Abu Dhabi offers an amazing variety of cultural sights and one of the best ways to take them in is to hire a limousine and enjoy a tour at your leisure. This way you can pause at the attractions that appeal most - I would suggest beginning with the mangificent Sheikh Zayed Grand Mosque before moving on to Manarat al Saadiyat, where a detailed interactive exhibition conveys the grand plans for the island’s cultural district. Finish off with a visit to the Souk at Central Market, where visitors can browse a wide selection of traditional and locally made products. In the evening, I can think of no better place to relax and enjoy a delicious meal than at Vasco’s in Hilton Abu Dhabi. Guests can dine inside or outside on the deck and admire the sea views over an eclectic menu inspired by the travels of Portuguese explorer Vasco de Gama. For some of the city’s best Lebanese cuisine, there’s also Al Mawal, where an authentic Arabian dining experience is enhanced by a live singer and belly dancer to entertain guests throughout the meal. Another day can be dedicated to exploring the islands surrounding the city, while another can be given over to enjoying the activities at Yas Marina Circuit, where guests can hire a car and see whether they match up to their favourite F1 driver on one of the most modern tracks in the world. Water sports fans, meanwhile, need look no further than Hiltonia Beach Club on the Corniche, which offers a range of aquatic activities, including sailing, wind surfing, kayaking and more.
Prepare to be astounded by some of the largest, rarest and strangest cars on the planet. Housed in a giant pyramid along the Liwa road, the exotic display belongs to Abu Dhabi’s Sheikh Hamad bin Hamdan Al Nayhan, who is affectionately known as the Rainbow Sheikh thanks to his colourful collection of S Class Mercedes. Among the weird and wonderful vehicles parked here is the world’s largest truck, a globe-shaped caravan that is exactly one-millionth the size of the earth and an eight-bedroom apartment on wheels. EXPERIENCE At the Top
Head over to neighbouring Dubai and enjoy sweeping views of the emirate from the top of the world’s tallest manmade structure. Burj Khalifa stands a whopping 2,722 feet tall and boasts the highest number of floors of any building in the world with a total of 163. A super swift lift, which climbs at a rate of 10 metres per second, takes visitors up to level 124 where the viewing deck is located. Where: Downtown Dubai. Lush parks, dramatic scenery and fascinating historical sites are just some of the attractions that make Al Ain well worth a visit. Only an hour and a half by road from Abu Dhabi Island, Al Ain is known as the garden city thanks to an abundance of greenery and wildlife. Among the best places to take advantage of the stunning landscape are the oases, the largest of which is Al Ain Oasis. Don’t miss out on one of the area’s most distinctive landmarks, Jebel Hafeet, a soaring mountain that commands a panoramic vista of the city and surrounding desertscape. Stretching away from the base of Jebel Hafeet is the Hili archaeological site, where ancient tombs, forts and other structures, some of which date back to the Bronze Age, are waiting to be explored. In addition to its many natural and historical attractions, Al Ain offers a range of sport and leisure facilities, including a number of shopping malls, an international standard Go-Kart circuit and Wadi Adventure, a water park that offers rafting, kayaking and surfing in addition to a selection of slides. Two dials tell the time at home and abroad simultaneously with an off-centre sub-dial that shows local time and another disc slotted behind it to reveal the hour at home. The mechanism is based around a complex interplay of three rotating discs and has been created to pay tribute to Nicolas Rieussec, pioneer of the world’s first chronograph. founding father The late Sheikh Zayed is one of the nation’s most loved and treasured figures. Concierge takes a look at the life of the UAE’s inspirational first president
Q You can’t go far in Abu Dhabi without seeing mention of Sheikh Zayed. As the country’s first president, and a much loved figure in history, he is recalled everywhere you look, in the names of roads, mosques, universities and bridges. But it’s not just the tributes of his people that entrenches the charismatic leader in national memory. Evidence of his influence is woven into the very fabric of the country, in the quality of life enjoyed by its residents and the groundbreaking structures admired by the world ouside. The youngest of four sons, Sheikh Zayed bin Sultan Al Nahyan was born around 1918. His father, Sheikh Sultan bin Zayed Al Nahyan, was the ruler of Abu Dhabi from 1922 to 1926. Abu Dhabi in those days was a far cry from the wealthy emirate it is today and its people, even those who belonged to the ruling family, lived by simple means. This was before the discovery of oil when the mainstay of the economy was fishing, pearl diving and agriculture, which produced enough to live on but little extra so the country remained undeveloped. At the time formal schooling was rare and the young sheikh took basic lessons in reading and writing, in addition to classes on Islam. Much of his time was spent in the desert with the Bedouin learning about their way of life and the environment. He was taught the traditional practice of falconry, which remained a passion for the rest of his life, and developed a love and respect for Arabian horses.

