Découvrir l'art et le Japon avec le Jazz Français
Lorsque j'entends le mot jazz je pense aux années folles de 1920, ce n'est donc pas étonnant que ce soit cette même époque qui vit éclore ce style au Japon. D'origine américaine, le jazz a vécu les hauts et bas historiques de la politique étrangère de ces deux pays. Bien que ce style de musique fût banni durant l'époque de la 2e guerre mondiale, il fût ravivé durant l'après-guerre et c'est cette époque qui marqua les débuts d'une artiste remarquable: Akiyoshi Toshiko. Je tiens à mettre Akiyoshi Toshiko de l'avant, car non seulement c'est important de souligner les artistes femmes, mais c'est aussi intéressant lorsqu'on trouve un lien entre le Japon et le Canada. Elle était la protégée d'Oscar Peterson, célèbre pianiste et compositeur jazz de La Petite-Bourgogne à Montréal, et c'est grâce à lui qu'elle réalisa son premier album. Au fil du temps elle vint à incorporer des thèmes, harmonies et instruments japonais, tels le tsugaru shamisen (style de musique avec le shamisen provenant d'Aomori ken) ou le tsuzumi (tambour en forme de sablier); Elle composa aussi une pièce en trois parties Hiroshima-Rising from the Abyss en hommage au bombardement d'Hiroshima.
Discovering art and Japan with Jazz English
Did you get a chance to go to Divan Orange back in May for the NEXT MUSIC FROM TOKYO vol 6? It was a really great opportunity to discover new bands and styles. Although each artist had a great performance (Kinoko Teikoku really stuck with me,) it was Jizue that inspired me to write this month's piece. Hailing from Kyôto, they blend many musical styles into their jazz performances. This got me thinking about the history of jazz in Japan. When I think of jazz I think of the roaring 20's, it's therefore no surprise that it emerged in Japan during that very era. Being of American origin, this style of music has been subjected to the historical ups and downs of both countries' foreign politics. Although jazz was banned during WWII, it was revived in its post war years, an era which marked the beginnings of a remarkable artist: Akiyoshi Toshiko.
Pourquoi ne pas incorporer des éléments japonais dans le jazz, puisque le jazz lui-même est déjà un mélange d'influences européennes et africaines. Ces contemporains firent de même, Hideo Shiraki incorporait le koto et Nobuo Hara des chansons folk. Il semblerait pourtant que ceci découla d'une nécessité de se faire une place et se démarquer sur la scène internationale. Peut-il donc y avoir du jazz japonais ? Il me semble difficile de définir le jazz comme pouvant être japonais, historiquement parlant c'est une importation américaine (grâce aux Philippins vivant au Japon). Cela signifie sans doute qu'un certain style, rythme et culture entourant le jazz ne pourra jamais vraiment être japonais. Toutefois, je ne crois pas que cela veuille dire que c'est non-japonais. Après tout, qu'est le jazz? C'est un ragoût musical qui permet de s'exprimer de manière créative; n'importe quel pays peut assimiler et participer à l'évolution de ce style. Bien que le Shibuya kei, par l'utilisation de la pop et synthpop ainsi que de l'électronique et de la danse, a rendu le jazz plus accessible au grand public, il n’en reste qu’aujourd’hui au Japon c’est un style alternatif. Les artistes plus connus sont Takuya Kuroda et Hiromi Uehara. Maintenant vous pouvez ajouter Jizue, mentionné en début d'article, à la liste des artistes que vous connaissez! Je vais continuer à découvrir la diversité qu'offre ce genre de musique et, je l'espère, me familiariser avec plusieurs artistes Japonais ou encore des artistes étrangers faisant usage d'instruments japonais. Que l'aventure musicale commence !
