Legacy building In little over half a century Abu Dhabi has transitioned from a sleepy coastal settlement to an architect’s playground, where cultural emblems meet contemporary vision
Q W O R D S B Y C l a i r e M a l co l m
For visitors to the UAE capital, Abu Dhabi is an intriguing blend of old meets new, and nowhere is this more exemplified than in the emirate’s emerging skyline. From the new suburbs creeping outwards onto reclaimed islands, to the island’s commercial heart, there’s a surprise on every street corner. Some of the biggest names in the architectural world have been drafted in to create an urban plan that encompasses traditional cultural values and design signatures as well as jaw-dropping feats of engineering. While iconic emblems such as the 200-year-old Maqtaa Fort and Al Hosn Palace form part of the government’s commitment to cultural preservation, new super structures including the world record-breaking Capital Gate tower and Ferrari World theme park are breaking the architectural mould. Abu Dhabi has seen a more measured pace of development than some of its neighbours and under the government’s ambitious Abu Dhabi Vision 2030 plan, the desire to build a city for future generations to enjoy is being founded on solid principles of sustainability and practical purpose.

GOLDEN OLDIES For a reminder of Abu Dhabi long before oil and per-capita wealth changed the physical face of the emirate, keep an eye out for the city’s main historic landmark – Al Hosn Palace, or White Fort as it’s also known. Currently part of a wider redevelopment project, Al Hosn Palace – which was built around 1760 – symbolises the political and historical development of the emirate and its rulers and was originally just a simple watchtower built to stand guard over the city. The 200-year-old Maqtaa Fort, which still stands proudly in the shadow of the bridges connecting the mainland to the island city, was similarly used as a watchtower to protect Abu Dhabi against hostile invaders.

Hospitality with a twist Located on the outskirts of Abu Dhabi city and connected to the Abu Dhabi National Exhibition Centre, the twisting Capital Gate tower is one of the more head-turning additions to the emirate’s growing collection of iconic buildings. At 160 metres, the 35-storey tower leans a dramatic 18 degrees, making it officially the world’s furthest leaning manmade tower – four times that of the Leaning Tower of Pisa. Home to the five-star Hyatt Capital Gate, as well as 15,000 square metres of office space, running a luxury hotel operation in such an unusual building comes with its own unique challenges, as Desiree Graesslin, marketing manager for the hotel, explains: “The hotel is anything but normal with each room a different shape and size. Because of this we had to custom build a lot of in-room furniture, such as the wardrobes.”
Developed by RMJM architects, the engineering k now-how required to const r uct a leaning tower that would hold its own ground, was a challenge in itself. “Due to the building’s lean, the team on the project was forced to think out of the box technically and practically,” reveals Graesslin. “As such, the outer and inner diagrids were built first, followed by an exoskeleton incorporating 728 unique custom-made diamond-shaped glazing panels. Unlike normal building projects the glass windows form the frame and support of the building. This meant that all items inside the hotel had to be custom built on each f loor or taken up through the elevators,” she adds. The end result internally includes a dramatic light-filled atrium as well as several signature outlets such as the 18° restaurant, which is the first point in the property where the lean is immediately apparent.

Religious revival It’s not just modern buildings that are drawing attention to the city. One of the topranking tourist attractions is the stunning Sheikh Zayed Grand Mosque, which was 11 years in the making and now forms the centrepiece of the city’s cultural legacy. Professor Robert Hillenbrand, Professor Emeritus of Islamic Art and Architecture at the University of Edinburgh, is the author of a new book about the mosque and has lectured on its design. “The design team responsible studied traditional Islamic architecture with the aim of creating something new. They took forms, motifs and techniques from Muslim Spain, the Maghreb, Syria, Turkey, Iran and the Indo-Pakistan subcontinent, and reworked them in new ways,” he remarks. Originally designed in the Moroccan style, the architecture evolved to include
international influences and used materials from the four corners of the globe from Germany to Iran to China. The mosque features 82 white marble domes, 1,096 exterior columns, 96 internal columns embedded with more than 20,000 handmade semi-precious jewelencrusted stones, 8,000 square metres of artificial lakes and seven 24-carat goldplated Swarovski crystal chandeliers. According to Hillenbrand, the mosque is unique in a number of ways. “The mosque is open on three sides so that it is both actually and symbolically accessible to visitors to a most unusual degree; it uses glass on an unprecedented scale; it has the largest hand-woven carpet ever made; and no other modern mosque places such emphasis on technicolour floral ornaments. It’s no wonder it has been dubbed the Mosque of the Flowers,” he says.

