s chairman of Hong Kong Hotels Association, it is my great pleasure to welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. Hong Kong continues on a hopeful path towards opening up our city for international travel, the positive news our hospitality industry has long awaited. As community cases of Covid-19 have practically stopped and steady vaccination efforts continue, the city is making plans to ease inbound travel restrictions. In the meantime, while some social distancing measures are still in place and masks must be worn in all public places, the city is returning to normalcy and more events and activities are resuming. For prudence, though, we suggest that you contact your concierge for details of the latest updates and restrictions. This year, summer seems to have arrived early with an exceptionally balmy May. So we thought it timely to bring you this month our annual edition of the Best Beaches in Hong Kong. With over 100 beaches to choose from, we are spoilt for choice – whether it’s long expanses of sand, or beaches convenient to get to, or sparkling clean waves, or secluded, pristine beaches, the city has them all. Please go to our cover story on page 4 for all the details. While the summer may bring stifling heat at times, it also brings clean and clear air for the most part, thanks to the prevailing southerly winds from the South China Sea. If you are interested in capturing clear photos of the city’s outdoors, summer is the best time to do it. This month, we are also highlighting the newest and latest Instagram spots in Hong Kong, focusing on Hong Kong’s outdoors and its cityscape. In ever-changing Hong Kong, there are new places that you’ll want to check out. Please go to our feature story on page 10 for more. Events and activities are resuming, albeit gradually and cautiously. This month, the French May Art Festival continues, with several performances taking place. Please check out our Calendar section for the updates. The city’s hotels continue to present ever-more enticing staycation offers, packaging tempting room and dining options. CHAT Spring Programme 2021: Interweaving Poetic Code explores the common thread of code, textile and care. Artists incorporate the coding system into textile(s) and clothing for care, inclusivity, open dialogue and unlearning. Through weaving creative experiences ‘with’ all, it prompts us to question how we learn and what we learn in order to value internal growth, develop a network of self-taught learners and co-exist with our surroundings and communities.

Portals, Stories, and Other Journeys
Portals, Stories, and Other Journeys stems from Asia Art Archive’s research since 2014 into the personal archive of the late Hong Kong-based artist Ha Bik Chuen (1925– 2009). The exhibition comprises 10 ‘sets’ that share how Ha’s archive fuels practices of other artists, with five of these sets presenting new commissions. Each artist brings their own stories relating to Ha’s archive — they respond to various facets of his archival and art practice.

Shek O / Big Wave Bay

石澳/大浪湾——冲浪和游泳天堂 These beautiful beaches on southeast Hong Kong Island attract swimmers and surfers for their unimpeded waves from the South China Sea. The enchanting village of Shek O provides a rustic backdrop to the two hotspots. Full BBQ facilities are available for picnic cook-outs. South Bay / Middle Bay

These three beaches on the south side of the island are perfect if you want a quick getaway far from the madding crowd. A glorious secluded beach, framed by spectacular geological formations and sparkling waters, Long Ke is accessible by a moderate hike from High Island Reservoir – bring your own food and water as there are no provisions and it’s not tended to – but you’ll have all the privacy you could wish for. Tai Long Wan (Big Wave Bay) beaches – pristine and untamed 大浪湾海滩——质朴且原生态
Further up the coast from Long Ke, along Maclehose Trail Section 2, the famous four Tai Long Wan beaches, arguably the crown jewel of Hong Kong’s beaches, await. Ham Tin and Sai Wan are the more frequented, both good for surfing and near-shore swimming. Tai Wan is known for its high waves and is a surfer’s paradise, while the smaller Tung Wan sand is less visited but really just as nice. Overnight camping at these beaches is popular. To reach them, it’s a 90-minute hike from Sai Wan Pavilion or hire a boat form the public pier in Sai Kung Town. As you admire the beauty of Hong Kong's own tropical paradise, swim with care as these beaches are also unattended and the waves can be strong. 從浪茄海岸往北，沿着麥理浩徑第 2段，途經四個大浪灣海灘，可 以說是香港海灘的明珠。咸田和西灣是比較受歡迎的，這兩個地方 都適合衝浪和近岸游泳。大灣以其高高的海浪而聞名，是衝浪者的 天堂，而較小的東灣沙很少亦有人參觀，因為景色優美。在這些海 灘過夜露營很受歡迎。可以從西灣亭步行90分鐘，或者在西貢市的 公共碼頭租船到達這邊。當您欣賞香港的熱帶天堂之美時，請注意 安全游泳，因為這些海灘無人看管，海浪會大。
Pak Lap Wan
– the sparkling hideaway

