At first glance, Dubai is a city of the future with gleaming skyscrapers and manmade marvels, but a closer look reveals more. Before the metropolis we see today, Dubai was a simple fishing village on the edge of the desert where Bedouin people turned to the waters of the Arabian Gulf for sustenance. This story is told in the old quarter Al Fahidi Historical Neighbourhood. The dhow occupies an important place in the heritage of the UAE. The wooden vessel was integral to the prosperity of the emirates, long before the discovery of oil. Used to ferry goods along Dubai Creek and on to trade with neighbouring countries, dhows also transported pearl divers out to sea to source the precious gems. The hand-crafted boats are still a familiar sight on the creek, where they continue to ply a healthy trade.

To begin any exploration of Dubai, I always advise a visit to At the Top, the observation deck on level 124 of Burj Khalifa, the world's tallest building. From there, breathtaking views of Dubai can be enjoyed and it's a wonderful spot to watch the sun set over the city. The exclusive timepiece creators sponsored the 85th edition of Concorso d’Eleganza in May where a closer look at the magnificent motorcars on display reveals an unmistakable synergy between the exceptional aesthetics and mechanics of the classic cars and the exquisitely designed timepieces of A. Lange & Söhne. The event sees the cream of European society attend in their finery to mingle with the elite crowd and take in the stunning show. Look a little closer and the links between the elegant motor show and A. Lange & Söhne are even more apparent. From the passion of artisans who dedicate their careers – and in some cases their lives – to creating something truly deserving of the label ‘unique’, to the connoisseurs who understand and appreciate the workmanship dedicated to each final product. In celebration of those ties, A. Lange & Söhne created a special edition timepiece especially for the event, the Lange 1 Time Zone ‘Como Edition’. This stunning piece boasts a white gold caseback with the handengraved coat of arms of the Concorso d’Eleganza while Central European time is represented on the rotatable dial ring. The stunning one-of-a-kind piece was presented to the winner of the competition’s Best of Show accolade, Albert Spiess for his Maserati 450 S. “All the cars we saw during the event are handmade, not mass-produced. They are very exclusive products made for winning races or aesthetic competitions. They set a new scene for design and were all handmade for a purpose. That, I think, is the connection between the Concorso D’Eleganza and A. Lange and Söhne because it is exactly what we represent,” says CEO Willhelm Schmid, who presented the specially made Lange 1 to the worthy winner.

At the heart of A. Lange & Söhne’s philosophy is a mission set out by founder Ferdinand A Lange in the 1800s; to build the world’s finest watches. The story of the renowned brand is of an endeavour to reach new creative and technical heights, as subsequent generations are entrusted with the next stage in the company’s evolution. “We strive to retain elements from the company’s past. For example, the threequarter plate and the typical A. Lange &

Söhne pocket watch design. We took these on board as we developed our wristwatches and we still do. Ferdinand had a vision to produce the world’s best wristwatches. That is still our vision today and it will be for the next 200 years. However, going forward, we don’t want to simply replicate successes of the past. “I believe most people were surprised when we launched the grand complication last year. Everyone expected a 2

minute repeater but we came up with a grand complication. It’s not a question of whether we are capable; it’s a question of when do we want to launch? We want to keep the surprises coming,” says Schmid. In 1845, Dresden watchmaker Ferdinand A Lange established his Manufactory and from that basis, the company went on to even greater heights under the direction of the second generation – Ferdinand’s talented sons Richard and Emil. Their precision pocket watch from Saxony was exported across the world, much sought after for its high complications. After World War II, the company was nationalised and, as a result, was lost until 1990 when master watchmaker and Ferdinand’s

great-grandson Walter Lange relaunched the brand. From this re-emergence, the company has become one of the world’s most exclusive houses of horology, producing just a few thousand handmade pieces in gold and platinum each year. Specialists in complications, they include perpetual calendars, world-timers, tourbillons and minute repeaters. Among the incredible successes to date is the Lange 1, with its distinctive outsize date and the Lange Zeitwerk, which boasts jumping numerals in a mechanical display which provides an alternative to displaying hours and minutes with rotating hands. The secret, says Schmid, to A. Lange & Söhne’s success is a commitment to finding and fostering new talent. At the Manufactory in Glashütte, Switzerland, talented watchmakers are focused on innovation in the creation of fine timepieces. “You need lots of different talent to eventually end up with a beautiful watch and I believe it is our main duty to invest in training, practise and education. We act like a family company and, because we do things in quite a unique way, it is often a challenge to take a watchmaker from outside the company because he has to unlearn and then relearn a lot of new methods. It goes as far as a simple thing such as the finger protection the watchmakers wear. We use German silver in our craft and it is very beautiful but the

