Dubai securing the expo in 2020 means that the city will only improve on what is already an excellent offering. Visitors to the emirate can return again and again, and experience something new everytime they come. Retail, leisure and dining options just get better every year. It would be unthinkable to visit Dubai and not experience a famous desert safari, through which visitors can experience life the Bedouin way. The Dubai Fountain is another must. It's Dubai's oldest quarter where visitors can wander down labyrinthine lanes which are home to restored merchant’s houses, art galleries, cafés. For those looking for the best selection of luxury brands, The Dubai Mall has all the big name brands under one roof. Twilight hour In the moments just before sunset each day, when the sun is at its lowest, Dubai looks its most beautiful. Majestic skyscrapers materialise out of the blue haze that’s been cast over the city as the rolling waves of the Arabian Gulf reflect in the endless glass windows. World-famous structures such as Burj Khalifa, Burj Al Arab and Jumeirah Beach Hotel stand out against the silhouette of towering skyscrapers, stretching from Dubai Marina to Downtown Dubai and beyond. In the pocket In the modern age when the preservation of heritage and tradition is of the upmost importance, classic pocket watches are making a comeback WORDS BY

As new technologies impact the traditional relationship between timepiece and wearer, the aesthetic side of watch design is increasingly brought to the fore. High-end watchmakers are now focusing on creating timepieces that are physically and mechanically beautiful to appeal to an ever-enduring desire for quality, exclusivity and style. The popularity of classic-look models is colossal and some brands have gone a step further by revisiting the original wearable timepiece – the pocket watch. In 16th century Europe, when wristwatches were yet to be invented, pocket watches were the only easily transportable time-telling devices. Worn by the elite of society either around the neck or in the breast pocket of a jacket or waistcoat, the timepiece exuded prosperity. Today, a pocket watch brings classic elegance to an ensemble. Concierge explores the comeback of the pocket watch and the watchmakers at the forefront of the revolution.

Breguet If there was ever a pocket watch fit for a Queen, this is it. Breguet No. 160 Grand Complication, more commonly known as the Marie-Antoinette, was created in memory of the last Queen of France, wife of King Louis XVI. The Queen was a fan of Breguet and owned several timepieces made by the luxury watchmaker. Before her death in 1792, an admirer commissioned the brand to create ‘the most spectacular watch possible’ as a gift for her. Unfortunately, Marie-Antoinette had been sent to the guillotine by the time it was complete and so it was instead put on display at a museum in Jerusalem. However, misfortune struck again and the precious piece was stolen. In 2005, Nicolas G Hayek, former CEO of Swatch Group, set the challenge to recreate it. The result is a new timepiece that ref lects the original in many ways while making use of modern mechanics including Breguet’s own invention the jumping hours movement. A work of art both visually and mechanically, the self-winding Marie-Antoinette timepiece features a perpetual calendar displaying the day and the months, a hand-painted day-and-night

display, a 48-hour power reserve indicator and a bi-metallic thermometer. Every minute detail is made to regal standards, from pink gold components to coloured steel screws and bearings set with tiny sapphires. It even features Breguet’s modern anti-shock system to protect it with the hope that this timepiece will last many more years than its predecessor, and bear a legacy akin to the woman who inspired it.

Omega Every time a runner crossed the finishing line during the 1932 Olympic Games, or a swimmer reached the end of a race, an Omega pocket stop-watch recorded the results. As official timekeeper of the games, Omega’s job was to record every result on highly precise and reliable stop watches. After the games, the specially created watches became collectors’ items. Several decades later, employees at the Omega headquarters stumbled across boxes containing unassembled movement kits of the exact model from the 1932 Olympics. Bringing the past back to life, master watchmakers used the kits to create 300 Omega Olympic Pocket Watch 1932 Rattrapante Chronographs; 100 in 18-carat yellow, white and red gold to represent the gold, silver and bronze medals awarded during the international event. An exciting find for dedicated watch collectors, each speciality watch is a piece of sporting history. To reflect this, the back is engraved with the Olympic rings, the phrase ‘Official Timekeeper of the Olympic Games’ and serial number.

