Organised under the umbrella “ICBC (Asia) Hong Kong Summer Fun”, visitors can “eat, shop, and play” in cool neighbourhoods, attend spectacular festivals and events, and visit popular attractions, all made more attractive with great offers by merchants to boot. We would be remiss not to mention that 1 July this year marks the special occasion of the 20th anniversary of the Handover when Hong Kong reverted back to China after over 150 years of British rule with the establishment of the Hong Kong Special Administrative Region (HKSAR). Despite concerns ahead of the Handover, some forecasting doom and gloom, Hong Kong has done very well since 1997. Our feature story takes an idiosyncratic look at how the city has changed in the last 20 years. And we are happy to report that, for visitors to Hong Kong, most of the changes have been for the better. The highly anticipated Hong Kong Book Fair opens for its 28th annual edition as one of the largest book fairs in the world. Over one million people are expected this year to search out their favourite books and publications, discover what’s new and attend various cultural events. It’s always good to know that book reading is alive and well in the city. Pop along to explore this festival of wordcraft if you happen to be in town. And pleasure comes in twos as the Book Fair is immediately followed by another iconic consumer fair, the Ani-Com & Games HK, now in its 19th year. Music lovers are in for a treat this month as the World Harp Congress, easily the world’s largest harp event, is held in Hong Kong, for the first time ever in Asia. Over 1000 harpists will gather for recitals, workshops and concerts, capped by its headliner event "GALA Concerto Concert: The Banquet" in which top harpists in the world will perform four concertos, two of them world premieres. As the summer begins in earnest, you’ve come to the right place to revel in Summer Fun, whether it’s shop, eat and play in cool neighbourhoods, attending mega-events, or world class music and culture, Hong Kong is more than ready for the summertime buzz. GALA Concerto Concert: The Banquet

Over a thousand harpists from all continents will convene in Hong Kong for the world’s biggest harp event, which includes concerts, recitals, workshops and seminars covering all aspects of harp musicology and performance. The Gala Concerto Concert, The Banquet, will present four contemporary concertos, two of which are world premieres. Five leading international soloists will perform with City Chamber Orchestra of Hong Kong and Chinese conductor Yang Jiao.

THE MEANING OF FLOWERS IN CHINESE EMBROIDERY

中國刺繡中花的含義

FLOWERS are beloved around the world, but in China their love goes beyond simple beauty. Like other aspects of nature, they had symbolic meanings to ward off bad luck and promote good fortune. 花在全世界廣受歡迎，但在中國，花受歡迎可不僅僅是因為它的美。和其它自然界的事物一樣，花也有著消災解困，帶來好運的象征意義。

lothing and household furnishings in the Qing dynasty (1644 –1911) were covered with floral displays. The large loose jackets and pleated skirts with flat panels at front and back worn by Chinese women were ideal places to display intricately embroidered flowers. Since most women and girls bound their feet in the fashion of the time, their tiny shoes were also covered with delicate blossoms. The feet were even called golden lotuses, as they resembled the bud of that flower. Children's tunics and trousers were important places on which to display lucky emblems to protect them from harm.

The most popular flowers were the peony, lotus, orchid, plum blossom and chrysanthemum. The peony is considered the Queen of Flowers and is a symbol of spring, an emblem of love and affection, as well as signifying wealth and distinction. An emblem of feminine beauty, it was naturally the favourite flower of the infamous Empress Dowager in the late 19th century. The rooms in her palace in Peking were surrounded by pots of peonies,

and her gowns lavishly embroidered with the flower. The lotus is a symbol of purity and perfection since it grows in mud but is not defiled. An important Buddhist emblem, Buddha is often shown sitting on the sacred lotus. It is an emblem of summer and fruitfulness because the pods yield many seeds. For this reason, it was frequently used on children's clothes to encourage more little brothers! It is a favourite of Chinese people as all parts of the flower are used: the stem and seeds are eaten, the leaves used for wrapping food, the yellow stamens as a cosmetic, and the flowers simply enjoyed. Plum blossom, or Prunus, is a symbol of winter and of long life since the flowers appear first on leafless branches. But it is also a promise of new beginnings and always an important part of the festivities at Chinese New Year. Gardeners believed the colder the weather, the more abundant the blossom. The orchid is a symbol of fragrance and refinement, as well as love and beauty. It was said a