Designer connections Island to mainland connectivity also has its own design icon in the form of the US$272 million (AED999 million) Sheikh Zayed Bridge, designed by Iraqi-born British architect Zaha Hadid. With an undulating rollercoaster – or sand dune – arched design, the bridge’s central span soars 63 metres and is designed to withstand wind gusts of 160kmh. “A stunning gateway to the world’s richest city, the project epitomises excellence in design creativity, innovation and sustainability,” says Engineer Abdullah Al Shamsi, acting executive director of roads, municipal infrastructure and assets at Abu Dhabi City Municipality. Inspired by the asymmetric arch shapes of desert sand dunes, Hadid and her team created a structure that is remarkable for its clean, uninterrupted lines and sustainable design values. “Abu Dhabi is a modern city shaped by an ancient culture. Its strategic policies are grounded on three basic elements of sustainability: the natural environment, economic development and cultural heritage. Sheikh Zayed Bridge embraces all three of these elements,” clarifies Al Shamsi.

O is for office One of the first city sights for visitors arriving from the airport is the spherical Aldar HQ building, which is part of the Al Raha Beach development. Designed by MZ & Partners in Qatar, wit h lead consultancy suppor t from architectural firm Arup, the building has been compa red to a g ia nt glass doughnut, but t hat cheek y mon i ker simply doesn’t do it justice. A commercial building , it was designed in line wit h t he US Green Building Council’s LEED sustainability rating and has 49,000 square metres of office space spread across 23 floors. According to Mohammed Al Mubarak, chief commercial officer of developer Aldar, HQ is set to “change the face of the Abu Dhabi office sector for the future”. A landmark geometrically perfect structure, it was specifically constructed on a west-east elevation, which allows both the sunrise and sunset to be visible in its gleaming glass panels, with unobstructed views from every office, thanks in part to an absence of internal columns. Its green credibility includes supereff icient cooling, lighting and water systems as well as the emirate’s first subterranean vacuum waste collection system, which sucks rubbish directly to a loca l waste t ra nsfer st at ion for recycling and compacting.
ENDURING ICONS The Abu Dhabi Tourism and Culture Authority is the body responsible for preserving the emirate’s architectural heritage, including modern buildings from the post oil boom era. Take a trip around the city to spot some of the newly listed icons such as Al Manhal Palace, Maqtaa Bridge (pictured below), the ADNOC complex on the Corniche, the sprawling Armed Forces Officers’ Club & Hotel, the city’s court building and Zayed Sports City.

Along with the Aldar HQ, Abu Dhabi International Airports’ new airport control tower is a striking introduction to the city. A combination of advanced technology and futuristic architecture, the 110-metre structure – the tallest control tower in the region – is a new landmark within the airport’s emerging Midfield Terminal Complex project. “The design evokes the look of dhows and their sails, traditional maritime and cultural icons of Abu Dhabi and the UAE, and a warm welcome for passengers looking out of the windows as they take off
and land,” says Engineer Ahmad Al Haddabi, chief operating officer of Abu Dhabi Airports Company. Currently a lone structure amid a sea of ongoing construction, the tower has been designed to blend in with its future surroundings as the complex moves into its next phase of development. And it’s equally eye-catching by night, as Al Haddabi explains: “The transparency of the east and west façades, which are covered by special panels and open-work sun breaks, allow sunlight to pass through the structure during the day and provide spectacular lighting effects at night.”

