We welcome our visitors this month with a double happiness greeting: Happy New Year and Kung Hei Fat Choy! What a way to kick off a new decade! For 2020, the Lunar New Year falls in January, which means Hong Kong will be celebrating both the new years with gusto this month. The highlight is undoubtedly Lunar (Chinese) New Year, the most important holiday in Hong Kong and other Chinese communities worldwide. Over the fourday holiday period from 25 January, locals will observe a host of celebratory customs. The city itself goes into a festive mode, topped by the Cathay Pacific International Chinese New Year Carnival, which features festive installations, daily parade performances, food booths, entertainment and a web AR game. There are other festive events and customs you will want to experience, including visiting the flower markets on Chinese New Year’s Eve, seeking good fortune at Wong Tai Sin Temple, or visiting the iconic wishing tree at Lam Tsuen. Please check out our cover story on page 10 for more details. You’ll doubtless want to take home souvenirs for friends, family and loved ones. As Asia’s shopping mecca, with countless shops and malls to explore, finding the right souvenirs can be daunting. A slew of musical performances are lined up this month in the city. Don’t miss a rare performance by the National Folkloric Dance Troupe of Egypt who will showcase traditional Egyptian dancing – an essential component of the country’s rich cultural heritage. Superstar pianist Lang Lang joins up with conductor Jaap van Zweden of Hong Kong Phil for a special concert to celebrate the 250th anniversary of Ludwig van Beethoven’s birth. Hong Kong Open (Golf)
First held in 1959, the Hong Kong Open is the city’s oldest professional sporting event and one of its most important. Known as the 'jewel in the crown' of Asian golf, it has a rich history of winners, including major champions. In addition to being part of the Asian Tour, the tournament has formed part of the European PGA Tour since 2001 and attracts some of the world's best golfers.

Hong Kong Chinese New Year
The Hong Kong 100 is an ultra-endurance race and part of the Ultra-Trail World Tour (UTWT). First held in 2011, the race has quickly become one of the most popular events in the global trail running calendar. The 56km and 103km courses are based around Hong Kong's famous MacLehose Trail and cover some of the most beautiful countryside scenery in Hong Kong, with panoramic views of the busy city. The race has been elevated to Series level in the UTWT, making it the only Series event in Asia.
Experience Hong Kong during Chinese New Year, the city’s biggest and most colourful festival! It’s impossible to not get caught up in the energy as you squeeze into crowded temples to pray for good fortune, browse festive flower markets selling blooms, photograph the shock-red lanterns that adorn the city, and much more.

Hong Kong's early photographers had to work hard to take a picture, writes Arthur Hacker

hotography today is ubiquitous. We each carry at least a mobile phone with a camera, and often a compact digital camera or classic SLR. However, in Victorian Hong Kong, owning a camera was comparatively rare as they were not only very expensive but also extremely difficult to operate. When John Thomson went on a photographic safari to China in the 1870s, he needed 18 coolies to carry his equipment. ln this digital age of autofocus, auto-exposure and miniaturisation, not to mention the super-convenient point-andshoot phone camera, it is difficult to envisage the problems faced those photographic pioneers. In Hong Kong at the time, picture postcards were not even available. So how did tourists cope? The answer is that they bought photographs taken by professional photographers. In 1860, two Americans, a Mr Weed and a Mr Howard opened a shop in Hong Kong selling photographs. Inadvertently they established a curiosity that became known as "The Firm". lt was not a firm at all, but a collection of photographic negatives. ln 1861, the partners sold their stock to their manager Milton J. Miller. Miller's portraits of Chinese Mandarins and their families are quite brilliant. He later acquired

