E D I T O R ’S N O T E —— One of the most anticipated events on the emirate’s calendar, Dubai World Cup brings with it world-class thoroughbreds, the cream of racing talent and the city’s most stylish spectators. It’s also an occasion that connects Dubai’s past and present, keeping alive a strong association with equestrian themes which have long been an integral part of the UAE’s history. Presenting a beautiful study of horses in motion is local artist Michael Arnold who, in this month’s photo essay, pays tribute to the majestic creatures and the country’s connection to them. Turn to page 40 to discover more. On page 48, Concierge looks at what you can expect from this year’s thrilling spectacle, going behind the scenes at Dubai World Cup and its home Meydan Grandstand and Racecourse. Then, we turn to two more major fixtures taking place in March – Emirates Airline Festival of Literature and Art Dubai. On page 54, you’ll find a detailed look at both the international and regional writing talent set to gather at the prestigious literary event, while on page 56, our feature on Art Dubai celebrates the proud 10-year history of this influential art fair. The city’s dining scene comes under the spotlight on page 66 where we delve into the daring with a look at some spectacular restaurants where a touch of the theatrical means a night to remember. Finally, if you’re feeling inspired by our magazine, visit myconcierge.com to book an experience and start your Dubai adventure.

HOUSE OF HERITAGE ——— Contemporary flair inspired by the traditions of the past heralds an exciting new chapter for Aigner thanks to creative director Christian Beck

From a small town in rural Germany, where fashion was at best a second thought, Christian Beck has attained incredible sartorial success and is now at the creative helm at one of the industry’s most respected luxury leather and fashion houses. Trained in traditional tailoring methods, Beck’s bold creative vision complements a passion for design. It’s precisely this combination of skills that makes Beck a perfect fit for a brand that prides itself on blending both the classic and the contemporary. “I grew up in a place where the term fashion was more than unusual, so I wasn’t surrounded by those influences. In the end, it was my art teacher who guided me to study fashion design. She was convinced that I had to go this way. And she was right,” says Beck. The budding designer enrolled at the Fashion University of Trier in Germany where he earned a degree in fashion and soon immersed himself in the industry. Beck recalls: “My university was on the border of Luxembourg and Belgium, so from the beginning, I was in the perfect environment for high fashion as Antwerp and Amsterdam were just a short drive away. At the same time, Trier offered me a calm location where I could develop my own creativity and sharpen my senses. Still today, I need the countryside to help me to get back to the basics.” Part-time jobs during his university years were of course fashion oriented, and Beck worked in the boutiques of Dusseldorf where he gained an important grounding in the industry. His first jobs were at JOOP! a major fashion and cosmetics brand in Germany at the time, and as an accessory designer for prestigious leather goods producer

Goldpfeil. While there, a chance meeting in 2008 with Aigner CEO Sibylle Schön marked the start of a prosperous partnership. Beck rose through the ranks at an impressive pace, and within two years was appointed head of leather and accessories. By early 2012, he took over the entire creative responsibility at Aigner and, as head of design, set about meeting the challenges of reconciling the firm’s rich heritage with a drive towards the contemporary. “I wanted to understand the brand, and to carve out a path, whilst incorporating the DNA of the past. That might sound easy, but it is harder than you would expect. I think it was always important for me personally to accept challenges and to trust myself and the team, and to trust in what we were doing as a whole,” explains Beck. Aigner celebrated its 50th anniversary last year and it’s perhaps a fitting reminder of the weight of history that sits on Beck’s shoulders. The Aigner story starts with Hungarian born handbag designer Etienne Aigner who first gained recognition for his work at the haute couture shows in 1930’s Paris. As the company grew, an identity emerged which centred around the equestrian world and, at a 1950s collection presentation in New York the now iconic horseshoe-shaped ‘A’ logo appeared for the first time. Back in Germany, in 1965, Etienne Aigner joined forces with Munich businessman Heiner H. Rankl and the brand was born. With equestrianism now firmly at the heart of its ethos, Aigner began hosting regular horse races in Munich as the association deepened. Beck says: “The affinity to the equestrian sport has always been there and has always influenced our design, whether it’s the horseshoe

“A COLLECTION CAN ALWAYS BE SEEN AS SOMETHING VIVID WHICH DEVELOPS OVER A LONG PERIOD OF TIME. MY TASK IS TO MERGE THE THREADS IN THE END TO CREATE A HAR MONIOUS OVER ALL PICTURE” logo or our famous saddlebag lines. But we have other important influences too. As most of our manufactures are in Italy we also have a lot of influence from the Tuscan tradition. Our signature colour is the Chianti red which is dedicated to the Italian wine – we consider ourselves to be a German brand with an Italian soul.” Today Aigner boasts 450 outlets all over the world and has successfully extended its reach to womenswear, menswear, watches, jewellery and an assortment of luxury leather goods. An elegant approach to tailoring is felt throughout in a nod to the firm’s original roots. For Beck, retaining a strong sense of the past is an important part of forging ahead. He says: “In our Genesis Autumn/Winter 15 collection, we decided to honour our founder and the anniversary. It celebrated the people, landscapes and music of the country of Hungary. Its colourful traditional garments were a particular inspiration, and the absolute highlight for me was the floral print icon that flowed through the collection as a recurrent theme. At the same time, we felt it met the international trends of the season: folkloristic looks with embroidery, patterns and vivid colours.” For Spring/Summer 16 a fresh approach continues with an inviting colour palette of mint greens, peach and bronze across a stylish edit of handbags. When not mining Aigner’s archives for inspiration, Beck draws on the ordinary scenes of everyday life he encounters while travelling. He says: “A lot of the concepts I create are just little musings from my head, I am probably inspired by the same things everybody else

