Fu dead. Further aviation displays in China were cancelled. The replica of Wanda that now hangs in Hong Kong's International Airport was named The Spirit of Shatin in honour of that first Hong Kong flight, by a birdman from Belgium.■

最後，政府終於讓步，批准比利時人查爾斯·溫德邦在沙田飛行。至於為何政府認為比利時人較法國人和美國人可靠則不得而知。 1911 年 3 月 18 日，港督盧嘉爵士和乾多名觀眾乘坐一輛專線火車抵達沙田，見證香港的首次飛行。票價由五毫至三元不等，一次飛行則要花上七十五元。可是，天公不作美，那天風勢猛烈，查爾斯的費文雙翼飛機不能順利起飛。許多觀眾失望而回，乘搭下午五時十分的火車返回九龍。可是，當港督和一些觀眾離開後，風勢開始減弱，查爾斯成功起飛，卻只有幾隻沒精打采的水牛和幾個年老的客家農民見證著這一幕。《孖剌報》一位精神可嘉的記者這樣寫道 : 「雙翼飛機像鳥兒般在陸地上飛了一百碼，逐漸上升至三百英尺左右，然後繞著機場飛，接著以高速上升。在一定的高度上飛行了一會，飛機又快速下降至離地面一百英尺的距離。這架像鳥兒一般敏捷和銳利的飛機又飛行了一會，然後輕輕鬆鬆地降落在飛機庫旁。」一星期後，沙田舉行第二場飛行示範。觀眾目睹香港第一宗撞機事件。一群皇仁書院的學生在飛機降落地上踢足球，砰的一聲，查爾斯的飛機為閃避他們而不幸撞機。這位比利時飛行員並無受傷，而且過不久就到了廣州為一名滿州將軍進行飛行表演。很不幸，表演完結後將軍就給一名國民黨殺手射殺而死。所有原定在中國舉行的飛行表演都因而取消。查爾斯的費文雙翼飛機在沙田進行第一次飛行，懸掛在香港國際機場的仿製飛機定名為「沙田精神號」，實為合理。相反，查爾斯卻替他的雙翼飛機起了一個女孩的名字云達，令人費解。■

Participants get to learn about seal behaviours and habitat, interact with seals in the water, including touching and even hugging them, and have a picture taken with a seal! Food and Beverage/Ginger Grill 美食佳釀/ Ginger Grill 爐炭燒 Ocean Park has substantially revamped its food and beverage offerings. Of special note is the Ginger Grill located at the Waterfront near the entrance. The spacious outlet offers contemporary Thai cuisine and grilled items. Signature dishes include Thai-style Roasted Sunflower Chicken, Traditional Tom Yum Goong, assorted appetisers accompanied by various dipping sauces and the U.S. Prime Ribeye Bone-in, among others. The outlet is open to guests free of admission charge after 6:30pm when the park closes.

Bustling Neighbourhoods 熙熙攘攘的街区

Many neighbourhoods here have long histories and are hives of diverse activity during the day as people go about their daily affairs. The simplest way to check them out is by hopping on and off the tram that rumbles imperiously along King’s Road, the main thoroughfare; or it can all be done as part of a healthy walk. 這裡的街區歷史久遠，人們白天忙忙碌碌宛若蜜蜂般勤勞。搭乘傳統的電車，沿著英皇道一路觀光，當然走路也是不錯的選擇。

Quarry Bay and Tai Koo Shing 鲗鱼涌及太古城

A recommended visit is to Model Housing Estate along King’s Road, the oldest public housing estate on Hong Kong Island, with the bulk of the blocks built in the 1950s – it’s still remarkably well maintained. Further along, Tai Koo Shing is one of the city’s earliest and largest private estates. The adjacent Tai Koo Fong is a vibrant office area with trendy restaurants, chic coffee shops and bars. Cityplaza, athriving shopping mall where you can shop to your heart’s content, is embedded in the centre of the area. 英皇道上的模範邨是香港島歷史最悠久的公屋之一，始建於1950年代，至今保存完好。而太古城則是規模最大的私人物業之一，鄰近的太古坊是一個充滿活力的辦公區，時尚餐廳、別緻咖啡館和小酒吧雲集。太古城中心是香港大型購物中心之一，在這裡可以買到任何你喜歡的東西。

Sai Wan Ho and Shau Kei Wan 西湾河及筲箕湾

For a unique cultural experience, you should stop by Tai On Building next to Sai Wan Ho MTR Station. The ground floor of this large residential building is criss-crossed with dozens of dai pai dongs, food stalls, and cha chaan tengs – offering delicious, cheap and very local fare. Whether its fried noodles cooked on demand, or Hainanese Chicken Rice (expect a queue), beef brisket noodles, desserts, it’s a foodie’s dreamland. Not far away is the Hong Kong Film Archive, which stores many of the city’s famous Cantonese movies from the 1950s through to the 1990s and offers daily screenings. The tram terminus, Shau Kei Wan, evolved from a fishing village and you can find temples where the traditional deities are worshipped daily. Check out Shing Wong Temple near the end of the tram line.

