And our city decked out in bright lights and festive colours is also perfect for taking cool pictures to post on your favourite social media platform. We recognise the growing segment of travellers looking to scour their travel destination with the aim of capturing that special picture to post online for bragging rights and peer approval. Nowadays, “instagrammers” and the rest can achieve instant fame and even fortune as social media stars posting iconic or cool photos that attract serious followings. And Hong Kong is just the right city to find unique and interesting photo spots. Please see our feature story on page 14 for some recommendations. It’s not just about Chinese New Year. The city hums along with events and performances to discover and enjoy. Rugby fans are in for premier action at Rugby Cup 2018 when Racing 92 from France take on Cell C Sharks, the first-ever South African Super Rugby team to play in Hong Kong. It’s also time for the performance of the timeless Swan Lake, Ballet Classic for Children, performed by the Hong Kong Ballet. This abridged version is suitable for children of all ages, and the adults will love it too. The 46th Hong Kong Arts Festival kicks off later in the month. A wide-ranging slate of music, opera, drama and dance is on tap. If you happen to be in town, be sure to take in a performance or two, whether an old favourite or something off the wall. So, between Chinese New Year celebrations and marquee events and performances, Hong Kong will be buzzing as usual this month. One of the most characteristic Chinese New Year celebrations in Hong Kong, the festival attracts hundreds of thousands of locals and visitors from all over the world to Lam Tsuen every year. Internationally acclaimed Ukrainian-British violist Maxim Rysanov returns to collaborate with the Hong Kong Sinfonietta and Music Director Yip Wing-sie in a performance of the Asian première of Pēteris Vasks’ Concerto for Viola & String Orchestra. o sang a temperance reformer, his views shared, if not as singlemindedly, by millions today. Thanks to tea from China, two Scotsmen with links to the brew made a lasting impression in the UK, and around the world. In Scotland, resistance to the Act of Union in 1707, which formally united Scotland and England, led to widespread local rebellions. These were brutally put down and caused many Scotsmen to consider emigration, an attractive option to remaining at home in poverty. No wonder that many sought their fortune overseas. Generations of Scots sought the opportunities offered by the China trade and were well represented on the China coast, playing a major role in both the opium trade and the setting up of a permanent trading post in China, the British colony of Hong Kong. The Qianlong emperor had confined trade with the west to Canton (Guangzhou) in 1759 and the city grew increasingly prosperous. By the early 19th century it had become the largest city in southern China, the second largest in the country after Beijing, and with a population of nearly a million, it was one of the great commercial entrepots of the world. The British limited the trade with China to The East India Company but gradually private

traders managed to get a foothold and after 1854, when the EIC was abolished, they had free rein. Fankwaes, or ‘foreign devils’, lived and traded from factories (named after the traders or factors), which were part-warehouse, partresidence, built on the banks of the Pearl River. The British had first arrived in Canton in the 17th century and their factory was the most splendid. They bought tea, porcelain, and silk and paid for them with Manchester cottons and other goods. But the Chinese were not particularly interested in these and often demanded payment in silver. This changed when it was found that opium had a ready market in China and the balance of payments altered in favour of the West. It was the West’s insatiable demand for tea that kept the traders busy in Canton. This had started in 1664 when Directors of the East India Company had brought back a gift of tea, 2lb 2oz, at a cost of £4 5s (£4.25), and presented it to the King of England. The fashion for drinking tea quickly spread from the court to the rest of society. Its high cost for home consumption meant it was kept under lock and key. Tea caddies were one of the other items that were shipped back to the West.