some negatives of Peking from Felix Beato, who had photographed the battlefields of the Arrow War. Miller, Thomson, and Beato are regarded as the three great Victorian photographers of the Far East. ln 1864, Miller moved on and ownership of the operation passed first to his former associate S. W. Halsey, then to a J. A. de Silveira. Later, The Firm was owned by Thomson and William Pryor Floyd. lt operated out of the Victoria Photographic Gallery, at 62 Queen's Road, approximately where Lane Crawford department store stood, until it changed to Zara a few years ago. ln those days, photographs were printed from glass negatives. Photographic dealers like Floyd and Hong Kong's leading Chinese photographer, Afong Lai, sold prints in their shops. Customers selected the pictures they liked, together with an exotic Japanese lacquered photo album, and the shopkeeper pasted the result into the album, often in no seemingly logical order. Thomson sold many of his negatives to Floyd when he departed Hong Kong in 1871. As the most famous Hong Kong photographer of the period, his work is particularly valued by collectors. After several more owners, The Firm's negatives are thought to have passed

Photography was a hazardous business in those days. Thomson relates that the Chinese looked upon having their picture taken as: "Some black art, which at the same time bereft the individual depicted of so much of the principal of life as to render his death a certainty within a short period of years." There was also a popular theory that camera lenses were made out of babies' eyes. Consequenily, photographers were liable to be attacked by superstitious mobs.
那年頭，沖印照片用的是玻璃負片。像佛洛伊德般的照片商人，以至當時本 港著名攝影家 Afong Lai，都會在自己的店鏑內售賣所沖印的照片。顧客會先選 定喜歡的照片，和富於異國情調的東瀛漆皮相簿，然後店員便會把照片貼在相簿 內，但並不會按特定規則安排次序。
Adding to the difficulty was the collodion wet-plate process that was used at the time. lt required a glass plate negative to be sensitised and developed within a few minutes in total darkness. Getting the chemicals just right created even more problems. On a visit to Taiwan, Thomson described how the water was so alkaline on the island that he had to "employ a goodly supply of Chinese vinegar to turn it slightly on the acid side".

The final pictures were printed from the glass plates on thin plain paper sensitised with a silver nitrate solution and coated with a layer of egg white and salt solution. All the pictures illustrating this article were produced by this method and are known as albumen prints.■
湯姆遜在一八七一年離開香港前，把許多負片賣了給佛洛伊德．湯姆遜是當 時香港最著名的攝影家，收藏者對其作品都珍而重之。佛洛伊德在一八七四年將 「公司」賣予魯斯費爾特 (Email RustfeIdt)，該批負片據說輾轉塔入 Afong Lai 手中；Afong Lai 的店子一直經苜至二次大戰爆發。
攝影師當年面對的另一難題，是使用羅甸濕版沖印照片的過程。那必須在完 全漆黑的環境下，讓玻璃負片感光並即場沖洗。單是化學藥品調校正確的劑量， 便已教人大傷腦筋。湯姆遜描述當年他到訪台灣時，就曾面對過島上水質鹼性過 高的問題，幸得「天賜唐醋之助，才能稍稍將之中和」。 沖印照片的最後步驟，是把玻璃負片上的影像，印到一張以硝酸銀溶液作感 光劑，並以蛋白混和鹽液作塗層的懣紙上去。這兒刊登的所有插圖，都是以此方 法印製，一般稱為蛋白照片。■

In addition, the city gets into a festive and celebratory mood with visits to flower markets, temples and iconic landmarks for good luck. To commemorate the 25th edition of the unique Hong Kong Chinese New Year celebration, the Hong Kong Tourism Board is hosting a four-day extravaganza—the Cathay Pacific International Chinese New Year Carnival—at the West Kowloon Cultural District, featuring festive installations, parades and performances from international and local groups, food booths, entertainment and a web AR game. Wish-making at Lam Tsuen Wishing Trees 黃到林村许愿树抛宝牒 During Chinese New Year and other festivals, many Hongkongers pay a visit to the Lam Tsuen Wishing Trees. Traditionally, people would write their wishes on joss paper and throw it onto the tree after paying their respects. It’s believed that the wishes will come true if the joss paper doesn’t fall from the tree. Due to their popularity, the trees were at risk of being drowned in paper, so nowadays wishes are made by tying joss paper to nearby wooden racks or imitation trees. 每逢過年過節，很多香港人會到林村的許願樹前參拜許願，並將寶牒拋上許願 樹（為了保護許願樹，現在以仿真許願樹取代）。你也可以探訪這個喜氣洋洋 的村落，把願望寫在寶牒上，並繫上重物，誠心參拜後將它拋到樹上，不跌下 來就代表願望可成真。

