e welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. October is a hyper-busy month in Hong Kong, with events, festivals, trade shows and musical performances all lined up to keep the city in a constant state of buzz. The first week of October is Golden Week in Mainland China, a week-long holiday period celebrating China’s National Day on 1 October. Hundreds of thousands of Chinese tourists are visiting the city and they are in for a treat. The city marks its own celebration of National Day with a spectacular fireworks show over the harbour in the evening. The Mid-autumn Festival, an important traditional festival that celebrates autumn harvests by the eating of mooncakes and gazing at the full moon falls on the first week of October this year. You can join in by eating a mooncake or, better yet, picking up a box or two to take home with. Try to visit the Lantern Carnival in Victoria Park or watch the traditional Tai Hang Fire Dragon Dance. The 2017 Sun Hung Kai Properties Hong Kong Cyclothon will also be held this month, starting at the Tsim Sha Tsui harbourfront. Thousands of amateur and professional riders will participate in competitive races and fun rides over the course of the day, headlined by the city’s first UCI Asia Tour Class 1.1 Road Race. Grab a comfortable spot to view all the exciting action. Another major festival taking place this month is the 2017 CCB (Asia) Wine and Dine Festival, easily Hong Kong’s premier culinary event and one of the largest in Asia. Thousands of food and wine lovers, wine merchants and producers, local and international chefs will indulge in four days of high-quality wine, food and music, with the stunning Victoria harbour serving as a backdrop. It is one of the city’s megaevents and you won’t want to miss it if gastronomic and oenological exploration is your thing. Please see our cover story on page 10 for details. Equally, one of the world’s major electronic trade shows, the HTDC Hong Kong Electronics Fair will be held concurrently with electronicsAsia, with over 4,200 exhibitors gathering to showcase the latest products and ideas in electronics. How about getting into the spirit of Halloween celebration while you are here? The city has long embraced Halloween as an occasion for going a little crazy, in a good way. Both Ocean Park and Disneyland have lined up their traditionally full-on activities for thrill-seekers. And on Halloween night, Lan Kwai Fong, the city’s iconic entertainment area, will be filled to the gills with partygoers dressed to distress and ready to have fun. So, October is chockful of things to do and we are barely scratching the surface. Tai Hang Fire Dragon Dance

In Hong Kong, the fire dragon dance has been a revered tradition and a symbol of blessings for over a hundred years, forming part of the mid-autumn festive celebrations. The dance, which traces its roots to the 19th century when villagers warded off maladies and diseases with the help of the dancing fire dragon has, over time, become one of Hong Kong's unique cultural icons. In 2011, it made its way into China's third batch of intangible cultural heritage relics. Three hundred performers, manning the 67-metre dragon, dance to form different movements along the route in Tai Hang, with the visual effect dramatically enhanced by over 20,000 burning incense sticks planted onto the dragon. The fire dragon performance will also be held at nearby Victoria Park on 4 October at around 10:45-11:30pm. Pok Fu Lam Village will host a fire dragon dance at around 6:30-11:45pm on the same day. Be sure to join the crowd and dance with the dragon to celebrate this beloved tradition!

大坑舞火龍

中秋節期間，香港將進行有逾百年曆史的傳統習俗——舞火龍。舞火龍源於19世紀，居民為求消除瘟疫而起，如今成了香港獨特的風俗，大坑舞火龍更於2011年被列為第三批國家級非物質文化遺產。今年的大坑舞火龍活動由三天延長至四天，屆時共有近 300 人舞動長達 67 米、插滿 2 萬多枝線香的火龍，在街道上穿梭，展現不同的型態。另外，10月4日 (中秋節當晚) 約10:45至11:30，鄰近的維多利亞公園亦會舉行舞火龍活動。而薄扶林村火龍盛會也將在晚上約6:30至11:45，於薄扶林村至瀑布灣海灘舉行。一起來與火龍共舞，感受百年傳統文化！

Mid-Autumn Festival

This ancient Chinese festival traces its roots back to a time when farmers rejoiced in bountiful harvests. Every year people purchase millions of mooncakes to celebrate the festival. The main celebration falls on the full moon, but the city will be holding cultural events for days. The grandest of these are the Tai Hang Fire Dragon Dances and Lantern Carnivals at Victoria Park.

