Since time immemorial, the course of the moon has been one of the greatest mysteries to mankind.

ur ancestors performed complicated rituals to measure the course of time based on the movement of celestial bodies. Today, a single glance at the SAXONIA ANNUAL CALENDAR is all it takes to tell the time with utmost
accuracy – from the second, date, and weekday to the lunar phase. Despite the numerous useful complications, the dial is so lucidly configured that the ingenious technology beneath it might easily be forgotten. The patented

Arabic coffee Strong, black and bitter, Arabic coffee is definitely not for the faint-hearted. In the UAE, coffee was traditionally prepared in copper pots on beds of coal in the desert. Today, aside from the cooking implements, the method remains largely the same. The ground beans are boiled rather than filtered before cardamom and saffron are added to complete the distinctive flavour of the brew. It is then drunk from small, expresso-style cups and often accompanied by sweet dates to help offset the sharpness of the beverage. Served in many hotels and practically every Arabic restaurant in the city, it’s easy to enjoy this distinctive flavour of the UAE.
DIsCOVeR Desert dogs
Historically, Saluki dogs played an important role in Bedouin life, helping their nomadic masters hunt for much-needed food in the arid desert. Today, the high value placed on these animals in the UAE is evident at Abu Dhabi’s Arabian Saluki Centre, where the hounds live a life of luxury. Watch them take a dip in the swimming pool and eat cooked meals prepared with olive oil before being pampered by the centre’s doting handlers. When: Opening hours may vary so it’s advisable to call ahead. Where: Arabian Saluki Centre. Contact: 02 5755330.

Keeping with tradition There’s more to the ubiquitous white robes worn by the men of the Gulf peninsula than meets the eye, with subtle nuances in design and inherent symbolism that make a unique style statement
Q WORDS BY CLAIRE MALCOLM
In many countries national dress has been relegated to public holidays and special occasions but, for the UAE local population, a crisp white kandoura and elegant black abaya are proud cultural emblems and the definitive statement of Gulf Arab style. As the day-to-day dress code in not only the UAE, but throughout Bahrain, Kuwait, Oman, Qatar and Saudi Arabia, this seemingly effortless look is, in fact, the result of fastidious attention to detail. To the untrained eye, the tall, impeccably groomed and well-turnedout gentleman sitting at the next table could be from anywhere, but the subtle nuances of Khaleeji (Gulf Arab) dress, make him instantly geographically recognisable. In a region where western influences and designer trends have had a tangible impact on the local lifestyle, the monochrome style of its indigenous population remains rooted in cultural significance and is a practical, everyday means of demonstrating national pride.

Style evolution Worn across the region, the basic costume has changed little in decades, although added refinement in the form of detailed stitching, defined collars and cuffs and other add-ons have brought the kandoura into the modern age. Archive photographs from the early 1950s show the late Sheikh Zayed, founding father of the UAE, clad in his white kandoura as he welcomed dignitaries on the airport tarmac or posed astride an Arabian thoroughbred. At first glance, the kandoura may not look as if it’s designed for energetic pursuits, there is an element of layering, with many Gulf men opting to wear sirwal – loose, full-length, drawstring cotton pantaloons – underneath, which allows for multi-purpose activities. Yet the most important function of the kandoura is that its loose-fitting nature allows air to freely circulate around the body, while the traditional headdress – the ghutra – has always been a necessary garment in the harsh desert climate, providing protection from the unrelenting sun and fierce sandstorms. Although the preference in the Gulf is predominantly for pristine white kandoura, which not only reflect the sun’s rays, but also symbolise cleanliness and modesty, the cooler winter months bring with them a thicker woollen fabric and a subdued spectrum of colours including dark grey, blue, maroon, brown and black. 1 Saudi ghutra and agal (coiled into a ring) previous page 2 Coiled agal on top of a white kandoura inside a bisht cloak worn for special occasions
Saudis are instantly recognisable by their choice of red and white checked ghutra, also favoured by many Bahrainis, while white is the norm in Qatar, the UAE and Kuwait
2
Subtle differences The classic white kandoura – or thobe as it’s called in Saudi Arabia and dishdasha in Kuwait – is more than a few welltailored metres of starched fabric, with each GCC nation incorporating its own unique design motif. Accompanied by the folded ghutra, which is held in place by a thickly coiled wool rope, known as an agal, even the length has meaning. In times past, a shorter kandoura symbolised modesty – and today is often adopted by more conservative wearers – while a longer length demonstrated a man’s status within the community. Emiratis are fond of the collarless threebutton kandoura to which they attach a long ornamental tassel that falls down the front, known as an afarroukha. Omani nationals
also incorporate delicate embroidery around the neckline and a shorter tassel placed to one side, as well as being fans of the afarroukha. The Qataris and Emiratis have similar tastes in kandoura, but in Qatar there is also a preference for shinier fabric and double-cuff versions, ornamented with expensive cufflinks and a collar – also seen in the Kuwaiti style. In Saudi Arabia, the kandoura is a narrower tailored fit with two-button collar and shirt-style cuffed sleeves, while its Bahraini neighbours favour a softcollared alternative with a shirt pocket and loose sleeves. With mobile phones a fact of 21st century life, Khaleeji kandouras are also frequently tailored with a left breast pocket as well as two side pockets.

