Discover A good catch
Fishing was one of the oldest means of survival for Abu Dhabi inhabitants who have relied on the fruits of the ocean for centuries. The practice lives on here today as fishermen head out on traditional dhows to cast their nets and haul in the day’s catch. For visitors, a trip to the dhow port by Mina Zayed in the early morning is a great way to tap into local culture and capture some atmospheric shots of the traditional fishing boats as they head out to sea with the modern city skyline in the background.

A way of life True appreciation of the UAE comes from the understanding of Emirati traditions Words by
Rachel Ingram
The Arab world as we know it today is the birthplace of some of the world’s most significant civilisations. The United Arab Emirates, in particular, remains one of the most fascinating nations in the region with a rich history that spans centuries. From the influence of the Portuguese, Dutch and British forces to the formation of the Trucial States and the eventual union of the United Arab Emirates in 1971, it has grown into a cosmopolitan, world-class destination. However, as the UAE continues to develop, it still remains dedicated to preserving its time-honoured traditions that are largely rooted in Islam. Concierge spends time with the experts at Sheikh Mohammed Centre of Cultural Understanding (SMCCU) at Al Fahidi Historic Neighbourhood to learn more about the customs that form the foundation of Emirati society.

Arabian hospitality is the stuff of legends. From the moment visitors walk into the Sheikh Mohammed Centre for Cultural Understanding (SMCCU ), the war m welcome they receive sets the tone for a memorable experience. Founded to give residents and visitors a valuable insight into the local way of life, SMCCU, based in the Heritage Village at Al Fahidi Historical Neighbourhood in Dubai, hosts breakfasts, lunches and dinners where guests can sample Emirati cuisine and learn about local culture in an informal manner. As is the Arabic way, participants sit on cushions on the floor and dine in a hall that
2
closely resembles a local home. Breakfast includes Arabic noodles, breads, chickpeas and awamat (golden brown donut balls), while lunch and dinner includes specialities such as slow-cooked lamb and rice. As well as talking about traditional dining, household customs and national dress, hosts open the floor to an open question-and-answer session during which guests can ask for clarity on every topic, from religion to lifestyle. Nasif Kayed, managing director of SMCCU, says: “This is a good way for us to keep the lines of communication open, where we get to know each other and talk about facts rather than misleading misconceptions. We dispel the myths that surround our religion, our lifestyle and our way of life. Ask any question and we won’t say it’s silly or be offended. This is not about defending myths, but explaining them.” When it comes to the subject of traditional dress, there is always a great debate, he says. Some people believe that Emirati women must wear black and men must wear white, but this is false. Dahlia, a volunteer host at SMCCU, explains that white was introduced in the 1930s by the Japanese, who gifted Arabs white fabric to be used as sails for boats after taking away their pearl business. Poor locals used it as clothing and dyed kandooras (long white robes) with coffee to give it a sandy colour that was more practical in the desert. In the 1970s,

oil bought money into the country and the white trend returned. Today, wearing white is common, but not essential, unless you’re a government employee and Emiratis are often seen wearing blue, yellow or green robes. On the head, men wear a gutrah (the head scarf ) fastened with an agal (rope). “The agal was initially used as a tether to slow camels down,” Dahlia reveals, adding: “Somebody got tired one day of holding it so they put it on their head.” A simple act, but a trend was set. The red and white, as well as black and white colouring, came from the British, who wanted to differentiate between the army and police, but now it’s become more of a fashion choice. Women, in comparison, started out wearing colourful clothing. Dahlia explains that they only began wearing black in the

1950s when black material was traded from Iran and Iraq. In the UAE, harsh sunlight and weather conditions meant colours quickly faded and women found that draping a black abaya over their outfit helped protect it. These days, the abaya is used in a similar way. Emirati women wear it like a coat, donning it in public until they reach their final destination. Abayas come in a whole rainbow of colours. While many opt to wear black, a number of young locals experiment with colourful detailing and contemporary patterning. Dahlia adds that they continue to cover their hair for protection from sun, sand and pollution. The tradition of wearing the batoola (face veil) is also fascinating. In the past, when wealthy women in Europe wore hats with veils, Arab women created their own version to protect skin from the sun and avoid being identified by poorer people. The batoola may look like it is made of metal but it is, in fact, shiny leather. Its shape is meant to subtly resemble a falcon. “This, according to Emirati culture, represents both strength and grace,” says Dahlia.