To get to this secluded beach you’ll hike a way off MacLehose Trail Section 1. It has become more popular, especially on weekends. Besides smooth sand and sparkling waters, it has a campsite. Clearwater Bay Beaches 清水湾海滩 Due to its proximity to the city and relatively easy access, the two beaches at Clearwater Bay (1 and 2) can be busy on a sunny weekend. Still, the water quality is generally good, the sand is smooth, and the amenities are excellent. En route to becoming a world-class cultural hub, there are already plenty of places to capture cool images. Check out the vantage points along the picturesque waterfront promenade, its architecturally captivating venues such as the Xiqu Centre, Freespace, the M+ art museum, and the Competition Venue. And the sunset view here is as good as it gets. This open-air museum in Tai Po takes visitors back in time to when rail travel was a rare treat, before the MTR subway network was built. Sheung Luk Stream in Sai Kung offers the complete experience. The stream has a few smaller pools and a larger one suitable for swimming. You can even try cliff jumping into its cool waters if you feel adventurous. How to get there: Take a taxi from Sai Kung Town to the pavilion on Sai Wan Road; follow the signs to Sai Wan Village, passing the top of a beach then another until you come to the small river, which you then follow to the water pools.
Peng Chau 坪洲 This serene island off Lantau is just a short ferry ride from Central, but couldn’t be further from the hustle and bustle of the crowded city. Here, life slows down noticeably, and you can take your time checking out eclectic arts and crafts shops, including a former leather factory converted into an art space. Be sure to take a leisurely hike around the island, snapping pretty pictures along the way. How to get there: Central Pier No. 6, Central

Cape D’Aguilar 鹤咀 You are going to love Cape D’Aguilar when you get there! Hidden away on the south-eastern tip of Hong Kong Island, Cape D’Aguilar offers rugged coastline, rock formations, caves, a lighthouse, a marine reserve, and even World War II relics. Crab Cave and Thunder Cave are the most photographed locations, but there are so many more scenic spots perfect to share with your social media audience. How to get there: Take First Bus No. 9 from Shau Kei Wan Bus Terminus (make sure it’s the one that stops by Cape D’Aguilar). After getting off, walk for about 30 minutes (all flat) until you reach the PCCW Radio Transmitting Station. Skirt around the station and walk a little further down and you are there.

Ngong Ping Plateau 昂坪草原 This is the Ngong Ping in Ma On Shan Country Park, not the one on Lantau. The grassy plateau is just below Pyramid Hill, part of the MacLehose Trail Section 4. The grassy ridge offers majestic views of Ma On Shan, Shatin and Sai Kung and is reachable by a moderate hike from Ma On Shan. The more intrepid can go on to Sai Kung along the trail.

