s chairman of Hong Kong Hotels Association, it is my great pleasure to welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. While community cases have practically stopped and our vaccination effort is proceeding steadily, international travel continues to be restricted with quarantine protocol remaining in place as the Covid-19 pandemic rages on in most other countries. While some social distancing measures remain in force and masks must still be worn in all public places, the city is returning to normal, with more events and activities resuming. For prudence, though, we suggest that you contact your concierge for up-to-date details of restrictions. Cycling in Hong Kong – for leisure, sport and transport – has steadily grown in popularity, the more so with the recent success of Sara Lee Wai Tze, who won a bronze medal in track cycling at the Tokyo Olympic Games. Despite crowded streets and highways, Hong Kong offers plenty of options for cycling about the territory, including almost 300 kilometres of dedicated cycling tracks, open roads in the countryside, and numerous mountain bike trails. Our cover story this month gives a rundown of the current cycling scene in Hong Kong and features 10 of the city’s best cycling routes and destinations. Please go to page 8 for more details. The outlying islands of Hong Kong offer residents the precious opportunity to get away from the city’s madding crowds – emerald jewels that offer beaches, hamlets, hiking trails, rugged shores and fantastic rock formations. This month we highlight those outlying islands that still require access by boat and remain largely unspoiled havens for quietude and excursions. Please go to our feature story on page 14 for more details. September features several noteworthy events. The Mid-Autumn Festival falls in this month, with mooncakes to be given out and consumed galore. This month, Hong Kong welcomes – after 18 years dormant – the reopening of Central Market, a historic landmark and heritage building that epitomises the Bauhaus architecture popular in the 1960s and 70s. The new Water Park at Ocean Park is also scheduled to launch this month, while Hong Kong’s favourite sporting pastime, horse racing, opens for another exciting season this month as well. Please go to our Calendar and Happenings sections starting from page 4 for more on these and other events. As social restrictions ease, the dining scene is returning to normal, and many restaurants are downright busy. This month, our food section highlights three Japanese restaurants, all different, a refined Cantonese restaurant, and a Nepalese momo restaurant. This October, passionate fans of dance are in for a special treat. Freespace presents the Hong Kong premiere of Transition , the latest creation by Gu Jiani, China’s famed choreographer, and her dance troupe, Untitled Group. Having grown up and developed her talents in China, Gu Jiani is one of the country’s most daring voices in contemporary dance. Her works, including her group’s recent performance in the international presentation of the Hermes’s Women’s Fall/Winter 2021 collection, have toured around Asia, the US and Europe. Inspired by daily abandoned objects and migrations of all scales observed in animals and human society, Transition is a complex and exhilarating interplay between performers, mannequins, and boxes, exploring the dynamics between dancers and objects discarded in the consumerist society.
Transition explores the themes of mobility, space, vitality, and boundary-breaking throughout the course of its three-year development, incorporating the context of the Covid-19 pandemic. The show’s explosive choreography expresses struggles and intricacies with inter-personal relationships and the surroundings, requiring precision and trust among dancers. 今年十月，古佳妮和十口無團打磨三年的新作《遷徙》將在香 港西九文化區的“自由空間”首演。古佳妮是中國當代舞界 最有冒險精神的舞蹈家之一，曾獲北京國際芭蕾舞暨編舞比賽 最佳青年編舞獎及銅獎。作品曾受邀於北歐、美國、澳 洲 、 台 北 、 香 港 等 地 藝 術 節 演 出 ， 最 近 在 法 國 著 名 品 牌 愛馬仕 2021 秋冬女裝發布會中擔任概念設計及編舞，享譽國際。 《遷徙》的靈感來自於編舞觀察人類社會日常被遺棄的物品， 延伸至對動物世界的遷徙，人、事、物等不同狀態的轉變，探討 生命萬物流動的世界觀。古佳妮與舞者在劇場舞台上建構出一個 世界縮影，利用肢體動作跟被丟棄的人體模型和盒子間驚 險、精準的互玩展現出來，探索在消費主義社會中人類生存的 價值觀。《遷徙》在三年的創作過程裡經歷了 Covid-19 大流行、 團隊變遷等狀況，衍生了流動性、空間、生命力和突破界限等作 品主題；高能量的舞蹈編排表達了人際關係和周圍環境的錯綜複 雜、相互矛盾，舞者之間的配合需要高度的彼此信任，才能爆發 出精確細緻的肢體語言。 《遷徙》香港首演只限兩場，舞蹈粉絲們記得立即訂票！

The Asian fashion event CENTRESTAGE (Hong Kong International Fashion Fair), hosted by the Hong Kong Trade Development Council (HKTDC), returns to the Hong Kong Convention and Exhibition Center from 10 to 12 September, to showcase the world and Asia the latest fashion brands. Waiting Heart – Dance
Hong Kong Dance Company and Utopia Cantonese Opera Workshop’s joint presentation of Waiting Heart returns to the stage. Based on the Cantonese opera masterpiece The Legend of the Purple Hairpin, it skilfully intertwines the inheritance of traditions with the wonders of contemporary imagination.
Central Market
Central Market, a beloved historical landmark that was closed and has sat empty for 18 years, finally reopened on 23 August to much fanfare after an extensive renovation. Located in the heart of Central and entry point to the Mid-levels Escalator System, the redeveloped building is destined to be a popular destination for locals and tourists alike. Managed by the Chinachem Group under a 10-year operating lease, the three-storey building houses souvenir and novelty shops, fashionable and popular F&B outlets, a niche supermarket and sitting area. Under the theme of “Playground for All”, the redeveloped building is set to regain its landmark status.

