テネシー州 グレートスモーキー山脈国立公園 カナダとは違う楽しみがいっぱい！ 米テネシー州のグレートスモーキー山脈国立公園（Great Smoky Mountains National Park） では、ギャトリンバーグ（Gatlinburg） とピジョンフォージ（Pigeon Forge）が観光 地として有名である。
■ギャトリンバーグ（Gatlinburg） ギャトリンバーグはナイアガラ滝のクリフトンヒルを思い起こす雰囲気の町であ る。Parkwayと呼ばれる一本の長い道路の両側に、博物館、水族館、宿泊施設、 レストラ ン、カフェ、バー、お土産屋、地元アーティストのクラフト店などが多数並び、多くの観光 客や地元民でにぎわう町だ。 それから、 この町の目玉、山上遊園地と町とをつなぐ「Ober」 と呼ばれるロープウエ ーも忘れてはならない。標高の高い山にある遊園地なので、Oberに乗っている時間は 長いが、景色がとても綺麗だった。山上遊園地は、大人も子供も大いに楽しめるもので あった。 ウオータースライダー、ジェットコースター、 スケート場、巨大迷路、さらに高い 山へ行くリフトなど、山上遊園地だけでも丸一日過ごせるような規模である。 ギャトリンバーグには、ハイキングのできるトレイルがいくつかあることでも有名だ。 その中のギャトリンバーグ・トレイルは、 グレートスモーキー山脈国立公園のビジター センターから、ギャトリンバーグのダウンタウンへと通じるトレイルだ。休憩したり、川で 遊んだりしながら歩いても、 ダウンタウンまで片道約１時間とちょっと。 トレイルと言っ ても、ほぼ平坦な道なので初心者や私のように運動不足の人にはうってつけである。
■ピジョンフォージ （Pigeon Forge） ピジョンフォージは（失礼な表現だが） できそこないのラスベガス・ミニチュアバージ ョンだけれども、決してがっかりはしない場所とでもいおうか。車が絶対に必要なかな り長い通路の両側に、年齢に合わせたさまざまなアトラクションがある。たとえば、家族 連れにはもってこいの遊園地 Dollywood (www.dollywood.com)や、遊び感覚で学べ たり、いろいろなことが体験できる WonderWorks (www.wonderworksonline.com)は 人気のアトラクションである。 ギャトリンバーグとピジョンフォージだけでも３～４日過ごせるので、 スモーキーマ ウンテンで一週間程度のんびりするのが、 ここに来る人たちの夏の過ごし方のようであ る。秋は紅葉シーズンでしばらくの間にぎわい、冬は短いスキーシーズンでほんの一時 にぎわうそうだ。 テネシーといえば、 コーン・ウィスキーで「Moonshine」 （ムーンシャイン） と呼ばれる 密造酒が有名だ。密造酒と言っても、現在では実際には政府の許可を得て作られてい るお酒なのだが、1920年代にアメリカで禁酒法が発布されていた時代に、秘密裏にお 酒が造られていたのが始まりだ。その醸造所は、いかにもカントリー調の建物で、密造 されていたような雰囲気ではある。試飲してみたが、甘いお酒の好きな人には受ける だろう。度数がかなり高いので、試飲するだけで酔ってしまいそうだ。なぜ「ムーンシャ イン」かというと、当時、月明かりの下で警察に見つからないようにこっそりとお酒を造 り、密輸していたからだそうだ。なるほど。 テネシーに行く前には周りのカナダ人たちから、 テネシーなんて、 ど田舎で、何もする ことがない！などと散々馬鹿にされたが、実際に行ってみると、 とても楽しくて、 カナダで はできない、良い体験ができたし、いろいろな発見があった。