Ghutras take on a life on their own in the fashion statement sense, with the choice of colour and fold a key identifier between nationalities and generations. Saudis are instantly recognisable by their choice of red and white checked ghutra, also favoured by many Bahrainis, while white is the norm in Qatar, the UAE and Kuwait. Usually made of cotton, but sometimes silk, the large square piece of fabric is folded into a triangle and worn over a tight-fitting white crochet skullcap called a gahfiyya. Resembling a two-layered ring, the coiled agal is also subject to local adaptation with the open, uncoiled part of the two rings dropping down toward the back of the head, except in Kuwait where it extends into two thin tasselled ropes hanging down the back to waist level. The art of ghutra styling offers unlimited possibilities and ref lects regional trends. Both ends can be criss-crossed over the head, one side rakishly thrown back to expose an ear or tucked behind the shoulder with the other side remaining over the chest. The agal can also be angled to change the entire look. Some styles have even been given their own distinctive names such as the Cobra, the Teacher and the Butterfly. In Oman, the ghutra is replaced by a colourful embroidered cap or with a turban

called a mussar. Omanis also proudly display their heritage by tucking a traditional khanjarr dagger into their belts. Completing the look, most men choose to pair their outfits with a pair of highquality open leather sandals, with stitch detailing or gold-buckle finishing, although Saudis, Qataris and some Kuwaitis can often be seen wearing socks and shoes, especially in winter.

finishing touches Topping and tailing the look Bisht
Worn on special occasions such as the Eid celebrations and by bridegrooms, this soft semi-sheer front-opening cloak, worn over the kandoura, is usually made of black, grey or brown fine cotton and edged with gold embroidery or silver thread. Wizar

Q W O R D S B Y A N D R E A A N A S TA S I O u
Visitors searching for inspiration on what to see in the emirate should take a look inside their wallets as images on the UAE banknotes depict some of the country’s most significant landmarks. Major new attractions, such as Emirates Palace and Dubai’s Marina Mall, Burj Khalifa and The Dubai Mall, may have pushed some of the UAE’s older destinations out of the spotlight. However, key tourist sites, such as Al Hosn Fort and the Corniche, retain pride of place in one very important sense – their likenesses appear on UAE money. The dirham is a relatively young currency and was only introduced in 1973, three years after the emirates united and the UAE was born. It replaced the Dubai riyal, which circulated in all of the emirates except Abu Dhabi, where the Bahraini dinar was used. At present, eight different dirham notes are in circulation in denominations of five, 10, 20, 50, 100, 200, 500 and 1,000 dirhams. All eight notes feature a different scene from the emirates and each of these offers a unique insight into the culture and history of the country.