Jaquet Droz The popular pocket watch trend is bringing horology of the past back to life. One brand pioneering the manufacture of such timepieces is Jaquet Droz. La Montre Hermès The Cristalleries Royales de Saint-Louis is the oldest glassmaking manufacturer in Europe. Since the late 1700s, its worldrenowned artisans have created beautiful crystal glass artefacts and glassware using a special glass melting process. The luxury watchmaking arm of fashion brand Hermès, La Montre Hermès, has collaborated with the manufacturer to create striking dials and covers inspired by ninth century paperweights for its line of Arceau Millefiori watches. The pocket watch version is available in a number of styles, including a sleek black and a vivid red model. The case of each is what makes it stand out. The unique motif known as millefiori, or ‘a thousand flowers’ in Italian, is created using a sequence of carefully crafted colourful crystal canes that are formed using a blowpipe and a pot furnace. Layers of crystal are used to bring out colours, and the artisan cuts the canes into 10-millimeter portions before arranging them vertically into the planned design. This is then fused together and shaped and cut into the correct shape to fit the dial or case, with a stunning end result. An Arceau Millefiori pocket watch is a truly unique timepiece with a rich history that’s ideal for collectors with an interest in craftsmanship and the finest crystal glass.

Van Cleef & Arpels choose last month’s Design Days Dubai as the venue for a stellar showcase of incredible artistry

Since its launch four years ago, Design Days Dubai has brought something special to the region’s artistic scene. A one-of-a-kind annual event, the idea behind the fair is to celebrate the latest innovations from the world’s best designers. From internationally renowned galleries and design houses to the industry’s rising stars, visitors to the event are ensured an eclectic selection from an impressive roster of talent spanning 20 countries. Since the fair began, French high-jewellery Maison Van Cleef & Arpels has played a starring role. The jeweller is famed for not only adorning European royalty and society’s elite, but for maintaining some of the highest standards of craftsmanship in jewellery design. Artisans known as Mains d’Or have for generations poured passion and dedication into each highjewellery creation crafted at the atelier, hidden from view behind the Van Cleef & Arpels boutique at Place Vendôme in Paris. Design Days Dubai presented a rare opportunity to watch the master craftsmen at work during special workshops, while some of the Maison’s most iconic pieces from across the years were also on display in a special exhibition.

Timeless Design brought together some of the Maison’s most notable collections from across the decades, such as Pierres de Caractère - Variations, while show-stopping models such as the Zip necklace were an undoubted highlight. A rare selection from the prized Van Cleef & Arpels’ Collection was also brought to Dubai for the show. The Pierres de Caractère-Variations collection pays tribute to the beauty of stones and comprises a selection of dazzling pieces adorned with rare gems and dazzling colour combinations. A signature style adopted by Van Cleef & Arpels during the 1960s and 1970s, the pieces are instantly recognised by the bold hues of their stunning gems and the refined detailing.

Another exhibition highlight was the Baia Verde necklace, a timeless piece crowned by Zambian emeralds and bordered by Paraíbalike tourmalines. The Perles Mystérieuses necklace shines with sapphires, diamonds, turquoise and cultured pearls delicately hanging on Mystery Set™ motifs. Also exhibited, the Rayons Précieux set stopped Design Days visitors in their tracks with its shimmering diamonds, yellow sapphires and spessartite garnets. The rare variety of garnet used in the pieces makes the set all the more special as it is renowned for its vivid orange colour which gives an illuminated effect. No exhibition of Van Cleef & Arpels classic pieces would be complete without an

appearance from the Maison’s famed Zip necklace. On display was the Zip Antique Confettis Sapphires necklace, a white gold transformable piece combining round diamonds, round sapphires and sapphire beads. One of the house’s most iconic creations, the Zip necklace was first created in 1950 and has been a Van Cleef & Arpels signature ever since. In addition to the exhibition, and with an eye on the future of design, Van Cleef & Arpels has also pioneered a programme to support and nurture new talent. The Middle East Emergent Artist Prize is awarded at the fair each year, in partnership with Dubai’s Tashkeel art gallery. This year’s winner, Ivan Parati, was recognised for his innovative piece TileTable, a modular coffee table incorporating traditional Islamic elements. Currently teaching at Ajman University of Science and Technology, Parati’s design

consists of three elements, each with a different geometric layout, while Islamic influences can be seen in a mosaic pattern grid. Parati was awarded AED30,000 to fund the making of the final product, as well as a seven-day trip to Paris to attend L’ECOLE Van Cleef & Arpels, to be tutored by some of the best craftsmen in the world. “At Van Cleef & Arpels we are dedicated to maintaining a supreme level of creativity and we are proud to showcase the TileTable: a unique vision of our winner Ivan Parati,” says Alban Belloir, managing director Van Cleef & Arpels Middle East & India. “We will be pleased to welcome Ivan Parati at L’ECOLE Van Cleef & Arpels and the ateliers in Paris, where precious secrets of precious jewels reside.” Parati will also be one of the few to enter the Van Cleef & Arpels’ workshops to watch the Mains d’Or at work.