Sun Hung Kai Properties Hong Kong Cyclothon

The 2017 Sun Hung Kai Properties Hong Kong Cyclothon, now in its third year, will kick off on the waterfront of Tsim Sha Tsui. The day-long cycling feast, fast becoming a highlight of the city’s sporting calendar, is expected to draw thousands of amateur and professional riders from all over the world to take part in a myriad of competitive races and leisurely rides. Four competitive races, including the featured Sun Hung Kai Properties Hong Kong Challenge, which is now a sanctioned official UCI Asia Tour Class 1.1 Road Race and which is expected to attract several top UCI World Cycling teams to join the race, will get underway in the afternoon on the 5.15km closed circuit route that stretches from Salisbury Road in the heart of Tsim Sha Tsui to nearby Hung Hom. Be sure to find a good viewing spot along Salisbury Road or Mody Road near the Urban Centenary Garden and treat yourself to some high-octane racing action!

THE PEAK, THEN AND NOW

太平山頂的古今歲月 There can be nothing nicer on a clear day than a stroll round Victoria Peak with superb views over the harbour to Kowloon and the outlying islands. Except, that is, in spring when the Peak is shrouded in mist. Cut off from the rest of humanity, it is silent and still, in a world of its own. 在天朗氣清的一天到太平山頂漫步，俯瞰維多利亞港、九龍和離島的優美景緻，還有什麼比這更愜意的呢？然而在春霧繚繞之時，山頂的一切景緻又將消失於煙霧瀰漫之中。太平山頂遠離煩囂，宛如一片世外桃源，頗有遺世獨立的氣派。

ome to the rich and famous, and those with aspirations thereto, the Peak’s exclusivity stems from stratospheric rents matching the high altitude. Here, houses of some of Hong Kong’s wealthiest lie hidden among the bauhinia and jacaranda trees in this very private world. The feeling of being in the country with the thick undergrowth of plantains, palm trees and clumps of bamboo, along with birdsong and the occasional barking deer was, and still is, a great attraction. When the British colonised Hong Kong in 1842, access to the Peak was difficult as the only way up was via a steep path that is today’s Old Peak Road. Nevertheless a few pioneers started to have summer homes there and when the Peak Tram opened in 1888 there was a greater demand and more houses were built. The Peak Tram was the first cable railway in Asia, and climbs from Central up the steep incline to the terminus 396 metres above sea level. Mr Findlay Smith who was closely involved in the building of the Peak Tram saw the demand for a hotel and he bought a lot close to the terminal and built the Peak Hotel, which opened in 1890, to provide accommodation for those wishing to escape from the city.

The hotel was a great success and was later expanded to keep up with demand. Surprisingly, a second business, the Mount Austin Hotel, did not survive for long before it was purchased by the Army and converted to barracks. As the Peak became more popular there was concern amongst British residents that the area might become overrun with Chinese and in 1904 an ordnance was passed prohibiting Chinese from living there unless specifically permitted by the Governor in Council. This was amended in 1918 to say that anyone who wanted to live on The Peak required the permission of the Governor in Council and omitted any reference to Chinese. Spacious mansions were built, with names like Craigieburn and Balgownie recalling a homeland far away. Most have now made way for plainer townhouses, but often still bearing names that evoke a bygone age and those Scottish antecedents – Ardshiel, Strawberry Hill, and Forestdale. Residents now, as before, are likely to be senior bank personnel and company executives; it is a little bit of Britain in the Orient, even if the occupants have Chinese faces. To help the early residents settle in, there was a clubhouse on Plunketts Road, where