Sharjah Central Souk (five-dirham note) There are two main reasons to visit the majestic Central Souk in Sharjah. The first is the structure itself, with its ornate Arabic design and elegant blue domes. Built in 1978, the beautiful two-part building was the first infrastructure in the emirate to resemble a modern shopping centre and as such it holds a special place in UAE history. Today there are a number of impressive, new malls scattered throughout the emirates, but Sharjah Central Souk, otherwise known as the Blue Souk because of its coloured domes, has a particular appeal. Inside the two vast buildings that make up the souk, vendors jostle for business at stalls piled high with juicy dates, soft pashminas and glittering jewels. There are at least 600 stalls here and together they create one of the best places in the UAE to buy traditional gifts, including Arabian coffee pots and Persian rugs. Located close to Khaled Lagoon, Sharjah, the souk is open daily from 9.30am to 1.30pm and 4.30 to 10.30pm (closed on Friday until 4pm).
Northern Emirates (five-dirham note) While there is a big focus on major attractions and events in Abu Dhabi and Dubai, visitors should not forget about the other five emirates: Sharjah, Ajman, Fujairah, Umm al Quwain and Ras al Khaimah. It is in these quieter and more unassuming emirates that some of the UAE’s most treasured destinations are to be found, including the Umm Al Quwain Museum (with artefacts that date back to 1768), the bountiful scuba diving opportunities around Dibba Rock in Fujairah and the fascinating Jazirat al Hamra (pictured), an abandoned town in Ras al Khaimah.
Dubai Creek Golf & Yacht Club (20-dirham note) The Dubai Creek Golf & Yacht Club, which opened in 1993, is one of the emirate’s most time-honoured haunts. Located on Dubai’s waterfront, the complex features a manicured 18-hole, par-71 championship golf course, a large marina and a stunningly picturesque clubhouse that remains among the most photographed landmarks in Dubai. The beautiful beachfront features areas for swimming, jogging, cycling and various other sports activities. It’s a pleasant spot for a leisurely stroll, punctuated by a swim in the ocean and lunch at one of the cafés that line the way. It is also where a number of major events are held throughout the year, including the Red Bull Air Race Abu Dhabi, World of Music, Art and Dance (WOMAD Abu Dhabi) festival and Wakestock Abu Dhabi, the UAE’s largest wakeboarding festival. Al Hosn Fort (1,000-dirham note) Believed to be one of the oldest buildings in Abu Dhabi, Al Hosn Fort holds a unique place in the visual landscape of a city dominated by towering skyscrapers and gleaming, new developments. Originally built in 1760, the fort was improved and expanded in the 20th century during the UAE’s oil boom. Although the building is currently closed for refurbishment, it is still worth a visit for some interesting photo opportunities. Al Hosn Fort is located between Al Nasr Street, Sheikh Rashid Bin Saeed Al Maktoum Street and Sheikh Zayed the First Street.

STORMING HOME Concierge heads to Galway with IWC Schaffhausen to witness the grand finale of the Volvo Ocean Race 2011 to 2012
Q WORDS BY OLIVIA CUTHBERT
Nine months at sea with 72,000 kilometres to cover, perilous waters to cross and aggressive weather conditions to overcome: the only food is freeze-dried and there are no creature comforts to rely on. These are just a few of the challenges that confront sailors taking part in the Volvo Ocean Race. To win it, as Team Groupama did in the 2011-2012 race, is a magnificent achievement, but just to make it round the world with crew and boat intact is an admirable feat. Known as the Everest of sailing, the Volvo Ocean Race was first held in 1973 as the Whitbread Round the World Race. In that first year, three sailors were washed overboard and drowned. More casualties followed in successive editions of the race. “In those days it was really an amateur race – a Corinthian adventure – and the people who sailed it were true pioneers,” explains the CEO of the Volvo Ocean Race, Knut Frostad. Today the casualties are fewer, but danger remains a constant companion for the crews as they race around the world, pushing themselves and their vessels to the absolute limit. “This is one of the last true human challenges,” says Frostad. “There is no prize for winning this race beyond the trophy, no million-dollar cheque at the end, so it’s all about the honour of proving yourself against both the worst of the elements and the best sailors in the world.” As the six boats, carrying the 66 adventurous and exhausted sailors, raced into Galway, Ireland, to complete the final leg, tens of thousands of people were gathered to celebrate. For the sailors, the end of the final leg from Lorient, France to Galway was as much a cause for relief as it was for celebration. Throughout the previous nine months they had confronted waves of up to 14 metres high, force-10 storms and temperatures between -15 and 45 degrees Celsius.

