M O N T B L A N C G R E AT C H A R AC T E RS M I L ES DAV IS: A T R I B U T E TO A PI O N E E R O F JA Z Z M US I C With its Great Characters Limited Edition writing instruments, Montblanc pays homage to the exceptional individuals whose lives and work have made a lasting impact on human civilisation. Few musicians have had as an immeasurable influence on modern culture as Miles Davies, one of the most important musicians and jazz composers of the 20th century. His innovative approach to musical exploration is interpreted through the pioneering design and fine craftsmanship that are at the very heart of Montblanc’s heritage. Limited to 90 pieces, in celebration of what would have been his 90 th birthday in 2016, the Montblanc Great Characters Miles Davis Limited Edition 90 tells the story of this music legend’s accomplishments through intricate engravings and an elaborate skeleton pattern on the white gold cap and barrel. Every meticulous detail evokes the five major phases of the evolution of American jazz led by Davis. With a limitation number based on the year of his birth, the trumpet-shaped Montblanc Great Characters Miles Davis Limited Edition 1926 (pictured above) recalls the colour theme of one of his studio albums, Kind of Blue, regarded by many critics as his masterpiece and one of the greatest jazz recordings of all time. Every minute detail pays tribute to Davis’ achievements and legacy including the fine engraving on the Au750 solid gold nib.

Sharp and sleek like the music created by the jazz icon, the Montblanc Great Characters Miles Davis Special Edition (pictured below) features a cap and barrel in precious black resin with its contrasting platinum-coated fittings with the distinctive trumpet piston design found in each of the three editions and mouthpiece-shaped cone. Black on black, the pattern on cap and barrel brings to life the five diverse movements Miles Davis was part of: be-bop, cool jazz, hard bop, modal jazz and jazz fusion. The new Montblanc Great Characters Miles Davis writing instrument Collection is available in Montblanc’s flagship boutique at The Dubai Mall. Contact: 04 4340300 or visit: montblanc.com

I N FO C US: T I M E FO R A R T

—— We’re counting down to the opening of The Address Boulevard Dubai at Downtown Dubai, which is already creating a buzz for its incredible range of artwork and Art Deco architectural appeal. Concierge is especially in awe of emerging artist Anna Masters’ work in the hotel lobby. Specialising in mixed media, London-based Masters is making a name for herself thanks to her grand sculptural wallbased and freestanding works. “I’ve created two large works for the walls of The Address Boulevard Dubai. They are made using recycled watch parts, which are suspended on clear nylon to give the impression that they are floating. The two pieces, which were specially commissioned, are part of a series called Time is Now, which looks at our relationship with time and change. Using watch and clock parts, the artworks try to take apart the mechanics of time and ‘freeze’ them – almost as a futile attempt to stop the progression of time itself,” says Masters. This complex technique of building on nylon grids involves a great deal of planning and patience, and is one that Masters remains incredibly proud of. “I originally trained as an installation artist and creating huge floor-to-ceiling artworks suspended on nylon.

I wanted to develop a technique that would allow me to apply these skills on artworks that would be suitable for people’s homes, and slowly developed this way of working – by suspending materials on grids of clear nylon, which I then build up over a number of layers to give a three-dimensional effect. I work with a number of materials, including watch parts, antiques, petals, but always built upon this system of nylon grids.” Masters’ work has been shipped all over the world, but she especially enjoys doing site-specific work, creating something bespoke in response to the light, space and atmosphere of the place. With her Time is Now pieces taking pride of place at The Address Boulevard Dubai, she hopes it will make a memorable impact on visitors. “Most of my inspiration comes from watching people, although that’s probably not immediately obvious from looking at the works. I’m interested in the contradictions and irrationality that occurs in society and human nature, and my work can be thought of as an expression of those quirks,” says Masters. “I try to make works that are both beautiful and interesting. I would love for people to get enjoyment from them, but also for it to pique their curiosity about things around them.”

