‘The Souk at Qaryat Al Beri’ is a unique venue and the first of its kind in Abu Dhabi. IN THE MOVEMENT ——— Concierge meets Giulio Papi, the man who has spent three decades crafting some of Audemars Piguet’s greatest pieces

When it comes to high-end complications, Audemars Piguet stands apart. Setting the standard amongst a very exclusive club of the world’s greatest timepiece creators, an illustrious 140-year history has seen the company craft an extraordinary portfolio of complex pieces. From its home at the heart of Swiss watchmaking, in the Vallée de Joux, innovations have gone on to become icons. Central to that work is Giulio Papi, who has for more than 30 years been responsible for the minute repeaters, escapements, tourbillons and perpetual calendars that have not only earned him a formidable reputation among his peers, but helped shape the future of watchmaking. An early fascination for all things mechanical set Papi on a path that in the Swiss watchmaking city of La Chaux-de-Fonds, was sure to head in one direction. “When I was a child, I loved mechanical things, such as wheels, car engines, bikes, planes, anything that was mechanical. From there, watchmaking was a natural step. To me, a watch is like a little machine,” says Papi. In 1980, he enrolled at La Chaux-de-Fonds’ watchmaking school, where he completed an eight-year programme in half the time.

“I was the only one in my classroom, as no-one else wanted to learn watchmaking at the time. Japanese quartz watches were strong and a lot of people lost their jobs, no one believed in mechanical watches anymore. But I still loved them, this was my passion and I wanted to learn as much as I could. I remember spending long hours with my teachers who taught me so much, from how to calculate and design and how to use machines, to assembly, polishing and making tools,” says Papi. Papi started as an apprentice at Audemars Piguet, and had the chance to realise his dreams working on complex timepieces. “Audemars Piguet is of course well known for its complicated watches. My first job there was to make an open-worked watch. I learned all the secrets of polishing, bevelling and satining. There was a lot to learn but I was quick. After 18 months, I went to the human resources office and asked to work on complicated watches. They were astonished, and while they thought my request was ‘cute’ for a young boy like me, they told me I’d have to wait 20 years. I couldn’t believe it, the only thing I could think to do was to launch my own manufacture,” says Papi.

Challenging watchmaking’s status quo, Papi and his Audemars Piguet colleague Dominique Renaud struck out on their own in 1986. Operations began from their apartment in La Chaux-de-Fonds, and the Renaud et Papi workshop was born. “We built the workshop in my apartment, and that’s where it all started. I then bought a computer, and created software for watch calculations. This really changed things for us, by making the process much easier. There is so much formula in watchmaking, if you change something, you have to constantly recalculate, and by hand, that takes a lot of time. In the past, working out calculations by hand would mean you could only make a new complication every 10 years. My software completely changed that and was a revolution at the time. We had a lot of interest and successes early on that gave us a good start. “Opportunities started coming our way and we decided to build our own manufacture, but for that we had to buy machines and hire other watchmakers. We needed money and went to the bank, but they didn’t believe in us.” Marking a return to the duo’s watchmaking roots, Audemars Piguet stepped in and offered to buy a sizeable stake in the fledgling business. In 1992, the company merged with Audemars Piguet to become Audemars Piguet Renaud et Papi (APRP), as it is known today. “We went to Audemars Piguet for help because we loved working with them, their wristwatches are truly classical, complicated pieces. We agreed, but for us an important point was that we had to be able to manage the manufacture and keep our own strategies, like using computers and modern machines. We asked them to believe in us. “At that time old watchmakers were convinced that the only way to make a complicated watch was to use paper and pencil, and to use traditional machines. But we wanted to use a mixture of technology and craftsmanship. I use machines because they are constant and the precision is high, but behind that I need exceptional craftsmen. If you don’t understand how to do the same work by hand, how to polish, how to cut, then you won’t succeed,” says Papi.