I'm taking the time to highlight Akiyoshi Toshiko because, not only is it important to bring attention to female artists, it's also nice when you discover a link between Japan and Canada. She was the protégé of Oscar Peterson, the famous jazz pianist and composer from Little Burgundy in Montreal, who helped her record her first album. She eventually incorporated Japanese themes, harmonies and instruments such as tsugaru shamisen (Aomori ken style of shamisen music) or tsuzumi (hourglass drum); she has also composed a three-part suite, HiroshimaRising from the Abyss, as homage to the Hiroshima bombing. Akiyoshi Toshiko's incorporation of Japanese culture into jazz music seems like a no brainer since jazz itself is a hodgepodge of European and African influences. Her contemporaries also incorporated Japanese elements such as Hideo Shiraki with the koto and Nobuo Hara with folk songs. However, this appears to have been done in order for the artists to set themselves apart and forge their place in the international market. So, is there such a thing as Japanese jazz?
From what I can gather, it's very difficult to categorize jazz as Japanese. Historically speaking, the style of music is an American import (by way of the Filipinos in Japan.) I assume that signifies that a certain style, rhythm and culture surrounding jazz can never fully be Japanese. However, I don't think it means it's un-Japanese. After all, what is Jazz? It's a musical melting pot used to express creative freedom; any country can assimilate and participate in the nurturing of this style. Although Shibuya kei, which uses pop or synthpop and even electronic and dance, has allowed jazz to reach a mainstream audience, it is today an alternative style in Japan. Some of the more well-known artists are Takuya Kuroda and Hiromi Uehara. Now you can also add Jizue, mentioned at the beginning of this piece, to the list of artists you know! I'm going to continue exploring the diversity offered by this genre and hopefully become familiar with more Japanese artists or even foreign artists using Japanese instruments. Let the musical adventure begin!
ジャズを通し芸術と日本を発見 去る5月、Divan OrangeにNEXT MUSIC FROM TOKYO vol. 6を観 に行きましたか？このイベントは、新しいバンドと斬新なスタイルに 出会える格好の場所でした。 どのアーティストも素晴らしいパフォー マンスでした（きのこ帝国には心底シビレました）が、今月の記事を 書く発端となったのはJizueでした。京都出身の彼らは多様な音楽ス タイルをジャズパフォーマンスの中に取り入れていて、 日本における ジャズの歴史について考えるきっかけとなりました。 ジャズといえば1920年代の隆盛期がまず思い浮かびます。ですか ら、 まさにこの時代に日本でジャズが演奏されるようになったのも不 思議ではありません。アメリカを起源とするこの音楽スタイルは、そ れゆえ両国の外交政策の歴史的浮き沈みに翻弄されました。第二次 世界大戦中ジャズは禁止されましたが、戦後再び演奏されるように なりました。 この時代に秋吉敏子という非凡なるアーティストが誕生 しました。 秋吉敏子氏について時間を割いてでも強調したいのは、女性ア ーティストに注目することが重要だからというだけでなく、日加間の 繋がりも垣間見られるからです。秋吉氏は、モントリオールのLittle Burgundy出身の有名なジャズピアニストです。作曲家でもあるオス カー・ピーターソンに才能を見出され、最初のアルバムをレコーディ ングする援助を受けました。彼女は日本的なテーマや曲調、 また津軽 三味線（青森県特有の三味線）や鼓（砂時計型の太鼓） といった和楽 器を徐々に取り入れました。 また、広島の原爆投下への哀悼を示して、 「ヒロシマ〜そして終焉から」 という第三楽章からなる組曲を作曲し ました。

Êtes-vous allés en mai au Divan Orange pour NEXT MUSIC FROM TOKYO vol 6? C'était une excellente occasion de découvrir de nouveaux groupes et styles. Ce fût une agréable surprise de découvrir tous les artistes (je retiens en particulier Kinoko Teikoku), ce fût Jizue qui me donna l'idée pour l'article de ce mois-ci. Originaires de Kyôto, ils mélangent plusieurs styles avec leurs compositions de jazz. Ceci m'a fait penser à l'histoire du jazz au Japon.