Making guests feel welcome at SMCCU – and in any local home – is of upmost importance to Emiratis. Arabic coffee plays an important role in this. While, in the west, many people may drink coffee for a quick pick-me-up, in the Middle East, it has a specific purpose more to do with offering. Khalid Al Mulla, founder of the nearby Dubai Coffee Museum, says: “When a person brings out the dallah (Arabic coffee pot), it means that this person wants to welcome his guests. He may not have anything in his pockets but at least he can serve his guests coffee and dates. “This Arab hospitality can be traced back thousands of years and now you can even see it in five-star hotels such as those in the Jumeirah Group who welcome guests in the lobby with Arabic coffee.” The way in which coffee is served has its own rules. In an Emirati home, the youngest son will serve the guests using a dallah – an Arabic coffee pot with a long spout which cools the liquid as it travels to the cup. The server must hold the dallah in his left hand and the coffee cup with his right. Arabic
6
coffee is strong and is sipped slowly, and only a small amount of coffee is given so it remains warm. The cup is refilled frequently until the receiver gives the sign that he doesn’t want anymore – tilting his empty cup from side to side with his fingertips. “Coffee has huge power politically, economically and socially,” Al Mulla adds. “Don’t forget, coffee is the second strongest commodity in the world after oil.” While coffee is used to greet guests, another substance is used to politely tell them that it’s time leave – bukhoor. Working in the same way as incense but with scented blocks instead of sticks, bukhoor is burned in a mabkhara (incense burner) to perfume the house and is usually lit after a feast as a signal that the get-together is over. Upon leaving, locals will pass by the bukhoor, wafting it around their robes so that the smoke fragrances the material. Arab families often have their own signature bukhoor scent. Emirati culture today remains incredibly vibrant and rituals such as drinking coffee or wearing a head scarf are steeped in tradition, reflecting the country’s illustrious past.

It is estimated that 80 percent of the UAE’s population is Muslim and over 1,400 mosques across the country provide places of worship for followers of the Islamic faith. In the cities, mosques have been built so that wherever you are, you should be able to hear the ambient call to prayer. As the melodic sound echoes across the emirates five times a day, it summons the faithful and reminds others that this is the heart of Arabia. Varying in design and detail, it’s possible to view a huge variety of architectural influences across many of the UAE’s mosques. Anatolian mosques display Turkish influences with large central domes supported by grand pillars, Shi’ite mosques often feature ornate blue tiling and the Iranian style includes a courtyard as well as extensive use of coloured geometric designs. Despite the differing building materials and styles, there are some things that all mosques have in common. They will, for example, all have at least one minaret – a tall slim tower from the top of which the call to prayer is broadcast across the city. Worshippers will bow, kneel and lie prostrate in the prayer hall which is deliberately left uncluttered and without furniture so that many people can pray at the same time. As they do so, they will face the mihrab which is located in an ornamental alcove in the wall of the mosque and marks the direction of

In the cities, mosques have been built so that wherever you are you should be able to hear the ambient call to prayer Ka’aba, the ancient shrine at the centre of the Sacred Mosque in Makkah. The UAE’s oldest mosque, Al Badiyah, located on a hilltop in Fujairah, shares similar traits. Estimated to have been constructed in 1446 from mud and stone, the 53-square-metre building is still used for daily prayers. Able to accommodate 50 to 70 people, its recent refurbishment ensures the mosque’s preservation for generations to come and has also attracted increasing numbers of visitors interested in seeing the ancient structure for themselves. The small Al Badiyah mosque stands in complete contrast to the Sheikh Zayed Mosque in
the emirate of Fujairah. It is the second biggest mosque in the UAE after the Sheikh Zayed Grand Mosque in Abu Dhabi. It has been designed as a replica of the Suleymaniye Mosque in Istanbul, Turkey, with six minarets, a large open courtyard and an elaborate selection of domes. With a capacity for 32,000 worshippers, the mosque’s exterior has been constructed with stone, while interiors are decorated with marble and granite. Still, it is far less elaborate than its sister mosque in Abu Dhabi. In Dubai, the landmark Jumeirah Mosque is unusual because non-Muslims are permitted to enter thanks to the