The challenges didn’t stop there. On board the state-of-the-art Volvo 70 yachts, living conditions are little short of primitive and sailors endure a host of discomforts, from sleep deprivation to claustropohobic living conditions. “You’re in a carbon-fibre box, crashing through waves at almost 40 knots, you can’t stand up so you crawl around on all fours. It’s always wet and it stinks,” states Frostad. However, the Volvo Ocean Race isn’t about being comfortable. According to Ian Walker, skipper of the Abu Dhabi Ocean Racing team, the UAE’s first ever entrant in the VOR: “One of the interesting things about this race is that you realise you just need a few simple things in life. Outside in the world, people worry about what jeans they’re wearing and whether they’ve got the latest iPhone, but on a Volvo Ocean boat it’s pretty simple. You have to stay warm enough, eat enough, sleep enough, be hygienic enough to keep healthy and take care not to get injured. That’s it.” For hardened sailors like Walker, who has competed in the Olympics, the America’s Cup and the Volvo Ocean Race in previous
years, living without basic comforts is nothing new. For younger and less experienced members of the crew, like 22-year-old Adil Khalid, the first Emirati sailor ever to take part in this race, it can come as a shock. “At the start of the race I would have said there was a fifty-fifty chance that Adil would finish…I know how tough it is and I thought he’d struggle. When we started training before the race he found it very hard, he was very seasick and found living aboard difficult,” explains Walker. By the end of the race, however, any doubts about Khalid’s perseverance had completely evaporated. “Round the whole world he never missed his watch. Probably the biggest compliment I can pay Adil, other than the fact that he earned the respect of the crew, was that by the end of the race we never thought of him as the Emirati crew member – he was just another one of the guys and that’s because he was extremely competent at what he was doing on board,” he adds. Discussing how he felt before the race, Khalid told us: “If I am completely honest, I was a little nervous about the absolutely mammoth undertaking ahead of me before
You have to stay warm enough, eat enough, sleep enough, be hygienic enough to keep healthy and take care not to get injured
starting this race. That’s not to say I wasn’t confident, but I was very aware of what would be required of me. While I knew the level of dedication needed to compete at the highest levels, having competed in the Olympics, I had never sailed a big boat or sailed offshore before I joined Abu Dhabi Ocean Racing.” While basic amenities and small comforts are cast aside to save on weight (rumour has it some teams even snap the ends off their toothbrushes), there is no shortage of advanced technologies and state-of-the-art equipment on board. The Volvo Open 70 is the fastest monohull in the world, capable of reaching top speeds of 39 knots or 72 kilometres per hour. According to Frostad: “The boats are so fast they could easily break up while sailing.” Enormous amounts of time and money are poured into the development of these vessels. To research and design Azzam, (the sleek, black boat sailed by the Abu Dhabi Ocean Racing Team), it took more than 15,000 man hours and that was before any actual building work began. All efforts are focused towards using the lightest possible materials:

carbon-fibre for the hull, mast and boom; ultra-light Kevlar for the sails; and titanium for any metal fittings. Below deck, the weight-saving strategies become extreme. There are no mattresses on the tiny berths where the sailors snatch their four-hour sleep shifts and the food, from which they must get the required daily intake for VOR sailors of 5,000 calories, consists of freeze-dried meals, reconstituted with hot water. It was with these weight restrictions in mind that Abu Dhabi Ocean Racing sponsor and official timekeeper of the race, IWC Schaff hausen, designed a special edition, ultra-lightweight watch for the team, the Portuguese Yacht Club Chronograph Edition ‘Volvo Ocean Race 2011 to 2012’. Speaking from the helm of his boat towards the end of the race, Walker described the cutting-edge technologies and materials that went into the design and construction of Azzam. “All of that is reflected in IWC’s VOR-edition watch,” he said, holding it up to the on-board camera that charted his crew throughout the race. “This watch here is light on my arm. I’ve worn it all the way round the world and I’m delighted to say that, just like our boat, the watch is still going strong.” Abu Dhabi Ocean Racing overcame numerous setbacks to complete the race, including severe damage to Azzam. The team had its glory moments, however, which included winning the leg into Lisbon and the in-port race in Abu Dhabi, the first VOR leg ever hosted by the emirate. “The atmosphere

in Abu Dhabi on the in-port race day was amazing. I’d never seen so many boats on the water there,” says Walker. The emirate’s success in hosting the VOR was endorsed by John Bramley, Communications Director of the race. “It’s the first time we’ve been to the Middle East and Abu Dhabi as a stopover went very well indeed. One of the things we want to do is open up the VOR to a wider audience around the world. The media coverage in Abu Dhabi was first rate and it’s an area where they are increasingly interested in our sport.” Khalid, who plays an active role in the Abu Dhabi sailing scene, tells us that one of his personal goals now is to try and give back to young sailors. “There are some great sailing academies coming on line now in the emirate, like the Abu Dhabi Sailing & Yacht Club and the Pelican Marine Sporting Academy, which is
great for kids who want to learn, but also for tourists too. Having sailed around the coast while training for the Volvo Ocean Race, there is a lot of amazing scenery to explore, so visitors should rent a boat and check it out.” Now that Kalid has completed the race he can devote more time to encouraging budding UAE sailors to follow in his footsteps, but being back on dry land without the prospect of another leg to get through feels strange, he says. “Having finished the race it is almost surreal to look back on. I thought I would be prepared for this, but you never can be. Knowing that you have completed this unbelievable test of human endeavour is a life-changing thought. Yet it is bitter sweet, as you also know this is it, the end. You are so focused on finishing that when the time comes, it almost comes too soon.”

