While we may expect a cold spell or two during the winter months here, the weather is generally mild enough for visitors to undertake a slew of indoor and outdoor activities. While Hong Kong is densely populated with high-rise buildings seemingly built on top of one another, the city in fact provides plenty of open spaces, even within the populated areas. Over the years, the city has established more than 70 public parks plus other sitting out areas that collectively form a nexus of Hongkongers’ recreational and leisure activities. Whether it’s playing football or basketball, jogging or cycling, playing at children playgrounds or just strolling in gardens and footpaths, Hong Kong's urban spaces offer a welcome all of their own. Whether you are a runner or happy to let others make the effort, it’s a spectacle not to be missed As springtime beckons, Hong Kong is getting into the arts season, culminating in Art Basel and other major art festivals in March. The cavalcade kicks off with the Hong Kong Arts Festival, now in its 48th edition. Be sure to catch some of the performances, which include opera, music, theatre and dance. There are so many things to do in February in Hong Kong. Great Piano Concertos: Pavel Kolesnikov Plays Chopin
Pianist Pavel Kolesnikov will debut in Hong Kong with a performance of Chopin’s Piano Concerto No 2 in F minor led by Hong Kong Sinfonietta Music Director Yip Wing-sie. Hong Kong Marathon 2020
The annual Hong Kong Marathon is Hong Kong’s largest participation sports event. The first race was in 1997 to coincide with the opening of the new Hong Kong International Airport, making 2020 the 24th year of the race. There are three distances: 10km, a halfmarathon (21.0975km) and a full marathon (42.195km). Every year, thousands of local runners and overseas elite athletes participate in this IAAF Gold Label race.

Arthur Hacker pays tribute to a colourful Scottish entrepreneur from Hong Kong's pioneering days 亞瑟．克赫為大家介紹一位曾參與鍾樓建築和非法船隻交易的蘇格蘭企業家的事蹟

n the stroke of midnight, 31 December 1862, the chimes of Hong Kong's new town clock boomed out for the first time, heralding the arrival of the New Year. The new clock tower stood 23 metres tall and was located at the top of Pedder Street. It was designed by one Mr Rawlings. A committee had been set up to collect subscriptions to pay for the clock's maintenance but unfortunately the public’s support for the venture was lower than expected. Historian EJ Eitel, in The History of Hong Kong, complained that: “All the decorative features of the original pretty design had been abandoned, the result was an ugly tower obstructing the principal thoroughfare”. Looking at John Thomson's famous photograph of the clock tower, it is difficult to imagine how the "original pretty design" could have been more ornate than this new version. At one time, the whole project seemed doomed for lack of funds, until Douglas Lapraik, the Scottish shipping magnate and founder of Hong Kong and Whampoa Docks Company, offered to pay for the clock. Lapraik had arrived

in Hong Kong in 1843 and began his career as a clockmaker's apprentice in D'Aguilar Street. He later established his own watchmaking business. As a public relations exercise, donating the clock tower was a disaster. Thomson remarked that it was "liable to fits of indisposition, resting from its duties at the most inconvenient seasons, as if unable to contend against the heat." But if it didn't work properly, it did have certain other uses: "the lighted dial of the clock forms a good landmark to guide benighted steersman to the landing steps at Pedder's Wharf." HJD Stephens, a cantankerous member of the Hong Kong Club, complained he could not see the clock because of new buildings and in 1884 he began lobbying for its removal. He pointed out that it obstructed the traffic in Queen's Road Central. Stephens kept up his campaign for another 10 years but it was not until 1913 that the tower's time finally ran out and it was demolished. Lapraik didn't suffer the same fate as his clock and became very successful and extremely wealthy. His interests were spread over a number of companies and he was a member of the original founding board of the Hongkong and

