Rapid urbanisation and the completion of numerous grand-scale development projects over the last few decades have transformed the UAE capital into the thriving metropolis we see before us today. Visitors will find much to do and see here, whether it’s dining in one of the city’s gourmet restaurants, exploring it’s historic sites or heading to one of its more modern destinations, such as Saadiyat Island and Yas Island. A chauffeured tour of Abu Dhabi is a good way to gain a comprehensive overview of all this, taking in the Sheikh Zayed Grand Mosque, Heritage Village and other major attractions on the way. It’s also well worth getting outside the city to explore neighbouring Al Ain. This was once the seat of power in Abu Dhabi and home to the ruling Al Nahyan family before their tribe, the Bani Yas, moved to the coastal area inhabited by the main city today. There are a number of interesting things to see here, including Al Jahili Fort and Al Ain National Museum not to mention numerous ancient tombs and archeological sites that offer an interesting glimpse into early civilisations that lived in these parts. There’s also the beautiful desert, which can be explored on a safari drive, hike or, for those who really want to immerse themselves in local culture, via camel. Another highlight for visitors to Abu Dhabi is the city’s vibrant dining scene. There are countless excellent restaurants here offering cuisines from all over the world in a five-star setting. This is perfectly encapsulated by Sevilla at Al Raha Beach Hotel, where a tantalising mix of European, Asian and Asian dishes is served. The all-day dining venue features an open kitchen and a spacious terrace so that diners can enjoy the creative cuisine in an al fresco setting. In the evening, I suggest stopping for a drink at Eight Bar & Restaurant in The Souk at Qaryat Al Beri or dining late, Middle Eastern style, at one of the city’s top Arabic restautants, such as Mezlai at Emirates Palace.

The personal touch Good service is all about anticipating a guest’s needs without seeming intrusive – a privilege offered by teams of skilled butlers at some of the capital’s top luxury hotels

“What gift do you think a good servant has that separates them from the others? It’s the gift of anticipation…I know when they’ll be hungry and the food is ready. I know when they’ll be tired and the bed is turned down. I know it before they know it themselves.” So says Helen Mirren in her role as Mrs Wilson, housekeeper in the box-office hit, Gosford Park. The remark, dated though it may seem in the context of a period film, rings true today as five-star hotels endeavour to gather guest databases and build personal profiles to better serve visitors and establish their loyalty to the brand. At The St. Regis Abu Dhabi, the preferences of each guest are logged on the system so that the international hotel chain can provide a tailored experience whenever that person visits one of its properties. “The St. Regis Butler team is known for the discreet and exclusive service it provides. We like to add a personal and thoughtful touch to each request and, for this, the guest profile information is invaluable,” says Said Orchi, director of butlers at the hotel. Information such as favourite foods and beverages, preferred bedding and any special dates that can be acknowledged are key to creating a memorable stay for guests, he adds.

It is part of the butler’s role to observe and clock these little details. One of the main challenges faced by the hotel butler, explains Steven Ferry, chairman of the UK-based International Institute of Modern Butlers, is the need to understand and know a guest they have only just met. “Traditionally, the butler’s place was on the private estate and it’s only in the last ten or 15 years that they have become standard in the hotel industry,” explains Ferry, who spent several weeks at Rosewood Abu Dhabi hotel last year training the new team of butlers there. “While a personal butler has the opportunity to learn his employer’s preferences inside out, a hotel butler must overcome the difficulties presented by the constant turn over of visitors and somehow develop an understanding of each guest from the get-go,” he continues. There is more to this than simply logging the preference of one guest for an early morning coffee or another’s desire to have the paper sent up at 4pm every afternoon. The hotel butler is dealing with people from all over the world and, as such, must learn to adapt their service and behaviour to suit the requirements of different cultures and nationalities. “It’s extremely important to understand and respect the culture of each guest and act accordingly. We have noticed, for example, that Middle Eastern visitors prefer a more discreet service and particularly value their privacy,” says Orchi, adding: “In addition, Arabic women will often make a request for a female butler, which we are happy to accommodate.” The concept of the female butler is relatively new but has