Aquatic action Get out on the water to enjoy Abu Dhabi’s 200 islands and plentiful sunny days
Q Words by Amanda Tomlinson
With a stunning coastline, pristine beaches and endless sunshine, Abu Dhabi is a water lover’s paradise. The emirate is blessed with 200 natural and manmade islands and more than three-quarters of the UAE’s mangroves can be found in Abu Dhabi, giving visitors plenty to explore. Hire a jetski and visit Lulu and Futaisi islands, just minutes from Abu Dhabi, or charter a luxury yacht and go further afield, stopping at leisure to enjoy snorkelling, swimming and sunbathing. Those who prefer the underwater world will not be disappointed. There are a number of dive centres offering scuba diving trips from Abu Dhabi as well as other parts of the UAE, such as Fujairah and Oman’s Musandam peninsula. Nearby Sir Bani Yas Island offers a number of aquatic adventures, such as snorkelling, kayaking and catamaran cruises to keep visitors entertained. The pristine waters surrounding the island are home to rare dugongs and turtles. Those seeking a controlled environment for more daring activities need look no further than Al Forsan International Sports Resort in Khalifa City and Wadi Adventures in Al Ain. Al Forsan has two lakes with a cable system for wakeboarding and waterskiing, while Wadi Adventures is the only facility in the Middle East where people can try whitewater rafting, surfing and kayaking in one place. So whether it’s a relaxing kayak through delicate mangroves or a super-charged jetski ride to neighbouring islands, Abu Dhabi has it all.

Kayaking For an environmentally friendly way to explore one of the emirate’s greatest natural assets, take a one-and-a-half-hour kayaking tour through the mangroves and see flora and fauna up close, while escaping the fast pace of the city. Noukhada Adventure Company operates daily kayaking tours through the mangrove forests on the Eastern Corniche of Abu Dhabi island, giving visitors a chance to learn about the importance of these forests. The eco-tour operator offers low-impact excursions to several locations around Abu Dhabi and the UAE, educating residents and visitors and promoting awareness of the region’s vital ecosystem. Kayakers can spot birds, thousands of small crabs and maybe even the elusive Arabian fox on the 1.5-hour paddle through the mangroves on the Eastern Corniche. It’s a serene and fun way to escape the fast pace of the city and learn a little about the delicate mangrove ecosystem at the same time. Where: Noukhada Adventure Company When: Times vary. Wakeboarding and waterskiing Abu Dhabi’s beautiful coastline is perfect for wakeboarding, but those looking for a sheltered environment, a place to practise tricks or for somewhere to chill out with friends and family for an entire day will find a lot to do at Al Forsan International Sports Resort. This sports centre has activities ranging from equestrian, motorsports and watersports to paintball and shooting, catering for all ages and interests. Al Forsan has two freshwater lakes equipped with cables for kneeboarding, waterskiing and wakeboarding. Carlos King, the sports and recreation manager, says the lakes cater for novices through to world champions, with variable speed control and obstacles. Instructors are also on hand to offer lessons and advice.
“Beginners or younger guests can try kneeboarding, which requires little effort or training to master, then upgrade to waterskis to perfect their balance, and lastly onto wakeboards,” explains King. “The enjoyment is in the activity. To wakeboard well and learn tricks takes practise and physical effort, but it is addictive and can be picked up quickly.”

One of the newest attractions in the emirate and certainly one of the most unique is Wadi Adventure, a new water park in Al Ain. It is the only park in the Middle East where visitors can try kayaking, whitewater rafting and surfing in a controlled environment. Based at the foot of the spectacular Jebel Hafeet, Wadi Adventure opened this year and has been popular with both residents and visitors alike. There are three manmade channels, which cater to different experience levels, and guides to help visitors get the best from each trip. Thrillseekers can kayak along the channels or go whitewater rafting. Kayaking lessons are available, while experienced guests can go it alone. In the surf park, the waves can be created to suit individual skill levels, allowing budding surfers to learn quickly in a safe, controlled environment. When it’s time to dry off, visitors can make their way to the air park where the adventure course will have them climbing walls, negotiating high ropes, a zip line and the 14-metre falling swing.