With a rich heritage that dates back centuries, Montblanc has crafted a legacy that’s built on the foundation of precision. From the pinnacle of writing instruments to the global appeal of the historic Meisterstück 149, it was only a matter of time before their craftsmanship embraced another time-honoured craft, watchmaking. Montblanc Montre S.A. was established in Le Locle in 1997. It reflected this inherent philosophy of master craftsmanship and its first timepiece, to the delight of connoisseurs, was also a Meisterstück. Many more breakthroughs followed. Montblanc brought movement manufacturer Minerva into its fold a few years later, the first Montblanc manufactured movement was released in 2008 and, in 2011, the Tourbillon Bi-Cylindrique, the world’s first wristwatch to feature a tourbillon with two cylindrical balance springs, was proudly unveiled. And that’s just a few of the maison’s many achievements. “A sense of heritage, craftsmanship and a pioneering spirit is at the core of everything Montblanc does. As a maison, it is driven by the vision of distinction and a dedication for the highest quality, ultimate performance, true innovation and the finest craftsmanship – qualities which are intrinsic to each of our categories,” says Eric Vergnes, president of Montblanc Middle East, India and Africa. “In 2010 we developed and built the ExoTourbillon automatic calibre MB M29.24 movement exclusively in-house, placing the balance wheel outside of the rotating cage of the tourbillon for the first time ever. This is a movement that features heavily in our latest collections, saving 30 percent more energy and allowing precision

timekeeping performance. Over the years, we have developed a reputation for excellence and craftsmanship. Our skilled watchmakers have mastered every variety of chronograph technology, while meticulous testing guarantees the high quality of movements so that every single part of a Montblanc watch functions flawlessly and harmoniously, long after it has left our Swiss manufacture,” adds Vergnes, who says that it remains important for Montblanc to continue referencing the past. “With over 150 years of uninterrupted Swiss watchmaking heritage through our manufactures, Montblanc is committed to preserving traditional watchmaking at the highest level, and creating innovative timepieces of the utmost precision, perfection and durability, all the while expressing the core values upon which the Minerva manufacture was founded in 1858. “So much of our watchmaking history is deeply rooted in the Minerva heritage, which has been a part of Montblanc since 2010. For the very same reason of cherishing our heritage, we reference our past watchmaking by modernising some of our historical timepieces, like the 1858 Collection.” 2016 was a significant year for the maison as it celebrated its 110th anniversary with the launch of several beautiful pieces. “The Villeret Tourbillon Cylindrique Pocket Watch & Navigator 110 Years Edition is one I’m particularly fond of as not many manufacturers are making pocket watches these days, so it felt like a courageous choice for Montblanc. A highly collectable one of a kind

design, it combines a nautical clock with a pocket watch, and represents the highest level of traditional craftsmanship with hand-engraving, hand-painting and Grand Feu enamelling,” explains Vergnes. Drawing inspiration from the height of Mont Blanc mountain, which peaks at 4,810 metres, the Montblanc 4810 collection of timepieces also stands out in style. In fact, Vergnes believes it also features a truly ‘timeless’ model that every aficionado should own – the Montblanc 4810 Orbis Terrarum. “It interprets one of the most contemporary and useful complications – the world time functions – in a beautifully new and innovative way. This recognisable design tells the time in 24 time zones in an intelligent and intuitive manner, thanks to a manufacture complication developed in-house by Montblanc’s master watchmakers. With the dial constructed from multiple layers of sapphire crystal discs and displaying the continents as viewed from the North Pole, it is a truly functional piece of art.” Vergnes also admits there’s increasing recognition of high complication pieces and larger sizes in women’s timepieces: “You will see this reflected in our new Boheme ExoTourbillon collection – the first female timepiece to include the maison’s exclusive in-house patented ExoTourbillon – which honours today’s sophisticated and independent ladies with the height of horological excellence.” This year, the Montblanc 1858 Collection reinterprets the famous Minerva military chronographs from the 1930s, with distinct designs

and vintage-inspired timepieces that use bronze for the first time. As Montblanc prepares to unveil more masterpieces at the Salon International de La Haute Horlogerie (SIHH) this month, enthusiasts may wonder about the direction of Monblanc, especially as smart wearable technology remains one of the most talked about topics. Vergnes reaffirms that Montblanc will forever remain committed to the art of craftsmanship. “The arrival of smartwatches are a new addition to the watch industry, although, in terms of trends, I am not sure how long it will last, or how deep it will run. I believe a deep appreciation for the craftsmanship of traditional Swiss watchmaking and classic mechanical luxury watches will not dissipate anytime soon with true horological enthusiasts.” Vergnes goes on to insist: “Montblanc is relevant to today’s collector and while we are conscious of new technologies, it will not be the sole driving force behind our timepieces – exceptional craftsmanship is, and this will continue.” —— Discover the latest Montblanc timepieces at the flagship boutique in The Dubai Mall. LANGE 1 TIME ZONE —— The Lange 1 is perhaps the most recognisable watch ever created by the Saxon manufactory thanks to its outsize date and elegant aesthetics. Aficionados can now admire an exclusive edition of the Lange 1 Time Zone, released in a rich honey gold. It was fittingly unveiled on October 25 last year, a date that recalls the presentation of the first Lange collection 22 years ago in the Dresden residential palace – and the limited 100-watch edition features a subtle detail: on the rotating city ring, Central European Time is represented by Dresden.