the Peak School now stands. Originally the primary school was in a building now occupied by the Fire Station, but moved to the present premises in 1954. Near the Fire Station was the resident’s church, the rectangular site today a children’s playground. Having arrived at the tram terminus the standard transport was a sedan chair. A chair with two bearers cost twenty cents for a fifteen-minute trip. Those with greater aspirations, or who were travelling over more difficult terrain, would take four bearers for an extra ten cents. But many rich families had their own bearers, dressed in company livery, like that of George Benjamin Dodwell, founder of the trading company which still bears his name. He, with his family of six, lived in a house built in the 1890s called La Hacienda, now a residential complex on Mount Kellett Road. The family employed two European governesses and a staff of twenty four Chinese servants, among them ten sedan chair bearers to carry them to the Peak tram, half a mile away. Because of the cooler climate, there were two hospitals on Mount Kellett Road. Tucked away in a quiet corner, on a promontory overlooking the Lamma Channel, and benefiting from cooling sea breezes,

is the Matilda, one of Hong Kong’s top private hospitals. Named after the wife of the benefactor, Granville Sharp, it opened in 1906 for Europeans needing free medical treatment. It is still beloved of certain Hong Kong residents, although no longer free! The maternity department is particularly favoured and to be a Matilda baby is a badge of honour in some milieux. The War Memorial Nursing Home was completed in 1931 and after WWII was converted to a naval hospital. It was demolished in the early 1970s, when six large houses were built at number fourteen. Today the residents are a mixture of races but the mansions remain exclusive. Visitors come up to enjoy the views and the facilities at the Peak Tower. Some hike round the loop of Lugard Road – Harlech Road. Arguably the city’s best-known trail, the Dragon’s Back is a moderately easy two-hour walk that traverses a series of mountain ranges in southeastern Hong Kong Island, offering outstanding twin views of the South China Sea. Take Bus number 9 and get off at the Cape Collinson stop near Tai Tam Gap Correctional Institute and walk up a short distance to the connecting trail. You can choose to descend either to Big Wave Bay or to Shek O, where there is food and refreshment.

Take a ferry to Cheung Chau and enjoy its greenery, craggy hillsides, golden beaches and fascinating rock formations along the Mini Great Wall walk. Be sure be spend some time in the enchanting village and catch a seafood meal at one of the dai pai dong restaurants. 乘坐渡輪到長洲欣賞島上鬱鬱蔥蔥的植物、崎嶇的山徑和金黃的沙灘，“小長城”路徑上的人頭石像極了人的頭顱。記得預留時間逛逛美麗的村莊，海鮮大排檔同樣不容錯過。

龍脊可說是香港最有名的遠足徑，難度適中，約兩小時便可完成。這條遠足徑穿過香港島東南部的一系列山脈，可飽覽南中國海迷人景緻。乘坐9號巴士，在大潭峽懲教所附近的歌連臣角站下車，稍稍走一段路即可到達港島徑。您可以選擇在大浪灣或石澳開始下山，可到石澳泳灘購買食物和飲品。

A favourite pastime of Hong Kong over the generations has been horse racing- action packed races organized by the famed Hong Kong Jockey Club held over its two world class race tracks in Shatin and Happy Valley from September to July every year. Two race meetings are normally held per week- Wednesday nights and Sundays- with horse racing and casual fans pouring into the stands to cheer on their favourite horses. delicious meal, paired with the right wine choices, is one of life’s true pleasures. Thankfully, wine-pairing dinners have gained much popularity in Hong Kong as the city’s wine culture continues to grow and mature. Not surprisingly, the art of pairing dinner with wines has crossed over to Chinese cuisines, especially Cantonese food, with its more refined and less overpowering flavours. We chose Fook Lam Moon, one of the city’s most iconic and famous Cantonese seafood restaurants known for seafood delicacies such as dried abalone, fish maw, and fresh-caught deep-sea fish. In its 70 years of operation, the restaurant has endured as a favourite of the city’s traditional elite, many of whom still prefer their food prepared in just the authentic and traditional manner, and we agree. And given its clientele, most of whom do order wine to accompany their meals, Fook Lam Moon is clearly adept at pairing their wines, so we are in good hands. The restaurant décor is classically opulent and spacious, which provides a sense of privacy and oldworld comfort. Our Wine and Dine Dinner set starts with Three Signature Hors d’ Oeuvres paired with a glass of Delamotte Brut N.V. Champagne, one of the classic non-vintage Champagnes from a Grand Cru vineyard. The starters include deliciously tender Chinese roast pork (Char Siu), deep salt-fired fish fillet, and vinegar-marinated wood-ear fungus; the Chardonnay and Pinot blended Champagne’s slight acidic and fruity flavour is a nice complement. Next is the Shredded Fish Maw and Chicken Soup, an old classic and highly tasty, the key being its slow-cooked soup base packed with quality