Gatlinburg and Pigeon Forge are two famous tourist spots to be discovered in the Great Smoky Mountains National Park, Tennessee, USA.
■Gatlinburg
Gatlinburg is also famous for its many hiking trails. Among them is Gatlinburg Trail, connecting the visitor centre at Great Smoky Mountains National Park and Gatlinburg’s downtown. It takes about one hour to walk leisurely towards downtown, even with a little rest by the river. Although it is called a “trail”, the path is flat enough that beginners, and those of us who are a little out of shape, can walk it easily.
■Pigeon Forge Pigeon Forge, with its not-so-pretty name, is the rough-around-the-edges little brother of Las Vegas. That being said, it never disappoints. And though a car is absolutely necessary here, there are a variety of attractions for all ages along both sides of the long street. For example, at the popular family-oriented amusement parks Dollywood (www.dollywood.com) and WonderWorks (www.wonderworksonline.com), you can enjoy a lot of different fun and educational activities. Since you’ll only need a few days to fully enjoy Gatlinburg and Pigeon Forge, visitors usually plan to stay a week in the Smoky Mountains during the summer. In the fall, for the viewing of fall colours, and in the winter for skiing season, the area quickly becomes overcrowded with visitors.

■Gatlinburg La ville de Gatlinburg me rappelle Clifton Hill à Niagara Falls. C’est extrêmement vivant, effervescent avec de nombreux touristes ainsi que des habitants locaux. Vous y trouverez des musées, un aquarium, des hébergements, restaurants, cafés, bars, boutiques de souvenirs, boutique d’artisanat et d’artistes locaux, le long des deux côtés de la rue principale Parkway. L’attraction principale de la ville est cependant le téléphérique Ober, qui rejoint le parc d’attraction du sommet de la montagne et la ville, plus bas. C’est une traversée inoubliable. La localisation du parc d’attraction à une si haute altitude a rendu la descente agréable et nous a permis d’apprécier le paysage. Les adultes comme les enfants ne manqueront pas de s’amuser au parc d’attraction du sommet. Avec des glissades d’eau, une montagne russe, une piste de patinage, un labyrinthe géant et un ascenseur menant encore plus haut, vous pouvez passer la journée à explorer le parc. Gatlinburg est également connu pour ses nombreux sentiers de randonnée. Parmi ceux-ci, il y a la piste Gatlinburg reliant le centre d’accueil du parc national des Great Smoky Mountains au centre-ville. Il faut environ une heure pour tranquillement se diriger vers le centre-ville, même avec une pause au bord de la rivière. Bien qu’on l’appelle une piste, le chemin est assez plat pour que les débutants, et ceux d’entre nous qui sont un peu moins en forme, puissent marcher facilement.

Gatlinburg is a town that reminds me Clifton Hill in Niagara Falls. It is full of life, bustling with many tourists and locals alike. You’ll find museums, an aquarium, accommodations, restaurants, cafés, bars, souvenir stores, local arts and crafts shops, all along both sides of the long main street called Parkway. The top attraction of this town, however, is the ropeway named Ober, which connects the mountaintop amusement park and the town below. It’s a truly unforgettable ride. Since the amusement park is located at such a high altitude, we had a nice long ride down the mountain, and plenty of time to enjoy the scenery. Adults as well as children are sure to have lots of fun at the mountaintop amusement park. With a water slide, a roller coaster, a skating rink, a giant maze, and a lift leading even higher up the mountain, you could spend a full day just exploring the park.

