CRAFTING MOMENTS ——— Concierge explores the art of timepiece design with Jaeger-LeCoultre CEO Daniel Riedo
Almost 85 years ago, a revolutionary new timepiece appeared that was to herald a truly different direction for the wristwatch. The Reverso was unlike anything that had come before, presenting a perfect synergy between form and function. A sleek piece that was instantly in demand, the watch introduced clever design features, precision mechanics and new possibilities for personalisation. For the watchmaker behind the landmark model, this was one of many innovations that have continued down the decades. As the anniversary of the Reverso approaches, that commitment to craftsmanship reigns supreme at Jaeger-LeCoultre. “It is our capacity to create and to innovate that sets Jaeger-LeCoultre apart. Each year we introduce between three and four new calibres, and between 50 to 60 new watches. No one has the capacity to match this, considering the range of pieces in our past which we can draw inspiration from and reinterpret today,” says Daniel Riedo, CEO. In the time since founder Antoine LeCoultre created the company’s very first pieces more than 180 years ago, a host of legendary chronographs have made their mark. Alongside the Reverso sit horological legends such as the Duoplan, Memovox and Atmos clock, while the Calibre 101, created in 1929, remains the world’s smallest mechanical watch movement. As the company forges ahead, achievements of the past remain at the forefront as classics are celebrated and reimagined. The anniversary of the Reverso next year brings with it the opportunity to breathe fresh life into an icon with plans for a special edition. Riedo says: “With the anniversary coming up, the Reverso will be the focus for next year with plans for many developments including complications
inside. In terms of my own favourite across the Jaeger-LeCoultre collections, the Reverso is definitely it. The watch is, for me, the undoubted icon of the brand.” A well-known tale in watchmaking circles, the birth of the Reverso in 1931 was the result of a chance encounter at a polo match when watch collector César de Trey was challenged to create a watch tough enough to withstand the game. De Trey took the idea to friend Jacques-David LeCoultre who provided the movements, while watchmakers Jaeger S.A. were tasked with making the reversible case. French designer René-Alfred Chauvot invented the ingenious mechanism and, when the Reverso was unveiled, it boasted a dial that could flip to protect the face from shocks. This in turn placed the emphasis on the case back, which instead faced outwards to present a surface that could be personalised. Much like with the development of an icon like the Reverso, when the idea for a new model comes along at Jaeger-LeCoultre, a team of some of the industry’s most skilled watchmakers rises to the challenge. Some of the pieces take years to complete, as complicated mechanisms are crafted and honed. It is this intricate work that fascinates Riedo. “I didn’t start as a watchmaker, I came to this because I had an interest in micro-engineering. As I went on to learn more about it, and spent time at the Jaeger-LeCoultre Manufacture, the more I realised that at the heart of this craft was a real passion to share with others.” Inside the Manufacture, in the heart of the beautiful Vallée de Joux in Switzerland, a dedication to the fine art of watchmaking is immediately evident. The walls are lined with displays showing
the many horological achievements of the past in a place where watchmakers have spent their lives immersed in the intricate craft. There are more than 1,800 artisans at work here, representing an extraordinary spectrum of skills. From the painstaking work of the gem setter to the artistry of the enameller and miniature painter, each comes together to create exceptional timepieces. For those at work on complicated movements, there is a sense that they are following in the footsteps of industry greats. “At the Manufacture, people are very proud and that is something you can feel. There is no compromise on quality,” says Riedo. “Our artisans stay with us and progress through their careers from working on the very simple movements to the complicated pieces. Our focus is very much on developing our people. Some have worked with us for a long time; one watchmaker was with us for 49 years. He started at the age of 15 and retired just before he turned 65. “It is great for the younger watchmakers coming through and is part of their education. We have to think about the connection between mentor and protegé and the ways in which we can transmit knowledge from generation to generation. “But we are never happy or totally satisfied with the design, quality and precision, that is why we continue to push the limits. It is really part of who we are. There are more than 125 people who work just for the development of novelties. We constantly try to go beyond what we are creating and we try to improve the quality every single year.” He adds: “For all of us, it’s about continuously rethinking, looking at what we can improve upon. That’s something we have done for generations, and will continue to do as we look to the future.”