‘Open Doors, Open Minds’ policy and a tour run by the Sheikh Mohammed Centre for Cultural Understanding (SMCCU). General Manager Nasif Kayed explains the origins of the mosque’s architecture: “Egypt was the capital of the Islamic empire in the 1500s during the Fatimi era when mosques became quite famous for their interior and exterior domes. Jumeirah Mosque was built according to this style between 1977 and 1979, making it one of Dubai’s relatively older functioning
mosques,” he says. Even though it was the biggest mosque at the time, it was located in a comparatively quiet area away from the busy Dubai Creek and the rest of the city has since grown up around it. “The detail of the architecture makes it really stand out,” adds Kayed. “The intricate detail on the minarets and domes is amazing. We decided to start letting people enter because they wanted to see inside and that’s how the SMCCU actually started. We began running tours into the mosque and answering

questions about the purpose of the building as well as how Islam is practised.” Tours are conducted every day, apart from Friday, at 10am. Visitors are required to dress modestly but traditional attire can also be borrowed from the mosque. Nearby in the Al Safa area of Dubai, the Al Farooq Omar Ibn Al Khattab Mosque is based on the Blue Mosque in Istanbul and features sapphire-hued highlights on the white marble exterior. Following SMCCU’s pioneering cultural tours around Jumeirah Mosque, the Al Farooq Mosque which was opened in 2011, also welcomes non-Muslims to raise awareness of Arabic culture. With beautiful handcrafted decorations both inside and out, a tour is recommended in order to fully appreciate its splendour. Another mosque open to non-Muslims is the spectacular Sheikh Zayed Grand Mosque in Abu Dhabi. It is the largest mosque in the UAE and the eighth largest in the world with a capacity for 41,000 worshippers at one time. Late president and founding father of the UAE, Sheikh Zayed bin Sultan Al Nahyan laid the cornerstone of this iconic landmark but sadly passed away before its completion. His funeral was the mosque’s very first ceremony and the late Sheikh was laid to rest in a garden on the grounds. The breathtaking white marble building boasts 82 domes, over 1,000 columns and the world’s largest knotted carpet. Inside, gold-plated chandeliers illuminate the intricately decorated interior. A spectacular sight, the Sheikh Zayed Grand Mosque is certainly a jewel in the crown of the UAE’s varied architecture.

Artisans at work Sougha initiative empowers local artisans across the emirates
LOCAL CRAFTS Shopping for souvenirs is a great way to appreciate Emirati culture. Uncover the country’s heritage by browsing wares such as Arabian coffee pots, prayer beads, traditional perfumes, ghutra headscarves and quaint antiques at Abu Dhabi’s modern markets, including The Souk at World Trade Centre at Al Danah (02 8107814) and Souk at Qaryat Al Beri at Khor Al Maqta (02 5581670).
With the aim of reviving some of the capital’s more traditional retail offerings and preserving the handicrafts that were once vital to its people’s fortunes, Sougha has changed the lives of many skilled Emiratis across the UAE. Sougha, meaning ‘a traveller’s gift’ in Arabic, is a social enterprise initiative by the Khalifa Fund for Enterprise Development. Starting out as a small initiative in 2009 with just a handful of skilled Emiratis in the Western Region of Abu Dhabi, today there are over 100 artisans involved with this admirable cause. The organisation sells handmade products, including brightly-coloured bags, tapestries, bracelets and even phone covers that are made in traditional sadou patterns. This style of weaving, using a floor loom, was originally used by Bedouins. Sougha ensures all raw materials are sourced responsibly, while profits earned go to the artisans and any surplus is used to train more Emiratis by providing them with essential tools and raw materials. In 2012, Sougha launched several more programmes across the emirates, with the aim to reach and aid greater numbers of artisans. Etihad Airways has partnered with Sougha to offer its handmade amenity bags to passengers, which has helped to promote the initiative globally. Visitors can also browse a wide selection of Sougha products at Central Market, The Souk at World Trade Centre. Visit: sougha.ae

MAGERIT ARTISAN AT WORK
je w e l l e ry/ S HOP
La bella vida Spanish jewellery craftsmanship and creativity is the driving force behind Magerit
Magerit has turned jewellery design into a fine art, cementing a global reputation for its dramatic creations inspired by history and nature. Founded in 1994, Magerit is a brand that celebrates the best of Spanish artistry, even deriving its name from the ancient name for the city of Madrid. Its handcrafted jewellery is available in 18-carat yellow and white gold, set with diamonds, precious and semi-precious stones but, on first impression, what sets Magerit apart more distinctly is its designs. There is a strong aura of mystery across all collections. Babylon, for example, is inspired by the ancient Mesapotamian city and features stunning lions, the Ishtar Gate and the Hanging Gardens of Babylon as main motifs. Each are luxurious accessory statements with a rich story to tell.