sees on a daily basis. I’m a big fan of people on the street. Floating through the streets and breathing in the here and now is something I find very inspirational. I love big cities like New York. When I come back from my journeys I’m bubbling over with ideas. Then we hold creative meetings and we find the direction that Aigner should take for the upcoming season. I have a team of great people around me, who follow and inspire me at the same time. “A collection can always be seen as something vivid which develops over a long period of time. My task is to merge the threads in the end to create a harmonious overall picture. You need to have this overview and the eye for what you want to achieve from the beginning, so that nothing falls apart.” Despite a successful foray into fashion, for Beck, Aigner is principally all about luxurious leather goods and signature handbags. The Cybill is one of the firm’s most famous handbag creations. Introduced in 2013, its distinctive angles perfectly blend both the modern and traditional. The new Cybill Metropolitan is limited to just 50 pieces and is inspired by the cities of the world, including Dubai. It’s an ostentatious piece, crafted from ostrich, crocodile and snake leathers with a glossy pink finish. Beck says: “Our Middle Eastern customers appreciate how much work and passion we put into these limited editions. Arabic women have a strong sense of fashion and luxury products, especially for handbags. The woman who chooses an Aigner bag knows that she is investing in a product for life.”

the finish line ——— This month’s photo essay features local artist Michael Arnold as he captures the majesty of horses in motion

40

41

“I have always had a connection with horses. Living and working in Dubai has brought me even closer to them in all set tings – r ace tr acks, polo fields and in the desert. They have a m averick qualit y about them”

In my art studies I was taught to see and understand the interplay of form, shape, colour and light. When studying horses I look for these qualities to discover the essence of the horse. My sketches attempt to reveal the power of their musculature and the unpredictability of their movement

Equestrian portraits are not necessarily the obvious choice for architect turned artist Michael Arnold, having found local renown mostly for his distinctive depictions of some of the UAE’s most famous buildings. Yet his new, much-anticipated series on horses is a stunning study of these majestic animals, and it’s precisely this impeccable eye for detail that has resulted in a beautiful body of work. From his studio, tucked away down the labyrinthine alleyways of Al Fahidi Historical Neighbourhood, Arnold blends a keen understanding and passion for horses, with an appreciation for their place at the very heart of local culture. “I have always had a connection with horses. Living and working in Dubai has brought me even closer to them in all settings – race tracks, polo fields and in the desert. They have a maverick quality about them – a sense that their will cannot be denied even when bridled. When the rider is in the same mind set, the horse and rider become one, that combined spirit is beautiful. I try to capture these moments in my polo and racing works,” says Arnold.

42

For the new series, the artist applies his signature monoprint technique to a variety of genres within the subject, including polo and horse racing. For the monoprints, Arnold starts off with a sketch of the horse before using layers of foil and oil paint to complete unique versions of the original. This allows him to capture intriguing variations of each subject. It is very much a labour of love, as he returns to a theme he loved as a child. Arnold says: “Whether racing freely over the dunes of the empty quarter or on the rolling green fields and hills of a Kentucky farm, whether racing head-to-head at Meydan or competitively challenging each other on the polo pitch, a horse embodies and symbolises the energy of free spirit. “They are beautiful, strong, graceful animals, magnificent in form, structure and complexity. Since my early childhood, I have always had a fascination with horses, specifically horses in motion. There was a connection that I felt to their seemingly wild and uncontrollable energy, to their wildness and free-spirited attitudes.

P h o t o e s s ay / Ex p e r i e nc e

43

“I can remember at the age of seven being mesmerised by paintings of the great masters depicting horses in battle. I can remember those scenes to this day from the galleries of the Philadelphia Museum of Art and often return to visit those same paintings even now.” Turning that early fascination into a finished series that depicts each line and movement of a horse has however taken hard work and many hours of research to refine. Arnold explains: “I enjoy the process and challenge of studying the horse, I start with the physical – the musculature, the movements, the body position, leg positions. Then I move to the head and I study the expressions and angles. I observe the focus of the eyes and the position of the ears and try to understand the intentions of the horse. I then set the mood through a variety of sun lighting angles accentuating the position and motion of the horse in an attempt to create drama, and the connection between horse, rider and the setting. I put all of this together in my paintings to create a complete picture of a powerful animal in perpetual motion. “The most challenging aspect is feeling and capturing a moment in a horse’s burst of energy. First, you have to see and select the moment. As a horse is in continuous motion, the challenge is to capture the spirit of the movement and then to freeze it in time. Then you have to take that frozen moment and translate the mental image onto canvas