At the last count, there are more than 160 people hard at work with Papi in the R&D department of Audemars Piguet. It’s very much a traditional manufacture, where the focus is firmly on hand work. “My philosophy is well-done work, and a clean, well-ordered workshop. It sends a good message to the workers. There is a difference between a ‘marketing’ manufacture where everything is made to show off and maybe nothing works well, and a manufacture which looks good, but is also an efficient machine,” says Papi. The manufacture’s achievements are many, contributing to some of the most stunning models from Audemars Piguet in recent years. Standouts include the Royal Oak Perpetual Calendar, adding a complication to the signature timepiece, first released in 1972 with a striking octagonal bezel and Grande Tapisserie dial. The Millenary collection for women showcases a stunning movement at the heart of a unique oval dial. And recent release, the Royal Oak Perpetual Calendar in Yellow Gold is a stunning pre-SIHH (Salon International de la Haute Horlogerie) 2016 novelty. What Papi is most proud of however is Audemars Piguet’s new minute repeater to be launched during SIHH 2016 this month. He says: “We worked on the acoustic quality of the minute repeater, to increase the volume and improve the quality of its sound. It’s a very hard thing to do, because when you try to increase the volume, you normally decrease the quality of the sound.” Looking to future developments, he adds: “I hope people continue to appreciate that the best quality is made by hand. Hand working brings the creativity of each person to the fore. A luxury watch, in my opinion, is a fusion of that.”

PASSION & PRECISION ——— Greubel Forsey is emerging as a force to be reckoned with in the world of watchmaking

Founded just over a decade ago, Greubel Forsey already lays claim to producing the best timepiece in the world – Tourbillon 24 Secondes Vision. It won the Aiguille d’Or Grand Prix award, the most coveted distinction in the industry, at the 2015 Grand Prix d’Horlogerie de Genève, earning the boutique watchmaker a whole new level of prestige. Greubel Forsey is the brainchild of talented watchmakers Robert Greubel and Stephen Forsey who first met in the 1990s when they shared a workbench at Renaud et Papi, lending their expertise to complicated mechanical movements. In 2004 they decided to launch Greubel Forsey, a brand that is today regarded by many as a prime example of fine Swiss watchmaking. “We didn’t have an objective to start a watch brand. What we wanted to do was explore different ideas in a mechanical watch and different mechanisms, and try to improve their performance,” explains co-founder Stephen Forsey. Once they discovered that their approach was completely unique and different from what was available in the market, it motivated them to go further. Their first invention, launched in 2004, was the complex Double Tourbillon 30° mechanism where one tourbillon – inclined at 30° and rotating in 60 seconds – operated inside another tourbillon that

rotated every four minutes. This invention was used in a number of timepieces including the renowned DT30° Vision watch where the complex mechanics were proudly visible on the dial. “With the first timepiece, we had a whole bunch of ideas but the challenges were more focused on getting the quality we wanted, as well as the reliability and performance to satisfy collectors. We really had no idea of the size or scale of the market or how widespread the collectors could be, so there were many things we didn’t know then that are much clearer today,” explains Forsey. Today Greubel Forsey produces extremely limited quantities –only about 100 watches a year – laying testament to its commitment to fine craftsmanship. Each model is an example of technical brilliance with a nod to traditional methods of hand finishing. The company caused a stir at last year’s Salon International de la Haute Horlogerie (SIHH) with the reveal of the Tourbillon 24 Secondes Vision – the smallest, thinnest, and most accessible Greubel Forsey timepiece in production, and one that’s recently won top honours in watchmaking with an Aiguille d’Or award. “We are not a brand that is driven by the market. Of course we listen to our collectors but we have our own strategy and mission and with the

Tourbillon 24 Secondes Vision, we really wanted to present a slimmer case. We set ourselves a new challenge to reduce the height of the movement by 2.5mm without sacrificing any technical performance and, at the same time, we wanted to revive traditional methods with engraved dials and ovenfired enamelled indices. It’s very interesting because it’s 10 percent more accessible than our previous entry level edition and yet it’s full of detail and fine hand finishing. “We don’t want to give too much away about 2016 but we always want to offer original and exciting creations, and if we can be more accessible, in our own dimensions, to a slightly wider audience and offer something of great value then we are more than happy to do so. But it will be many, many moons before you see a large scale offering from Greubel Forsey.”