Style file Luxury brands are increasing their presence in the capital, opening new boutiques and flagship stores
Q Words by Amanda Tomlinson
Shopping in Abu Dhabi is about to get a whole lot more exciting with new shopping boulevards in various stages of opening and more malls scheduled to launch in coming months. While the capital’s neighbour Dubai has a reputation as a haven for shopaholics and fashion-forward visitors, Abu Dhabi has often lagged behind in the retail stakes. But that’s about to change. Last month, the doors were thrown open to Avenue at Etihad Towers, a luxury boulevard with almost 40 boutiques in one of Abu Dhabi’s most exclusive addresses. Avenue’s designer shops will continue to open this month, raising the profile for the city and helping it become a contender as a serious shopping destination. Another luxury retail boulevard The Collection will open at the St. Regis Saadiyat Island Resort this year, while other high-end havens Emporium at Central Market and Galleria at Sowwah Square are also slated to open. With the world’s most exclusive names, such as Cartier, A. Lange & Söhne, Versace, Breguet and Manolo Blahnik, increasing their presence in the capital, shopping has never been better.

Along the Avenue While Abu Dhabi’s major retail hubs Marina Mall and Abu Dhabi Mall have long been home to designer brands, many exclusive labels are increasing their presence in the capital, recognising the city’s high net worth individuals, five-star visitor market and luxury lifestyle. UAE-based jewellery and watch company Rivoli Group, which represents more than 110 luxury brands, will open four monobrand boutiques in Avenue, including Breguet, JaegerLeCoultre, Vertu and J.M. Weston. Abraham Koshy, group general manager of Rivoli Group, says the luxury shopping destination is a good fit for their brands. “Etihad Towers provides the exclusive environment and ideal adjacencies which luxury brands seek to showcase their products. The development is very central and upmarket and its close proximity to Emirates Palace and Marina Mall is a definite advantage.” Watchmaker A. Lange & Söhne opened its first boutique in the Middle East at Avenue and it is one of only six monobrand stores worldwide. “This opening is a logical milestone for the brand in the Middle East,” says Matthieu Dupont, Middle East brand manager for A. Lange & Söhne. The brand cites Etihad Towers’ exclusivity, prestige and uniqueness as the influencing factors in choosing this location for its first regional boutique, where almost the entire collection of timepieces will be available, including the Richard Lange Tourbillon “Pour

The Vintage Alhambra in yellow gold and turquoise is an exclusive variation of the mother of pearl and onyx jewellery pieces. “The Van Cleef & Arpels boutique will feature a comprehensive collection of high jewellery, jewellery and watches,” says Alban Belloir, brand director for the Middle East and India.

Spread over two levels, Avenue at Etihad Towers will span 7,000 square metres and feature flagship stores, designer boutiques and high-end outlets offering luxury fashion, jewellery, watches and accessories. Among the 38 outlets are Hermès, Canali, Manolo Blahnik, Bally, Herve Leger, Montblanc, Chloe, Panerai, Piaget, Versace, Burberry, Salvatore Ferragamo and Roger Dubuis, to name just a few. Avenue will also offer contemporary French cuisine through Fauchon Café and numerous other food and beverage options at Jumeirah at Etihad Towers. Developed by Sheikh Suroor Projects Development (SSPD), Avenue at Etihad Towers is tipped to be a destination of choice for high-end shopping. “Offering quality, value and convenience, Avenue at Etihad Towers aims to enhance Abu Dhabi’s focused efforts to diversify the economy through encouraging investment in different sectors including retail and bringing in exclusive international brands which will add value to the overall shopping experience in the capital,” says Richard Foulds, property manager with SSPD.