秋吉敏子が日本文化をジャズ音楽に取り入れたのは、 とても自然 なことのように思えます。 というのも、ジャズ自体がヨーロッパとアフ リカの文化が融合したものだからです。白木秀雄が琴を、原信夫がフ ォークソングをという具合に、彼女と同時代のアーティストもまた日 本的要素を取り入れました。 しかし、 これは国際的な市場に自らの立 場を確立させようと模索し、他と差別化するためになされたように見 えます。では、いったいジャパニーズ・ジャズなどというものは存在す るのでしょうか？ 私が調べた限り、ジャズを日本のものと分類するのは非常に困難 でした。歴史的に言っても、その音楽スタイルはアメリカ（在日フィリ ピン人経由）から来たものです。 ジャズが持つ特有の形式、 リズム、文 化が完全に日本的にはなりえないのは、それが理由だと思います。 と は言うものの、すなわち非日本的という意味ではありません。結局の ところ、ジャズって何？それは創造の自由を表現するために用いられ た音楽的るつぼなのです。つまり、 どんな国でも、 このスタイルを育む うえで同様の担い手になることができるのです。 ポップミュージックやシンセポップ、はたまたテクノミュージックや ダンスで知られるシブヤ系が、ジャズを一般大衆に広めましたが、今 日の日本には別のスタイルがあります。そのうち最もよく知られてい るミュージシャンは黒田卓也氏と上原ひろみ氏です。さあこれで、 こ の記事の最初に触れたJizueもあなたの知っているアーティストのリ ストに入れられますね！私は、 このジャンルがもたらす多様性をこれ からも探求するとともに、願わくばもっと多くの日本人ミュージシャン や和楽器を奏でる海外ミュージシャンを知ることができればと思い ます。音楽探検にいざ出発！

今年のモントリオール・フリンジ演劇祭に、 日本から 「詩舞」 で参加さ れた西脇関風さん。世界各国から様々な芸能が集まるモントリオール・ フリンジですが、詩舞のパフォーマンスは今回が初めて！詩舞の新しい 時代を切り開く気鋭のアーティストである彼女に、その魅力についてイ ンタビューしました。 詩舞とはどのようなパフォーマンスですか？ 昔から日本には漢詩を学ぶ文化がありました。でも、漢詩をただ読 むだけだと中々覚えられないし感情も入りません。そこで、幕末に漢詩 に節を付けて読むという詩吟が流行りました。それと同時に詩吟に合 わせて舞う詩舞も始まりましたが、それよりも刀を持って舞う剣舞の方 が盛んだったようです。戦後になると、刀だけでなく扇を使って踊る詩 舞が盛んになりました。 現実的に言えば、能や日舞に比べて詩吟を習うのはお手頃だったた め、一気に普及したのではないかと思います。 詩舞の魅力とは？ 詩舞にも型はありますが、歌舞伎や能などに比べ、 古典芸能にして は比較的自由に表現できると思います。詩舞の一番の魅力は型であ り、人が「侍」 と言ったときに想像する動きに一番近いのではないかと 思います。 今チャレンジしたいことは？ 詩吟の世界に居ると、詩吟がなんなのかよくわからなくなることが あります。 自分としては当たり前と思ってやっていたことも、 「これはどう いうことなのだろう」 と思うようになったり。特に、 「詩舞とは何ですか？ 」 と聞かれるときにそう思います。なるべく分かりやすい「本来の詩吟」 を、 このモントリオールでやってみたいと思います。 本来の詩吟とは何ですか？ 型をしっかり、音に流されない詩吟だと思います。 読者にひとこと モントリオール・フリンジ演劇祭が終わっても10月迄滞在していま すので、もし興味があったらご連絡下さい！いつでもどこでも踊りに行 きます！

Madame Kanpu Nishiwaki, artiste de la danse à l'éventail appelée le shibu, a voyagé du Japon au Québec pour présenter son art au Festival FRINGE de cette année. C'était la première fois qu'une performance de shibu avait lieu lors de cet événement qui rassemble des artistes de partout dans le monde. J'ai eu le plaisir de rencontrer cette artiste énergique de la nouvelle génération du shibu pour qu'elle nous parle de son art. À quoi peut-on s'attendre d'une performance de shibu? Autrefois, au Japon, on accordait beaucoup d'importance à la poésie chinoise dans l'éducation. Lire les poèmes chinois toutefois s'avère presque impossible et ainsi, difficile d'accès. C'est pourquoi qu'à la fin de la période Edo, on a mis certains poèmes chinois en musique et que le shigin, la récitation chantée de poésie chinoise, s'est développé rapidement. Le shibu est apparu en même temps pour accompagner les chants de shigin, mais un autre style de danse a vu le jour à cette époque, qui a suscité plus d'intérêt que le shibu : le kenbu, la danse au katana. Après la deuxième guerre mondiale toutefois, les danseurs de shibu qui manient aussi le katana se sont multipliés rapidement. Si je compare, sur des critères pragmatiques, le shigin au théâtre no ou aux autres styles de danse traditionnelle du Japon, je me demande si on ne peut pas dire que cet art a suscité un tel engouement simplement parce que son apprentissage est plus abordable...

