Sheikh Zayed Grand Mosque The third-largest mosque in the world is home to the world’s biggest hand-knotted carpet, numerous 24-carat gold chandeliers, 82 domes and over 1,000 columns and these are just some of Sheikh Zayed Grand Mosque’s credentials. Yet despite the impressive inventory of valuable materials used to build this enormous and beautiful place of worship, it is what the mosque stands for that makes it so interesting to visitors and the outside world. This is the final resting place of the late Sheikh Zayed, former ruler of the UAE, whose wish it was that the mosque should serve as a symbol of unity between people of different cultures and provide a source of understanding about the Islamic faith. It’s one of the few mosques in the UAE that is open to non-Muslims, who can explore it at their leisure, join informative guided tours and develop an understanding of Islam and Emirati culture at the education centre. Abu Dhabi is a hugely diverse destination with a wealth of attractions for all interests. Visitors who want to gain a cultural perspective can head to the Heritage Village, which offers a glimpse into traditional lifestyles in Abu Dhabi. For those looking to take advantage of the retail opportunities here, I would recommend Marina Mall, which houses a variety of shopping options from high street fashion to international designer names like Louis Vuitton and Chanel. From an athletic point of view, I would suggest a day at Al Forsan International Sports Resort, which boasts an impressive combination of world-class sports facilities, including go-karting, paintballing, shooting, an equestrian centre, water sports and more. If it’s one-of-a-kind leisure attractions they seek, I always advise visitors to the capital to experience Ferrari World Abu Dhabi, where the fastest rollercoaster on the planet is located. In the evenings, they can head out to explore some of the city’s many five-star eateries. I particulary recommend French fine dining restaurant, Bord Eau, where adventurous diners can sample chef Alexandre Pernetta’s seasonal blind tasting menu, or select one of the delicious dishes from his gourmet à la carte options. To taste some of the best local Arabian cuisine, head to Abdel Wahab in Souk Qaryat al Beri, which serves delicious Lebanese fare and is a popular choice among locals and expats. The Souk is an excellent way to combine culture and lesiure in Abu Dhabi as shoppers can browse an array of wares that range from designer clothes to local handicrafts in the setting of a traditional Arabian marketplace.

Good food tastes even better when eaten in a stunning setting and this perfectly situated Southeast Asian eaterie is proof of that. Appropriately named Sontaya, which means sunset in Thai, the restaurant sits on a deck facing out to sea and offers terrace seating accompanied by uninterrupted views of the ocean. Homestyle Asian cooking is the focus here, with a delectable Sontaya duck red curry, Singapore-style poached chicken and softly-spiced Laksa soup are among the choices on the creative menu. Running the full length of the island’s northern face, the Corniche is the beating heart of the city. Simply put, Abu Dhabi would not be the same without it. The beach here is often used by the city as a venue for events, such as concerts and athletic competitions. During the day the eight-kilometre promenade is populated by cyclists, joggers and people out for a stroll. Cafés and parks are dotted along the stretch, which affords stunning views of the ocean, particularly at sunrise and sunset. Another great way to enjoy the Corniche is to board a boat and cruise along the length. A number of tour companies, including Capt. Tony’s (02 6507175) and Art Marine (04 3388955), as well as several hotels, including Sheraton Abu Dhabi Hotel & Resort and Hilton Abu Dhabi offer Corniche cruises. An emirate on the verge of development, Fujairah is still a peaceful retreat from hectic city life, fronted by a vast expanse of ocean with the impressive Hajar mountain range as the backdrop. The main town is a low-rise destination with a mixture of casual restaurants and cosy hotels. Further along the coast are five-star beach resorts, making it a popular weekend spot for city escapees and visiting tourists. The emirate is a major magnet for scuba diving fans thanks to its numerous coral reefs, which are a haven for marine life on the east coast, including sharks, turtles and rays. There are also several historical sites to see, including a 300-year-old fort, the oldest mosque in the UAE at Al Bidayah and the remains of ancient watchtowers dotted around, which are easily reached by car, bike or on foot.