While the current spotlight is on Avenue, over the coming months a number of new shopping havens will open. One of these is The Collection at St. Regis Saadiyat Island Resort, which will feature a variety of high-end retail shops and dining outlets in one of the city’s most stunning locations, Saadiyat Beach. Also boasting an exclusive island location, The Galleria at Sowwah Square will offer 33,000 square metres of signature retail and dining in the heart of Abu Dhabi’s new central business district. Scheduled to open late this year, The Galleria will feature luxury and midmarket retail offerings and capitalise on the adjacent five-star Four Seasons Hotel Abu Dhabi and Rosewood Abu Dhabi hotels and Cleveland Clinic healthcare facility. Kenneth A. Himmel, co-managing partner of developer Gulf Related – which has entered the joint venture with Mubadala Real Estate & Hospitality – says: “The

Galleria at Sowwah Square offers Abu Dhabi’s most compelling opportunity to create a distinct shopping and dining destination on the waterfront as part of a dynamic mixed-use environment that will include luxury hotel flags, grade-A office space unparalleled in the region and Abu Dhabi’s new Securities Exchange.” In the heart of the city, another local developer, Aldar, is adding the finishing touches to its prestigious shopping address, Emporium at Central Market, which it claims will become Abu Dhabi’s prime fashion destination. With 150 shops, it will stretch across 62,000 square metres and multiple podiums, and will be anchored by House of Fraser, a UK department store stocking a variety of designer brands. With such an impressive range of luxury shopping destinations, could Abu Dhabi soon become the new Fifth Avenue or Bond Street?

Q The scenic city of Basel was brought to life recently as the world’s most prestigious watch and jewellery fair, Baselworld, got under way. A vibrant centre of knowledge and exchange for watch enthusiasts and industry experts, the trade show was attended by the crème de la crème of the horology community along with 1,815 exhibitors showcasing the latest developments from the world of watch making. Baselworld is always a roaring success and this year was no exception with over 100,000 people from 100 countries descending on the Swiss metropolis for the exhibition. The attraction? Simply put, no other event offers such a comprehensive overview of watch trends and innovations. During the eight-day extravaganza, eminent watch brands from 41 countries united to showcase their exceptional products and an international buzz was felt throughout the six halls of Baselworld Palace exhibition centre. Perpetual calendar watches, which automatically track and display the day, date and month are currently among the most popular complications on the market. As you might expect, right at the forefront of that development is Patek Philippe. Reinforcing its reputation as one of the most prestigious brands in the world, the Swiss manufacturer unveiled the Reference 5204, which is a newly designed split-second chronograph. The innovative new watch is based on the company’s previous chronograph, with the only difference being that this impressive new model has a mechanism for split-seconds and works with the aid of an innovative split-seconds isolator. Despite the minimal modification, the new edition was rumoured to be one to watch at this year’s event. On that note, Rolex fans will be pleased to hear that the ‘Big R’ proved it is still at the top of its game with an assortment of innovative pieces, including the Oyster Perpetual Sky-Dweller. Built with an annual calendar that operates in two time zones the Sky-Dweller is the timekeeper of choice for international travellers. Having caved to the

big-watch zeitgeist, this model measures in at 42mm but packs quite a punch stylewise as it is available in white, yellow and everose gold. Other showstoppers included a legendary model that has enjoyed unequalled recognition since its launch in 1963 – the Oyster Perpetual Cosmograph Daytona. Offering even more of the enchantment for which it is renowned, this 18-carat yellowgold bracelet is decorated with an array of sapphires in rainbow colours. Another highlight came in the form of the L-evolution Chronograph Flyback à Rattrapante from Blancpain. This new addition to the collection has a power reserve of 40 hours and combines carbon-fibre and cutting-edge technology which ref lects Blancpain’s strong commitment to GT racing. It is also equipped with a column wheel that guarantees precise pusher control, as well as a vertical coupling-clutch that avoids any unwanted jerking of the hand when the chronograph is activated. Nostalgia was the name of the game for Omega which showcased signature pieces like the Seamaster Planet Ocean. A new addition to the Seamaster Planet Ocean collection was the Ceragold, which is distinguished by a ceramic bezel and 18-carat red gold hands.