Early years In 1946 Sheikh Zayed became the ruler’s representative in the Eastern Region, where the city of Al Ain is located. He quickly established himself as a capable leader, willing to lead by good example. The sheikh wanted opportunities for the people of Al Ain and established the first modern school in the emirate, which he funded with his own money. He also encouraged friends and relatives to contribute towards development of the region. A big believer in conservation and the environment, the sheikh had the falaj water transport system rebuilt, providing irrigation for the oases and other agricultural developments. As a result of his efforts, Al Ain is today known as the ‘garden city’ and the ‘oasis city’.
Ruler of Abu Dhabi Oil exploration had continued in the Gulf for many years before it was discovered in Abu Dhabi in 1958, yet it didn’t bring immediate wealth to the emirate. The then ruler, Sheikh Shakhbut bin Sultan Al Nahyan, was unsure whether the revenue would continue and chose to be frugal rather than pour the money into the development of Abu Dhabi. His brother, Sheikh Zayed however believed the cash offered great opportunities to the emirate and, inspired by his ideas, the ruling Al Nayhan family put him on the throne in 1966 to carry out his vision of developing the emirate.

He channelled vast sums into the construction of schools, healthcare services, an airport, housing, a sea port, roads and a bridge linking Abu Dhabi island to the mainland. He also prioritised tree planting and the creation of a zoo in Al Ain in 1967. Just a year later, the British announced they would withdraw from their treaty with the Trucial States, which included the sheikhdoms of Abu Dhabi, Dubai, Sharjah, Ajman, Fujairah, Umm Al Quwain and Ras Al Khaimah. The had treaty offered protection by Britain in return for loyalty. The agreement ended on December 1, 1971, and the next day the United Arab Emirates was formed. Sheikh Zayed was appointed president of the new country. Together with the ruler of Dubai, Sheikh Rashid bin Saeed Al Maktoum, he had been instrumental in establishing the federation.

future. “Building good citizens is more difficult than building factories. Sophisticated nations are judged by the level of their population’s education,” he once said. He was also passionate about the environment and wildlife and established not just the Al Ain Zoo but also the Arabian Wildlife Park on Sir Bani Yas Island. The survival of the Arabian oryx, a species declared extinct in the early 1960s, can be attributed to the successful breeding programme here. Today, more than 500 Arabian oryx roam free on Sir Bani Yas Island. A firm believer in peace and stability, the sheikh showed the same compassion towards humans as he did to animals. He exhibited a widespread tolerance of other religions and was greatly respected by expatriates in the UAE. He also sought to bring greater peace within the Arabian Gulf and the broader Arab world with his humanitarian and aid efforts around the region.
The legacy continues Sheikh Zayed passed away on November 2, 2004. He was in his late 80s and had battled deteriorating health for some time. His son Sheikh Khalifa bin Zayed Al

Nahyan became Ruler of Abu Dhabi and President of the UAE. Although more than seven years have passed since Sheikh Zayed’s death, his legacy continues. To this day, the UAE and Abu Dhabi in particular is known for its generous donations to those in need, while also investing in and funding health and education around the world. Through bodies such as the Zayed Charitable and Humanitarian Foundation and the Abu Dhabi Fund for Development, the country is one of the most generous in the world. One of the greatest monuments to Abu Dhabi’s late ruler is the Sheikh Zayed Grand Mosque where he is buried. The stunning mosque is symbolic of what he believed and what he wanted to achieve in life. Built from marble, precious stones and other material from around the world, the grand and beautiful structure stands as a symbol of his desire for greater harmony, unity and cooperation between countries. It is one of the few mosques in the UAE that’s open to non-Muslims. The reason for this is to help realise Sheikh Zayed’s desire to educate others about Islam while encouraging greater religious tolerance and international respect. The extravagance of the structure is also a telling reminder of how far the UAE has come, from a struggling gulf state reliant on the sea for survival to a wealthy nation that invests in its people and its future.

