delaide designer Jaimie Sortino has an eye for romantic fairytale confections with a contemporary twist. His latest collection, Rex Royale, brings you the princess moments most girls dreams of. 'Rex meaning sovereign or royalty, seemed to fit the inspiration behind this collection,” Sortino says. Inspired by real-life screen princess and style icon Grace Kelly, Rex Royale has been designed for women who want to create that ‘wow’ moment in a room. “And who wouldn’t want a Grace Kelly moment?” asks Sortino. For this collection, Sortino used the 50s era in fashion as his

source of inspiration, taking the iconic silhouettes and giving the designs a modern-day edge. Sortino chose to design and create his own textiles such as dip-dyed satins, which form beautiful drapes and shapes. You can also expect to see intricately beaded lace, soft pastels and rich red and dark blue hues, signature to Sortino's style and label. Their latest collection, ‘Isle of Capri’, is a timeless range of 100% natural straw brims – think clean lines and versatile styles with an edge. Designing from their Norwood studio, co-creators Rochelle Flynn and Kellie Gage found inspiration in the Italian coastline for this range. “Our high summer collection, ‘Isle of Capri,’ evolved from our love of some of the rocky limestone beaches of Italy. white and colourful villas along the Italian coast,” says Rochelle. Each hat has been created with purpose and quality in mind, reflecting Flynn and Gage's passion for uncomplicated design. “We created a range that could cater for various occasions, styles and personal tastes. Our short-brimmed hats are all unisex and we have concentrated on designing a good variety of moulded crown styles to suit everyone’s head shape,” says Rochelle. T

he pastel-hued Instagram of up-and-coming fashion brand Nell The Label hints at what we can expect from Adelaide designer Charlotte Stanforth. With a visual arts background, the 21-year-old creates her own textile prints, designs the garments, and sews them all together – she’s talented, to say the least. Nell The Label’s dreamy, relaxed designs are a welcome addition to Adelaide’s fashion industry. “I feel that Nell The Label appeals to youthful individuals who like to experiment and have fun with fashion,” says Stanforth. With a keen eye for perfection, Stanforth carefully selects the fabrics

she uses for each of her pieces. “All of my artwork is printed onto silk. It is important to me to use quality and luxurious fabrics that complement the simple silhouettes of my designs,” she says. Stanforth cites art and travel as her main sources of inspiration for Nell The Label. The standout print from her first collection – a blue and grey design featuring watercolour art, illustration and photography – was inspired by New Zealand’s unique landscapes. Presently, Stanforth is busy refining Nell The Label’s first collection, so her designs aren’t available to purchase – yet. Stay tuned for her 2015 launch. INSTAGRAM: @NELLTHELABEL

At the end of each year graduating Bachelor of Visual Art and Design students from The Adelaide College Of The Arts have the opportunity to exhibit a selection of their works in celebration of the completion of their study, aptly names EXIT.

I

’ve been at AC Arts studying the Bachelor of Visual Arts part-time for a couple of years now, majoring in Printmaking. The work I produce is all using letterpress, whether it is lead-type or wood-type on lightweight, almost transparent Japanese papers. I’ve recently started using white inks with a pearlescent pigment mixed in, which makes the text appear almost invisible on first inspection. For me, art is passion. It is a way for me to create and share with people in ways that I would not be able to otherwise. Studying the

Bachelor of Visual Arts has allowed me to push myself as an artist and as an individual. We have such an abundant collection of letterpress equipment at AC Arts. I would not have had the opportunity to study the art of letterpress as much as I have studying at AC Arts. It has such a fantastic community where you can always ask for opinions or bounce ideas with other people. The term EXIT doesn’t signify an end for me, I feel as if EXIT is a transitional passage as I move between one stage in my life to another. The exhibition is a platform for emerging artists to move further in their arts career.

The course has given me the skills to work across several mediums including bronze casting, clay modelling, stone and wood carving all of which I will continue to apply to my work. Having a foundry including experienced staff technicians like Andrew Stock and wizard Rod Lawrie available, has been one of the most valuable assets for me. Exit is a rare opportunity to gain wide exposure for my work and hopefully serve as introduction into the local wider art world.

