MADE TO MEASURE ——— Concierge meets Mauro Ravizza Krieger, the forward-thinking creative director at Italian menswear house Pal Zileri

When he took over as creative director at Pal Zileri, Mauro Ravizza Krieger’s immediate challenge lay in the inherent conflict between preserving the quality of traditional techniques while, at the same time, trying to forge ahead along a modern path. All too often, when old and new collide, attempts to do justice to both can feel a little forced. This is arguably all the more true in fashion, where the pace of change is at breakneck speed and the pressure is on to stay ahead of the curve. In a bid to tackle the creative conundrum, Ravizza Krieger has come up with a whole new concept. “Avant-Craft describes a contemporary approach to a timeless tradition, it’s a synthesis of skilled craftsmanship, attention to detail and loyalty to cultural roots, combined with an experimental avant-garde vision. The result is an urban mix which has great personality,” he says. At the heart of the notion is a determination to preserve the traditions of the past by ensuring the very best of Italy’s artisanal heritage underpins each and every Pal Zileri piece. It’s an important tribute also to the firm’s 45-year history. In 1970, entrepreneurs Gianfranco Barizza and Aronne Miola founded Forall Confezioni Spa, a company dedicated to traditional craftsmanship. During the 1980s and 1990s they then created a signature label, Pal Zileri, which takes its name from Palazzo Zileri, an ancient building in the historic centre of Vicenza. Ravizza Krieger says: “Last year, when I arrived at the firm, we discovered an archive and we decided to take from that fabrics and patterns for references that were used in the 1970s as that was the most successful period for the old Pal Zileri. We revisited those fabrics and added more contemporary proportions.

“We reintroduced handicraft steps, which were lost in time in the production cycle. Those techniques were then combined with the most advanced technologies, such as laser cutters. Each piece of the new Pal Zileri collection represents a challenge to find a balance between the past, understood as craftsmanship and tradition, and avant-garde in technology and textile fields. All our garments are versatile, multipurpose and meet the needs of an increasingly demanding modern man.” Having started out in mens’ fashion almost 30 years ago, Ravizza Krieger worked first as a stylist before moving on to become a tailor at a European archive of English fabrics. Before long, he was assigned to the pattern cutting departments of some of the most prestigious tailors in London, Paris, Milan, Rome and Berlin. He has since worked as an external consultant for a host of luxury Italian clothing manufacturers, including Loro Piana, Allegri and Caruso. In January 2015 Ravizza Krieger took over as creative director at Pal Zileri after CEO Paolo Roviera approached him with an idea for a new concept at the house. Ravizza Krieger says: “He asked me to give new life to the brand, starting from its deep roots in Italian tradition. I immediately believed in the idea and we started together on our path to give Pal Zileri a new and more modern image.”

The new direction presents both formal and casual menswear lines, as well as a bespoke service and a line for younger men, Lab Pal Zileri. Each piece is crafted entirely in northern Italy at the Quinto Vicentino workshops. Ravizza Krieger explains: “The characteristics that make Italian menswear unique all over the world are craftsmanship, experience, skill in tailoring and attention to detail in the choice of materials. These elements have always been transmitted from generation to generation. In the same way, since its establishment in 1980, Pal Zileri creates exceptional crafted garments thanks to the great skills and knowledge that are part of its DNA. “Most of the artisans at Pal Zileri have been with us for more than 30 years. A lot of them are sons of Italian tailors and as such, are heirs of great sartorial skills. This is particularly important as the high quality of a Pal Zileri suit demands years of training and represents a heritage of knowledge for the company.” At the manufacture, there are 455 dedicated artisans working on anything up to around 400 suits each day. A highly involved process, there are more than 180 steps in the creation of each Pal Zileri classic suit jacket, and between 245 to 270 phases in the making of a suit. “Each step is fundamental in order to get the perfect outcome that we require. This is at the very heart of the establishment, as

hundreds of artisans draw on their knowledge, and patience, to come together to create something special. “It all begins with the selection of the fabric, and continues with the laser cutting of between 23 and 25 separate pieces. The last steps are the ironing and the testing phases.” The result is that Ravizza Krieger and his team have managed to achieve an excellent balance between the key tenets of Italian design tradition and cutting edge technique. That synergy is apparent across the brand’s wide range of pieces, from urban menswear, evening wear and sportswear, to suits, jackets, raincoats, leather goods and accessories. For Spring/Summer 2016, a bold colour palette in metallic greys, cobalt blues and deep greens lends a striking effect on jackets, suits and shirts. Inspiration for the collection comes from some of the 20th century’s best known optical art motifs, including squares and diamonds, which are repeated in patterns across the collection. Ravizza Krieger says: “The new Pal Zileri man is a contemporary sophisticated man, impeccable in every detail. He is someone who loves culture and is definitely fashion oriented. In 1906, Van Cleef & Arpels was one of the first jewellers to boast an address at the prestigious Place Vendôme in Paris, France. The moment marked an important first step for the Maison and has led to a legacy that has lasted over a century.

