garden of dreams Early Summer Checklist for the Rocky Mountain Gardener. By Mary Ann Newcomer
Now is the time to make sure you’ll be enjoying blooms and greens throughout the summer.
Shrubs Edibles • After your last frost date, plant out the tender vegetables: tomatoes, peppers, eggplants. Be prepared to cover plants if a late frost is anticipated.
• Plant container grown shrubs this month. Garden centers have the latest cultivars and new plants are arriving daily. • Finish pruning spring flowering shrubs, lilacs and forsythia, after they bloom and before they set next year’s buds.
• Direct sow seeds of melons and squash, beans, lettuces. Hill up your potatoes and leeks as they grow. Lawns and Ornamental Grasses • This is a good time to aerate your lawn. Leave the soil plugs where they fall, they decompose and add organic matter to the turf area. • Top dress the lawn with a thin layer- less than one inch- of organic compost. • Warm-season grasses such as buffalo grass and blue grama should be sown in May or June because they need warm soils to germinate successfully. • Ornamental grasses will be arriving in the nursery centers. They don’t look like much — most of them are still dormant but they can be planted now.

• Water new plants on a regular basis, and if possible, install drip irrigation hoses and emitters. • Keep the root crops thinned, making salads of the edible greens with your thinnings (the ones you have to pull out). Add trimmings from the herb garden to your salads, too. • Pick off, or wash pests off plants. If you must, use an insecticidal soap according to the label instructions. Remember: if you are feeding it to your family, grow it organically.
Now is the time to make sure you’ll be enjoying blooms and greens throughout the summer.
Bulbs and corms • When the danger of frost is passed, set out those tender bulbs such as lilies and dahlias. Stake the tall ones as you plant them, being careful not to poke the stake through the tuber. • Were there bare spots in the spring bulb display? Make a note of it now, and keep it in the garden journal or calendar so you know what to buy and plant next fall. If you have a smart phone, snap pictures of the trouble spots as reminders.

Conifers and Deciduous Trees • This month you can transplant evergreens in your garden. Be sure to water them well. • Plant container grown trees, both deciduous and evergreens. Make sure your irrigation system is set up to give them adequate water in their first year. • Fertilize trees that are showing signs of nutrient deficiency. The alkaline soils of the Rockies may cause trees to look chlorotic (yellowish). Talk to your local extension office for recommendations on treating this condition.
Annuals • Time to plant patio pots, but keep an eye on wild temperature fluctuations; plants may need to be covered. • Pinch back vigorous annuals to encourage fullness and to prolong blooming. • After planting, monitor the moisture in the flower and vegetable beds, keeping it slightly moist as plants take root. Slowly apply 1-1.5 inches of water. • Mulch beds after planting, topping with 1-2 inches of organic mulch. • Practice aggressive weed removal. This month weeds can really take over the garden. • Attend garden tours for new ideas: plant combinations, designs, new cultivars. In the perennial garden • This is the perfect month to plant before it’s too. At the nursery or plant sales, choose your favorite and the healthiest specimens. • No garden? No problem. Plant perennials in containers in soilless growing mixture amended with an organic slow-release fertilizer. • Now is the time to divide perennials that are too large or are crowding other plants. It’s best to divide them when new growth is only a few inches tall. • Seedlings started indoors may be planted now and all new plantings should be mulched with a 2-3 inch layer of rich organic compost.

Timing is Everything

As Market Continues Recovery, Information is Key for Savvy Buyers and Sellers.
Positive trends continue in the real estate market as pending home sales improved in April and continue to be well above the numbers from a year ago, according to the National Association of Realtors® (NAR). Home contract activity is at the highest level since the Pending Home Sales Index, a forward-looking indicator based on contract signings, hit 110.9 in April 2010, immediately before the deadline for the home buyer tax credit. Pending sales have been above year-ago levels. “Pending contracts so far this year easily correspond to higher closed home sales in 2013,” said Lawrence Yun, NAR chief economist. Total existing-home sales are expected to rise just over seven percent to about five million this year. The continuing inventory shortage influences home values as well; the national median existing-home price is expected to increase close to eight percent in 2013. What does this mean for prospective home buyers and sellers in the Vail Valley? It means that real estate is a timely business; the time to act is now. For prospective home buyers, it’s not a waiting game anymore. “Over the last several months, we have seen our inventory sup-