CLIFTON PERPETUAL CALENDAR —— Launched at Dubai Watch Week, Swiss luxury watch manufacturer Baume & Mercier’s latest timepiece carries on the rich legacy of the Clifton Collection with refined aesthetics and true craftsmanship. Don’t let its looks fool you – this is one of the most complicated datetracking watches, complete with a perpetual calendar and precision indications of the date, day of the week, month and phases of the moon. In fact, you’ll only need to correct the date before March 1 in the year 2100, a non-leap year that appears three centuries out of four.

RECIPE FOR SUCCESS ——— Crowne Plaza Dubai executive chef, Nicolas Herbault, discusses his inspirations and signature dishes

An institution in its own right, Crowne Plaza Dubai has long been a cherished sight on the city’s skyline. Located on Sheikh Zayed Road, the famed hotel is renowned for its central location and five-star hospitality, presenting the ideal setting for memorable meals and celebratory nights out. With 13 international restaurants, bars and lounges to choose from, visitors are truly spoilt for choice here. “Considering our wide variety of different cuisines, we offer something for every taste. From international buffets to fine dining and Brazilian rodizio, we offer unique experiences for everyone,” explains executive chef Nicolas Herbault. “Our signature restaurant is Chamas Churrascaria and Bar, where large skewers of meat are grilled over an open fire and served directly at your table. Our Italian trattoria Al Fresco offers authentic fare, while our French wine bar Oscar’s Vine Society is truly a hidden gem among the wine bars in Dubai, offering delicious French bistro bites and 120 different grapes from all over the world.” Chef Herbault worked at other leading locations including France and Bora Bora before moving to Dubai, a city that greatly adds to his expertise. “Dubai gives me the opportunity of managing teams with a huge number of different nationalities, which is a great experience. But of course, being such a glamorous metropolis, the emirate also attracts celebrities from all over the world and I have had the pleasure to cook for some of them. These are definitely memories for life,” adds Herbault, who says he was inspired by his father to take up the profession. “My dad was a chef as well, and had his own restaurant until recently. When I was a child, I went to the restaurant every day and helped with preparations. I started with simple things like the mise en place but I also loved talking with guests who were curious to see a little boy roaming around in the kitchen. The smells, the atmosphere and the smile on people’s faces as they enjoyed the food was so exciting for me. I never considered any other career than being a chef.”

At Crowne Plaza Dubai, Herbault’s days start early in the morning and involve planning for the day ahead, attending meetings and discussing operations. Menus also change at least twice a year in every outlet too, in addition to seasonal promotions being regularly unveiled. “I have my own style and remain convinced that sticking to authenticity and traditional recipes will always last longer than any trend. However, it is interesting to see the creativity and change in culinary concepts in Dubai, and there are ideas that are worth developing further in my own culinary repertoire. “We try our best to source local produce wherever possible. Lettuce, okra, spinach or watermelon are some of the products we buy from local suppliers. However due to the size of the property we have to additionally source from overseas. Products like truffles, olive oils, certain cheeses and other specific items are not available in the UAE and have to be imported from their countries of origin. We only work with trusted suppliers,” says Herbault. Every restaurant at Crowne Plaza Dubai boasts its own signature highlights as Herbault points out, including the fantastic lion king roll at Sakura, French cold cut platter at Oscar’s Vine Society, crispy duck at Trader Vic’s, succulent Picanha cut at Chamas Churrascaria and Bar, chicken katsu curry at Wagamama and so much more. Herbault is also enthusiastic about the brand new menu at Al Fresco, which features his latest culinary pièce de résistance. “If guests had time to eat just one dish at the hotel, it would have to be Al Fresco’s cacciucco alla livornese con pane all’Aglio e capperi, a rustic and delicious fish stew with tomato and basil broth, served with fresh garlic bread. It’s a kind of bouillabaisse but, of course, Italian style. It’s my favourite dish at the moment and a must-try for fans of Italian cuisine that look for more than pizza and pasta.” —— For more information and to book a table at any of the restaurants in Crowne Plaza Dubai, contact: 04 3311111

—— Renowned for its hearty grills and rustic flavours, Australian cuisine lends itself perfectly to social gettogethers, which is why the Corroboree dining experience at Bushman’s Restaurant & Bar at Anantara The Palm Dubai Resort is proving to be so popular. Taking its inspiration from the native Australian word Corroboree, generally used for group gatherings where music and food is enjoyed, the restaurant offers a sharing-style dinner of Aussie-inspired fare with a five-star twist. Undoubtedly one of the most memorable aspects of the evening, aside from the delicious flavours, is the artful presentation. From the lengthy starter board peppered with signature delights such as smoked kangaroo and seared scallops – the relishes are even served on a boomerang – through to the smoking Sydney Sunday dessert finale with decadently sweet lashings of chocolate brownie, cotton and pavlova. The addition of live music, faultless service and relaxed ambience all add to what promises to be a great night out.