ingredients. No wine needs to go with the soup, we were told. The Sauteed Prawns with Special Mayonnaise Sauce and Walnuts and Baked Stuffed Crab Shell with Onions and Fresh Crab Meat are served next, matched by a full-bodied yet refreshing Chardonnay, Ferarri-Carrano, 2014 from California’s famed Sonoma Valley. Both dishes are classic Hong Kong Cantonese, as evidenced use of mayonnaise on the juicy prawn. And we were impressed with how much fresh, sweet tasting crabmeat is packed into the shell – the wine brings out the seafood flavours very pleasantly. It’s time to bring out the red wines! Sure enough, a 2015 Wairau River Pinot Noir, from New Zealand, is paired with two signature dishes: Braised Whole Yoshihama Abalone (30 heads) with Dried Mushroom and Vegetables, and Roasted Crispy Baby Pigeon. The light bodied, cherry flavour Pinot Noir gently balances both the abalone and the pigeon. Fried Rice with Premium Salted Fish and Diced Chicken is the final offering, paired with a 2011 DOCa Luis Cañas Reserva, a nice medium-bodied red from Spain’s famous Rioja wine region. Both food and wines go surprisingly well together, and serve as a fitting end to the wine-paring. We rounded out our meal with another traditional favourite, Sweet Almond Soup with Egg White, and Chinese petit fours, all consumed with glee. The dinner is priced at $2090 without and $2580 with paired wines, which – given the quality of seafood that is served – is most reasonable. A trip to Fook Lam Moon should be your culinary highlight in Hong Kong, and the better with wines paired. ■

廳也開始推出酒配菜餚套餐，特別是製作精細，強調食材原味的粵菜。本月我們來到城中最有代表性和最有名的粵式海鮮餐廳之一——福臨門。福臨門主打鮑魚、花膠和新鮮深海魚等海鮮美饌，70年以來以正宗傳統的烹調方法吸引了不少城中名人富豪光顧。來福林們的食客享用美食的同時多數會叫上一兩支酒，因此福臨門絕對是酒配菜餚的專家，我們對這頓午餐充滿期待和信心。餐廳採用古典華麗的裝潢，空間十分開闊，客人們可在懷舊的氛圍下自在地交談。我們品嚐的美饌佳釀套餐以招牌三前菜揭開帷幕，搭配的佳釀是來自特級葡萄園所產的無年份香檳 Delamotte Brut N.V.。三道前菜包括叉燒、椒鹽豆腐粒及陳醋雲耳，香檳採用了霞多麗及黑皮諾葡萄，酸度和果香味無可挑剔。下一道菜是經典美味的花膠燴雞絲羹，採用最上等的食材慢燉而成，侍酒師告訴我們這道湯品不需要搭配任何酒類。接下來登場的是桃茸生汁大蝦球和釀焗鮮蟹蓋，配搭的美酒是來自加州著名葡萄酒產區索諾瑪谷的 Chardonnay, Ferrari-Carano, 2014。這兩道菜式均屬粵菜中的經典，廚師在美味多汁的大蝦球上加入了蛋黃醬，而蟹蓋裡面的蟹肉味道鮮甜，分量十足，搭配的美酒令海鮮的味道進一步升華。該是紅酒出場的時候了！侍酒師為兩道招牌菜式——鮑汁菜膽北菇伴三十頭原隻吉品鮑和紅燒妙齡乳鴿搭配了來自紐西蘭的 Pinot Noir, Wairau River, 2015。輕盈的酒體和帶有櫻桃味的黑皮諾將鮑魚和乳鴿的味道平衡得恰到好處。這頓午餐接近尾聲，搭配咸魚雞粒炒飯的 Luis Cañas, Reserva, DOCa, 2011年產自西班牙著名葡萄酒產區里奥哈區，屬中度酒體，味道與菜式構成完美搭配，為酒配佳餚畫上圓滿的句號。美味午餐以傳統中式甜品生磨杏仁茶和美點三色作結，酒足飯飽的我們感到無比愜意。福臨門美饌佳釀套餐定價為每位港幣$2,090 元。配搭美酒每位港幣 $2,580元，以此價格品嚐到如此高質素的海鮮菜式，實屬物超所值。訪港期間不妨到福臨門品嚐美味粵菜，最好當然是配上一系列精選佳釀。■