ply, within certain price ranges, start to decline and along with that, we are seeing multiple offers on some of these homes,” said Julie Retzlaff, chairperson of the Vail Board of Realtors® (VBR). “Our inventory levels shrank by about 35 percent from April 2012 to April 2013; we had only 861 units available at the end of April. In some cases this is resulting in properties closing for more than list price.” As new listings in the Vail Valley remain flat, pending sales rose more than four percent from April 2012 to April 2013. Additionally, properties are staying on the
market for less time than they were a year ago, down 19.7 percent to 179 days. Factors such as low inventory and record low interest rates are influencing and creating a sense of urgency for buyers. As prospective sellers contemplate putting a property on the market, the information coming from various sources such as the Vail Board of REALTORS®’ Monthly Market Indicators Report suggests now may be an advantageous time to list. As inventory shrinks, sale prices are rising, which is positive news for sellers. The median sales price
for residential property in Eagle County increased 50.4 percent to $624,000 from April 2012 and April 2013. Also positive is the fact that the percentage sold to list price is rising: 93.2 percent to 94.4 percent during the same time period. “Along with this inventory shortage comes the start of price stabilization and some upward trending within certain price ranges,” said Retzlaff. “In some neighborhoods, consumers have 50 or 60 percent fewer options from which to choose than they did a few years ago.” Looking into the future, other

Colorado Congressman Jared Polis is sponsoring a new housing bill, called the Affordable Housing Regulation Simplification Act, which is aimed at removing burdensome restrictions placed on condominium financing by Fannie Mae, Freddie Mac and the Federal Housing Adminis-

From June through September, chairlifts and snowcats stop, allowing people to delve into the plethora of summertime activities Vail provides. Exploring the outdoors Skiing and snowboarding tend to dominate winter activities in Vail, but in the summer, outdoor recreation presents a wider range of opportunities, from a peaceful day on the river fly fishing or a wet and wild ride down rapids to a challenging round of golf or a vigorous high-alpine hike. Outfits like Vail Valley Anglers take fly fishing enthusiasts out on local rivers, creeks and private ranches. Guides cater to both beginners and veteran anglers, sharing their experience (which they accrue every day of the year) of the best hatches and
techniques to hook huge trout. The “big three” rivers — the Eagle, Colorado and Roaring Fork — are part of more than a dozen different waterways in Vail. Such creeks as the Piney, Gore Creek and Homestake Creek tend to host smaller, more aggressive fish, as opposed to large trout. Backcountry options require a hike — often several miles — to “secret” mountain lakes. For people looking for a little more adrenaline with their river activities, rafting fits the bill. One of the oldest rafting outfitters in the state, Timberline Tours, has been navigating local whitewater since 1971. They put the plush in rushing rapids by treating guests to decked-out boathouses with five-star amenities. They also offer one of the fastest growing water sports — stand up paddleboarding — on flat water. “I moved to Colorado to snowboard but now find myself looking forward to the summer and stand up paddleboarding,” said head guide Matt Paula. Whether water adventurers prefer fast and furious rafting, tranquil floats down rivers or balancing on a board (which works core and leg muscles), water adds a new per-
spective to Vail’s mountain peaks. Most skiers and snowboarders start itching for two wheels as the snow melts. Mountain and road biking in Vail provide a cardio workout accentuated by picturesque mountains and flowering valleys. Vail Mountain’s Eagle Bahn and Gondola One lifts sweep bikers up the mountain, so they can careen down about 15 trails, ranging from beginner gravel roads to steep and technical single and double tracks. Other trails throughout the Vail Valley provide everything from Vail Pass’ easy, paved trail
stretching from the top of Vail Pass to Summit County to a 10-mile dirt road that leads to Piney Lake. (Hint: If you only like coasting downhill, as opposed to cranking up 1,831-foot inclines, start at Vail Pass and leave a pick-up car at Copper Mountain.) Other road biking trails include an easy to moderate paved path, which stretches along the Gore Creek, through the valley and Vail Village. Hiking trails also meander through Vail’s high country. National Forest Service land provides dozens of trails leading up mountains and through valleys, to lakes. Cabins, tent camping and RV spots are all available in the national forest. In addition, some trails allow horseback riding. The Vail Nature Center spans 7 acres and is home to the Vail Hiking Club. Camp Eco Fun educates kids with art, photography, stargazing, raptor and fly-fishing classes. The center also offers creekside nature tours, wildflower walks, bird walks, campfires and backcountry hikes for just about everyone. Any one of the bike or hiking trails lend themselves to picnicking — as do scenic rest stops on Vail Pass, and sites on Vail Mountain. Parks are also a great sum-
signed by renowned golfers such as Arnold Palmer, Greg Norman, Tom Fazio and Robert Trent Jones Jr., elevate the courses to world-class status. Public courses include Vail Golf Club, situated at the base of the Gore Range, as well as semi-private resorts, like Red Sky Ranch and Sonnenalp. Each one lends its own technical challenge and picturesque reward, and the elevation translates to balls that fly farther. Jeep tours are another way to see Vail Valley’s backcountry. Tours are rich with stories about local history, as well as information about native wildflowers and scenery. Some outfits even offer a Jeep scavenger hunt, for both fun and corporate team building. Ziplining and ATV riding are two relatively new activities, which are gaining traction quickly in the Vail Valley. Ziplines sweep people high above rivers