The English East India Company held a monopoly of trade in Canton, but so-called ‘country traders’ were allowed to carry opium from India, in exchange for tea in China. The most famous were a Scottish duo, William Jardine and James Matheson. Born in 1784, Dr William Jardine was a surgeon from Lochmaben in Dumfriesshire. Dr Jardine became a surgeon’s mate with the East India Company and travelling to China he saw the opportunities of trading there. He turned to trade in 1817 and by 1824 had taken control of an ailing old firm, Charles Magniac & Company. Another Scotsman, James Matheson (1796-1878), arrived in Canton in 1820. He came from Lairg in Sutherland. An urbane and go-ahead young man, Matheson founded the first English language newspaper in China, The Canton Register, in 1827, and the following year joined forces with Jardine. They dropped the name Magniac and in 1832 founded Jardine Matheson & Company. Jardine, Matheson & Company had their premises in a factory next to the creek. The

firm was called E-wo, in Chinese, meaning ‘justice and peace’, and the firm still carries that name. The Scottish thistle is its emblem.

When the East India Company’s monopoly was revoked, Dr Jardine became the most powerful westerner in Canton. In one season he had 75 ships to his consignment. The company prospered and is still a major employer today in Hong Kong and in many other parts of the world.

After the founding of the British colony the company moved to Hong Kong and purchased the first plot of land there in 1841 at East Point, now the site of the Excelsior Hotel in Causeway Bay. It had an extensive presence there with its own wharf and warehouses with a residence on the hill above.

William Jardine died in London in 1843. Sir James Matheson retired from the Far East in the following year and in 1848 built himself Lews Castle at Stornoway in the Western Isles. He had bought the whole island a few years previously. Surrounded in a wooded park, the battlements still today rise high against the skyline. ■

Lam Tsuen, in Tai Po, is an ancient village built 700 years ago during the Southern Song dynasty (1127–1279). Relive their traditions by throwing placards onto the wishing tree, and shoring up some good fortune at the Tin Hau Temple. You can also get an up-close look at the splendid floats when they go on display at Lam Tsuen in Tai Po from 17 February to 4 March, during the Hong Kong Well-wishing Festival. here was little question we would choose Chinese cuisine as the target of our next culinary quest to celebrate Chinese New Year. The challenge is always deciding which to select amongst so many worthy options. Ming Court, the one-Michelin starred restaurant at Cordis Hong Kong in bustling Mongkok serving exquisite Cantonese food, and a pioneer in pairing fine wines with fine food, turned out to be an inspired choice.

Fried, a delicate and delicious combo of tender cod fish fillet and crispy fried shrimp. That set us up for the Crab Meat, Crab Roe, Pea Sprout, Braised, a light and tasty dish that was quickly devoured.

Ming Court’s décor is elegantly modern Chinese, its seating is spacious and comfortable, its service is attentive and friendly, and its dishes are prepared exquisitely for flavour and presentation. The restaurant has a great selection of fine wines from all over the world, and the adroit use of an iPad allows guests to pick out the best for the dishes selected. We can attest that refined Cantonese food makes a great match for some of the best wines around.

For our dinner, we picked out a bottle of 2013 Bernabeleva, Carril Del Rey, Vinos De Madrid D.O., a dry, full-bodied Spanish red wine suitable for a mix of meats and heavier dishes. It turned out to be ideal for our occasion.

Our dinner started with the Ming Court Deluxe Appetisers, a trio of Suckling Pig; Roasted Pork Loin, Honey, Barbecued; and Layered Silk Tofu, Gold Leaf, Chinese Olive Rich Sauce, Chilled. The two roast meats are classic Cantonese starter dishes, their flavoured dictated by the quality of the meats and preparation method, which in this case are topnotch. Both meats are mouth-wateringly good, and the refreshing tofu helps balance the meat flavours. A light soup followed, the Chicken Consomme, Matsutake Mushroom, Bamboo Pith, Served in Glass Teapot. The soup base is flavourful but light, and really helps cleanse the palate. Next served was Cod Fish Fillet, Minced Shrimp, Spiced Shrimp,

The final dish was Fried Rice Sizzler, Silkie Chicken, Shaoxing Rice Wine-Scented, Crispy Conpoy, Wolfberry, Pine Nut, a creative concoction of ingredients that really add flavour to the rice, and fills you up just nicely.