beautiful women's breath is like the perfume of an orchid! The Chrysanthemum is a symbol of autumn and appeared on clothing worn by older women. The flower also symbolised a life of ease and retirement from public office, so desired by harassed officials in Qing dynasty China. Red, purple and orange chrysanthemums are considered cheerful ﬂowers. But don't give white chrysanthemums, the colour of mourning, or yellow, which is always used at funerals. Books of woodcuts of the floral designs were used as a source of reference. Stencils of the most popular patterns were made, and in large embroidery studios there was a selection of cardboard templates used to give uniformity in design, to assist in the placing of the design, and to save time. They were then tacked down and the designs embroidered over until the paper was completely covered and sewn into the fabric. Alternatively, the edge of the design was sewn round as an outline and the paper ripped out. The cloth for embroidering upon was usually silk, of all weights from gauze to satin. Everyone in the family learned to embroider. Men worked standing up at an embroidery frame made of bamboo suspended from the wall, with the material to be worked on stretched tightly across it. Women sat with the frame supported by their legs, their bound feet preventing them from standing for any length of time. Even the children were called upon to help contribute to the family income. Embroidery threads were bought from

peddlers who walked the narrow streets announcing their wares by twirling a rattle. They carried small drawers of every shade of floss and twisted silk imaginable. Silver and gold threads were said to have a special coating which prevented them from tarnishing in the heat and humidity. Short fine needles were used, made of ivory or bone at first, then later of steel. Many of the embroidery stitches used are familiar to embroiderers in the west. Couching anchored the metal threads which could not be sewn directly as they might break or split the silk fabric. Counted stitch, also called tent stitch, was good for covering large area of background. Satin stitch, in use for over three thousand years, was an important part of an embroiderer's repertoire. The stitches had to be very flat and even to give the characteristic satin smooth appearance. Stem stitch was used to outline a design and for fine detailing. One stitch, which still fascinates western embroiderers, is Peking knot, otherwise known as seed stitch. In Chinese dazi means 'making seeds' due to the smallness and evenness of the stitch. Formerly it was often called forbidden stitch, or blind stitch, as it was said to ruin the eyesight of the embroiderers. The stitch was used to give a soft texture, to fill in small areas, or to define details. Many fragments of these antique embroideries linger forgotten in attics in the west, in markets in China, or in corners of antique shops around the world. They serve to remind us that, though the flowers which inspired the embroiderers are long gone, their beauty lasts forever. ■