ALONG THE SEA SHORE Featuring many of the city’s top assets, the Corniche boasts gleaming sands, lush parks and boutique shopping with an interesting blend of old and new Abu Dhabi
Q On any given day of the week the Corniche is abuzz with activities. It’s the gateway to the city’s public beach and, on weekends especially, people pass along here to reach their favourite sunbathing, volleyball or swimming spot. In the cafés, others sit drinking coffee or enjoying a bite to eat, while on the seaside path a regular stream of joggers, cyclists and roller bladers make their way along the eight-kilometre stretch. In many ways, the Corniche is a microcosm of Abu Dhabi’s brief history. At one end lies the old Port Zayed, where the city’s expansion really began, while at the other stands a symbol of the prosperity that overseas trade has brought to the country – Emirates Palace. In between and set back from the beach, high- and medium-rise buildings represent various stages of Abu Dhabi’s development from the original towers to the sleek, new skyscrapers and high-rise hotels.
The waterfront itself has been left free from development with only the occasional café or climbing frame to obstruct the ocean view. A landscaped path snakes its way alongside the beach, breaking out into patches of park and a flower-covered bank every so often. Benches are dotted along the length, most of them facing out to sea to provide a comfortable spot to sit and watch the sun set over the horizon. Around the entrance to the public beach, the path broadens into a large paved area surrounded by cafés and ice cream stalls. When events are held on the Corniche this is a centre of activity and people crowd through on their way to beach concerts, the Red Bull Air Race, World of Music Arts and Dance (WOMAD) festival and a host of other events and competitions that take place here throughout the year. Travelling southwest towards Emirates Palace, visitors reach another monument to Abu Dhabi’s commercial success, the new luxury shopping centre, Avenue at Etihad Towers. The mall, which houses only designer brands, was launched last November and represents a major step for the capital’s high-end retail market. A little way along, the Corniche road veers off to the right, reaching out to sea in a breakwater where Marina Mall, the city’s largest shopping centre, stands.

Several other attractions are situated along the breakwater, including the Heritage Village, where reconstructed barasti huts and demonstrations of traditional Emirati crafts offer an insight into the old ways of UAE life. A small spice shop displays an eclectic selection of souvenirs from dried herbs to handmade soap and, for those interested, craftsmen are more than happy to let visitors try their hand at traditional weaving, pottery or spinning. At the end of the Corniche stands the capital’s pièce de résistance, the magnificent and imposing Emirates Palace. No expense was spared in the construction of this magnificent structure, where the central dome alone holds two records as both the largest in the world and the greatest gilded expanse ever created in one building. Gold glitters on the walls, ceilings, light fixtures and even on the food (in edible form) at Emirate’s Palace, which was, until recently, the most expensive hotel ever built. While this end of the Corniche boasts more of the glitz and glamour that people have come to associate with Abu Dhabi, the other holds more of the history and heritage, an angle the government is working to promote. Much of this is concentrated around the old Port Zayed, which still houses traditional dhows that once carried goods across the Gulf from India and Iran. Crowded together on the water, these traditional wooden sailing vessels paint an attractive picture of the old city and conjure up images of life as it used to be before the discovery of oil catapulted Abu Dhabi into the 21st century.

The stakes are particularly high in Abu Dhabi, where the competition offers winners one of the largest prize purses of the whole tour with an enormous US$2.7million up for grabs. The winner is also awarded the prestigious falcon trophy, which last year, in a thrilling and unexpected turn of events, went to UK golfer Robert Rock who held off a challenging field to secure his victory in the final round against Tiger Woods. Q With three championship golf courses within a 20-minute drive from the capital, a major international golf tournament and a superb variety of fairways and greens to its name, Abu Dhabi could be forgiven for resting on its laurels. That, however, is the last thing the city has in mind when it comes to developing its already excellent facilities for the sport. At the end of 2011, the capital launched the Golf in Abu Dhabi initiative, a fresh drive to develop the emirate’s appeal as a five-star golfing destination with package offers that allow visitors to take full advantage of the different golfing opportunities available. In pursuit of the perfect pearl Paspaley’s annual week long pearl harvest in Kuri Bay, Australia, is the moment when years of hard work come to fruition. Concierge was invited to experience this unique occasion and gain a deeper insight into the world of South Sea pearls