Ms.Kanpu Nishiwaki, a shibu traditional dance performer, recently performed at the 2014 Montreal Fringe Festival. The Montreal Fringe Festival is famous for its variety of performing arts from all over the world, but this is the first time they have had a shibu show! Kanpu is a very innovative artist of the new generation in the shibu world. I interviewed her about the art of shibu and shigin. What is "shibu"? It is a Japanese traditional style of dancing with "shigin". Shigin is a type of poetry and philosophy that originated in China from an ancient era. When people wish to memorize these philosophical poems, it can be quite difficult. So, in the last days of Tokugawa Shogunate Era, samurais started to sing shigin accompanied by music to express its meaning. Shigin became popular among samurai, and shibu (which is shigin accompanied by dance) started, almost at the same time. When it first began, the dance was more like kembu, a dance form utilizing a katana sword. After WW II, shibu (a dance form using a Japanese fan, not a sword) became very popular. I think it is because shibu is less expensive to learn than Noh or other Japanese traditional dance, realistically.
Quel est l'attrait du shibu? Le shibu est reconnu comme une forme d'art traditionnel, mais on peut quand même y exercer de la créativité. Je pense qu'à comparer au théâtres no et kabuki, il y a davantage de place à la liberté d'expression, même avec les enchaînements codifiés de mouvements qui s'apparentent à des katas. En fait, je crois que ce qui fait le charme du shibu se trouve justement dans ces katas et que ce sont ces gestes qui reflètent le mieux l'imaginaire des samouraïs. Des défis? En étant plongé dans la culture du shigin, on en vient à a se demander c'est quoi exactement. Même pour moi qui se sent très à l'aise en faisant une performance, je me dis soudainement : « Qu'est-ce que ça veut dire? », et je suis toujours hésitante quand quelqu'un me demande c'est quoi le shibu. Je crois que quand j'ai fait ma performance au FRINGE, mon défi était d'essayer de présenter le plus clairement possible le shigin le plus authentique. Et c'est quoi le shigin le plus authentique? Le shigin où l'artiste fait les katas avec précision et qui ne se laisse pas troubler par les sons. Un mot pour les lecteurs de Coco Montréal? What is the great point of shibu? The great point of shibu is freedom of expression. Compared to other Japanese traditional performing arts such as Noh or Kabuki, it is quite free and we can create our own production with an original art form called "Kata." "Kata" (a basic pattern of movements) makes shibu very unique. Kata express the true traditional movements of samurais - perhaps you can imagine. What would you like to try in Montreal? Being in the shibu or shigin industry - I sometime feel that I am "getting lost in the shigin world"… I mean, I perform it as always, but sometimes I realize that I am wondering about the true meaning or true art of shibu. Especially when somebody asks me about "What is shibu?." I would like to try to perform in as basic a manner as possible here in Montreal, to express the beauty of shibu. What is "the beauty of shigin"? I think: shigin with basic and proper patterns of traditional movement. Not just dancing to music - it is something very strong and proper. 