Another bright star of Baselworld 2012 was the Omega Spacemaster Z-33. Inspired by space travel, this quartz-movement marvel is manufactured from grade-five titanium and features brushed, polished and sandblasted highlights. Omega wasn’t the only leading light because French fashion brand Hermès also dazzled with a selection of creative masterpieces. Famed for unveiling unique pieces (who could forget the ingenious Time Suspended watch, which won the coveted ‘Best Men’s Watch Prize’ at the Geneva Watch Grand Prix in 2011?) the latest triumph to spring from the house of Hermès is the Calibre H1837. The timepiece has a unique movement crafted by Vaucher Movement Manufacture exclusively for Hermès, which features an oscillating weight adorned with the Hermès H logo decoration. Beating at 28,800 vibrations per hour, the calibre offers 50 hours of power reserve. Another French manufacturer to win plaudits at Baselworld was Breguet, which maintained its 211-year commitment to craftsmanship when it offered the Classique Chronometrie 7727. Crafted from soft rose gold, the timepiece comprises the manufacturer’s latest innovations and like its predecessor, the Type XXII chronograph, it oscillates at a frequency of 10Hz. This is the first time that such a high frequency has been applied in a non-chronograph and the purpose is to improve the watch’s precision. Historic Russian brand Fabergé, which is new to the region, stole the show with the Agathon Regulateur Rose Gold and Hazel Enamel. One of a limited edition of 25, this intricately designed timepiece is perfect for collectors.

Showcasing traditional watchmaking skills through a skeletonised guilloché engraved movement, which is visible under sapphire glass, the silver guilloché dial is inserted with a white gold motion work plate, embellished with guilloché and white enamel. Wit h a 38-hour power reserve, this exquisite watch is finished off with a stylish alligator strap. A splash of colour greeted the offerings from Glashütte which put a fresh spin on a past favourite. Taking inspiration from the 2007 Lady Collection, the Lady Serenade is characterised by intricate rose-gold lines across the white mother-of-pearl dial. Launched this year, an elegant blend of haute horology, luxe couture and elegance define this timepiece.

While Baseworld offers an impressive selection, Abu Dhabi is not far behind and many of the styles and shapes that dominated the shows at Baselworld will shortly be making their way to the emirate. “The UAE is well known for being a business and leisure tourism platform,” says Luc Perramond, CEO of La Montre Hermés. “As far as watch retail is concerned, the potential in the UAE is significant and from 2009 to 2011 there was a substantial increase, with a growth of 56 percent Swiss watch exports to the UAE.” With the UAE’s standing as a prime market for luxury watches and a variety of shopping malls peppering the city, connoisseurs need only look to the shelves of the city’s finest boutiques to discover the new innovations in timekeeping. The latest and greatest designs are currently hitting the stores making it the perfect time to update your timepiece.

Sumptuous Family Feasts Brunch may be known as a mid-morning meal, but in the UAE it is an afternoon indulgence of gastronomic proportions
Q Words by Amanda Tomlinson
Every Friday, Abu Dhabi’s residents and visitors welcome the weekend with brunch. But this is not brunch as it is known throughout the rest of the world. Brunch in Abu Dhabi, and across the UAE for that matter, is an afternoon commitment of the culinary kind. It typically involves an endless buffet of gourmet dishes. These could revolve around a central cuisine, such as Japanese, Italian and even Brazilian, but in most cases the cuisine is international, something which will please even the fussiest of eaters. The most seasoned brunch-goers will know to pace themselves as the indulgence usually starts at 12.30pm and can continue as late as 4pm. For that reason, it’s best not to spend too much time on the starters. Most brunches come with unlimited beverages, alcoholic or not, with everything from fresh juices and mocktails to house wine and even premium Champagne. Of course, the price reflects the offering, so expect to pay anything from AED150 to AED550. Brunch is a great afternoon out for families, with many restaurants offering fun children’s activities and special kids’ buffets. Some have pool access and bouncy castles, while others have face painting and clowns. Concierge has highlighted some favourite family brunches over the following pages, but for more options, turn to the Taste listings on page 74.