The Victorian style garden is nicely landscaped with expansive lush lawns, quaint gardens, pagodas and colonnades, and with views overlooking the city that will take your breath away.

he latest addition to the vibrant dining scene in Causeway Bay is Duckee, a modern, upscale establishment billed as a Chinese gastrobar and restaurant – an intriguing appellation. We were there to preview Duckee’s special menu, titled Duckee’s Hangover Set, a special menu arrangement in which 8 classic Chinese dishes, mostly Shanghainese, are prepared using a curated selection of wines, several of which are also paired for drinking. Tucked away in the basement of Lee Garden Three, a plush shopping complex, Duckee’s décor is Chinese contemporary, trendy and comfortable. Guests enter from the ground floor and descend into a spacious basement area that offers both a public dining section and private rooms. The restaurant’s ambience is friendly and welcoming – ideal for a social or family gathering. Duckee serves mostly Shanghainese cuisine, with a contemporary twist. For its special tasting dinner, each of the meal’s eight courses is infused with a different quality Chinese wine, Chinese liquor or whisky. Some of the drinks are also paired with their respective courses. The meal started with Sliced Duck Skin, Kaoliang (Sorghum) Osmanthus Pudding. Kaoliang, or sorghum, is a popular Chinese distilled liquor, consumed mostly in northern China, and Taiwan. Kaoliang is strong, with an alcohol content of between 38% and over 60%. The deepfried duck skin is crispy and tasty, and the modest infusion of kaoliang helps add a pleasant bite to the pudding. Drunken Whole Abalone came next and was a real treat. Before cooking, the whole, succulent abalone is steeped in 20-year-old Huadiao, or Shaoxing wine, one of China’s best-known yellow wines, popular in the Jiangnan or lower

Yangtze River area. The tenderised abalone meat tastes excellent, its flavour lightly sweetened by the huadiao wine. Fried Prawns with Sweet Rice Wine is another triumph. It features large, succulent prawns, deep-fried in wine made from glutinous rice, another popular Chinese tipple. Two main courses arrived: Beer Duck, paired with Suntory Beer and Flaming Braised Pork Belly with Whisky, paired with Chita Single Grain Whisky. Both are classic Shanghainese dishes. The duck dish, in which chunks of juicy duck meat and garnish are braised in soy sauce and beer and served in a clay pot, is aromatic and flavourful. The braised pork belly is another old stalwart, renowned for its uber tender skin and fat layer that practically melts in your mouth. The Japanese malt whisky is always an excellent choice to accompany this pork specialty. Sauteed Indian Lettuce & Egg came next, the stirfried vegetable, again lightly infused with Kaoliang, is subtle and refreshing. We wrapped up our meal with the ever-popular and delicious Xiao Long Bao, Huadiao Wine and Guo Jiao Sweet Osmanthus Cakes, a light and delightful dessert. The special Hangover Set ($1,952 for 4 persons) also comes with Tea-based Sharing Cocktails (two pots). The meal at Duckee, artfully blending alcohol and quality food, is a delicious and fun experience. We thoroughly enjoyed it and we are sure you will too. So, if you are in the mood for a happy gathering with quality food and excellent wines, be sure to give Duckee a try.■

ttic, a contemporary Western restaurant recently opened in Tsim Sha Tsui, is that prototypical creation of Hong Kong’s rich, diverse food culture – a young, enterprising chef with a passion for Italian cooking, creating innovative dishes influenced by a variety of regional cuisines popular in Hong Kong. The result is a hidden gem, and a delightful spot for a relaxing and yummy meal. On the first floor of a commercial building, Attic’s location affords it a striking high ceiling that, coupled with floor-to-ceiling windows, creates a bright, airy ambience. The décor is contemporary, casually elegant, and comfortable – perfect for a relaxing and cosy meal. The restaurant is helmed by Khalil Woo, a young and energetic Hong Kong–born-and-bred restaurateur-cumexecutive chef. Woo finessed his trade through earlier F&B ventures in which he observed and learned from several accomplished chefs in different cuisines – Italian, French, Japanese, Chinese and others. Combined with his passion for cooking, hunger to learn, and willingness to try out new ingredients and cooking methods, Chef Woo parleys them all into the revelation that is Attic.