Scents & sensibility Givenchy’s fragrance expert Françoise Donche reveals some of the mystery behind perfumes

The house of Givenchy is no stranger to the world of innovation. Founder Hubert de Givenchy is famed for not only creating the first-ever shirt dress but also broke convention to be the first high-fashion designer to present the earliest ready-to-wear clothing line. When he launched Parfums Givenchy in 1957, the creative worlds of haute couture and fragrances came together in spectacular fashion. Givenchy’s renowned fragrance expert Françoise Donche is carrying on the house’s rich legacy in perfumery, having orchestrated the development of women’s and men’s fragrances at Parfums Givenchy for over 25 years. Donche co-ordinates the conceptualisation and development of each fragrance and works in collaboration with some of the world’s greatest perfumers – or noses as they are affectionately known. That impressive roster includues Dominique Ropion, Carlos Benaïm and Sophie Labbé for Very Irrésistible, François Demachy for Dahlia Noir, Jean Jacques for Gentlemen Only, Jean-Pierre Bethouart and Olivier Cresp for Ange ou Démon among others. World of perfumery To be a fragrance expert takes years of training and focused expertise, but a passion for scents is perhaps one of the most important criteria. Growing up at the foot of the French Alps, Françoise Donche regards her childhood as a keen indication of her decision to join the world of perfumery. “I remember my mother had a wonderful garden filled with flowers and fruits. When I was four or five years old, I started to pick flowers for bouquets with her and enjoyed smelling them. I had no idea at the time that the work of noses existed but I memorised those smells,” Donche tells Concierge. When she was teenager, a friend introduced her to the famous perfumer, Jean-Louis Sieuzac, creator of renowned scents Opium and Farenheit. He soon became her mentor and her life took a very different path. “I was only 21 at the time but I discovered France had very talented gourmet, fashion and fragrance aficionados. We also had very good schools that educated senses. In France, we have 300 years of history with the sense of smell and Jean-Louis Sieuzac introduced me to the school of noses,” she explains. After three years’ training in the

prestigious ISIPCA school in Versailles – the only school dedicated solely to olfaction studies in France – she became skilled in composing formulas and eventually joined Parfums Givenchy, a company that strongly values creative freedom. “Frankly, I’m quite privileged because I’ve been working with Givenchy for 27 years and we belong to a very exclusive club within haute couture and fragrance brands where the management offers a very high level of autonomy to the creators. The objective, after all, is to be different, not only from one of your own creations to another but also in comparison with other brands.”

Iconic fragrances One of Givenchy’s most successful families of fragrances is the high-end L’Atelier collection, which was unveiled to the world last year and has become a firm favourite among discerning clientele. In an ode to its haute couture history, Givenchy’s fashion archives were researched for the exclusive collection and seven dresses, dating from 2005 to 2011, were chosen for inspiration — one for each fragrance. This iconic collection is available at only 20 points of sale around

the world including Dubai, and boasts the finest and most luxurious ingredients from oud in Oud Flamboyant to delicate neroli blossoms in Néroli Originel. Another highlight this spring is Givenchy’s latest edition to the eaudemoiselle line. Created in 2010, eaudemoiselle de Givenchy is one of the house’s most timeless fragrances and the new eaudemoiselle absolu d’oranger is an Oriental floral tribute to femininity that is centred around one key ingredient – orange blossom absolute. “Our eaudemoiselle is very successful in the Middle East for several reasons. There’s a strong acceptance of vintage and the bottle design reflects that but it’s also

because of the creation itself. We’ve kept the same base notes of cedar wood and musk but the heart notes have been based on orange flower absolute. It is a Tunisian flower and one that has a long history in the world of scents – it was originally used to soothe and relax babies, lulling them to sleep. It was also used in food to perfume cakes and then, in the 1950s, it was used in soaps. “In eaudemoiselle absolu d’oranger, we used a highly concentrated dose of orange f lower to create a sensual and caressing sensation. Orange flower is loved by many cultures and I think this scent is exceptional,” Donche adds. The ingredients that go into every Givenchy creation are the most important factor and the house continues to work with trusted suppliers, building strong relationships that have spanned decades. “We have enjoyed a very long partnership with our producers. They have always offered a high level of professionalism and have been specialists in this trade for over 50 years. We don’t want to change suppliers because we do not accept variations. People buy their favourite perfumes for a reason. They hate the idea that something is not exactly as they remember it or that it has been modified,” Donche explains.