44

or paper, in the appropriate scale, perspective of motion and proportion of structure. Doing that in a way that captures the spirit of both the horse and rider is key.” There is also a big difference in the approach depending on the style used, and Arnold adapted his technique to capture horses in both oils and monoprint. He says: “Paintings are carefully built up studies of the horse’s form and captured movement; a layering of light and shadow tones, a constant refinement of paint and brush strokes depicting shapes, values, colour and light. From the first few brush strokes and tones, through to the final layer of highlights and tonal values in light and shadow. “By contrast, the monoprint process is not as carefully planned or executed as an oil painting. In monoprinting there is an initial pencil sketch transferring pressure impressions on paper that are then transferred, through the oil paint, onto foil on glass with layered paper. This creates a single positive and negative print, delivering an immediate image of colour interplay between random shapes and colours. I am attempting to capture a flashing moment to create an image during a continuous burst of the horse’s energy.” Michael Arnold’s work will be exhibited during the SIKKA Art Festival from March 13 to 27, at villa 10 in Al Fahidi Historical Neighbourhood. —— One of last year’s main talking points of course was the competition’s return to a dirt track, rather than the all-weather turf that had previously been favoured since the grounds were rebuilt as Meydan Racecourse. And along with the return of the dirt track came, by in large, the return of the American racers who had started to wane since the synthetic Tapeta surface came into play in 2010. Prior to that many of the stateside teams dominated, winning eight titles in the first 14 years of the Dubai World Cup. Although much of last year’s attentions were focused on the American participants, with California Chrome pitted as the one to beat, it was in fact HH Sheikh Hamdan bin Mohammed bin Rashid Al Maktoum’s Prince Bishop from Godolphin Stables that stormed to an unexpected victory. The result led to Prince Bishop taking the title as the race’s oldest winner, and also signalled the seventh win for the local stable’s celebrated trainer Saeed bin Suroor. American favourites California Chrome and Lea placed runner-up and third, respectively.

—— Once again California Chrome seems to be generating plenty of buzz. The former Kentucky Derby winner and his team are gearing up for his second shot at the trophy, which if it were to be successful would see him become America’s highest-earning racehorse. Others to watch out for include Fascinating Rock from Ireland, Australian contenders Darley Classic and Delectation, and Toormore, Godolphin’s British-trained thoroughbred. “The quality of the horses that have been nominated for the Carnival speaks for itself,” explains Meydan group vice chairman, and chairman of the Meydan Racing Committee, Malih Al Basti. “These great athletes compete for some of the highest prizes in the industry in the run-up to the 2016 Dubai World Cup,” he added. This year’s accepted horses hail from 16 countries including South Korea’s first participants Cheongu and Success Story. The Dubai Kahayla Classic kicks off the day’s exciting nine-race schedule, with other significant races including the Godolphin Mile, Al Quoz Sprint and Dubai Sheema Classic with a sizable prize fund of US$6 million. CORBIS

From seasoned race-goers to budding equestrian enthusiasts and trackside stylistas, Dubai World Cup brings together a melting pot of fans eager to revel in the electrifying atmosphere of the world’s richest horse race. Now in its 21st year, the event is a firm fixture not only on the city’s sporting calendar, but also on the global stage. While Dubai World Cup Carnival’s 11-week race schedule officially began on January 7, anticipation has been steadily gaining momentum for months as the hard work and dedication from all those participating culminates in the run up to the big day on March 26, by which point the countrywide excitement will no doubt be palpable. Held at the prestigious Meydan Racecourse, the total prize purse stands at a whopping US$38.9 million with a generous US$10 million going to the victor of the main race. “T he Dubai World Cup has become an extremely important event on the international racing scene, evidenced by the 27 countries that have been represented here by runners in the past,” says Martin Talty, international manager at Dubai Racing Club. With the world’s leading owners, trainers and jockeys all vying to be a part of it, the line up brings together the best of the best and includes participants from Godolphin stables founded by HH Sheikh Mohammed bin Rashid Al Maktoum, Vice President and Prime Minister of the United Arab Emirates and Ruler of Dubai.

LITERARY GREATNESS ——— As literary greats from around the world descend on Dubai to attend the annual Emirates Airline Festival of Literature, Concierge explores the city’s flourishing literary landscape Words by Olivia Cuthbert

For centuries, Dubai’s literary tradition was an oral one, with stories and poems circulated by word of mouth. Bedouin tribes living in the desert would while away long evenings sharing tales and rhymes around the campfire. Dubai harks back to that tradition every year in Desert Stanzas at the Emirates Airline Festival of Literature in which poets from all over the world gather together for a night of words and rhythm under the stars. Adel Khozam is one of the local voices participating this year. As a festival regular, Khozam has played a proactive role in developing the UAE’s poetry scene in a bid to establish a receptive environment for local literary talent. He says: “Dubai is an open forum for culture with everything from libraries and exhibitions to dialogue sessions, art festivals, cinema and theatre. This is a city that embraces creative artists and those with a wide imagination.” At the festival this year, Khozam will introduce his philosophical book, Life Through the Third Eye, recently published in translation in the United States. “It’s a novel of two heroes, the poet and the wise man, who cross the world to seek freedom, truth and beauty. The book includes poetic and philosophical content that I hope will resonate with foreign readers,” says Khozam. Now in its eighth year, the Emirates Airline Festival of Literature has been a major driving force behind the development of Dubai’s thriving literary scene. For UAE-based writers, the line-up of international authors, publishers and literary heavyweights offers unrivalled opportunities to make useful connections, gain valuable advice and develop their careers.