Our visit put Chef Woo to the test, as we sampled many of the menu items. Attic serves a 3-course Lunch Set that includes a starter, a daily soup and a main course, the price varying with the main course selected. The starters from which to choose include Burrata Cheese with Tomato Salad and Pickled Watermelon, Slow-cooked Pork Belly, Sherry Balsamic Glaze and Pomegranate, and Rocket Salad with Parma Ham. For the main course, guests can choose from risotto, pasta and meats. Our picks were all totally tasty, and included Wild Mushroom Risotto with Portobello in Truffle
Cream Sauce ($168), Handmade Fettuccine with Leek and Salmon ($168), French-style Stuffed Chicken Steak, Roasted Vegetables, Mashed Potato and Chimichurri ($178) and U.S. Angus Hanger Steak with Roasted Vegetables, Mashed Potato and Chimichurri ($188). We then tucked into a sampling of Chef’s signature dishes. Japanese Marinated Egg Yolk Toast, Truffle Mascarpone, Chives, Caviar Kristal is superb, as is the innovative French Beef Tartare, Salted Egg Yolk, Caviar Kristal. A must-try is undoubtedly Handmade Fettuccine with Sea Urchin Puree, Sea Urchin, Umi Budou, Mullet Roe ($238). The handmade fettuccine is excellent – chewy with a firm texture. The infused urchin and Okinawa grape (Budou) sauce adds a richness to the pasta’s flavour; the urchin roe is fresh and yummy. Risotto with Hiroshima Oyster Miso Puree, Cockle Meat, Caramelized Dried Oysters is another delight that is rich, aromatic, and tasty. The risotto fully absorbs the rich flavours of the oyster puree, which contrasts nicely the flavour offered by the dried oyster sourced locally from Lau Fo Shan in northwest New Territories. Two other noteworthy signature dishes are French-style Stuffed Spring Chicken, Morel Sauce ($488) and Bouillabaisse with Seafood, Baguette with Saffron Aioli ($388/one and $628/two), the famous Marseilles fish stew that is chockful of fresh seafood ingredients, stewed in the traditional way. Our visit to Attic turned out to be a highly enjoyable dining occasion – we do appreciate the various fusion dishes Chef Woo has created. We highly recommend that you give it a try too.■

Lady Nara One of Thailand’s most noted dining groups, Nara Thai Cuisine, has landed in Hong Kong to much fanfare. The Bangkok-based group was founded by Narawadee Srikarnchana (Yuki), a prominent chef who has travelled widely and collected recipes from around the world. In collaboration with local partners, Yuki has opened the group’s first Lady Nara café in Hong Kong. The upscale, elegant outlet features many of Ms Yuki’s private recipes plus several dishes exclusive to the new Hong Kong venue.

Located in Harbour City, the café’s elegant interior was lovingly crafted by Pearl Shek, a local founder and partner. The flowery décor comprises pink and green overlaps, a diamond-shaped mirror wall, natural plants and flowers, plush sofas, and Thai-made rattan furniture.

The menu is a combination of Thai and western dishes, albeit all with a Thai twist. For our meal, we started with Thai Prawn Carpaccio with Burrata Caprese Salad ($118) and Beef Tartare, with Pickled Pineapple and Tamarind Mayonnaise ($108), a French palate with a sourer flavour. Lady Nara also offers a tasty spin to its tom yum dishes. Lobster Tom Yum Bisque with Garlic Toast ($138) imbues a pleasant tom yum flavour to the classic lobster bisque, while Tom Yum Spaghetti Carbonara ($118) offers a welcome zesty bite to the pasta. Lady Nara’s must-try item has to be its Lemongrass Roasted Chicken ($198/half and $328/whole). The dish uses a yellow chicken that is marinated overnight with its in-house secret recipe of palm sugar, fish sauce, lime juice, lemongrass and a slew of spices. Roasted upon ordering, the chicken meat is tender and juicy, and fully flavoured. Another noteworthy dish is the Paperbaked Seabass with Plums and Vegetables ($168), which is seasoned with refreshing citrus flavours.