Mid-Autumn Festival
Under continuing Covid-19 restrictions, Hong Kong’s celebration of the Mid-Autumn Festival will be more subdued than usual, with the perennial Tai Hang Fire Dragon Dance and Mid-Autumn Lantern Festival festivities across the Territory cancelled for a second year. Still, families will continue to gather for the Mid-Autumn dinner, enjoy the full moon, and render appropriate thanks to local deities. The giving and eating of mooncakes remains quintessential to the occasion, with millions of the sweet delicacies expected to be purchased, mostly as gifts. Creating ever-fancier mooncakes wrapped in ever more eye-catching boxes has become a point of pride for mooncake makers, the choices ranging from classic lotus seed with egg yolk to ice cream and snow-skin mooncakes to mini-mooncakes, and more. Many hotels in Hong Kong prepare their own versions, all beautifully packaged. Even the international confectioners join in, creating yet more modern variations on this ancient sweet. What type of mooncakes to choose? For traditional mooncakes like double-egg yolk with lotus seed, Maxim’s always make quality and consistent mooncakes fit for purpose. Other popular and quality renditions include Kee Wah and Wing Wah. Surprisingly, despite crowded streets and major roads criss-crossing the city, Hong Kong offers an abundance of choices of places to bike, ranging from flat scenic routes to sinuous mountain roads to challenge the fittest climbers, as well as thrilling downhill mountain bike runs. CityLife reviews the current cycling scene in Hong Kong and unveils its list of recommended routes to explore the city up close, under your own power.

A s far as cycling goes, Hong Kong is a city of two tales – the abundance of the New Territories, where new towns are threaded with cycle tracks and locals ride for transport and pleasure, and the urban areas, often seen as dauntingly busy, and certainly lacking dedicated infrastructure – but nevertheless a viable option for anyone used to riding in other cities. As a recreational activity, cycling continues to grow in popularity, especially in the relative space beyond the crowded streets of Hong Kong and Kowloon. Just minutes outside the city’s urban core, cycling becomes a very viable option, for leisurely sightseeing and exploring, or something more sporty. Over the course of the last four decades, matching the growth of cycling here and worldwide, the new towns have nearly all been built with cycling in mind – Tuen Mun, Yuen Long, Sha Tin, Tai Po, Fanling, Tseung Kwan O – offering an enticing labyrinth of over 200 kilometres of mostly dedicated cycling tracks.

On top of these local facilities, the crown jewel is the New Territories Cycling Track Network, an 82-kilometre route stretching from Tsuen Wan to Ma on Shan. Much of it has now been completed, including the link between Yuen Long and Sheung Shui, part of the 60-kilometre route from Tuen Mun to Ma On Shan, passing through areas including Tin Shui Wai, Yuen Long, Sheung Shui, Fanling, Tai Po, Fo Tan, and Sha Tin along the way. An initial 2.3-kilometre section of Tsuen Wan Waterfront from Tsuen Wan Riviera Park to Bayview Garden in Tsuen Wan has also just opened for cycling, as a downpayment on the 23 kilometres from Tsuen Wan to Tuen Mun. The network links popular cycling centres, with bikes available for rent – in some cases allowing drop-off at different locations. Cycling popularity is expected to intensify as local district councils get on board the global surge in cycling to request building tracks in their areas. Most cycling though still takes place on regular roads where cyclists share the carriageway with cars, trucks, and buses. That certainly is the case on Hong Kong Island, in Kowloon, Sai Kung, and much of Lantau. Nevertheless, for the most part, by keeping alert, cycling is a safe and wonderful way to explore the multiple layers of our compact city. Several urban parks – Kowloon City Walled Park and Quarry Bay Park – have short, closed loops of cycle track, ideal for checking out a new or borrowed bike, or for learning the basics. West Kowloon Waterfront Promenade has bikes for rent to use on a 1.4km stretch of harbourfront with magnificent views over the Western Harbour – all the more so around sundown. For BMX fans, Kwai Chung has a full-fledged BMX facility that is popular with young and adult riders alike. More people are also taking up mountain biking. There are 15 designated mountain bike trails and plenty of unofficial trails dotted throughout Hong Kong’s mountains, many of which are inside the Tai Lam Chung Country Park, the de facto hub for the sport. As to indoor track racing, the success of cyclist Sara lee Wai-Sze who won a bronze medal in the just-completed Tokyo Olympics, will propel more people to check out track cycling at the Hong Kong Velodrome in Tseung Kwan O, the city’s home of indoor cycling sport. In retrospect, given its diverse terrain of hills, coastline and flat plains and mostly agreeable weather, Hong Kong should long have been a haven for cycling for pleasure, sport and transport, as it offers myriad scenic routes suitable for families and casual riders, or adventurous explorers, all year around. Cycling has a bright future in Hong Kong indeed. So, why not get into bicycling with your family? While bike-sharing in Hong Kong is largely restricted to the area around Tseung Kwan O, there are many rental outlets at popular cycling destinations. And if you are interested in getting your own bike, the city’s numerous cycle shops can provide you any bike you want. Bikes are carried (free) on all of the extensive MTR rail network, although you may be asked to remove a wheel.