“The LitFest provides a platform for authors to showcase their books and build relationships between authors and publishers from all over the world,” says Shihab Al Deen Al Musharaf, Sudanese author and illustrator of the successful comic book, Alaa the Bounty Hunter. The universal appeal of the LitFest is one of the aspects that Maitha Al Khayat, a respected writer and illustrator of children’s books in the emirate, likes most about the event. “It’s not only a festival of literature; it’s more like a festival of cultures because you get to meet, mingle with, learn from and be enlightened by people of so many different nationalities in the space of a few days.” For Al Khayat, the UAE is in a ‘golden age of writing’. “There’s always a literary competition or an event happening, and your diary is full of circled dates. A writer actually feels recharged to write in this country,” Al Khayat adds. This year’s stellar festival line-up is a good mix of international and regional writing talent including House of Cards author Michael Dobbs, awardwinning poets John Agard and Simon Armitage, bestselling children’s writer Jacqueline Wilson and Emirati documentary filmmaker Maha Gargash. Supporting both aspiring and established UAE-based authors has been central to the LitFest programme since it was launched in 2009. “Helping the writing community is one of the festival’s top priorities and we have a number of competitions for writers that have grown in popularity over the years,” explains Isobel Abulhoul, director of Emirates Airline Festival of Literature, referencing the

Montegrappa First fiction Competition for adult writers and the Taaleem Poetry Award for aspiring student talent. Elsewhere on this year’s programme is special session Celebrating Shakespeare which marks the 400-year anniversary of the bard’s death with a series of film screenings and theatre adaptations, including the UAE’s first performance of Steven Berkoff’s one-man play Shakespeare’s Villains. New to the festival this year is Spotlight on the Emirates, a three-day segment with a focus on Emirati and UAE-based writers, poets and performers at Dubai International Writer’s Centre. Other new events include the Literary Creek Cruise with British philosopher AC Grayling, and the Time Travel Dinner featuring famous scribes Michael Dobbs, Anthony Horowitz and Suhel Seth. There’s also a packed programme of workshops and masterclasses, conducted in both English and Arabic, with sessions on script writing, children’s literature and pitching ideas. For a growing community of home-grown writers, Dubai has not only inspired, but opened up new opportunities and proved to be the ideal launchpad for a literary career. Abulhoul is enthusiastic about the emirate’s appeal for writers, she says: “It’s not just the wonderfully supportive community of writers and book lovers. There is something about this place that encourages people to aim high and believe that anything is possible.”

A HISTORY OF ART ——— As Art Dubai returns this month for its 10th edition the fair continues to make its mark on the region’s cultural ambitions

A decade ago Dubai’s art scene was very much in its infancy. The creative community that thrives today at Alserkal Avenue was still just a great idea in the making, while the artistic spaces at Gate Village in DIFC and Al Fahidi Historical Neighbourhood were quietly emerging as the seeds of the city’s cultural scene were being sown. Enter Art Dubai, which upon its launch in 2007, changed the face of art not only in the emirate but the region. Its first incarnation was the DIFC Gulf Art Fair before being rebranded the following year to take on the now renowned title. From the offset, the fair was held under the patronage of HH Sheikh Mohammed bin Rashid Al Maktoum, Vice-President and Prime Minister of UAE and Ruler of Dubai who, even a decade ago, was keen to promote arts and culture in the city. During its debut year the fair attracted an impressive 9,000 visitors from all over the world and the event was such a success that within weeks of it closing, more than 40 galleries signed up for the following year’s edition effectively doubling its size. Beyond the fair itself, the impact was far reaching and its galvanising effect on the emirate’s wider art scene was keenly felt. Galleries in and around the city noted a surge in interest which in turn helped foster the fledgling art landscape. Today, that reciprocal relationship between Art Dubai and the artistic community thrives both here in Dubai and throughout the region. As the event looks forward to its 10th edition this month, it continues to go from strength to strength, bringing an incredibly diverse collection of around 90 galleries from the UAE and around the world. More than 500 artists from 40 countries will be represented as countries from Palestine to Ghana join this year’s eclectic roster. Works include pieces from Middle Eastern, African and Asian modern masters as well

as some of the world’s most noted contemporary artists. The fair is structured around three main programmes –Contemporary, Modern and Marker. Interconnected gallery halls at the sprawling venue in Madinat Jumeirah house everything from artist and curator residences, educational initiatives, commissioned projects and multimedia projects, to film and radio programmes. The dynamic offering also includes an annual exhibition of works from the winners of prestigious annual art competition, The Abraaj Group Art Prize. “This year marks the 10 th edition of the fair, and this anniversary encourages us to reflect on the dramatic growth of the art market and arts scenes of the Middle East, South Asia and Africa over the past decade,” says Antonia Carver, fair director. “Art Dubai acts as a catalyst and focal point, locally and for the wider region, and the diverse nature of our programming ref lects the central role played by the fair,” she adds. A CO N T E M P O R A RY TO U C H