Speaking of Tennessee, this state is also well-known for its corn whiskey moonshine. Moonshine has its origins in the Prohibition era of the 1920s, when it was made secretly and illegally. Today it is allowed to be produced under government control, and the Tennessee brewery’s country-style architecture still evokes its prohibition era history. I tried it and found that those who enjoy sweet alcohol may quite like it. Since the alcohol content is so high, you might even get drunk from a single sip. Why do they call it “Moonshine”? It is said that the people who secretly made alcohol were smuggling it under the moonlight, so that the police couldn’t find them. Makes sense!
Pigeon Forge, avec son nom peu engageant, est le petit frère rustique de Las Vegas. Cela étant dit, il n’est jamais décevant. Bien qu’une voiture y soit essentielle, de nombreuses attractions sont disponibles pour tous les âges des deux côtés de la longue rue. My Canadian friends teased me before the trip, saying “Why would you go to Tennessee, such a remote area with nothing to do?” Well, I actually enjoyed my trip to Tennessee a lot, and along the way I discovered many wonderful things that I could never have found in Canada.
Puisque quelques jours seulement suffisent pour pleinement profiter de Gatlinburg et Pigeon Forge, les visiteurs prévoient généralement de rester une semaine dans les monts Smoky en été. En automne, pour la vue des couleurs automnales, et en hiver durant la saison de ski, les lieux deviennent rapidement surpeuplés de touristes. Pour ce qui est du Tennessee, cet état est célèbre pour son whisky de maïs Moonshine. Le Moonshine tire son origine de l’époque de la Prohibition durant les années 1920, lorsqu’il était secrètement et illégalement distillé. Il est aujourd’hui autorisé d’en produire sous contrôle gouvernemental et l’architecture champêtre de la distillerie du Tennessee continue de rappeler son passé prohibitionniste. J’ai goûté et il m’a semblé que les amateurs d’alcool sucré devraient l’apprécier. Le degré d’alcool est tellement élevé qu’il est possible d’être ivre après une simple gorgée. Pourquoi est-il appelé Moonshine? On dit que les personnes qui le distillaient en secret le transportaient illégalement au clair de lune afin d’éviter d’être repèré par la police. Logique! Mes amis canadiens me taquinaient avant le voyage en disant « Pourquoi aller dans un endroit aussi reculé que le Tennessee où il n’y a rien à faire ? » Et bien j’ai adoré mon voyage dans le Tennessee et le long de la route j’ai découvert de nombreuses choses merveilleuses que je n’aurais jamais trouvées au Canada.

Pokémon GO
Le lancement du jeu Pokémon GO cette année a conquis le monde entier. Le monde des jeux vidéo a été révolutionné complètement depuis ce lancement. Alors qu’à l’origine, c’était un jeu qui gardait les gens chez eux sur leurs consoles, la plus récente création de la franchise est maintenant la raison pour laquelle beaucoup de gens sortent. Pokémon GO a changé l'opinion du monde sur les jeux vidéo. Pokémon GO est sorti en Australie, aux États-Unis et en Nouvelle-Zélande le 6 juin 2016. Pokémon GO s’agit d’une application de jeu pour smartphone, faite par l’entreprise américaine de développement de logiciels, Niantic. En démarrant le jeu, les joueurs doivent d’abord créer leur avatar. Cet avatar représente le joueur une fois qu'il est créé et il sera toujours à l'écran. Le monde dans le jeu est une version digitale du monde dans la vie réelle et il est composé d'autres joueurs vivants. Lorsque le joueur parcourt le monde dans la vraie vie, cela se reflète dans le jeu, permettant au joueur de rencontrer Pokémon et les attraper.

Pokemon GO
The release of Pokemon GO this year has taken the world by storm. Upon its release, the world of video gaming was completely revolutionized. While originally a game that tended to keep people at home on their consoles, the newest installation of the franchise is now the reason many people are going outside. Pokemon GO has changed the world’s opinion on video games. Pokemon GO was released in Australia, the United States and New Zealand on June 6, 2016. Pokemon GO is a smartphone game app made by the American software development company, Niantic. Upon entering the game, players are able to create their in-game avatar. This avatar will then represent the player once it is created and will always be on screen. The world in-game is a digitalized version of the world in real life and is comprised of other living players. When the player walks around the world in real life, this is reflected in the game, allowing the player to encounter Pokemon and catch them. Catching a Pokemon is easy; it is the rarer Pokemon that are harder to find. There are 18 types of Pokemon available in-game. Where a Pokemon may be found depends on its type and characteristics. For example, if a Pokemon is a water type, the player should search in areas with water, such as lakes and rivers. As the method of playing this game is through exploring in real life, the point is to simply walk and catch Pokemon along the way. Pokemon GO has earned $100 million in profit in the 20 days since its release. 130 million people in one month have downloaded this game. Of course, the members of this club are also included in that number! How about you?