Sha Tin/Ma On Shan to Tai Po Waterfront Park/Tai Mei Tuk 沙田/马鞍山至大埔海滨公园/大美督 The backbone of the New Territories Cycling Track Network and arguably the best-known and most popular cycling path in Hong Kong, and for good reason – the views of Tolo Harbour and Plover Cove Reservoir are fabulous. You can start from any of Tai Wai, Fo Tan or Ma On Shan and follow the track along Tolo Harbour to either Tai Po Waterfront Park or further along to Tai Mei Tuk, or vice versa, of course. It is mostly a flat route, perfect for a family or occasional riders. The route is flexible enough to allow different time and endurance constraints. Bike rental shops are at end points and major locations. 新界單車徑網絡的主幹道，可以說是香港最著名和最受歡迎的單車徑。你可以從大圍、 火炭或馬鞍山的任何一處出發，沿吐露港前往大埔海濱公園或更遠一點的大美督，反之 亦然。這裡很適合家庭和孩子，因為都是平地騎行。路線十分靈活，可以允許不同耐力 的人來騎行。主要終點均設有單車租賃店，沿途吐露港及船灣淡水湖的風景盡收眼底。
Nam Sang Wai
南生围
Another popular destination is Nam Sang Wai. The 20-kilometre ride starts from Yuen Long MTR Station where you can rent bicycles and make the short journey to nearby to Nam Sang Wai. Once there you pass through the mangroves and marshes – easily one of the most idyllic and picturesque rides in Hong Kong. Take care as you cross several minor roads. If you are up for a longer ride, you can join the cycling network track at Yuen Long and ride to the Hong Kong Wetland Park in Tin Shui Wai for more ecological sightseeing. 是另一個熱門景點，20 公里的車程從港鐵元朗站開始，您可以在那裡租用自行車，然 後短途旅行到附近的南生圍。到達後，您會穿過南生圍的紅樹林和沼澤地——這目前 是香港最田園詩般、風景如畫的場地之一。穿過小路時要小心，如果想騎得更遠，可 以騎到元朗的單車徑，騎車前往天水圍的香港濕地公園，享受更多生態觀光。

Hong Kong Island West/South 香港岛西/南 If you don’t mind jostling a bit with cars and buses along the way, a ride from western Hong Kong Island on to the south side is worth considering. Start anywhere near the Western District waterfront and join Victoria Road then Sandy Bay Road to Cyberport and Wah Fu, from where you can stick to the waterfront along Tin Wan Praya on to Aberdeen and then to Ocean Park along Nam Long Shan Road. After that you’ll have to follow the south side’s only main road to take you all the way to Stanley and Tai Tam. If you are ambitious, an arduous climb will get you up Tai Tam Road and onward to either Shau Kei Wan or Shek O and Big Wave Beach. We recommend this route for experienced riders only. 如果你不介意沿途與小轎車或巴士擠來擠去，可以考慮從香港島西到 南側。從西區海傍附近出發，經域多利道、沙灣道、數碼港及華富， 從那裡可以沿着田灣海旁的海濱一直到香港仔，然後沿南朗山路往海 洋公園。之後便可以沿着南面唯一的主路一直走到赤柱和大潭。如果 你有冒險精神，可以沿着大潭路到筲箕灣、石澳及大浪灘。只建議有 經驗的騎手探索此路線。
Tseung Kwan O / Sai Kung 将军澳/西贡 There is a nice network of cycling tracks in Tseung Kwan O that connects the Hong Kong Velodrome Park to the Waterfront Park, passing by Po Lam, Hang Hau, Tiu Keng Leng and Tseung Kwan O along the way. At less than six kilometres long, the network route is relatively short. Tseung Kwan O though can also serve as the starting point for cycling to Clearwater Bay Road either westward to the Clearwater Bay Beaches and the golf club or eastward to Sai Kung town and beyond. 將軍澳有一個連接香港單車館和海濱公園的自行車道，沿途經過寶琳、 坑口、調景嶺和將軍澳。這條不到 6 公里長的線路相對較短。您可從 將軍澳出發，向西前往清水灣道，或前往清水灣泳灘及高爾夫球會，或 向東前往西貢市及更遠的地方。