Van Cleef & Arpels is a name synonymous with luxury. Combining exceptional craftsmanship with technical innovation across its creations, the French Maison’s legacy has triumphed for over a century. One of the most celebrated values of the Maison is its commitment to artistic excellence, an element which will proudly be on display at the Poetry of Time exhibition, hosted at The Dubai Mall from February 8 to 20. Since the beginning, the Maison’s talented artisans have strived to craft distinctive designs that defy time and tell extraordinary tales, much like the one that brought the brand to life. Towards the end of the 19th century, Estelle Arpels – the daughter of a dealer in precious stones – met Alfred Van Cleef, the son of a stone cutter. It was the start of a love story like no other and in 1895 they married. Their

passion for precious stones and desire to create a lasting legacy led them to establish the Maison of Van Cleef & Arpels. Over the years that followed, they succeeded in making Van Cleef & Arpels one of the most respected jewellers in the world. A celebrated spirit of creation became the essence of artistic and bejewelled timepieces made by the Maison throughout the 1920s, a period when watches were considered essential accessories that served a functional purpose. Van Cleef & Arpels took its first steps into the world of watchmaking by going against the grain and transforming timepieces into luxurious pieces of artistic jewellery. In 1935 Van Cleef & Arpels crafted a wrist watch that effortlessly combined beauty and functionality. The Cadenas, or ‘lock’ in French, was meant to reflect a sacred union and was thought to

be originally inspired by the Duchess of Windsor. Within a few years the Cadenas watch was given an elegant update – designed as an exquisite bracelet, the timepiece contained a dial that only its wearer could see. Recently the Maison refreshed the classic piece, incorporating an enlarged white mother-ofpearl dial for increased visibility and 12 hour markers. Available in nine different versions, including a variety of straps, stones and metals, the Cadenas is a jewel of a timepiece thanks to its unique design. This eye for clever aesthetics is reflected in all of Van Cleef & Arpels’ elegant timepiece collections, especially in the Extraordinary Dials range where every watch dial is designed like a painting. Inspired by miniature art, which was popular between the 16th and 18th centuries, miniature painting is a skill that only a few craftsmen have mastered over the

years. Van Cleef & Arpels often uses this technique on mother-of-pearl as well as gold. The miniaturist needs to be a talented painter in order to compose the original design freehand, using a rich tapestry of colours and a very fine stable brush. The design is sketched using a binocular microscope, before the dial is heated for an hour at 80°C to dry this preliminary version. More and more layers of paint are then added – each calling for additional firing – to create a work of art that reflects every detail and nuance of the original design. Lapidaries, enamellers, engravers and stonesetters also use many time-honoured traditions and skills to further embellish the dials. This year Van Cleef & Arpels shines a spotlight on miniature feather art, which is evident in recent creations such as the Lady Arpels Colibri Indigo Extraordinary

Dials Collection watch that brilliantly ref lects the wonder and colours of nature. The technique involves the maître d’art choosing the perfect bird’s feather and then using sections where colours are the most vibrant. These are then carefully smoothed, stuck down and trimmed to the desired design. It’s an incredibly delicate process that has been perfected with help from Nelly Saunier, a renowned French feather artist. The Maison’s attention to detail extends beyond just aesthetics. Beneath every decorated dial lies the timepiece’s beating heart. Several innovative movements bring Van Cleef & Arpels collections to life, including the Quantième de Saison movement that was developed in-house. The intricate and complex movement reveals the elements that make up the back of the dial and allows time to

be structured in line with the seasons. At Salon International de la Haute Horlogerie (SIHH) last month, Van Cleef & Arpels recreated the ethereal lightness of nature with a brand new movement in the stunning Lady Arpels Ronde des Papillons Poetic Complications watch. The timepiece features a self-winding mechanical movement with a jumping retrograde hour, variable speed minutes and on-demand animation module. The vibrant 13-second animation, visible on the dial, features three colourful butterflies in an aerial to-and-fro as they dance around clouds. It is this coming together of different crafts and avant-garde creativity that makes Van Cleef & Arpels shine in the world of watchmaking. The Maison’s legacy is reflected in every creation, evoking a sense of dreamy emotion and timeless appeal.