“Hold out your hand,” instructs Geraldine Atkins, Manager of Paspaley’s flagship Darwin showroom, as she places a flute of Champagne on the glass counter beside me. Highly regarded as an expert on finding the perfect pearls for prospective clients, I obediently offer my palm as Geraldine casually places a large, lustrous pearl in my possession. It only takes a moment for me to realise that I am holding the famed Paspaley Pearl - the single, most valuable cultured pearl ever presented by the company. Perfectly round at 20.4mm in diameter and pink in colour, the flawless gem is priceless. Part of Paspaley’s private collection, it usually resides in the museum adjoining the Darwin boutique. However, just for a few moments, it is mine. The rare gem was discovered during the pearl harvest of 2003. In a happy twist of fate, the company’s Executive Director James Paspaley, whose grandfather Nicholas started the business in the 1930s, was present when it was extracted from the Pinctada Maxima oyster where it grew. It was a fitting reward for the man who was born into the trade. “Some of my earliest memories are of being on the ships at the pearl farms with my family,” says James. “There is always buzz during the pearl harvests as we are waiting to see whether the hard work has paid off – it’s like Christmas. Unlike the old navel days where oysters were caught in the wild and opened immediately, our harvest happens after two years of care and attention so I feel a sense of nervous excitement when we receive that first bag of pearls and start working through them.” Experiencing the harvest is undoubtedly a memory that will last a lifetime, and it is also something money cannot buy. An adventure reserved solely for Paspaley’s VIPs, guests are received to the Kuri Bay farm, located on the rugged coastline of the Kimberley, Western Australia, on an invite only basis. This is partly due to the fact that the methods used to procure the pearls are a closely guarded secret and also because the nearby Paspaley lodgings are completely exclusive – a flick through the guest book revealed US ambassador to Australia Jeff Bleich as a recent visitor.

Guests that do receive their calling card are in for a treat. The journey to the pearling site is pure adventure, involving a mallard seaplane flight from Darwin International Airport to the pearling site in Kuri Bay. Approaching the bespoke pearling ships by speedboat, guests can witness first hand the swatches of Pinctada Maxima oysters being pulled from the sea by a small army of workers - mostly comprised of gap year students - which are then teased open by experienced Japanese technicians who extract the pearls via a small incision. The technique has been developed and perfected over many years and has been credited with having significant impact on modern day pearl farming. “All the successful South Sea pearl companies in Australia exist because of emulating my grandfather’s ways,” says James.

The gems are briefly inspected before a nucleus is inserted back into the oyster to encourage future growth and the animals are then returned to the sea. Paspaley farms around 90 percent of South Sea Pearls, but keep only the crème de la crème for themselves. Each pearl takes two years to produce and Pinctada Maxima oysters – which are roughly the size of dinner plates – can live for up to three cycles. They are well looked after – each oyster is visited every three weeks and given a thorough health check, which involves keeping the shell clean from debris. Helping the animals stay in optimum condition encourages good pearl growth and when exceptional pearls are found they are considered some of the rarest jewels in the world. While history wasn’t made during Concierge’s visit, numerous stunning

pearls were teased from the shells in all shapes and hues, from creamy baroque (irregularly-shaped) gems to champagne-tinged triangular specimens, plus many more. The buckets of luminous pearls seem never-ending, although not every gem is created equal.
Grading a pearl

There are five key criteria that determine the class of pearl: luster, complexion, shape, size and colour. While large, lustrous, perfectly round pearls are generally the most desirable, what a pearl is worth to the individual can be subjective. “The pearl really does find you,” says Stephen Francis, Paspaley’s Regional Manager Retail – UAE. “While a classic strand of creamy oval pearls may suit one woman, a silver baroque pendant may flatter the next. Finding the perfect match depends on everything from the wearer’s personality to her skin tone.” Guests are given plenty of time to mull over their choice at the Paslaley family’s nearby lodgings. The

rugged yet luxurious hideaway, developed in partnership with Wild Bush Luxury, boasts a multitude of activities, from bush walking to sea fishing and excursions to discover indigenous art. The resort has a resident crocodile, which rules out swimming, although there is a large pool for those who fancy a refreshing dip. There is an extremely talented Irish chef on site, producing world-class cuisine no mean feat considering the nearest town to Kuri Bay lies 220 kilometres away. Guests can enjoy delicious pearl meat canapés and fine Australian wines, including those from the Paspaley family’s own vintage. Completely remote and brimming with natural beauty, it can only be described as the experience of a lifetime. The stunning setting provided the ideal location for the photoshoot for the brand’s latest collection, Odyssey. Featuring yellow gold and diamonds, the range was inspired by a meeting

The duo were sitting in Christine’s garden as sunlight shone between the lemon trees and the idea for a new look was formed. A selective approach Despite the challenges around raising awareness, Paspaley has found a fitting home in the UAE, where it has three boutiques in Dubai with another due to open in the Mall of the Emirates in early 2013. They explained to us that the UAE has a long and rich cultural history in pearls and that together we should be able to bring the worlds finest pearls and pearl jewellery back to the UAE.”