Standing Ovation 2014 has been a pretty damn big year for designer Simmone Standing. She rebranded her label from Naked Underneath to her own self-titled line, saw her designs grace magazine covers and finally took out the Adelaide Fashion Festival’s Emerging Designer of the Year Award with a collection full of crisp whites, directional cuts and an undeniable 'so fresh, so clean' vibe. We talked fresh starts, whirlwind moments and all-white everything with Adelaide’s designer on the rise. When did you know you wanted to be a designer? It all happened by accident really – I was in primary school and completely unaware of what a designer was, but I just couldn’t help but sketch clothing that I wanted but had never seen. How would you describe your label and its aesthetic? This range specifically is all about clean cuts with geometric shaping; aside from pleated mesh the range has nothing soft or draped. My aesthetic, however, is always changing; each year my look changes and so do my designs and my inspirations. My winter range inspiration is currently looking at large folds and heavy fabrics and possibly some fur.

FAST FIVE Who are you favourite designers/labels? There are just so many! At the present time though I love Australian labels such as Ellery, Toni Maticevski and Dion Lee. If you had to wear one thing for the rest of your life it would be… A black tailored suit with a t-shirt and stilettos… never dates. I never leave the house without… Great shoes, lip balm

Tell us about your winning collection. As the collection was to be for the launch of my new label and entry into the Emerging Designer Award, I chose to keep it completely white to show the detail in my cut and the fabric choices; I wanted it to be clean and fresh. I think cumulatively-with all the pattern making, development and production-this whole range possibly took me over 500 hours, although it felt like a million. What were your first thoughts when you were announced as the winner? “Did they just say Simmone Standing? Oh my gosh, I have to walk down that runway, eek!” What’s your personal style like? I would describe it as eclectic and constantly evolving. My style changes day by day, but as long as I feel I’ve dressed for myself I never feel lost in my clothes. What’s next for you and the label? Next I’ll be focussing on my 2015 winter range and my spring/ summer 2015/16 range, which I’m hoping may include some swimwear. My next big goal is incorporating menswear into my ranges.

With Naked Underneath I was predominately focussed on creating a saleable product for the masses – this never sat well and I never completely loved what I had created. After giving it one last go – with an attempt at manufacturing overseas that went horribly wrong – I decided it was time for a change.

Best piece of advice for emerging designers? The hours are terrible, yes, but keep at it, as it’s worth it. Don’t compromise on quality. Understand your worth; your blood, sweat and tears go into each piece, so don’t undercut yourself. FASHION ICONS A REVIEW OF

P

aris: long-standing fashion capital. Adelaide: a young fashion industry carving out its niche. Often overlooked in favour of its eastern state counterparts, Adelaide is rarely treated to an elite fashion exhibition, which is why Fashion Icons: Masterpieces from the collection of the Musée des Arts Décoratifs, Paris is a unique opportunity to say 'bonjour' to some of the finest fashion in the world. Fashion Icons is a collection of over 90 haute couture and ready-to-wear garments from fashion’s most exceptional innovators, such as Christian Dior,Yves Saint Laurent, Coco Chanel, Alexander McQueen and John Galliano. It can be viewed exclusively at the Art Gallery of South Australia until February 2015. Curated by Pamela Golbin, chief curator of 20th and 21st century fashion and textiles at the Musée des Arts Décoratifs, the exhibition follows the evolution of fashion over seven decades, from 1947 to the present day. Although there is a focus on French fashion houses and their vision, Fashion Icons includes pieces from influential international designers as well, creating a global design experience. It is testament to the evolutionary nature of the fashion industry: how notable designers have impacted the industry and how society has driven the availability and price point of garments. The historical journey begins in 1947, with the rounded shoulders, cinched waists and full skirts of Christian Dior’s post-war New Look. With the 1950s comes draped and structured evening gowns from Dior, Pierre Balmain and Cristóbal Balenciaga, some featuring the most exquisite jewelled detailing. The rise of affordable fashion in the 1960s features simpler cuts with a sportier aesthetic, as well as experimental metal designs from Paco Rabanne and François and Bernard Baschet.