quickly become commonplace, particularly in hotels, where, Ferry says, in some a significant percentage of butlers are women. “The first written record of a female butler was actually 200 years ago, though it is generally thought of as a male profession and the vast majority of films and books depicting butlers will feature a man in the role.” This, however, is no longer ref lective of reality and, in some hotels, the female butlers are actually outnumbering the men on the team. “Without wishing to stereotype, I actually prefer to have female butlers on a hotel staff as they tend to be more caring and solicitous” adds Ferry. Nona Zazikashvili, who joined Rosewood Abu Dhabi as a butler last year and trained under Ferry, agrees. “Women are generally more intuitive and this proves extremely helpful in the daily tasks of the hotel butler. We have also noticed among many of the female guests that they really appreciate having the option of a female butler.” Male or female though, all butlers should conform to certain basic strictures that govern good service. To begin with, they must possess dignity, says Ferry. “As a butler you must have a very high opinion of the value of what you do. In addition to this, he or she must be discrete as it simply won’t do to go blabbing about the private business of the person you serve.”

Equally important is the power of invisibility, or at least the impression of it. A good butler will be able to judge the level of service needed by each guest – a requirement that differs widely from one person to the next. To some extent, says Ferry, this can be judged by culture or nationality, such as the general Middle Eastern preference for privacy or, the expectation among Chinese guests for a high level of service. “A while back I took a team from the institute to train the butlers at Marina Bay Sands hotel in Singapore and provided them with the customary grounding in providing a discrete and reserved service. When we returned a year later for a follow up we were

asked urgently to un-train them in this respect as invisible service does not go down well with mainland Chinese who make up the majority of guests at this particular hotel.” Equally, he continues, the very hands-on approach favoured by many Chinese visitors, which involves constant interruptions to inquire whether the guests need anything at all, would jar in a hotel frequented by Europeans or Americans, whose preferences tend towards the inconspicuous style of service. It is these visitors that particularly benefit from the guest profiles that enable five-star hotels to anticipate their needs without having to ask them. “Our guests appreciate being treated individually

and we pay attention to the smallest details in order to provide the most personalised service possible,” says Orchi. Building these databases is no simple task. Most hotels will gather guest profiles piece by piece over a period of time, combining information gleaned from various sources, always taking care to avoid subjecting the guest to a barrage of questions. This is one of the subjects covered by The International Institute of Modern Butlers when they teach new staff. According to Ferry, “The main thing is to avoid bugging the guest too much so you begin by approaching other sources, such as their secretary or PA or their private butler if they have one. In this way you can find out whether they have any allergies or medical requirements, culinary preferences and other details that are useful to know in advance. You have to be sensible about it though. One resort we worked with had been sending out

a 25-page questionnaire and wondered why they had only received two responses over a three-year period, one of which was from the gentleman’s butler.” Instead, hotels can take advantage of the butler’s proximity to the guest and glean useful information in order to make their stay more comfortable. “One way to build a guest profile is simply to observe. Note what they take from the minibar, remember which restaurants they like to eat at and listen to their comments on the food or service to learn more about what they look for and build a better knowledge of their likes and dislikes. This is the whole value a butler brings – an understanding of the guest so that they don’t have to explain themselves on every visit. No one likes having to repeat themselves every time they arrive in a familiar place,” says Ferry.

I then do a tour of the rooms to make sure that everything is up to scratch and add personal touches based on the preferences of each guest. Being a butler is quite a physical job because we are frequently running from one side of the hotel to the other, but it is also mentally stimulating as we have to accommodate a constantly changing cycle of guests. I check in with my guests at least once a day, or more, depending on their requirements and will organise restaurant reservations, excursions, spa treatments, laundry and whatever else they might need. I will also attend the check-ins of my guests and show them to their rooms and around the hotel. At the end of my shift I make a report and share all these details with the butler taking over so that the transition is seamless. The best part of it all is dealing directly with the guests. Making people happy makes me happy and I feel lucky to meet amazing people from all over the world every day.