“Jewellery always says something about a personality,” says Magerit’s CEO Antonio Calvo. “Magerit jewellery reflects a person who is entirely unique, who appreciates art, the best quality and likes expressing herself through jewellery.” In a little over two decades, the humble jeweller has instilled new life into the traditional industry with its artistic creations. “We only started in 1994, so we are a young company. We began as a workshop, making high-end jewellery for different brands
including Cartier but in 2001 we decided to create our own designs. The market was competitive so we had to do something different, which we’ve done by creating high-end jewellery that’s entirely handmade at our workshop in Madrid. “We don’t outsource processes to any other company and we control all parts of the production,” explains Calvo. The more recent Instinto collection explores the duality of man’s instinct. The idea that man can be both human and also animalistic is one that’s not easy to depict, but Magerit’s Instinto remains one of the most popular in the Middle East, with rings featuring women and panthers entwined to dramatic effect, jewelled eye-shaped pendants, animal claw earrings and more. “Our jewellery pieces are not technically easy to assemble. They are all very complex to make and most of the pieces are composed of different parts that need experts to put together,” says Calvo. Every collection Magerit launches takes the better part of a year to become a reality. The talented design team drafts different ideas and inspirations, before prototypes are made that experiment with various stones and colour combinations. After that, it’s time for wax prototypes to be crafted

by hand, which is not only one of the most crucial steps in the entire process, but also the most technically demanding. Artisans who create the wax prototypes are skilled in every aspect of jewellery production from knowledge of stones, types of jewel cuts through to colour combinations and more. “In Spain, we have a strong tradition of art and craftsmanship. The most important aspect of this type of jewellery is the skill of these artisans. We need to find the right people with the right experience in creating high-end jewellery and putting it all together is what makes these pieces really unique,” explains Calvo. Magerit has no doubt invested in the right people, tapping into their artistic savoir-faire to create its own distinctive aesthetic styles. One of the most important attributes of Magerit jewellery is the serial number engraved on every individual piece, which

guarantees that it is both handcrafted and exclusive, adding to its allure. Also, because of the nature of the craftsmanship involved, no two pieces are the same. T he company is also committed to responsible jewellery practices and complies with the Kimberley Process. The process was designed to prevent conflict diamonds, or ‘blood diamonds’ as they are more commonly known, from entering the global rough diamond market. Whether it’s creating bespoke personal designs to crafting signature pieces, Magerit is slowly increasing its global reach. In March 2014, the brand opened its first boutique in Paseo de Gracia in Barcelona with plans for more, while Magerit remains available through Damas in the UAE where it enjoys high demand from discerning clientele who appreciate the artistry behind the brand.

“Our brand is very well recognised in this region where people understand luxury, quality and the exclusivity of the design. It’s the kind of jewellery that people both like to wear and gift and, as visitors come from all over the world, Dubai is a very good window on which to show the brand. “We’re also targeting Eastern European countries such as Russia and starting to enter the Asian markets as the Chinese and even Japanese are beginning to appreciate our handmade quality,” says Calvo. Encouraged by rising demand, Magerit is now focusing its attention on new collections. Every piece will be crafted with passion and designed to evoke emotion. “It’s more than just jewellery and fashion after all; it is also fine art,” emphasises Calvo.