price you pay is that if you touch it or breathe on it, it will be very difficult to clean, hence the use of finger protection. For watchmakers, their fingers are their tools and if suddenly they have something covering their fingers, it is difficult to adjust. That’s just one example of why it’s mostly much better to recruit your own people and train them at a very young age,” explains Schmid. At the Concorso d’Eleganza, master watchmaker and manager of the A. Lange & Söhne service workshop Martin Jonas showcases the skills necessary in the design of each handcrafted piece. Describing the atmosphere in the Manufactory, he says: “It is a very quiet place, full of concentration. We are dealing with tiny parts and in some cases watchmakers have been known to breath them in by mistake. “I have worked in the Manufacture for 17 years. I started off as an apprentice at the A. Lange & Söhne school. As a child, I would disassemble clocks but couldn’t put them back together again, so I thought

I grew up in the Manufacture, straight from school, and now I teach others the craft.” Looking to future launches, the company is keen to retain the element of surprise. For now, the focus is the Lange 1 Moon Phase which, not only boasts a sleek design, but a continuous lunar disc movement, while the Tourbillon 1815 brings a revolutionary new degree of accuracy with a stop function on the tourbillon. Schmid explains: “Every A. Lange & Söhne piece is unique because it is handengraved. In recent years, we have been good at coming up with surprising novelties and if you talk about performance, it’s the tiny little things that matter. That is why our customers are educated, because they can comprehend what we do. Let me give you an example. The 1815 Tourbillon is actually the first of its kind because not only can you stop the tourbillon, but the second hand will jump to zero if I pull the crown, which makes it very easy to adjust the precise time. The tourbillon was developed to enhance the accuracy of a watch, but where you don’t have the

stop mechanism, your time-setting could be wrong by as much as a minute. With the 1815, we are talking about seconds in terms of improving the accuracy. “Our main focus this year has been the Lange 1 Moon Phase, that’s a masterpiece. Then we have the 1815 Tourbillion. They are both very different watches for different purposes. We want to surprise with very complicated watches but at the same time, to have beautiful watches for people who love fine watchmaking,” says Schmid. With such high standards in craftsmanship across the collections, the timepieces are treasured by those who own them. “A common denominator among collectors is that they are people who understand fine-watchmaking. The figure is sure to increase further as the mall progresses with its fashion offering development plans. Another pristine precinct that’s increasingly targeting luxury brands is Mall of the Emirates. The mall recently expanded its high-end fashion portfolio with the opening of a new Fashion District featuring boutiques such as Alexander McQueen’s second line McQ, together with clothing and accessories brand C Wonder and Parisian clothing label Sandro. The mall also boasts a Fashion Dome where tiers of boutiques such as Chanel, Diane Von Furstenberg and Carolina Herrera encircle a striking ground-floor water feature. Meanwhile, a European village-style quarter is home to household names such as Ralph Lauren and Dolce & Gabbana. Fashion capital Further adding to the city’s fashion credentials, world renowned industry names such as Fashion TV and Vogue have recently made their mark. In October 2013, Vogue Italia hosted the exclusive Vogue Dubai Fashion Experience, highlighting the overwhelming talents of local and regional designers. This was the first of more events the renowned magazine is planning in collaboration with the city and demonstrated Dubai’s status on the international fashion scene. French fashion house Chanel this year chose Dubai as the location to unveil its 2014 Cruise collection and staged a glamorous fashion show in the city. “New materials are receiving additional recognition by customers,” he continues. “Designers are becoming more adventurous and adding to the use of base materials such as platinum, gold and silver. Today, we see the addition of titanium, carbon fibre, exotic woods and ceramic, to name a few. These have pushed jewellery out of its traditional safe haven. For example, customers who like to wear big earrings are now opting for titanium instead of gold, for both the weight factor and comfort.” Another key collection of note is the company’s in-house Istana Private Collection that incorporates bespoke jewellery created specifically for clients. Leading lights Dubai’s new Design District is set to foster a fresh wave of fashion and design talent