Despite such a pioneering approach, the brand’s commitment to traditional watchmaking still shines through thanks to their work with the Time æon Foundation. With the aim of preserving the art of watchmaking, Time æon is founded by Greubel, Forsey and several other watchmakers from Europe including Philippe Dufour. “We saw that traditional watchmaking in itself was in danger and, after talking to independent watchmaker Philippe Dufour, we realised that the training on offer was being threatened. The time had to be shorter, the curriculum was squeezed and there was pressure on the cost of training. We could see that watchmaking skills were in decline and in danger of being lost forever,” explains Forsey. Working with Dufour and select watchmakers, they created the Time æon Foundation and began a grand project named ‘Le Garde Temps – Naissance d’une montre’. It involved choosing one person to craft a complicated mechanical timepiece entirely by hand and then pass on their knowledge and skills to students. A French watchmaking teacher from the Diderot vocational training college in Paris, Michel Boulanger, was chosen for the task. After several years of hard work, the project’s turning point came

at the 2015 edition of SIHH when Boulanger’s working prototype was presented to the public. “Naissance d’une montre was shown as a working model that had yet to be hand finished. Suddenly we had leverage and these last few months have been fantastic for the project as we now have concrete partners. Christie’s will auction this first ‘school’ watch in May 2016 in Hong Kong and all of the proceeds from the sale will go to Time æon, so this is a chance to build a financial resource for the foundation to be able to transmit the know-how. There are other partners including Ahmed Seddiqi & Sons, Elegant Watch in Hong Kong and we will hopefully add more from other regions too. It’s a project with huge dimensions and it’s very exciting,” says Forsey. The world of watchmaking continues to evolve as collectors focus on the craftsmanship on offer. Looking to the burgeoning local market, Forsey regards the Middle East as dynamic with a number of avid watch collectors. “We’re seeing a very, very rapid evolution in terms of a widening of interest. The Middle East market is more mature and has evolved a lot. There’s positive potential and it’s a bridging point between

Europe and Asia. I’m always surprised by how quickly you can start a dialogue with a collector from the region,” says Forsey. “In 11 years, the average age of our collectors has moved by nearly a generation. Our collectors are more in their 40s today while before they were more in their 60s. There’s a positive evolution with a younger generation becoming interested in mechanical watches. “Alongside a rush of technology with connected watches and high tech, there’s still a lot of interest in mechanical watches. I think people want to have something that’s handcrafted by an artisan and, in a way, by investing in that you are safeguarding the tradition of watchmaking.”

Is there a place for nostalgia in today’s busy modern world? As our lives become ever more complex, is there any point in longing for days gone by – for a simpler time, when life held more of a sense of wonder? Surely new is always better than old, so why hold on to the past? A growing number of people are discovering that sometimes ‘old’ is better than ‘new’. With the unstoppable flood of all kinds of digital gadgetry, it might come as a surprise, but it’s true. Vintage watches are more popular today than ever. Collecting is on the rise. This is because timepieces have heritage and history – something that is sorely lacking in a new gadget. Vintage watches remind us of the past, but not in the way that a history book does. Watches are delicate, intricate and artfully made, and more importantly, wearing them on the wrist is fun. Rolex, Omega and Patek Philippe are the most popular brands among today’s collectors. It’s an exclusive niche for a new breed of horological connoisseurs. It’s almost like a secret handshake, only for those in the know. A vintage watch is like a little detail that contains a vast, hidden world of interest. This is why I am so passionate about them.