Arabian treasures Enjoy a unique retail experience at one of Abu Dhabi’s many souks
In the past, traditional sailing boats known as dhows would journey for weeks from countries such as China, Sri Lanka and India, to reach the shores of the Gulf. Here, the dhows would offload their precious cargo that included tea and spices such as saffron and cardamom, as well as textiles and artefacts, to be sold in souks. Today, that tradition continues in a modern setting. Taking pride of place amid Abu Dhabi’s towering skyscrapers and five-star hotels are charming souks – which is Arabic for marketplace – that offer a glimpse into the past. The Fish Souk at Mina Zayed sees fishermen and visitors haggle over fresh catches of fish, prawns, crabs and more, while the nearby Fruit and Vegetable Souk presents a colourful and delicious array of local seasonal produce. Abu Dhabi is also one of the few cities in the world that boasts modern souks – luxury retail destinations such as Souk Qaryat Al Beri and The Souk at World Trade Centre combine Arabesque-inspired décor with high-end stores for a memorable shopping experience in the capital. Concierge recommends some of the best souks in the emirate, recognised for their unique settings and variety of products on offer.

The Souk at World Trade Centre (WTC) is modelled on a traditional Arabian marketplace but its design is a fusion of old and new, with expansive public squares as well as a central atrium and rooftop gardens. With 250 different outlets, visitors can spend the day exploring hole-in-the-wall antique shops filled with traditional artefacts and jewellery stands selling intricate necklaces, bracelets and rings. The Souk at WTC also features stores selling authentic Arabic perfumes that make ideal souvenirs as well as a number of spice stalls where saffron – regarded as the world’s most expensive spice – can be found. Visitors can end the day with a meal at Tarbouche al Basha and sample authentic Lebanese dishes or indulge in the cultural pastime of smoking shisha and sipping Moroccan tea on the restaurant’s rooftop terrace.

Souks at Mina Zayed The Mina Zayed district by Zayed Port houses a number of bustling souks, including Fish Souk, Mina Souk and Fruit & Vegetable Souk that are well worth a visit for unique photo opportunities. One of the key highlights for visitors to the neighbourhood, however, is the Carpet Souk that features a wide variety of options from Iran, Afghanistan, Turkey and China. Sellers make Arabic majlis-style cushions to order, while expensive Persian carpets are also available, but it can be a bit tricky
to certify authenticity. Some factors to consider are that Persian carpets will be made up of the smallest knots and are generally thinner than other carpets. They will also have minor imperfections in the design, which is what makes them unique. Check that patterns on the front of a rug are mirrored on the back, with each knot entirely separate. Call of the ocean Renowned sailor Enrico Malingri di Bagnolo hopes that more UAE nationals will follow in the footsteps of their forefathers and return to sea Words by
Zeina Eid
Enrico Malingri di Bagnolo is famous for having sailed around the world with his father and his uncle from the age of six, crossing over 120,000 miles and surviving nine hurricanes. Today, the sailor has found his way to the shores of Ras Al Khaimah, where he imparts his knowledge and know-how to the students of the RAK Sailing Academy as its founder and CEO. Concierge spends some time with Malingri di Bagnolo aboard the sailing vessel, the Lutra 30. “The UAE is blessed with perfect sailing conditions such as an ideal wind speed for racing or relaxed sailing and plenty of choice for open and closed water sessions, which makes it a great place to learn,” enthuses Malingri di Bagnolo. “The enclosed lagoon of the Al Hamra Marina in Ras Al Khaimah, fenced off by the breakwater on one side and Marjan Island on the other, makes for a very safe learning environment.”

With the wind taking over and blue waves gently rippling beneath, visitors are instantly reminded of the historical bond that has long tied man and sea in the UAE. A few decades ago, before the country became the thriving destination it is today, local tribes looked to the waters for survival. The early settlements of Dubai and Abu Dhabi were originally humble fishing villages and while it was common for young UAE nationals to grow up listening to their grandparents’ accounts of adventures out at sea pearl 1 Mast and sail of the Lutra 30 sport boat 2 Onboard the Lutra 30 with Enrico Malingri di Bagnolo and Cameron 3 RAK Sailing Academy, Al Hamra Marina

diving, few have followed their ancestors’ ocean-going path. Now, Malingri di Bagnolo and his fellow instructors are hoping to bring young generations back to the sea. “Coming here, my main motivation was to teach sailing to UAE nationals and Middle Eastern visitors as it helps to bring people together and creates a sense of community,” he says. “It is also highly beneficial for youngsters as it opens their eyes to the real world that lies beyond their homes and teaches them crucial survival skills out at sea.” Dema nd for t he t h ree -hou r basic, intermediate and expert racing lessons in dinghies or keelboats mostly stems from Dubai- and Abu Dhabi-based expatriates,
with a mix of British, Italian, Spanish, German, Russian and Lebanese nationals. “In Europe, sailing has been part of the culture for several centuries with great civilisations such as France and Great Britain turning it into a real sport. People from the Mediterranean are also used to spending a lot of time on the water,” explains the sailor. “Here in the UAE, the rich maritime heritage has become less predominant with the advent of the modern lifestyle. That is why we are here; to help young locals rediscover the joys of being on the water.” While there are some students that have sailing experience, most are totally new to the sport and classes at the RAK Sailing Academy cater to all levels and age brackets