Many of the season’s dynamic designs revealed a homage to winter’s most time-honoured themes. Think sombre hues, gothic glamour and f loorskimming silhouettes. Yet, thanks to the invigorated panache with which designers sought to blend these conventional elements, an undeniably bewitching effect radiated from the runways. Reimagining classic cuts and textures with a modern hand, svelte velvet gowns graced Ralph Lauren and Valentino. Emilio Pucci even went so far as to slash necklines revealing a far racier feel. Favouring barely-there lace and tiers of undulated chiffon, Alexander McQueen’s haunting ode to Victorian glamour honoured the brand’s famed repertoire for art-like creations. Marc Jacobs showcased a masterful mix of rich brocade prints and theatrical skirts.
Delighting fashion eccentrics, the runways proved the ultimate playground for off-the-wall upholstery prints, dazzling tapestries and decedent embroidery. Consider these the markings of today’s modernday socialite. Destined for the chicest of jaunts are Chanel’s immaculate tweed pairings, cardigan coats and glittering feather skirts. Perfectly complimented by dainty toe-capped sling-backs, quilted handbags and the ever-prevalent presence of pearled accessories. Prada showcased a love for traditional textiles as herringbone and houndstooth tailored frocks were paired with leather opera gloves. Moving away from prim and proper, however, was Alber Elbaz for Lanvin. Inspired by his Moroccan roots, discover sequinned tunics, resplendent patchwork and tasselled trims perfect for the well-travelled elite.
Arguably one of winter’s favourite trends to revisit, the military movement infiltrated every fashion aspect from trademark shades to regimented cuts and crops. Key pieces include a play on the United States Navy’s signature double-breasted reefer jacket. Adorned with signature gold buttons, the covetable coat was worn long at Michael Kors and Chloé and served to toughen up sheer lace creations at Nina Ricci. Alessandro Michele’s debut for Gucci rendered an all-together vintage vibe. Snap up stylish cropped jackets for autumn afternoons and heafty trench coats with army accents for winter. Those in search of a less direct reference to the trend should look to Salvatore Ferragamo. Military-esque pieces honed into the A/W 15’s love of graphics. Think double face stripes, askew buttons and asymmetrical cuts.

When it came to choice of texture, soft and supple reigned supreme. Leading the charge on stylish separates, Burberry Prorsum’s legendary trench gave way to a procession of must-have patchwork ponchos, heavily fringed suede jackets and cosy Shearling coats. Easy to wear and effortlessly chic, Shearling layering was also spotted at Chloé and Ralph Lauren. Winter’s usually ubiquitous chunky knits have been replaced by form-fitting jersey, becoming as much of an extension of silhouette as an expression of style. At Stella McCartney, striking ribbed single-sleeved sweaters and slinky roll neck jumpers echoed the designer’s much loved no-fuss aesthetic. Followed closely by the sleek and fluid body-skimming ribbed wool dresses favoured at French fashion house Céline.
A distinct summer hit, the bohemian spirit of the 1970s continued to ripple through many a collection - although, admittedly, it shone the brightest at Balmain. Here, bold colour blocking, statement pleats, high-waisted flares and knock-out jumpsuits up the ante on this season’s affinity for highoctane glamour. Several other designers dipped into decades gone by, with the mod ‘60s and glam rock ‘80s. More haute than hippy, boxy silhouettes and thigh-high hemlines rocked the runways at Prada, Fendi, Dolce & Gabbana and Dior, where Raf Simons served up patent trenches and boots. Those with a sense of ‘80s nostalgia can take their pick from punkish prom-style dresses at Saint Laurent, exaggerated power shoulders at J.W. Anderson and layers of glorious lamé pleating at Loewe.