外国人に日本の作家を紹介するのなら、私は間違いなく三島由紀夫 を挙げるだろう。そんな三島文学ファンのひとりとして、彼が切腹した場 所を訪れてみたいとずっと思っていたのだが、 ようやくその機会を得る ことができた。 その現場は、東京都新宿区市谷にある防衛省が実施している「市ヶ 谷台ツアー」に事前申し込みの手続きを踏むことで、一般人でも見学す ることができる。予約方法は、防衛省のホームページからもしくは電話 にて、見学希望日の２ヵ月前から予約を受け付けている。ツアーは午前 と午後に分かれており、 どちらも約2時間ちょっとのツアーで参加費は 無料。 私が参加した午前の部のツアーは、正門前からスタート。 「儀仗広 場」をまわり 「市ヶ谷記念館」に入館する。 「市ヶ谷記念館」は、現在の防 衛省本省庁舎A棟のある場所にあった「1号館」の一部を、同駐屯地内 薬王寺門付近に移設復元したものである。移転する際には、解体した 全ての資材に番号をふり、忠実に復元しているとのことだ。 館内では、極東国際軍事裁判（東京裁判）の法廷として使用された大 講堂で、裁判の様子をとらえたビデオを観覧する。戦争に関する資料な ども閲覧することができ、展示物の中には、硫黄島の戦いで亡くなった 栗林 忠道（くりばやし ただみち）中将指揮官が家族に宛てた手紙の原 本もある。 日本が歩んできた歴史をその現場で感じることができる。
一番の見所は、 「三島事件」の現場となった部屋に入ることができる ことだろう。俗に言う 「三島事件」 とは、1970年11月25日、三島由紀夫が 「楯の会」のメンバー4名と共に市ヶ谷の自衛隊駐屯地内、陸上自衛隊 東部方面総監部を訪問し、憲法改正のため自衛隊のクーデターを呼び かけた後、割腹自殺をした事件である。

Visiting the scene of Mishima Incident The Ministry of Defense, Ichigayadai Tour If I were to introduce a Japanese writer to foreigners, I would definitely name Yukio Mishima. As a fan of Mishima literature, I always wanted to visit the site where he, by seppuku, a ritual suicide, ended his life, and I finally had a chance to do so. The site is open to the public. People can complete the required application in advance for the Ichigayadai Tour held by the Ministry of Defense located in Ichigaya, Shinjuku-ku Tokyo. Visite de la scène de l’incident de Mishima Le Ministère de la Défense, Visite d’Ichigayadai Si je devais choisir un auteur japonais à introduire à l’étranger, ce serait surement Yukio Mishima. En tant qu'admiratrice de sa littérature, j’ai toujours voulu visiter le site ou il a mis fin à sa vie par seppuku (un rituel de suicide), et j’ai enfin eu la chance d’y aller.
L’attraction principale du tour fût d’entrer dans la salle où l’incident de Mishima eut lieu. L’incident fût bref; le 25 Novembre de 1970, Yukio Mishima et 4 autres membres du Tatenokai avaient visité l’armée orientale des forces de défense du Japon basé au camp d’Ichigaya, et ils se sont suicidés par éviscération après avoir raté un coup d’état pour un amendement constitutionnel. Dans la salle, on peut toucher une coupure d’épée dans un pilier causé dans une bousculade contre des officiers quand Yukio avait pris le Général Kanetoshi Mashita comme otage. On a ensuite continué dans un magasin de l'Édifice du Bien-Être où on peut acheter des réserves utilisées par les officiers, de même que des souvenirs. On a fini la visite avec une exposition d’hélicoptères et la Zone Mémoriale. Les points de vue sont différentes basés sur les valeurs des gens, mais je crois que c’est une très bonne opportunité de voir de nos propres yeux et réfléchir sur ces scènes historiques et la fonction des forces de défence.