To round out the meal, Sweet Wonderland, which is a selection of desserts, was served. They include Crystal Extravagance, Honey Bird’s Nest, Mango Pudding; Black Sesame Bean Curd Pudding; Chrysanthemum, Wolfberry Curd; and Berries, Taro Pudding. It is evident that Ming Court’s desserts are lovingly prepared and stack up against anyone’s – a fitting way to end a delicious meal. And the set dinner is priced only at HK$600 per person, which is eminently reasonable. For a memorable dining experience of elegant setting, attentive service, exquisite classic dishes and fine wines superbly paired, Ming Court is hard to beat.■

踏入農曆正月，《東方之珠》的香江美食之旅當然又要回歸中菜，我們最大的挑戰就是如何在芸芸出色的中餐廳中挑選出兩間介紹給讀

者。明閣位於繁華熱鬧的旺角，是香港康得思酒店的粵菜食府，餐廳多年來將廣東美饌佳餚和世界頂級葡萄佳釀完美搭配，因此明閣自然是我們的首選。

餐廳採用中式現代的裝潢，空間開闊，高雅舒適。侍應細心友好，每道菜式的味道和賣相均經過廚師精心研究。明閣精選一系列來自世界各地的佳釀，顧客可利用 iPad 挑選出和菜式搭配的美酒。經過我們的親身驗證，明閣的粵菜和這裡的獨特醇酒配合得天衣無縫。這頓晚宴以明閣三小碟拉開帷幕，包括化皮乳豬件、至尊蜜汁叉燒、金箔銀稔千層豆腐。乳豬和叉燒是粵菜常見的頭盤，肉的質素和烹調方法是這兩道菜的決定性因素，明閣在這兩方面都做得十分出色，乳豬和叉燒美味得令人停不下筷子，豆腐清新的味道和肉味平衡得剛剛好。接下來是清香四溢的茶壺松茸竹笙清湯，湯底清澈美味，喝完後口腔中留下淡淡松茸的香氣。緊接着出場的是龍皇披金甲，鱈魚肉質鮮嫩，炸蝦香脆美味，為下一道菜作了一個很好的鋪墊。蟹皇蟹肉扒豆苗味道相對清淡，但依然十分美味，很快就被我們吃光了。最後一道菜是窩燒滋補竹絲雞炒飯，創意十足的食材搭配為炒飯增色不少，也將我們的胃塞得滿滿當當。我們為這頓晚宴搭配的美酒是 2013 Bernabeleva, Carril Del Rey, Vinos De Madrid D.O.，這是一支口感濃郁的西班牙紅酒，適合搭配肉類和味道較重的食物，正好配合我們今天的菜式。為這頓晚餐作結的是甜夢仙境，當中包括多款精美甜品：燕晶凝、豆腐芝麻凍布甸、菊花杞子糕和香芋水晶糕，賣相精緻，味道清甜，作為飯後甜品再適合不過了。我們此次品嚐的晚市套餐價格為 HK$600/ 位，可說是物超所值。高雅的氛圍、細緻周到的服務、精美的經典菜式和特選佳釀，明閣定能為您營造難忘的用餐體驗。■ FEBRUARY 2018

ow about a relaxed and sumptuous Cantonese lunch atop a nice hotel with a commanding view of harbour? That defines dining in Hong Kong as well as is possible. Above & Beyond, a Chinese restaurant on the top floor of Hotel ICON in Tsim Sha Tsui East, in Kowloon, offers just that. The restaurant’s lofty moniker evokes images of awe and wonder, which is pretty spot-on once you are seated with the stunning views of the city skyline below you. And Hotel ICON is inspirational in its own right. As the only teaching hotel in Hong Kong – part of the Hong Kong Polytechnic University’s School of Hotel and Tourism Management, Hotel ICON is run professionally and commercially, yet offers internship for the school’s students – and it manages both well, judging by the popularity of the hotel and Above & Beyond. We were only too happy to validate the restaurant’s growing reputation.

Under Executive Chef Paul, Above & Beyond offers classic and contemporary dishes that we were eager to try. Our lunch started with a couple of dim sum offerings to whet the appetite: Steamed Mushroom Dumpling with Bamboo Piths (HK$48), and Steamed Pork Dumpling with Porcini (HK$58), both refined steamed starters.