GOinG fOr GOld With its bustling gold souk and mix of regional and international jewellers, it’s no surprise that people travel from all over the world to purchase gold in Abu Dhabi
Q Throughout history gold has enjoyed universal popularity as a symbol of wealth, power and beauty. In the Arab world, where gold has long played a central role in tradition and ceremony, it also possesses a strong cultural significance and nowhere is this more evidently on display than in the UAE. Here, gold is part of everyday life. Shop windows glitter with extravagant displays of gold jewellery and entire souks are dedicated to the sale of this precious metal. Five-star hotels create a sense of Arabian luxury with gilded interiors and restaurants convey gourmet status by sprinkling edible gold leaf on chocolates and desserts. There are even ATMs that dispense gold nuggets at the market price of the day and spas that offer gold facials which utilise the metal’s mineral qualities. Almost every aspect of life is touched by gold, so it’s hardly surprising that this is also one of the best places to purchase it. The first port of call for many jewellery shoppers in Abu Dhabi is the gold souk located in the Madina Zayed area. The merchandise here hails from all over the world with gold from Saudi Arabia, Bahrain and India alongside jewellery and nuggets from Europe, pearls from Japan and silver from Oman. Gold is priced according to the international daily rate and buyers can browse the jewellery, purchase ingots or have pieces designed to their specifications. In the malls, regional and international brands feature a wide range of designs to suit the tastes of many different cultures. This means that gold shoppers in Abu Dhabi are likely to find designs that aren’t available elsewhere, explains Raj Sahai, retail director at Damas.

While demand for gold has remained fairly consistent over recent years, the type of buyer has not, says Sahai. “Visitor demographics have changed. Therefore, the styles available have changed to meet the tastes of new customers. Visitors play a key role in the development of the gold and jewellery sector. In the UAE, at certain times of the year, visitors can account for up to 30 or 40 percent of sales.” There are certain identifiable trends among shoppers of different nationalities when it comes to buying gold in Abu Dhabi. According to Rafif Tarabishi, general manager of Al Masaood Jewellery, western shoppers prefer simple, classic styles in white and yellow gold, while Chinese visitors, who make up one of the most rapidly growing source markets in Abu Dhabi, tend to choose more intricate

designs featuring gold with coloured stones and diamonds. The Nature Collection in Damas’ spring range is ideal for Chinese shoppers with its selection of gold and diamond necklaces and bracelets, while the Paloma Picasso Collection from Tiffany & Co. features a number of modern designs likely to appeal to western shoppers. In addition to design, the brand name is a key purchasing factor among Chinese and Russian buyers, says Sahai, adding that Russian shoppers generally prefer jewellery decorated with large stones. For Indian buyers who purchase gold during important religious and cultural festivals such as Diwali, designs are more traditional, with chains and bangles among the most popular pieces. During the festival season, Damas releases a special Diwali range for Indian visitors, who are also one of the emirate’s fastest growing visitor groups. When it comes to customers from the Middle East, there is a lot of variation, Sahai adds. “During weddings, Arab brides like to wear heavy bridal jewellery sets that feature white gold offset by pearls and diamonds.” These are readily available at Al Masaood Jewellery and most other leading regional jewellers. “Recently, we have also noticed new trends among younger Middle Eastern consumers in this segment for lightweight jewellery that can be worn every day rather than the traditional, heavier style.”