In July, Givenchy will release Ange ou Étrange, an elegant woody and Oriental fragrance, which is then enhanced by the Accord Illicit concentrate applied on the body’s pulse points. “We really wanted to explore a double application, using a spray and finger. This practice has been used for generations and is well known in different countries but we have created it for today’s woman. Ange ou Étrange has a clear identity with bergamot which is very energetic. It then evolves with jasmine and is prolonged with patchouli. The special addition Accord Illicite is made of cedar wood and is used as an enhancer,” Donche explains. Ideally, women will only need one drop of the enhancer combined with four sprays of the Ange ou Étrange. Often how a perfume is applied can make a dramatic difference to its overall effect. Donche advises that liberal sprays should be kept to a minimum in cities as it can get overwhelming. “Givenchy is all about couture, so I always recommend to spray both skin and clothes. Take either your skirt or jacket and spray

inside, towards the base. The textile will absorb and diffuse it. It’s also a good way to make preferred perfumes last longer as fragrances remain on cloth for about three days on average. Also, you can mix scents with fresh notes with everything from Givenchy. Mandarin, lime and others from the citrus family bring energy to the fragrance and don’t create chaotic variations,” she says. Some perfumes lend a powerful aura of mystery to their wearers and can evoke an alluring sense of fantasy. Donche estimates to have worn at least 2,000 fragrances during her professional career and has to review about 70 perfumes every year on average. Despite having experimented with a multitude of ingredients and scents for decades, one of her personal favourites remains tuberose mingled with vanilla, which she composes herself, referring to its effect as “seeing sunshine enveloped in a soft veil”. “When wearing Givenchy perfumes, women should feel self-assured. It’s a way to escape mundane reality and I love the fact that people are happy when they wear Givenchy,” Donche adds.

In a little over two decades, Magerit has instilled new life into the traditional industry with its artistic creations. “We only started in 1994, so we are a young company,” says Magerit’s CEO Antonio Calvo. “We began as a workshop, making highend jewellery for different brands including Cartier, but in 2001 we decided to create our own designs. The market was competitive so we had to do something different, which we did by creating high-end jewellery that’s entirely handmade at our Madrid workshop.

“Jewellery always says something about a personality. Magerit jewellery reflects a person who is entirely unique, who appreciates art, the best quality and likes expressing herself through jewellery,” Calvo says “We don’t outsource processes to any other company and we control all parts of the production,” adds Calvo. The recent Instinto collection explores the duality of man’s instinct. The idea that man can be both human and also animalistic is one that’s not easy to depict, but Magerit’s Instinto remains one of the most popular in the Middle East, with rings featuring women and panthers entwined to dramatic effect, jewelled eye-shaped pendants, animal claw earrings and more. “Our jewellery pieces are not technically easy to assemble. They are all very complex to make and most of the pieces are composed of different parts that need experts to put together,” says Calvo. Every collection Magerit launches takes the better part of a year to become a reality. The talented design team drafts different ideas and inspirations, before prototypes are made that experiment with various stones and colour combinations. After that, wax prototypes are crafted by hand, which is not only one of the most crucial steps in

the entire process, but also the most technically demanding. Artisans who create the wax prototypes are skilled in every aspect of jewellery production from knowledge of stones, types of jewel cuts through to colour combinations and more. “In Spain, we have a strong tradition of art and craftsmanship. The most important aspect of this type of jewellery is the skill of these artisans. We need to find the right people with the right experience in creating high-end jewellery and putting it all together, that’s what makes these pieces really unique,” explains Calvo. Magerit has no doubt invested in the right people, tapping into their artistic savoir-faire to create its own distinctive aesthetic styles. One of the most important attributes of Magerit jewellery is the serial number engraved on individual pieces, which guarantees that it is handcrafted and exclusive,