壽的象征，還有新生的寓意，因此它也是中國農曆新年中的重要元素。園丁認為天氣越寒冷，梅花開得越茂盛。蘭花則是芳香、優雅、愛和美的象征。中文裡還會用“吹氣如蘭”來形容美女的氣息。菊花是秋天的象征，年長女性的衣服上常常出現菊花的圖案。菊花代表了恬靜愜意的生活，也有公職人員退休的含義，因此頗受中國清朝官員的喜愛。紅色、紫色和橙色的菊花都是帶有積極意義的，但千萬不要送白色菊花，因為白色通常有哀悼的意思。而黃色菊花一般是在葬禮上用的，因此也不要送人。刺繡工通常以帶花朵圖案的木版畫作為參考。工人們製作出圖案最受歡迎的模板，大型刺繡工房裡有許多硬紙樣板，用來統一設計，固定圖案位置以及節省時間。然後將它們固定住，在上面進行設計，直到紙被完全蓋住，將圖案繡在布上。有時候圖案的邊緣會縫成圓形，然後將多余的紙裁剪掉。人們通常用絲綢做刺繡，從薄紗到綢緞，重量不等。家中每人都要學習刺繡。牆上吊著一個竹子做的繡花架，將刺繡用的布料緊緊地纏在上面，男人們就在跟前幹活。女人們則坐在凳子上，用腿支撐繡花架，因為纏足的關係，她們不能站立太長時間。連小孩也要幫忙幹活，以減輕家庭負擔。刺繡用的線通常是在小販處買的，這些小販們在狹窄的街道上邊轉動響鈴邊叫賣。他們用小抽屜裝著各種顏色的絲線。據說銀色和金色的線外面的塗層是特製的，可防止絲線因高溫和潮濕而生鏽。刺繡通常使用較短的細針，最初是用象牙或骨頭做的，後來的針是用鋼做的。刺繡方法跟西方的差不多。釘針導線針法不能直接縫紉，因為有可能會令絲綢裂開。斜向平行針腳適合用於覆蓋大面積的背景。緞面繡是刺繡工的重要技能之一。針跡必須非常平坦，以保持絲綢的光滑。滾針是用來勾勒設計的輪廓和描繪細緻部分的。有一種刺繡方法至今仍然令西方刺繡工十分着迷，那就是北京結，又稱為打籽繡，由於針步精細、平均而得名。它又被稱為禁針或盲縫，據說其針步精細至會使人瞎眼的地步。這種針法可做出柔軟質感，適合用於細節講究的小型刺繡。這些刺繡工藝大多已經被遺忘在西方的閣樓，在中國的市集或是在世界各地古董店的角落裡。它們的存在提醒著我們，雖然那些給了刺繡工無數靈感的花朵已不復存在，但它們的美永不過時。

Thousands of harp performers and enthusiasts descend upon Hong Kong as the city plays host to the 13th World Harp Congress, the first time the event has been held in Asia. 來自世界各地的千余位豎琴家和豎琴愛好者將雲集香港，參與首次在亞洲舉行的第十三屆世界豎琴大會。

The heavenly music of the harp has soothed and entranced kings and common folk through the ages. Imagine the aural delight that will emanate from a gathering of hundreds of the best harpists from across the world. This month, Hong Kong plays host to the 13th World Harp Congress, being held in Asia for the first time. Themed "A Journey from West to East", the world’s largest and most important harp event will bring more than a thousand harpists to the city for programmes including concerts, recitals, workshops and seminars. We spoke with a few of the headliners for this unique event.

Nicolas Tulliez：這位世界知名的豎琴演奏家 received his tertiary music training in the United States, including at Juilliard 出生於巴黎，曾在美國茱莉亞學院和耶魯大學等著 School and Yale. Xiaotang Gao: A up-and-coming champion harpist from China, Ms Gao has also been instrumental in reviving the “Kong Hou” or Chinese harp, which she will play in her Hong Kong performance. Gao: I grew up in a musical family in Liaoning province in Northeast China. I took up the Chinese zheng at the age of three and Kong Hou and Harp at the age of nine. I will play the “Kong Hou” or Chinese harp, a beautiful musical instrument with over 2000 years of history which dropped out of use during the Ming Dynasty and was revived and modified in the 1980s. The Kong Hou creates a distinctive tone, one that’s more pleasing than most other traditional Chinese musical instruments, helped by its expansive musical

scale and the amplification of the resonance box. As early as the Han Dynasty, Kong Hou was widely recognised among the literati. Similar to a Western harp, its strings are softer and double-rowed, making it more amenable to playing vibrato and faster rhythms. I am really looking forward to playing the Kong Hou at the “Banquet” main event. 高小棠：高小棠是來自中國的新生代箜篌、豎琴演奏家，她將為大家帶來精彩絕倫的箜篌表演。高：我出生在中國東北遼寧省。我從3歲半開始學習古箏和鋼琴，9歲開始學習箜篌、豎琴。我將在這次的音樂會上表演箜篌，這個樂器有超過兩千年的歷史，有雙排弦，箜篌雖然有著跟豎琴相似的外表，但是它卻是一個非常具有中國傳統音樂特色的樂器，具有比其它中國傳統樂器優越的音色特質，再加上箜篌在音域、共鳴箱上的優勢，使它比