The right vintage watch is also a great investment, not merely an expensive accessory. Your grandfather’s prized old Rolex or even his pocket watch might be worth far more than you think. The value is determined by its age, brand, movement, condition, rarity – and also its back story. Unlike new technology that becomes outdated soon after it is made, these fine old micro-machines were built to last. Walking into a shiny boutique and picking up a new designer watch is the way to go for some, but in my opinion, they are missing out on the real joy of watches and watchmaking. The advantage of vintage lies in the story that surrounds the watch. The first watch in space, or the same model that Paul Newman or Sean Connery wore, for example. It’s a deeply personal thing – and certain watches just feel right. There is also a kind of joy in the hunt for vintage watches. Finding out about the movement, the designer’s style and the artful techniques that were used all add to the experience. In years gone by, this was mostly inaccessible. Today, though, there are growing online communities dedicated to exploring this rare art. Exploring this fascinating world, you’ll find everything from hidden gems to

those rare discoveries of models long thought to be lost. It’s a science, an art, and a passion. So how does one go about starting a collection? We drive down lonely roads as the city sleeps, watching the sky turn warm tones of blue and pink. Turning towards the desert and, as the sun prepares to rise, colourful hot air balloons come to life amid the backdrop of picture-perfect sand dunes. As we wait to board our hot air balloon with Balloon Adventures Emirates, the mammoth aircrafts are inflated using hot air from strategically maneuvered propane burners. While all the passengers are given a detailed briefing on what to expect, nothing quite prepares us for the excitement in store. The early morning start is more than worth it. In a matter of minutes, passengers are filing into the basket from the left and right and the balloon slowly takes off. This is the moment everyone has been waiting for – soaring higher and higher as great swathes of desert dunes come into view creating a dramatic setting. It’s a scene that captain Peter Kollar,

a seasoned hot air balloon pilot and managing director of Balloon Adventures Emirates, is very familiar with. He says: “I’ve been doing this for 24 years now and I still love my job. Every day is different and is influenced by several factors such as the weather, the passengers and overall flight, and some flights are better than others. The problem with ballooning, at least from a business point of view, is that the guest experience can’t be standardised because it depends largely on the wind. “To make it even more complicated, the starting time of our flights also depends on the month we fly, and that changes based on the sunrise. In winter, it’s later and as we progress into summer, it’s earlier so we can’t even tell people the exact take off time in advance. As you can imagine, you have got to be reasonably flexible to run a balloon company.”

Captain Kollar has always had a love for the outdoors and has been flying hot air balloons since 1991. He set up his own ballooning company in New Zealand before deciding to move to the UAE after a chance encounter with businessman Abdullah Al Ashram in 2003. At the time Al Ashram was on his honeymoon when he flew with Kollar and enjoyed the experience so much that he suggested setting something similar up in Dubai. “I initially refused because I was already commuting regularly between Frankfurt in Germany and Christchurch in New Zealand for work, which involved a 23 hour flight, but the idea remained in my head. I later called Abdullah and said I’d plan to stop by in Dubai on my next trip. As luck would have it, that same year, Emirates Airlines started direct flights between Christchurch and Dubai,” Kollar explains.

This is Balloon Adventures Emirates’ 11th season in the UAE, with daily flights organised from the beginning of September until the end of May. Flights take place early in the mornings when the calm, cool conditions are best. Every morning a ground crew is on hand at the take off site, by Dubai Desert Conservation Reserve, to prepare the balloons about 45 minutes before the pilots and passengers arrive. “The experienced ground crew, also known as the advance team, lives in our camp in the desert. They prepare the balloons for hot inflation, which is essentially when you turn on the burners and heat the air around the balloon causing it to stand up. They take it up to the very last point and then wait for the pilot. It’s similar to an airplane where engineers prepare the plane before the pilot arrives and get things organised before take off.


“We also have to file a flight plan with air traffic control. We tell them what time we take off and other basic information. The flight plan is the same every day but we still have to call it in as we are a registered aircraft. Every country has a prefix for an aircraft and in the UAE its A6, so even all Emirates planes have A6 too. If I don’t feel it’s safe for flying, and safety is our number one consideration, we just don’t fly,” explains Kollar. Thankfully, the conditions on our trip are fine and as the sun slowly rises on the horizon, and the picturesque landscape is painted in hues of red and orange, we are presented with a different perspective of the UAE from 4,000 feet in the air. The journey is surprisingly smooth and passengers hardly notice movements of the balloon as it floats gently with the wind. Afterwards, Kollar makes a few adjustments so that the balloon is closer to the ground, gliding above waves of sand dunes as young gazelles and oryx come into view offering even more awe-inspiring photograph opportunities. Before long, we’re braced to land and we lock our safety belts to the basket and hold on tight. Our balloon