In Dubai, local customers tend to purchase items as a set: earrings, a necklace and a ring, for instance. Visitors from the GCC generally appreciate the more extravagant designs, such as those featuring decorative diamond-set clasps, while Chinese shoppers looks for more classic, delicate items that can be passed down the generations. Russians, on the other hand, prefer statement-making pieces featuring contemporary design, perhaps using Champagne-hued gems, for instance. Paspaley caters for all these tastes and more. “I have always been tremendously proud to have the opportunity to contribute to the Paspaley story,” says James. “The pearling business is an incredibly interesting environment to me. Fabric of society In the last few decades we have witnessed the emergence of a flourishing new market for fashionable abayas and UAE designers have played an integral role in this
Q Clad head to toe in sweeping black robes, often accompanied by a matching scarf covering the hair and loosely framing the face, the Emirati woman cuts an elegant figure. Her floor-length gown, known locally as the abaya, is the traditional dress worn by Gulf women which, until recently, has remained largely unchanged for hundreds of years. The abaya, which is worn as a symbol of the wearerâ&#x20AC;&#x2122;s faith and modesty, was always a loose, black robe, made from one large square of silk or wool. All abayas were made in the same size, regardless of body shape and they all looked identical. Then, about twenty years ago, all that changed and distinctive styles embracing international trends began to emerge in abaya retailers. Suddenly, the abaya became a statement of style as well as religion. Different wrinkle-free fabrics from silk and satin to chiffon and dentelle began to be used and women started to opt for embellished abayas adorned with Swarovski stones, glass beads and embroidered patterns. In the last 10 years, this trend has accelerated and a new abaya fashion scene has not only emerged, but has established itself.

“Recently, women have discovered they can wear stylish and fashionable abayas while still respecting the Islamic culture and so we have seen the introduction of fashionable abayas, which include colour, embellishments and varying fabrics,” explains Sheikha Rafia Helal Bin Drai, whose abaya designs grace catwalks around the world and are sold throughout the UAE in her boutique, Mauzan. Sheikha Rafia Helal Bin Drai is one of a growing number of talented designers who have focused on reinventing the plain, one-size-fits-all abaya and creating stylised pieces that ref lect the tastes of fashionforward Emirati women. “Islamic women have seen the latest trends around the world and comfortably integrated them into their traditional wear,” says Karan Chauhan from abaya design house, Kashkha Plaza. Part of the reason for this recent surge in trendy abayas is the changed outlook of society, says Chauhan. “This has empowered women to experiment with traditional wear and now we have a large number of abaya designers from the Gulf showcasing collections in Paris, New York, Miami and at other international fashion shows.” Initially, some international communities were skeptical about the fashion potential of abayas, Chauhan continues. Now, however, they have been embraced on runways around the world and are even finding their way into the mainstream market. “Just like the

Indian sari, which wasn’t trendy a few years back and is now being worn by many international celebrities, the abaya is beginning to be appreciated as a symbol of style as well as culture,” he adds. Ali Khalil from Hanayen attributes the change to the younger generation of Emirati women, who are driving the demand for trendy traditional dress. “Abaya styles began to evolve about two decades ago and designs have since matured dramatically.

We credit this revolution to the young, modern generation of Islamic women who are educated, sophisticated and yet value their traditions and respect their chastity,” says Khalil, adding that customers buying the fashionable abayas are from the 18 to 40-year-old age group and generally professional, career women or wealthy socialites. It’s a testimony to the value of tradition and heritage in the UAE that rather than abandoning the abaya for ready-made fashions, Emirati women have spurred the creation of an entirely new market for designer abayas. It is for this reason that the UAE is leading the way in abaya design. “The UAE is dominating the abaya fashion scene for the simple fact that is has a lot of cultures to look to for inspiration. We love to experiment with new designs and there is plenty of opportunity for that in the UAE where customers from different parts of the world ask us to make customised abayas for them,” says Chauhan.

Many of these custom-made abayas will incorporate the latest haute-couture trends from the western catwalks. With all the delicate beadwork, hand-stitched designs and Swarovski embellishments the high-end abayas can easily cost in excess of AED6,000 (approximately US$1,000). Couture abayas, which tend to be a designer’s most extravagant creations, covered with expensive adornments and stitched painstakingly by hand, often cost a lot more. On a day-to-day basis, however, most of the younger Emirati women opt for lighter and more practical designs, says Chauhan. “Older Arabic women still prefer the heavier styles, but the younger generations are looking for more aesthetic designs with less bling and more prints. They are also shifting away from the traditional black and mixing up the palette.” Increasingly, catwalk abaya collections are featuring coloured and patterned designs that are broadening the market and attracting buyers from other cultures.

Last year, American model and socialite Olivia Palermo was pictured on the front cover of Haute Muse magazine wearing an abaya and subsequently donned another when she attended an event in Qatar. Abayas have also made their way into several luxury international department stores, including Harrods and Saks Fifth Avenue. As more and more local designers turn their attentions to local dress and these stylised garments make a growing number of appearances outside their traditional, cultural sphere, it seems clear that the future of the fashionable abaya is secure.