from six to over 60. Beginners are taught the basics of how a boat works, steering it in the wind, handling the sail and returning to harbour and are initiated to the different dangers that await them in open water. More advanced candidates learn about the complexity and challenging nature of competitive sailing. “Racing is a tactical game. It is not only about physical strength but more about intellectual dexterity. You have to know how to position your boat and to make the most of the wind. It also requires good teamwork, as eight different people each take on a task they have mastered. In order to sail successfully in competitions, two experienced sailors are on board to deal with critical situations. Perfect synchronisation is key. The more mistakes made, the more time is spent correcting them and the longer the delay,” Malingri di Bagnolo explains. Every now and then, aspiring sailors also get to put their racing skills into practice, thanks to popular regattas organised by the RAK Sailing Academy. The latest, held in association with the Ras Al Khaimah Sailing Association, saw around 14 boats compete in the harbour’s waters.

“We plan to organise similar regattas every couple of weeks. We will also be participating in races in Dubai and other parts of the UAE more regularly. Events like these are important in order to help spread the word about the academy and its mission,” says Malingri di Bagnolo. It might take some time but a sailing culture is gradually gaining strong traction again in the UAE, thanks in part to new role models in the sport. The first professional Emirati sailor, Adil Khalid, is one of the stars of the Abu Dhabi Ocean Racing team

in the latest edition of the Volvo Ocean Race, the world’s biggest offshore sailing contest. Leading the way for aspiring sailors in the country, the talented Emirati was also the first Arab to compete in the Olympic Games when he made it to Beijing in 2008. He already has his eyes set on a medal at the 2016 Olympics. Hopefully Khalid’s achievements will inspire more young UAE nationals to follow suit, helping Malingri di Bagnolo realise his dream of forming an Olympic all-Emirati sailing team sooner rather than later.

Horse riding The UAE maintains a strong relationship with horses, evident in prestigious events such as the Dubai World Cup and HH President of UAE Polo Cup. On April 11, Abu Dhabi Equestrian Club (02 4455500) hosts the Al Hosn Endurance Cup, an annual event in which horses and their riders cover 90 kilometres. The club also hosts regular show jumping and desert riding in collaboration with its riding school. Those who want to saddle up themselves can book lessons at the school, which boasts over 90 horses and ponies, and offers private and group sessions for all experience levels. Don’t miss the chance to tour the stables to come face to face with some of the Gulf’s racing champions.
Elsewhere in the capital, Al Forsan International Sports Resort (02 5568555) in Khalifa City boasts a state-of-the-art centre that features an international-standard polo field, multiple show jumping courses and stables that are home to more than 150 horses. The resort offers expert riding and jumping lessons for all levels. The stables at Sir Bani Yas Island (02 8015400), part of Desert Islands Resort & Spa by Anantara, offers hacks that explore the island’s varied terrain. Ride through the Arabian Wildlife Park and you could spot giraffes, Arabian oryx, gazelles and cheetahs. Abu Dhabi has fast become a global hub of golf, attracting amateurs and professionals from all over the world with its lush fairways, elegantly manicured lawns and top-ofthe-line clubhouses. Since the Abu Dhabi HSBC Golf Championship was added to the European PGA Tour calendar in 2006, interest in the capital as a golfing destination has grown tenfold. Today, the city is home to a number of world-class courses. In 1976, Abu Dhabi Golf Club (02 5588990) became the first Abu Dhabi facility for the sport. The par-72 championship golf course covers 162 hectares and features 18 holes, seven lakes and 90 bunkers.
One of the city’s newest clubs, Yas Links Abu Dhabi (02 8107710), is the first links courses in the Middle East. Designed by renowned architect Kyle Phillips, it features 18 holes of varying degrees of difficulty. Set in a coastal location on Yas Island alongside the Arabian Gulf, the ocean provides a striking backdrop. Another beachside course, Saadiyat Beach Golf Club (02 5578000), should also be on the top of golfers’ itineraries. Set over 317 acres on Saadiyat Island, the picture-perfect par-72 championship course features more than just inspiring views. Modern classics Talented chefs in Abu Dhabi are reinterpreting traditional Arabic dishes to create innovative flavours
The Arabian Peninsula is steeped in a rich history that dates back thousands of years. Over time, many different tribes, settlers and nomads travelled across these lands, bringing with them their own unique foods and traditions. Middle Eastern cuisine today spans the entire region to include fare from Egypt, Kuwait, the UAE, Levant and Saudi Arabia among others and remains a key reflection of Arab culture. Almost every popular dish, from the meaty goodness of harees to the wholesome knafeh dessert, tells a story of its own. Today, Arabic cuisine is growing in popularity around the world as the Middle East becomes a leading tourist destination. A number of restaurants in Abu Dhabi, however, are serving up something a little different from the conventional fare people have come to know and love. Concierge meets with a few of the chefs specialising in contemporary Arabic cuisine.