There are many ways you can explore art therapy including painting/drawing therapy, sandplay therapy, other therapeutic methods using clay and photography, as well as collage therapy using pictures and magazine images. Applicable therapeutic methods are incorporated into art therapy sessions. The aim of art therapy is not to analyse the created artwork or to draw pictures well, but that the client themselves are drawn into the artwork by engaging in this creative activity. The process of freely creating something enables unrestricted self-expression, which allows you to have a dialogue with your inner-self. This lets you become in tune with the emotions that you do not usually notice; hence, this process leads you to be in a process of accepting these feelings. For those who want to express something but cannot find the words to convey it, they may find expression through transforming their inner feelings into creative processes and artworks. Do you often hear that the reason for going to therapy or counselling is the suffering from mental disease disorders
(so-called mental breakdown)? Or, have you thought like this? It is true that counselling and art therapy directed towards individuals with mental disease disorders is a suitable treatment method. Many people with severe psychiatric disorders such as schizophrenia and bipolar disorder also seek help from these experts (professional qualified therapists with correct knowledge and experience). Or people with mild neurosis such as anxiety disorder and adjustment disorder, who have difficulties in verbal communication, may find the non-verbal aspect of art therapy an effective treatment tool. On the other hand, there are a wide variety of circumstances that people ask for support from experts such as art therapists and counsellors. For example, major life events - concerns about studying abroad, changing jobs, unemployment, moving, divorce, abortion, and etc, - traumas, or losing loved ones including family members and friends, chronic illness, and suffering serious illnesses such as physical disabilities and cancer. Further, counselling and art therapy can be utilized in many situations in order to deal with stress and anger management. Receiving art therapy or counselling is also effective for children with developmental disorders, such as autism spectrum disorders, ADD/ADHD and etc, truancy and school troubles. There are also many people who live day by day on little sleep, as they hold many troubles that cause them stress. Stress may cause various types of disease. We may conclude that art therapy and counselling is an effective means to prevent mental and physical disorders, as well as for stress care.

tribuer à l’essor de Montréal, ville qui l’a accueilli à bras ouverts et qu’il adore. Pour ce faire, il met en valeur les ingrédients locaux et les techniques culinaires françaises afin d’offrir des ramens « locaux », non seulement aux Montréalais, mais également aux clients de l’extérieur de la province et du pays. Comme deuxième mission, il désire faire de son restaurant un lieu où peuvent s’épanouir pleinement ses employés et amis, à commencer par le gérant, Satoshi Kasai. En fait, même ceux qui ne sont pas à la base familiarisés avec le Japon pourront à leur tour transmettre ce « goût » à d’autres en apprenant les recettes standardisées de Nakamichi, cette initiative pavant également la voie à d’éventuelles contributions à la culture culinaire nippone. Les ramens servis chez Nakamichi forment un heureux mélange de neuf et d’ancien. Tout en conservant l’esprit des ramens traditionnels, on y ose des améliorations audacieuses qui font mouche, qu’il s’agisse du KIWAMI, bonifié de l’arôme de l’huile de truffe; du MURASAKI, de type shōyu (sauce soya), typique de Tokyo; ou encore du GURURI, débordant de légumes. On peut même commander le KIWAMI et le GURURI en version végétalienne. Depuis la mi-novembre, on propose également des tsukemen qui sont comme des ramens, mais dont on trempe les nouilles, servies à part, dans une soupe faite d’un mélange de toripaitan (bouillon de poulet blanchâtre) et de bouillon de fruits de mer. Suivront même, dans le menu hiver, des ramens au canard! En accompagnement, je vous recommande le chirashizushi (bol de riz à sushi surmonté de diverses garnitures) et les won-ton maison. Et après un bol de ramens, la crème glacée au matcha se révèle d’une saveur exceptionnelle! Régalez-vous chez Nakamichi pour un temps des fêtes rempli de chaleur et de saveur! Joyeuses fêtes!
Français La saison des partys est arrivée, tout comme celle des froides températures qui nous font apprécier les moments réconfortants et chaleureux passés à l’intérieur. L’occasion est donc maintenant parfaite pour vous présenter un restaurant de ramen qui réchauffe le corps comme le cœur, Schlouppe Bistrot Nakamichi, ouvert en janvier 2016. « Schlouppe » est une onomatopée qui évoque le bruit des nouilles que l’on aspire bruyamment alors que « Nakamichi » a été choisi par le propriétaire Jumpei Iwakiri en signe de reconnaissance envers un restaurant du même nom situé dans le quartier Kichijōji à Tokyo où on l’a traité comme un véritable membre de la famille. The party season has arrived and the cold weather outdoors will be playing its part to make your time indoors all the more cozy and toasty. Today I would like to introduce a ramen shop that’s sure to warm you, body and soul. Schlouppe Bistrot Nakamichi opened its doors in January 2016, with the first part of its name, “Schlouppe,” meaning a playful reference to the sound of “slurping” ramen. As for “Nakamichi,” it was chosen by shop owner Junpei Iwakiri, to express the gratitude he feels toward a restaurant of the same name in Tokyo’s Kichijoji. The memory of how he was treated like a member of the family during his time there, will be immortalized in the restaurant’s name. Founder of Chez Masuya Inc., a company focused on food culture, Iwakiri launched Nakamichi which became his first successful cuisine enterprise. He has two goals for the shop. The first is to contribute to his beloved Montreal, a city that has opened its arms to him. Using local ingredients and French cooking techniques to create a “localized” ramen, he wants not only to welcome guests from the city but also to transcend provincial and national boundaries. The second goal is to offer a space for new staff members like manager Satoshi Kasai, to reach self-actualization. By committing Nakamichi’s systemized recipes to memory, even staff without a foundation in Japanese cuisine will be able to convey these flavours. Re-creating and sharing these flavours will contribute towards the love and appreciation of Japanese food culture. The ramen at Nakamichi brings together the best of the old and the new. It has succeeded in a bold transformation that still retains the true spirit of traditional ramen. The restaurant offers kiwami, with its delightful aroma of truffle-oil, murasaki, done Tokyo-style with soy sauce and lastly gururi, which comes mixed in with a large helping of vegetables. Both kiwami and gururi have vegan options. Mid-November saw the arrival of tsukemen, which is ramen eaten by dipping the noodles in a separate bowl with a choice of two types of dipping broth. One is called toripaitan, which is a white, cloudly broth made with chicken bones and the other is made with seafood. Later in the year, duck ramen will also be offered as part of their special winter menu. For appetizers, I would also like to recommend the chirashi, meaning scattered sushi or, house-made wontons. Lastly, as a postramen sweet, a dish of matcha-flavoured ice cream is especially delicious.