ngelini, one of the finest Italian restaurants in the city, is our choice for a wine-paired dinner. Given our affinity for Italian dining, most of the time accompanied by wines anyway, it’s an easy choice. The restaurant, located on the third floor of the Kowloon Shangri-la Hotel, commands an intimate view of Victoria Harbour. As expected of a Shangri-la restaurant, Angelini is elegantly and stylishly decorated, its modern décor offering an upscale yet relaxed setting for a leisurely meal. Angelini’s cuisine is primarily Italian Piedmont from northwest Italy, home of Fiat and Ferrari, and of course, one of the country’s foremost wine regions. Piedmont cuisine, while thoroughly Italian, is noted for its creamy flavours and elegant presentation. We tried Angelini’s tasting menu, starting with a choice of two tartares: Tonno Tartare – Tuna tartare, Mediterranean flavours and Arma di Taggia olive powder, and Carne Cruda Di Fassona –Fassona beef tartare, slow-cooked egg, panzanella Tuscan salad, asparagus. The paired wine is Yellow Label Veuve Clicquot Champagne, a predominantly Pinot Noir–blended non-vintage Champagne with complex aroma and depth of fruit flavours. Each tartare has a different texture and seasoning, but both are equally appetising – hard to choose between the two, and both flavours helped by the Champagne with its balance of power and fineness. The Chitarra Al Tartufo, homemade chitarra pasta, black truffle, Apennines pecorino cheese sauce is next. While the pasta, similar to linguini, is delicious, it is the aroma and flavour of the black truffle that takes centre stage. As an ensemble, the cheese, truffle and pasta is a delightful concoction that tantalises our palate. The accompanying wine is a fine 2012 ‘Curtefranca’ Ca' Del Bosco Chardonnay from Lombardy in northern Italy, which competently matches the dish. For the entrée, there is a choice of Rombo E Carciofi, Turbot fillet, saffron potato, artichokes, chickpea cream, and Vitello Rosa, pink veal

tenderloin, anchovy bread powder, eggs, mustard compote, vegetable cream. The fish fillet is tender and firm, and the sauce offers a nice creamy flavour. The texture of the veal is different than usual, as the combined bread powder, eggs, and mustard compote tenderises the meat nicely, providing a grainy texture. The meat is tender, just the same. As expected a red wine is paired, a 2012 Elio Altare Barolo from Piedmont. The famed Barolo wine needs no introduction and is reassuringly excellent, its Nebbiolo grape known for its strong tannins, high acidity and strong scent. The Barolo rightfully deserves its lofty reputation as a premier wine of Italy. For after-dinner treats, we have Formaggi Italiani, a selection of Italian organic cheeses, Cocco E Tapioca, coconut and tapioca soup, caramelised bananas, espresso ice-cream, Piedmont hazelnut chocolate. It would be remiss not to mention the excellent and attentive service we received, as we were thoroughly impressed by the staff’s knowledge of both food and wine. The tasting dinner is priced at $748 (four-course menu including dessert), $880 (five-course dinner including dessert), and $950 (six-course dessert including cheese and desserts). Wines are not included. Treat yourself to a most enjoyable experience of fine Italian dining at Angelini with your friends and loved ones! ■