The first man-made white water rafting, kayaking and surfing venue in the Middle East, Wadi Adventure is situated in the foothills of the soaring Jebel Hafeet, which provides a dramatic backdrop for the park’s fast-paced attractions. In recent months, it has become a popular training ground for Olympic rafters, who come from all over the world to train at the challenging course here, which offers a variety of routes to suit all abilities. Built in 1898 to serve as a summer residence for the ruling family, Jahili Fort harks back to Abu Dhabi in its pre-oil days. Abu Dhabi’s reputation for rapid modernisation and avant-garde architecture precedes it but knowledge of the emirate’s indigenous, natural attractions is less widespread. While international headlines highlight the UAE capital’s great strides in structural development, local efforts are increasingly focused on preserving Abu Dhabi’s native environment. With vast desert landscapes, lush oases, mile upon mile of pristine coastline and over 200 natural islands surrounded by azure waters rich in marine life, Abu Dhabi has ample reason to ensure that its natural assets are nurtured for present and future generations to enjoy. Plans to address the emirate’s environmental concerns are outlined in the Abu Dhabi Environment Vision, which is part of the broader Vision 2030. Tree-planting programmes are now underway all over the emirate and protected areas have been established to restrict construction and other disturbances to precious plant and animal life. The capital has also established two major nature reserves, one in Al Ain and another on the up-and-coming Sir Bani Yas Island, which is spearheading the capital’s eco-tourism drive. Now, local tour companies are embracing the trend with eco-conscious excursions that offer visitors an opportunity to see the capital’s natural wonders without leaving a mark on the landscape.

Eco-sports One area where the eco-drive has met with notable success is in water-based tours and adventure activities. Kayaking, canoeing and a new sport, stand-up paddle boarding have become extremely popular among residents and visitors eager to explore the capital’s waterways without inflicting damage. Stand-up paddle boarding, or SUP, as it’s becoming known, is an old Hawaiin sport that has seen a recent resurgence of popularity. “Green tourism is definitely on the rise in Abu Dhabi and these days it is something that people not only want but expect,” says Jen Scully, founder of Abu Dhabi Stand Up Paddle Club. “People really enjoy the zen-like experience of paddling gently through the mangroves while admiring the nature and wildlife. It’s a great way to connect with the surroundings without hurting the mangroves or the animals that live in them. The boards have zero emissions, are driven by a human engine, fuelled by food and make almost no noise. It’s perfect for the eco-conscious visitor.” Another tour company that offers eco-friendly water activities is Noukhada Adventure, which runs SUP, kayaking and sailing excursions through the mangroves. “We have certainly seen an increase in popularity in what we do here. There’s a pent-up demand to see the
capital’s coastline and wildlife and we are delighted to deliver our tours in a way that does very little harm to the environment,” says Mark Freeman, owner of Noukhada Adventure Company. Away from the water, visitors who want an eco-friendly experience of the local environment can try hiking, trail biking or blo-karting, where engine-free karts are propelled along the land by wind and sail. Almost all the capital’s natural attractions can be explored in a footprint-free way, whether it’s blo-karting around Yas Island, hiking through the desert, kayaking through the mangroves or stand-up paddle boarding along the shore by the Corniche.

Saadiyat Island One of the capital’s most fiercely-guarded sites is the new Saadiyat Beach area. The island may be under heavy development but strict regulations govern construction near the coast and engine-driven watersports are banned on surrounding waters. The nine-kilometre stretch of beach, hailed as one of the most beautiful in the UAE, regularly plays host to Hawksbill turtles who live in the shallows offshore and come here to nest.

Another place to see wildlife on Saadiyat Island is the golf course. In addition to turtles, golfers can spot gazelles, dolphins and more than 50 species of bird, including the Siberian Stonechat, European Bee Eater and Yellow Wagtail while playing a round at Saadiyat Beach Gold Club. Providing an environment where these creatures can thrive has been central to the club’s philosophy from day one. “Strict environmental guidelines governed the design of Saadiyat Beach Golf Club, which was built with great sensitivity to the landscape in order to ensure that natural habitats would be preserved and encouraged. It is something we are fully committed to,” says Andrew Whittaker, group director of agronomy for Troon Golf Abu Dhabi, which manages Saadiyat Beach Golf Club.