Head to any major supermarket, such as Wellcome or ParknShop, and grab a few bottles. Lee Kum Kee has a large collection of chili and oyster sauces. The Doubledboiled Abalone Soup, Kelp, Goji, Baby Coconut ($388 per person) is velvety smooth with a yummy light sweet taste; Braised Snake Soup, Fish Maw, Fungus ($348 per person) is excellent and perfect for the winter, and so is Braised Lamb Brisket, White Pepper, Chinese Herbs ($188 per person) which is quite warming. You can tell Chef Hung has mastered the soup-making technique.
Our choice this time is Rùn, the Chinese restaurant. Rùn serves Cantonese cuisine, including a full complement of dim sum dishes during lunch. Rùn’s menu is devised by Hong Kong–born Executive Chef Hung Chi-Kwong, who has extensive executive experience at several acclaimed Chinese restaurants in Hong Kong. Chef Hung is known for his mastery and contemporary interpretation of Cantonese cuisine – notably braised dried foods, seafood and double-boiled soups, which imbues Rùn’s cooking philosophy in this new endeavour.
We tried several more excellent dishes: Pan-fried Japanese Scallop, Champagne Sauce ($228); Panfried Bean Curd Shrimp Mousse, Morel Mushroom, Bamboo Fungus ($228) – a refreshing vegetable dish; and Roasted Salted Crispy Chicken (Half-piece) ($298). The skin of the chicken is baked to golden crispy, its taste is absolutely delicious, as is the savoury, tender meat – a real treat!
Rùn’s design is a modern take on the architecture of a traditional Chinese tea pavilion. Its lighting fixtures take after classic Chinese lanterns housed in moulded glass cubes and bronze, adding to the elegance of the restaurant. Our visit was to sample some of Rùn’s signature and more popular dishes. For appetisers, we tried Marinated Smoked Foie Gras ($198), a delicious way of fixing the foie gras; Deep-fried Lobster Spring Roll, Black Truffle Sauce (3 pcs) ($168), in which the skin is crispy and crunchy while the lobster meat remains tender and succulent; and Barbequed Iberico Pork, Honey ($368) with tender and flavourful meat.

We wrapped up our meal with Fried Vermicelli, Crab Meat, Shredded Pork, Egg ($288) and a choice of desserts, all of which comprise quite a meal in themselves. Rùn also offers a Tea-pairing menu for lovers of Chinese tea guided by a certified tea sommelier. Be sure to ask for the details if you are interested. We were truly impressed with the quality of the food at Rùn; it’s destined to be one of those dining hotspot that you can’t afford not to know. So for a memorable Cantonese meal while you are in Hong Kong, and to keep ahead of the curve, be sure to give Rùn a try.■

ordic cuisine has long been on our culinary bucket list. So when Frantzén’s Kitchen, a cosy Swedish bistro tucked away in the trendy Sheung Wan neighbourhood above Hollywood Road, was recommended to us as a worthwhile place to visit, we jumped at the opportunity. The restaurant is the brainchild of celebrated Swedish 3-Michelin-Starred chef Bjorn Frantzén, who operates the highly acclaimed Frantzén Restaurant in Stockholm, Frantzén’s Kitchen offers a relaxed and intimate setting in which diners can enjoy a curated menu created by Chef Frantzén and his Hong Kong executive head chef Jim Lodahl. The restaurant offers two distinct dining ambiences – an open kitchen counter for casual dining and a comfortable dining room for more intimate dining occasions. A friendly feature is a printed menu that serves as a placemat, with each dish neatly illustrated, complete with description of its ingredients. Frantzén’s Kitchen offers both tasting and à la carte menus. For our dinner, we chose the restaurant’s 9-course Tasting Menu ($1,188). There are two wine-pairing options: 4-glass pairing ($688) or 7-glass pairing ($888). We wisely chose the former as it turned out the pour was quite generous. Two snacks got our dinner started, together with a glass of NV Champagne Thienot from Reims: Roasted Onion Chawanmushi, oxtail jus and vendace roe, and French Toast Truffle – balsamic vinegar, aged cheese and truffle tea, a signature concoction of chef Frantzén’s. Both are bite-sized, and we particularly like the rollercoaster taste experience of the French Toast with its mix of cheese, truffle and the vinegar flavours. Next came three more starters: Pumpkin, Broccolini, Truffle, pumpkin and hazelnut granola, truffle vinaigrette and vasterbotten cheese; Cold Poached King Crab, tomato and peach ceviche, black pepper, almond emulsion, wasabi and ginger; and Tartare of Te Mana Lamb, black garlic,