With mall culture so focal in the mindset of Abu Dhabiâ&#x20AC;&#x2122;s big spenders, it can be all too easy to overlook the unobtrusive souks that speckle the streets of the city. These traditional Arabian market places open a window into the emirateâ&#x20AC;&#x2122;s past and recall a time when buyers purchased their wares at stalls, nosily bartering down the price with vendors over the counter. Today, many of the older markets remain and a number of new-style souks have sprung up alongside them, offering an upmarket alternative to the traditional shopping experience.

The Souk at Central Market Recently renovated, this shining new souk has been restored to its rightful place after severe fire damage gutted the building some time ago. Now freshly refurbished, the gleaming structure features an elegant design modelled on a traditional style with wooden trellises and exposed black metal work. Inside, a maze of narrow paths has been opened up to create spacious and airy passages that bridge the gap between modern mall and historical souk. Taking its influence from the latter on the ground floor, where souvenir and trinket shops abound, the architecture evolves to a more mall-like design on the upper floor, where a multicultural clientele can stroll past artwork exhibited on the walls and wander into clothing and jewellery boutiques.
The choice of merchandise is quite staggering, with a new discovery waiting around every corner. Perfume, watches and jewellery are given particular attention via countless specialists in all three fields. There are also plenty of options when it comes to tailoring, handicrafts, local palm leaf-weaved textiles, gifts such as finely crafted walking sticks and even ranges of locally-produced honey. At less than 10 minutes from Emirates Palace and Jumeirah at Etihad Towers, and even closer to the Corniche beachfront, The Souk at Central Market is conveniently near many of Abu Dhabi’s major attractions. It also offers a clutch of sophisticated restaurants and cafés and, with many more outlets set to open in the near future, its trendy vibe is only set to intensify.

Food souks The Mina Port district just beyond the eastern end of the Corniche plays host to some of Abu Dhabi’s more traditional souks. A journey off the beaten track is rewarded with the genuine hustle and bustle of some of the capital’s oldest market places. At the Carpet Souk, seasoned vendors have a lifetime’s experience and expertise to draw on, both in terms of offering customers advice and extracting a high price for their wares. Those who want to bag a bargain will need to haggle. Across the port, food takes centre stage at Al Mina Fruit & Vegetable Souk and the Fish Souk, both of which are fantastic sources of the freshest produce. It’s worth a trip here simply to soak up the atmosphere, but be sure to go early in the morning, when the food souks are at their liveliest as towards the middle of the day when the stock has been depleted, they tend to quieten down.
Al Ain

Perfectly positioned for a day trip, or even a weekend stopover, Al Ain is easily close enough to the capital to warrant a shopping sojourn. Less ostentatiously affected by the emirate’s hyper-modernisation, Abu Dhabi’s second city is perhaps an even more genuine site for traditional souks. Al Ain Souk has a reputation for

being charmingly ramshackle. Sometimes known as the Central Souk, it is perfect for picking up fresh spices, fruit and vegetables. Bartering is expected. At the other end of the scale is Souk Al Zafarana, Al Ain’s revamped and modernised market place where all manner of local merchandise can be picked up from traditional garments and scarves to Arabic coffee pots and incense. Leave time to spend an hour or two soaking up the spectacle at Al Ain Camel Souk, one of the emirate’s oldest market places. If not for the shopping opportunities, then definitely go along for the cultural experience as prized camels are paraded before local buyers in a trading ritual that dates back centuries.