This tendency towards the personalization of service is a popular trend in Abu Dhabi where visitors can immerse themselves in a VIP lifestyle of red-carpet events, five-star restaurants and tailored experiences. Visitors here can design their own luxury tours and trips, determining every detail from start to finish, from the mode of transport (chauffeured Bentley or private helicopter?) to the sites they visit and the food they are served on the way. Yachts can be rented and equipped to taste and venues hired out and adapted for carefully planned events where every detail conforms to the wishes of the client. Nowhere, though, is this taste for the bespoke more apparent than in the city’s top-tier hotels, where staff go out of their way to anticipate every need and surpass each expectation. There is, as Ferry says, a lot to be said for feeling known and welcome on arrival and this is something that hotels like Rosewood Abu Dhabi and The St. Regis Abu Dhabi, with their carefully compiled databases and highly trained teams of butlers, specialise in. It’s the little touches that make a guest feel valued; being greeted by name on arrival and shown to the room where their favourite beverage awaits on the table and their newspaper of preference has been laid on the bed. A competent butler will then judge the situation and may offer to unpack their belongings and book their dinner or arrange transport for an appointment in the city. Ultimately, the butler will take those tedious, daily tasks off their hands so the guest is free to focus where they wish. As Ferry says, “The main purpose of a butler is basically to create wonderful memories for their employer by allowing them to get from a to b without having to pause and consider the dull details in between.

Voyage of discovery The Arabian Gulf was once the pearling capital of the world. Now, The Abu Dhabi Pearl Journey is reviving this lost heritage with a fascinating journey back through time

The experience begins aboard a 75-year-old Jalboot, the simple, wooden vessel historically used by Abu Dhabi’s pearl divers. As the evocative sounds of the pearlers’ goodluck anthem - the Hoyamal - starts up, the crew casts off and the story gets underway. It begins centuries ago, long before Abu Dhabi existed, back when the emirate and the wider UAE was little more than a vast desert occupied by nomadic tribes. While the boat chuggs slowly past the scenic mangroves that line the eastern coast of the city, an Emirati guide reveals the history of this ancient industry, which dates back 7,000 years. For centuries, he explains, the seabeds of these parts were littered with oysters bearing lustrous pearls of a quality that is rarely seen today. So valuable were they that local communities were able to rely on the proceeds of pearl diving to support them throughout the year. It was seasonal work and by no means easy or without danger for those involved. Hundreds of oysters had to be opened to find a single pearl but the scarcity of the gems and the high demand they enjoyed made it worth the risk and effort. At the end of each season the pearls would be bagged up and sent abroad. They went first to India, where rich merchants purchased them in bulk for profit, and then onto Europe and the rest of the world to adorn jewels and ornaments in the homes of the wealthy.

Today, the Arabian pearl as a natural resource has died out. In the 1930’s the Japanese introduced the cultured pearl to the market and demand for the region’s more-expensive natural pearls suddenly dried up. Since then, the effects of dredging and construction along the oil-rich coast have altered the local marine environment, rendering it unsuitable for the production of pearls. Now, however, local culture expert, Ali Al Saloom is endeavouring to restore the Arabian pearl to UAE waters and educate residents and visitors on the importance of regaining this lost heritage with his Abu Dhabi Pearl Journey experience. “Surprisingly few Emiratis have ever actually had the experience of opening an oyster” says Al Saloom, who is well-known in the UAE for his website askali.com, where he serves as a font of knowledge on the country’s culture and heritage. “I wanted to address this deficit. It’s a magical feeling

