COLLECTOR’S EDITION ——— Concierge goes behind the scenes with TAG Heuer to explore the world of watch collectors
While time travel belongs firmly in the realm of science fiction rather than reality, a look into the world of TAG Heuer vintage timepieces offers a fascinating glimpse into the past. The luxury Swiss watchmakers boast a rich history that dates back 150 years, and nowhere was this better showcased than during the recent TAG Heuer Globetrotter exhibition. A uniquely ambitious global presentation, and the brainchild of TAG Heuer CEO Jean-Claude Biver, the worldwide event featured 400 curated timepieces displayed in 10 TAG Heuer boutiques across 10 cities, in such diverse locations as Paris, Munich, Tokyo and Dubai. Each location was bestowed with its own theme and the exhibitions featured vintage Heuer models from the manufacture museum in La Chaux-de-Fonds, along with pieces loaned from local private collectors. In recognition of the UAE’s rich maritime history and strong connection with the Arabian Gulf, the theme of the exhibition at the TAG Heuer boutique in The Dubai Mall was sailing and diving. One of the most notable pieces on display was a water-resistant case for a pocket watch, an invention patented by TAG Heuer over a century ago. The brand went on to establish the world’s first chronograph with a dial for regattas and a tide level indicator that sailors were able to read at a glance. Known as the Seafarer or the Maréograph, the watch, which dates back to 1950, was one of the highlights of the Dubai exhibition. “TAG Heuer as a brand is about more than measuring time. It’s about innovation,” explains Nicolas Pic, Brand Director Middle East. “Heuer has always been a pioneer in pushing boundaries, breaking rules and creating new timepieces and technology.” The luxury watch
brand introduced the automatic chronograph to the industry, and was also the first to introduce a Swiss-made, connected smartwatch. While TAG Heuer has a reputation for its innovative technology and avante-garde spirit, it is the timeless quality of the watches that most appeals to Yousef Gargash, an Emirati private collector. Gargash’s own collection began on his 18th birthday when he received a watch as a graduation present. Now 30 years old, he has spent the last five years doing what he calls “solidly collecting”, and while his collection is not comprised exclusively of TAG Heuer timepieces, it is clear that he favours the brand. “Heuer has a very interesting history, especially in comparison to a lot of other watch brands. Despite the fact that the shapes are often quite unusual, it’s a classic gentleman’s watch. “Looking at a Heuer timepiece is like looking at a vintage Jaguar, or Frank Sinatra, or James Bond. It is beautiful, eternally stylish, and it speaks for itself. The quality is exceptional too. When one considers the age of many of the watches on display in the Heuer Globetrotter exhibition, their longevity and durability are truly astonishing.” The maritime theme of Dubai’s Globetrotter exhibition proved serendipitous for British expat and private collector Daniel GambbaJones, whose own collection is predominantly focused on diving watches. Among his timepieces is the TAG Heuer 844 Auto Diver, an icon of the horology world and one of the brand’s first forays into the world of diving watches. With a modest collection, the horology enthusiast seeks out rare watches with a unique narrative. “I like to think there is a little character behind each watch, and a reasoning for every purchase. I’m not a trader or a dealer.

Although I call these watches ‘investments’ in front of my wife,” he jokes, “the reality is that they’re not going anywhere. I’ve never sold any of my Heuer watches and I have no intention to do so. I don’t buy watches for their monetary value. It’s nice to think that you’re making a purchase that will not lose its value, but that is not my real motivation. I wear all of my watches, and each time I do, it fills me with joy and excitement. I am not a collector for investment, I collect them for pleasure.” A former engineer by trade, every purchase that Gambba-Jones makes is thoroughly researched, and timepieces are chosen for their narrative and their rarity, rather than their monetary value. He also helps his friends in finding rare watches for themselves, a process he describes as a “treasure hunt”. For Gargash, collecting watches is a hobby, an artform and an investment all in one. With over 30 watches in his private collection (and the latest TAG Heuer Autavia on his wrist during the exhibition), he states: “I could never choose my favourite. Picking a favourite watch would be like picking a favourite child - impossible. “I develop an attachment to these watches, even the ones that I buy as an investment, so selling them is always hard. Collecting watches is a wonderful hobby, but it’s painful at times, especially when I part with three or four pieces in order to be able to afford one ‘Holy Grail’ watch.” His collection is kept in the storage equivalent of a
nuclear bunker, he adds. “If there was a nuclear holocaust, I would not survive, but my watches would live on.” The Heuer Globetrotter exhibition was an opportunity for Gargash and Gambba-Jones, as well as other collectors worldwide, to bring their private collections out into the open and, as Pic describes, make the luxury brand visible and accessible to a wider audience. “It is amazing to showcase the rich heritage of the watchmaker. Heuer was founded in 1860 by Edouard Heuer, and today his grandson Jack Heuer is still the honorary chairman of the brand, so we have generations of watchmaking expertise. “At the end of the year, we will celebrate Jack Heuer’s 85th birthday by launching a limited special edition of the Autavia, paying tribute to his contribution to the company and the family heritage. “The key to our success and our identity is successfully being very innovative and connected to a modern audience while celebrating past collections and the history of the company itself.” —— Discover the latest TAG Heuer collections at the brand’s boutique in The Dubai Mall. The A. Lange & Söhne story starts almost 200 years ago when talented clockmaker Adolph Lange opened the Lange & Cie. manufactory in the heart of Saxony. The LANGE 1 brought something completely new to the industry, presenting for the very first time a revolutionary new way of arranging the dial. Adding a stand out astronomical complication, this year’s LANGE 1 Moon Phase update once again introduces an innovative new dial. When Haresh Pahuja first arrived in Dubai, the city was a very different place. “When I came here in 1991, you