Sir Bani Yas The biggest natural island in the UAE, Sir Bani Yas is home to one of Arabia’s largest wildlife parks where more than 10,000 animals roam free, a number of which are critically endangered and extremely rare. One such creature is the Arabian Oryx, a breed that is now extinct in the wild but has been carefully nurtured on Sir Bani Yas, which is now home to a herd of around 500 Other animals that coexist harmoniously on the park’s wide, open plains include gazelles, emus, giraffes, Arabian leopards and an enormous variety of birds with some 170 species spotted here over the years. Dawn of a new era The foundation of a collection spanning countries and centuries will be unveiled this month at an exhibition of works for the new Louvre Abu Dhabi on Saadiyat Island

At present Abu Dhabi is not widely known for its position in the art world. Over recent years, the UAE capital has attracted international attention with its high-profile projects and impressive facilities, securing a reputation as a major destination for sport, leisure and five-star luxury. So far, art and culture have not emerged as reasons in their own right to visit the emirate but that is all about to change. Over the next few years, developers will be busy transforming the up-andcoming Saadiyat Island into an international destination for art and culture, populated by some of the world’s most high-profile museums and learning institutions. Already, work is underway on the first major museum project, the Louvre Abu Dhabi. This will be the only installment to date of the historic Parisian gallery overseas and there could hardly be a more prestigious name to blaze the trail for the capital’s new culture hub. Designed by Pritzker prize-winning architect, Jean Nouvel, t he impressive structure will be the first universal museum in the Arab world, housing artwork that reaches back millennia and across continents. When completed in 2015, the museum is expected to provide a place for cross-cultural dialogue and a link between the art worlds of the east
and west. This month, visitors will have the opportunity to explore the future collection and gain a deeper insight into the project at a new exhibition entitled, Birth of a Museum. On display will be almost 130 works acquired by the museum to date. Among these is a sculpture of a Bactrian Princess from the third millennium BCE, a golden bracelet from the Middle East that dates back around 3000 years and a number of paintings, including The Good Samaritan by Jacob Jordaens, one of the 17th century

a few years time. The multi-disciplinary nature of artistic creation and questions surrounding the status of the work of art will also be explored at the show this month. The aim of this exhibition, says Tahnoon al Nahyan, chairman of Abu Dhabi Tourism & Culture Authority (TCA Abu Dhabi), is to give people a better idea of the museum’s ambience and aesthetics and to begin to tell the story of its birth. “The whole exhibition is another chance for visitors from the UAE and abroad to see the remarkable art works in the Louvre Abu Dhabi’s permanent collection as we prepare for the museum’s opening,” he adds. This will be the thirteenth exhibition to take place at Manarat al Saadiyat in anticipation of the new museums set to open in Saadiyat Cultural District over the coming years. The Louvre Abu Dhabi will be the first of several much-anticipated launches with the Zayed National Museum due to open in 2016 and the Guggenheim Abu Dhabi, scheduled for 2017, to follow. Later on the Performing Arts Centre and Maritime Museum will complete the picture. For now though, the focus is on the Louvre Abu Dhabi where work has already begun to build the foundations. The finished structure will be a piece of art

in itself with white walls ornamented by ever-changing patterns resulting from rays of sunlight streaming in through the latticed roof. Stroke of genius Centuries of expertise have been handed down the generations to preserve the ancient art of calligraphy. Concierge explores the roots of this treasured tradition If you’ve ever had the pleasure of watching a calligrapher at work, you will have gained an insight into the serenity of this ancient art form. It is both a peaceful and thoughtful endeavour as the artist contemplates each inky black stroke to create wonderful works of art. The word ‘calligraphy’ originates from the Greek meaning ‘beautiful writing’, elevating the written word to so much more than a functional activity. Calligraphy comes in a variety of forms from west to east, incorporating Arabic styles that date as far back as 2000BCE with early examples found in cave paintings. Long before the printing press, calligraphy was used to form early publications, painstakingly created by etching ink onto parchment by quill. Some of the finest calligraphy appears on formal documentation and legal decrees, while the script adorns a wide range of material from early earthenware to building interiors. Nowadays, these unique handwriting styles are works of fine art in their own right. It takes decades of practise to become a calligrapher and for UAE artist Majid Alyousef, it is a lifelong passion. “I started at a very young age, he says. “I remember the first time I used a calligraphy pen and tried to work on the alphabet when I was eight years old. It is an ongoing process like all other arts – you keep learning over the years. I started with the traditional method developed by master calligraphers and worked out my way later on. I did not have a mentor, so I had to come up with my own training and learning solutions, while at the same time focusing on mastering the most difficult classical calligraphy styles.”