Shanghai Bank. He was also a major shareholder in the Hongkong Hotel. He owned the Douglas Steamship Company and is remembered in both Douglas Street in Central and Douglas Castle, his former home, in Pok Fu Lam. This gothic folly is probably the last surviving mansion built by a taipan (wealthy businessman) of his generation. Early Hong Kong merchants competed with each other to construct the grandest and most expensive stately homes for their company directors. Lapraik's exotic Xanadu has probably only survived because it was not in Central. The Scot valued his privacy and lived in this mock medieval folly with his Chinese mistress. The building is now called University Hall and has been partially rebuilt. It is used as living quarters for students of Hong Kong University, which is situated nearby. Lapraik was also a shareholder in a syndicate of Hong Kong merchants that secretly bought a large Chinese junk in Canton. ln 1846, selling a junk to a foreigner was punishable by death in China. The fine three-masted junk was named Keying, in celebration of the Chinese imperial commissioner, Qiying, who signed the Treaty of Nanking, ceding Hong Kong to the British. It took Captain Charles Kellett 477 dreary days to sail the unwieldy craft east to London. The junk was blown off course in a storm, and the voyage took so long that Kellett had to stop in New York to avoid a mutiny. That visit and the vessel’s arrival in London drew huge crowds and public interest, but Lapraik claimed that he "never made a halfpenny of returns" from his investment.■

11 February 1957: A Siberian cold front hit Hong Kong, bringing record cold temperatures. The Observatory recorded early morning temperatures of two degrees centigrade, the second lowest for February since records began in 1885. Ice and frost were reported at The Peak and other hilly areas in the New Territories, with multiple deaths resulting from exposure to the cold.

This large, popular park located in the eastern part of Hong Kong is a favourite gathering place for locals. The park has football pitches, basketball courts, tennis courts and several children’s playgrounds full of stimulating play equipment. The Quarry Bay Waterfront Promenade, which is accessible via a pedestrian bridge just across from the Cityplaza mall, is a haven for joggers and offers panoramic views of the quieter, eastern end of Victoria Harbour. There is also a dog-run where pets and their owners can get some exercise, plus a retired fireboat that is open to public. You will probably also want to visit the nunnery and admire its Tang dynasty buildings and architecture. Kowloon Walled City Park

This historic park was built on the site of the infamous Kowloon Walled City, an enclave of crime and prostitution left over from the Qing Dynasty days. The old walled city was finally demolished in the late 1980s and a Jiang-nan style park and gardens took its place. A trace of the old walled city remains, but the park now consists of eight thematic landscaped areas. There is also an enclosed bike route in the adjacent Carpenter Road Park that young and old can enjoy riding around away from the city traffic. osca di Angelo, one of the city’s finest Italian restaurants, has a lofty reputation, both figuratively and literally. Perched on the 102nd floor at the Ritz Carlton, Hong Kong – billed as the world’s tallest hotel, the restaurant wows guests with unparalleled views of the city, elegant décor, and excellent food and service. It is always a treat to visit, and when we learn that a highly touted chef has taken over its helm, we are easily persuaded to return. The views overlooking the city are just stunning, almost surreal, with eye-level views of the mountain ridges across the harbour. The design of the restaurant, which is bright, spacious and open with tall ceilings and floor-to-ceiling windows, helps maximise the wow effect.

A Sicilian at heart and son of a professional fisherman, Chef Angelo’s passion lies with the Mediterranean and all that pertains to it: including fresh fish, zesty Sicilian cooking and hearty food. His philosophy is to convert traditional cooking into gourmet fine dining cuisine – a mission he undertakes with great zeal. For our lunch, we chose the four-course set menu ($698/person). Following an appetising amuse bouche, we selected for our antipasti Seared Mediterranean Octopus with Thyme, Bamboo Veloute, Taggiasche Olives and Mullet Bottarga, a dish that brings out the

whole umami taste of the tender octopus meat and the mullet roe. We should mention that Tosca serves excellent bread, accompanied by five grades of olive oil of varying intensity of flavours – a real treat. For our first course, we had Mezzi Paccheri with Sicilian Red Shrimps and Basil Pesto Sauce. The shrimp is scrumptiously tender and fresh. The pasta is firm and chewy just how we like it. The second dish was Red Star Grouper in Matalotta Fish Soup with Olives, Capers, and Cherry Tomatoes ($138 additional), which Chef Angelo created by taking prized Asian ingredients and using them in an Italian recipe, for a delightful result in which the fish fillet retains its tender texture while its flavour is enhanced by the zesty fish soup. We finished the meal with two delightful desserts plus a cheese plate: Crunchy Gianduja Cake with Hazelnut Mousse and Pistachio Ice Cream; Rum Baba with Vanilla Chantilly and Fresh Mixed Berries; and Tosca’s Cheese Selection ($120 additional). Much kudos to the pastry chef – the desserts taste healthy, not too sweet, light and with a nice infusion of citrus flavour. For a truly enchanting dining experience above the clouds, so to speak, Tosca di Angelo is most worthy of your consideration. We highly recommend it.■