Dan Yu: An acclaimed harpist and the first Chinese winner of the USA International Harp Competition, Dan Yu has dazzled fans in performances across the US, Europe and Asia, including in TV and radio broadcasts and in a documentary. Dan Yu is currently music director at the Hong Kong Harp Chamber and Co Chair of the Host Committee for the 2017 World Harp Congress. YU: I grew up in Shenyang and started learning piano at the age of six but didn’t like it, plus my pinkie was too short. I fell in love with harp at first sight; it looks so elegant and holding it made me felt secure, plus playing harp was quite rare so it made me feel special and different. Hong Kong has a lot of talented harp players and probably has more people involved with the harp than anywhere else in Asia with more than a thousand active players. Men play the harp too and some of the best harpists in the world are men, aided by their greater strength.

An idiosyncratic look back on how Hong Kong has changed since its handover to China on 1 July 1997 《東方之珠》以獨特視覺回顧香港自1997年7月1日回歸祖國以來的一系列變化。 As we mark the 20th anniversary of Hong Kong’s Handover to China, it is inevitable we look back and ponder how much the city has changed in that time. To offer a perspective for those less familiar with Hong Kong’s story, the zeitgeist of the city in the days leading up to 1997 was one of uncertainty and anxiety, as an occasion of this kind and magnitude was truly historically unprecedented – we were in uncharted waters. So the world’s media turned its attention to Hong Kong as 1 July 1997 approached, and not all the prognoses were optimistic or kind. Perhaps the 26 June 1995 Fortune Magazine cover “The Death of Hong Kong” epitomised the sentiments of a large number of international journalists and pundits ready to sound Hong Kong’s death knell.

Much has happened to Hong Kong over the past 20 years, and the city' s historical journey has not been all smooth sailing by any means. Still, the demise of Hong Kong was – in the immortal words of Mark Twain – "greatly exaggerated". In fact, Hong Kong is alive and doing very well, and the city is as dynamic as ever; it is widely recognised as one of the world' s leading cities, its reputation underpinned by a sound economy, strong institutions and systems, a strict adherence to the rule of law, and a vibrant civil society. And as ever, Hong Kong' s stunning cityscape and natural beauty, its unique East-meet-West culture and heritage, and its incredible diversity make the city one of the world' s top tourist destinations. Typical of most developed economies, Hong Kong has an aging society; its median age has increased from just 34 years to 43 years over the 20 years. Hong Kong’s labour participation rate remains steady at 61%, but the aggregate numbers hide some huge demographic changes. However, female participation grew from 48% to over 55% from less than 1.3 million to over 1.9 million, a rise of more than 600,000. Moving the international airport from the iconic Kai Tak to the bluefield site at Chek Lap Kok was to be a highlight of the Handover, although it missed the timing by one year. Still the new airport has more than served its purpose, as it handled over 400,000 aircraft movements and 46 million passengers in 2016, as compared with around 150,000 movements and 23 million passengers in 1996. By world standards, Hong Kong has low car ownership levels but the number of private cars grew from 293,000 to over 520,000 in 20 years, a 77% jump. Similarly the number of motorcycles more than doubled, from 22,000 to 48,000. The city has experienced phenomenal growth in tourism, which today is the fourth-largest economic sector, contributing over HK$100 billion to the local economy. Visitor arrivals increased from 13 million in 1996 to 60 million, up more than fourfold. Of course, the exponential growth in China' s outbound tourism was the key driver, as visitor arrivals from China went from 2.4 million to over 45 million, although some 70% of that is for same-day visitors. But most impressive is Hong Kong' s continued transformation as a dynamic urban entrepot. New skyscrapers continue to re-shape the city' s skyline, with the pairing ICC and IFC strikingly changing the city' s face. All of Kowloon went through a rebuild as the Kai Tak–imposed height limit was removed. This has resulted in the construction of many high-rise residential complexes, some of 60 storeys or higher. Hong Kong' s continual transition to a service economy has seen many industrial buildings converted or torn down to make way for spanking new offices. Districts such as Kowloon Bay, Kwun Tong, Wong Chuk Hang are all getting facelifts. The city is becoming an art hub, with some of the Asia' s largest art events being held here. easons by Olivier E, the highly regarded French restaurant at Causeway Bay’s Lee Garden Two building, in the heart of the popular Hong Kong shopping district, has garnered many accolades, including a much coveted One-star Michelin designation. This is not surprising considering the pedigree of its Executive Chef, Olivier Elzer, whose grandfather was chef to a Russian Czar, and who himself has apprenticed and studied under many famed chefs and Michelin-starred restaurants all over France, moving on to become executive chef at several equally prestigious restaurants in Hong Kong. In his latest endeavour, Chef Olivier has created a dining concept based on his experience and passion, one that retains traditional French culinary tradition, especially for classic dishes, and complements it with infused local styles and ingredients, all with an unmistakably Gallic panache. The tasting session we chose at Seasons was lunch, the restaurant decorated in an elegant contemporary décor, and partitioned into various seasonally themed areas, including a neatly fitted-out terrace perfect for afternoon teas and after hour drinks. We started off with a signature Seasons dish: Seasons Surprise Box with Hokkaido Sea Urchin, Salmon Tartare & Truffle Jelly ($420), which comes in a