Tea-inspired Puddings 茗茶布甸

In quick succession came the signature dishes. Crispy Chicken (HK$278/half and HK$518/whole) is clearly a top hit. As one of the defining dishes of the Cantonese cuisine, Crispy Chicken is a musttry for visitors, and we highly recommend this version – it’s hard to beat the crispy chicken skin fried (hang-fried, we were told) just right, with the chicken morsels tasting juicy and tender.

Wok-fried Diced Whole Abalone with Lily Bulbs and Asparagus in XO Sauce (HK $498), another highly touted dish, came next, and tastes as advertised. This is Cantonese food at its best – tender abalone with fresh vegetables carefully layered and stirred fried just enough to retain the freshness and tenderness, and all of it very healthy. Wok-fried Prawns with Tangerine Peel and Fermented Black Beans ( HK $278) is another delicious seafood dish. Perhaps we are prejudiced, but we do think wok-fry is the best way to prepare seafood and retain the meat’s freshness and suppleness. This dish is a textbook example of the beauty of wok-fried cooking. The next dishes rounded out the lunch: Stirred Kale with Ginger (HK$128), and Fried Rice, Diced ham, Egg White and Minced Ginger (HK$198). Did we also say that wok-fry is also the best way to cook green-leafed vegetables too? Well, it is, as attested by the crunchy texture and freshness of the kale. Three delicious desserts we managed to find room for rounded out our delightful lunch: Jasmine Tea Crème Brûlée (HK$68), Tea-inspired Puddings (Jasmine Chocolate, Iron Buddha Tea, Green Tea) (HK$98) and Sweetened Ginger Tea with Red Dates and Glutinous Rice Dumplings (HK$68). A visit to Hong Kong is not complete without a delicious Cantonese meal, whether lunch or dinner. Above & Beyond offers that, plus a view to set your heart pounding. Be sure to give it a try if you can.■

在酒店頂層一邊欣賞維港美景，一邊悠閒地享用粵式午餐，絕對是人生一大樂事。天外天是位於九龍尖沙咀唯港薈頂層的中菜廳，光聽

名字就覺得氣勢十足，可飽覽城市醉人天際線，甫坐下就能感受到這種居高臨下的感覺。唯港薈是一所與別不同的酒店，它是香港唯一的教學研究酒店，更與香港理工大學酒店及旅遊業管理學院攜手合作，為學生提供實習機會。唯港薈向來深受旅客歡迎，由此可見酒店在教學和商業方面的表現都十分出色，我們很高興有機會親身體驗。天外天的行政總廚是徐偉輝師傅，主打經典和當代粵菜，我們迫不及待想要品嚐。

首先是兩道精美點心：野菌竹笙餃 (HK$48) 和牛肝菌燒賣 (HK$58)，兩款點心均令人滿意，是很不錯的開胃菜。招牌菜脆皮炸子雞 (HK$278/半隻，HK$518/一隻) 絕對是最大的亮點。炸子雞是粵菜中最具代表性的菜式之一，也是遊客的必點菜式。廚師以吊燒的方式將雞的外皮燒至香脆，但雞肉依然嫩滑多汁，這道菜對廚師的功力要求很高。下一道菜同樣備受讚賞。XO 醬百合蘆筍炒原隻鮮鮑角 (HK$498) 充滿粵式風味，肉質嫩滑的鮮鮑配上新鮮蔬菜，這道菜絕對是健康人士之選。一頓好的粵菜怎能少了海鮮？陳皮豆豉炒蝦球 (HK$278) 正合我們心意。可能是偏見吧，我們覺得烹調海鮮的最佳方式就是炒，這樣可最大程度保持肉類的新鮮度和嫩滑度。這道菜的烹調水準極高，簡直是炒菜的最佳示範。接下來是薑汁炒芥蘭 (HK$128)和薑米金腿蛋白炒飯 (HK$198)。同樣地，我們認為烹調綠葉蔬菜的最佳方式也是炒，這從芥蘭的爽脆口感和新鮮度就可見一斑。最後當然是快樂的甜品時間：茉莉茶焦糖燉蛋 (HK$68) 、茗茶布甸 (茉莉茶朱古力、鐵觀音茶、綠茶，HK$98) 和紅棗薑茶湯圓 (HK$68) ，每款甜品都別出心裁，令人回味。沒有品嚐過粵菜的話怎能說您來過香港呢？無論是午餐還是晚餐，天外天都是您品嚐美味，欣賞美景的好去處。■ FEBRUARY 2018