Certainly not for the faint at heart, this season’s print objective is clearly one of extremes. Dare to wear head-to-toe prints as seen on the runways of Louis Vuitton, Valentino, Givenchy, Hackett London and, of course, the eternal advocate for power prints, Etro. As tempting as it may be to break up these striking suits and team with more conservative pieces, their impact is stronger when worn together. In fact, it’s stronger still when punctuated with power accessories. Think patterned scarves and striking tote bags.
A tried and tested shade for this time of year, autumn’s much-loved Bordeaux-based palette delivers timeless sophistication with a hint of modernday edginess. One simply needs to look to Lanvin for lessons in claret dressing. From slick biker jackets and patterned bombers to slightly oversized chinos, the French label offered a cool and contemporary feel. For more formal occasions, follow Valentino’s lead and break up the maroon mood with a mix of standout prints.
Designs took a noticeably larger-than-life approach especially where outerwear is concerned. Oversized coats were championed at Lanvin, Dries Van Noten and Calvin Klein Collection. However, with cocoon-shaped shoulders and lengthy shapes out in force, artful layering becomes essential. Define your frame by pairing pieces with the season’s ‘it’ turtleneck sweater. Statement coats at Burberry Prorsum and Saint Laurent add an interesting twist to this season’s urban uniform.

At first look, Dubai Marina has the appearance of a miniature metropolis. Clusters of sky-high towers line the water’s edge, each one more extraordinary than the next. As one of Dubai’s most dynamic neighbourhoods, the marina is a credit to the talent of accomplished international architects. Canadian architectural and design firm HOK brought the manmade marina project to life over the course of five years and, by 2003, the city’s vibrant waterfront community was born. Not just an incredible feat of architectural design, the marina is also a wonderful locale where a sense of the city can be felt. An eclectic mixture of visitors flocks here to experience the café culture and take in the futuristic vistas. Business and residential towers create a distinct urban feel along the water promenade and at the heart of it all is Pier 7. The dining tower attracts the city’s gourmands, all vying for a table at any one of the chic restaurants to be found here. Trendy neighbourhood eatery Fumé is one of the most popular and offers fantastic marina panoramas as the perfect backdrop for the excellent food. Back at promenade level, a stroll around the waterfront is the best way to take in the buzz. Restaurants and cafés representing flavours from all corners of the globe are peppered along the walkway and are ideal to pause with some Arabic coffee and shisha as you take it all in. Some of the world’s most luxurious yachts are moored here, while the waters bustle with a host of touring boats and the Dubai Ferry. Saunter a little further along and Dubai Marina Mall offers still more dining options. Among the choices are the restaurants and bars of The Address Dubai Marina, which are not to be missed. Al fresco rooftop lounge Shades is a chic space to enjoy a refreshing cocktail as you watch the sun set over the marina’s gentle waters which flow on out into the Arabian Gulf in the distance.

“It’s almost like everything in the UAE has been built to be viewed from above,” says Seawings pilot Cameron Hoyle, as he motions towards Dubai’s iconic skyline. And he’s right – the aerial views of Dubai and Abu Dhabi from the luxury seaplanes are nothing short of spectacular. From the air, sights famed the world over take on an entirely new view. The architecture of Burj Khalifa, the world’s tallest tower, comes into focus as an abstraction of the desert hymenocallis flower, while the largest Scuderia Ferrari “prancing horse” emblem in the world is proudly displayed on Ferrari World Abu Dhabi’s red roof over Yas Island. “Even if I’m on the same flights over and over, I still look down at Palm Jumeirah and I’m blown away. I also really enjoy flying over Fujairah and through the mountains. Living in the UAE, sometimes
we forget that the mountains are so close,” explains Hoyle with a wistful smile. Mountains are, after all, very special to him. “I lived in the mountains of Banff, Alberta in Canada when I was young which is right on the route for the main jets flying across the country. I still have this vivid memory as a boy of looking up at the sky and seeing a jet fly over with its contrails against the deep blue sky. That really was the start of it all. I can’t remember ever not wanting to be a pilot,” says 32-year-old Hoyle. That interest sparked a passion and, after securing his commercial pilot’s licence followed by hundreds of hours of flight training and practice, Hoyle specialised in seaplanes. He was working in Fiji when he was offered the chance to work for Seawings in 2012. The Dubai-based seaplane tour operator offers aerial tours and exclusive charters to destinations across the UAE, with plans in