small metal box packed with layers of the ingredients, offering a delightful mix of textures and flavours. Next for our lunch was the Grilled langoustine & Venere rice risotto, Marsala butter ($548), another of Chef Olivier’s creative concoctions. We really enjoyed the taste of the risotto that is creamy but not too heavy; the shrimp is grilled to tender perfection, and the tangy and slightly spicy sauce just adds the right flavour to the overall dish. Our entrée was another signature dish, the Grilled Holstein Rib Eye with Shallots Confit and red wine sauce ($798), and this dish certainly comes with much fanfare. The grass-fed Holstein rib-eye is smothered with a rich shallot and red wine sauce compote with a touch of blackcurrant and topped with deep fried garlic chips, and sits on a wooden slab surrounded by twigs of Burgundy vines, and all placed in a wine box with the twigs set alight, giving up a most aromatic smoky smell when the box is opened for serving. We were impressed with the amount of imagination and effort going into preparing the dish and the taste of the beef certainly lives up to its end if the bargain – tender, with the wine sauce bringing out the mild flavour of the Holstein beef. We were ready to end our lunch with some light desserts and two summer ice cream dishes fitted the bill nicely: Sphere Glacee au Marron Meringue & Chestnut Ice Cream ($158) and Chocolate Ice Cream ($48) – both cool and refreshing, not too sweet, and each with a distinctive fruity or nutty flavour. We firmly believe a good chef imposes his culinary philosophy on the restaurant in many ways: the fashioning of the menu and the preparation, delivery and presentation of the food. In the case of Seasons, Chef Olivier's personality comes through loud and clear, much to our pleasure.■