一定不要錯過西灣河地鐵站旁的太安樓。這座大型住宅樓樓下，幾十個大排檔、小吃攤和茶餐廳雲集，美味、便宜、地道。現點現做的炒麵、海南雞飯 ( 需要排隊)、牛腩面、甜點，這裡是讓美食家都流口水的地方。附近有香港電影資料館，存放著香港上世紀50年代至90年代的許多經典粵語電影，每日都有放映。筲箕灣是電車的終點。這裡原是一個小漁村，現在仍保留供人慘白的寺廟，推薦去電車總站附近的成王廟看一看。

You may want to explore the more scenic side of Hong Kong East, either along the harbourfront, or, if you are up for a hike, taking to the green hills above. 沿著海港探索香港東部風景優美的一面，或者徒步去周邊的山丘觀光。

Mount Parker hiking trails and vantage points 柏架山道自然径及有利位置

The hills looming over Hong Kong East are home to some of the city’s most hiked trails. They are well-marked and well maintained, offering a variety of terrains, flora and fauna. For a spectacular vantage point of Victoria Harbour and the city, you can’t do better than Braemar Hill Lookout, an easy hike not far from the Braemar Hill Bus Terminus. It’s also one of the best places to watch the sunset.

As the second tallest peak on Hong Kong Island, Mount Parker dominates the landscape nearby. You can walk to the top from street level up the paved Mount Parker Road, starting from Quarry Bay. This route stops by Quarry Pass, a rest stop for several major trails criss-crossing this area, and a busy place on weekends. Along the way, you’ll cross other trails including the Quarry Bay Jogging Trail and Sir Cecil’s Ride, both mostly level, and ideal for easy hiking. Another hiking trail worth exploring is the Kornhill Forest Walk, a shaded, tranquil path that starts from Kornhill and meanders up the hill, encompassing a variety of local plant species.

柏架山是港島第二高峰，在這裡可以欣賞到很多獨特風景。從鰂魚涌出發，一路沿著柏架山道，可以很輕鬆帶達頂部。在大風坳停下來歇息一會兒，感受涼風送爽，這是幾條縱橫交錯主要小徑的交匯處，週末人很多。沿著這條路，可以到達其他行山徑，包括鰂魚涌緩跑徑和大潭金督馳馬徑，這兩條相對較為平坦，非常適合徒步旅行。另一條值得探索的徒步路線是康山道，從康山出發，一路蜿蜒向上，沿路可以看到各種本土植物。

A leisurely stroll along the harbourfront starts from Hoi Yu Street, on to Quarry Bay Promenade. The early part is a designated dog park where dog owners show off their beloved pets. The promenade is usually teeming with joggers and main park, alongside Tai Koo Shing, is where you’ll find local people relaxing or practising tai chi. The view of the harbour at this end is expansive and tranquil, and just as panoramic as the more hectic western end. 由鰂魚涌海濱花園為起點，沿海濱悠閒漫步。附近有個小花園，很多當地人在那裡遛狗聊天，步行道上常常有很多慢跑者，還有些老年人在此練太極，環境舒適輕鬆。在這裡眺望更開闊的海景，享受片刻寧靜。