In the Arab world, calligraphy occupies a special space because it developed alongside Islam and was used to document the Qur’an
Majid experiments with more modern styles of calligraphy, but recommends that any learner start out with the classical types. “Most calligraphers, especially beginners, like modern styles that look good but are not extremely difficult to master. Young artists tend to learn them to make pieces in a short time with a lot of creative flexibility. Classical calligraphy is difficult, but to be really good in any modern style you have to start with the classics to understand the basic rules of aesthetics and then develop your own style.” In the Arab world, calligraphy occupies a special space because it developed alongside Islam and was used to document the Qur’an. Arabic Script Calligraphy, more commonly known as Islamic Calligraphy, encompasses all works by Muslim practitioners of the craft from Morocco to China. Beautiful examples of this special script can be seen throughout the UAE, particularly on mosque ceilings, in interior design and in advertising and corporate branding. Traditionally, Islamic Calligraphy is drawn using a carved reed pen and there are several styles within the genre, each with distinct shapes and characteristics. Mastering Islamic Calligraphy clearly means mastering the Arabic alphabet, which is a script of 28 letters distinguished

by a dot or dots placed above or below the letter. There are around 20 different types of Islamic Calligraphy though not all are still in regular use. The three main styles are Kufic, Naskh and Thuluth. Kufic is a geometric style characterised by horizontal, sharp lines. It was originally developed for writing on stone and used in early religious texts because of its formal style, but has now all but disappeared. Naskh is a more cursive calligraphy style that appeared in the 10 th century and replaced geometric variants such as Kufic as it was easier to both read and write. The style is distinct with neat and compact letters that lean slightly to the left. It is the most widespread of the scripts in Islamic Calligraphy, used in Qur’ans and official documentation and is the most common font in printed Arabic today. The third style is Thuluth where one-third of each letter slopes. Large and elegant, Thuluth was used in medieval times for mosque decorations and is still in use today, often written in conjunction with Naskh. It is seen most often in deeds and architectural inscriptions.
Distinct from these formal styles, the 17th century brought a more pictorial form of Islamic Calligraphy known as Calligrams. A word, phrase or poem is written in a specific order to create an image that also represents the word’s meaning. Common Calligrams include swords, mosques, ships and praying men. These unique scripts are traditionally seen on the fringes of pure Islamic Calligraphy and as such aren’t exhibited

in mosques, but can still be seen today in modern corporate logos. Aside from the three main styles, Diwani is also prevalent and is a prized style among the art world. With two variants, this cursive style is sweeping and intertwined. Riq’a Diwani style can be identified by its curved lettering but little decoration compared to the more elaborate Diwani Jali variation. Majid, who is originally from Saudi Arabia but has been a UAE resident for the past 11 years, favours the traditional Thuluth form. “Thuluth is the style I practise most. It is also the most difficult to learn and the most prestigious form of calligraphy. It took me several years to master it,” he explains. Based at his Dubai workshop, Majid uses traditional tools such as reed and bamboo pens, inks and handmade paper. For more experimental work, he turns to canvas and acrylic. For most calligraphers, the qalam reed pen is favoured over metal-tipped pens due to the flexibility provided by the reeds. The ink of choice is often black and made from soot, dissolved gum and water, which are poured into a small inkwell lined with raw silk fibres. By absorbing the liquid, the fibres allow the pen to lift the ink in smaller amounts,

avoiding blotting on the page. For important manuscripts such as the Qur’an, vibrant red and gold colours are used. The calligrapher’s original canvas was papyrus made from fresh-water reeds or parchment derived from animal skin. This changed in the 10th century when a cheaper canvas in the form of paper was introduced in the Middle East. Before beginning work, a calligrapher usually dyes the paper cream or tan, which fades slower than white, before using a tool to smooth the surface in preparation for the ink. Depending on the size and detail involved in a piece, it can take anything from a week to
several months to complete a specific work. Prices vary according to the number of man hours that have gone into a work, in addition to a number of other factors. “Prices are hard to estimate as each art piece has its own specifications. The size, material and complication of the piece have to be taken into account. Exclusivity also plays a large role in deciding the final price. It may be a few thousand or tens of thousands of dirhams in some cases,” says Majid. Learning to read these elegant scripts can take years and is a challenging yet rewarding enterprise. Experts recommend taking the time to try and recognise whole words first and then practise reading shapes and lines . With a number of workshops across Abu Dhabi now offering calligraphy classes, there are plenty of opportunities to learn. Majid, who has had exhibitions in the UAE and abroad, expresses high hopes that the calligraphy scene in the UAE will grow. “It is promising, there is a lot of investment in the exhibitions and events. With specialised and practising calligraphers leading the way, the future of calligraphy in this country could be very bright.”