The 1970s sees inspiration drawn from fine art, and the emergence of Japanese designers such as Issey Miyake and Comme des Garçons. The 1980s highlights the contrast between the rebellious austerity of the Japanese and the excesses of luxury sought after by status-hungry consumers. Minimalism truly comes into play in the 1990s, with designers such as Helmut Lang focusing on fabric rather than form. It is during this period that men’s fashion gets a look in, with a few designs on show for the gents. Concluding the exhibition is an eclectic assortment of garments from the 2000s to present, including the Dolce & Gabbana chrome bustier famously worn by Lady Gaga. The Art Gallery’s basement is an ideal setting for a stroll through fashion’s evolution. With each era defined within a room, the design journey is clearly outlined on a clean, modern backdrop. Accomplished French designer and architect Christian Biecher has created a cleverly arranged space that is uncluttered yet visually stimulating, with mannequins perfectly poised on low platforms, and standout pieces displayed in monumental glass cubes, accompanied by video projections of films and runway shows on the walls. eta Kruger is an Adelaide-based jewellery designer whose stunning hand-constructed jewellery pieces are, without a doubt, individual works of art. We chatted with Kruger, who has developed a reputation for her creativity and clever use of composition, colours and shapes, to gain an insight into her background and her craft.

Inspired creatively from her early childhood years, Kruger studied a Bachelor of Visual Communication and worked as a graphic designer and illustrator.“I didn’t know contemporary craft jewellery existed until my mid-20s, and therefore I started working in other creative fields which require similar skills. Graphic design training gave me a language of shape and colour that I could communicate with, and illustration opened my thoughts to this visual language being hand made,” explains Kruger.“I like jewellery because it encapsulates both of those impulses. They are hand-made symbolic objects, which visually describe who we are and what we want to be.” Later, Kruger went on to study a Bachelor of Visual and Applied Arts specialising in jewellery, then worked as an assistant to jeweller Scott Wilson in London and undertook the Associate training program at the JamFactory in the Metal Design Studio, one of her career highlights. Kruger is certainly one busy lady; she has also undertaken a mentorship with jeweller Karl Fritsch in Germany and

New Zealand, a JamFactory residence, and workshops at Carclew’s Pom Pom Space to further explore and inspire her craft. Currently, Kruger is assembling work for a solo exhibition ‘Shapes of Things’ in February 2015 at Christchurch's The National. These works draw inspiration from textile artists of the Bauhaus, as well as paper craft activities devised by Friedrich Froebel in the 1830s for kindergarten students.“I am interested in these sorts of arrangements in geometric shapes which remind me of jewellery,” explains Kruger.

On a typical workday, Krugerb can be found researching materials and supplies, making prototype models, folding metal and painting a lot.“A collection or exhibition usually takes about a year for it to evolve in my mind, with lots of research and experimentation in between. I then take at least six months to play with designs and materials, to ascertain the physical weight and feel of what I am trying to achieve,” she says . “The final construction of work usually takes the least amount of time because my initial design work will take into consideration jewellery manufacturing processes; this also means the pieces can be made in multiples and eventually allows me to spend the majority of my time researching new collections.” Kruger successfully balances creativ ity and wearability in her pieces.“I the idea | 3 0 AT T I T U D E M A G A Z I N E |

that the body can be an exhibition space, and by wearing a piece of jewellery you are able to illustrate an aspect of your identity or perhaps the mood you are in,” she says. “There are lots of technical restraints in making a piece wearable; you need to consider weight, comfort and durability. I find these limitations useful for working creatively because they lead me towards unexpected results.” After many years, Kruger is seeing a more integrated approach to her jewellery pieces, incorporating her background in graphic design and illustration. “This combination of techniques is something I try to strengthen in my work because I hope it will take me in new directions."

Did you study? I worked in a salon after school as my parttime job; I was very lucky to gain a four year apprenticeship.

Did you study? The first was a Bachelor of Marketing at UniSA. The second was Visual Communication (majoring in Graphic Design) at UniSA. I learnt a lot of good stuff. How did you get into your role? It was a natural progression, really. In my final year at uni I began to get some freelance work, and from there things just snowballed. Now Mash is a studio of approximately eight to nine people, with six to seven in Adelaide and two in Melbourne. What is the best thing about your job? The fact that I have been lucky enough to be able to earn a living from something I love doing. Meeting exciting clients with inspiring business ideas, as well as other creatives and artists that we collaborate with. Advice for others aspiring to be in your field? If you love it, and you're good at it, do it! Getting employment may be difficult, but keep at it and don't rule out going interstate or overseas.You can always build your skills and come back with some experience under your belt in a few years. What is a normal day at work for you? Check and respond to emails, check what meetings are on for the day. Talk to the guys here about how jobs are progressing, talk and develop ideas and concepts. Maybe a bit of research time and some design time too.