Le site est ouvert au public. Tous ceux qui sont intéressés peuvent remplir une application en avance pour la Visite d’Ichigayadai organisée par le Ministère de la Défense situé à Ichigaya, Shinjuku-ku à Tokyo. Les réservations peuvent être faites dans le site du ministère ou par téléphone jusqu’à 2 mois en avance. La visite, qui se déroule une fois le matin et une fois en après-midi, prend environ 2 heures et est gratuite. La visite du matin à laquelle j’ai participé commençait dans l’entrée principale. Après une marche autour du Honor Guard Ceremony Squire, on est arrivé au Memorial Hall d’Ichigaya près du portail Yakuoji. Cette salle est une reconstruction partielle de l'Édifice No.1, originellement situé où l'Édifice A se situe présentement. On dit que lors du transfert, toutes les pièces étaient étiquetées avec un chiffre en ordre pour que le tout soit fidèle à son état original. Dans le hall, on a regardé une vidéo du Tribunal Militaire International de l’Extrême Orient (les procès de Tokyo) dans le même auditorium qui était utilisé comme salle de cour dans le passé. On a eu un sommaire de l’histoire du Japon à travers des documents de guerre qui étaient en démonstration, de même que la lettre originelle que le général Tadamichi Kuribayashi a écrit à sa famille avant de mourir dans le combat à Iwo Jima.

After walking around Honor Guard Ceremony Squire, we arrived at Ichigaya Memorial Hall near the Yakuoji gate. This hall is a partial reconstruction of Building No.1, originally located where Building A is currently found. It is said that during the transfer, every single part was labeled with number in order to be restored true to the original. Inside the hall, we watched a video of The International Military Tribunal for the Far East (Tokyo Trials) in the very auditorium that was used as a courtroom. We also got an overview of Japanese history through the displayed war documents, as well as the original letter by General Tadamichi Kuribayashi he wrote to his family before he died in the Battle of Iwo Jima. The main attraction of the tour is entering the room where the Mishima
incident occurred. In brief, on November 25th, 1970, Yukio Mishima and four other members of the Tatenokai went into the Japanese Army’s Eastern Ground Self-Defense Force, headquartered at Ichigaya. There, after a failed coup d'état, Mishima committed suicide by seppuku. Inside the room one can touch the sword that was cut on a pillar from a jostle had with officers when Yukio had taken General Kanetoshi Mashita hostage. Visitors then stop at a store in an adjacent building where they can purchase supplies used by the officials, as well as other souvenirs. The tour finished after visiting a helicopter display and a memorial zone. Viewpoints of the incident may differ based on one’s values. However, I think this is a great opportunity to witness with our own eyes and reflect upon the historical scenes and the functions of the self-defense force.

The word ”cantine” in Québec usually refers to a diner where you can eat a simple meal quickly. In these places, it is generally believed that convenience is the main appeal, with taste being a secondary concern. The “Cantine du Chef” that I will introduce this month, however, is very different. "Cantine du Chef” is located in Saint-Barnabé-Sud, which is 40 to 50 minutes away from Montreal by car. Since opening in 2010, it has been really popular with locals. One of the secrets of their popularity is their "plate of the day”. The chef Sébastien Desmarais creates inspired menus which include fish or pizza, but also Japanese-style curry, Japanese-style pork cutlet, and more. This “Japanese style” is the key.
Sébastien started studying and cooking Japanese cuisine while living with his wife Mai and her family, who are Japanese. He also ran a restaurant and taught a cooking class in Australia for seven years. At “Cantine du Chef”, he benefits from these experiences a lot. His plate of the day includes soup, bread, dessert, and coffee. Of course, the desserts are homemade too. Picking from that day's menu, I had a pork cutlet that brought forth the nostalgic taste of my mother's cooking, and after, a hazelnut tart for dessert which had just the right level of sweetness. Japanese croquette is also a popular menu item. You can choose from three kinds: one is inspired by the Québec cuisine staple “Pâté Chinois”, one has vegetables like carrots, potatoes and cabbage, and one is stuffed with chicken and cheese.
These croquettes have a soft and flaky texture inside when they're hot. That's the Japanese typical nostalgic taste. From children to the elderly, these croquettes are a popular restaurant dish loved by everyone.