Drinks and desserts we tried included Thai Tea Tiramisu ($88), Sweet Potato & Taro Pancakes with Vanilla Ice Cream ($88), Butterfly Tea Latte ($48) and Lychee & Rose Butterfly Pea Tea ($48), all of which are prepared for style and taste. Chachawan Chachawan is a popular Thai restaurant on Hollywood Road in Sheung Wan, specialising in Isaan cuisine (northeast Thailand region). Opened in 2013 by the Jia Group and helmed by husbandand-wife team Chang and Narisara Somboon, Chachawan has gained a loyal following. The restaurant was closed for renovation and reopened last October, with a new look and a revamped menu, which we were happy to try out.
位於上環時尚地段的 Chachawan 是區內最受歡迎的正宗泰國依善美 食餐廳，專門提供伊善美食（泰國東北部地區）。 Chachawan 隸屬於佳 民集團旗下，於2013年開業，由「夫妻檔」廚師二人組 Chang 及 Narisara Somboon 經營，獲得一大批忠實粉絲。中間一度關門裝修，去年10月重新 開張，裝潢煥然一新，菜單也做了調整，我們迫不及待來嚐嚐。
Isaan cuisine can best be described as encompassing myriad robust flavours: sweet-salty-sour-spicy, that are used to enhance a wide range of fresh and seasonal ingredients, employing simple cooking techniques.
我們品嚐了 Chachawan 的一些招牌菜餚，從兩道招牌沙拉開始。 Som Dtum Kao Pod（$108），一道配上了鹹蛋、車厘茄、辣椒、 蒜頭及酸甜 羅望子醬的粟米沙律；。另一款沙拉是 Phla Thale —— 香辣海鮮沙拉配檸 檬草、薄荷、辣椒醬、糖醋汁（$148），製作方法相同，都很爽口。
We were there to sample some of Chachawan’s more popular dishes. We began with two signature salad dishes. Som Dtum Kao Pod ($108) is a labour of love in which the salad ingredients are ground in a crucible and then skilfully tossed by the chef. The other salad is Phla Thale – Spicy Seafood Salad with Lemon Grass, Mint, Chilli Paste, Sweet & Sour Dressing ($148), prepared in the same fashion; both are excellent.

The meat and poultry dishes we tried included Sai Krok Isan ($98) – Grilled Isaan Sausage, Pork, Garlic, Rice & Ginger ($98); Sam Chan Tort Glua – Deep-fried Crispy Pork Belly Served with Salted Crush Spicy Tamarind Sauce ($168) and Gai Yang – Chicken Thigh Marinated for 24 Hours in Garlic, Pepper, Coriander, Grilled Till Crispy, Served with Jhim Jeaw Sauce ($158) – we appreciate the distinctive flavours of each dish. We also tried Kai Jiaw – Thai Omelette of Crab, Spring Onions & Sriracha Sauce ($148) which is fluffy and light, and a yummy soup noodle, Khanom Jeen Nam Ngiao – Rice Noodles with Spicy Pork Tomato Broth and Dried Red Cotton Flowers ($128), both excellent.

For desserts, Roti Gluay – Crispy Thai Banana Pancake ($78) hits the spot nicely. Chachawan also serves a collection of Thai beers, cocktails and fruit drinks that include Pineapple Smash ($68), Young Coconut ($55), and Singha Beer ($65), among others. Given its excellent food, the revamped and rejuvenated Chachawan will surely only get more popular. Book early and give it a try.