A perilous pursuit Pearl diving was dangerous work and many men lost their lives on the sea bed. According to Nasser Juma Bin Sulaiman, director of The Diving Village in Dubai, which charts the history of pearling in the UAE, it was one of the hardest jobs a Bedouin man could do. “The entire operation was extremely risky. They were diving to great depths without any support and were often left with hearing problems from the pressure. Scratching around on the ocean floor for razor-sharp oysters and wrenching them from rocks could also cause injury and then, when they had got them to the surface,

opening thousands of shells was another difficult task,” he explains. Diving equipment was rudimentary with only a nose clip, known as a fetam, made from goat or gazelle horns to stop water flowing up the nose and, for some, a basic protective suit to guard against jelly fish stings. With no breathing apparatus to aid them, divers had to hold their breath for several minutes at a time and attached a heavy stone to their toe with rope in order to save time on the descent to the sea bed. When the diver was ready, he would pull on the rope to be hauled back up.

Al Saloom comes from a pearling background himself and was shocked to discover recently that, though many of his male ancestors were pearl divers, the local women rarely got to see these national treasures. “Not long ago my mother told me that my grandmother had never had the opportunity to see and touch a pearl, despite living in the world’s greatest pearling region. It was the

same for all women at the time – the men of the family would go off every year to dive for pearls and, at the end of the season, they would collect the pearls and sell them on straight away. They were too valuable to keep so the family never got to see them.” This anecdote sparked Al Saloom’s interest in the country’s pearling history and he spent a year traveling around the UAE developing his knowledge and searching for a way to set about bringing back the Arabian pearl. He also wanted to establish a platform that would give everyone - visitors and local Emiratis - the opportunity to experience this important part of UAE heritage. The result is the Abu Dhabi Pearl Journey, an eco-friendly boat tour through the Eastern Mangroves that focuses on the historic trade and includes an oysteropening session using specimens from Al Al Saloom’s own farm. “I wanted to find a way to produce pearls in the most natural manner possible. There are still plenty of oysters in the Arabian Gulf, it’s just that the environment is no longer conducive to the production of pearls. What we have done is provide them with a protected, sheltered environment and from there we simply insert a small grain of sand inside the shell and leave the oyster to do all the work.” There is no way of knowing, Al Saloom continues, which of the oysters will have successfully produced pearls but he does promise that enough will be provided to

ensure that each guest undertaking the Abu Dhabi Pearl Journey gets a gem to keep. “In the future we hope to add pearl diving to the experience and visitors will be able to gather as many oysters as they can before bringing them to the surface to open on deck.” Guests will have the opportunity to capitalise on the experience and, if they are lucky, get five, ten, 20 or even more pearls from their dive, which could potentially be worth several thousand dirhams, Al Saloom exclaims. “These pearls are already considered among the best in the region and have had a lot of interest on the international market. However, we didn’t get into this to sell the pearls for profit. Our aim is to give people an opportunity to learn more about this integral part of UAE history and help restore the country’s status as the pearling capital of the world.”

We have 160 watchmakers from of a total of 250 people in the Manufacture and, within that, some are dedicated solely to working on the high-end complications,” says Pontroué. Incredibly detailed and based around elaborate and conceptual motifs, each Roger Dubuis timepiece is part of a collection based on one of four existing themes: La Monégasque; Excalibur; Pulsion; and Velvet. Damas treats jewellery making like an advanced art and uses a contemporary and highly advanced production method which involves the latest 3D technology. Although the process is lengthy and involves several stages, machinery enables craftsmen to maintain a high level of accuracy and create several pieces at once

Beginning the process, a machine is programmed with the blueprint of a design, which is then transformed into a wax prototype through the use of a laser that solidifies liquid wax. At a later stage the molten metal is finally ready to be poured into the final cast. Once hardened the cast is removed and the gold or silver piece is cleaned and polished by the workshop’s craftsmen

Haute cuisine Concierge talks to the capital’s culinary superstars ahead of Gourmet Abu Dhabi Words by