cucumber, caviar and pistou. All three dishes were new to us and tasted superb. We liked the citric flavour of the king crab meat, which comes with a zesty and slightly spicy bite. The lamb tartare was also a treat as the savoury caviar blends well with the tartare. For the wine, we had a 2017 Domaine Ostertag “Fronholz” Riesling, from Alsace, a light sweet wine that served the dishes well. Next came Arctic Char goat beurre blanc, rosemary, trout roe, pickled turnip and seaweed. The cold-water fish meat is tender and succulent, enhanced by the rich goat beurre sauce. The Velouté white onion, liquorice and smoked Marcona almond provided a nice break before we tucked into Magret of Duck raspberry “hot sauce”, smoked tomato, sticky beet, grilled rose and sprouted almond. The succulent duck breast is excellent and nicely accented by the raspberry sauce. A glass each of 2017 Kumeu River “Hunting Hill” Chardonnay, Kumeu (Auckland), and 2017 Yelland & Papps “Second Take” Mataro from Barossa Valley in South Australia – a rich and intensely flavoured red – complemented the meal well. We finished the dinner with Toasted Sesame Ice Cream, with grilled marshmallows & salted plum sauce, which sumptuously capped this delicious and enjoyable meal. If you are looking for a relaxed and enlightened dining experience with innovative Nordic dishes, Frantzén’s Kitchen is a worthy choice. Be sure to book in advance though.■