Chef de cuisine Andrea Biccini’s taglierini with shrimp, langoustine, tomato and spicy garlic The dish: “I first made this dish with shrimp, langoustine, tomato and spicy garlic when I was living in Lebanon. As a country bordering the Mediterranean Sea, it reminded me of Italy and inspired the creation of this recipe, which represents the essence of Italian food – simple and delicious.” The recipe: “The first step is to prepare the shrimp and langoustine tails. I toast the shells in the oven before boiling them with herbs and vegetables to make a bisque. Fresh tomato, onion, garlic, basil and chili flakes are gently fried before the bisque is mixed in, seasoned and allowed to simmer for a short while. The langoustine tails are cooked at the end and served on top of the taglierini.” The result: “This dish is one of the most popular items on our menu at Frankie’s Italian restaurant and bar. People love it because it’s so tasty and light. Sometimes I like to give it a twist by adding vongole for example, but really this dish is best kept simple.”
The taste: “The delicacy and sweetness of the shrimp and langoustine is balanced by the spiciness of the garlic and chili, which together create a blast of flavours that are then absorbed by the pasta. Chef de cuisine Vitor Viegas’ seafood cataplana The dish: “My mother used to cook seafood cataplana all the time when I was growing up and helping her inspired me to create my own version. Making this dish transports me straight back to a typical evening in Portugal, sitting on the terrace with friends and family, overlooking the sea.”
The recipe: “Cataplana is a traditional speciality from Portugal’s Algarve region and can be prepared in many different variations. When I arrived in Abu Dhabi, I developed my version of the dish to include a cataplana with Portuguese spiced lamb, which is designed to suit local preferences and tastes.” The result: “The cataplana has been a huge success among the diners at Vasco’s. Executive chef Sandro Gamba’s sayad ceviche and tartar platter The dish: “In my last position, I used to travel the world all the time and it exposed me to a lot of new culinary ideas and techniques. One that really stands out was in Sao Paulo. Brazil is an extremely poor country and the people get a lot of their food from the ocean because it’s free. We often used to go to this tiny fishermen’s restaurant where the fish was literally caught an hour before you ate it. The chefs would cut off the good fillets and put these aside for the wealthy and use the scraps to make a tartar for themselves. It was the most delicious thing, so I decided to do it here, though obviously I use the best fillets rather than the scraps.” The recipe: “The fish we use depends on the catch of the day, but there are always three kinds of tartar served with this dish. One is more Asiatic with ginger and soy sauce, while another is Provençal style with olives, balsamic and olive oil. The last one we try to keep very clean.”
The result: “Presentation is incredibly important in cooking as you eat with your eyes first before tasting with your mouth. This dish is served on a beautiful glass tray and looks extremely stylish. Chef Filiberto Carta’s radicchio and red wine risotto with duck liver and apple The dish: “This recipe is very close to my heart as it originates from Florence, Italy, where I lived and worked for many years. There, the rice is normally cooked in white wine, but I prefer to use red as it complements the radiccio, pecorino and foie gras. The flavours are typical of the Toscana region and the dish as a whole offers a rich blend of cheese, red wine and game meat.”
The recipe: “The preparation of this dish is simple, but it is vital to remember one thing – the ingredients must always be fresh. In my recipe, I have added apples to give a slightly sweet, more caramelised taste and the foie gras to balance the strong flavours.” The result: “Abu Dhabi is a city of culture and fine taste. People here enjoy a good meal and appreciate the taste and art involved in making it. They come to Boccaccio for three reasons, all of which are encapsulated within this dish: real Italian cuisine with a novel spin produced by chefs with a passion for good food.” The taste: “This dish takes you on a culinary journey through the flavours of each ingredient. The first bite rewards you with the strong taste of foie gras, slightly dampened by the equally robust flavour of pecorino cheese. After this comes the hint of caramel from the apple and finally the softness of a good red wine.”

Executive chef Pierre-Oliver Petit’s zataar salmon roll and cumin freekeh with vine leaf and mutabel The dish: “This recipe has accompanied me around the world for 12 years now through Paris, New York, the Seychelles, Morocco, Portugal and the UAE, so I call it my chameleon dish. It started in Paris when I was cooking Asian-Mediterranean fusion food and was originally a Thai crispy black sesame and basil tuna roll that has now been adapted for each culture I have lived in, although the technique has remained essentially the same.” The recipe: “The preparation is relatively simple. I slice a salmon fillet into four large portions, stuff it with fresh zataar and seasoning, then roll it in zataar powder and wrap it all tightly
in a nori sheet followed by a spring roll sheet. Meanwhile the freekeh is cooked with sliced onion, olive oil, water, cumin and fresh thyme before I use it to dress the pan-fried salmon and serve it all with mutabel.” The result: “The great thing about this recipe is that, because it is a fusion dish, I can alter it wherever I go to suit local tastes. TAKE A DIP One of the region’s oldest food types, hummous is served with almost everything at the capital’s Arabic restaurants Go to any Arabic restaurant in Abu Dhabi and the likelihood is that one of the first dishes on the menu will be hummous. Rich and tasty, but simultaneously healthy and nutritious, the popular dip is a local staple and Arabic food in the capital simply wouldn’t be the same without it. Although it’s now widely available everywhere, from Europe to Asia, hummous originally hailed from this part of the world and arguably tastes better with Middle Eastern food than it does with anything else.
A typical starter is the Arabic mezze, a mix of several dishes shared by everyone at the table, including salads, breads, savoury pastries and, crucially, hummous
Many believe hummous to be an ancient dish and claim it was consumed by early civilisations, pointing towards famous historical figures like Saladin, who was reputed to have eaten it. Proof of such early origins, however, is scanty and while the main ingredient, chickpeas, were certainly eaten in ancient times, the earliest documented recipe for hummous does not appear until the medieval period. Several cookbooks published in Cairo in the 13th century describe something similar to modern day hummous. One details a cold purée of chickpeas and vinegar with pickled lemons, herbs, spices and oil, while another, described as hummous kasa, is based on chickpeas blended with tahini, herbs, spices and nuts. Today, hummous recipes vary from chef to chef, but the traditional ingredients include chickpeas puréed with garlic, olive oil, tahini, lemon juice and different blends of spices. In Abu Dhabi’s Arabic restaurants, hummous is served with everything from
pickled vegetables to grilled meat. A typical starter here is the Arabic mezze, a mix of several dishes shared by everyone at the table, including salads, breads, savoury pastries and, crucially, hummous. Various other dips such as moutabal, a spicy eggplant dip and baba ganoush, a tomato and eggplant blend, might also be served. Most Arabic restaurants here will also offer interesting variations like hummous sprinkled with toasted pine nuts and paprika or topped with fried lamb and fresh herbs. Sometimes it arrives heavily dowsed with fragrant olive oil and spices, while other restaurants prefer to let the original flavours speak for themselves. As a general rule, UAE hummous tends to be smoother and creamier than is often found elsewhere, but it really does depend. If you find it’s not to your taste in one restaurant, don’t be put off ordering it again in the next as the chances are the flavour and texture will be a different variation.