place to add to the company’s roster of available routes and experiences in the future. The Seawings fleet currently consists of three Cessna 208 Caravan seaplanes equipped with luxury leather seating in an air-conditioned cabin and large windows for the best views of Dubai and Abu Dhabi. Every day presents something different for Hoyle, as he explains: “The first thing I do in the morning is check the weather. We’re always concerned about air pressure as that affects the performance of the aircraft and wind speed. Visibility is another important factor, not just because it’s a scenic flight, but for safety reasons. We won’t fly if the visibility isn’t good enough, though that rarely happens.
“Interacting with people is what makes every flight special. As we predominantly do tourist flights, I meet people from all over the world. Sometimes they are really nervous walking down the ramp towards the plane but everyone walks away happy. Flying in a small plane is easier for some reason, even for people who are scared of flying.” For Hoyle, piloting a seaplane is more than just a job. “I don’t think I could ever get bored of flying seaplanes. The water is always different and so is the wind. There’s a whole world to explore and, since there is no air traffic control, you’re the one taking off and landing and making all the decisions. That feeling of adrenaline and sense of freedom – there’s nothing like it.”

The emphasis at this chic Jumeirah Emirates Towers venue is on the creative use of fresh, seasonal ingredients. The tuna carpaccio with cress, fennel and orange salad makes for a zesty and refreshing starter, before moving on to mains which include herb-steamed sea bass, or seasonal braised vegetables with poached eggs and a black truffle butter sauce. End the meal with one of the sublime dessert options, such as the crostata al limone which is a lemon cream tart accompanied by raspberry sorbet and mint sauce.
With chef de cuisine Davide Concas at the helm, Andiamo was bound to be a success. Hailing from Turin, Davide’s passion for cooking has taken him to kitchens all over the world, on a journey that began when he was just five years old. Now at the helm in Andiamo at Grand Hyatt Dubai, the sophisticated Italian restaurant offers the very best flavours from Northern Italy. The atmosphere is convivial and welcoming, ensuring a rustic ambience which is paired with hearty plates. As might be expected, pizza and pasta is a speciality here, as well as a good selection of regional delicacies. Start a meal with the polpo alla griglia, a delicious grilled octopus dish served with potato, olives, pine nuts and basil, before moving on to a mouthwatering risotto alla Milanese which is a flavourful saffron infused rice dish with veal and vegetables. A pasta highlight is the ravioli di zucca, a tasty pumpkin ravioli served with butter, sage and parmesan. For the perfect finish, the tiramisu is a triumph and comes smothered with mascarpone cream, savoiardi biscuit and coffee.