Paradise Dynasty 樂天皇朝 Xiao Long Bao, or pork soup dumplings, originally from Shanghai, are a highly popular Chinese dim sum item the world over. A Singaporeanbased restaurant, Paradise Dynasty, has come up with some innovative variations of xiao long bao dishes. This popular restaurant chain operates outlets across 15 cities in Asia, including three here in Hong Kong. Its signature dish, xiao long bao, is offered in various types. In addition to Original Plain Xiao Long Bao ($58/6 pcs), you can order the Specialty Xiao Long Bao (HK$98/8 pcs, 8 Flavours: garlic, crab roe, cheese, Szechuan, black truffle, foie gras and ginseng). The different types vary mostly in the way the dumpling skin is made, and each has slightly different textures and aroma. Its ’ not all xiao long bao though, as the restaurant serves other excellent dishes. Well worth trying are Chilled Jellyfish and Seafood in Vinaigrette (HK$72), Scrambled Egg white with Fish and Dried Scallop (HK$82), Deep-Fried Mandarin Fish and Pine Nuts with Fruits (HK$238) which is excellent, and Poached Beef in Szechuan Spicy Soup (HK$188), another popular dish that is very well prepared. Nine Seafood Place 九號水產 Nine Seafood Place, a 50,000 sq. ft. fish market-cum-dining complex launched in July 2017 in Whampoa, has quickly become the latest landmark for foodies and seafood lovers. Nine Seafood Place houses several specialty restaurants, including a fine-dining Cantonese Seafood outlet, a Michelin Bib Gourmand Japanese sushi restaurant, a crab-themed eatery and a popular Ramen restaurant, offering something for everyone. It also showcases a 7,000 sq. ft. seafood street, selling live seafood as well as seafood products from all over the world. Several dessert shops and some children’s attractions round out the busy line up of shops.

This month, we tried out the food at two of its outlets. Sushi Shota 翔太壽司

air descend to the storage space naturally to help preserve the fish’s freshness. We were told that type of refrigerator is hardly made anymore. We chose Shota’s specialty, omakase, which is available for dinner only. Our pick, the Sakura Selection (HK$780/person) was superb. The meal includes a nice selection of sushi including fatty toro, tuna, sea urchin and salmon roe, a seasonal hot dish, hand roll, soup, Japanese steamed egg, and dessert. The sushi takes centre stage and all the pieces taste excellent – fresh and succulent. A set lunch option includes a selection of quality sushi (HK$250/10 pieces or HK$295/15 pieces) plus a complement of soup, steamed egg, salad and dessert.

The second restaurant we chose was Sushi Shota, which recently relocated to Nine Seafood Place. Sushi Shota has long been familiar to sushi lovers in Hong Kong, with a reputation for fresh seafood and meticulous preparation and attention to quality. The nicely decorated restaurant is clean and pleasant, with an open kitchen to show the sushi chefs at work. Shota flies its fish and seafood in daily and keeps the seafood in a special non-electric refrigerator where a big block of ice is put on the top level inside the fridge, letting the cold

我們的另一間嚐味餐廳是最近在九號水產重新開業的翔太壽司。對於壽司愛好者來說，這個名字一定不陌生，翔太壽司提供新鮮海產，精心準備食材，對品質有着極高要求，因而多年來一直享負盛名。餐廳乾淨明亮，設有一個開放式廚房，也是壽司的製作處。翔太壽司的海鮮每天由日本空運到港，保存在特製的無需用電的冷藏庫裡，冷藏庫上層放著一塊巨大的冰塊，冷空氣下沉至儲藏肉類的位置，幫助保持魚類的新鮮度。據餐廳經理說，這種人手造的冷藏庫現在已經幾乎沒有人願意造了。