THE ADDITION OF LIVE MUSIC, FAULTLESS SERVICE AND REL A XED A MBIENCE ALL ADD TO WHAT PROMISES TO BE A GREAT NIGHT OUT

1 & 2 Bushman’s Restaurant & Bar, Anantara The Palm Dubai Resort 3 & 4 Junoon, Shangri-La Hotel, Dubai

With a name that literally translates from Hindi as ‘passion’, it’s little surprise that Junoon at ShangriLa Hotel, Dubai pulls out all the stops to ensure a fine Indian dining experience like no other. The menu encompasses cuisine from major Indian states, but with a modern twist – think shahi lamb shank, spiced with black cumin rose curry and a dash of saffron honey foam, or the Tamilian fish curry that is prepared with green mango for a delightfully tangy taste. We recommend opting for the four-course ‘gala menu’ that showcases the chef’s specialities, with each dish paired expertly with fine vintages. Don’t leave without trying the eggplant chaat – an unexpected twist to the Indian street food favourite. Here thin slices of crispy eggplant are given a flavour boost with tamarind chutney and chaat masala spices. Follow with the braised nali goat that packs a fiery punch thanks to the use of ghost chilli and ginger, and the creamy kulfi selection for dessert that’s prepared tableside in a interactive display using liquid nitrogen.

ASADO

—— Discover the many vibrant flavours of Argentina at Asado. Nestled in the elegant surrounds of The Palace Downtown Dubai, the restaurant boasts a postcardworthy setting that overlooks the stately Burj Khalifa, as well as Spanish live music and a menu of delightfully authentic fare. Start with delicious empanadas that come in a variety of fillings including king crab, onion and cheese, corn and more, or the sinfully indulgent Proveleta Asada – grilled provolone spiced cheese – that perfectly sets the scene for yet more temptations. Diners can select premium meat cuts from the Argentinian Pampas grill that all stand out for its exceptional quality, complemented by a rich array of sauces but, for something different, try the chef’s speciality roasted baby goat from the ‘Asador’ grill, which is slow-cooked for hours over a small fire. Asado also features a gourmand’s selection of special ‘heritage’ dishes, an exceptional variety of fine Argentinian vintages and truly decadent desserts, making every meal here a special occasion.

WHILE DINNERS AT M ANZONI ARE ALWAYS A DELIGHT, THE RESTAUR ANT HAS RECENTLY L AUNCHED A NEW FRIDAY ITALIAN BRUNCH THAT’S THE TALK OF THE TOWN 8

One of the city’s dining gems, Manzoni Italian is a charming restaurant at Pullman Hotel & Residence Jumeirah Lakes Towers. The restaurant, helmed by Italian chef Andrea Pastore, champions authentic flavours and impresses with its show kitchens and wood-fired ovens. Start with the fried Sicilian-style saffron rice balls with parmesan, meat ragu, peas and truffle mayonnaise or the famed burrata di Andria, before moving on to heartier mains such as the costoletta di vitello, a Milanese-style breaded veal cutlet. If in doubt, don’t hesitate to ask for recommendations from the expert staff. The chef ’s signatures such as the baked homemade lasagne bolognese, bresaola della valtellina pizza topped with air-dried Italian beef, and stuffed tortellini with mixed seafood and black truffle are also indulgent highlights. While dinners at Manzoni are always a delight, the restaurant has recently launched a new Friday Italian brunch that’s the talk of the town. Book a table outside on the restaurant’s terrace and enjoy delicious fare to share, including baked eggplant in tomato sauce, fresh seafood spaghetti and irresistible tiramisu.