descends fairly quickly and in a matter of minutes, the basket tilts and safely lands on its side with all the passengers securely fastened. “For me, the best flights are when we have a variation of wind direction. In that situation, I can play with the balloons to go up and down and manoeuvre it. “Another enjoyable aspect is when we have a reasonably fast landing – it’s more of a technical challenge for me. The landing is the best part as it’s always interesting and exciting, even for the passengers. You could get a light landing where it’s two or three knots like a leaf, or you could be coming at 10 knots and slide on the ground. It’s impossible to know which kind of landing you’ll have in advance. I can always estimate but there’s no way to really know until it happens,” says Kollar. The balloon flight is undoubtedly an exhilarating experience for everyone, including Kollar who plans to keep flying for as long as he possibly can, though he doesn’t necessarily expect his young sons to follow in his footsteps: “My wife doesn’t want them to fly. She thinks I’m crazy.”

Widely admired as one of Britain’s most acclaimed chefs, with two Michelin stars already to his name, Michael Caines is a culinary powerhouse famed for his original take on fine cuisine. From the lush green countryside of Devon to the majestic allure of Arabia, the enigmatic chef recently opened his own restaurant in Abu Dhabi at Jumeirah at Etihad Towers. “I first visited Abu Dhabi in 2014 for the Gourmet Abu Dhabi food festival and was a guest chef at the Brasserie Angélique at Jumeirah at Etihad Towers. It was a fantastic success and, as a result, I was invited back the following year to do a pop-up restaurant in what was previously Scott’s. At that time I had the pleasure to cook for HH Sheikh Suroor Bin Mohammed Al Nahyan, and he was extremely happy, as was everyone else involved. Jumeirah at Etihad Towers then invited me to take over Scott’s which has since been transformed into Pearls by Michael Caines.” Excited about his new restaurant and the opportunities it presents, chef Caines’ illustrious career path reflects genuine passion behind his craft. “My love of cooking comes from my mother, helping her in the kitchen to prepare delicious, wholesome, home-cooked family meals. Of course, once I became a professional chef, then my inspiration came from the iconic chefs I worked with while learning my trade: Raymond Blanc, Bernard Loiseau and Joël Robuchon. The turning point in my career was being appointed head chef of Gidleigh Park. I was only 25 years old so it was a remarkable opportunity to take over from the legendary Shaun Hill in such a special place. I was at Gidleigh Park for over two decades and, of course, another key moment in my career was when Gidleigh Park was awarded two Michelin stars in 1999.” Add to that a slew of awards, television shows and cookbooks, and there’s little wonder why the capital is excited about his new restaurant, Pearls by Michael Caines. With panoramic views of the bay and an expansive terrace for al fresco dining, this is the ideal spot to enjoy a romantic meal by the waterside. “Pearls by Michael Caines offers a very special and unique dining experience. The venue is absolutely stunning, offering unrivalled views of Abu Dhabi’s islets and the surrounding sea, while a private landing jetty offers boat