Motor traffic on this popular route is relatively light and you are rewarded with scenic views of Ma Wan Channel and the bridges, passing Sham Tseng, Tsing Lung Tau, Tai Lam and Siu Lam. 你可由剛建成的荃灣海濱環線出發，沿青山公路海岸一路前往到黃金海岸，甚至屯門。 在這條熱門路線上，車輛相對較少，沿途可欣賞到馬灣海峽及大橋的美景，途經深井、 青龍頭、大欖和小欖。

Mui Wo and South Lantau 梅窝及南大屿山 Lantau Island offers plenty of cycling options. Exploring Mui Wo is arguably the most popular ride in Lantau, especially for the whole family. You can rent bicycles near the Mui Mo ferry terminal. The ride around Mui Wo taking you to Silvermine Beach, Mui Wo Village, and the Silvermine Waterfall is easy and unhurried. Mui Wo is also a good departure point for rides along Lantau Road to Pui O, Sheung Sha Wan Beaches, Shek Pik Reservoir and Tai O. The 23-kilometre ride to Tai O plus the return trip fits comfortably into less than a day. Tung Chung to Sunny Bay 东涌至欣澳 The new town of Tung Chung also offers a dedicated cycling track network that connects most of its built-up areas including Tung Chung MTR Station. For a longer but mostly flat ride, take the bike route from Tung Chung to Sunny Bay, entering the cycling network at Tung Chung Crescent and ending your ride at the Disneyland Inspiration Lake. What is a trip to Cheung Chau without cycling around its various points of interest? Cycling is a way of life for residents as no cars are allowed on the island, so you might as well join the crowd. There are plenty of bike rental shops near the ferry pier that you arrive at. It’s an excellent way to pedal your way all over the island including the town itself, the beaches, the temples and Cheung Po Tsai Cave. Free from motor traffic, just watch out for pedestrians and other cyclists. 不騎車去長洲各個景點就是白來香港，騎自行車是長洲居民的生活方 式，因為島上不允許汽車通行，所以既來之則安之，加入騎行人群。渡 輪碼頭附近有許多自行車出租店。騎自行車遊覽全島是絕佳方式，可以 看看城鎮本身、海灘、寺廟和張保仔洞。這里遠離機動車，騎行只要注 意行人和其他騎自行車的人即可。

Another popular weekend destination where cycling is common. There are bike rental shops at both Yung Shue Wan and Sok Kwu Wan. The Family Trail connecting the two villages is suitable for biking, although there is a moderate uphill climb to get over the hill ridge. The Olympic Trail between Tung Chung and Mui Wo is convenient and undemanding, a paved path with only one section of steps, which you’ll likely have to dismount for. f there is any silver lining to the Covid-19 pandemic, which has severely restricted local Hong Kong residents’ ability to travel abroad, it is that many of us are discovering the city’s diverse geography and taking to its great outdoors, of which the outlying islands comprise a key part.

Remarkably, Hong Kong has more than 260 islands. As the city’s urban landscape intensified, some of the bigger islands were connected to the city via tunnels and bridges. They include Lantau Island, Hong Kong’s largest island, Tsing Yi, Ap Lei Chau, Stonecutter’s Island, Ma Wan Island, and Chek Lap Kok, where the airport is located. Others were joined with the mainland as part of constructing the High Island Reservoir and Plover Cove Reservoir from the sea or as part of reclamation developments such as Fat Tong Chau in Tseung Kwan O.