adding to the allure. Also, because of the nature of the craftsmanship involved, no two pieces are the same. The company is also committed to responsible jewellery practices and complies with the Kimberley Process. The system was designed to prevent conflict diamonds, or ‘blood diamonds’ as they are more commonly known, from entering the global rough diamond market. However, as the UAE continues to develop, it still remains dedicated to preserving its time-honoured traditions that are largely rooted in Islam. Arabian hospitality is the stuff of legends. From the moment visitors walk into the Sheikh Mohammed Centre for Cultural Understanding (SMCCU ), the war m welcome they receive sets the tone for a memorable experience. Founded to give residents and visitors a valuable insight into the local way of life, SMCCU, based in the Heritage Village at Al Fahidi Historical Neighbourhood in Dubai, hosts breakfasts, lunches and dinners where guests can sample Emirati cuisine and learn about local culture in an informal manner. As is the Arabic way, participants sit on cushions on the floor and dine in a hall that

closely resembles a local home. Breakfast includes Arabic noodles, breads, chickpeas and awamat (golden brown donut balls), while lunch and dinner includes specialities such as slow-cooked lamb and rice. As well as talking about traditional dining, household customs and national dress, hosts open the floor to an open question-and-answer session during which guests can ask for clarity on every topic, from religion to lifestyle. Nasif Kayed, managing director of SMCCU, says: “This is a good way for us to keep the lines of communication open, where we get to know each other and talk about facts rather than misleading misconceptions. We dispel the myths that surround our religion, our lifestyle and our way of life. Ask any question and we won’t say it’s silly or be offended. This is not about defending myths, but explaining them.” When it comes to the subject of traditional dress, there is always a great debate, he says. Some people believe that Emirati women must wear black and men must wear white, but this is false. Dahlia, a volunteer host at SMCCU, explains that white was introduced in the 1930s by the Japanese, who gifted Arabs white fabric to be used as sails for boats after taking away their pearl business. Poor locals used it as clothing and dyed kandooras (long white robes) with coffee to give it a sandy colour that was more practical in the desert. In the 1970s,

On the head, men wear a gutrah (the head scarf ) fastened with an agal (rope). “The agal was initially used as a tether to slow camels down,” Dahlia reveals, adding: “Somebody got tired one day of holding it so they put it on their head.” A simple act, but a trend was set. The red and white, as well as black and white colouring, came from the British, who wanted to differentiate between the army and police, but now it’s become more of a fashion choice. Women, in comparison, started out wearing colourful clothing. Dahlia explains that they only began wearing black in the

1950s when black material was traded from Iran and Iraq. In the UAE, harsh sunlight and weather conditions meant colours quickly faded and women found that draping a black abaya over their outfit helped protect it. These days, the abaya is used in a similar way. Emirati women wear it like a coat, donning it in public until they reach their final destination. Abayas come in a whole rainbow of colours. While many opt to wear black, a number of young locals experiment with colourful detailing and contemporary patterning. Dahlia adds that they continue to cover their hair for protection from sun, sand and pollution. The tradition of wearing the batoola (face veil) is also fascinating. In the past, when wealthy women in Europe wore hats with veils, Arab women created their own version to protect skin from the sun and avoid being identified by poorer people. The batoola may look like it is made of metal but it is, in fact, shiny leather. Its shape is meant to subtly resemble a falcon. “This, according to Emirati culture, represents both strength and grace,” says Dahlia.

Making guests feel welcome at SMCCU – and in any local home – is of upmost importance to Emiratis. Arabic coffee plays an important role in this. While, in the west, many people may drink coffee for a quick pick-me-up, in the Middle East, it has a specific purpose more to do with offering. Khalid Al Mulla, founder of the nearby Dubai Coffee Museum, says: “When a person brings out the dallah (Arabic coffee pot), it means that this person wants to welcome his guests. He may not have anything in his pockets but at least he can serve his guests coffee and dates. “This Arab hospitality can be traced back thousands of years and now you can even see it in five-star hotels such as those in the Jumeirah Group who welcome guests in the lobby with Arabic coffee.” The way in which coffee is served has its own rules. In an Emirati home, the youngest son will serve the guests using a dallah – an Arabic coffee pot with a long spout which cools the liquid as it travels to the cup. The server must hold the dallah in his left hand and the coffee cup with his right. Arabic