Highlights include the pan fried foie gras with orange-braised chicory, caramelised walnuts and marinated raisins and the succulent honey roast duckling with smoked veal bacon, roasted garlic, braised turnips and Chinese five-spiced jus. Concierge recommends opting for the signature tasting menu to really appreciate Caines’ creativity. “The ‘pearls’ refer to my signature dishes, the Michael Caines classics that I have developed and refined over two decades of cooking to a two-star Michelin standard. When we created Pearls, my aim was to devise a menu that is a celebration of the food and dishes that I have created over the years. So I am proud to say that dishes such as my warm lobster salad, beef fillet with braised beef cheek and chocolate orange confit mousse are expressions of me and my unique cuisine,” says Caines. Aside from the eclectic starters and mains, Pearls by Michael Caines also offers a wine flight experience that expertly pairs fine vintages with dishes, and an acclaimed dessert bar. Caines is also learning more about Middle Eastern cuisine and hospitality, sampling traditional dishes when in Abu Dhabi. “My cuisine is always based around a strong identity with place, so we use local produce and ingredients as much as possible. I love local fish from the Arabian Gulf and our chefs go down to the fish market to select it. We use local vegetables when available, and there is a new caviar farm being set up, which is fabulous. YAS MARINA CIRCUIT Home to the annual Formula 1 Etihad Airways Abu Dhabi Grand Prix, Yas Marina Circuit is one of the capital’s most famous sporting attractions. 5 SHEIKH ZAYED GRAND MOSQUE Built by the late Sheikh Zayed to help create a bridge between faiths and create greater cross-cultural understanding, the Sheikh Zayed Grand Mosque is a must-see for any visitor to Abu Dhabi. The third-largest mosque in the world, this majestic structure is comprised of over 1,000 columns and 82 domes embellished with semi-precious stones, gold and marble. Inside, the spectacle is equally impressive with glittering chandeliers, spectacular floral motifs adorning the walls and a vast hand-woven Persian carpet in the main prayer hall.

FERRARI WORLD ABU DHABI The first ever Ferrari theme park is home to Formula Rossa, the fastest roller coaster on the planet, which reaches speeds of up to 240 kilometres per hour as well as the Fiorano GT Challenge, which offers an exhilarating simulated racing experience. There are rides for all the family here, from fastpaced coasters to leisurely tours and interactive games.

Abu Dhabi is one of the best cities in the world to live and work. Over the years, the emirate has developed in a sustainable manner to ensure its heritage continues to be celebrated, while also having a world-class vision for the future. This is reflected in the emirate’s most recent developments with great projects underway in the UAE capital including The Louvre Abu Dhabi, Guggenheim Abu Dhabi and Zayed National Museum at Saadiyat Cultural District on Saadiyat Island. Another new cultural destination is Warehouse421 at Mina Zayed where industrial warehouses are transformed into exhibition spaces and galleries. While the country enjoys nearly 365 days of sunshine, the best time for visitors to enjoy outdoor activities is between the months of October to April, and January is one of the most popular as the city comes alive with a host of al fresco events and celebrations. To make the most of the fantastic weather, I would suggest visitors go kayaking in the mangrove forests that line the coastal areas of Abu Dhabi – Noukhada Adventure Company offers kayaking

expeditions in the emirate, as do Xventures and Al Mahara Diving Center. Another way to make the most of the calm waters of the Arabian Gulf is on a private yacht charter where visitors can try their hand at sailing and fishing. The deserts of Abu Dhabi are famed for their natural beauty, where miles and miles of rolling sand dunes present a picture-perfect setting. To best appreciate the stunning landscape, a number of tour operators in the city offer adrenaline-fuelled desert drives that see vehicles career over challenging dunes at high speeds. Other popular desert activities that visitors may find interesting include quad biking, horse riding and sandboarding. For those who are keen to try a variety of sports and outdoor activities, I always recommend Al Forsan International Sports Resort in Khalifa City. It is the ideal venue to try out a range of motorsports as well as karting, shooting, paintball, equestrian activities, and watersports including wakeboarding. During the winter months, I also recommend visitors book a hot air balloon trip to enjoy panoramic desert views of roaming wildlife below. For those who prefer an alternative sightseeing experience, seaplane flights depart from Yas Marina and present some of the best views of Abu Dhabi’s iconic skyline and attractions. A f ter a memorable day of fun in the sun, savour refreshing drinks, Mediterranean dishes and shisha poolside at Sofitel Abu Dhabi Corniche’s Grills@Chill’O. For a special dinner, book a table at Catch, the popular seafood restaurant at The St. Regis Abu Dhabi’s Nation Riviera Beach Club that is also along the Corniche. It is one of the most romantic restaurants in the city with a great menu of fresh seafood specialities and lively music.