—— Bringing its largest programme to date, Art Dubai Contemporary promises an exciting line up of galleries, with several opting to show solo or twoperson exhibitions. Stand outs to look forward to include the presentation from Istanbul’s Sanatorium Gallery which will show the work of Ahmet Dogu Ipek and his haunting watercolour on paper Construction Regime which sees high-rise buildings intertwined to convey an almost gothic view of postmodern society. Another dark piece comes from Gallery Jeanne Bucher in Paris and German artist Evi Keller. In Towards the light – silent transformations, the photographic imprint technique blends the real and imaginary to great effect.

THE M ARKER 2016 EXHIBITION FEATURES A HOST OF INNOVATIVE EXHIBITION SPACES AND INCLUDES PHOTOGR APHS, VIDEO, PAINTINGS, SOFT SCULPTURES, WORKS ON PAPER AND TEXTILES

Bold pieces using vivid colours and prints come courtesy of Indian gallery Chemould and the striking work of Shezad Dawood, while Nobuaki Takekawa’s Wave Drawing, from Ota Fine Arts based in Tokyo and Singapore, marries sweeping blue and white strokes for a piece that stands out as much for its texture as its colouring. Another must see at Art Dubai Contemporary is this year’s special project from Atassi Foundation for Art and Culture, which will present a specially commissioned mixedmedia exhibition in tribute to Syrian artists. M O D E R N M A S T E RS

—— The second major pillar of the fair is Art Dubai Modern which is devoted to masters from the Middle East, Africa and South Asia. The only curated programme of its kind in the world, this year’s edition will show rare works from the 1930’s onwards from a collection of renowned masters. Also highlighted in Art Dubai Modern this year will be the important role of female artists during this period and among the inspirational pieces exhibited will be work from Palestine-born Iranian painter Maliheh Afnan, shown by Dubai’s Lawrie Shabibi gallery. Afnan is acclaimed for her work with paper which draws from archaeology and script to craft ancient scrolls in muted hues and earthy colours. The idea behind the pieces is to convey a sense of what it means to live in other times. Elsewhere in the series, the work of Palestinian artist Samia Halaby, widely considered to be one of the world’s leading contemporary abstract painters, will be shown by Ayyam Gallery, while the work of fellow abstract master Moustafa Fathi will also be presented by the gallery during what is sure to be a fascinating edition.

MAKING A MARK

—— The third main pillar of the fair, Marker, is Art Dubai’s curated gallery programme which focuses on a particular theme or place. This year the Philippines comes into the spotlight with Manila artist and curator Ringo Bunoan leading the series to introduce independent, artist-run spaces in the city. An important part of Manila’s art scene, artist-run venues have provided a new generation of talented creatives a platform outwith more conventional exhibition options. Bunoan will bring together a diverse group of artists from the Philippines across a wide variety of media, focusing on themes of community, collaboration and alternative economies. The Marker 2016 Exhibition features a host of innovative creative spaces and includes photographs, video, paintings, soft sculptures, works on paper and textiles. Artists include Mark Barretto, Tammy David, Jed Escueta among others, while the work of pioneering Filipino conceptual artist Roberto Chabet (1937-2013) will serve as an anchor for the exhibition, and a major installation from Chabet will be shown. Elsewhere on the packed programme, Art Dubai Projects is a not-for-profit programme of new works and performances, while the annual Abraaj Group Art Prize winners will also be exhibited. Community school Campus Art Dubai adds to the educational offering while the Global Art Forum is a chance for artists, curators, musicians, thinkers and writers to present and debate ideas. Running from March 16 to 19, this year’s edition of Art Dubai not only promises to be the strongest yet, but continues in the tradition set out a decade ago, providing a vital platform for the region’s now flourishing art scene. BLUE STEEL ——— The electric blue lights of Meydan bridge lead the way to one of the world’s most exciting sporting venues

On Dubai World Cup race day, members of the royal family take a special route to the famed racecourse, crossing over the Meydan VIP Bridge. In order to mark the importance of the distinctive landmark, by night, stunning lights edge their way along each one of its twists and turns to create a sensational effect that can be seen for miles. Not only a royal race day route, the bridge is also an architectural masterpiece in

its own right, with sweeping waves of artistically crafted steel. Eighty metres long, the bridge’s blue ribbons of light illuminate the night sky in front of Meydan Grandstand and Racecourse. From this perspective, with the bridge to the fore and Burj Khalifa in the distance, the city’s skyline is all the more spectacular. For the elite few on race day this month, it’s the perfect way to start the world-famous day.

