e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. As you know, the Covid-19 coronavirus pandemic is still ongoing. As such, global travel remains highly restricted and limited. Hence, we appreciate your coming to our city in these trying circumstances. Understandably, almost all large-scale events and activities have been postponed and major attractions such as theme parks are closed until further notice. The good news in Hong Kong is that the city has done a remarkable job in containing the spread of the Coronavirus, thanks to the vigilance of the Hong Kong people and effective measures taken by the government. As such, as we go to print, the city remains open, including all the hotels, the city’s transport system, shopping malls, cinemas, shops and restaurants, albeit with certain social distancing rules in place. The city remains safe and clean and there is still plenty to do here. Nevertheless, before making firm plans for trips and activities in the city, we suggest that you contact your concierge for any latest updates about what’s on and any restrictions. You are surely familiar with Hong Kong’s Victoria Harbour, one of the world’s most iconic. Before the city built its first cross-harbour road tunnel and MTR lines burrowed under the harbour, passenger ferries were the major transport mode and a ubiquitous sight in the harbour. Today, its waters are much quieter, but a relaxing ferry ride across the harbour is still one of the top items on most people’s to-do list. As well as the Star Ferry, other passenger ferries run between various points of the harbour. We highly recommend taking in one or more of these trips. It will also give you a chance to explore some local neighbourhoods that you might otherwise have passed by. Please see our cover story on page 4 for more about Hong Kong's beguiling ferry rides. Hong Kong’s great outdoors is free for intrepid visitors to roam and explore. You might not know that within many of the city’s best-known country parks are substantial reservoirs. In fact, a large portion of Hong Kong’s land area is used for reservoirs, which store drinking water. The areas surrounding the reservoirs are oases of peace and greenery, with a rich diversity of fauna and flora. Several are easily accessible from the city. Please go to page 10 to check out our story on the best reservoirs to visit. With most restaurants still open, we recommend you take full advantage of all the culinary delights that Hong Kong has to offer. Check out our dining guide and bar tab sections beginning on page 20 for a review of some of the city’s best and best-value restaurants and bars. hips and boats of all sizes still criss-cross Hong Kong’s iconic Victoria harbour, even if it is not quite the jostling scene it once was. You may see towering cruise ships passing towed barges laden with building materials, while pleasure junks, small fishing craft and even yachts bob on the waters. And of course, ferries still ply back and forth across the harbour.

The network of ferries bustling between Kowloon and Hong Kong Island is a ubiquitous part of the harbour scene. As recently as the late 1970s – even after the Cross-Harbour Tunnel opened in 1972 – the ferries were the main way to travel to and from the island of Hong Kong for both passengers and motor vehicles. Numerous ferry routes operated by companies large and small connected Kowloon, Hong Kong, the outlying islands and parts of New Territories. Today, they are an indelible and colourful part of Hong Kong’s transport heritage.

Star Ferry 天星小轮 This world-famous ferry crossing in the heart of the city needs no introduction. The iconic white and green craft have been carrying passengers across the harbour since 1888—over 130 years. Currently, Star Ferry runs two routes, from Tsim Sha Tsui to Central, and to Wanchai. The routes are short (seven and ten minutes) and awe-inspiring as you are enveloped by the majestic cityscape on both sides of the harbour. From the Wanchai ferry pier, it is a delightful stroll along the broad harbourfront promenade to Central, taking in Golden Bauhinia Square, Tamar Park and the large observation Ferris wheel along the way. 世界聞名的天星小輪，位於市中心。自 1888 年起，這艘標誌性白綠相間的渡輪就一直載着乘客穿越海港，至今已有 130 多年的歷史。天星輪渡現有兩條路線，從尖沙咀分別到中環和灣仔，兩條路線都很短（七分鐘和十分鐘），當您被海港兩岸雄偉的城市景觀包圍時，會從心底生出敬畏之情。沿着連接灣仔和中環的海濱長廊漫步，途經金紫荊廣場，添馬艦公園和巨型摩天輪。