Further along are Sai Wan Ho Promenade and the Soho East area – a line of restaurants on the waterfront. It’s perfect to enjoy a relaxed lunch or drinks while gazing at the people and harbour. You may want to take the old-style ferry across to Lei Yue Mun for a nostalgic and relaxing ride. Keep walking, and you’ll reach Aldrich Bay – a local residential area, and its typhoon shelter. ouse 1881, formerly known as Hullet House, is something of a jewel hidden in plain sight. It forms part of 1881 Heritage, an architectural landmark and one of the most photogenic spots in Tsim Sha Tsui, where visitors admire the elegant architecture and glittering watch and jewellery shops. At the back, less obvious but visible to all, is House 1881, an imposing colonial building with lush gardens sitting quietly atop a small hill. 1881 House recently underwent an extensive revamp. As a heritage building, the former Marine Police Headquarters was renovated under strict preservation guidelines and hence it retains much of its colonial grandeur and charm. The building is surprisingly large and multi-functional. It houses a boutique hotel with 10 large colonial-style suites beautifully outfitted with a four-poster beds and all. It accommodates five concept dining outlets, which include a fine-dining Cantonese restaurant, a café, two bars – with the Stable Bar housing one of the city’s largest gin collections, and a steak house, the object of our gourmet affections today. What most surprised us about 1881 House was the number and variety of indoor and outdoor event spaces available for functions of all types. We should mention that Café Parlour offers a lovely Afternoon Tea Set ($588 per set/2 persons) which includes a delectable collection of sweet pastries, savoury delicacies, homemade scones and a selection of teas. If you are in a mood for a special drink, the café offers two glasses of champagne for an extra $380. It’s a great way to relax after a busy day of shopping and sightseeing.

The nibbles only heightened our anticipation of our dinner at the Stable Steak House. Converted from a former stables, the restaurant’s décor retains some the original fixtures including its front doors which open expansively onto the manicured lawn in front. The seating is relaxed and friendly, as is the service of the helpful staff. Our dinner started with Caesar Salad ($130) and USDA Prime Beef Tartare ($210), followed by a delicious Beef Consommé ($170) that was meticulously prepared, with no seasoning to get in the way of the soup’s natural beef flavour. The signature dishes of the restaurant are, of course, grilled steaks and meats, in which it sources a variety of quality cuts from the United States, Australia, Japan, Korea and elsewhere. We chose to share three cuts: USDA Prime Black Angus Rib-Eye (12oz/$400), A-5 Omi Shiga Beef Striploin ($12oz/$1,280) and Australian Rack of Lamb (half/$420 or whole/$760). We could distinguish the different flavours and textures of the meats, all of which were excellent. A wide selection of mustards and rock salts help accent the flavour, which is a nice touch. The dinner ends with a trio of desserts: Chocolate Fondant ($120), Lemon Basil Mousse ($120) and Baked Pear Crumble ($120) that certainly sated our sweet tooth. Stable Steak House offers an well curated collection of wines for the various dishes, which we highly recommend. Now that we’ve introduced you to this hidden jewel, be sure to enjoy a memorable meal at a unique venue.■

he New World Millennium Hong Kong Hotel, located in Tsim Sha Tsui, was formerly known as the Nikko Hotel, with a focus on serving visitors from Japan. It’s unsurprising then, notwithstanding the name change, that the hotel still offers quality Japanese cuisines. Indeed, the New World Millennium operates Sagano, a large upscale Japanese restaurant and, adjacent, Ranzan, a teppanyaki venue with live cooking. We were there to try out Sagano, the hotel’s flagship restaurant that specialises in the cuisines of the ancient Japanese capital Kyoto. The spacious outlet is artfully designed, featuring bamboo and wood elements to present a modern interpretation of Kyoto décor. A waterfall by the entrance is serenely welcoming; the dining hall is neat and simple with furniture designed in the classic Japanese style. The outlet can seat more than 110 guests and features six VIP rooms and a teppanyaki counter. Under Chef Masahiko Noka, a Kyoto native with more than 30 years of culinary experience, who has been the hotel’s head chef since 2005, Sagano delivers a wide range of authentic Japanese specialties, including sushi, tempura, teppanyaki and kaiseki, always using the freshest ingredients. Our dinner of choice was Sagano’s Special Kaiseki Menu for two persons ($1,500 per person). Kaiseki is a traditional Japanese multicourse meal consisting of a series of intricately and skilfully prepared dishes, which is popular in the Kyoto area. The dinner started with Assorted Appetiser – seven small dishes – marinated tomato, squid, pollock roe, spinach, mushroom and fish. It’s clear that much preparation goes into to each item. Then came Sashimi, which was snapper, flamed toro, and deep-sea horse mackerel. Each piece of fish is fresh and tender, attesting to its quality. Then the unusual Stewed Dish, in which a piece of salmon is