Five years ago, Abu Dhabi was on the cusp of a culinary revolution. Luxury hotels were multiplying across the city, bringing with them a host of gourmet eateries offering diners cuisines from around the world. Alongside the home-grown restaurant brands, a flock of international names seized the opportunity to set up shop in this upcoming dining destination. Inspired by the burgeoning culinary scene the Abu Dhabi Tourism & Culture Authority (TCA Abu Dhabi) decided to launch a food festival that would further the capital’s emerging epicurean reputation. The inagural edition of Gourmet Abu Dhabi was held in 2009 and offered a taste of things to come with an impressive attendance of more than 4,600 people and a series of events held in destinations around the city to showcase and explore its emerging foodie status. Fast-forward to 2014 and the festival, along with the city, are already well and truly established in regional culinary circles with an emerging reputation on the global gourmet map.

“Abu Dhabi is a dynamic city where residents and guests dine out a lot,” explains Cladys Magagna, executive chef at the Fairmont Bab Al Bahr, who champions the pro-active ethos of Gourmet Abu Dhabi. “People like to try new culinary experiences here. The perfect recipe The first Gourmet Abu Dhabi was held in 2009 as a way to let the world know that there was a new kid in town when it came to fine dining. It ran throughout 12 of the best restaurants in Abu Dhabi and encouraged international participation from the very start, with globally-acclaimed chefs and culinary experts invited along for the ride. There were château dinners, an epicurean safari, a gourmet golf experience at Saadiyat Beach Golf Club and a series of lively and educational masterclasses.

For the local chefs – many of whom were already ‘on loan’ from all over the world – it was a chance to show off just what they have achieved. For the visiting masterchefs, booked to showcase their very own talents, it was an opportunity to taste something new. This winning formula has provided the backbone of the event ever since, because, as Cladys Magagna explains, it is a, ‘win-win,” for everyone involved. “Great local talent has the chance to flex its culinary skills in an international forum and the opportunity exists to work with celebrity chefs and to share best practices. Also, the city reinforces its status as a culinary destination. The fact that so many celebrity chefs and restaurateurs come to the capital demonstrates their willingness not only to work with the great talent in Abu Dhabi, but also to learn.”

Gourmet abu Dhabi is something of a culinary anchor, providing two glorious weeks of fine food, cooking demonstrations and the chance for some of the world’s top visiting chefs to put their stamp on local flavours

At the time of writing the cast of visiting chefs for 2014 comprised an 18-strong ‘who’s who’ of tastebud-tantalising superstars whose culinary skills have won them awards, rave reviews and loyal customers all over the globe. Supporting these are more than 20 chefs from some of Abu Dhabi’s most lauded dining establishments, such as Sandro Gamba, who leads the team behind the 16 restaurants (and 128 kitchens) at the lavish, five-star Emirates Palace hotel. “I’m excited to be a part of Gourmet Abu Dhabi not just as a chef, but as a food lover,” he says. “It encourages those with a passion for the culinary arts from across society – from professional chefs to those who cook as a hobby – to come together and try new and innovative cuisines. And who doesn’t love food! This is a great event for everybody.” Promising (but remaining tight lipped about), “Something very special,” Gamba says the Emirates Palace’s presentation for

the event’s opening gala party will definitely get people talking. He’s right to feel excited – celebration and spectacle are a major part of the Gourmet Abu Dhabi experience. No one understands this better than Amina Elshafei, a Saudi-born, food-mad Australian who was a top-12 finisher in the country’s 2012 Masterchef competition. Booked as an MC for this year’s Gourmet Abu Dhabi, it is her job to ensure that the crowd engages with the busy chefs during their cookery demonstrations – and she can hardly wait. “The Middle East boasts such an impressive array of recipes, dishes, produce and culinary traditions that it becomes an ultimate temptation for me,” she says.