The Cessna 208 seaplane accommodates eight passengers, or nine if one sits beside the pilot, and each seat is beside the window, offering unobstructed views of the journey. Guests board the plane from a pontoon behind the Yas Yacht Club and once seated the captain gives a short safety briefing. Within minutes the plane is skimming the flat turquoise water behind Yas Marina, speeding towards Ferrari World Abu Dhabi. Looping around, Yas Marina Circuit comes into view. This is where the Abu Dhabi Formula One Grand Prix is staged each November in front of a crowd of 50,000 spectators and an international television audience of up to 600 million. The 5.55-kilometre track winds around the picturesque Yas Marina and through the futuristic Yas Viceroy hotel. In the distance, a disc-shaped building stands out. Aldar HQ, home of Yas Island developer Aldar, is one of Abu Dhabi’s most distinctive structures and, together with Capital Gate (the tower with the world’s steepest incline) and Sheikh Zayed Grand Mosque, it is giving the city’s skyline international acclaim.

From Yas Island, the plane tracks the coastline between Abu Dhabi and Dubai, coursing past Ghantoot and Jebel Ali. Into the wild Concierge explores traditional ways of life in the UAE at the Arabian Nights desert camp in Al Khatem These days, it’s hard to imagine a time when life in Abu Dhabi was a daily grind and shelter was a makeshift tent or, at best, a simple barasti hut. Most people know the capital as a model of luxury living, home to some of the world’s most sophisticated venues and an ever-growing portfolio of architectural wonders. Each year brings the launch of more high-end hotels, restaurants and boutiques as international brands jostle for position at the capital’s latest hot spot.
It wasn’t always this way though. While younger residents enjoy the high standards of living conferred on them by the country’s success, some of the older inhabitants recall a very different time, when five-star hotels were an alien concept and luxury amounted to enough food and water for basic survival. Before the discovery of oil revolutionised the country’s fortunes and sparked the massive construction boom that is still underway today, life in the region
had changed very little over hundreds of years. Right up until the mid-20th century, locals were still living the simple, nomadic existence of the Bedouin, wandering from place to place and setting up camp wherever they could find water. Last month, Concierge was given the opportunity to get a taste of this bygone way of life with local tour operator, Arabian Nights. The company, which is behind the organisation of many key cultural events in the capital, launched its new heritage village last October. Set in the heart of the desert, off the road that runs between Abu Dhabi city and Al Ain, the atmospheric camp offers visitors the chance to experience the Abu Dhabi of old. The philosophy behind the Arabian Nights Village is to provide visitors and residents with a place to escape the clamour of the city and spend some time getting to know the desert. Of course, the carefully designed venue is nowhere near as stripped down as a real Bedouin encampment would have been, but as you step out of the tiny reception area into the main village

and take in the simple huts surrounded by miles and miles of untouched sand, a sense of calm descends. “Every desert has its own personality and we wanted to give people an opportunity to experience the mystery and beauty of this one and get a taste of what life would have looked and felt like for the Bedouin,” says Said Kasbo, commercial manager at Arabian Nights. With not a television in sight and technology kept to an absolute minimum, the village certainly allows you to do that. Guests can choose from four accommodation options based on different styles of

traditional housing across the region: tents, barasti huts, stone bungalows and wind towers. From the outside, these structures appear small and simple, reminiscent of original dwellings in the UAE. Inside, however, they are elegantly decorated and equipped with all basic necessities to create a comfortable environment that blends harmoniously with the natural surroundings. Other facilities at the village include the swimming pool, designed to represent a desert oasis and a tiny souk, which sells an array of regional wares, such as spices, Arabian perfumes, handicrafts and more. Shortly after sundown, waiters begin laying out the evening meal – a feast of traditional Arabian dishes that range from hummous and other Middle Eastern dips to spiced lamb and baked hammour. Guests help themselves before taking a seat on floor cushions and eating cross-legged in the customary Bedouin style accompanied by live oud music and belly dancing. In the morning, there’s time for a leisurely al fresco breakfast before the cars come at midday. There is no road leading directly to the village, which is tucked away among the dunes. The only way to reach it, except perhaps by camel, is to go in one of the company’s large fourwheel drive vehicles, which are equipped to handle the terrain. On the way, guests can experience one of the UAE’s more recent activities – dune bashing, where experienced drivers tackle the undulating sands head on in an exhilarating ride through the desert. Those who want to stay in tune with the authentic, Arabian vibe of the village can sign up for a camel ride over the neighbouring dunes. Up here, with nothing but the soft thud of the camel’s feet against the sand to break the silence, it really is possible to travel back in time and live, if only for a few short moments, the life of a Bedouin traveller.