A WARM WELCOME ——— Thai hospitality and excellent international fare is a recipe for culinary success at Anantara The Palm Dubai Resort

Located on paradise isle Palm Jumeirah, the distinctive Thai architecture of Anantara The Palm Dubai Resort is the first indication that an eclectic experience awaits. From authentic flavours of the Australian outback to the delicate dishes of Vietnam, Irish chef Maurice Fitzgerald is the at the helm of an impressive gastronomic offering. “I have been in the industry for the last 20 years or so, and have travelled a lot, experiencing different hospitality environments. Based in Dubai for the past 12 years, I joined Anantara Dubai a little over 18 months ago where I am in charge of the culinary department which looks after all the food within the resort,” Fitzgerald says. “My philosophy regarding food is to buy high-quality products and not to complicate the dishes too much. I try to keep things traditional and use seasonal ingredients. The great thing is that the variety of restaurants we have allows me to do that as the food is very different in each one,” he adds. The luxurious resort is home to six dining outlets, each excelling in its own area of expertise. Crescendo is the hotel’s international restaurant where an amazing array of flavours hails from the Middle East, Europe and Asia. Mekong is a charming venue where quirky rickshaw-style seating and stunning exotic interiors are the perfect canvas for the delicious Thai, Vietnamese and Chinese fare. Elsewhere, one of just a few Australian restaurants in the city, Bushman’s Restaurant & Bar has carved out a fantastic reputation for its quality meats, wines and authentic dishes, while The Beach House and Lotus Lounge are both stunning spaces where lighter fare from around the globe is on the menu. With so many different dining concepts under one roof, sourcing quality ingredients and staff is of paramount importance. Fitzgerald says: “The chefs who are in charge of each of the restaurants come from each of the regions of the world we are representing, ensuring that we give an authentic experience. Also, the ingredients that we use come from those regions to ensure you get the real flavours of that particular cuisine. “For example Mekong is an Asian concept so the food items will come from Thailand, China and Vietnam. Our aim is to keep the dishes as original

as possible. As a result, our curries in Mekong are renowned. At Bushman’s, our meats are always complimented as we source the best meats to be found in Australia. We source the majority of our products for the restaurant from Australia, all the way from the bush herbs and spices to the meats.” With such an incredible selection of dishes on offer, it’s no surprise the restaurants are a huge hit on Dubai’s dining scene. Offering his own expert recommendations on menu highlights to try, Fitzgerald says: “I love the beetroot gnocchi at The Beach House Restaurant. It has pumpkin and sage, and is an earthy dish that’s also gluten free, so it fits the bill for many people. “Our Kangaroo dish in Bushman’s is another favourite of mine as it’s such a simple dish, but with many flavours. People love to taste something different with the bush spices and the wok fried bok choy. “The duck curry in Mekong is my favourite from this restaurant as we don’t temper it with spices so it’s as original as you would get anywhere in Thailand.” It’s this commitment to authenticity and quality that sets the restaurants at Anantara The Palm Dubai Resort apart, despite the fact that there is a competitive climate on Dubai’s busy dining scene. “Dubai is always changing and so is its food culture, with over 8,500 restaurants in the city, it’s very much a melting pot as we have so many different nationalities. Having lived here for almost 12 years, I have seen that people follow food trends, which Dubai continues to provide. People still want to have comfort food and the days of eating up to six to nine courses just don’t happen anymore. People are a lot more health conscious and aware of finanical considerations. “At Anantara, we believe in delivering high-quality food at reasonable prices, and ensuring that we create memorable experiences our guests will return for again and again. Looking ahead, there is still a lot more that we would like to develop from a culinary perspective, so stayed tuned and visit this wonderful Thai resort.” —— To book a table at Anantara The Palm Dubai Resort, visit: dubai-palm. anantara.com/dining

Dare to dine ——— Delve into a world of inventive culinary concoctions and unique dinner experiences

With over 200 nationalities contributing to Dubai’s eclectic culinary scene, the city certainly isn’t short on choice of cuisine. But as an emirate well known for its love of extraordinary dining experiences, there may be times when a traditional meal out just isn’t enough. Enter Dubai’s burgeoning wave of concept dining restaurants. Whether you’re eager for dinner that’s accompanied by a sizeable portion of entertainment or you’d prefer for the evening’s entire experience to take you by surprise, there are several venues that stand out thanks to their progressive approach to fine dining. From hot new arrivals to tried-andtested classics, we present our top selection of dinner concepts that will keep you talking long after your meal has ended.

—— An entertainment export hailing from Las Vegas, the world’s highest theatre certainly doesn’t disappoint when it comes to leaving diners utterly enthralled. Perched on the 42nd floor of Shangri-La Hotel, Dubai, the surreal interiors will have you eagerly straining to take in every inch of its Victorian-themed baroque décor. And that’s before the on-stage performances have even begun. Think an electrifying mix of burlesque, aerial routines, cabaret and theatrics that can include anything from mind blowing contortion to acrobatic roller skating. With all things visual vying for your attention you wouldn’t be blamed for thinking the food may be an afterthought. Fortunately however this certainly isn’t the case. While it may seem that Peruvian cuisine has been a popular talking point of late, The Act has been successfully thrilling diners with its contemporary version of the South American fare since opening in 2013.With the exception of Mondays, each weekday the dinner show is accompanied by a set menu packed with delicious fusion fare and punchy cocktails. Served to your table with plenty of dramatic flair, right from the attractive canapes bursting with flavour, through to the sizzling meat plates and scrumptious dessert, each course is a performance of its own.