Sai Wan Ho to Lei Yue Mun 西湾河至鲤鱼门 The Sai Wan Ho Ferry, located on the Sai Wan Ho promenade opposite the popular Soho East dining area, is both a local service and a nostalgia trip, featuring vessels from the 1970s and earlier, decorated with historic artefacts. Sai Wan Ho itself is worth visiting: the nearby Hong Kong Film Archive is home to many of Hong Kong’s classic films; Tai On Building, near the Sai Wan Ho MTR Station, is an old-style commercial complex from the 1970s that houses a busy street food centre, much frequented by locals. The waterfront extends into Quarry Bay Park, a long promenade full of people jogging and strolling, and offering a spectacular view of Eastern Kowloon and the hills beyond. A retired fireboat, the Alexander Grantham, is on permanent display and always a winner with the youngsters. Lei Yue Mun on the other side of the harbour is a quaint seaside village, known for its warren of seafood restaurants. Sai Wan Ho to Kwun Tong 西湾河至观塘 Another route from Sai Wan Ho is to Kwun Tong, a former industrial quarter rapidly transforming into a new business district, with capacious factory buildings repurposed as offices and studios, as well as new structures. Attractions include the nicely landscaped Kwun Tong waterfront promenade, hip coworking spaces, chic coffee houses, and a vibrant community of alternative art and music practitioners nestling in old factory buildings. The Kai Tak Cruise Terminal is just across the water, its rooftop garden offering a panoramic view of the city, and the perfect platform from which to see giant cruise ships when they are in town. Meanwhile, nearby APM – a large shopping mall – offers pretty much something for everybody. Note: at Kwun Tong, use the public pier at Kei Yip Street (inside typhoon shelter), not the main ferry pier used by the North Point service. 西灣河的另一條路線是去觀塘，曾經的工業區正迅速轉變為新商業區，寬敞的廠房改造成辦公室和工作室，還有些新興建築。這裡有風景優美的觀塘海濱長廊、時尚的工作區、別緻的咖啡廳和坐落在舊廠房中另類藝術和音樂。啟德郵輪碼頭就在對面，它的屋頂花園可以將城市全景盡收眼底，當巨型郵輪停泊時，從這裡望過去，美不勝收。大型購物中心 APM 為旅客提供了很多選擇。提示：請使用觀塘基業街（避風塘內）的公眾碼頭，最好不要去北角的渡輪碼頭。

North Point to Whampoa 北角至黄埔 New World First Ferry, which mainly operates ferries to outlying islands, runs a service between North Point and Whampoa, in Hung Hom. A thriving residential community, Whampoa has also seen transformation, starting with its waterfront. The recently opened Kerry Hotel offers magnificent views of the harbour from its many terraces – perfect for an afternoon or evening drink. Connected to the hotel is The Dockyard – a vibrant food court serving Southeast Asian cuisines, with a live band in the evenings. To literally go shopping on a ship, visit the Whampoa, a shopping mall uncannily created as a cruise ship in the midst of the district. Aeon, the Japanese department store, is the major tenant and there are also loads of local restaurants and eateries worth exploring. The promenade from Whampoa connects to Tsim Sha Tsui East. Consider taking a scenic two-kilometre stroll back along it for gorgeous views. Or you can walk about 15 minutes inland to visit the Hong Kong Polytechnic University and its Innovation Tower, the architectural masterpiece by famed British Iraqi architect Zaha Hadid.

North Point to Kowloon City 北角至九龙城

This ferry, also operated by New World First Ferry, plies the route between North Point and Kowloon City, an older and fascinating neighbourhood adjacent to the former Kai Tak Airport that is readying for broad redevelopment. Near the ferry pier, you can check out the Sung Wong Toi Garden, which contains remains of the historic relics from the Song dynasty. Close by is the expansive and quirky Cattle Depot Artist Village. Further up into Kowloon City lies a slew of Thai restaurants and outlets serving Islamic and halal food. For the intrepid, finish your visit at another historic landmark, the Kowloon City Walled Garden, site of the infamous Kowloon Walled City that was torn down only in the 1990s. 這條渡輪路線也由新世界第一渡輪公司運營，可將乘客帶到北角與九龍城之間，這是一個古老而迷人的社區，毗鄰舊啟德機場，該機場正在大規模開發中。在渡輪碼頭，您可以欣賞到宋皇台花園，裡面有宋代的歷史遺跡。附近還有佔地面積較大且藝術氣息濃厚的牛棚藝術村。往九龍城方向繼續走，會看到泰國餐館和提供伊斯蘭清真食品的商店。遊客可以前往另一個歷史性地標，即九龍城寨公園，這座遠近聞名的九龍寨城1990年代已被拆除。