stewed with eggplant, its sauce lightly seasoned with sweet soy. A Japanese Salad came next, followed by the entrée, Grilled Wagyu, with a potato salad on the side. The beef is Japanese A4 Wagyu, which is super-tender and marbled, each slice practically melting in the mouth. The beef is served with Steamed Rice, Miso Soup and a Vinegared dish, which is snow crab meat with vegetable marinated in Japanese vinegar. The beef portion is surprisingly large, and we were becoming full near the end. From a choice of Japanese ice cream to wrap up the meal we chose the Green Tea Ice Cream. For a traditional Kaiseki meal, a nice bottle of cold sake wine is highly desirable. Sagano offers a wide selection of sakes of different vintages. We highly recommend you choose one to go with your meal. Japanese food is wildly popular in Hong Kong, with a dizzying variety of cuisines available. While, the trend may go towards single cuisine venues, such as sushi, ramen or teppanyaki, sometimes it is nice to enjoy a traditional meal where different cooking styles and preparation methods are showcased. The Kaiseki meal at Sagano did just that. So, if you are in the mood for a nicely prepared traditional Japanese meal, Sagano is well worth considering.■

The twist being that the décor of this large restaurant, which includes a generous outdoor terrace, is all decked out on a Moroccan theme, featuring Moorish decorative elements and finishing. The food, though, is all Asian. The dishes we sampled included an Thai Appetizer Platter ($128), with shrimp cake, spring roll, lemongrass chicken wings, chicken balls and Thai sour sausages; Omelet Pad Thai with Grilled Tiger Prawn ($148) which was tasty; Red Curry Prawns & Grilled Pineapple Pizza ($178), a creative concoction that works; Risotto with Deep-fried Soft Shell Crab in Thai Green Curry ($168), another interesting dish that we hadn’t tried before; and Butterfly Pea & Pandan Sticky Rice with Mango ($78). Given its location in Mong Kok, where late night crowds are par for the course, Morokok aims to be a gathering place for customers at all hours. It serves a collection of local craft beers – we tried the Heroes Nimble Macho ($88/pint). It also offers a collection of cocktails and mocktails including the Morokok Donut ($108), made from vodka, vanilla and milk. For entertainment, there is a dartboard area and it also offers Shishas ($250 and up) with over 100 flavours available. Morokok also offers an afternoon tea set from 3pm to 6pm with prices ranging from $58 to $88. Whether you’re looking for some tasty Thai food after a long day of shopping or to enjoy some drinks and fun in the evening, Morokok makes an excellent choice.

Old Kong Hot Pot 老港情懷火鍋店

In Hong Kong, eating Chinese hotpot is a year-round passion; a hearty meal of piping-hot soup and freshly poached meats is a winner even in the heat of summer. And if you are interested to try old-style Hong Kong hotpot cooking, the recently opened Old Kong Hotpot, a quality hotpot restaurant that attempts to recreate the nostalgic feel through its dishes and its interior décor, is a fine choice. We should note that Old Kong Hotpot does not have an English sign. Don’t let that deter you though; its bright green signage is easily recognisable, and it’s located just next to a Starbucks coffee shop. The restaurant does have an English menu. As with any hotpot meal, you need to choose a soup base in which to dip the ingredients. Old Kong offers over a dozen soup bases; we chose the Fish Maw and Chicken Broth ($198/small and $238/large). For ingredients we selected their signature Assorted Beef ($338), which includes Angus Chuck Slices, Angus Beef Cubes, Beef Bone Marrow, Black Beef Stomach, White Beef Stomach and Honeycombed Tripe. Other ingredients include Mixed Handmade Meat Ball (4 types for $88) with cuttlefish, shrimp, beef and mud fish; Chinese Abalone ($38/piece); U.S. Oyster Barrel ($148); Crispy Fresh Grass Carp ($88); and Korean Pork Slices ($88). For vegetables, we chose Mixed Mushrooms ($68), Mixed Vegetables ($58) and Okra ($48). To drink, we recommend you try the Syrup of Plum ($58/jar) and Water Chestnut & Bamboo Cane ($58) – both are light and refreshing. Hotpot is always best enjoyed in a group. Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. With the aid of interesting hands-on exhibits and advanced equipment coupled with lighting effects and environmental decorations, the exhibition vividly introduces astronomy and space science. The "Hall of the Cosmos" showcases the Universe from near to far, travelling from the solar system that we are living in, to the stars, Milky Way and galaxies further away and exploring the science and evolution of the universe all along the way. John A. Girard, Hong Kong Area General Manager and General Manager of Regal Airport Hotel Meeting and Conference Centre, shares with us his career and perspectives on the hotel industry. 區域總經理（香港）及富豪機場酒店總經理莊智華與我們分享他對酒店業的思考。