On July 11, a series of free concerts start every Thursday night in Eagle Town Park. “We have a lot of events and projects that bring people outside to enjoy the season,” Peters said. “We love summer, and I think our many events reflect that.” The Vail Valley Foundation's two major festivals highlight the summer: the GoPro Mountain Games June 6-9, and the Vail International Dance Festival, July 28 to Aug. 9. The Games offer something for just about everyone, from kayaking and bouldering to biking running and dog events. The competition is free to watch and includes a three-night concert lineup. The dance festival celebrates its 25th anniversary with almost two weeks of dance. “Whether you’re looking for classical ballet, ballroom 46

what makes the experience just as special for the artists as it is for the audience members.” The Bravo! series caters to people who love orchestral music. It’s the only festival in North America to host three of the nation’s best orchestras: The Dallas Symphony Orchestra, The Philadelphia Orchestra and the New York Philharmonic. The festival runs June 28 to Aug. 3, delivering classical music, as well as jazz and pop. One of Vail’s newest events blends gourmet food with hiking. The July 7 event includes an 11.5-mile hike on Arrowhead and Beaver Creek mountains, complete with breakfast, lunch and après cuisine in on-mountain restaurants along the way. “Summer is a beautiful time to be in Vail,” Peters said. “As everything is starting to turn green outside, it's a reminder once again of what a special time of year it is here.”

Healthy eating is more than a fad – it’s a way of life and, increasingly, a way of living at home. Roll out the welcome mat for a new generation of health-focused appliances, gadgets and design ideas that want to redefine your kitchen. By paul rogers

Proper nutrition is on the minds of more Americans than ever before. Witness the booming organic food market and the proliferation of salad and fruit offerings at fast-food chains. But as the millions who have dabbled with diets will tell you, eating well consistently is not an easy task. The main ingredient of a nutritional lifestyle is, of course, the food itself, but healthy eating starts in and is significantly affected by the kitchen. From appliances to layout to décor, kitchen design can mean the difference between cooking a balanced meal at home and grabbing a bucket of fried chicken on the way in from the office. “Certainly the setup of the kitchen has a lot to do with the quality of the food. If it’s a difficult kitchen to work in, so much so that it stresses you out to cook, you might make some compromises about what you’re doing,” says Michael Welch, a New York-based personal chef who specializes in health and nutrition. If your prep area is so cramped and cluttered that slicing a tomato becomes a chore or if the