SIGNATURE SCENTS ——— Concierge discovers a secret perfume house nestled in the heart of Jumeirah

The heady scent of woody bukhoor lingers in the garden as we sit down to talk about the art of perfumery with Villa 515 founder Dhaher Bin Dhaher. It’s a topic that’s quite close to his heart. “I grew up in a home where bukhoor is a ritual that would be done three or four times a day. Now I make my own and it’s completely different from what you would get in the market,” he says with a smile. He’s right of course but the bukhoors are just one of the many highlights at Villa 515, a boutique that specialises in niche perfumes and artisanal labels, as well crafting bespoke fragrances. Dhaher Bin Dhaher is an avid perfumer himself and the talent behind Tola, an Emirati perfume line that makes use of the highest quality fragrance oils. “It’s a brand that came from a concept – I wanted to capture memories in a bottle. When we were in London a few years ago, my mother and sister were discussing perfumes. I saw the joy on their faces when they talked about fragrances, and I told them I would create a brand for them. That’s where it all started. I then began touring and learning more about the industry, especially in Europe where all the rare and niche fragrances are available,” says Dhaher. Rooted in tradition, Tola became one of the first niche Emirati brands to go international with exhibitions in New York and Florence. Today it retails across the globe including Germany, France, Hungary, Italy, the United Kingdom, Romania and Switzerland. Its unique name refers to the tola unit of measurement – equivalent to 11.7 grams – that originated in India and is still used in the Arab world to measure precious metals and oil. At Villa 515, visitors can discover all three Tola collections and Dhaher tells us that the Misk Begum from the Voyage collection remains an international bestseller with its beautifully musky and floral scent.

Soon after launching Tola, Dhaher Bin Dhaher realised there was a gap in the UAE market for a more intimate, boutique destination dedicated to niche perfumery. He partnered with creative perfume director Alessandro Gualtieri – famed for his in-demand Nasomatto perfumes – and Dutch fashion designer Lilian Driessen for the interiors and concept of Villa 515, which officially opened its doors to the public in 2014. Today, it’s gaining a reputation as a haven for discovering avant-garde fragrances and crafting bespoke scents. “We always liked the relation to be more intimate and Villa 515 started as a place where we could have our products, but we also introduced a lab for customised fragrances. Not every person knows what kind of fragrance suits them so we try to figure out what they like with different scents,” explains Dhaher. Delving into some of the thinking behind perfumery, he reveals that our body scents are similar to fingerprints; no two people have the same scent. It’s the reason why different perfumes don’t smell the same on different people, and why there is growing demand for bespoke fragrances that are made to order. Visitors can book an appointment to have a signature scent crafted at Villa 515’s perfume laboratory – affectionately known as L’Officina Dei Nasi (the workshop of the noses) based on the availability of perfumers who visit often from Europe. Designed with the Arabian hammam as inspiration, the laboratory features a selection of oils, essences and concentrates from Europe and the Middle East. “A fragrance can reflect your character and your personality. We like to talk to the candidate right at the start to see how passionate they are about fragrances and why they want a customised scent. We don’t create a fragrance unless we know that