Chef Jouni Ibrahim has made a name for himself in Abu Dhabi with his innovative and contemporary culinary skills. Guests at Li Beirut in Jumeirah Etihad Towers are offered two menus. While the first includes the typical selection of classical dishes, the second incorporates unique, avant-garde recipes. “Arabic cuisine has always enjoyed a solid base of flavours that can be increasingly presented in a more modern fashion, just like other international cuisines,” says Ibrahim. “Li Beirut’s vision is to combine traditional cooking methods with foreign ingredients while taking special care of the dishes’ presentation, to cater to the taste of our multicultural clientele. “Some of the restaurant’s most popular dishes include the delicious kebbeh with foie gras, the zaatar-crusted lamb rack and the moughrabieh presented as an Italian risotto.

“Visitors are increasingly curious to try ingredients that have long been used and that are presented for the first time with Oriental flavours.” One highlight, the rack of lamb, is charcoal-grilled to perfection before it’s covered with a delicate zaatar crust for an irresistible taste. The accompanying black truffle, potatoes served à la boulangère and tomato jam add a touch of sophistication. Ibrahim’s genius also translates into sweet masterpieces, such as honey-stuffed croquant biscuits delicately resting against a golden mount of knafeh, or an opulent chocolate fondant with a mouthwatering date filling, complete with cardamom and Arabic coffee-flavoured ice cream. Another chef in the city who enjoys the fusion of flavours is chef Jamal Bendghoughi from Almaz by Momo restaurant at The Galleria on Al Maryah Island. Growing
up in Morocco, his love for cooking was inspired by family recipes. He went on to work internationally at Michelin-starred restaurants and says this experience helped him to hone his own technique that combines traditional and modern flavours using the finest local ingredients. “For me, contemporary food is all about the assimilation of f lavours and cuisines, which creates a fusion dining experience. Almaz by Momo is a prime example of this, from décor to cuisine. One of our signature highlights from the menu is the camel tagine,” says Bendghoughi. Named after the earthenware pot the dish is traditionally cooked in, tajine is a slowcooked meat stew. Almaz by Momo’s chicken tajine is delicious but it also offers something out of the ordinary. “We take a traditional product sourced locally and create the dish using the same time-honoured methods – all

the spices used are the same as for red meat, including cinnamon, cumin, star anise and cardamom seeds. Then we slowly cook the camel meat for three hours before serving. The dish has been really well received,” adds Bendghoughi. Another dish given a signature twist at Almaz by Momo is the traditional Moroccan meat pie known as pastilla. It combines sweet and salty flavours but has been refreshed with the use of pigeon meat that presents an incredibly distinct and wholesome taste. Ahmad Awad Alfakier, executive chef at Kahraman in Southern Sun Abu Dhabi, focuses his attention on creating new spice blends and trying different cooking methods
in an effort to broaden the appeal of Arabic cuisine. The restaurant stands out with its own take on the region’s dishes. It presents a blend of hot and cold mezze, light bites and traditional mixed grills as well as a dedicated sushi counter, each offering unexpected combinations. The humble hoummus, made from chickpeas, is presented with spicy pimento tartar and orange zest. Beef kebabs come with cherries, and fried calamari feature generous use of Arabic spices and green lime mayonnaise on the side. “There has been a clear shift towards food that not only tastes superb, but is also fresh, healthy and wholesome. Another trend we’ve seen in contemporary cuisine is the