Did you study? I studied a Bachelor of Media at the University of Adelaide. How did you get into your role? I was originally working in our sales department and the directors told me they wanted to take PR in-house. They offered me the opportunity to start the new department – I was ecstatic to say the least. What is the best thing about your job? Besides working with so many inspiring people, it is so rewarding when you see the results of your hard work in a magazine, website or on the runway… Being able to travel for work is also a bonus! Advice for others aspiring to be in your field? Never undervalue work experience. It sounds like a cliché – but it’s so true! Any small opportunity can open the door that can lead to the next big thing. What is a normal day at work for you? Everyday is always so different!

How did you get into your role? It certainly didn’t happen overnight. Like all good things, it takes time, determination, and experience to become a master at something. Robert Bava and I have owned our salon for over 20 years now. What is the best thing about your job? Definitely the diversity! It could be a day in the salon, perhaps getting called out for a celebrity client who’s flown into town, or a shoot in the outback. The best thing is making people feel great. Oh! Our team, we’re like a giant family; we treasure all of them. Advice for others aspiring to be in your field? Speak to your VET coordinator about a Certificate 2 in Hairdressing if you’re still at school. Door-knock at salons and arrange a work placement for experience; age is irrelevant, young or mature. Importantly, make sure you find it easy to serve others, the creative side is secondary to this aspect. What is a normal day at work for you? Some days I work in the salon on clients, but I also teach hairdressing. I travel nationally & internationally (Paris, Milan and NewYork) a lot for work too. I also do some freelancing session work.

Spread over Saturday and Sunday, the change will bring double the number of huge headliners including Slipknot, Marilyn Manson, Sound Garden, Faith No More, Judas Priest and Incubus. Soundwave 2015 won’t just be about 90s rock giants though. We can all relive our teenage My Chemical Romance phase, with former MCR frontman-turned-solo artist Gerard Way heading our way with his new flavour of scuzzy pop rock. ustralia’s biggest gathering of world musicians will once again descend on Botanic Park in March for WOMADelaide 2015. Headed by legendary Senegalese singer, percussionist and social revolutionist Youssou N’Dour, and Irish tour de force Sinead O’Connor, the world music and arts festival will bring together artists from every corner of the globe, including Canadian crooner Rufus Wainwright, singer/rapper Neneh Cherry, Brooklyn muso Sharon van Etten and Swedish sweethearts First Aid Kit. Leading the local contingent is collaborative project The Painted Ladies, Aussie hip hop crew Astronomy Class, Go-Betweens co-founder Robert Forster, electro-duo Willow Beats, Adelaide blues rock artists Max Savage & the False Idols and Chris Panousakis AKA Timberwolf. Panousakis tells Attitude it’s a “surreal” feeling to be on the line-up of a festival of this calibre. “I’ve been to WOMAD for the last three or four years in a row; it’s a very unique festival, and

one I’ve always admired. Knowing how it felt as a crowd member and to then be on the other side as a performing artist makes me feel pretty lucky.” By the time the festival comes around Timberwolf will have released his new EP Flux, which will feature a newly expanded line-up of backing musicians.“It’s a full band now, which is probably what I’m most proud and enthused about because it’s a much more thought-out and lush. “It’s a mature step in my songwriting and production which I’m really happy about.” Panousakis says he’s looking forward to bringing the new songs to a large festival setting. “An intimate show is nice to strip things down and make sure your songwriting is in check, but I find the switch a lot more fun, getting a full band behind me and playing a big festival slot,” he says.“As a performer, I’m absolutely in my comfort zone and I tend to have a lot more fun and run around the stage and really enjoy myself; that’s where I’d rather be”.