John A. Girard

I grew up in Malta. As a small island country in the Mediterranean, the opportunities were limited. I was always on the lookout to do better. I fell in love with a glamorous new hotel as it was being built and daydreamed about working there. Eventually, I left Malta and went to London to work at the Royal Lancaster Hotel. I felt limited in London and wanted to see more of the world so, in 1972 I flew to Hong Kong and took a position at the Excelsior to help open the then new hotel. It recently closed down and at the farewell party, I was one of only four staff who had been there at the start. After 12 years at various locations around the world, I returned to Hong Kong and joined Marco Polo and then in 2009 joined the Regal hotels. So, after 34 years in Hong Kong, this is certainly home. With 1,171 rooms, the Regal Airport Hotel is a large establishment, and very different from a city or resort hotel. While the same principles of collaborative management still apply, there are differences. The turnover is very high – our average stay is only 1.2 nights per guest. So, service delivery – fast and efficient – is of paramount importance. Several new hotels are scheduled to open in the airport area to meet the projected demand from the third runway, the Sky City Mall, and traffic from the new Zhuhai Macau Bridge. While there will be some challenges for us, we will always be special as we are umbilically tied to the airport and have been here for over 20 years. The OTAs have transformed the hotel business and how it’s run. They provide a lot of business to hotels and derive substantial revenue from hotels through commissions. I think the big hotel groups with huge market power are still figuring out how to leverage the digital platform. We have our own Regal Web, which brings in a lot of direct bookings as we guarantee the lowest prices. My favourite part of the job is to manage an absolutely lost, negative situation and turn it positive – taking an angry customer and making him a loyal guest. I’ll do whatever it takes and be persistent. To be a good general manager, you need to be a good listener, a good driver, and very importantly, have the ability to know when you are wrong and accept it, deferring to someone else’s view. I love everything about Hong Kong – its dynamism, its can-do attitude, its constant change, the food, and the people; I fell in love with the people the day I arrived – they are so hardworking and family focused. I have great respect for the people of Hong Kong. My three recommendations for visitors: 1. Explore this area of the Lantau Island: Great Buddha, Tai O, the hiking trails. 2. Go out and eat all you can! 3. Go and meet the people: Shanghai Street, local neighbourhoods, take in the noise and smells, check out a temple, hop on a tram.

我在馬耳他長大。這個地中海的小島國能提供的機會有限，所以我一直在努力尋找更多的機遇，當時的我對一家正在興建的新酒店十分感興趣，一度幻想自己在那里工作是什麼樣子。最後選擇離開馬耳他去倫敦，在倫敦皇家蘭開斯特酒店找了一份工作，持續至今。慢慢我希望看到更大、更精彩的世界，所以1972年我離開倫敦，來到香港，在香港怡東酒店工作，這家酒店最近剛剛宣布結業，閉幕儀式上有四位見證了這家酒店的開門與結業，我是其中之一。而後我在世界其他地方工作了12年，回到香港後，我在馬可波羅酒店工作，後來在2009年又到富豪酒店，算起來我已經在香港待了34年了，這裡就是我的家。富豪機場酒店擁有1,171間客房，規模龐大，它與城市酒店和度假酒店有很大不同。雖然採用相同的協作管理原則，但差異明顯，例如流動很快——每位客人的平均住宿時間僅為1.2晚。因此，快速和高效的服務至關重要。機場區內計劃興建數間新酒店，以應對三跑道系統發展方案、航天城及新建的港珠澳大橋帶來的龐大客流量。雖然這是個挑戰，但我們信心滿滿，因為我們足夠也別，與機場緊密相連，已經有20多年的經營經驗。在線旅遊改變了酒店業務及運營方式。酒店業務量大幅度增加，而他們通過酒店支付的佣金獲得可觀的收入。我認為大型酒店集團仍需學習如何利用數字平台。我們有自己的酒店網站，可以直接預訂，我們保證提供最低價格。我最喜歡的工作就是處理困難重重的業務，步步扭轉局面並贏得勝利——把憤怒的顧客變成忠誠的客人，在這一點上，我一直在努力。想成為一名優秀的總經理，首先要是耐心的傾聽者，優秀的情緒引導者。此外，你要有能力認識到自己的錯誤，正式它，接受他人的意見。我喜歡香港的一切——活力、自信、創新、美食乃至是香港人，來到這裡的第一天我就愛上了這裡的人——他們工作努力，又顧家，值得尊重。給遊客的三個建議：

1. 探索大嶼山：天壇大佛、大澳、遠足徑。 2. 盡情品嚐美食！ 3. 去接觸香港當地人吧：上海街，當地街坊，感受熱鬧和城市氣息，逛一逛寺廟，坐一坐香港電車。