ucina is an Italian restaurant located in the Marco Polo Hotel in Harbour City, one of Hong Kong’s best-known and busiest shopping malls, adjoining the landmark Ocean Terminal in Tsim Sha Tsui. The restaurant is a longtime local favourite, whether for a meal with that special someone or a casual gathering of friends or business associates. Cucina is decked out in a contemporary theme, featuring a trendy inviting bar, an open kitchen, and a large rooftop terrace perfect for evening and after-dinner drinks. What surprises some though is the spectacular view of the Victoria Harbour that guests enjoy from the restaurant, either from inside or on the terrace – which makes our dining experience just that much more enjoyable. But of course it’s still the food that matters to foodies like us, and Cucina maintains an excellent reputation for contemporary Italian cuisine using quality seasonal ingredients, exquisitely prepared by its cadre of chefs. We chose lunch for our tasting occasion. To start we picked out a refreshing summer drink, Marco Polo Earl Grey Iced Tea ($78), which came highly recommended, and was indeed special and thirst quenching, with the grape adding a nice finishing touch and flavour. Our appetiser, Creamy Burrata Cheese with Fresh Tomatoes, Basil Salad and 24-month-aged Parma Ham ($268), is a house favourite. For this dish, the quality of the ingredients makes all the difference, the soft cheese and juicy flavourful tomatoes perfectly balancing out the taste and texture of the Parma ham. For our pasta, we chose Linguini with Sicilian Red Prawns, in its Own Sauce Reduced and

Fresh Cherry Tomatoes ($368). As self-proclaimed connoisseurs of pasta of all varieties, we grade this one passing the mark handily: the linguini is just the right texture and firmness, the prawn is tender and fresh, the sauce really adds flavour and aroma, and we are always partial to tomato-based pastas anyway – the portion is generous too. We could order this dish every time and never tire of it. The entrée is a nice contrast to the prawn pasta: Slow-cooked Wagyu Beef Cheek on Pumpkin Puree, Porcini Mushrooms and Barolo Red Wine Sauce ($428).The beef cheek tastes tender indeed, the pieces practically melting in the mouth. Yet, the beef flavour is still retained, enhanced by the red wine sauce, as are the porcini mushrooms which soak up the juice and sauce nicely. We finished our lunch with Modern Light Tiramisu ($108), one of the many delicious desserts that Cucina is known for, and a fitting end to a hearty lunch, which left just the opening for a light dessert. Lunch at Cucina proves a most relaxing and enjoyable experience – excellent food, stunning views, and comfy ambience. ucina是馬哥孛羅香港酒店的意大利餐廳，位於尖沙咀最著名和熱鬧的購物商場之一—海港城內，即尖沙咀地標海運大廈旁邊。Cucina向來大受本地人歡迎，無論是想和特別的他享用一頓特別的晚餐，和好友輕鬆聚會或商務午餐，這裡都是您的最佳選擇。餐廳裝潢現代化，設有時尚酒吧區、開放式廚房以及寬敞露台，適合夜晚或飯後到此小酌一杯。無論是在露台或室內，均可欣賞到維港迷人景緻，為食客營造愉悅的餐飲體驗。雖然如此，對我們這種美食愛好者來說，食物依然是最重要的。餐廳大廚選用高質素時令食材，精心製作出一道道現代意大利菜，因此 Cucina在食物質素方面素來享有美譽。我們在午餐時段來到 Cucina ，首先品嚐了一杯十分清新的夏日特飲—馬哥孛羅招牌特調伯爵葡萄冰茶 ($78) 這是餐廳首推的飲品，美味解渴，鮮甜的葡萄為冰茶增添了風味。美味食物輪番登場，首先是番茄水牛芝士配24個月巴馬火腿 ($268) 這是Cucina的招牌菜式之一，食材的質素顯得尤為重要，軟芝士和美味多汁的番茄將巴馬火腿的味道和口感平衡得恰到好處。意粉方面我們選擇了西西里紅蝦扁意大利麵配車厘茄 ($368) 試過那麼多家餐廳的意大利麵，我們也可說是有一定的鑑賞能力了。Cucina的意大利麵絕對在水準之上，麵條的軟硬度和口感把握得剛剛好，紅蝦鮮甜嫩滑，醬汁將這道菜的味道和香氣提升了一個層次。我們向來偏愛番茄汁意大利麵，加上這道菜份量十足，實在值得再次品嚐。主菜與紅蝦意大利麵形成鮮明對比。慢煮和牛面頰肉配南瓜蓉、牛肝菌及紅酒汁 ($428) 牛面頰肉十分嫩滑，有入口即化的感覺。難得的是完全保留了牛肉的味道，紅酒汁再將其進一步提升。牛肝菌則充分吸收了肉汁和紅酒汁的味道，令人欲罷不能。壓軸登場的是迷你意大利咖啡蛋糕 ($108) ，這是 Cucina 的招牌甜品之一，這道輕盈美味的甜品為這頓午餐畫上一個完美句號。 Cucina出色的食物、美麗的景緻和舒適的氛圍讓我們享用了一頓輕鬆愉悅的午餐。要是能在特別的日子到這裡享用一頓晚餐一定更加難忘。■