t those times when we yearn for a refined Cantonese meal, Summer Palace, the flagship Chinese restaurant at the Island ShangriLa Hong Kong, invariably comes to mind among the choices. And it’s been a while since we last visited, not since Chef Leung Yu King was promoted to Executive Chef. So, our visit was long overdue. This one-Michelin starred restaurant has been a favourite with locals and visitors alike since its opening in 1991. Consistent with the Shangri-La hotel brand image, the décor of Summer Palace is classical Chinese grandeur with rich hues of gold and red. Its setting is luxuriant and immaculate – well, palatial, as the name suggests. Clearly, it has stood the test of time.

Double-boiled Chicken with Matsutake Mushroom 松茸燉雞湯
Chef Leung Yu King, who’s been plying his culinary skills for over 30 years, has been with the restaurant since its beginning. Under successive head chefs over the years, Summer Palace has garnered numerous awards for its culinary excellence, consistently delivering quality Cantonese cuisine using choice, seasonal ingredients and tried-and-true Chinese cooking methods. With Chef Leung specifically, experimenting with new recipes and exploring ways to combining new ingredients help create new, distinctive flavours, with emphasis on aroma, colour, taste, texture and contrast. In addition to its full menu for lunch and dinner, Summer Palace is known for its excellent lunchtime dim sum. It also offers a curated selection of fine wines to pair with the food. We started with Crispy Pork Brisket ($268), a favourite of ours. The skin is roasted to a golden wafer, yet the meat remains tender and succulent, its flavour enhanced by a nice mustard seasoning. Next is the Deep-fried Shrimp Toast in Truffle Pesto ($540), which was a real treat. The toast is aromatic and crunchy, the truffle flavour blending well with the taste of the shrimp.

What would refined Cantonese dining be without double-boiled soup? Summer Palace serves a wide range of nutritious soups filled with healthy ingredients. Ours was Double-boiled Chicken with Matsutake Mushroom ($350 per person), which tastes delicious as the flavours of the various ingredients percolate into the soup. Another of Chef Leung’s signature dishes is Stewed Wagyu Beef Cheek with Our Chef’s Special Preserved Bean Paste ($350). The beef is stewed until the meat is tender and practically melts in the mouth. The special bean sauce is savoury and adds a piquant twist to the flavour. For lighter dishes we had Stir-fried Minced Vegetables with Pine Nuts Served with Lettuce ($230), which is refreshing, and Deep-fried Chicken Wing Stuffed with Crab Meat and Onion ($170/ piece), another of Chef Leung’s imaginative creations. The combination works surprisingly well, and it’s clear a lot of effort goes into preparing the dish. We finished the meal with Fried Rice with Seafood and XO Sauce in a Stone Hot Pot ($340), a real tasty rice dish, and Chilled Sago Cream with Mango Juice and Pomelo ($75). On a visit to Hong Kong, a refined Cantonese meal should be high on anybody’s bucket list. And Summer Palace certainly makes the grade. We highly recommend it.■