Hong Kong’s third-largest island is home to several sleepy villages and is popular with Westerners, who relish the slower pace of life here. For a sceneryladen route, we suggest you take a ferry from Central to Yung Shue Wan village, walk through the village then follow the paved path to Sok Kwu Wan. You will pass by a popular stand selling beancurd pudding before reaching Hung Shing Yeh Beach, a pretty, sandy beach worth lingering at before you ascend a modest hill. The walk up to the ridge offers panoramic views of the island and the power plant beyond. Descending the hill, you’ll pass by some rustic villages, mangroves and a Tin Hau Temple before arriving at Sok Kwu Wan, where a row of seafood restaurants await you. Cap your day with a yummy live-catch seafood meal before taking the ferry back to Central from the adjacent pier. Like Lamma Island, Cheung Chau has long been a favourite destination, so it can get quite busy on weekends. There is a small but busy fishing harbour and a lively village with shops, restaurants and bars lining the waterfront promenade and the narrow lanes behind, all of which are well worth exploring for souvenirs and a slice of local life. There are bikes for hire to help you go a little further. Temple hopping is also popular as the island is home to several, including the Pak Tai Temple, heart of the famous Cheung Chau Bun Festival. Nearby Tung Wan Beach is ideal for swimming. Hiking trails abound, including one to explore the famous Cheung Po Tsai Pirates’ cave and others offering scenic vantage points. Peng Chau is a small and quaint island just off east Lantau, not far from Discovery Bay. Several thousand people live here – either born of multiple local generations, or drawn to its unhurried lifestyle and relative isolation. Stepping onto the island, it won’t take you long before you feel the same vibe. You can take your time checking out eclectic arts and crafts shops, including a former leather factory converted into an art space. There is a heritage trail worth following (an easy hike) and a modest scamper up to the highest point, Finger Hill, rewards you with a 360-degree view of Lantau, Hong Kong Island and the South China Sea. You can unwind and enjoy a simple but delicious seafood meal at the local restaurant on the way back. Switching to the east and a favourite and picturesque destination for “junk trips”, Po Toi offers primitive but navigable hiking trails leading to panoramic views of the sea and neighbouring islands, cliffs and rocks and spectacular rock formations along the rocky shore. This pristine island lying just off the Clearwater Bay Peninsula in Sai Kung District is a real hidden gem. Reachable only on weekends and public holidays, Tung Lung Island is famous for rock climbing along its north eastern coastline. There is an old abandoned fort with a campsite nearby. A scenic footpath offers unimpeded views of the sea and the peninsula across. It won’t take long before you are disconnected from the hustle and bustle of the city only minutes away. A small island in the easternmost part of Hong Kong, Tung Ping Chau is part of the Hong Kong Global Geopark and the territory’s only island comprised of sedimentary rocks – the rest of Hong Kong’s geology deriving from an ancient volcano. Accessible by ferries on weekends from Ma Liu Shui in the New Territories, the island is a popular getaway for locals. A oncethriving coastal fishing village has bequeathed abandoned buildings and heritage temples. If you want to visit a totally unspoilt island and fishing village, this small island off the Sai Kung Peninsula is out of the way but well worth a visit. As you step off the boat, you can almost feel time slowing down as Tap Mun’s traditional fishing village still ticks to the old rhythms of life. It’s an easy one-hour walk around the island. You’ll see cows still roaming the fields and little fishing boats bobbing nearby. There are a few stores and restaurants: be sure to try the fried rice with local sea urchin roe. A small island off Sai Kung Peninsula accessible by boat from Sai Kung town centre, Yim Tin Tsai is a little-noticed gem hidden in plain sight. The island is just off the fourth hole of the North Course at Kau Sai Chau, which is home to three picturesque public golf courses managed by the Hong Kong Jockey Club. Attractions at Yim Tin Tsai include good Hakka food; an old school that is now a heritage museum; St Joseph’s Church, which is great for wedding pictures; and taking pictures at the dam that connects to Kau Sai. There is even a salt pond! Two fascinating islands in one outing – you can’t get better than that! Located in Mirs Bay in the remote northeastern corner of Hong Kong and within sight of Shenzhen’s Yantian container port, both islands are part of the Hong Kong Global Geopark. Ap Chau is purportedly the city’s smallest inhabited island that is accessible, while the nearby Kat O, or Crooked Island, is considerably larger. A scheduled kaito ferry from Ma Liu Shui in the New Territories will take you to both islands. At Ap Chau, you’ll have an hour to enjoy the natural scenery of the small islet and the Ap Chau Story Room, which is more than enough time. Then on to Kao O which was once a thriving village with more than 4,000 inhabitants – mostly fishermen and farmers. Most have since migrated abroad, and the island is now just another quiet outpost. You can take the heritage trail, visit its story room inside the village’s Tin Hau temple, and enjoy lunch at the island’s only restaurant. The close-up views of a bustling container port make for a stark contrast to the quietness. e are long familiar with The Square, a fine-dining Cantonese restaurant located at Exchange Square. The restaurant garnered a Michelin star for seven years in a row a few years back and holds a reputation as one of the better Cantonese restaurants in town. Yet, tucked away on the mezzanine floor of Exchange Square lobby, it is easy to miss. As it had been some time since our last visit, we were keen to reconnect with The Square with the announcement of its offering of a brand-new menu.
Hungarian pig known for its strong and juicy taste. The meat is prepared char siu–style, complete with a final smoking to enhance the flavour of the sweetly tender and succulent meat.
The Square occupies one half of the mezzanine floor of the Exchange Square Podium, a deceptively large space. The spacious dining area, which follows the curvy layout of the mezzanine, is comfortably and cleanly decked out. The tables by the open-air balustrade offer an engaging view of the expansive podium below.
Another special dish awaits – Pan-fried Japanese Sea Cucumber Stuffed with Minced Pork and Shrimp Served with Rock Rice ($248). This dish was new to us, and what a delight! Its presentation is exquisite, and the preparation is meticulous. The tasty pork and shrimp stuffing contrasts well with the sea cucumber and its broth. The rock rice enjoys similar texture to glutinous rice but is less chewy – we liked it. Next, we tried Braised Sliced Chinese zucchini in pumpkin sauce ($138). It was savoury.
For our dinner, we chose from several of the chef’s recommended dishes. For the new menu, the seasoned chefs at The Square aim to combine traditional refined Cantonese cooking with modern sensibilities, so to speak. That means creating dishes that make inventive and flexible use of ingredients while upholding the core Cantonese cooking methods. We started our dinner with a selection of appetisers: Fresh Bean Curd Sheets and Chinese Yam in Sesame Dressing ($78) and Deep-fried Eggplant with Salted Egg Yolk and Pork Floss ($88). We quite like the slightly crunchy texture of the zucchini and the savoury flavour of the egg yolk with the eggplant. Steamed Seabass in Salted Potherb Mustard ($398) is excellent. The seabass bites tender and melts in the mouth. Next was Barbecued Mangalica Pork ($398) a