Bao Bei Located in the heart of Hong Kong's nightlife hub in Lan Kwai Fong and long recognized for its classic cocktails and Asian fusion food menu, Bao Bei has reinvented itself and, starting in June, is showcasing fresh new dishes and desserts to its eager customers. Several cold and hot small plates are served to start the meal. ThinSliced Pork Belly with Chili Garlic Sauce ($68) is quite spicy with a distinctive aroma of garlic and red vinegar. Asian Style Brussel Sprouts ($68) is much like a homemade dish with Chinese sausage, fish sauce and chili oil. Our favourite was Beef Tenderloin Wrappers ($88), a Chinese crepe with juicy tenderloin, celery, spring onion and Hoisin sauce. Then comes the eagerly awaited main dish of the night: Baked Curry Chicken in Pineapple Bun Pizza Crust ($268), which is a combination of the local favorite 'Pineapple Bun' and classic clay baked 'Beggar's Chicken', and a real treat for our palates. Finally, Korean Bulgogi Rice in Claypot ($188) is a traditional rice claypot with Kimchi and beef on top and the flavour is nicely enhanced by the sweet soy sauce. Bao Bei's new selections of desserts and drinks are equally tempting. Yin-Yang Panna Cotta ($68) playfully combines Hong Kongstyle milk tea and black coffee. Hibiscus Hawthorne Cheesecake ($88) and Green Tea Molten Red Bean Cake ($88) are also good choices to round out the meal. And Typhoon No.10 ($148) and Childhood Memory ($108) are highly recommended for Friday night drinks.

For over a century, trams on Hong Kong Island have been an inexpensive mode of transportation. You can ride the full length of the 15-kilometre track at $2.30 per adult, $1.20 per child and $1.10 for a senior. GENERAL MANAGER Alexander O. Wassermann, General Manager of the InterContinental Grand Stanford Hong Kong, shares his thoughts on his career and hotel experience that has spanned several continents 海景嘉福洲際酒店韋瑞民總經理與我們分享他的職業生涯和在世界各地的酒店工作的經歷。 I grew up in the Bavaria region of Germany; I started my hotel career almost 20 years ago at the Intercontinental Hotel in Dallas, Texas. It was a large hotel with huge banqueting facilities; the ballroom alone could accommodate 5,000 people and hold major concerts. I was really impressed with the scale and realised the industry offered much to explore. Then I was in Shanghai when the city was really taking off; the transformation was amazing. I went to Jordan and worked at a resort hotel on the Dead Sea, a beautiful place by the beach that frequently hosted royal receptions. I also worked in Dubai, opened a hotel in Egypt, then came to Hong Kong to work for the Grand Stanford for a few years before moving to Qingdao to run the InterContinental there. Then the opportunity came up to come back here as the General Manager, something I was really excited to do. The Intercontinental Grand Stanford has been a landmark hotel in Tsim Sha Tsui for 36 years. Our location is excellent; with many loyal guests served by our many loyal staff. Still, in the hotel business we need to keep up with change, including our infrastructure. So we are developing a master plan for the hotel for the next 10 years with many projects in the pipeline that will take the hotel to a whole new level. I am excited to help guide this process going forward. Hong Kong hotels’ professional level is “Premier League”, on a par with London and New York, and I am proud to be part of the hotel industry here. There is so much to like about the city: many restaurants to explore, with new concepts emerging all the time. The diversity of people makes the city a vibrant place to live. The architecture is also fascinating, from wet markets to old buildings to skyscrapers of all kinds, blended with a great natural outdoors.. Above all, though, Hong Kong is an incredibly safe city, a fact perhaps under-advertised. I am not afraid to walk on any street, anywhere in Hong Kong – it’s totally safe. I can’t say that for many places, including my home country Germany.