he Adelaide Festival returns in February with 42 stunning events across live music, theatre, dance and visual arts including 22 Australian premieres and 26 events exclusive to Adelaide. The public art project Blinc will open the 30th Adelaide Festival, transforming the Torrens Riverbank and Festival Theatre precinct into a canvas for digital art before the program is unleashed, including Danny Elfman’s Music from the Films of Tim Burton, Tommy and Unsound. One of the highlights on the program is Kid Koala’s multidisciplinary show Nufonia Must Fall, based on his graphic novel of the same name about a lovelorn robot. The Canadian DJ/producer/musician has hooked up with Academy-Award-nominated production designer KK Barrett (Her, Being John Malkovich, Lost in Translation) to bring the story to life in an ambitious live show. “I wanted it to be

a fun experience; it’s not one where people are scratching their chins, like ‘what does it mean?’” Koala says. “We want people to come in and escape into this world and not break that dream while they’re there.”The complex production involves more than a dozen miniature stages, a cast of changing puppets, live lighting and live music courtesy of Kid Koala and the Toronto-based Afiara Quartet. “It’s really just a nice amalgamation of the theatre world, the puppeteer world, the cinema world, and the live music concert world,” he says. “And all of us bring our own angle of experience to that; the string quartet from their classical concerts, me from DJing dance floors, KK from designing and directing films, the puppeteers from doing very intimate close-quarter puppet shows.” Nufonia Must Fall is at the Dunstan Playhouse from March 4—7.

hether it’s bumping into your favourite international comedian on Hindley Street or stumbling across the next big talent finding their feet on a tiny stage in the depths of the Garden of Unearthly Delights, it’s impossible not to be swept up in the whirlwind that is the Adelaide Fringe Festival. With more venues and artists than ever, Adelaide will play host to over 1000 acts from around the world and countless fans hungry for a cultural fix. There's just over a month to breathe in as much Fringe goodness as humanly possible, so we’d suggest setting aside some quality time with the Fringe program and a highlighter to set your plan of attack. For globetrotting circus collective SOAP, the Fringe’s appeal has been clear since winning over Adelaide audiences in 2012. “We rarely perform in fringe festivals, but we had a great time three years ago and we certainly look forward to meeting colleagues and seeing great shows by other companies,” SOAP’s producers told us. Now seven years into its ever-expanding run, the show has gradually evolved since SOAP'S last appearance down under. “From the 2012 Fringe cast, only two performers are the same, and with every new cast member the show, of course, changes a bit… of course, the highlights from 2012 won’t be missing, but we always try to develop the show and make it funnier and more entertaining.”

he biggest event on the dance music calendar, Future Music Festival, is back for another whopping dose of drum n bass, house, R&B, hip hop, techno and more. rom a niche indie event to an absolute fixture of the summer festival season, St Jerome’s Laneway Festival is back for another year with a typically excellent line-up of Triple J favourites and on-the-rise international stars. This year-old mate Jerome has curated a line-up that’s basically a who’s who of your iTunes most-played tracks, with FKA Twigs, Highasakite, Benjamin Booker, Caribou and more. As always, Australia is well represented, with Courtney Barnett, Pond, Seekae, Dune Rats and Adelaide’s own Jesse Davidson leading the local produce. After years of increasingly cramped conditions at UniSA’s City West campus, Laneway blew our minds when they relocated the entire festival to Port Adelaide in 2014. The vast open spaces of the portside docking yards were

the perfect answer, with the looming presence of the dilapidated Hart’s Mill building helping to retain the grungey, improvised appeal that first made the idea of Laneway festival such a winner. If 2014 could be considered a test run for Laneway’s new waterside home, 2015 will see the festival really hit its stride, with some indoor spaces to take the edge off that mid-afternoon sun and a rejigged site plan aimed at eliminating those occasional crowd bottlenecks as audiences race from one big act to another. There’s also said to be a new art element at this year’s event, not to mention the usual mix of excellent food vans and quirky pop-ups that made last year’s Laneway a success.

he food wizards behind Happy Motel, Andy Nowell (Bubby) and Josh Cook, have teamed up with the Botanic Bar for some ramen slurpin’ fun. Having spent six weeks eating their way through Japan, Cook and Nowell have brought their newly-found ramen knowledge and love for the dish back to Adelaide. Chef Bubby, as he is commonly referred, has three variations of Japan’s traditional noodle soup on offer. Intended to be sucked straight from the bowl, these “slurpy noodles” are set to make your taste buds go bananas. The most popular of the three variations on the menu is the Shio Rame bowl.You can find some interestingly unusual ingredients, such as fermented bamboo shoots (menma), smoked dried tuna (katsuobushy), boiled

eggs soaked in soy sauce, and to top it off, some melt in your mouth pork belly (chashu). Quang Nguyen from Devour Dessert Bar supplies ice cream, creating unique flavours like pandan leaf with deepfried lotus root crisps and black sesame with lychee. Oishii! This cheap and cheerful menu is on offer every Sunday at the Botanic Bar from 4pm (noodles from 6pm) and you won’t pay more than 15 bucks.