Au Québec, quand on parle de « cantines », on fait référence à un commerce où l’on peut manger rapidement des repas très simples. C’est bien sûr pratique, mais on sait bien que la qualité des saveurs n’est pas toujours l’élément prioritaire dans ce genre d’endroits. Ce mois-ci, j’ai donc l’honneur de vous présenter le parfait contre-exemple : la Cantine du Chef! En partant de Montréal en voiture, il faut prévoir une cinquantaine de minutes pour se rendre à Saint-Barnabé-Sud, là où se trouve la Cantine du Chef. Depuis son ouverture en 2010, le commerce jouit d’une grande popularité auprès des citoyens locaux. L’un des secrets qui expliquent cet engouement, c’est le menu du jour. Le chef Sébastien Desmarais exprime sa créativité en préparant des plats de fruits de mer et des pizzas, mais également en cuisinant des plats à la mode japonaise comme le curry et les escalopes de porc panées (« karē » et « tonkatsu » en japonais). Ce « style japonais » est vraiment un élément fondamental de sa cuisine. En fait, la femme de Sébastien, Maï, est Japonaise. En habitant avec elle et sa famille, il a eu l’occasion d’expérimenter avec la cuisine japonaise et il a fini par la maîtriser. Avant cela, Sébastien a travaillé pendant sept ans en Australie où il tenait un restaurant et enseignait la cuisine. Une fois le bon moment venu, il a pu ouvrir la Cantine du Chef et ainsi mettre sa vaste expérience à profit. En plus du plat principal, le
menu du jour inclut de la soupe et du pain, un dessert et un café. Bien sûr, le dessert est fait maison. La journée où j’ai visité la cantine, le menu du jour se composait d’abord d’escalopes de porc, comme les mères japonaises savent les préparer, et d’une tarte aux noisettes, juste assez sucrée! Parmi les plats au menu, les croquettes du chef (« korokke » en japonais) sont également très populaires. Elles sont proposées en trois déclinaisons : la version « pâté chinois », ce plat typique de la cuisine québécoise, la version débordante de légumes (carottes, patates, choux, etc.) et la version mariant poulet et fromage. Servies chaudes et moelleuses, les croquettes ont ce bon goût classique de la cuisine japonaise. Finalement, mentionnons également que la Cantine du Chef accueille une clientèle allant des plus jeunes aux plus âgés. Ce restaurant est véritablement l’endroit parfait pour ceux qui veulent s’évader par une belle fin de semaine d’été. Non loin de là se trouvent le site naturel « Chouette à voir! » ainsi que de nombreux champs de fraises, de bleuets et d’autres fruits. On peut donc s’amuser en pique-niquant et en cueillant des fruits. Un endroit du genre, où l’on peut se remplir les joues de saveurs japonaises, c’est carrément exceptionnel. Pour satisfaire à la fois sa nostalgie et son désir d’exotisme, c’est à la Cantine du Chef que l’on se rend!
“Cantine du Chef” is an ideal place for people who don't mind traveling a little farther on the sunny summer weekend. In this area you'll also find an owl centre, and strawberry and blueberry farms nearby. You can even go fruit picking or have a picnic. Tasting Japanese cuisine during these kinds of outings is especially fun. This summer, enjoy both nostalgia and the exotic at the same time at “Cantine du Chef”!

Ms. Eri Hisada, owner of the “Fromagerie HISADA” a speciality cheese store in Paris, is popular among French people due to her unique Japanese ideas! Her mother, Sanae Hisada (64 years old) opened “Fromagerie HISADA” in the 16th district of Paris in 2004, after studying cheese ripening in France. In 2008, she received a ‘Maitre Fromager,’ the highest award for a cheese refiner. Her first daughter, Eri-san (42 years old) has worked in the store and supported her since both stores opened. Eri-san also received a ‘Maitre Fromager’ in 2011, and is now entrusted with the stores management. HISADA Co., Ltd. opened a speciality cheese retail store “the first cheese store in the kingdom” at Tachikawa station in 1985. To date, approx. 20 stores have been opened all over Japan.