relationship between the shopper and the brand and thereby invest the products with a personal as well as a market value. “The owner of a fine timepiece is looking for a watch with a story that they can share with friends and business partners and IWC provides fascinating background details for each model or collection,” he explains. Part of the expertise lies in possessing a thorough understanding of the client base. “All our customers have sophisticated tastes and a good knowledge of luxury products - they are well-travelled, familiar with the latest products in the Montblanc portfolio and appreciate the craftsmanship, attention to detail and uncompromising quality associated with every piece,” says Maxime Harrar, Montblanc regional director in the Middle East. our e-newsletter mailing list, who receive regular updates of the latest brand news and promotions each month. In addition, managers of the Roger Dubuis boutiques maintain a list of VIP clients who receive dedicated and personalised communication about their particular interests and products,” explains Berland. At Jaeger-Le Coultre, those that fall into a category the brand describes as ‘passionate connoisseurs’, are offered membership of the Unique Club. “We greet members personally in our boutiques and our CEO has regular gatherings with them when he travels the world. The club met recently in
Le Sentier, Switzerland and each member was given their own key, granting entry to the museum and lounge at La Maison d’Antoine, which they can visit at their pleasure to enjoy the stunning location and browse the newest collections before they reach the stores,” says Pretet. Other brands focus on providing exclusive services tailored to specific markets. The Montblanc boutique at Avenue is one of just five in the world where customers can take advantage of the bespoke nib option. “The service uses patented technology to capture and decipher the distinctive style and form of a customer’s writing. Towards the end of the 19 th century the daughter of a precious stones dealer, Estelle Arpels met Alfred Van Cleef, who was the son of a stone-cutter. Alfred and Estelle were married in 1896. The first boutique was founded in 1906 when Alfred joined forces with Estelle’s brother Charles. Among the first jewellers to settle in the esteemed Place Vendôme in Paris, the Van Cleef & Arpels boutique boasted an exceptional location directly opposite the Hôtel Ritz. The family business soon grew and over the years attracted world-wide acclaim.

A host of firsts in the world of luxury watchmaking were achieved. Among a number of milestone creations was the first watch with a leather strap in 1923. Van Cleef & Arpels also developed a groundbreaking gem-setting procedure known as the Mystery Setting patented in 1933. The revolutionary technique gives stones the impression they are free standing. To achieve the effect, each stone is set in such a way as to ensure no prongs are visible. Instead the stone is delicately inserted onto thin gold rails. An exceptional level of intricate craftmanship is required to achieve the unique setting with a single brooch taking around 300 hours to perfect. As a result, Mystery Setting pieces are extremely rare
with only a handful produced each year. Another major innovation was the Zip necklace in the mid-19th century. Crafted in round and baguette-cut diamonds and mounted platinum, the necklace was unveiled in 1951. An outstanding technical achievement, it soon gained iconic status. Alfred Van Cleef died in 1938, leaving his daughter Renée Rachel Puissant to take care of the company he founded. With a second generation at the helm, the company continued to prosper. In 1942 the Arpels family opened their first boutique in New York on Fifth Avenue. This boutique joined a host of the Maison’s boutiques which had opened across the world while Van Cleef & Arpels

went on to become the first French jeweller to open boutiques in Japan and China. With global expansion came a ringing endorsement from international icons who were soon adorned in the stunning jewels. For their engagement in 1956, H.S.H. Prince Rainier of Monaco gifted Grace Kelly a Van Cleef & Arpels jewellery set in pearls and diamonds. Jacqueline Kennedy Onassis and Elizabeth Taylor were also avid fans of the Maison’s stunning creations. The dynamism that saw the establishment of this now legendary jewellery house has also seen it transcend the decades. Farming has never been easy in the UAE. Early settlers in the region faced a hostile environment, where little water and poor soil produced barely enough to live on. These days, the reliance on farming has shifted to food imports as, with a population of millions rather than thousands, produce is shipped in daily to meet demand. This includes a taste for culinary delicacies, which sees the worldâ&#x20AC;&#x2122;s rarest and most coveted ingredients brought to the UAE. Royal beluga caviar, fois gras, kobe beef, truffles and oysters are all regular features on fine dining menus in the capitalâ&#x20AC;&#x2122;s five-star restaurants. Few pause to think, however, exactly how far these ingredients have travelled and how this has impacted the environment as well as the freshness and quality of the ingredients. Caviar from the Caspian Sea undergoes a 1,800-kilometre journey to get here, kobe beef has flown 7,700 kilometres from Japan and Sydney rock oysters have travelled 12,000 kilometres to make it to your plate in Abu Dhabi.