Here Emirati rice dishes are cooked with a variety of meats and chef Uwe Micheel elevates the flavour of locally-sourced, sustainable fish by using his own homemade spice combinations and tangy, flavourful chutneys. For a true taste of the emirate, try the maleh salad of preserved fish on a bed of lettuce and grilled Gulf prawns that are flavoured with turmeric and lemon. Contact: 04 2057033

This chic Asian restaurant and bar at Sheraton Grand Hotel, Dubai effortlessly sets the scene for a memorable dinner with ease. Here the contemporary décor, complete with dark woods and statement lighting fixtures, matches the sleek service so don’t hesitate to ask the expert staff for recommendations. The restaurant’s Chinese and pan-Asian inspired menu lives up to high expectations but make sure to also check out the selection of seafood displayed proudly at the restaurant’s own ‘fresh market’. There’s a lot to choose from and on our last visit we enjoyed Novikov’s signature sashimi creations that included hamachi carpaccio and scallops with black truffle. Everything here is prepared fresh and presented with flourish. Contact: 04 3888744

One of the signature restaurants at Fairmont The Palm, Seagrill on 25° Restaurant & Lounge features a menu that’s primarily focused on ‘fruits de la mer’ with a Mediterranean touch. To start, we’d recommend ordering the delicious seafood linguini packed with mussels, shrimp, clams and squid that is marinated in a flavourful yet delicate tomato sauce. The menu’s Fish Market section lists the restaurant’s signature seafood selection, which includes seabass from Greece, octopus from Tunisia and black seabream from Turkey as its Mediterranean highlights. Fans of Indian cuisine are in for a treat at Tresind. Located at Nassima Royal Hotel, the fine dining restaurant introduces your palate to a whole host of possibilities thanks to chef Himanshu Saini’s expertise in molecular gastronomy. Here the sciences of physics and chemistry transform tastes and textures of food in delightful ways. Seafood enthusiasts will no doubt enjoy the pan-seared scallops served with a rich peanut sauce, while the Achari monk fish that celebrates the tangy flavour of pickles and the delicious pepper prawns tossed with curry leaves is well recommended. ASK THE CONCIERGE

Amado Silveti, chief concierge at Nikki Beach Resort & Spa Dubai and member of Les Clefs d’Or UAE, reveals some of the city’s finest attractions

1

Dubai’s transformation continues to impress thousands of visitors. The city is proud to showcase its culture as well as modern ways of living and with iconic landmarks full of superlatives, from the tallest to the largest, it’s easy to see why the emirate is often affectionately known as ‘the city of dreams’. What I love most about Dubai is its constant evolution and strive for innovation, providing both visitors and residents with new ways of staying entertained. At the moment, Dubai Opera, outdoor retail complex City Walk and observation deck At the Top Sky Burj Khalifa, in the world’s tallest tower, are a must visit for anyone new to the city. If a guest is visiting Dubai for the first time, I’d also suggest they book a cultural desert safari, helicopter ride and, of course, visit Nikki Beach Resort & Spa Dubai. Nikki Beach Resort & Spa Dubai is one of the few truly contemporary boutique style beachfront resorts in Dubai located on Pearl Jumeira island with easy access to Downtown Dubai. The flagship resort project, brought to the city by Nikki Beach, is unique in its concept

NIKKI BEACH RESORT & SPA DUBAI IS THE ONE OF THE FEW TRULY CONTEMPOR ARY BOUTIQUE ST YLE BEACHFRONT RESORTS IN DUBAI

of combining luxury service and providing an off-the-cuff personal experience. The resort is a place to meet and create memories on the beach overlooking the stunning Arabian Gulf. As host to the world-famed Nikki Beach Dubai Restaurant & Beach Club, the resort is already known for its luxury offering, exceptional entertainment and elite clientele. If you’re short on time, make sure to enjoy an aperitivo with sunset views at Key West – a Floridian and Caribbean venue with a trinity of cuisines and fantastic collection of rum and cigars from Latin America. My days are always pretty exciting. The life of a concierge does not finish when you leave the office. The greatest reward is being able to provide guests with an unforgettable stay, and see them leave with a smile on their face. I often get asked about the best places to shop for souvenirs or unique arts and crafts, and I always recommend exploring the different art galleries dotted around Dubai International Financial Centre (DIFC) and Alserkal Avenue in Al Quoz. Madinat Jumeirah is another popular place to buy souvenirs too, and remains one of the city’s must-see attractions. There really is something for everyone. You can’t visit Dubai and not take the time to visit one of the emirate’s many awesome shopping malls. The largest mall in the world, The Dubai Mall, should be at the top of the list as it houses the best designers and luxury brands, including Givenchy, Oscar de la Renta, Burberry, Montblanc, Louis Vuitton and more. It’s easy to spend an entire day exploring the different boutiques but, if you’re short on time, head straight to the Fashion Avenue and Level Shoe District within The Dubai Mall for a curated selection. For more luxury shopping, visit City Walk in Jumeirah.