the person is going to appreciate it as it involves a lot of sampling and testing on different notes. Our pricing is consistent with Europe and depends on each creation. But then it’s your own recipe and can be made to order later at a regular rate. “We’ve been innovative in our approach and even in our selection of brands. The term ‘niche’ isn’t only about hard to get products but the way you communicate the products. It’s about representing the right elements and explaining the ingredients,” explains Dhaher. Several brands such as Antonio Alessandria, Une Nuit A Bali, Ann Gerard Parfums, Orto Parisi, Baruti and Vero Profumo are available exclusively in the UAE only through Villa 515. They are also official partners of Nasomatto, Orto Parisi and Maria L in the Middle East. Villa 515 boutique features a wonderful courtyard that doubles as an event space for exclusive launches, while right opposite the perfume laboratory is an eclectic range of fashion brands, including a few homegrown labels. There are plans in place to open a café in the future too. “Villa 515 is a concept that we would like to replicate in different cities and go international with. We are working on a pop-up concept for Abu Dhabi at the moment too. “History says perfumery started in the Middle East and as a result, a lot of Arabs today are perfumers themselves because they blend different fragrances and notes to create the right smells. We consume a lot of fragrances here but we need to improve appreciation for original fragrances and build awareness about the differences between commercial and niche perfumes,” says Dhaher. Last year saw an impressive 38,165 strong crowd attend the event over the week, revelling in the emirate’s fabulous weather and on the course action by what was considered a ‘classic field’ boasting nine Major champions. It was Rory McIlroy that golf enthusiasts watched storm towards another victory at Emirates Golf Club – his second since winning in 2009 when he also claimed the title of the youngest Omega Dubai Desert Classic winner at the tender age of 19. Hot off his third DP World Tour Championship win at Dubai’s Jumeirah Golf Estates in November, fans are sure to be firmly focused on every shot from the Irish super star. While McIlroy will undoubtedly be looking to equal the tournament’s record of a treble win by a single player (a record currently held by South African Ernie Els) he’ll face some stiff competition. ALL THAT JAZZ ——— This month’s Emirates Airline Dubai Jazz Festival brings a world of music to town

At first glance, Dubai’s annual jazz festival is more a celebration of rock and guitar legends than a pure study of the jazz genre. Names to have dominated the bill in recent years include Sting and Santana, while pop crooners James Blunt and Christina Perri have also made an appearance. But that eclectic mix is more a testament to the nature of not only the festival, but of jazz music itself, which makes its influence felt in many musical styles. The result is a kaleidoscope of performances from a roster of well-known talent and niche performers who come together on the Dubai Amphitheatre stage each year for a masterclass in music. The festival started life in 2003 with jazz artists playing to an audience of 1,200 – nowadays, the event attracts crowds of more than 60,000 and some of the greatest names in music. This year’s installment looks set to be the greatest yet with Grammy award-winning headlining artists including Chris Botti, Sting and Santana. “This outstanding show marks a first time appearance of an iconic pop jazz artist like Chris Botti and the return of Sting after his sell-out gig in 2015, to perform together in a rare live performance. It’s definitely a once-in-a-lifetime opportunity to watch a stellar show by these two Grammy award-winning artists. It’s also an immense honour to have Santana on the bill, as he graces the stage once more,” says Anthony Younes, founder of the company behind the festival Chillout Productions. Musical icon Carlos Santana will be appearing as part of his Luminosity world tour, following on from previous sell-out stints at the festival. Bringing his fusion of Latin rock with blues and jazz, the star will take to the stage on February 26. Having sold over 100 million albums in a career that has spanned six decades, his namesake band Santana was formed in California in 1967 and found international fame with a show stopping Woodstock performance two years later. Now with 10 Grammy awards under his belt, and another million-selling album released last

year, Carlos Santana promises to bring his classic blend of rock and jazz to the festival stage where fans can look forward to hits including Smooth, Black Magic Woman and Evil Ways. Another major draw during the festival is set to be the performance from Chris Botti featuring Sting. Taking to the stage on February 25, trumpeter Chris Botti is America’s best-selling jazz instrumentalist. The star has notched up four number one jazz albums, as well as a Grammy award and millions of record sales across the globe. Botti has sang with musical greats including Frank Sinatra, Barbara Streisand and Tony Bennett. For the Dubai show, his collaboration with legendary British singer Sting is set to be sensational. Another hit British musician David Gray is also joining the line-up. Marking his third time on the jazz festival stage, Gray is also set to play on February 25. The singer found worldwide fame after the re-release of his fourth album White Ladder in 2000, which won him millions of fans all over the globe. Elsewhere on the festival line-up, adding to the Latin feel is Argentinian group La Bomba De Tiempo who will open proceedings ahead of Santana. The ensemble of 17 percussionists presents a novel concept where a director takes the group through a series of more than 70 hand signals in an amazing interactive show. Famed rock band Toto are also set to take to the stage, celebrating their 40 th anniversary with classic hits such as Africa, Rosanna and Hold The Line. Meanwhile rising stars Postmodern Jukebox will make their festival debut with their unique vintage take on pop hits from Lady Gaga and The Strokes to The White Stripes ensuring another exciting and diverse offering this year.