Harbour Cruises 维港海上游 If you are in the mood for a leisurely cruise around our magnificent harbour, you can choose from several operators, the most famous of which is Aqua Luna. Aqua Luna operates old-style Chinese junk boats with distinctive red sails. The boats offer a variety of day and night cruises, picking up passengers from public piers in Tsim Sha Tsui, Hung Hom, Central and Wanchai. Other harbour cruise operators include Star Ferry, Dukling Junk Ride Harbour Tour, Water Tours of Hong Kong, and Harbour Cruise Bauhinia. Hong Kong’s many reservoirs are havens of tranquillity and natural beauty, often just minutes away from the city. We highlight some of the more scenic and accessible for you to visit. 香港的水库大多宁静祥和，风景优美，且交通便利距离市区较近。本月我们将重点介绍这些景点，供您选择。

t doesn’t take long for a visitor to Hong Kong to learn that, whilst the city is one of the most densely populated in the world, it is also one of the greenest. Almost 70 percent of the territory is considered green with more than half of that designated as country parks. With Hong Kong’s lack of major natural lakes and rivers, the colonial government built numerous reservoirs to collect rain as a freshwater supply. Today, due to rapid population growth, most of our fresh water comes from China, augmented by the reservoirs. Hong Kong’s hilly terrain means that most of Hong Kong’s reservoirs were created by damming local catchment areas. However, the two largest, Plover Cove Reservoir and High Island Reservoir, were carved out of the sea with dams, drained and then allowed to refill with fresh water. Most of the reservoirs and their surrounding areas lie within Hong Kong’s designated country parks. These areas are thus protected from development, to be explored by the public as delightful pockets of natural beauty. Visitors can enjoy hiking scenic routes, check out historical relics, take in the diverse flora and fauna, and of course, be immersed in the great outdoors surrounding the reservoirs. Best of all, many of these locations are close by, only minutes from the city centre and easily reachable by taxi or bus. So, be sure to spend a half-day or more visiting these reservoirs, whether to enjoy a vigorous walk, admire the stunning vistas, or just be at one with nature – you’ll come back reinvigorated!

Tai Tam Country Park

(Tai Tam Reservoir group of four reservoirs)

大潭郊野公園 (大潭四水庫) Occupying a fifth of Hong Kong Island, Tai Tam Country Park is one of the most scenic in the territory, with fantastic views of the city and the South China Sea, often simultaneously. There are hiking trails throughout the park, including around the four reservoirs. A good route is to start from Hong Kong Parkview, a luxury residential estate at the top of Wong Nai Chung Gap, and walk down to the reservoirs, which lie on the less-developed south of the island. This delightful walk takes you through wooded trees framed by green mountains on all sides. Descend to Tai Tam Reservoir and on to Tai Tam Tuk Reservoir. Along the way, you can explore architectural, structural, and engineering elements of the four reservoirs within the country park, built over a century ago. These include dams, arched stone bridges, aqueducts and valve houses. And you can’t beat the scenery, which is just gorgeous. The walk ends at Tai Tam Road where you can easily catch a bus either on to Stanley, a charming and popular village not far away, or back into town. 大潭郊野公園佔香港島的五分之一，也是香港風景最美的公園之一，可欣賞港島和南海的壯麗景色。整個公園和附近四個水庫周邊都有遠足徑。最好的路線是從香港黃泥湧峽道的豪華住宅區——陽明山莊開始，一路步行至水塘。這個可以愉快的步行徑帶您穿過綠樹成蔭的樹林。首先可以一路下坡到大潭水塘，而後以大潭篤水塘為終點。一路上，您可以探索建於一個世紀前四水庫的建築結構和工程，包括水壩、石拱橋、渡槽和閥門房，你一定會被這裡的美景吸引。到達大潭路後，您可以在這裡乘巴士前往赤柱，距離不遠而且風景迷人的小區或返回市區。