Ole – A Taste of Castilla 卡斯蒂利亞的味道 Ole, the Spanish restaurant perched above Central on Ice House Street since 1998 and one of our favourite Spanish eateries, is celebrating the diversity of Spanish regional cuisine with the launch of A Taste of Castilla, a 6-course menu ($480 per person, minimum of two) with dishes chosen from the central Castilla Region and the adjacent capital city of Madrid. The menu has been created by Ole’s two Spanish chefs, Antonio Martin and Jesus Pascual, and showcases the Castilla region (Y Leon and La Mancha) cuisine known for its stewed dishes, roasted and grilled meats, desserts, and cheeses. The sumptuous meal begins with four starters to share: Cecina, Sliced Cured Spanish Beef with Almond and Arugula, using airdried beef from the Castilla Y Leon regions; Tigres, Spicy Stuffed Mussels, a traditional Madrid dish made from deep-fried diced mussel meat paste; Calamares, Egg-battered Squid Rings with Citrus & Garlic Mayo; and Callos, Beef Tripe, Chickpeas & Chorizo Stew, another traditional dish from Madrid that is served with thick bread on the side. Then the four mouthwatering main course options are: Roasted Lamb Shank, Segovia Style with Baked Potatoes, which is roasted with a marinade of salt, water and pepper, and looks salivating. Pavia Cod, Stuffed with Shrimps & Saffron Sauce in which the stuffed cod is baked in red wine and olive oil, tasting impressive. Other dishes that round out the choices include Pisto Manchego, Poached Egg & 48-Month-Cured Iberico Ham and Lentils & Quail Stew with Foie Gras. Two desserts are available: Rosquillas Mini Donuts with Orange Natilla Dip and Leche Frita with Toffee & Vanilla Ice Cream, both yummy. A hearty Spanish meal is best consumed with refreshing sangria, especially in the summer. We tried both the Classic Red Sangria ($98/glass, $450/jar) and Strawberry Sangria ($108/glass, $480/ jar) which just hit the spot.

Sandip Gupta Managing Director of S&S Hospitality
S
andip Gupta arrived in Hong Kong as a young man from Kolkata India and worked his way up to become one of the city’s best-known restaurateurs. It’s a prototypical Hong Kong success story, or, as Sandip himself puts it, a “Made in Hong Kong” story. With business partner Sandeep Sekhri, he launched the Dining Concepts Group and their first restaurant, Bombay Dreams, in 2002. Overcoming setbacks and challenges, Dining Concepts went on to open over thirty restaurants and led the way in attracting international celebrity chefs to set up outlets in Hong Kong. After taking Dining Concepts public in 2016, Sandip embarked on his second venture, still breaking ground introducing distinctive and innovative dining concepts to the city. We sat down with Sandip to hear his personal story and his thoughts on business, Hong Kong and his plans.
What is your back stor y? I am originally from Howrah, a town from accross the river Hooghly. I went to Don Bosco School, arguably one of the best schools in Kolkata. I was above average academically, popular amongst students and teachers alike and a great sports enthusiast – it was where my abiding passion for cricket began. I was a happy child, a dreamer who was always keen and eager to go the extra mile in pursuit of my dreams. I always went in as an underdog, firmly believing that there’s no substitute for hard work. A dream does not become reality through magic; it takes a lot of dedication and determination.
How did your dreams come to embrace Hong Kong, far away in Kolkata?
What was the impetus for Dining Concepts, and how were the early years?
Indeed! Hong Kong did not feature in my dreams growing up. I barely knew of the city. After studying hotel management at IAM in Kolkata, I went to work at the Hyatt Regency New Delhi. It was a promising start, and I had no plan to go anywhere else.
I worked for the Harilela Group, at Gaylord for seven years and that nurtured my desire to operate my own restaurant. So my partner Sandeep Sekhri and I founded Dining Concepts in December of 2002 when we opened Bombay Dreams.
Then in late 1995 my dad passed away and I was at a crossroads. There was an opportunity to work in Hong Kong. With growing responsibilities, I made a gut decision to sail away from my safe harbour. Still not 25 years old, I had age on my side and little to lose. I felt it was my time to explore, experiment and live the dream…
We had a challenging start and had to learn the hard way to grow through crisis. The SARS epidemic hit Hong Kong in March 2003, just as we opened the second Bombay Dreams restaurant in Tsim Sha Tsui. Given limited resources, abandoning the project was not an option. With a lot of hard work, passion, and self-belief, we came through – the first six months were tough but we believed in ourselves and in Hong Kong, of course.