stovetop is so small that you can’t comfortably fit the pots and pans needed for a meal, Welch says, you might choose to microwave a frozen Salisbury steak instead of making home-cooked chicken Niçoise. Healthy cooking needs to be as easy and convenient as possible to consistently remain the first food option. And ease and convenience starts with basic kitchen design. “Everyone knows the kitchen
triangle: Our kitchen sink should be close to our refrigerator and our stove should be close to our sink,” says Laura McIntosh, host of the cooking and travel program “Bringing it Home with Laura McIntosh” and author of “Entertaining at Home with America’s Top Chefs” (Publications International, 2008). “The biggest thing is being able to access your refrigerator and your cabinets. If your food storage
is open and easy to reach, you will minimize time and frustration. If your ingredients are hard to get to and it takes more time clearing a space to cook, then it will be all too easy to grab something that is not as healthy.” To start, experts suggest utilizing pullout cabinets and stair-step storage for easy access, and keeping counter space uncluttered. Countertops are integral for placing a toaster or coffee maker, but if they’re lined with radios, TVs, gadgets, cereal boxes, yesterday’s mail, papers from the office, cups, dishes and all the other items that seem to collect in the kitchen, you are probably more likely to pop a frozen pizza in the oven than clear a space to prepare a salad. A nutritionist kitchen demands plenty of counter space to prep the greater amounts of vegetables and fruit you’ll be eating. Ideally, that space would have its own rinsing sink, separate and distinct from the cleanup sink, particularly if more than one person will be making meals and doing the chopping and slicing. McIntosh recommends adding a mandolin slicer to the kitchen inventory. It makes vegetable

If you see them, you will use them,” says McIntosh. Putting ingredients out in glass containers doesn’t only look appealing, it is particularly helpful for people just starting a healthy eating regimen, who may not be familiar with some of the products they should be using, like whole grains or seaweed. “It makes them less intimidating,” Welch says.

A range with power The average person doesn’t understand heat and its role in healthy cooking, says Don Silvers, chef, certified kitchen designer and author of “Kitchen Design with Cooking in Mind” (Designs by Silver, 2004). The ubiquitous four-burner, 7,0008,000 btus per burner stove falls short from a nutritional point of view. Say you want to pan fry a piece of chicken on a standard cooktop, says Silvers. You wait until the oil is about 375 degrees F and add the chicken. The meat will drop the heat to 200-250 degrees F, depending on how cold the chicken was to start. Because the oil temperature drops, it fails to seal the surface and oil enters the meat. A gas cooktop with 15,00020,000 btus per burner or an energy-efficient induction model can maintain oil temperatures when meat is added, sealing it and not allowing fat to enter. “Quality cooktops are very important to a nutritionist kitchen,” Silvers says. Steam Steam and/or pressure Steam ovens utilize superheated steam while pressure cookers use a combination of steam and pressure to rapidly cook foods. The benefits are two-fold: speed (steam ovens can cut cook times in half, pressure cookers can reduce cook times by as much as two-thirds) and nutrition. The cooking process locks in nutrients and flavors, ensuring a moist and tender end product. Steven Bullock, certified kitchen designer with New Yorkbased In House, hears calls for steam cooking more and more frequently from clients. Welch routinely introduces his clients to pressure cookers, as well as bamboo steamers. “A pressure cooker significantly cuts down on the amount of time it takes to cook
whole grains, which have more nutrients,” says Welch. “At first, people are really intimidated, but once they realize how quickly they can get meals together, they really embrace it.” A blender “There is nothing easier to make than a smoothie, and with great ingredients, your recipe choices are endless,” says McIntosh. Plus, smoothies are versatile – applicable for breakfast, lunch, dinner, snack or a light dessert. And to make the process even easier, Blendtec, Orem, Utah, makes a blender model integrated right into the countertop. A top-notch crisper “Food preservation is huge,” says Jackie Zunke, business development/designer at Lube of Atlanta. “A lot of people stay away from buying fruits and vegetables because they go bad so quickly and they end up throwing them out.” Refrigerator manufacturers are constantly tweaking models to increase food protection features. Madison, Wis.-based Sub Zero Inc.’s latest built-in refrigerator series features an air purification system that “scrubs” the entire volume of air in the refrigerator an average of once every 20 minutes to eliminate odors, viruses, bacteria and the ethylene gases that hasten ripening and, ultimately, food spoilage. Bullock lauds Diamond Bar, Calif.-based Dacor’s refrigerators, which he says can keep a peach fresh in a drawer for two weeks. “Everyone has crispers in refrigerators, but they differ depending on the unit. Some preserve fruits and vegetable better than others,” he says. Beyond equipment and layout, experts say simple visuals will help any health-conscious eater fulfill nutritional goals.