The UAE is known for the high quality of its jewellery and the purity of its gold, but it is still worth taking note of a few basic considerations before making a large purchase. To be certain of a fair exchange, visitors should make sure they buy from reputable stores and obtain a receipt that clearly outlines the caratage and weight of the gold, advises Tarabishi. While it’s always worth exercising some caution before buying, Abu Dhabi is certainly one of the safer places to buy gold. “The government is very proactive in maintaining the image of the UAE as the world’s leading jewellery destination, so there are many initiatives designed to make it an attractive place for people to come and buy their gold,” says Sahai. In Abu Dhabi, regular checks are carried out on jewellers to ensure quality standards are met and shoppers can invest in the certainty that they are getting exactly what they pay for.

capital cuisine Embark on a culinary journey at stylish restaurants along Abu Dhabi’s distinctive and attractive Corniche
Q Every city has a heart and in Abu Dhabi it’s the Corniche, the pulsing hub of the capital where visitors go for a real sense of what makes this modern Arabian city tick. Five-star hotels, state-of-the-art skyscrapers and gourmet eateries jostle for position in this prime, beachfront location which attracts between 30,000 to 50,000 visitors each month. For atmospheric and picturesque places to enjoy a good meal in Abu Dhabi, the Corniche is hard to beat. The eight kilometres of this pristine waterfront are lined with landscaped walkways, wide grassy areas and long swathes of golden beach. It’s one of the most attractive parts of the city and a number of restaurants are perfectly positioned to take in the sweeping panorama from the shoreline. For a real taste of what Abu Dhabi has to offer, take a sunset stroll along the pristine beachfront and admire the views before heading to one of the many excellent restaurants that lie along the Corniche. Read on for some of Concierge’s favourite eateries in one of the city’s most vibrant locales.

El Sombrero Festive and exuberant, this popular Mexican restaurant manages to tick all the boxes for a fun and delicious meal. The menu features old favourites, including fajitas, tacos, chimichangas and burritos in addition to lesser-known Mexican specialities like enchiladas de mole, a traditional Aztec dish of shredded chicken rolled in flour tortillas and drenched in a rich and spicy mole sauce. Head chef Demian Cruz was born and bred in Mexico and this comes across in the authentic, Latin flavour of his food. The portions are generous, the staff friendly and the atmosphere homely and informal. El Sombrero’s relaxed vibe takes on a livelier tone as South American music fills the restaurant in the evening. Those who prefer relative peace can book one of the three smaller rooms off the main dining area. Bocca Dine in style at the newly opened Bocca restaurant in the Hilton Abu Dhabi hotel. A modern, minimalist environment allows all the attention to fall on the menu, which offers a combination of traditional and contemporary Italian dishes. There’s a classic risotto with black truffle zucchini and parmesan or a more contemporary-style tomato seabass risotto complete with a 24-carat gold leaf garnish. Upstairs, the Bocca Bar offers a choice selection of signature cocktails and antipasti bites. There is also an extensive bellini menu and cocktail trolley, which
includes signature mixes such as the pear and cinnamon bellini canella. Entertainment is provided six nights a week by the restaurant’s resident Italian pianist in the bar, creating a sophisticated environment for diners to relax and enjoy their meal. Fridays take on a more casual vibe with a family lunch offering signature dish Bocca seabass in sea salt. Quest It’s hard to beat this stylish pan-Asian restaurant for panoramic views. Situated way up on the 63rd floor of Jumeirah at Etihad Towers Abu Dhabi, this classy establishment looks out over the Corniche on one side and the city on the other. When you do manage to drag your eyes away from the 360-degree view and take in the restaurant, the décor doesn’t disappoint. Low lighting sets the mood and the highly stylised interior, with its dark, wood floors, gleaming white tables and silver pendant lamps, creates the ideal setting for an interesting culinary experience. The menu lives up to expectations, with an imaginative array of pan-Asian dishes cooked to perfection and a mouth-watering selection of exotic desserts. There isn’t a huge number of dishes on the menu at first glance, but on closer examination it becomes clear the food offerings here are so creative and unique that you are, in fact, spoilt for choice. just desserts Laced with nuts and delightfully sugary, Middle Eastern sweets offer complete indulgence
Q For many people, the best part of a meal is the dessert and regardless of the cuisine, there’s bound to be a selection of decadent sweets to savour and enjoy. Arabic desserts come in all shapes and colours and their history, while not very well documented, can be traced back through time and across many countries. As with any culinary fare, traditional Arabic desserts feature ingredients that were readily available in the area centuries ago and commonly contain nuts, cream, milk and sweet soft cheese as well as lashings of syrup. Some dishes also have an interesting story behind their origins. Umm Ali, a milky Egyptian dessert, for instance, means ‘mother of Ali’ in English, but who is Ali and why is there a dish named after his mother? There are conflicting stories about its past. Some say a sultan was hunting in the Nile Delta and stopped at a village because he was hungry. He asked for the village’s best cook, Umm Ali, to prepare a meal for him, but the only ingredients she had