Red Lobster
The much-anticipated recent opening of Red Lobster in Hong Kong was greeted with great fanfare by the local foodie community. The famous USbased seafood restaurant chain, founded in Lakeland, Florida in 1968, is now the world’s largest seafood restaurant company, operating around 750 outlets in 11 countries. The Hong Kong branch, located in Causeway Bay, is a partnership with FWM Restaurants Group, which operates internationally branded restaurants in Greater China. When you think of Red Lobster, obviously its iconic steamed lobster comes to mind. The company sources all its shellfish – lobster, crab and shrimp–live and directly from America, and uses USDA beef. For its Hong Kong start, Red Lobster has created several locally inspired dishes that take advantage of Hong Kong’s own rich seafood culinary culture. These include Typhoon Shelter Lobster ($358/lb), umami-rich Salted Egg Yolk Shrimp ($48), which we tried, and Milk Tea Panna Cotta ($38). Also noteworthy are Red Lobster’s famous warm house-made Cheddar Cheese Biscuits, which are served complimentary in unlimited quantities – they were delicious and addictive. It is the lobster that we came here for, though, and ours was a whopping three-pounder. The Live Maine Lobster Steamed ($318, $668 and $998 for 1, 2, 3-lb size respectively) is fetched straight from the tank, steamed and brought to the table. In Hong Kong, the steamed lobster is de-shelled by the staff at the table. It was everything we expected – tender succulent meat, especially the fresh sweet claw. For good measure, we also tried Red Lobster’s surf-and-turf, Grilled Sirloin (7oz) and Lobster Tail ($298), which was outstanding. A filling dessert, Chocolate Tidal Wave ($78) wrapped up our sumptuous meal. Red Lobster serves a variety of cocktails and specialty drinks, including Classic Margarita and Bloody Mary.
Red Lobster’s debut in Hong Kong is destined to be a success as it fills a clear need – hearty and yummy seafood served American-style that offers consistent quality. The Tea Room at One-Eight-One Hotel 壹八壹冰室
In Hong Kong, dining retro-style is the latest trend, especially at outlets that hark back to the old cha chaan teng style café, lovingly called “bing sutt” or literally ‘ice café’. The latest stellar addition is Tea Room, an all-day dining concept located at the newly opened luxury boutique hotel One-Eight-One Hotel in the Western District. Set in a stylish and refreshing environment, The Tea Room serves authentic old Hong Kong favourites as well as contemporary creations, including a range of dishes well known at regular Cantonese restaurants. The Tea Room’s décor is eye-catching, the art deco–style black and white chairs look sharp in the brightly lit, spacious restaurant. A fascinating collection of pictures of old Hong Kong on the walls helps bathe the setting in nostalgia. We sampled dishes across the range of food on offer, starting with Boneless Sichuan Spicy Chicken ($98), which is slow cooked at a low temperature and seasoned with home-made chili sauce. Next was Cheese-Baked Curry Chicken Rice with Japanese Onsen Egg ($128), a real comfort food. Steamed Lobster & Chicken Glutinous Rice ($400/$800 for 2 and 4 persons respectively) is also a real treat, as the rice nicely absorbs the tasty flavours of the chicken and lobster. The Doubled-Boiled Soup of the Day ($88 per person), which uses seasonal ingredients like whelk, conpoy and abalone, is yummy. Other dishes we tried included “Golden Brick” Fried Tofu in Mushroom Sauce ($108), Sour Prawns ($98) and Steamed Giant Grouper Fillet with Mungbean Sheets & Preserved Vegetables ($480), in which the salty vegetables blend well with the tender grouper fillet.
It would have been remiss to pass up the old-style Hong Kong drinks, which include Red Bean Frappe with Italian Gelato ($40) and Black Cow (Coca-Cola with Italian Gelato) ($40) with the Italian Gelato specially made for The Tea Room by 2/3 Dolci. Dining out at The Tea Room is a pleasure – down-home local food, a charming ambience and reasonable prices. Kido 木户
A recent addition to the legion of quality Japanese restaurants in Hong Kong is Kido, a traditional Fukuoka-style “hakata-ku” yakitori grill bar located in Tsim Sha Tsui. What makes Kido special is its speciality – yakitori chicken using prized female Yamato Nikudori chicken specially raised for its strong flavour and juicy texture and sourced from chicken farms around Nara City in south-eastern Japan. Kido also serves a variety of other meat and vegetable skewers. The restaurant is helmed by Executive Chef Kimura Junichiro, whose father pioneered many of the menu items at his legendary restaurant in Kyushu. Kido also prides itself on its grilling technique, which uses odourless high carbon “binchotan” charcoal made from Japanese oak. The restaurant offers both a communal counter and dining booths for privacy. Some of the dishes we sampled included Assorted Pickled Vegetables ($72) and Fukuoka Fruit Tomato ($78) to start. For chicken items we tried Kido Home-made Chicken Meatball with Egg ($36), Japan Yamato Nikudori Chicken Heart ($39), Japan Yamato Nikudori Chicken Gizzard ($39), Japan Yamato Nikudori Chicken Gizzard ($39) and Chicken Wing ($34). Other skewers worth asking for are Fuji Apple and Sangen Pork Roll ($33), Avocado and Sangen Pork Roll ($36), Deep Fried Scallop ($88), Truffle in Deep-fried Potato and Deep Fried Prawn. Kido’s signature Miyazaki Fried Chicken Tartar Sauce “1956” ($98), featuring its secret family recipe, is a must. Also excellent is Inaniwa Udon Noodles with Yuzu and Vegetables ($78).
A Yakitori bar like Kido is perfect for drinking Japanese sake as you enjoy the food, and the restaurant offers a nice selection of quality sakes from quality distilleries which include Koshi no Yuki Tsubaki Tsugi no Tamayura Junmai Daiginjo ($880/720ml and $1180/1,800ml), Zaku Miyabi no Tomo Nakadori Junmai Daiginjo ($680/720ml and $1,280/1,800ml) and Tsushimaya Yamada Nishiki Junmai Daiginjo ($880/720ml), among others. Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Combining aesthetics, practicality, and philosophy, censers are of high artistic and historical value. The Beauty of Ladies’ Ornaments from Asia and Europe 17 Sept 2019 – 27 Feb 2020 Liang Yi Museum is delighted to present Crowning Glory: The Beauty of Ladies’ Ornaments from Asia and Europe, a landmark exhibition exploring the role women’s clothing and accessories played in the social construction of gender and identity from the late imperial era in China and Japan to the early modern period. The heart of the exhibition sees a display of selected artefacts including wooden objects, textiles and hair ornaments, used and worn by traditional Chinese and Japanese women from the 17th to the 19th century. The last section of Crowning Glory features a selection of European vanities from the Museum’s permanent collection, with a particular focus on objects influenced by Chinoiserie and Japonism from the 1920s to 1930s.