Master Cheesemaker, Eri-san concentrates on cheese singlemindedly, a trait she inherited from her mother Eri-san has been surrounded by cheese ever since she could remember. Therefore she has naturally become a cheese specialist with a very high level of knowledge, far beyond the standard that puts any professional to shame. Right after graduating from university, she joined HISADA Co., Ltd. Since then she has followed the path of cheese only. “The work of a cheese refiner is to extract the maximum flavor of the original cheese for customers,” says Eri-san.

物ごころついたころからチーズに囲まれていた 恵理さんは、当然、チーズに関して並の知識どころ ではない専門家顔負けのチーズ博識家になってい た。大学卒業後、すぐに「（株）久田」に入社。チーズ 一筋の人生を歩いてきた。 「チーズ熟成士とは、チーズ本来のもつ美味し さを最大限に引き出し、お客様に提供するお仕事 です」 と、恵理さん。
開店当初は、 日本人がチーズの店を出すというこ とにかなり抵抗のあったフランス人だったが、今で は、お客の６割がフランス人だそうだ。場所がら、 日 本人観光客やそれ以外の国からの観光客も多い。 「チーズの良さ、素晴らしさを、食べ合わせを通 してまだ知らない方にもおすすめしたいです。店の ２階のチーズカフェでの美味しい食べ方の提案や チーズのセミナーを通して、 もっと多くの方に正しく チーズを普及していけたら・・・そんな店づくりを目 指しています」 と、早苗さんに負けないくらいのチー ズ熟成士ぶりを発揮していた。

お好み焼き 材料（2人
分） ：
キャベツ：1/4個 長ねぎ：1/2本 玉ねぎ：1/2個 豚ばら肉の薄切り ：6枚 小麦粉：100g 卵：2個 水：150ml 油：大さじ1 お好み焼きソース （もしくは醤油＆ マヨネーズ） ：適量 青海苔（もしあれば ） ：適量 かつおぶし （もしあれば） ：適量

– galette à la viande et aux légumes Ingrédients (pour 2 portions) ¼ chou pommé ¼ tige d'échalote ½ oignon jaune 6 fines tranches de poitrine de porc 100g de farine tout usage 2 œufs entiers 150ml d'eau 1 c.à.s. d'huile Soit de la sauce okonomiyaki ou de la sauce soya avec mayonnaise Aonori – algue séchée verte (facultatif) Katsuobushi – bonite séchée (facultatif)
1. Déchiqueter le chou. Couper l'échalote transversalement sur un angle. Couper l'oignon en petits carrés. 2. Mettre (1) dans un bol. Ajouter farine, œufs et eau. Bien mélanger. 3. Chauffer une poêle. Ajouter l'huile et verser la pâte (2) en étalant uniformément avec une spatule. Ajouter les tranches de porc par dessus. Lorsque le fond bruni, le retourner. Retourner à nouveau lorsque la viande est dorée. Laisser cuire pendant environ deux minutes de plus. 4. Transférer la galette sur une assiette. Napper de sauce okonomiyaki (semblable à la sauce tonkatsu), et si désiré, saupoudrer de katsuobushi et d'aonori.

There are two parts to each tournament, the qualification phase and the final phase (referred to as the World Cup Finals). The three year qualification phase is used to determine which teams qualify for the Finals. Since the 1998 Finals in France, the competition involves 32 teams at venues within the host nation (or nations) over a period of about a month. In the nineteen tournaments held, only eight nations have won the title. Brazil is the most successful World Cup team, having won the tournament five times and will be the only nation to compete in all 20 Finals. Italy follows with four titles, while Germany holds three. The other former champions are Uruguay (who won the inaugural tournament) and Argentina with two titles each, and England, France and Spain with one title each. The 2006 World Cup Finals were held in Germany, where Italy were crowned champion after beating France in the final. The 2010 World Cup Finals were held in South Africa. Spain beat the Netherlands 1-0 in the Final. This year, 2014, The World Cup is held in Brazil with Bosnia-Herzegovina becoming the 78th nation to participate in FIFA World Cup Finals since the first competition in 1930.