were some dried wheat flakes, sultanas, nuts and coconut, which she covered with milk and sugar before baking. Legend has it that the sultan was so impressed that when he next visited he asked for ‘Umm Ali’s dessert’. Other stories suggest that Umm Ali was the first wife of Sultan Ezz El Din Aybek, but when he died, there was a dispute with his second wife over whose son would be the successor. In Egypt, a woman was not entitled to rule, but was allowed to be the guardians over her son, until he became king. Legend has it that Umm Ali hatched a plan to kill the heavily guarded second wife and bribed her maids to beat her to death with her own slippers. To celebrate the death, she made this dessert and distributed it to the people.

Another dessert with a disputed history is baklava. Many countries, including Greece, Turkey and Lebanon, claim this dish of puff/ filo pastry, pine nuts, pistachios and syrup as their own. There is evidence tracing baklava to the 8th century BC when the Assyrians baked a dish of thin layers of dough, nuts and honey to be enjoyed on special occasions. Further research suggests the recipe was perfected during the time of the Ottoman Empire when chefs were brought in from Armenia, Greece, Persia, Egypt, Syria and occasionally Serbia, Hungary and France to cook in the palaces and kitchens of the wealthy. Regardless of where the desserts originate, one thing is certain: they are a must-try while you’re visiting the emirate. Just be sure to do extra laps around the malls to burn off all the calories.

Smoking shisha (hubbly bubbly) is very popular in Abu Dhabi. The Middle Eastern water pipe, which is thought to have originated around 500 years ago, purifies and cools the smoke from flavoured tobacco heated on top of the pipe by coals. It costs approximately AED35 to AED50 to smoke and the most popular flavours are apple, mint, strawberry, apricot and grape. Although relaxing and sociable, estimates suggest that an hour of shisha smoking equates to inhaling as many as 50 cigarettes. If you’re after an authentic taste of Middle Eastern culture, however, smoking shisha is a must. Just remember not to inhale too deeply, blow down the pipe to get rid of smoke build-up in the water and share your shisha among friends. This is a social tradition and to be enjoyed in groups or couples.

my LIFE IN ABU DHABI Jen Scully, founder of Abu Dhabi Stand Up Paddle Club, shares her active life in the capital with Concierge

1 Yas Island 2 Stand-up paddle boarding in Abu Dhabi
I moved to Abu Dhabi with my husband three and a half years ago and before that I lived in the US, followed by Australia and Japan. What I like most about life here in Abu Dhabi is being surrounded by water and a climate that allows you to take advantage of this every day. In 2009, I founded the Abu Dhabi Stand Up Paddle Club and now I’m out on the water most weekends. I’m involved in promoting stand-up paddling (SUP) in the UAE and encourage everyone to try it for themselves. On the weekends I like nothing better than getting up early for a bike ride around Yas Island with my husband, followed by breakfast at Molu’s at Al Bandar resort. On an ideal weekend, this would be followed by a sunset catamaran cruise with Belevari Marine and then on to Cooper’s restaurant and bar in the Park Rotana if we are still up for a night out. Saturday generally involves a lie-in and then I head out to meet fellow stand-up paddlers at the mangroves.
The mangroves are one of the best things about Abu Dhabi. It’s an escape from the city yet just minutes from Salam Street. After this, we tend to visit Jones the Grocer or Grand Central for lunch and then its back home to relax before the start of the week. I work at Zayed University, where I am in charge of the women’s sport and recreation programme. When I’m not there or on the water, I’m playing ice hockey for the Abu Dhabi Women’s Storms Team with some amazing local ladies who are really pushing the sport forward here. There are a lot of exciting things going on in Abu Dhabi at the moment, especially the opening of the new water park, Wadi Adventure in Al Ain. Kayaking and surfing in the dessert – it doesn’t get much more amazing than that. If I’m showing friends the city’s cultural side, then a tour of the Sheikh Zayed Grand Mosque is a must. It’s an amazing work of art and the tour guides are very knowledgeable; not only of Islam, but of life as an Emirati in Abu Dhabi.