29 Nov 2017-5 March 2018 The focus of this exhibition is on the Routes Network of Chang'an-Tianshan Corridor of the Silk Road which spans four mainland provinces (Shaanxi, Henan, Gansu and Xinjiang), Kyrgyzstan and Kazakhstan. Showcasing the cultural relics from China, Kyrgyzstan and Kazakhstan, the exhibition aims at illustrating the historical and cultural significance of this Routes Network. Some 160 invaluable artefacts have been selected from the four mainland provinces for display, over 50% of which are Grade-I National Treasures, while over 50 artefacts come from Kazakhstan and Kyrgyzstan. These exhibits include jadeware, textiles, sancai figurines, gold and silverware, bronze ware and large-scale murals. 我在奧地利長大，我的家人在那裡擁有一間酒店。年輕時候我就在酒店裡打雜，所以很自然地我加入了酒店業。我申請了奧地利的一間酒店學校，在那裡接受酒店業的培訓。畢業後，我曾在歐洲的很多地方工作，包括奧地利、德國和法國。一開始我是從事金融行業的，之後還嘗試了餐飲、銷售、市場和運營，最後我選擇了管理。因為我想嘗試在國外生活和工作，所以我接受了到香港出任總經理的邀請。那已經是13年前的事了，我現在仍待在這個崗位，出任香港金域假日酒店總經理是我第三次擔任總經理的職務。

I grew up in Austria where my family owned a hotel. I helped with chores as a teenager. So, it was natural to be in the hotel industry. I applied to a hotel school in Austria and began my training to be a hotelier. After graduation, I worked extensively in Europe, including Austria, Germany and France. I started out in finance but also worked in other areas such as F&B, sales and marketing, and operations, and eventually getting into general management. Then a general manager opportunity in Hong Kong came up and I took it, as I wanted to be abroad. That was 13 years ago, and I am still here, now on my third job, as the general manager for Holiday Inn Golden Mile. The Holiday Inn Golden Mile is truly a landmark hotel, being one of the earliest international brands in Hong Kong. Our location is as good as it gets, right in the heart of Tsim Sha Tsui. We have a special property, so our mission is to make sure the hotel stays at the forefront of the city’s competitive environment. Our new lobby looks modern and inviting, we have one of the largest executive lounges around, and we are working on improving our F&B outlets. Clearly, online travel agencies and social media and the internet are changing the way hotels operate, from enlarging marketing reach, managing occupancy and room rates, to being more responsive to guest feedback. I believe technology change will continue to drive the way hotels operate, including in-room services and entertainment. It can be very exciting. My favourite part of the job is to help develop a strategy and a direction for the hotel and work with the whole team to get there. The key is to communicate clearly the strategy and the overall goal and how they lead to clear expectations and action on everybody’s part. The hotel industry in Hong Kong is highly competitive. Unlike in Europe though, here the competition is driven through quality, which is much more desirable than, say, cost-based competition. It drives hotels to improve and upgrade their service standards, and that’s certainly the case with Hong Kong. The best part about Hong Kong is its sheer diversity: you can buy anything here; the food choices are incredible – from local food, street food, to restaurants serving the best regional and international cuisines. Also, best of all, in just 15 minutes, you can be away from the city and out on a hiking trail or a beautiful beach. Visitors sometimes don’t realise we have beautiful outdoors. And Hong Kong is incredibly safe to visit. My recommendations to visitors: Hike a trail in the New Territories or the Dragon’s Back; Visit Sham Shui Po and its street markets and nearby and get a real appreciation of the local culture; try out Hong Kong’s street food or a dai pai dong for sure – whether it’s curry fish balls, egg waffle or noodles; and enjoy a good seafood dinner in Sai Kung, Lei Yue Mun or Lamma Island where you can pick out live seafood.