Fish Maw Soup with Crab Meat ($198) followed. Soup is always a reliable benchmark of Cantonese cooking prowess and this one passed muster handsomely. The combination of fish maw and crab meat is a creative take, and we like its rich and umami flavour.
Our final dish, Braised Rice Vermicelli with Spanish Shrimp ($128), is another imaginative creation in which the strong prawn flavour nicely takes control of the blander vermicelli. We finished the dinner with a wellchosen fruit platter. We should note that The Square still serves excellent dim sum during lunch. We were impressed with the menu though – well-crafted dishes, inventive and bold use of new ingredients, and still distinctively Cantonese cooking. If you want a special Cantonese fine-dining experience, we highly recommend giving it a try.■

akiniku is a popular cuisine in Japan and increasingly in Hong Kong as well. A close cousin of the Korean-style BBQ from which it is supposedly derived, yakiniku features bite-size cuts of beef as its mainstay, augmented by other meats including pork, chicken and seafood. Hong Kong’s latest yakiniku restaurant is Saburo Japanese Yakiniku, which we think will be a hit with beef lovers and yakiniku enthusiasts alike. Located in the fashionable H Zentre in Tsim Sha Tsui, Saburo aims to deliver a high-end, luxury yakiniku omakase dining experience, serving top-quality wagyu beef cuts and other quality meats, seafood and vegetables. About the beef first, and good news for lovers of wagyu beef: Saburo manages to source A5 wagyu beef from four renowned regions: Iga, Himeji, Miyazaki and Kagoshima, each producing different meat quality in terms of flavour, marbling and texture. Much of the beef – such as Iga – is rarely available for export due to strong domestic demand. So, kudos to Saburo for being able to bring in these prized supplies from Japan. In addition, Saburo offers several rare and coveted cuts of wagyu beef in its omakase menus. The 3,000-square-foot restaurant is spacious and well laid out. A kitchen plus bar counter dominates the space upon entry; the dining areas are subtly portioned to offer seclusion. The décor is minimalist but elegant and features abundant natural materials to offer a relaxed and comfortable ambience. All dining tables are installed with grill sets that use a smokeless ventilation system. Saburo offers several Omakase sets for dinner. Its signature set is the Kyoraku Omakase Set ($1,280), essentially the deluxe set. The course includes Appetiser,

Seasonal Sashimi (3 types), Wagyu (7 types, including rare cuts), Seafood Platter, Second Appetiser, Soup, Meal and Dessert. Beef takes centre stage here; some of the rare cuts include Oyster Blade – a small area just below the chuck that is chewy and flavourful and chuck tender. The others include sirloin, ribeye, round and tri-tip. We also tried two more omakase sets. Ryotel ($880), another beef set that features three cuts of wagyu beef plus the same complements as the other set. Other than beef, Saburo serves the Toritei Set ($580), which features Chicken (Awaodori Chicken Thigh, Wing), Pork (Kagoshima Kurobuta Loin Rib). Beef is best seasoned lightly to fully bring out the flavours. Saburo uses several quality flavoured salts that include charcoal, basil, mustard, scallop and oyster. For diners wanting the meats perfectly grilled, Saburo offers seats at the bar counter with all the meats cooked and served by the restaurant staff. You can also see through the glass partitions into the kitchen to see how the food is prepared. The bar counter seats and available on a first-come, firstserved basis. Our visit to Saburo certainly exceeded our expectations – in the quality of the food served, the ambience and the whole yakiniku experience. Clearly, Saburo has set a new bar in high-end yakiniku dining. So, if you crave deliciously grilled wagyu beef, a visit to Saburo should sate your desire. We recommend it.■