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. With the aid of interesting hands-on exhibits and advanced equipment coupled with lighting effects and environmental decorations, the exhibition vividly introduces astronomy and space science. The "Hall of the Cosmos" showcases the Universe from near to far, travelling from the solar system that we are living in, to the stars, Milky Way and galaxies further away and exploring the science and evolution of the universe all along the way. EXECUTIVE DIRECTOR
Christopher Liu, Executive Director of the newly opened OneEight-One Hotel and Serviced Residences, shared with us his thoughts on his career and his new hotel. 新開業的“ One-Eight-One 酒店及服务式住宅”執行董事 廖坤城先生與我們分享了他對酒店業和自家新酒店的看法。 My family wanted me to be a lawyer. I literally had my legal career mapped out at six months old when they signed me up to enrol at Eton, then Oxford. I didn’t attend Eton, but I did read law at Oxford. I joined Deacons in the corporate finance practice and was a partner at 31. I felt burned out, So I was looking to do something else. I chose to go back into the family business and look after the real estate side. I was influenced by my mother’s family, with a long pedigree in real estate development. But I had to learn everything from scratch. And that’s how I got involved in this hotel. It was a commercial building that the family had owned for decades. Originally a rice storage facility, it was converted into office premises in the 1990s. When we decided to redevelop it again, we thought a hotel made the most sense given our location; and a good hotel is something we could leave as a legacy. We operate the hotel as a 4-star luxury boutique hotel. To stand out among the other hotels in the area, we chose to make our rooms extra large, and all the rooms enjoy harbour views. We also focused on the bathrooms – having a comfortable bathroom makes a huge difference to the visitor experience; we strive for a homely hotel: our design draws in the mountain and harbour and we use a lot of wood and earthy materials to create a warm, easy feel. Our motto is ‘a home away from home’. As a single property hotel, we need to stabilise our occupancy, so we are operating it as hybrid, with a balance of long-stay guests and free independent travellers. To keep it convenient for long-stay customers we have expansive F&B options – the Tea Room, with a neighbourhood Bing Sutt café concept, is our all-daydining outlet; the Common Room serves Italian cuisine complemented by French and English selections; and there is a jazz bar on the top floor. I dived into the F&B business with a passion: a few years ago, in my first move, I brought over Trattoria del Pescatore from Italy, which is now the Common Room. Today, I take care of the company’s overseas investments, the hotel business and the F&B business – it keeps me plenty busy. I love karaoke and playing mahjong, but don’t have time for them anymore. I still love to cook and eat – I’m a sucker for carbs. You can say my hobby now is work – I enjoy the little projects that I can complete and get satisfaction from. I love Hong Kong because it’s so dynamic, so convenient and so efficient. And of course it is home for me, where my family is.