Tell us how you grew Dining Concepts to be so successful, especially the cooperation with international chefs? We never thought we would come this far when we first started our venture. The phenomenal success of Bombay Dreams laid the foundation for the growth of Dining Concepts. Although we always planned to move on beyond just Indian restaurants, it gave wings and belief to our future. Nothing succeeds like success, and as the opportunities for growth arose, we adapted ourselves and grabbed every possibility that came our way. It took a lot of self-belief, some luck and a lot of hard work to come this far. We expanded pretty quickly and were soon collaborating with international celebrity chefs, starting with BLT Steak in partnership with Laurent Tourondel. That was a steep learning curve, but it worked wonderfully well, based on a great deal of mutual respect. Soon we were working with the likes of Michael White, Gian Carlo Perbellini, Gordon Ramsay, Will Meyrick, Mario Batali, Enrico Bartolini, Greg Malouf and Jaime Pesaque. We also paired up with major designers such as Ashley Sutton, Tom Dixon and Joyce Wang to create distinctive and exceptional ambiences for the venues.
For your new dining group, S&S Hospitality, what are your plans and aspirations? In cricket lingo, this is our second Innings. The first innings was a glorious and fulfilling endeavour. This time at the crease, we would like to bat with a greater sense of pride and love for what we do. It’s no longer just a numbers game. We’re taking a boutique approach where every concept has a story to tell. End of the day, as Seth Godin would say “People do not buy goods and services. They buy relations, stories and magic. We want our second innings to be about impact and value – to make a difference to Hong Kong’s dining scene. Hong Kong is undoubtedly Asia’s culinary capital; there is always room to experiment and explore new possibilities while staying true to your roots. Our philosophy is to provide ‘value for money’, offering our guests affordable luxury. We want them to remember the experience and not what they paid.
What is the recipe for your success thus far? My dad always said “Believe you can and you are halfway there”. Strong self-belief is a must, along with a passion for what you do. But belief has to be backed by hard work and discipline – you cannot cheat the grind, as the English saying goes. It knows exactly how much you have invested. Other key ingredients are consistency and knowing your strengths and shortcomings. The ability to play to your strengths and have a positive mindset that is ever keen and ready to push the boundaries is so, so important. Above all, success requires the right team – bringing together people who share your passion and vision. Your team defines you. I’ve been lucky to have worked with more than a thousand people over the years, and many have been with me for 10 or 15 years.
What keeps you in Hong Kong? Like many, I came here not expecting to stay for long. This city is so special and unique. Every time away from Hong Kong I just want to come back soon. It is home. The city is the perfect combination of ancient charm and modern sophistication, and so dynamic. What other city offers, within 30 minutes, a beach, a local neighbourhood like Sham Shui Po, a hike, or watching the horseracing? Everything is so easy and convenient. Hong Kong has such a resilient economy. I’ve been through a few cycles and just when you think things may not work out, Hong Kong bounces back. I have strong faith and belief in Hong Kong, I owe my success to Hong Kong.
What do you do in your spare time? How do you relax? I love the simple pleasures of life; it’s pure bliss. The restaurant business is all-consuming, so time at home with the family is my treasure, my soothing balm after a hard day’s work. My tastes are low-key, and a great home-cooked meal is a joy. Listening to my favourite Hindi music is another great way to relax and unwind. I enjoy going for regular walks or an occasional hike, something I do daily.
I’m a passionate cricket fan too; I can talk about it for hours. I have travelled the world to watch the world cups – from the recently concluded one in England that ended in a super over, or 2011 in India where we lifted the World Cup. My all-time favourite player is Sachin Tendulkar, a true ambassador in a gentleman’s sport!