Pazzi Isshokenmei For ardent foodies, the great thing about living in Hong Kong is the abundant opportunities to try out new restaurants offering innovative cuisines, from mainstream to the downright eclectic and eccentric. The newly opened Pazzi Isshokenmei, which serves traditional Italian cuisine blended with Japanese Izakaya style, is firmly at the latter end of that spectrum. Pazzi Isshokenmei is the creation of local restaurateur Philip Chow, a 20year veteran of the local F&B scene. In his latest venture, Chow has created a dining concept that bridges the expressive West with the traditional, disciplined East, as expressed in its name, décor, and of course its inventive dishes, using largely fresh seasonal ingredients imported from Japan and Italy. Occupying the second floor of the prominent H Queen’s, Pazzi Isshokenmei is bright and airy, the restaurant’s high ceiling complementing its stylish décor. For our lunch, we chose items from the Lunch Special, a three-course selection comprising a starter, main course and dessert. We began with Salmon Tataki, (daiken, coriander, chili); Lobster Miso Soup (daiken, tofu, miso) for an additional $98, and Beef Tartare (pickle, egg emulsion) for an additional $98, with a distinctive and yummy beef seasoning. For the main course, the choices vie for attention. Alioli Soba (garlic, chili, shichimi) ($258), which pairs Japanese soba noodles with Italian-based spices and garnish, is an Italian inspiration that can give any quality pasta dish a run for its money. Miso Crab Tagliolini (crab meat and paste, miso) ($398) is another delicious concoction, adorning fresh Tagliolini pasta with Japanese crab meat and miso. Our last main was the Rib Eye (morels, potato) ($488), a tender steak, nicely grilled. Green Tea Tiramisu Cremia ($68 extra),a green tea flavour fusion delight with tasty Cremia ice cream, which was made from a specially ordered machine from Japan, one of only two purportedly available in Hong Kong, rounded out our meal nicely.

Nami Izakaya 浪‧居酒屋 Soundwill Plaza in Causeway Bay is one of the city’s premier high-rise food buildings, home to a plethora of restaurants. The recent grand opening of Nami Izakaya will certainly add to its already stellar line-up of distinctive outlets. Nami offers traditional Japanese izakaya (snacks and alcohol, akin to pubs serving snacks, or tapas bars) dining popular during Japan’s Edu period. The outlet is lively, flamboyant and colourful, its expansive premise is decorated in red and dark brown wood, accented by bright-coloured hand-painted murals by local Hong Kong artists depicting architecture and street scenes of Kyoto. Nami offers an extensive menu of tasty izakaya snacks (over 50 items), and other popular Japanese items including sashimi, sushi, skewers, shabu-shabu, sukiyaki, donburi, and udon to complement its large selection of sakes, beers, and wines. True to expectations, our meal was a cavalcade of delectable dishes. For snacks, we had Deep-fried Tofu with Crab Meat & Crab Roe ($78), Lobster Salad with Crab Roe ($78), Japanese Sea Grapes ($58) from Okinawa, Angler Fish Liver ($78), Wagyu Beef Tataki ($198), which is so tender it practically melts in the mouth, and Scallop in Lemon Soy Sauce ($98). For soup, we tried the rather flavourful Seafood Soup in Teapot ($68/ serving). The sashimi and sushi are excellent too – fresh and tender. Supreme Sashimi Platter ($568) is a real treat as we devoured a large plate of succulent seafood including toro, snapper, red bream, spot prawn and scallop. For sushi, we had Premium Sushi Platter ($298) and Nami Sushi ($128) – both good. Also tasty are Unadon ($198) – rice topped with a footlong whole eel grilled and marinated with house-made sauce, Deluxe Trip Don ($228), and Crab Meat and Crab Paste in Shell ($168), a yummy delicacy.

Momoz Given the rising popularity of Nepalese cuisine, another new Nepalese restaurant is always welcome. That is certainly the case with Momoz, a new Nepalese concept restaurant serving momos (Nepalese dumplings) and rolls. Momoz, with outlets in Tsim Sha Tsui and Lan Kwai Fong, is the first brand launched by Cygnus Concepts, a new local restaurant group specialising in presenting niche and unique regional culinary concepts. Momoz aims to create authentic momos and rolls, albeit reinterpreted with international twists in taste, appearance and scent. It sources all its spices from Nepal and the momos are made from scratch daily. What distinguishes Momoz though is the many colourful momos that it serves on its menu. These visual treats, which are made from natural ingredients and designed as “one-bite” size, are steamed to order. We tried a wide selection of momos, all deliciously tasty. They included Classic Chicken Momo ($88/8 pieces), a traditional Nepalese favourite, served with homemade chutney. Classic Vegetarian Momo ($78/8pcs) featuring a dozen ingredients and a spinach-infused dough, thus its green colour, is excellent also. A locally inspired momo is Cha Siu Momo ($88/8pcs) with a beetroot-infused purple dough. Other exotic selections we tried included Swiss Italian Cheese Momo ($98/8pcs) made with Swiss Emmental and mozzarella cheeses, Kimchi Momo ($98/8pcs), Katsu Chicken Curry Fried Momo ($88/8pcs) and FITH Lamb Momo ($98/8pcs). The rolls are tasty too. Each filling is rolled into the paratha flatbread (roti). We tried the traditional Lamb Rogan Josh Roll ($108), and Dynamite Prawn Roll ($118), a US-inspired treat in which fresh shrimp is deep-fried and topped with homemade cocktail sauce and wrapped in a roll with coleslaw.