FORGET RELYING ON THOSE ALL IMPORTANT FIRST IMPRESSIONS, THE EXPERIENCE WILL NOT ONLY HEIGHTEN YOUR REM AINING SENSES BUT ALSO ENCOUR AGE A NEW APPRECIATION FOR FOOD

Eating an entire meal in complete darkness really is as intriguing, challenging and utterly entertaining as you might expect. So for those who have yet to try it, Noire is the place to visit. The idea of ‘dining in the dark’ first hit the mainstream in Paris in 2004 with the opening of the now iconic Dans Le Noir restaurant. In Dubai, the venue at Fairmont Dubai is the city’s very own version of this popular gastronomic trend. Forget relying on those all important first impressions, the experience will not only heighten your remaining senses but also encourage a new appreciation for food as dishes you may consider to be fairly familiar take on an air of mystery. Without all the usual trappings of distraction or even the faintest glimmer of light to guide you, guests will indulge in a three-course dinner complete with paired beverages during a 90-minute seating. Overseeing the dinner, and on-hand to escort you to your seat and direct your attention to the table setting, are the restaurant’s servers wearing night vision goggles. The big reveal comes after dinner as the restaurant manager and chef offer a lit reception to go through the evening’s menu. Prepare to be genuinely surprised. 4

ENIGMA

—— As you’d expect from a property that bears the Versace name, Palazzo Versace Dubai isn’t afraid of pulling out all the stops. And it’s this audacious attitude that so brilliantly transcends through to its ground breaking restaurant Enigma. Unlike anything Dubai has seen previously, this eccentric venue promises to change its entire dining concept every four months as it welcomes a new world-class chef and their unique gastronomic vision. As such there is no menu to preview, the element of surprise adds to the evening’s spectacle. Along with the presentation of each dish, the restaurant’s servers cleverly interpret the chef’s inspiration behind each course. Diners should prepare for a flamboyant show of multi-sensory and molecular cooking that will enliven every sense as each dish unveils a fresh explosion of flavours, textures and aromatic allure. From the artful plates that skilfully walk the line between bewilderment and awe, to those finer details of service and atmosphere, each element is carefully executed to create an unforgettable night that can only truly be appreciated firsthand. Currently helming the Enigma kitchen until April 12 is Spanish three-starred Michelin chef Quique Dacosta.

TRESIND

WHILE INDIAN FARE IS OFTEN REGARDED AS QUAINTLY TR ADITIONAL WITH HEART Y CURRIES TAKING PRIDE OF PL ACE IN MOST MENUS, A MEAL AT TRESIND INTRODUCES YOUR PAL ATE TO A WHOLE HOST OF POSSIBILITIES

6

—— A theatrical affair, Tresind at Nassima Royal presents an innovative approach to Indian cuisine. While Indian fare is often regarded as quaintly traditional with hearty curries taking pride of place in most menus, a meal at Tresind introduces your palate to a whole host of possibilities thanks to executive chef Himanshu Saini’s expertise in molecular gastronomy. The modernist chaat trolley sets the tone, as a skilled chef mixes rice dhokla dipped in liquid nitrogen with mint and tamarind sauces over a dramatic show of smoke – and the result is surprisingly authentic. The streetside favourite of pani puri is also on the menu but deconstructed to create a globular jelly-like version that is bursting with flavour. The mains are mouthwateringly good with succulent braised lamb chops marinated in deliciously tangy mango chutney and an Indian version of hoisin duck with chillies, pickled carrots and beetroot. Save room for dessert and you’ll be rewarded with a creative cappuccino candy floss or a deconstructed black forest cake that’s heaped with a rich chocolate concoction worthy of indulgence.

Driven by his love of Persian poetry, Iranian artist Abbas Saberi crafts storytelling art at his Swan Palace workshop in Souk Khan Murjan. We love Al Zain for its wonderful blend of traditional and contemporary styles. The Bahraini jeweller’s main collections include Natural Pearls, Bridal, Bronze and High Jewellery, while there are also limited-edition pieces available. Natural Pearls is arguably the most striking of the collections, and each piece contains precious Bahraini pearls. The jeweller is steeped in tradition, and has its roots in the pearl trade of the 1930’s. The family-run business has gone from strength to strength since then with stores across the Middle East, and of course, in Dubai with a presence that includes a boutique at Mall of the Emirates.