Kam Shan Country Park 金山郊野公園 The park is set around four reservoirs, with Kowloon Reservoir the largest. Also close to the city, this park offers something different: monkeys! Dubbed Monkey Hill, it is located in western Sha Tin District, north of urban Kowloon. Popular with locals and visitors alike, the park is a sanctuary for macaque monkeys, with hundreds roaming around. Besides watching monkeys, the park is rich in flora. There is a large BBQ area with access for all, including users of mobility aids, and a fitness trail that winds around the reservoirs. Hong Kong’s largest reservoir by area, Plover Cove is best known for its splendid scenic views, bicycle riding, rustic villages, and hiking trails to satisfy all-comers. Start at the village of Tai Mei Tuk where you can rent a bicycle or ride your own along the 2-kilometre dam. Bride’s Pool, a wellknown pool fed by the waters of several waterfalls, is nearby. The Plover Cove hiking trial is quite testing: its 15 kilometres include multiple steep ascents and descents. It’s a popular trail among experienced hikers and the view over the reservoir is spectacular. At the end of the hike is a breezy relaxing stroll across the main dam where you enjoy another splendid view over the water. The northwest end of the dam has a wellappointed barbeque site. 船灣是香港面積最大的水塘，以優美的景色，騎單車，鄉村景色和遠足徑而聞名。從大尾篤村開始，距離 2 公里長的大壩騎自行車。可以看到新娘潭，在附近有數個瀑布。船灣到達絕對考驗你的力量，這趟 15 公里的徒步旅行有多個陡坡和下坡。儘管困難重重，但條徒步線路很受吸引愛好者喜歡，而且景色壯觀。在徒步旅行的最後，你可以在主壩上悠閒地散步，可以看到水庫的另一面，依舊壯麗。大壩的西北端有個很受歡迎的燒烤點，可以美餐一頓。

High Island Reservoir, Sai Kung East Country Park 萬宜水庫，西貢東郊野公園

There is so much to like about this reservoir and its surrounding area: fabulous hiking trails, stunning views of reservoirs, unique geological formations, unspoiled white sandy beaches. The largest in Hong Kong by volume, the reservoir was created by building a dam connecting High Island to the Sai Kung Peninsula, converting a sea channel into a large freshwater reservoir. The East Dam, home to one of the Hong Kong Global Geopark sites, is where you want to end up. Start at Pak Tam Chung park entrance. You may want to take a quick detour and check out Sheung Yiu Folk Museum, set in a 19th-century fortified Hakka village. Then either hike to East Dam on MacLehose Trail Section 1 (about 10 km, mostly level on paved roads) or take a taxi there from the bus station. A water sports centre is situated close by (Closed on Thursdays) and the views along the way are spectacular as green hills, sheltered coves and the blue sea all merge into postcard-like scenery. The dam itself is part of the Geopark with its signature volcanic rock columns. Hike further along the trail, which turns into MacLehose Trail Section 2, for 30 minutes, and you reach Long Ke Beach, arguably Hong Kong’s most pristine beach – pollution-free with silky sand and clear waters. There are no provisions there, so bring your own food and water and please leave the beach as you find it. 水庫和周圍區域有很多人喜歡的地方，令人驚嘆的徒步旅行路線，令人痴迷的水庫景色，獨特的地質構造，使得破壞的白色沙灘。這裡是香港最大的水塘，是因連接港島和西貢半島的水壩建成後形成水塘，當時的海道轉換為大型淡水水塘。東壩是香港世界地質公園的地點，值得一探究竟。由北潭湧公園入口開始，轉個彎看看上窯民俗文物館，這裡原本是 19 世紀的客家村莊。然後徒步走到麥理浩徑第 1 段的東壩（大約 10 公里，大部分是平坦公路）。沿路有一個水上運動中心（逢星期四休息），遊客也可以選擇從汽車站乘坐出租車前往。沿途的景色非常壯觀，綠色的山丘，隱蔽的海灣和藍色的大海都宛若明信片上的美景。大壩本身是地質公園的一部分，擁有標誌性的火山岩柱。沿著麥理浩徑第 2 段繼續步行 30 分鐘，即可到達浪茄泳灘，這可以說是香港最原始的沙灘，沒有污染，沙質柔滑，水質清澈。這裡沒有小店，所以記得自己帶食物和水。

THE TALENTED DR NOBLE 智「商」過人的諾布爾醫生

ave you seen the new motor car?" thundered the Hongkong Telegraph.