a Rambla is Barcelona’s most wellknown street, a boulevard lined with trees that serves as a hub for Catalan culture. It’s also the namesake for the new kid on Peel Street. A passion for hospitality brought together Tomas Smith, KyleYoung and Stephanie Gibbs, who turned a trip to Barcelona into a business venture, giving us La Rambla.“We really wanted to bring back a little piece of La Rambla and drop it on a street in Adelaide,” says Smith. “Not a Spanish restaurant, but a Spanish experience.” Not being afraid to get their hands dirty has allowed the team at La Rambla to create the most authentic representation of the Spanish culture as they experienced it. Spanning three levels, the space boasts two bars and is complete with an outdoor deck area. Smith describes the fit-out as “rustic, but classy” with a mix of timber furnishings, polished floorboards and hanging light fixtures. | 6 4 AT T I T U D E M A G A Z I N E |

The hero though, is the food. “All of our dishes will be exactly as you would find them in a tapas bar on or around La Rambla,” says Smith, on behalf of head chef Jose Miguel Lontoc, who brings more than 20 years’ experience to the table. Our picks include the jamon y huevo de codorniz, the tuetano de hueso asado, and the Fideua paella. While you’re at it, get your hands on a jug of gin and cucumber Sangria! The staff encourage you to try the Spanish wine list —“We’re not a 2 for 1 vodka venue!” says Smith. ittle Miss group has introduced their newest summer venture, The Crab Shack, part of Little Miss Miami. The Shack is Little Miss Miami’s Caribbean niece, crashing next door for the summer crabbing season and serving up some of the freshest seafood fare. The team from next-door’s East End Studios have helped to create a new fit-out, which looks like a beachside shanty bar in the heart of the CBD. It has been transformed into a seaside getaway complete with white -washed benches, thatched roofs and even a old tin-can boat. Come in for the shack special; the crab boil, made up of freshlycaught South Australian blue swimmer crabs, mussels and prawns.You can’t go past the lime-and-sugar-cured salmon dish for melt-in-your-mouth freshness. If seafood isn’t your thing, the menu also boasts a mean jerk chicken to spice up your life and an OG beef burger. The Crab Shack is perfect for a weekend session or a mid-week Caribbean pick-me-up. ouveau’ - a red wine that is typically released vin de primeur—that is to say, within the calendar year the fruit was harvested. Because there isn’t any influence of oak or maturation time, the wine is typically bright, youthful and perfumed – ideal for a lighter red to drink during summer nights. Taken from their biodynamically certified vineyards in McLaren Vale, Wirra Wirra’s 2014 Amator Nouveau is a fascinating blend of Touriga Nacionale, Grenache and Mataro. Less than 100 cases have been made. The Process: Three small parcels of touriga, grenache and mataro were cofermented together in a single two-tonne open fermenter. The grapes were fermented for an eight day period, kept on skins for a week post-fermentation and then pressed via basket to stainless steel to undergo malolactic fermentation. Once through malolactic fermentation, the wine was kept on light lees until bottling in late July 2014. Smells like: Poached, Satsuma plums, butchers shop smokehouse and ripe blackcurrant floods the nose. Subtle pepper, forest floor and strawberry cream add further to the aromatics.

Tastes like: Plum juice, red-fruit conserve and savoury palate with some smoked meat and spice. There is a soft juicy acid and a fine, lingering tannin structure, without the influence of oak, complete the palate. Drink with: Fennel and duck sausages. COFFEE WITH A CAUSE