coffee is strong and is sipped slowly, and only a small amount of coffee is given so it remains warm. The cup is refilled frequently until the receiver gives the sign that he doesn’t want anymore – tilting his empty cup from side to side with his fingertips. “Coffee has huge power politically, economically and socially,” Al Mulla adds. “Don’t forget, coffee is the second strongest commodity in the world after oil.” While coffee is used to greet guests, another substance is used to politely tell them that it’s time leave – bukhoor. Working in the same way as incense but with scented blocks instead of sticks, bukhoor is burned in a mabkhara (incense burner) to perfume the house and is usually lit after a feast as a signal that the get-together is over. Upon leaving, locals will pass by the bukhoor, wafting it around their robes so that the smoke fragrances the material. Arab families often have their own signature bukhoor scent. Emirati culture today remains incredibly vibrant and rituals such as drinking coffee or wearing a head scarf are steeped in tradition, reflecting the country’s illustrious past.

Koll explains: “Compared to the normal à la carte menu, the portions are smaller and focus solely on classic and modern influences. The whole idea behind the concept is to have the opportunity to sample the best of both worlds.”

“We aim to provide a perspective of how different ingredients can be combined and presented as a final, well-rounded dish,” Koll adds. Each distinct degustation menu present six exciting courses featuring a variety of textures and tastes, which is why, to truly appreciate the complete experience, the restaurant suggests tables of two or more order from at least one of each menu. Revealing his favourite dishes, Koll says: “I recommend the foie gras and the crottin de chavingol from the modern menu, and the lobster bisque and chocolate fondant from the classic.” Guests can choose to dine in the restaurant’s exclusive cave privée, set amid Traiteur’s 3,200-bottle wine cellar, or opt for al fresco seating on the terrace overlooking Dubai Creek. Sofitel Dubai Downtown is causing quite the stir on the culinary scene thanks to the introduction of its Sky Table. Even though the chef’s table concept has really come into its own over the past few years, Sky Table ups the ante with an added element

of exclusivity. “Offering some of the most wonderful views of Downtown Dubai, the night starts with a drink at The 31 Bar before guests are ushered to a secret passageway at the back of the hotel that leads on to an exclusive chef table set-up,” explains head chef Cedric D’Ambrosio. Hailing from France, D’Ambrosio reveals that, while the menu takes much of its inspiration from the hotel’s popular steakhouse, The Red Grill, the dishes are given a unique French twist. Served with half a bottle of French wine for AED600 per person, the three-course menu aims to please all palates by tailoring elements to individual tastes as guests discuss their preferences with the chef on the night. Coupled with a personal butler service and breathtaking views of Dubai’s glittering skyline, this coveted spot on the 30th floor makes it an exceptional evening out.

Of course, while remarkable views and artfully presented dishes are fantastic finedining companions, eliminating the sense of sight can make a meal all the more thrilling. The idea of ‘dining in the dark’ first hit the mainstream in Paris in 2004 with the opening of iconic restaurant Dans Le Noir. In Dubai, Noire is the city’s very own version of this popular gastronomic trend. Nestled on the ninth floor of Fairmont Dubai, Noire strives to heighten the diner’s senses and appreciation for new and distinctive flavours. On the night, waiters fitted with night vision googles escort each guest to their table and help them identify the cutlery and crockery. Naturally, being left to your own devices while navigating each course in utter darkness, relying on all other senses but sight to get to grips with each dish, is all part of the fun.

“So much of our opinions on taste are influenced by how a dish is presented, even before we’ve taken a bite,” says executive chef Lorraine Sinclair, adding: “Plating, under normal circumstances, is fundamentally important from the guest perspective but everything is thrown out of balance at Noire with textures, smells, flavour combinations and even sounds taking precedence.” Each visit delivers a new sensory surprise, and the menu at Noire changes regularly. Although if previous highlights of soft-shell crab, braised daikon and French rabbit confit are anything to go by, this 90-minute experience will be truly unforgettable. For AED320 per person, the evening includes a three-course dinner and paired beverages, followed by a lit reception to discuss the menu with the chef and restaurant manager.