"lmagine an overgrown tricycle rushing along at 12 miles an hour and coughing like an elephant with the croup." A young American dentist, Dr Joseph Noble, is credited with owning the first car in Hong Kong. This story appears in one or two history books but that's about all they tell you about him. ln 1887, at the age of 25, Noble arrived in Hong Kong and joined as a partner in the city’s only dental practice, newly set up by fellow Pennsylvania alumnus Dr Herbert Poate to serve the burgeoning expatriate population, already more than a thousand people. But the partnership broke up and the situation for Noble was not looking good. Fortunately, an American millionaire who was having trouble with his teeth hired the young man as his personal dentist to accompany him on his luxury yacht to Japan. Noble turned up later in Beijing where he looked after the teeth of the members of the Manchu lmperial family. This was both lucrative and highly prestigious, and he made enough money to open a chain of dental clinics in Shanghai, throughout China and beyond, including Singapore and London. His reputation in the medical community in Hong Kong was considerable. Together with Sir Patrick Manson, known as "The Father of

Tropical Medicine", Sir Kai Ho Kai, the first Hong Kong Chinese to qualify as a doctor in Britain, and Sir James Cantlie, Dr Noble was one of the founders of the Hong Kong College of Medicine, and later involved in its transformation into the University of Hong Kong. Cantlie, like Manson, was a tropical diseases specialist. He was also dean of the new college. One of his students was Sun Yat Sen, who later became the first president of the Republic of China. When Sun was kidnapped by Manchu agents in London, it was Cantlie who rescued him. Sir Patrick Manson recognised that there was a need to provide the colony with pure fresh milk so he established the Dairy Farm Company. Soon after he left Hong Kong there was a catastrophe when all but three of the cows in the Dairy Farm herd died from rinderpest. This enabled Dr Noble to buy shares very cheaply and gain control of the company. He was its chairman five times and the senior member of the board of governors until 1923, when he retired. Noble had an entrepreneur’s instinct and was a good all-round businessman, serving on the board of many of Hong Kong's leading companies, including Hong Kong Electric, Hong Kong Tramways, China Light and Power, Green Island Cement, and many others. Like some businessmen today, he also yearned to hold the reins of media. Hong

Kong's venerable South China Morning Post first appeared in 1903, founded by British journalist Alfred Cunningham and eminent scholar Tse Tsan-tai. This English-language newspaper operated on solid principles but was nonetheless making a loss. ln 1907, while Cunningham was on holiday, Noble, a board member, staged a coup. He accused Cunningham of gross mismanagement and spending too much money on paper and ink. Cunningham was fired and Tse resigned.

孟生爵士覺得有需要為香港這個殖民地供應新鮮的牛奶，於是他成立了牛奶公司。不過，在他離港不久，便發生了一場大災難，牛奶公司牧場全部三頭乳牛均死於牛瘟。此事讓諾布爾醫生有機會用極低廉的價錢，買下足夠控制牛奶公司的股份。他出任了牛奶公司五屆主席，更為理事會資深成員，直到他1923年退休。

Four years later, Noble bought outright the Hongkong Telegraph (whose former editor had disapproved of motor cars) and amalgamated it with the South China Morning Post. This deal gave him control of the Post, which today credits him with ensuring the paper’s viability.