M

onastery Coffee is an Adelaidebased micro-roasting foundation pioneered by head roaster Adam Marley, who recently traveled to East Africa to source his beans from coffee farms in Burundi and Uganda. The purpose of his trip was twofold: to discover the best coffee in East Africa, and to build a long-term relationship with the producers to ensure that the living conditions of the local communities improve. “We’re doing this not only by paying a significant premium on the market price of coffee, but by investing in their local communities and bringing their stories home to share with our customers,”says Marley. The program is called ‘The Long Mile Project’, aimed to facilitate direct and meaningful relationships between coffee roasters and coffee growers. “We aim to improve the livelihoods of coffee growers and enhance the quality of coffee in Burundi by investing time and resources into knowing the people who grow the coffee,”he says. The program reaches out to roasters like Marley, who want to create a mutual benefit between the farmers (producer) and Monastery Coffee (roaster).The ethos of the program resonated with Marley, and soon blossomed with the shared love and passion for coffee and the people behind the cup. “I’m incredibly excited by the prospect of working with other people that are just as passionate about coffee as me,”he says. "For us it is all about two things; getting lost in the sublime and delicate flavours that one can find in ‘the cup’, and knowing where that coffee came from – who grew it, what were the growing conditions of the coffee tree, and what are the living conditions of the producer?” Monastery Coffee is a small-batch speciality coffee roaster based here in Adelaide. It is a venture backed by much-loved Adelaide coffee haunt, Argo Espresso. Marley's roasting aspirations all began while he was the head barista at Argo. Despite graduating with an Economics Degree, the talented individual decided that he would change from coins to coffee, and begin roasting. Marley explains the roasting process to be incredibly intricate and subtle.“It all comes down to manipulating the variables at your disposal in order to achieve the flavour in the cup that you desire. To let the coffee express itself the way you had hoped

they were expected; dusk was turning into night. These farmers were attempting to carry heavy sacks of coffee cherries over 4km on dirt roads with sheer drop-offs of hundreds of metres on each side – without any light. "Instead of simply waiting around to see if they made it, the founder of The Long Mile Coffee Project, Ben Carlson, decided we should attempt to locate them by driving. Eventually we found them struggling in almost total darkness. We helped them load their coffee onto the top of the beaten-up old Land Rover and told them we could handle it from there – they were then able to return home safely to their families. We watched the coffee being processed under spotlights powered by an old generator, the whole time thinking about those farmers. It is the hard and long labor endured by coffee farmers, which is often forgotten about or not appreciated that Marley aims to highlight.

However, these factors that contribute to the coffee’s character. Marley explains that there are various processes put in place to ensure the quality and taste of coffee continues to develop. A factor known to contribute to the everdeveloping flavour is the altitude in which it grows. The coffee coming out of the East African regions is grown at high altitude, producing a complex, vibrant and clean flavour.“The higher the altitude, the better quality,”Marley says. Once the coffee cherries are ripe, they are handpicked and loaded into baskets weighing around 50kg each. The farmers carry the caskets atop their heads and walk a long 4km before arriving at the local washing stations, where the process continues. Even though Marley has returned home from his trip, Monastery Coffee’s contribution will continue. The profit made from the sales of Monastery Coffee in Adelaide will be reinvested into African communities to improve their infrastructure and living conditions. THE WONDER OF WINKLER GALLERY

T

here is a lot of people power behind the new O’Connell Street eatery, The Wonderful Winkler Gallery. It is a collaborative project between Adelaide restaurateur Walter Ventura and the creative team behind Gin Long Canteen, Lucky Lupitas and Tijuana Showgirls. Their first exhibition, Cliché, features 24 local artists who have expressed their own interpretation of the French narrative and Gallic peculiarities through art, that covers every inch of Winkler's interior. The space blurs the lines between gallery, restaurant and bar. “Together these elements act as one, and in doing so offer a new and unique vehicle for contemporary art,” he says. He offers an insight into the extraordinary and magnificent world of the French. “Whilst the French are sometimes viewed as stiff or conservative when it comes to dining we dismiss this notion by offering a relaxed French-inspired dining experience surrounded by wonderful art, youthful passionate staff and French abstracted food,” Ventura says. Head Chef Nu Suandokmai is at the helm, creating delicious French-inspired dishes with a slight twist. Menu must-eats include the 66-degree cooked egg with asparagus and truffle mushroom (66 Degree Egg), succulent lamb rack with a herb crust, carrot purée, confit cherry tomato (Bardot’s Rack), and the duck breast with

deliciously sweet prune sauce and orange segments (Post Modern Duck A L’Orange). With its seductive dim lighting, exposed incandescent light bulbs and concrete floor, tan leather booths, perforated walnut timber and intriguing array of art, this restaurant is simply a feast for the eyes, offering guests an overall French experience in a playful, although kooky.