With Dubai’s magnificent coastal location, there’s nothing better than dining next to the ocean. Pierchic at Al Qasr, Madinat Jumeirah, takes this one step further by inviting diners to enjoy a meal as if out at sea. Reachable by a short walk along a dedicated pier, the newly refurbished restaurant, which fittingly serves seafood, is one of Dubai’s most unique culinary locations. Guests can choose to dine inside in the contemporary ambience of the restaurant or outside in the sea breeze on the terrace. Diners can even opt to dine al fresco in one of the new over-water pods. launched a new menu to complement its fresh and innovative look. French-born chef Laurent Gras, who has worked in a number of Michelin-star restaurants, collaborated on the menu with head chef Rosalind Parsk. “The new menu is inspired by Mediterranean cuisine, whether it’s the ingredients, flavours or colours. It has a leisurely feel to it. “Parsk and I collaborated on the choice of ingredients and method of preparation. She was able to overcome all the logistical challenges to get what we needed. At Pierchic, we are dependent on the market availability and season so, for us, flexibility is key,” Gras says. With so many exciting dining options on offer across Dubai, the emirate is fast becoming known as a global culinary hub and it’s not going unnoticed among the world’s top chefs. Gras adds: “The restaurant scene in Dubai is ever-growing and offering more and more diversity to the diner. It is a city where dining is about enjoyment and Dubai is great at providing food, fun and amazing service.”

Oeno at The Westin Dubai Mina Seyahi Beach Resort & Marina is one such venue. Open until 1.30am on weeknights and 2.30pm at weekends, the bar is renowned for its extensive drinks menu. Making no secret of its collection, the walls of the striking duplex space are decorated with wine bottles from floor to ceiling. At the other end of town, in the heart of bustling Sheikh Zayed Road, trendy wine bar Cave at Conrad Dubai is one of Dubai’s best-kept secrets. Hidden away on the mezzanine level, visitors walk down a winding path and enter a stone cave setting to discover hidden pods fitted with cosy day beds, fireside lounges and a tasting room. Nibble on a range of small bites washed down with a choice of classic and contemporary wines and spirits. The ‘à partager’ segment of the menu is particularly relevant for those seeking a post-dinner wine and cheese snack. Opt for the plat à fromage and indulge in a selection of international cheeses from the maître fromager, or choose the plat boulangiere and enjoy the addition of cured meats. A five-minute walk away at Fairmont Dubai, wine bar Cin Cin boasts an impressive cellar. I am from America and have lived in Dubai since 1993. There is an intense energy here, coming through the vision of His Highness Sheikh Mohammed Al Maktoum, Vice President of the UAE and Ruler of Dubai, which inspires creativity in us all. This is addictive. When I have friends and family out to stay I find that taking them to Burj Khalifa is too obvious and goes without saying, so instead I like to show my guests the alleyways of Bur Dubai. In Abu Dhabi I highly recommend visiting the Sheikh Zayed Grand Mosque. I can’t wait for the new museums, such as the Louvre Abu Dhabi and Guggenheim Abu Dhabi, to open. There are so many events in Dubai all year round so it’s difficult for me to pick my favourite. Art Week is especially good for the gallery scene, but I love any event that brings creative people to the region. The Dubai International Film Festival, Emirates Airline Festival of Literature and Dubai World Cup always are great events. I also love the Chanel fashion events. When it comes to eating out, I enjoy XVA Café. I did create the menu after all, so what can I say? I love Al Salad and any of the soups. Other than that, the last three restaurants that

I visited were Nusret and Coya, both at Four Seasons Resort Dubai at Jumeirah Beach, and Zuma in Dubai International Financial Centre (DIFC). I find you can’t go wrong with their menus. I love to let others order for me. It’s the ultimate dining experience to have surprises presented to me. My favourite place for nightlife is my own home, although recently with all the events at XVA I have been exposed to a very diverse nightlife. Other than that, I have recently discovered the Hendricks Bar in the Four Seasons Resort Dubai at Jumeirah Beach. I had no idea there are so many flavours of tonic! In regards to shopping, I gravitate to any place where I can find sources to manifest my creativity. I last shopped at a fabric store in Satwa for textiles to bring back to our tailor at XVA. Before that, I went to the Gold and Diamond Park to visit my favorite jewellerymaking places. Winter is my favourite time of year for the weather, but Ramadan is best for a bit of quiet time. The biggest life changing-day I have had in Dubai so far, besides the birth of my daughter, was the day I got the keys to my gallery, XVA, in 2003.