For decades, Dubai has bridged the gap between East and West. A geographical epicentre, the city is within an eight-hour flight time from 90 percent of all countries in the world, assigning Dubai a ‘central hub’ status that is perfect for trade. However, it is steadily proving itself as far more than just a port. Rapidly gaining momentum is the emirate’s fashion and design industry; both in retail and in manufacture. Luxury shopping as a pastime is already cemented here, thanks to mega-venues such as The Dubai Mall which boasts the largest number of luxury brands under one roof anywhere in the world. Now the city’s sights are set on design. Currently in progress is the construction of Dubai Design District (d3) – a world first that will bring together emerging local talents and international brands in one creative complex, further affirming the city’s already considerable reputation as a global fashion and design capital.

Catherine Thomas, director of marketing and communication, Dubai Design District, says: “d3 intends to make the most out of this booming market by fostering and nurturing the growth of the emirate’s design, fashion, art and luxury industry.” Formed in line with the Design & Fashion Council put together by HH Sheikh Mohammed bin Zayed Al Maktoum, vice president and prime minister of the UAE and ruler of Dubai, when complete, d3 will encompass an impressive 15.5-million-square-foot site dedicated solely to design industry-related organisations and brands. As such, the facilities and opportunities created are intended to meet growing requirements in Dubai. The first phase of construction will be completed in early 2015 in the form of 10 buildings that will shape d3’s core and house state-of-the-art offices and workshop spaces. However, d3 is far more than just a collection of work-space shells for rent. Thomas says: “d3 is set to be a living, breathing, design, fashion, art and luxury community at the heart of the Arab world. It has been devised to encapsulate all the needs of the design industry with a truly multi-purpose approach. Ultimately, d3 aims to provide a platform dedicated and committed to the industry with

full infrastructure and a network to support the designers. Local and international brands will sit next to each other and benefit from being part of the same community.” The district’s planners had both local and regional designers in mind when crafting the concept for the space. Thomas adds: “Our core objective is to act as a catalyst for growth development and people through a deep understanding of the needs of the industry. We already enjoy a flourishing creative scene in Dubai but, in order to be credited as a genuine creative hub, d3 must showcase the global designers who have and will continue to emerge from d3 and the region.”

Some of the Middle East’s best known talents include: Elie Saab, an internationally renowned Lebanese designer who’s famed for his seasonal haute couture and ready-to-wear collections; Reem Acra, a fellow designer from Lebanon who has dressed countless celebrities in her gowns and bridal wear; and Rabih Kairouz, another Lebanese visionary and founder of Maison Rabih Kairouz. The design district’s aim is to discover more talent from across the UAE and the region, as well as to cultivate careers and offer support and mentorship to those who do not currently have the resources or connections to reach their full potential. This, in particular, is

where the Design & Fashion Council comes in. Established in 2013, the council was set up to support the growth of Dubai’s creative industries. Within that remit, the board arranges for experts from across the industry to help guide the development of both regional and international players based in Dubai. This is already evidenced by events such as Fashion Forward, supported by d3, and the Vogue Dubai Fashion Experience which have hosted special talks and collaborations. Both events will host subsequent editions in Dubai in October.

The vision for d3 is for it to become a permanent global home for brands, companies and artisans by giving them the long-term quality, consistency and resources needed to prosper within the emirates, instead of, for example, relocating to an alternative fashion capital such as Paris. “By creating a genuine home for our designers, we hope to a foster a sustainable industry that will put Dubai on the map in terms of genuine international designs hubs,” adds Thomas. As for those who will own spaces in the district, a list of tenants hasn’t yet been revealed but organisers confirm there’s been an overwhelming response. More than 800 applications are being carefully reviewed by the d3 board. Thomas says: “We have received a heart-warming response from the industry. The positive feedback and interest from both international and local industry has outstripped our expectations. We look forward to welcoming tenants from across fashion and design. We want d3 to be a home for this community, a space to create, innovate and produce beautiful pieces for consumers here in the UAE and across the world.”