諾布爾成為了一位出色的企業家及商人。他曾在香港不少重要的公司出任理事會成員，當中包括香港電燈公司、香港電車、中華電燈有限公司及青洲英泥等。

Meanwhile, as Dairy Farm prospered, in 1913, Noble erected the distinctive redbrick Dairy Farm Building, which stands on the corner of Lower Albert Road and Wyndham Street. The south end of the building is now occupied by the Fringe Club and the north end by the Foreign Correspondents' Club, each contributing greatly to Hong Kong's unique standing in the world. But few in either know that their club premises were built by Dr Joseph Whittlesey Noble – dentist, opportunist, visionary, whose many and varied contributions to Hong Kong helped shape the colony in its formative years.■

ur trip to Lawry’s The Prime Rib turned out to be a most pleasant dining experience. Known as one of the best places in Hong Kong to enjoy USDA prime beef cuts, roasted to perfection, we were hyped for our visit.

Ocean Shrimp & Cucumber Roulade or Grilled Octopus. You can opt for a second starter of either Roasted Beef Bone Marrow ($69 extra) – truly succulent and juicy, or Roasted Foie Gras ($109), either of which we would recommend.

Founded in 1938 in Beverly Hills, the restaurant serves superb prime ribs and designed the famous “Silver Cart” for carving the beef tableside. Lawry’s is also known for hosting the “Beef Bowl”, in which the two US football teams competing in the Rose Bowl on New Year’s Day in Pasadena in California – an iconic American sporting event – are invited to dine at Lawry’s and eat to their hearts’ content.

Next is a choice of two of Lawry’s signature dishes – The Famous Original Spinning Bowl Salad or Lobster Bisque, which tastes rich and savoury.

Lawry’s new location in Central is at The Galleria. The premises are enclosed by decorative French windows and topped off by a distinctive circular vaulted ceiling. The bright airy feel and contemporary decor contrast deftly with the dark wood furniture, elevating the sense of luxury and comfort. The spacious restaurant can seat 100 persons, including a 10-person private room. Our host was Senior Executive Chef Simson Kwan, a veteran chef and an institution at Maxim’s Group, the restaurant’s operator. Uber-friendly and knowledgeable, Kwan has been involved in almost all of the international restaurants the group has opened, thanks to his deep knowledge of global cuisines. Here at Lawry’s his appreciation of meticulous preparation is a good fit for the loving care that the brand demands in preparing its prized ribs, F o r t h e d i n n e r, w e w e r e s e r v e d L a w r y ’s Exceptional Menu, a special offering from 1 May. Priced at $659, the menu can be paired with wine for an extra $369 (3-glass) or $459 (4-glass). The dinner starts with an appetiser, either

For the main, we plumped for Lawry’s signature Roasted Prime Rib of beef au Jus – California Cut, mashed potatoes and Yorkshire pudding. The beef was tender and flavourful. Much goes into its preparation – choosing just the best USDA-certified, corn-fed, wet-aged Black Angus beef, and roasting it to perfection in the restaurant’s own custom-made oven. The meat is heavenly. The other two mains options under the Exceptional Menu are Roasted Chilean Sea Bass and Grilled 10oz U.S. Prime Ribeye ($199 extra), both of which are also excellent. Our dinner ended with another favourite, the Dark Chocolate Delice, caramel crunches and raspberry sorbet, which is refreshingly sweet. Lawry’s offers an array of cocktails and fine wines to accompany its menu. We noted the Alois Lageder Pinot Grigio from Alto Adige, Italy, a robust Domaine Nudant Ladoix ler Cru ‘La Corvee’ Cote de Beaune, and the smooth Talisker 10-year-old Single Malt, which went well with the bone-marrow, among others. Our dinner was a wonderful and fun-filled experience. If you are in the mood for succulent beef and fine wine, Lawry’s is a sure-fire winner.■

It recently launched a new à la carte menu that showcases authentic Cantonese cuisine, themed around a traditional 1920s teahouse, all in the setting of the restaurant’s contemporary art deco design. Baked Glutinous Egg Custard Tart and Sweetened Almond Soup, Egg White 酥皮流沙盞和蛋白杏仁茶