我在德國巴伐利亞長大，我的酒店生涯是20年前在德克薩斯州達拉斯的洲際酒店開始的。那是一家很大的酒店，有大型宴會設施，光是舞廳就能容納 5000 人，適合舉辦大型音樂會。之後我去了上海，當時上海正在快速發展和轉型。後來我去了約旦，在死海海灘附近一間美麗的度假式酒店工作。我也在杜拜工作過，還參與開設了埃及的一家酒店。幾年前我開始在香港海景嘉福酒店工作，之後去了青島洲際酒店。然後我獲得了回來這裡擔任總經理的機會，我感到十分興奮。海景嘉福洲際酒店已經在尖沙咀屹立了36年，一直都是這裡的地標之一。酒店的地理位置十分優越，顧客和員工的忠實度都很高。然而酒店行業必須與時俱進，基礎設施當然也要跟上時代變化。因此我們對於酒店未來10年的發展有一連串的計劃，我相信這一系列計劃可以將酒店提升到一個新的層次，我非常期待。香港酒店業的專業程度可與倫敦和紐約媲美，我很驕傲能成為香港酒店業的一份子。香港有太多值得欣賞的地方了：這裡的美食多不勝數，不斷有新餐廳出現。不同文化背景的人在這裡共同生活，令香港成為一個充滿活力的城市。這裡的建築也十分多元化，街市、舊建築和各種風格的摩天大樓鱗次櫛比，更有大量的戶外運動好去處。

Many visitors are surprised by how green Hong Kong is: we have four marine parks, one of which offers a really rich coral environment, and many country parks as well. I do think we can make them more accessible to visitors from the standpoint of creating attractive facilities in these areas so that visitors can enjoy a truly memorable experience, similar to a nice hotel or restaurant in the Alps for skiers in the winter.

香港是一個非常安全的城市，但這經常被大家認為是理所當然的。我在香港任何一條街道上走都不覺得害怕，這裡實在太安全了。在其它地區我可不敢這麼說，包括我的祖國德國。

My two favourite routes for visitors: One: from our hotel, stroll along the Harbourfront walk to the Star Ferry, which you take to Central, and on to the 260 double-decker bus to Stanley; after seeing Stanley market, take lunch on the promenade, back to the IFC via bus, Yoga Ice cream at IFC mall, then Hollywood Road and Cat Street for souvenir hunting, and pre-dinner drinks in Soho. Two: Explore nature and go to Sai Kung for a day; take a boat to a remote beach or island, and find a private kitchen for a nice seafood dinner.

讓很多旅客驚訝的是，香港大部分地區為山林覆蓋：香港有四個海岸公園，其中一個有着非常豐富的珊瑚群落。此外，香港還有許多郊野公園，我認為我們可以在這些地方建立更多具吸引力的基礎設施，方便遊客前往參觀。就像對於滑雪者來說，冬天在阿爾卑斯山脈上遇到一間舒適的酒店或餐廳絕對是難忘的體驗。我為旅客推薦兩條我最喜歡的遊覽路線： 1. 從我們酒店出發，沿着海濱走到天星碼頭，乘坐天星小輪到中環，然後乘搭260號雙層巴士到達赤柱市集，您可以在海邊享用午餐，乘巴士回到國際金融中心，在商場裡面品嚐乳酪雪糕，然後到荷李活道和摩羅上街淘紀念品，晚餐前還可到SoHo荷南美食區小酌一杯。2. 花一天時間到西貢親近大自然，乘船到遠離市區的海灘或島嶼，品嚐一頓美味的私房菜或海鮮盛宴。