Arthur Hacker paves the history of one Hong Kong’s busiest roads. 亞瑟·克赫在香港最繁忙的道路上，與你緬懷過去

hen Lord Palmerston, the British Foreign Secretary, heard that Captain Elliot had founded a British colony in Hong Kong in January 1841 he was not pleased. He wrote an angry letter to Elliot in which he described the new colony as "a barren rock with hardly a house upon it." He had expected something rather grander. Hong Kong Island had no towns and no roads. The small land population lived in a few remote and isolated fishing villages, the largest being Aberdeen which in Cantonese is called Heung Gong Tsai (little Hong Kong). Elliot named the original British settlement Queenstown. lt was later renamed Victoria after Britain's young queen. lt is now known as Central District. Footpaths connected the villages. One of these rough tracks ran along the northern shore of Hong Kong Island. Viewed from the hills, this wiggly little track, which was used as a towpath by local junk captains, was said to resemble the drawstring that Chinese ladies tied around their waists. This is why, according to Dr Eitel, an early Hong Kong historian, it was known as Kwan Tai Lo, which he translated as Petticoat String Road.

ln 1841 the Royal Engineers laid a new road on top of the towpath. With a bewildering lack of imagination they named this new highway Main Street, but in March 1842 the road was officially renamed Queen's Road in honour of the British monarch. ln the Victorian era many important buildings stood between St John's Cathedral and the Clock Tower at the junction of Pedder Street. On the corner where the Landmark is today, (15 Queen's Road Central), stood the Hong Kong Hotel, the first luxury hostelry in the colony. Nearby was the first headquarters building of the Hongkong and Shanghai Bank. It had a massive octagonal dome that stood 100 feet above the ground, A new headquarters was erected in 1935 that was the largest building east of Suez at the time. The bank’s current main office at 1 Queen's Road Central was designed by Sir Norman Foster and covers the site of the original bank and a bit of the old City Hall, a beautiful building designed by the French architect M.Hermite. This cultural centre was financed by public donations and housed a museum, a library and the Theatre

悉艾列萊隊長（ Captain Elliot ）將香港列為英 國殖民地之時 , 他顯得不甚愉快。於是，他寫了 一封充滿怒氣的信給艾列萊，信中他形容香港為 「一片荒漠的不毛之地」。帕氏認為作為英國殖 民地的應該是一處更華麗的地方。
當時的香港島沒有道路、更沒有市鎮；而 在 一 條 僻 遠 的 漁 村 里 —— 「 香 港 仔 」 ， 只 住 有 少數的居民，人煙稀少。艾列萊本來稱這區作 ‘ Queenstown ’ ( 直譯為：皇后的市鎮 ) ，及後 被大英的年青女皇易名為‘ Victoria ’ ( 維多利 亞 ) ，最後改名為我們現時熟悉的「中區」。 小徑與各村落相互連接，從山上俯瞰，可見 其中一條崎嶇的山徑橫跨港島北面，彎彎曲曲的 迂迴着；這條小徑據說曾被本地的船夫用作「曳 船路」 ( 沿河岸拖船時所行的路 ) ，與女士們系在 腰間的腰帶相似。敬此，香港早期的歷史學者 Eitel 博士稱這條小路為「裙帶路」，英文亦直譯 為‘ Petticoat String Road ’ ( 裙子帶的路 ) 。 在一八四一年，皇家工程師在曳船路的盡處 開闢了一條新的小路，因茫無頭緒 , 只好稱它為 「大街」；而在一八四二年三月 , 該路以英國君 主之名，重新命名為Γ皇后大道」。
Royal, where Queen Victoria's son, Prince Alfred, Duke of Edinburgh, watched a naughty play performed by the Amateur Dramatic Club called Notting Hill. The Prince had opened the City Hall a couple of days earlier, He was Hong Kong's first royal visitor. On the opposite side of the road, below the cathedral, was another exquisite building called Beaconsfield Arcade. It only came to be built because a Mr Emmanuel Belilios had donated a thousand pounds for the erection of a statue to Lord Beaconsfield. Lord Beaconsfield politely declined the offer, so Belilios named the arcade after his hero. Belilios is best known for using a camel to commute between the Peak and Central. With the opening of the Peak Tramway, the beast became redundant and in a fit of melancholia committed suicide by jumping over a cliff. Another interesting building was the Ice House that stood at the junction of Battery Path and Ice House Street. ln spite of its name, it did not manufacture ice. The ice was harvested from icebergs by The American Company and shipped to Hong Kong. The crop arrived in great blocks and was stored in the Ice House. At one time the company was owned by a dubious entrepreneur called George Duddell who ran an illicit craps game in the building. He was also a dishonest auctioneer who once illegally sold a ship to himself at a ridiculously low price... and got caught. ln spite of this chicanery there is a street in Central named after him.■

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Combining aesthetics, practicality, and philosophy, censers are of high artistic and historical value. Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. Tai Kwun
Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. Absolutely the best beaches in Hong Kong – Long, smooth, white sandy beaches with quite shallow water. You can take number 29 bus from Sai Kung town; it only runs a few times a day, so you need to watch the return schedule. It’s a 45-minute walk to get there. There is no lifeguard there, so swim with caution. There is a restaurant/store for a quick meal and a place to take a shower. Be sure to enjoy a great seafood meal in Sai Kung.