This is the place to come for premium accessories, from watches and eye wear to leather goods and writing instruments. There are more than 380 stores in the region, and of course plenty peppered across Dubai, meaning there is ample opportunity to pop in and browse the hundreds of international brands under Rivoli’s umbrella. You’ll be spoiled for choice here with an array of must-have pieces from brands such as Omega, Longines, Rado, Gucci, Tissot and Montblanc. For an even more exclusive experience, The R Lounge at The H Hotel Dubai, caters to Rivoli’s VIP clientele with bespoke collections in a plush space.

We love shopping at Damas where you’ll find collections from some of the most prestigious jewellery houses. Whether you’re in the mood for something that sparkles from Graff Diamonds, a heritage feel with an exquisite piece from Fabergé or a Roberto Coin design straight from the red carpet, there is something to suit all tastes. Established in 1907, from the start Damas was known for exceptional craftsmanship. Twenty years after opening its first store in the Gold Souk in 1959, Damas has become one of the region’s biggest jewellery brands. Its network spans 300 stores throughout the Gulf, across Qatar, Oman, Bahrain, Kuwait, Saudi Arabia, and of course throughout Dubai.

One of the best ways to better appreciate the region’s culture is with a visit to Sheikh Mohammed Centre for Cultural Understanding (SMCCU). The centre is tucked away along the winding pathways of Al Fahidi Historical Neighbourhood, one of the city’s oldest neighbourhoods. Emirati hosts here offer valuable insight into the local culture, customs and religion of the United Arab Emirates. Head over for lunch where the centre serves some of the best traditional Emirati food in the city – try machboos, a rice-based meat dish and chabab pancakes with spices and date syrup. One of the best ways to truly appreciate the contrasts of this dynamic city is from the air, which is why we love nothing more than taking to the skies with Helidubai. Hop into one of their luxurious helicopters and take in the sights in style and comfort. For a glimpse of the emirate’s rich past, we suggest the Heritage Tour. Taking off from the waterfront of Dubai Festival City, you’ll hover above the city’s oldest and most charming districts, including Dubai Creek and Al Fahidi Historical Neighbourhood. Witness the hustle and bustle of this captivating waterside locale before whizzing past some of Dubai’s most recognisable skyscrapers, lush green golf courses and the gently lapping waters of the Arabian Gulf. DUBAI CREEK, SOUKS AND DUBAI MUSEUM The heart of the city, the Creek is a stunning spot to catch a glimpse of authentic Dubai. See dhows (traditional boats) ply their trade along the waters while early morning visitors will see fishermen at work on the river banks. Also in this part of the city is Dubai Museum, which makes for a fascinating day out with interactive displays and exhibits charting the emirate’s history from its pearl diving days. Stop by the gold, spice and perfume souks for some traditional treasures before leaving this vibrant area.

ASK THE CONCIERGE

Assistant chief concierge Mike Getachew of Nassima Royal offers his recommendations for this month’s attractions and essential events

1

Throughout the year Dubai hosts several key sporting events. Undoubtedly one of the biggest is Dubai World Cup. Over the past 20 years, the event has firmly established itself as one of the world’s top racing challenges and a favourite on Dubai’s social calendar. It has attracted the partnerships of some of the UAE and the world’s most distinguished brands. This partnership is proof of our confidence in the continued international growth of the emirates, and in the growth of Dubai as a regional hub for business, tourism and sport. For visitors keen to experience other equestrian activities, I would suggest Dubai Polo and Equestrian Club and Al Jiyad Stables at Bab Al Shams. To make the most of Dubai’s social scene, I would recommend guests dine at our finedining Italian restaurant Tre which is spread across three levels and features amazing views. They can then move on to dance the night away at Movida Night Club, which is one of the best in Dubai. Al Hadheerah at Bab Al Shams is also a must-do in order to experience authentic Arabic cuisine and entertainment. For other

nightlife options I would also recommend VIP room, People by Crystal at Raffles Dubai and White Club Dubai at the Meydan Racecourse and Grandstand Rooftop. For more must-see attractions, of course Burj Khalifa cannot be missed. I suggest heading to Dubai Museum and the Gold Souk for a taste of the history and culture of the UAE. The shopping choices in the city are also incredible. The Dubai Mall is great, not just for shopping, but also as a top entertainment destination where visitors can tour the aquarium and take in The Dubai Fountain show just outside. All the malls in Dubai are unique in their own way but those I recommend most to visitors, in addition to The Dubai Mall, are Wafi mall and Mall of the Emirates. At this time of the year, another great place to visit is Global Village. Its name is perfect for this venue as there are more than 70 participating nations, presented in nearly 40 pavilions with plenty of authentic handicrafts and merchandise, fun rides, live performances, firework displays and restaurants offering cuisines from across the globe. To make the most of the great weather Mushrif Park is also a must. Located in old Dubai, it offers great outdoor activities such as horse and camel rides. After a busy day, a luxury spa experience is the best way to unwind. Our five-star Spa Zen offers a serene urban oasis in the midst of the city with classic eastern décor designed to evoke peace and tranquillity. Experienced therapists offer a wide range of treatments to promote health and relieve stress. Another alternative is Talise Ottoman Spa at Jumeirah Zabeel Saray. One of the best spas in Dubai, it has received many awards for its high quality service and design – it is an experience like no other. 3