オーブンで簡単ジューシー焼豚
Char siu or yakibuta Chinese style roasted pork Porc rôti de style chinois
材料 肩ロースか豚バラブロック 1キロ
1. 豚肉に味がしみるよう、 フォークかナイフで全体的に刺す。
調味料 • 青ネギ 2本 • 醤油 80ml • 酒か白ワイン 20ml • オイスターソース 大さじ2 • しょうが（すりおろし）３cm • にんにく （すりおろし）２片 • 砂糖かメープルシロップ 大さじ2
2. 豚肉を紐で縛る
Char siu, called yakibuta in Japanese is used in many everyday dishes. Mostly used as a ramen topping (add one or two thin slices) or to eat with fried rice (cut into cubes,) you can even enjoy it on its own!

3. ジップロックに調味料と豚肉を入れて3日間冷蔵で漬け込む。 4. 鉄板に乗せ 350F (175C)のオーブンで1時間くらい焼く。 5. ジップロックに残ったタレを鍋に入れてとろみが付くまで煮詰めておく。 6. オーブンから豚肉を一度取り出しタレをたっぷり塗り、 さらに15分焼いて仕 上げる。
Instructions: 1. Pierce the pork with a fork or a knife. This allows the meat to absorb the marinade better.

3. Season the pork with the marinade ingredients. Then place in a plastic zip lock bag to refrigerate overnight, or preferably for 3 days.
Marinade: • 2 green onions • 80ml soy sauce • 20ml white wine or sake • 2 tbsp of oyster sauce • Grated ginger (approx. 3cm long ) • 2 cloves of crushed garlic • 2 tbsp of sugar or maple syrup

4. Preheat the oven to 350F (175C,) and bake the pork for 1 hour. Turn occasionally to moisten the meat surface. 5. Add the marinade (remaining from the zip lock) to a saucepan and whisk together until smooth. 6. Take the pork out of the oven and glaze it with the marinade (paint the marinade onto the pork.) Bake for a further 15 minutes.

Sortez le porc du four et badigeonnez-le avec la marinade (peindre la marinade sur le porc). Faire cuire encore 15 minutes.