Rising star With such an acclaimed roster of talent now centred year-round on this tiny part of the planet, it is no surprise that Abu Dhabi’s restaurants are attracting evermore attention. The world, it seems, is watching. “Every time I go back to Abu Dhabi, the dining scene has developed and the food has improved,” says Ho Chee Boon, a Michelin-starred chef who has been a key member of the mighty Hakkasan stable since its inception. Bringing distinctly Cantonese f lavours to Gourmet Abu Dhabi, this US-based chef will be sharing the limelight with such other

famous names as Massimo Bottura, the three Michelin-starred Italian chef patron at Osteria Francescana in Modena. Since 2010 his remarkable establishment has been listed in the top five of the world’s 50 leading restaurants and, like all visiting chefs, Bottura is coming to Abu Dhabi with an open mind. “I really don’t know much about the city’s cuisine – which is why I am coming,” he smiles. “I want to learn about another part of the world. What I like to do when I go to a new place is first begin to soak up the culture, the arts and the gastronomic history, then I like to share with the audience my creative process.” The way his team works in Osteria Francescana, he says, is unique. “We are not trying to deconstruct the Italian kitchen, but reconstruct it – building up from the extraordinary ingredients, traditions, folklore and artisan products that has made it famous all over the world. I hope to give my audience at Gourmet Abu Dhabi a taste experience that lasts a lifetime.” Similarly keen to get the most out of his visit is Henrik Yde Andersen, the Thai foodloving chef/owner of six restaurants who is often credited with having helped turn Copenhagen into the gourmet’s paradise it has recently become. “I can’t wait to try the local food, see the markets and meet the chefs there,” he says. Andersen is living proof of how quickly a destination’s fortunes can be turned around. By his own admission, to have said 10 years 9

SHEIKH ZAYED GRAND MOSQUE Built by the late Sheikh Zayed to help build a bridge between faiths and create greater cross-cultural understanding, the Grand Mosque is a must-see for any visitor to Abu Dhabi. The third-largest mosque in the world, this majestic structure is wrought from over 1,000 columns and 82 domes embellished with semi-precious stones, gold and marble. Inside, the spectacle is equally impressive with glittering chandeliers, spectacular floral motifs adorning the walls and a vast hand-woven Persian carpet in the main prayer hall.

My life in Abu Dhabi Saif Al Dhaheri, arrivals and call centre manager, Park Operations at Al Ain Zoo, tells us about life in the capital’s second-largest city

My life has always been in the UAE. I was born and bred in Al Ain and finished my education at Al Ain High College, splitting my time between here and Abu Dhabi city. I have seen it change dramatically over the years and evolve into the mesmerizing, modern metropolis we see before us today. At present, I live in Al Ain and spend my days working at the zoo, which is one of the capital’s major visitor attractions. Founded in 1968 by the late Sheikh Zayed, the facility houses around 4,000 animals in a spacious, free-roaming environment. One of Al Ain Zoo’s most important roles is providing a safe haven for a number of endangered species, including Arabian oryx and the Arabian sand cat. There’s also a variety of major attractions nearby that can be fitted into a day trip to Al Ain from Abu Dhabi. I particularly recommend Jebel Hafeet, the UAE’s highest peak, as from the summit visitors can see the whole of the city and miles of desert around it.

While I love the calm and tranquility of Al Ain, I also make regular visits to Abu Dhabi to catch up with friends and take advantage of the great many things to do there. One of my favourite areas in the city is the corniche, which offers a lovely environment in which to stroll, admire the views and stop for a bite to eat at a local café. The dining scene in this city is excellent and I enjoy trying food from countries around the world. All visitors should include the stunning Sheikh Zayed Grand Mosque and the fascinating Heritage Village in their itineraries. A tour of the traditionalstyle Bedouin encampment, early falaj irrigation system and museum at the village offers an interesting insight into the capital’s culture and history. It’s important to remember these earlier days, especially as the city is developing at such a rapid rate with a wave of exciting new developments, such as Saadiyat Island, Reem Island and Masdar City driving it forward into the 21st century.