Back to Basics As environmental concerns increase, focus is increasingly placed on determining which ingredients can be grown successfully in the UAE and how this fresh produce can be used to create stunning dishes at some of Abu Dhabi’s finest restaurants. More and more, hotels, chefs and diners are looking for locally produced and sustainable ingredients on the menu for a truly authentic taste of the Middle East. The Abu Dhabi Farmers’ Services Centre (ADFSC) works to change public perception about local agriculture. “What many people don’t realise is that Abu Dhabi has thousands of farms many of which
have been active for decades, says Chris Hirst, CEO of ADFSC. However, in the past little of this made it to people’s tables because there wasn’t an efficient system in place to get the produce to the store. There was also a general public misconception that local produce was somehow inferior to that grown overseas.” The organisation has created the ‘Local Harvest’ brand to publicise and confirm sustainability from locally grown products. Not only does this ensure consistence of quality and availability, it also reassures the buyer that social sustainability is maintained by returning income from sales to the farmers and the community.
A major issue for farmers here is of course water. In an effort to overcome this hurdle, ADFSC actively pursue agricultural projects that require less water, irrigate crops more efficiently and use water recycling measures to boost the amount of food production in the emirate. “Perhaps most promising are the changes being implemented by forwardthinking farmers passionate to do what they can to help the process along—most notably, hydroponics, which can cut down on water use by as much as 80 percent,” says Hirst. By promoting effective techniques, using the right technology and educating farmers, the hope is that we will be seeing more and more locally grown ingredients on menus and at home in years to come, he adds.

Choose Wisely It’s not always the case that sourcing local produce means the food is sustainable, however. The well-documented overfishing of hammour, a fish native to these shores, has seen many restaurants take the conscious decision to remove the endangered species from their menus. Once abundant in local waters, the breed is now struggling to keep its numbers up after being over-fished seven times above the rate that would allow the stocks to naturally replenish. Whilst there are still many restaurants serving hammour on their menus, some hotels, including Le Royal Méridien Abu Dhabi, are partnering with the Emirates Wildlife Society and World Wide Fund for Nature (EWS-WWF) to work towards maintaining precious marine resources through the ‘Choose Wisely’ campaign. Leading the way in identifying and assuring sustainable seafood sourcing, Choose Wisely suggests local varieties of sea bream and snapper as alternatives to the dwindling hammour.
Abu Dhabi Gourmet Stars In an effort to publicise the importance of using sustainable and locally sourced ingredients, the prestigious Abu Dhabi Gourmet Stars Awards added two additional honours to its list of accolades this year. A new award for ‘best use of local ingredients by a chef’ went to Chef Nicolas Perz for his

delicious creations in the kitchens of Hyatt Capital Gate Abu Dhabi, while another was awarded to Fairmont Bab al Bahr for ‘best sustainable practice.’ Chef Perz expressed hopes that winning the award will make the hotel’s partnerships with local suppliers more durable. Describing the Hyatt Food Philosophy as ‘Food. Thoughtfully sourced. Carefully served,’ he said that the hotel utilises, “sustainable goods from our local farmers and producers for all our current and future recipes.” Local vegetables and honey from a nearby organic farm can be found on the menu at signature restaurant 18 Degrees along with the dish that won Chef Perz his award – Choose Wisely Halwayo fish wrapped in Kunafa dough, camel milk and sweet potato mash. Cladys Magagna, executive chef at the Fairmont Bab Al Bahr was equally thrilled with the accolade, saying, “We are honoured to have been awarded ‘best sustainable practice’ by Gourmet Abu Dhabi and hope to continue to inspire industry-wide commitment in embracing sustainable development as a standard practice to help preserve our global and local environments and cultures.” Sustainable and local options have been added to menus throughout the hotel including the multi-award winning Marco Pierre White Steakhouse & Grill and Frankie’s Italian Restaurant & Bar, as well as the all-day dining destination CuiScene. Sustainably sourced lamb, beetroot, cucumber, baking potato, onion, garlic, fresh local radiccio, and local red plums are artfully
crafted into mouth-watering dishes along with EWS-WWF fish sourced through the Choose Wisely campaign. Not only does this produce support local communities, but, as Magagna points out, “local foods always taste much fresher as they don’t have to travel long distances before arriving on your plate. Products that travel far are older and have often been frozen, which diminishes the flavour. Additionally, food that is exported is often sprayed with insecticides and other chemicals to maintain colour and is usually genetically modified. Local food, on the other hand, preserves genetic diversity so there is greater choice and consequently more flavours to choose from”.