For our lunch outing, we sampled many of the new menu’s signature dishes. We started with Crispy Cordyceps with Honey and Chili ($90), a creation of the culinary team in which carefully selected cordyceps mushrooms are evenly deepfried and garnished with honey and chili. We then tucked into Braised Fish Soup, Vermicelli, Bean Curd Sheet, Vegetables ($158/person), a classic from the Shun-de region of Guangdong, known for its velvety smooth and umami flavourful soups. And this rendition fully lives up to that reputation. A real treat next was South African Abalone in Stone Bowl, Layered Bean Curd ($268/ person), which gives up much more than meets the eye. Served boiling and sizzling in a stone bowl, the tender abalone meat retains its chewy texture amid the inviting aroma. More than 20 delicately assembled layers of bean curd showcase the team’s craftsmanship. Another classic is Stir-fried Prawn, Choy Sum, Yunnan Ham ($318). The diced ham complements the flavour of the large stir-fried prawn. Our next dish, Crispy Smoked Chicken ($450/whole, $230/

half), absolutely knocked our socks off. A whole freerange chicken is slow-fried before being smoked in a mixture of brown rice, jasmine tea and pu’er tea for 10 minutes. The chicken is then deep-fried again until it turns golden. The result – aromatic and delicately crispy skin and succulent chicken meat infused with the tea aroma, and the highlight of the meal. Next came Stir-fried Assorted Vegetables, Crispy Basket ($208) and Rice Vermicelli in Fish Broth, Mushroom ($88/person). The mixed vegetables include mushrooms, black fungus, celery, carrots and green peas, which are sautéed and placed on a warm and crunchy basket made of Vietnamese rice paper – a real vegetarian delight. The fish broth in vermicelli is another Shun-de specialty that is highly popular locally. We completed our meal with two Hong Kong classic desserts: Baked Glutinous Egg Custard Tart ($40) and the ever-welcome Sweetened Almond Soup, Egg White ($46/person). The light touch of Cantonese desserts is always a blessing after a sumptuous meal such as this. Your visit to Hong Kong must surely include a delicious Cantonese meal. Victoria Dockside, Hong Kong’s latest luxury shopping mall, has successfully drawn an array of internationally famous outlets. A new addition to the illustrious list is Fortnum & Mason, the iconic British retailer and hospitality brand, which recently opened a new shop and restaurant concept. Established in 1707 in Piccadilly, London, the iconic elite retailer is known for its focus on quality. Its 7,000 square-foot split-level premises in Hong Kong comprise a shop downstairs and the elegant Fortnum’s 181 restaurant upstairs, with commanding views of the harbour. The shop showcases some of Fortnum’s signature products, including Royal Blend Black Tea and a newly created Musea Blend, freshly baked biscuits, champagne and wines and much more. The restaurant sports an elegantly and luxuriously appointed dining room where diners can enjoy lunch, dinner, or Fortnum & Mason’s signature afternoon tea. For our dinner, we started with a British classic appetiser, Black Pudding Scotch Egg with Piccalilli ($208) that is tasty and savoury. The Fortnum’s Smoked Salmon with Soda Bread ($168) is another classic – the smoked salmon is exquisite. For our main courses, we had to choose Beef Wellington, Dauphinoise Potatoes, Green Beans and Peppercorn Sauce ($988). The lovingly baked Beef Wellington coated in golden crust was all we could ask for. The meat keeps tender and warm, capturing all the beef flavour. The other main is Crab and Tomato Linguini ($288), which is zesty and done perfectly to complement the beef really well. For desserts, we enjoyed the Crepe Suzette ($188), which is prepared and served tableside, with the flaming orange sauce aroma whetting our appetite. The finale is another classic, Knickerbocker

Glory ($118) in which layers of ice cream, fruit, jelly and cream are served in a spectacular tall glass. Bamboo Thai