The development of d3 comes at a crucial time for Dubai’s fashion and design industry as international attention is fixed firmly on both the emirates’ design talent and the city as a global luxury shopping and style hub in the approach to Dubai Expo 2020. International fashion great Karl Lagerfeld’s recent decision to host the world premiere of the Chanel Cruise 2015 collection on a private island off the coast of Dubai is an example of that interest. The runway show placed the city alongside the eminent brand’s previous show destinations: Paris, Venice, Saint-Tropez and Singapore. Prior to the event, Bruno Pavlovsky, president of Chanel Fashion, referred to Dubai as “a key hub for our fashion business in the Middle East”. The landmark event is undoubtedly a sign of more to come as d3 raises the curtain on Dubai’s vibrant fashion and design industry.

Tucked away in a pretty villa in the backstreets of Jumeirah, Dubai, this enterprise was founded by Mashghal Al Khaliya with a view to providing an opportunity for local women to develop new skills and put them to use in a social and educational environment. Around 100 women of all ages attend or teach classes in dress-making, weaving, painting and a variety of other artistic and creative pursuits. The fruits of their labour are then put on display in rooms around the house and can be seen by appointment. A TASTE OF CULTURE For a further insight into life in the emirate, Sheikh Mohammed Centre for Cultural Understanding offers the chance to join in a traditional Emirati breakfast or lunch. The meals are hosted at the centre which is located in the city’s oldest quarter, Al Fahidi Historical Neighbourhood, known for its distinctive wind tower architecture. A fine example of traditional build styles of the region, Jumeirah Mosque was created in 1976 in the medieval Fatimid tradition. The style, first developed around 1,100BCE in the Fatimid Caliphate of North Africa, blends elements of eastern and western architecture. The result is intricate façade ornamentation and finely carved woodwork on doors and interiors. These influences can be seen in the detailing on the domes and minarets of Jumeirah Mosque while inside, panels and arches are carved with Arabesque patterns. Colourful additions inside are found on pillars in vibrant yellows, complemented by powder blue woven carpets with gold detailing. The best way to see the space is on a tour organised by Sheikh Mohammed Centre for Cultural Understanding. The tours, costing AED10 per person, take place six days a week, from Saturday to Thursday and there is no need to book, simply gather outside the mosque at 9.45am. It is important to dress appropriately for the visit, men are required to wear trousers and a t-shirt while women should cover their legs, shoulders and hair. Traditional attire can be borrowed from the guides at the mosque. Once inside, take the opportunity to ask questions as the guides are happy to explain aspects of Islam and local life, elaborating on the five pillars of the faith, prayer rituals and traditional dress worn by men and women in the emirate. Whether taking the tour or admiring from afar, Jumeirah Mosque is one of the most iconic vistas on the city skyline and makes a striking illuminated sight once the sun has set.

Cold mountain In a city surrounded by desert is the winter wonderland that is Ski Dubai

When plans for Ski Dubai were first announced, critics were sceptical. Some questioned whether a revolutionary facility such as a snow slope in the middle of the desert could be sustained. However, eight years since opening, it is still going strong, set against a backdrop where novel feats and largerthan-life accomplishments are regular occurrences in the emirate. Ski Dubai is one of the city’s top attractions and provides the perfect juxtaposition between hot and cold, sand and snow, that is especially welcome at this time of year. It’s a virtual winter wonderland in the heart of Mall of the Emirates where visitors can shop for designer shoes one minute and be on the slope less than 15 minutes later. With real snow created daily, resort-standard equipment and a 400-metre incline, visitors can enjoy an experience that’s as close to reality as an indoor complex can possibly allow. For those lucky enough to have skied in European or Canadian resorts, the prospect of skiing indoors may not be particularly appealing, as much of the thrill of skiing comes from the feeling of the wind rushing past, the immediate scenery and the dramatic views over distant mountain ranges. However, what the facility in Dubai lacks in views, it makes up for with consistently perfect snow, a temperature-controlled environment and state-of-the-art facilities. Many world-famous ski and snow-boarding professionals have passed through Dubai on their way to catch the seasons in Europe and Australasia and have hit the slope at Ski Dubai, giving the venue a ringing endorsement and encouraging others to follow in their snow tracks.