Rock Salt Japanese Restaurant 岩鹽日本餐廳 Located at Causeway Bay’s Lee Theatre Plaza, a highend shopping complex in the heart of the famed shopping district, Rock Salt is a contemporary Japanese restaurant offering a wide range of Japanese cuisine items including sashimi and sushi, Kamameshi (steamed rice with meats), deep fried tempura, salads and appetisers plus its signature rock-salt grilled seafood. The spacious restaurant also offers a fine collection of Japanese sakes and wines. The dishes we tried were uniformly fresh and tasty and quite reasonably priced, with several that are innovatively prepared. We started with Seasonal Sashimi Plate (388), Prime Fatty Tuna ($180), Botan Shrimp ($148) before embarking on its signature rock-salt grilled items which are prepared at the table: The Grilled in Sauce Plate ($580) include Live Japanese Scallops, King Prawn, Oysters, Clams, Grilled Carb Plate and Snow Crab with Baguette. Fried Foie Gras & Beef Tenderloin Rice in Kamameshi ($128) is next, before we round out our meal with Orange Sorbet ($45) and Tea. A fine bottle of Dassai 39 Jumai Dacinjo sake ($550 for 720 ml) accompanied our delicious meal. To enjoy a good quality Japanese meal in a comfortable setting, Rock Salt is a worthy consideration indeed.

The spa has recently introduced a new treatment series to deliver immediate corrective results using the non-invasive procedures of CACI, the leading UK anti-aging technology developer. The CACI system uses microcurrent therapy in which tiny electrical impulses mirror and work in harmony with the body's own bioelectrical field. The technology has proven benefits in softening lines and wrinkles while stimulating the production of collagen and elastin. We chose the Ultimate Turnaround treatment, which uses ultrasonic peeling to revitalize and cleanse the skin. A special wrinkle comb is applied to target fine lines and trigger tissue repair for skin healing. This is followed by jowl-lifting and eye treatment ease drooping jowls and soften the fine lines around the eyes. Next, a microcurrent facial is performed to lift, firm and tone sagging skin. The 90-minute treatment is wrapped up with a face massage which stimulates circulation and lymphatic drainage. The effect of all these treatments can be felt immediately, as the facial skin becomes noticeable more supple. Guests can use the spa's other facilities including the Harbour View Relaxation Area, Aroma Steam, Stone Saunas and Experience Showers. Michel Scheffers 邵銘森 My aspiration was to be a chef at one of the best restaurants in Holland. I did just that with a fine dining restaurant at the World Trade Centre, and was later promoted to F&B manager. Then I was invited to work at a restaurant in Thailand that my friend bought. I decided to do it since I didn’t have any bridges to burn back home. An intended one-year stay turned longer, then I met my girlfriend, now my wife, and Thailand became a big part of my life. I joined a Thailand-based hotel group, then later the Hilton Group where I worked in Cambodia, opened a hotel in Delhi, then Pattaya, before Shangri-la got in touch with me. With Shangri-la, I worked in Sentosa, Singapore, then came to Hong Kong as the Hotel Manager of Island Shangri-la before I was promoted to the exciting role of General Manager at Hotel Jen. I start with my favourite part of the day: walking around the hotel, meeting our guests and colleagues. It is always such a pleasure to hear how much our guests are enjoying their stay with us. During weekends, I love to stroll around Café Malacca, which in my opinion is the best Malaysian restaurant in the city, and see many familiar local guests visiting us from all over to try our authentic Malaysian and Singaporean cuisine. I believe leading by example and being ‘on the floor’ amongst the teams, while providing guidance, direction and showing constant support for all is of crucial importance for any General Manager. “If you can encourage and help others to be successful, they will contribute to the success of your hotel and your vision.” Hotel Jen is inspired by a virtual persona, Jen, who is a friend to every guest that stays with us. The brand is about showing our guests true hospitality and welcoming them to our home the way a friend would do. And that’s why everyone in our team, along with being trained to provide first-rate service, is a local expert who can introduce the city’s and neighbourhood’s highlights. And our location is truly a gem, not only for business travellers or tourists, but also for locals who want to explore our neighbourhood, which has a wonderful mixture of vintage and new, imbued with an authentic East-meets-West culture. Local restaurants and traditional craft shops can be found alongside trendy bars and unique art galleries. In Western District, there’s something for everyone. My personal recommendation for tourists: 1) Ride the entire historic Ding Ding tram going through the city streets on Hong Kong Island; it is a great sightseeing experience. 2) Take one of the many guided walking tours, be it cultural, historic or architectural; there is so much to see! 3) Hike one of our many trails in Hong Kong, which are all clearly marked, and most of them provide visitors great vistas of our beautiful islands, beaches or mountains.