Artisan Lounge
The recently opened Artisan Lounge, located in arty luxury mall K11 Musea, is redefining gourmet lounge dining in the city that is already famous for its glittering list of premium lounge F&B outlets. The lounge is located in the mall’s grand atrium, directly beneath the signature gold ball hanging high above. Artisan Lounge is decked out in burgundy and metallic bronze, its design concept inspired by an elegant stately manor. The picturesque outlet throws up Instagrammable spots everywhere you look. The restaurant is an all-day café with a full menu. Of special note is its Afternoon Tea ($690 for two) which includes savouries such as Caviar Cube, Challan Duck Bao, classic Scones and sweet dessert bites such as Sweet Burger of Macaron and Fresh Fruit, French Pink Marshmallow, Ruby Chocolate from Belgium and Chocolate Magnum Bar. The tea set is stylishly suspended from a bronze arc. Artisan Lounge also serves a fine collection of cocktails, craft beers, bubblies and wines. We tried Lov is Zen ($68), a teabased craft beer, Emperor ($138), a sweet cocktail made from Chinese yellow wine and Hand Drop Artisanal Coffee ($95-$175), made from select coffee beans, and all hit the spot. The food is excellent too. The menu offers several items inspired by classic comfort food, including Fan Guan Barbequed Iberico Pork Loin with Fried Egg and Rice ($208) which is a much-refined version of the popular chau siu fan; Japanese Inaniwa Udon in Rich Fish Broth ($298) and Artisan Burger ($258) made with premium Australian beef patty. For
dessert, the Caramelized Banana Mille Feuille ($128) golden chocolate, golden crumble is also excellent. Why not pamper yourself in a trending destination where you can relax, enjoy lively music and while the time away with excellent food and drinks? K11 Musea, Hong Kong’s latest luxury mall, is home to several new, unique dining outlets. One such is Avobar, a Londonbased avocado-themed restaurant for which K11 Musea is its first international outlet. Avobar manages to do more with avocados than most of us could possibly imagine, with a wide range of dishes served in a casual and relaxed setting. Avobar’s décor is comfortable and warm; its cushion chairs are inviting, and an open kitchen adds to the welcoming atmosphere. The restaurant offers an all-day menu. Avobar sources its high-quality avocados from all over the world, freshly delivered to Hong Kong all year around. We never knew avocado could be included in so many dishes. We started with Cajun Sweet Potato “Chips” & Wasabi Mayo ($48) and the Avobar Cobb Salad ($148), with sweetcorn, sweet tomatoes, queso fresco, prawns, bacon and avo rose. We then tried a brunch menu item, the Matcha Pancake Sweet ($118) with caramelised banana, maple syrup and avo-butter, which tasted velvety smooth. An avocado soup, Avo Mushroom Cappuccino ($98) is delicious and certainly different. For main dishes, we had Avo Bun Burger ($148), Avobar’s signature dish – an avo bun with a sweet potato and lentil patty, coconut and herb dressing with vegan slaw; Avo Bun Lobster ($198), an avo bun with lobster chunks, tangy mango, passionfruit and tabasco mayo with a celeriac slaw on the side; and Black Cod and Mushroom Risotto ($178) with avo foam and truffle oil. They were all packed with delightfully unique flavours and a complete joy. Avobar
also serves some yummy smoothies, including Avo Banaberries ($80) and Avo Refreshing ($80) with banana, green tea, mango, pineapple, spinach and avocado. We finished a Choc Avo Brownie ($54) together with a Beetroot Latte ($48) to wrap up this enjoyable meal. You don’t have to be an avocado lover or a millennial to enjoy this excellently different restaurant. And the prices are reasonable. Add Kura to the robust line-up of excellent Japanese eating establishments in Hong Kong. Kura, a modern Japanese restaurant recently opened in Causeway Bay, serves creatively crafted sushi and other Japanese dishes using quality ingredients from fish markets in Tokyo, Kyushu and Hokkaido, flown in fresh every day. Kura is smartly turned out in a modern Japanese décor; the spacious outlet is divided into a sushi bar and a main dining area, each with its own colour theme. The restaurant serves both lunch and dinner, including 13 lunch sets, starting from $260 per person, and three dinner options ($1180/ $1380/ $1680 per person respectively). Kura also serves an à la carte menu as well as a carefully selected collection of quality sakes. For lunch, we opted to share a few sets. Each includes salad, steamed egg, soup and dessert. We chose Grilled Sashimi Rice ($290) in which fresh sashimi is lightly grilled or, more precisely, torched. The sashimi pieces taste fresh and tender, and grilling brings out the fish flavour fully. Japanese Sea Urchin Rice with American Lobster ($480) is a Kura signature lunch set. The sweet taste of the urchin is well balanced by the fuller flavour of the lobster meat. The portion is generous too.
Another à la carte item was Steamed Abalone with Liver Sauce ($150), which fuses Japanese or Korean dried abalone with homemade abalone liver sauce that certainly adds new flavours and textures.
Grilled Live Eel Rice with Sauce ($290) is another excellent choice. The eel is grilled to just the right texture and its flavour is enhanced by the sauce. Our last lunch set was Japanese Beef Udon with Three Pieces of Sushi ($300). We particularly enjoyed the broth of the udon soup.

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Tai Kwun
Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard.