—— Among the additions to Dubai’s dining scene this year is TRE by Roberto Rella at Radisson Royal Hotel, Dubai. One for the gastronomes, the delicious fare served here is traditional Italian using fresh, seasonal ingredients. There’s also a special Crudo and Oyster bar serving fine seafood and freshly shucked oysters. Other signatures, specially created by Italian restaurateur Roberto Rella, include ricotta and spinach ravioli with white truffle sauce, and blue cod with artichoke and purple potatoes. Rella’s deconstructed tiramisu is also not to be missed. There’s a strong emphasis on social dining at TRE and as part of that, the restaurant offers diners late night tapas with an Italian comfort food twist. Plates include burratina with heirloom tomato and basil
sauce, octopus in smoked scented oil with a mini seaweed salad or nacho Italiano, served with gorgonzola cream cheese, arrabbiata salsa and avocado. The space is equally as engaging as the food, and is spread over three levels from the 49th floor of the hotel. The Lounge, on the 50th floor, boasts recliners, a DJ and the opulent Kings Room for exclusive occasions featuring a gold theme and throne. On level 51, The Bar affords stunning panoramas of the city skyline and live jazz. This is the sister restaurant to the ever-popular Roberto’s in DIFC and is sure to make just as big a mark on the local dining scene. Friday brunch in Dubai has become something of an institution. As the weekend starts, the city’s social scene centres around the scores of brunches happening all over town. There is quite literally something to suit all tastes, from a grand feast to a quiet affair or event with a party atmosphere. Diners can choose from à la carte or buffet style, at a host of venues that range from beachside chic to sophisticated settings perched high in a skyscraper. It’s set against this busy backdrop that the talented Raymond Wong and his team launched the Friday Feast Brunch at Sheraton Grand Hotel Dubai. As a newcomer to the scene, it has quietly become one of the best-attended brunches in town, thanks to an imaginative approach and a firm focus on absolutely delicious food. “My family ran two successful Chinese restaurants in Edinburgh and I used to work part time as a dish washer to make pocket money. I took a food preparation course and that’s when my passion for cooking began. During my college days I was lucky enough to be sent to France for three months where I worked in a three Michelin star restaurant. It was a great experience and it really opened my eyes to respect fresh ingredients. “In Dubai it’s sometimes hard to get the freshest of ingredients but we do have great suppliers who really push to get what we want. We try to use local produce and seafood where possible. It’s all about remembering to keep it simple and respect your ingredients, looking at new trends and adding your own personal touches.” With Scottish, Chinese and Malaysian roots, Wong’s experience and cultural background shines through at the Friday Feast where food stations peppered boast all manner of exciting culinary concepts.
“Feast Friday brunch was created in two weeks. We had to deliver something very special, something that would place us on the map in Dubai, so we decided to create unique stations while also keeping the classic brunch favourites. You’ll find areas like our edible Martini station, or the signature Lamb 26 station where the meat is accompanied by a choice of 26 different sauces and seasonings. We have Malaysian street food, as well as a seafood station with fresh Irish oysters, and there's also some very exciting dessert concepts. “One of my favourite dishes is the pomegranate and tamarind chicken, which is a natural sweet and sour tandoori dish with a modern twist. The wagyu beef rengdang is also delicious, it is slow cooked to melt in the mouth and is flavoured with fragrant spices and fresh lemongrass. It really takes me back to the street markets of Malaysia Penang. “The lamb 26 is also excellent, the complexity of this dish brings the idea of a classic carvery to the next level. We serve it on a special stand which is really show stopping.” Standing out on Dubai’s culinary scene is something Wong hopes to continue to do, as the brunch at Feast goes from strength to strength. He says: “There are thousands of restaurants and places to dine at in Dubai, and there are new concepts popping up everywhere. Sometimes it is hard to keep up with what’s new, but in general, it’s amazing to be part of this culinary journey.” The Friday Feast brunch is available at Sheraton Grand Hotel Dubai every Friday, from 1pm to 4pm, priced from AED295 including soft drinks, AED395 including house beverages and AED495 including Moët & Chandon.

Sharing the eastern edge of Dubai Creek with Al Fahidi Historical Neighbourhood is the atmospheric Al Shindagha area where the ruling Al Maktoum family once lived. One of the most important buildings in this area is Sheikh Saeed Al Maktoum House and we’ve spent many an afternoon in this tranquil space. Now open as a museum, this elegant home was the original residence of the ruling family and the former seat of government in Dubai. The building offers insights into life in the pre-oil era with a fascinating series of photographs of 1940s and 1950s Dubai, coins, stamps and even a quaint pearl diving display. And here’s a little trivia for you – the structure dates back to 1896 and was the home of Sheikh Saeed bin Maktoum Al Maktoum, the grandfather of current Dubai ruler HH Sheikh Mohammed bin Rashid Al Maktoum. The museum is open Saturday to Thursday 8am to 8.30pm, Friday 3pm to 10pm.
One of the oldest buildings in Dubai is the striking Al Fahidi Fort, built in 1799 to defend against attacks from the sea. Today it is the home of Dubai Museum, where you can go on a journey through the emirate’s rich history with engaging displays and prized artefacts.