Ski Dubai is a playground for thrillseekers with plenty of opportunities for both novice and experienced guests. Whether you choose to ski, snow board, snow blade (mini skis fantastic for reaching high speeds and performing tricks) or simply enjoy the snow park, the first step is the fitting. Staff kit out every guest in branded ski jackets and trousers or a full-length snow jacket depending on personal preferences before appropriate footwear for the sport is chosen. Correctly sized boards, skis or blades are also provided and the binding adjusted to weight. Enter the dome and the first surprise is the temperature. While gauges outside may nudge 50°C in the peak of summer, Ski Dubai remains at a constant -1 to -2°C. A representative explains that the complex

works in a similar way to a huge freezer. Snow is constructed from compressed air and cold water which is then cooled from below and refreshed between five and seven times a week at night when the rest of the city is asleep. The result is a temperature that is chilled enough to maintain the snow while turning the nose and ears a subtle shade of pink, but warm compared to skiing on snow outdoors. The slope features multiple runs, split into colours depending on the section’s gradient. Following the same code as mountain ski resorts, these vary from easy green and moderate blue to testing red and difficult black; the latter two of which are found higher up. A chair lift enables skiers to disembark mid-way or continue to the top which boasts a vertical height of 65 metres. At the entrance of the black run, warning signs point out

that it is recommended for experts only. It is on this slope in particular that the advantages of indoor skiing are realised as there’s no need to watch out for icy patches or surprises hidden underneath inches of powder because the snow is consistently smooth across every square metre of the slope. The venue’s ski school caters to all skill levels from beginner to expert freestyler. Those who learnt to ski on a dry slope where classes were cancelled in rain and poles frequently caught in the hexagonal bristled mesh of the artificial surface, will undoubtedly appreciate the benefits of learning on the smooth surface of the Ski Dubai slope. The school also organises monthly freestyle events, which have hosted appearances from winter sports stars such as freestyle snow-boarding champion Marko Grilc.

Take a break at Avalanche Café, situated at the ski lift’s mid-station and warm up with a cup of its famous hot chocolate. The generous serving of whipped cream and marshmallows results in a sugar rush and much-needed boost of confidence to try the new Snow Bullet zip line. At a surprisingly dizzying 16 metres above ground, those brave enough are catapulted at a speed of about 25 kilometres per hour along the 150-metre line, coming to a stop at the bottom of the slope. Before leaving, guests are encouraged to trade their ski boots in for snow boots and hit the snow park where a host of activities for all ages awaits, including tobogganing, bobsled runs and zorbing, which is essentially rolling down a snowy hill in a giant ball. Fitness enthusiasts can also take part in Snowrobics – a unique take on aerobics classes with workouts in sub-zero temperatures. Decorating the Snow Park is a series of carefully crafted snow sculptures recreated with new themes every few weeks. However, the cause of most excitement here is the penguins. Ski Dubai is home to 25 penguins from the King and Gentoo species. King penguins are the secondlargest penguins in the world, recognised by flashes of yellow, while Gentoo penguins are very approachable and are known for their white-capped heads and chests.

A percentage of money raised from such bookings goes towards international penguin conservation projects. Those who haven’t booked the encounter can spot them passing through the snow park during penguin marches which take place at 2pm, 4pm, 6pm and 8pm every day, even during public holidays. What was first deemed a hyperbolic concept is now one of Dubai’s most prized attractions, notching up over 10,000 visitors a day during peak seasons. The best time to visit is in the height of summer, but the festive season is also excellent as the dome is transformed into a winter wonderland complete with Santa’s grotto. While personal experiences are fantastic, the delight of seeing the faces of children light up with joy at their encounter with snow is a worthwhile experience on its own. One can only imagine the reaction when the bearded man in red makes an appearance in the desert in December, too.

Flow Kitchen There’s more to the cuisine than meets the eye at Flow Kitchen. Raising the bar on artistic presentation, chefs have created an innovative pudding that resembles a full English breakfast. The visual effect is so accurate that your mind may be tricked into thinking that you’ve just been served a traditional ‘fry up’ complete with all the customary trimmings. However,