move towards experimenting with lots of smaller dishes – a preference for a steady flow of light bites that allow a mix of global flavours to be savoured throughout a meal,” explains Alfakier. “Our lobster kebbeh is just one example of how we blend the traditional and the modern to create innovative and imaginative food. We give kebbeh a contemporary twist by using the Canadian lobster as a main ingredient with guacamole on the side. “Even our shanklish – which is traditionally made from vintage cheese and tomatoes – has been refreshed by mixing in heirloom tomatoes, compressed cucumber and a fresh twist of watermelon,” he adds. There remains, of course, a lot more room for experimentation across Arabic cuisine and fortunately, the talented chefs of Abu Dhabi are eager to keep innovating and testing the boundaries of the cuisine.

Dhow spotting For centuries, traditional wooden boats known as dhows were relied upon to keep the UAE's bustling trading ports and markets afloat. Nowadays, waterways such as Dubai Creek and Abu Dhabi's Mina Zayed Port are key points to spot the remaining ships still in use gliding majestically on the water. They remain great reminders of the past and of the deep-rooted traditions that reaffirm the country's long-lasting connection to the sea.

HERITAGE VILLAGE Designed to resemble a traditional oasis village, this quaint attraction provides an interesting glimpse into the emirate’s past. There’s a Bedouin tent, reconstructions of original date-palm houses, an example of the ancient falaj irrigation system and a small spice shop selling dried herbs and other trinkets.

EMIRATES PALACE The iconic palace takes pride of place at the tip of the Abu Dhabi Corniche and embodies the luxury lifestyle the capital has cultivated. Until recently, the most expensive hotel ever to be built, the impressive structure is richly adorned with precious materials. Twelve different shades of marble can be spotted in the cavernous atrium, while the central dome holds dual records as both the largest in the world and the greatest gilded expanse ever created in one building.

My life in Abu Dhabi Fashion designer, Katya Kovtunovich, talks about life in the UAE capital
}

Yas Mall on Yas Island and The Galleria at Al Maryah Island are really nice for visitors. I enjoy eating at the small fish restaurants by Mina Port in Abu Dhabi. They are all so authentic with simple food, but when hosting friends and family, I take them to Mezlai at Emirates Palace for a traditional meal. The best attraction in Abu Dhabi is the stunning Sheikh Zayed Grand Mosque. I love the simplicity, the grandeur and the peace that you feel when you are there. The winter season in the UAE is a very special time and so is Ramadan. I love iftars – the meal that signifies the ending of the daily fast at sunset – where I can dress up in the traditional Arabic way. All through the holy month, the city is transformed with fewer people around and you feel all the beauty surrounding you is for you alone. Since I’ve lived abroad for some time, I don’t feel homesick. Home is where I am. If I feel tired, my ‘place of power’ is the beach. I immediately feel inspired and re-energised there. I also go horse riding. In fact, one of my fondest memories remains riding in the Abu Dhabi desert at sunrise. Nothing beats that feeling of freedom and love.
I really like the small fish restaurants by Mina Port in Abu Dhabi, but when hosting friends and family, I take them to Mezlai at Emirates Palace for a traditional meal

I was born in Russia and lived in London, Paris and New York before moving to the UAE four years ago. As founder and designer behind the Katya Kovtunovich fashion brand, style and designing is very important to me. I work most weekends, but it is a real pleasure to spend time with my creative team and clients, most of whom are also my friends. I am lucky to have many close Emirati friends and I love talking about culture and traditions with them. One of them took me to a falconry festival in Al Ain recently and it was unforgettable. I’ve always been attracted to everything historic or vintage. With the pace at which the modern world is developing, these traditions will not exist in a few years. Whenever I get the chance, I like to enrich myself with unique experiences and discover new things. Abu Dhabi’s souks are magical places. When I moved here, I immediately wanted to learn about local clothes, fabrics and accessories. On one visit I discovered the beautiful sadou fabric, traditionally used for sofas and tents, which became an inspiration for my fashion collection, In Love with UAE. As I make my own clothes, I don’t shop much but the new