The recent opening of Bamboo Thai, a contemporary Thai restaurant, will only add to the buzz among Thai cuisine foodies. Located in the bustling Langham Place shopping mall in Mong Kok, Bamboo Thai serves classic Thai dishes with a chic and contemporary edge. The à la carte menu, which we chose from, is the brainchild of Executive Chef Sai Hsu. We started with appetisers: Smoked Salmon Tartare with Prawn Crackers ($88), Fish Cakes ($68), and Tom Yum Chicken Wings ($58). The salmon tartare, seasoned with lime, Sriracha sauce, fish sauce and coriander, goes well with the fresh mango. The deep-fried chicken wings come in a large portion and taste tangy and mildly spicy. The next dish we tried is a must – Laeng Saeb ($98 small, $188 large), Bamboo Thai’s signature dish. The large, full plate of juicy Dutch beef ribs are slow-cooked with lemongrass, ginger, coriander and lime kaffir leaves, and paired with a tangy sauce made with Thai herbs and chili. To eat this, we donned plastic gloves and busily dug into the bones and chewed off the juicy morsels. The tangy juice is what makes the dish so appetising. Two more mains followed: Red Curry with Slow-cooked Beef Short Ribs ($158) and Wok-fried Tiger Prawns in Thai Cream Curry ($198). The short ribs are slow-cooked and taste especially tender, their flavour enhanced by the spiciness of the red curry. The Vietnamese tiger prawns are wok-fried with red bell pepper and onion, with egg and milk added to intensify the creaminess and aroma. We finished the lunch with a benchmark Pad Thai with Tiger Prawns ($108) and a refreshing and large-portioned dessert, Coconut Sorbet with Pomelo and Fresh Mango ($58). Bamboo Thai also offers a wide selection of tropical cocktails and mocktails as well as traditional Thai drinks, at reasonable prices.

Our visit to Bamboo Thai was a pleasant treat—the restaurant represents excellent value for money, with delicious food, good service and a price that is light on the wallet. 午餐結束前，我們點了一份泰式大蝦炒金邊粉（$108）和大大份的清爽甜點，楊枝甘露（$58）。

Eye Bar, located on the terrace area atop the iSquare commercial complex in the heart of Tsim Sha Tsui, is one the city’s most popular hotspots. The bar combines unparalleled views of the city with great drinks and snacks, and is our watering hole for this month. A sister outlet to Nanhai No.1, a destination restaurant serving contemporary Chinese dishes, Eye Bar offers airy spaces inside and a large, open-air terrace that takes any visitor’s breath away. The views, by day or night, are gorgeous and spectacular. It is as good as it gets. Eye Bar serves a wide array of its own cocktails, as well as specialty beers, fine whiskies and other liquors, and quality old and new world wines. Perhaps the best time to visit the bar is late afternoon when you can settle in to enjoy first the sunset and then the glittering night views that unfold. For cocktails, we had several refreshing citrus-flavoured drinks. The Passion Fashion ($120) – Stolichnaya Vodka, passion fruit mix with peach and a touch of white wine – is good. Apple Sangria ($120), which mixes apple brandy and gewürztraminer white wine, is also nice. Cucumber Mojo, a sake and plum wine-based cocktail, rounded out our drinks. Eye Bar patrons can order tasty snacks from the Nanhai No. 1 kitchen. We tried Fried Crispy Squid ($98), Conch with Wasabi Sauce ($88), Duck’s Tongue tossed with XO Chili Sauce ($88) – which is addictive, and the highly original Crispy Tofu with Sichuan Chili ($168), which was excellent. Eye Bar is currently offering several promotions. The Friday night special at $180 per person serves up three large glasses of wine per label. For a large party, you can opt for $700 / three bottles, more than 50% off the original price. From Sunday to Thursday, there is a free

flow 3-hour package at $268 per person – all excellent value deals and a wonderful way to spend a most pleasant evening. Be sure to give Eye Bar a visit; we highly recommend it.

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Flagstaff House Museum of Tea Ware 茶具文物館

Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. It contains the KS Lo Gallery with its permanent exhibition of rare ceramics and seals from the Song and Ming dynasties. Weekdays (closed on Tuesdays except public holidays) 10am-6pm, Free. Tai Kwun

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. ‘Shifting Landscapes’ at de Sarthe Gallery 11 Apr - 27 Jun Redeveloped for the gallery space, Andrew Luk‘s large-scale installation Haunted, Salvaged is a giant suspended mobile with disfigured orb-like objects hanging from steel branches that stretch outwards above a sea of expanding spray foam. Constructed using layers of carved and corroded extruded polystyrene foam, the orbs are arranged to compose an artificial constellation of imagined psycho-geographic entropic accumulation.