Middle East on a plate From mezze to mohallabia, dining out Arab style in the UAE is an intriguing blend of culinary influences and ingredients from around the region
Q Words by Claire Malcolm
There’s more to Arabic food in the UAE than the ubiquitous bowl of hummus, with culinary inf luences from across the Middle East gracing your plate for a mouthwatering introduction to the region. And although Emirati cuisine is present on an increasing number of restaurant menus, your local dining experience is more likely to be a fusion of flavours from the Levant to Iran. The Gulf’s strategic location on the ancient trading route between East Africa and India brought with it fragrant influences in the form of aromatic spices such as cardamom, saffron, chilli, cloves and cumin, to transform the most basic foodstuffs into memorable meals. While GCC families subsisted on a monotonous diet of dates, wheat, barley, basmati rice, yoghurt and the occasional morsel of meat or fish just 50 years ago, today’s table is replete with fresh green salads, hot and cold mezze nibbles, all manner of grilled delights and tooth-achingly sweet desserts.

No jacket required Dining Arab style is a friendly affair and food is a time to relax with family and friends over a table groaning with tasty morsels. The Middle East is known for its warm hospitality and while meals are traditionally large family occasions, the same ambience spills over into the UAE’s diverse selection of Arabic restaurants, from streetside cafés to five-star signature venues. It’s all about sharing, with steaming platters of food competing for elbow room and a steady stream of fresh-from-the-oven dishes. Hanna Dib, chef de cuisine at Na3Na3 (prounounced Nah Nah) in The Address Dubai Mall, defines the appeal of the sharing concept. “Sharing a meal with others is a time-honoured tradition in the Arab world and an expression of hospitality.”
For Mohamed Albalkhi, sous chef at Jumeirah Zabeel Saray’s Al Nafoorah restaurant, this style of service is a reflection of homegrown customs. “A guest is always welcome in your house and the owner will share the food from his own plate, so that’s why a lot of dishes are served family style as it fosters closeness, hospitality and the joy of sharing. For Arab people, dining is an experience and not merely a necessity to survive,” he says. Samer Naifeh, speciality Mediterranean chef at Barouk, the signature Lebanese restaurant in the Crowne Plaza on Abu Dhabi’s Yas Island, agrees. “In Lebanon family comes first and there is nothing better than having all the family sitting around a table and sharing the same food; plus it gives the cook freedom to create more than one dish,” he remarks.

Many visitors to the region are familiar with menu staples such as hummus and falafel, however the nuances of individual ingredients and combinations that define the culinary offering of a specific Middle Eastern country are harder to identify. “When we refer to Arabic food, we mean a collection of dishes representing different Arab countries like Morocco, Tunisia, Syria, the UAE, Saudi Arabia and Lebanon, but Lebanese is the most popular in the region,” explains Naifeh. The ingredients used in the preparation of many classic Arabic dishes are relatively simple, but as Na3Na3’s Dib explains, the secret to creating something special is all about having the right combination of flavours. “For cold mezze dishes the most common ingredients are olive oil, lemon juice, sumac, nuts and tahina sauce, whereas for hot mezze we use fresh Arabic spices including cumin, coriander, cinnamon and paprika cooked with ghee,” he says.

“Lebanese cuisine is mostly based on grains like chick peas and lentils, vegetables including eggplant, onions, zucchini and tomatoes, plus the use of fresh herbs,” adds Naifeh. Unlike most Western cuisines, cinnamon is often used in meat and other savoury dishes and when it comes to desserts, sweet and sinful is the name of the game with honey and rosewater-infused baklava, rice puddings and nut-stuffed doughbased treats.