MASTER CH EF ——— One of cooking’s greats, Pierre Gagnaire has ensured his Dubai restaurant is a testament to his lifelong passion for fine food

With three Michelin stars to his name, a host of top-class restaurants around the globe and a career that spans 40 years, Pierre Gagnaire is one of the world’s most respected chefs. Made famous by his pioneering culinary style, which sees an extraordinary interplay between ingredients, Gagnaire has brought his unique technique to Reflets Par Pierre Gagnaire in Dubai – considered one of the city’s finest restaurants since opening at InterContinental Dubai Festival City in 2008. “When I first came here and they explained what they wanted to do with the restaurant I was interested, even though Dubai was a complicated option at the time when it came to sourcing ingredients. I have to say that after a few years I am very happy, Dubai is now a major city,” says Gagnaire. Everything at the French restaurant exudes luxury, from the plush interiors with claret furnishings and glittering chandeliers, to the stunning menu which offers nothing short of a culinary masterclass. Crediting his team with much of Reflets’ success, Gagnaire says: “I am lucky because we have a very, very good team of people, like head chef Francois Xavier who is a fantastic talent. That is important because the operation is very small. It’s like a family, I spend time with them and pass on all I can but in the end, they must be themselves. It’s vital that they take the time to grow and learn – not just from me, but by themselves too. “I try to keep a link with them throughout the year, they know if they call me, I am there. When I am in the city, I try to spend time with them, to eat with them and to understand what they want. I basically try to maintain a good connection. It’s so much more than just passing on technique.” Gagnaire’s unique cooking philosophy has garnered him international acclaim and many imitators, although he is quick to play down the significance of his stand-out style. “My approach is often called fusion cooking, but it’s not, it’s more the way I see the job. It’s about the pleasure I get from combining ingredients and I feel free to create. I try to concentrate and keep the energy and pleasure of cooking alive, my approach is only that really. I then try to combine my talent

with the talent of my chefs. I also try to use the support of my chefs to grow, they have their own talent, why forget that?” Gagnaire has successful restaurants in the UK, France, Dubai, Hong Kong, Japan, and the United States, to name a few. At each, guests can expect a distinct experience, and one which is true to the chef’s high standards. “We have four restaurants in France – two in Paris, one in the south and one in the mountains. Each develops its own story and has its own personality. I’m lucky because with each restaurant, I feel like it becomes a part of me. “From the very beginning, in Dubai, we remained true to the fine-dining experience. You see new concepts here all the time but we don’t want to change, we want to stay the same so that people can understand and appreciate Reflets. “When guests come to the restaurant, let’s say it’s different. It’s a small place where the relationship with the guest is very personal. We pay attention to the details, we want to keep our style and to become a real reference in the city, I think that is important.” With a career spanning four decades, Gagnaire has a wealth of experience to draw on as he perfects the experience guests can expect at Reflets. He says: “It wasn’t actually my choice to become a chef, my father had a restaurant and I started working there at 17. It wasn’t until I started out on my own that I really found my love for cooking. “From there, I worked hard, concentrated and that led me on an incredible journey. When you have a project, you have to be focused on it at all times. For me Dubai has so much to offer, but a trip to the top of Burj Khalifa is unforgettable. The viewing platform, Burj Khalifa SKY on level 148 offers breathtaking 360-degree views from morning until night and is a wonderful way to take in the city vistas. Culinary fans can look forward to a choice of exciting new restaurants to try out this year. Bayside Restaurant at our hotel would be my first choice as it offers contemporary Germanstyle cooking, as well as international cuisine. For something a little different, Noire at Fairmont Dubai is a fantastic dining-in-the-dark experience which places the focus firmly on the flavours as diners embark on a culinary adventure with the lights out. Dubai is a place where you definitely don’t want to be without your camera as there are so many amazing photographic opportunities. For shots with a difference, head to the fish, fruit and vegetable market in Deira to capture the vibrant colours and to document a day in the life of the traders. Close by is Garhoud Bridge which comes to life by night as its vivid lights cast a neon blue glow that reflects on Dubai Creek. I also recommend that visitors take the time to explore the cultural side of Dubai at Al Fahidi Historical Neighbourhood. It’s a wonderful place where you really get a sense of how the city once was as you meander along winding pathways between traditional buildings with wind tower architecture. Not far from here, the dhow building yard on the banks of Dubai Creek is also a fascinating place. The traditional boats are made in much the same way they were decades ago, and watching the boat builders at work is really interesting, it’s a great way to get a feel for life in the emirate years ago and to appreciate traditions of the past. 3