HISTORIC BUILDINGS Sightseers are spoilt for choice as Abu Dhabi is peppered with historic landmarks. Make sure you pay a visit to Qasr Al Hosn Fort, constructed in the 18th century and symbolising the development of the emirate and its rulers. Al Jahili Fort in Al Ain is also well worth a visit. It houses a permanent exhibition devoted to the explorer and traveller Mubarak bin London (Wilfred Thesiger) who crossed the Empty Quarter twice in the 1940s, as well as a temporary exhibition space, a shop and a café.

Smoking shisha (hubbly bubbly) is very popular in Abu Dhabi. The Middle Eastern water pipe, which is thought to have originated around 500 years ago, purifies and cools the smoke from flavoured tobacco heated on top of the pipe by coals. It costs approximately AED35 to AED50 to smoke and the most popular flavours are apple, mint, strawberry, apricot and grape. Although relaxing and sociable, estimates suggest that an hour of shisha smoking equates to inhaling as many as 50 cigarettes. If you’re after an authentic taste of Middle Eastern culture, however, smoking shisha is a must. Just remember not to inhale too deeply, blow down the pipe to get rid of smoke build-up in the water and share your shisha among friends. This is a social tradition and to be enjoyed in groups or couples.

Abu Dhabi is a city constantly on the go. I’ve been based here for three years now and have never had a moment’s boredom – there is always something new to do. Different events take place every night of the week so my social life is extremely varied. During the week I run the social e-business iloveuae.ae and volunteer my time at the Emirates Cancer Foundation, which I also founded. Recently, I left my stable job as a neuroscientist and coordinator in a hospital to pursue my passion for films and acting. I have now finished my first film – Half Emirati – and am working on a feature documentary entitled The Brain That Sings. After splitting my time between so many activites during the week, I find one of the best ways to wind down is to take advantage of the lovely weather and spend an afternoon relaxing by the pool. Nothing beats soaking up the sun by a hotel swimming pool with a good book. In the evenings, I might go to a friend’s house for dinner and a film or head to one of my favourite restaurants. I spent my first two years here living in hotels so I think I can safely say that I have eaten at
every hotel restaurant in Abu Dhabi. One of my favourites is Hakkasan at Emirates Palace. It’s an excellent choice for any food connoisseur as the menu is constantly evolving and there is always a new surprise. For something more low key, I’d recommend Hickory’s at Yas Links Golf Club. Situated in a serene Andalucian villa overlooking the golf course, it’s another great little hideaway with a casual vibe and simple, but tasty, food. When friends visit from abroad, I’ll take them over to Al Arish in Al Dhafrah Tourist Village by the Mina fish market. It’s a real hidden gem: great value, a laidback atmosphere and a whole spread of local salads, breads, soups, mains and seafood to choose from. Local places like these offer visitors real insight into Emirati culture and way of life. In fact, one of the best ways to get to know Abu Dhabi is to befriend a local. Some visitors seem afraid of approaching us, especially when we’re in traditional dress, but we’re actually really friendly and will happily show you all the places you need to see to understand our culture and make the most of this vibrant city.