Chris Hirst explains that the organisation is “expanding our network of ADFSC Souqs, which are geared toward products that have been raised, grown, manufactured or processed in the UAE. These stores will always have a wide selection of our Local Harvest products. What’s more, we’re partnering with supermarkets throughout the UAE to make Local Harvest more widely available and therefore doing what we can to appeal to the public’s growing demand for locally produced food”. Here, no cost is spared to source the very best cuts of beef to create a gourmet steak dinner. “It starts with purchasing the best breeds of beef in the world, which in my opinion is either Blackmore Wagyu from Australia or Orkney beef from Scotland. We maintain a very good relationship with our supplier of the beef and this is very important since we know the cattle’s origin, what they are fed and the quality of the farm,” says Lee Murdoch, chef de cuisine at the restaurant. The most popular dish on the menu is Wagyu steak. Murdoch attributes this success to high quality marbling combined with a unique roasting method which gives the meat an alluring smoky flavor. The restaurant’s prize steak is a 28-days dry-aged côte de boeuf. “This is the best cut we have. We cook it on the bone with just a little piece of fat kept on, which makes for very succulent
and tantalizing dish,” Murdoch says. Flavouring is applied carefully at 55&5th to avoid overwhelming the flavour of the premium-grade meat. “I don’t believe in marinating, if you have a good product then it speaks for itself. After a little seasoning with salt and pepper it is ready to roast, preferably in a Josper oven over oak and natural coal, occasionally basting it with butter. Once it is cooked to preference it is very important to let the meat rest. Rodeo Drive As Abu Dhabi’s very first steak house, some may assume that Rodeo Grill might struggle to keep up with some of the capital’s newer fine-dining restaurants. However, as soon as diners lay eyes on the mouthwatering menu they will quickly see that this is traditional dining at its best. “At Rodeo Grill we add extra touches such as the large and comfortable leather chairs and brick walls to create the ‘gentleman-like feel of a traditional steak house,” says chef Ilker. From Oak wood-smoked Scottish salmon to Seared diver scallops served with pea, mint puree and lemon confit marmalade, the starters stimulate the appetite and prepare you for more culinary delights to come, namely, some of the best steak in town. “Our Wagyu Tenderloin Marble Grade 9 is a favourite among our guests,”

Located on the ground floor of the Fairmont Bab Al Bahr, the popular haunt owes its success to a combination of fine fare and impeccable service in addition to a firm focus on, “quality product, passion, finesse and imagination,” says chef de cuisine, Wesley Tyron Berghoff. The grill options are divided into country of origin, cut and weight and served with a choice of freshly prepared sauces, including a mouth-watering truffle sauce and the punchy green peppercorn and Cognac drizzle. I have lived in Abu Dhabi for fourteen years and hope to stay here all my life. No other country in the world provides for its people the way that the UAE does and the support we receive from our leaders is phenomenal. It makes me want to give back, which is why I decided to launch Inspire Sports Management, and share my passion for a healthy lifestyle with the women and children of this country. Life in Abu Dhabi is never dull as there’s always a big event on the horizon or another major project nearing completion. Of the many new areas currently being developed in the capital, my favourites are Yas and Reem Islands. Yas Island offers a huge number of world-class entertainment facilities and is only ten minutes away so it’s perfect for family activities on the weekends, while Reem Island is almost complete and looks beautiful. I have been playing sport all my life and one of the many advantages of working out every day is that I can really enjoy going out and trying all the fabulous meals available in this city. Hakkasan in Emirates Palace is one venue that never disappoints as the service is fantastic and the food is superb while Quest in Etihad Towers is a new obsession of mine - the view and the food are both incredible. At lunchtime, I tend to choose somewhere that offers healthy cuisine, like Jones the Grocer or Café Arabia. These two are particular favourites for me as they offer a variety of healthy dishes in a casual, homely environment. On weekends I like to get together with my extended family for lunch and catch up with my aunts and sisters-in-law, then perhaps take the kids to the movies or the mall. Shopping centres in Abu Dhabi are a great way to gain an understanding of the culture here simply because they show the melting pot of nationalities that make up the city’s society.