appearances are deceiving. What appears to be a fried egg is actually a base of vanilla panna cotta with passion fruit curd for yolk, what seems like bacon is a Brandy snap tuile and in reality the black pudding is a chocolate brownie. Also on the plate, orange blossom lemon cakes resemble sausages, pieces of raspberry Nutella French toast could be mistaken for hash browns and, perhaps most creatively, white chocolate pieces in tropical fruit sauce are an exact visual replica of baked beans. The dessert course, which is served as the finale to the restaurant’s weekly Breakslow brunch-style dining experience on Friday afternoons, is a truly novel find that ups the ante on creative dining in Dubai. Choix Patisserie and Restaurant French chef Pierre Gagnaire is a leading light in the fusion cuisine movement and, as such, is famed for his pioneering attitude. To celebrate his second outlet in Dubai – Choix Patisserie and Restaurant – a further demonstration of his talents came in the crafting of a dedication to his host city in the form of a cake called Salam Dubai, which means ‘peace Dubai’. Reflecting the creativity that has gained his restaurants three Michelin stars, the chef’s signature cake features 12 layers of

chocolate and crème with marzipan and a three-dimensional topping shaped like Dubai’s skyline. The icing on the cake is a layer of gold Arabic calligraphy that reads Salam Dubai. STAY by Yannick Alléno If an entire metre of pastry sounds like a dream dessert, STAY by Yannick Alléno transforms the fantasy into reality. The contemporary restaurant has its own dedicated Pastry Library, where the chef de patisserie concocts a vast range of fantastical pastry-based sweet delicacies. The open-kitchen concept is unique to STAY by Yannick Alléno venues around the world and brings a welcoming feel as guests watch the team at work. The most opulent option on the menu is the metre-long pastry and diners can select styles and toppings to suit their individual preferences. Some signature pastries

include crunchy pineapple and meringue, peach melba, rum baba and chocolate Charlotte, while tailormade options are also available. Diners are encouraged to play an active role in the creation of their desserts, whether it’s choosing ingredients or watching the chef work his culinary magic in the kitchen. Indego by Vineet Chef Vineet Bhatia boasts a flair for juxtaposition. On analysis of the menu at his fine-dining Indian restaurant at Grosvenor House Dubai, you’ll find a number of cases in which he contrasts sweet and savoury, hot and cold, or smooth and crispy. For example, the introduction of chocolate curries or chicken tikka with olive sorbet instead of a chutney or sauce are two of the menu highlights. This enthusiasm for the unusual extends to the dessert menu where Bhatia fuses the concept of a savoury delicacy with sweet ingredients to create an exotic chocolate samosa dish. On the surface, the beautifully presented pudding resembles traditional filo pastry samosas decorated with chocolate. However, from the first bite, diners will discover a rich filling of thick chocolate sauce and an excellent combination of flavours. My Dubai Dubai-based film producer Lucan Toh shares his city highlights

I moved to the UAE from London almost seven years ago and time has f lown. When I first arrived in the UAE I lived in Abu Dhabi, a place that I still really enjoy spending time in. Moving from the capital to Dubai was a big change, my perception of the city at the time was that it was only for visitors, but I was proven wrong. I’ve managed to put down roots here now and the city feels very much like home. My favourite time of year is March as the weather is at its most enjoyable and there is a seemingly endless series of events; polo, racing and evening functions. There’s never a dull moment. I also love the Dubai International Film Festival in December. It’s becoming a cool festival with fun people and an increasingly good line-up. At the festival, you can see all the latest releases, attend incredible parties and do some work all in one go. I work on Fridays, so Saturday is my chance during weekends to catch up with friends and hang out by the pool. I also like to grab a quiet lunch with my wife at La Petite Maison in

Dubai International Financial Centre (DIFC). Japanese restaurant Zuma, in the same part of town, is another favourite and I love to order the saltgrilled seabass with burnt tomato. I also highly recommend the clay pot with tofu at Hakkasan, Jumeirah Emirates Towers. Recently, I’ve been spending time in Al Quoz as I think it has a really exciting creative scene. I also frequently visit the cinema to see anything that I haven’t had a chance to watch. My mother loves to see the visitor side of Dubai, so when she comes we do everything from malls and bus tours to desert safaris and boat trips. When friends visit, they tend to prefer the pool and the sunshine; it’s easy to forget how wet and grey it can be in London. As a film producer, living here has given me the opportunity to gain a wider perspective on my work and to figure out that not every demographic wants to see the same type of film. It has also provided great access to people with energy and vision and that’s been extremely helpful in moving some of our film projects along.