outh African cuisine isn’t something that too many of us are familiar with, but that’s all about to change thanks to the East End’s newest addition. Africola is a labour of love project for South African-born chef Duncan Welgemoed (the man behind Bistro Dom and a series of degustation dinners at Lola’s Pergola), who has put a contemporary spin on the kind of food that he grew up with.“No one in the world is doing what we’re doing,” says Welgemoed. But he welcomes everyone to discover his brand of gastronomy fusion of South African flavours with some of his Portuguese, Indian, Malaysian and Dutch influences. “Africola is going to be all things to all people.” While the menu calls for a combination of traditional and contemporary cooking techniques, which involve slow-cooking certain dishes over coal and ash, Welgemoed and the team at Africola are “very militant” about a focus on South Australian produce. What’s more, Welgemoed has gone back to his roots in showcasing one of Johannesburg’s signature dishes – peri peri chicken. It’s a must-try. To wash it all

down, look no further than their iconic list of cocktails. Sample their signature “Africola” or even a “Supa Hepi Time” (the house aphrodisiac!). If you’re looking for something a little less exotic, there’s a thoughtful selection of both South African and local wines, or even Africola’s very own brand of beer named “Mufata” . However, a trip to Africola is as much about the food and drink as it is about the whole dining experience, according to designer and part-owner, James Brown (MASH). to be part of the culinary process amidst a vivid colour palette and an eclectic mix of décor (a lot of which is handcrafted).“Expect to feel like you’re in a colourful Sheebeen and Braai in Johannesberg, from the design and the music, right through to the handmade plates, ” says Brown. So whether you’re after a cocktail and a snack or an indulgent dining experience, step out of your comfort zone and get acquainted with Africola in all its glory.

Did you know that humans have been making beer for 6000 years? It’s not the first thing you think about when you’re drinking beer at your local watering hole. But there’s an art behind that deserves appreciation and that is exactly what the short courses at TAFE SA aim to teach. Courses are offered in Beer Flavour Training and Mash Brewing at the Regency Campus Brewery, which is fitted out with a modern brewery set-up that allows students to learn all the technical steps.

Stephen Nelsen, lecturer in brewing, is experienced in all things technical and the chemical processes but he also wants people to appreciate that beer is also largely an agricultural and horticultural process. Involved in over a dozen microbreweries in some way or another, Nelsen’s peers, pupils and protégés now work in many of our favourite local breweries including Coopers, Brew Boys and Lobethal Bierhaus. What may often be overlooked is that there is an incredible amount of science that goes on behind the scenes of beer-making, which these courses in beer production will touch on. Most importantly though, the course fosters the art of beer-making and the passion that these students have for the craft. Cheers!

Jackson’s Story After completing the two short courses on offer, TAFE SA former student Jackson Beavas now works at Woolshed Brewery in Renmark. While small in size, the beers that are produced on site are all sold locally to businesses. The brewery was also approached by Jamie’s Italian wherre they are now have their Summer Ale on tap.

riends and business partners Stuart Duckworth and Sam Weckert, two of the talented entrepreneurs behind awesome ventures East End Studios, Little Miss Miami and Royal Croquet Club, invited us into their incredible home, a converted church on a pretty Parkside side street. Duckworth and Weckert moved into their home 12 months ago. Duckworth, who coincidently is the son of a priest, spotted the rental listing online and snapped it up straight away. He even highlighted his dad’s vocation on the rental application in the hope it would give them the winning edge. The building itself has had quite a history, having had a number of previous uses, including, rumours say, a past life as a brothel, before being updated and converted into dwellings. The conversion has been done tastefully with beautiful original features being retained, such as the magnificent feature stained glass window, Duckworth and Weckert's favourite feature of their home. A mezzanine open-plan living space with high ceilings is the heart of the home and incorporates the original choir steps as a stand-out feature. As they are both lovers of Danish designed furniture, much of Duckworth and Weckert’s furniture is sourced from second-hand and antique stores and complements the space well. Although a carpenter and joiner by trade, Weckert has had limited free time to make furniture for their home, however he has made a few pieces including some artistic light boxes displayed on the choir steps. The layout and original features of the church make hanging art on the walls a challenge, however the beauty of the original features shine as artworks in themselves. With Duckworth and Weckert’s business ventures going great guns, the only downside is they are often too busy working to spend as much time in their amazing living space as they would like.