Food and custom
Mohamed Albalkhi, Al Nafoorah, Jumeirah Zabeel Saray, Dubai
Every chef has their own favourite dish but the sheer number of dishes on any Arabic restaurant’s menu often overwhelms first-time visitors to the UAE. Chef Albalkhi recommends sticking to the classics such as hummus, fattoush salad (mixed salad dressed with sumac and pomegranate molasses), tabbouleh salad, lentil soup and the everpopular mixed grill. Both Dib and Naifeh also list the endless variations on the mixed grill theme as a must-try. “I recommend a selection of cold and hot mezze appetisers including sautéed chicken livers and mouajanet (mixed savoury pastries) followed by a platter of charcoal-grilled lamb, kofta and chicken called machawi – there’s nothing better,” says Naifeh. Coming together over good food in the Arab style also brings with it a number of customs that add a little something extra to the experience. “Olives and olive oil are always presented at the table, as well as freshly baked Arabic bread. There is also a plate of raw vegetables including lettuce, mint, carrots, cucumbers and onions for people to munch on before they order,” comments Albalkhi. He recommends wrapping up the meal with a potent cup of Arabic coffee and a fragrant shisha pipe. Naifeh also highlights the unique service style as a custom in itself, as he explains: “Just the act of sharing and presenting as many items as the table can fit is part of Arabic generosity.”
“Our hummus and shawarma (grilled chicken or lamb prepared in the doner kebab style) are signature dishes and I really like the mixed grill because of the fresh meat and special marinades we use before grilling it over a charcoal fire.” Samer Naifeh, Barouk, Crowne Plaza Yas Island, Abu Dhabi
“Try our Hummus Istambuly, Batenjen El Barouk (eggplant puree with walnuts and grenadine molasses) or our mixed kebab platter served with three dips. My personal favourite dish is tabbouleh, a simple classic Lebanese salad with parsley, mint, tomato, bulghur wheat, olive oil and lemon juice.” Hanna Dib, Na3Na3, The Address Dubai Mall, Dubai
6
“With a buffet concept our menu changes regularly, but grilled items and seafood dishes are part of our signature offering.”

my LIFE IN ABU DHABI British PGA golf professional Craeg Deery talks about his passion for the game and his life in the capital

I have been in the UAE for nearly a year and a half; it has gone so quickly and I am absolutely loving it. It is such a cosmopolitan country with all sorts of nationalities and types of people. The facilities, especially the golf courses are easily among the best in the world and the climate is perfect all year round for golf. Yas Links is an incredible facility. I first visited the Links over two years ago before the golf course was open. I remember playing the front nine and was genuinely taken aback by what Kyle Phillips, the golf course designer, had created. The course is unique for the region and offers something that no other course does in terms of a genuine links layout and 18 beautifully designed holes. Golf in Abu Dhabi is rivaling any destination in the world. Abu Dhabi National at the Abu Dhabi Golf Club is a great golf course, but with the addition

of the popular Saadiyat Beach Golf Club and Yas Links we now have three championship golf courses within 15 minutes of each other. Each offers something slightly different in terms of course design and experience. Comparing the UAE with other parts of the Middle East, we are far more developed. Whether this is due to the number of expats or the UAE’s wealth, golf has developed with the economic boom. It is also noticeable that this part of the world hasn’t slowed as much in terms of development and people are still spending disposable income on sports and leisure, including golf. Abu Dhabi offers a lot to do, especially on Yas Island. We have Ferrari World Abu Dhabi, which is a great day out for the family, Yas Marina Circuit with the various car and driving experiences, and some great hotels and restaurants. The development of Yas Island in the

coming months and years is also very exciting with the new water park and mall opening. The city centre is only a 15-minute down the road and there are lots of things to do. With Dubai only 45 minutes down the road, there is a whole new emirate with a host of activities, restaurants and nightlife. All in all, you certainly won’t get bored in the UAE. During my spare time I still like to play and practise golf. I am incredibly lucky to be able to do my hobby as my job but I still enjoy competing in the regional professional golf tournaments or even having a game with friends.