THE UNLUCKY GOVERNOR 倒霉的港督
Arthur Hacker tells us that Sir William Robinson lacked some Irish luck. 亞瑟·克赫為我們講述前港督羅便臣爵士的倒霉經歷。
I
t is said “that it is better to be born lucky than to be born rich.” Unlike his predecessor, Governor Sir William des Voeux (presiding from 1887-1891), Sir William Robinson (1891-1898) was of humble birth. But he was also a very unlucky governor. D e s Vo e u x h a d b e e n a c h a r m i n g , lackadaisical aristocrat who had spent much of his posting shooting snipe on the Yangtze and adored giving parties. ln 1890 he took almost a year's leave; public works ground almost to a halt. However, he did build a new ballroom for Government House and drained the pond at the race track. At the time there was a golf course at Happy Valley. Des Voeux, a golf enthusiast, lost so many balls in the pond that he had it filled in. Lady luck did not smile on the governorship of his successor Sir William Robinson (18911898). He was probably selected as “a safe pair of hands” to tidy up the mess left by Des Voeux. He had spent 37 years in the British Colonial Service and had worked his way up through the ranks from being a humble clerk. Shortly after he arrived in the colony there was a currency crisis,

followed by an outbreak of bubonic plague. This caused a mass evacuation of Chinese residences to the mainland and Hong Kong was declared an infected port. It was not Robinson's fault – he just arrived at an unfortunate time. He managed to cope with these problems, but received little credit from the expatriate community for his efforts. Business was badly affected. At the time there was a popular saying that “power in Hong Kong resides in the Jockey Club, Jardine and Matheson, the Hongkong and Shanghai Bank and the Governor – in that order.” A question had been asked in the UK Parliament about Hong Kong's gambling laws. The colony actually had a Gambling Ordinance but it was totally unenforceable and previous governors had sensibly ignored it. However, Robinson felt obliged to play by the rules and banned gambling on horse racing at Happy Valley The governor, his wife and daughter were among the few spectators who actually turned up to the dismal following four-day race meeting, only to be confronted by a notice that read: “DIED: The Hongkong Races, aged 50, from an overdose of

And indeed, the power of the Jockey Club, Jardines and the Bank proved too great for Robinson and betting returned to Happy Valley. Ironically Robinson enjoyed a game of poker on most Saturday nights, at an establishment on Breezy Path.

When he was invited to give a talk to the Odd Volumes Society, Robinson unfortunately chose to lecture on “samples of Irish wit and humour” and for two hours he bombarded his audience of distinguished academics, intellectuals, pedagogues and missionaries with bad Irish jokes. To wit, “Now Paddy is always either cracking jokes or heads" said Robinson, "so much so that it has been asked: ‘What articles used at dessert are most Irishmen like? Why, nutcrackers of course!” His excellency concluded: “Some of you may say, Sir William, there is no end to your wit,' to which l would reply, ‘Heaven forbid that I should be at my wit's end.’

There is a Robinson Road in Mid-levels and at one time there was another one in Kowloon, but both were named after a previous governor, Sir Hercules Robinson (1859-1867). Poor, unlucky Sir William Robinson was not honoured in this manner. He was, in fact, the only Victorian governor not to have a street named after him.■

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. Explore Sha Tin’s cultural heritage landmarks 探索沙田的文化遺產地標 Sha Tin has a lot to offer in term of cultural history. Tsang Tai Uk, a preserved Hakka wall village is worth visiting, as is Che Kung Temple, one of the city’s largest temples. My favourite is the Ten Thousand Buddhas Monastery which has over 10,000 statues on display. You can get there from the MTR station; it’s a climb of 400 odds steps. Along the way you can admire the fascinating collection of varying Buddhist statues before being rewarded with panoramic views of Sha Tin below you.

As a lifelong Sha Tin resident, I love to go biking which Shatin is known for. There are dedicated paths, so it is safe. The ride to Ma On Shan and Tai Po is wonderfully scenic and enjoyable. 我一直都住在沙田，多以騎單車代步，而沙田以騎單 車聞名，不但有專用路徑，前往馬鞍山及大埔的旅程 風景優美，十分舒適。