had Bur Dubai and you had Deira - and that was it!” he laughs. Much like his beloved adopted home, the chairman and CEO of Itan Jewels has also seen his company undergo a dramatic evolution since that initial move, which began with the opening of the first trading and manufacturing unit in Dubai in 1992. Now, a quarter of a century later, the maison has expanded into a multimillion dollar enterprise, combining decades of experience with the latest innovative technologies – a bonafide dynasty that has been in the Pahuja family for five generations. Itan can be found in luxury jewellery retailers in 30 countries around the world, with close to 500 outlets in the UAE alone. The brand specialises in bangle making, a craft that Haresh has honed since the age of 13. By 17, he was already running his father’s bangle manufacturing workshop in his homeland of India, where Itan continues to maintain a strong presence. Today, more than four decades later, Haresh himself is based in the company’s UAE headquarters, and spends his days surrounded by family - his wife Priyanka, his son Yuvraj, his daughter Richa and his daughter-in-law Alessandra are all part of the company, and each one is involved in different aspects of the business. The name Itan comes from the Sioux word for ‘chief’, and it is hard to imagine a more perfect title for a brand so defined by leadership and legacy. “We work together, we have lunch together, we have dinner together - we have fun together,” Haresh says. “Sometimes, during the creative process, there are differences of opinion, but those differences help
us to grow, and everyone is encouraged to express their unique perspectives. If anything, it strengthens us.” Interestingly, the company’s office headquarters are located in the same place as their Dubai factory a bright, airy space in Jumeirah Lakes Towers. With the manufacturing going on just a short walk from his desk, Haresh and the rest of the family are able to take a thoroughly hands-on approach to the design process. “It’s a deliberate decision to have the factory and the office within such close proximity of each other,” says Yuvraj, Haresh’s son. “We want to be involved in the production of every single piece, always trying to improve on the last, and ensuring that everything is as polished as possible, no matter what.” Yuvraj has always wanted to join the family business. “I started working with my dad when I was 14 years old, during my summer school holidays. I wanted to work my way up from the bottom to understand the bare bones of the business. After that, I took time off to study jewellery business management and gemology at the Gemological Institute of America, and then I worked in a retail store in San Diego, so I could really understand all aspects of the industry. My future children will decide in their own time if they want to join too. If they do, they have a place here, but if not, the company is structured well enough that it will be able to continue.” Whether it’s the family inf luence, the hands-on approach or a combination of the two, Itan has made an indelible mark on the industry. no wonder then, that the specifics of the manufacturing process are well-guarded secrets. You won’t find the names of the models of Itan’s machines used in manufacturing on any photographs of the factory, and no amount of questioning will convince Itan to reveal exactly which paints are used to create the decorative colours and patterns that make their enamelled bangles so uniquely beautiful. Yuvraj notes that materials are sourced from all over the world. “Whether in search of the finest raw materials or the most cutting-edge manufacturing equipment, we scour the globe to track down the best of the best, so that the final product is the best that the consumer can find.” The manufacturing process is fascinating to watch; it’s hard to believe that Itan’s delicate, intricately designed jewellery begins life as slabs of gold, before being transformed through a creative process involving man and machine. Depending on the complexity of the design, the entire process from start to finish can take anywhere from three hours to three days. And during the busiest times of the year - Christmas, Diwali and Eid, to name a few - the factory will produce around 3,000 bangles a day. The amount of handcrafting that goes into each piece should not be underestimated, from the shaping and polishing that smooths down rough edges to the rodium plating that transforms the bright yellow tones to shades of silver and rose gold. The enamel bangles, with their coloured panels, are hand-painted by Haresh’s wife and daughter - from oceanic shades of aqua and green to swirling, jewel toned galaxies, each is a work of art.

On occasion, the jewellery makers will produce customised, bespoke bangles for a customer who wants a specific design, but generally this side of the business is handled by Alessa Jewelry, the brainchild of Yuvraj and his wife Alessandra. One of the most remarkable services that Alessa offers is the customisation of existing pieces, according to Yuvraj. “We take older jewellery that women have been given as gifts, passed down from mothers and grandmothers. Using our design expertise, we are able to transform these pieces, from something that languishes away in storage to something that women are able to wear and display every single day.” With a deep reverence for its creative heritage, Itan continues to keep an eye firmly on the future, with plans to expand the company dramatically over the coming years. “We’re planning on having our very own building in Dubai very soon – hopefully, it will be ready by 2020,” Yuvraj says. “The building will be completely eco-friendly, and it is set to expand our creative and commercial space to be four times the size of what we have now,” he adds. Dubai itself is set for rapid expansion too over the next few years, as the gears are set in motion for Expo 2020. In a city like Dubai, with its desert skyscrapers, dancing fountains and indoor ski slopes, one could easily become immune to the many superlative attractions. However, few visitors could fail to be impressed by The Green Planet – an indoor rainforest that’s home to 3,000 tropical plants and animals hailing from as far afield as the jungles of South-east Asia and South America. Step inside the building and you will be greeted by multiple layers of habitat mimicking the ecosystem of a true rainforest, including a leafy, sun-drenched canopy that’s home to a colourful population of exotic birds. It’s clear that a huge amount of work has gone into the construction, from the well-maintained heat and humidity levels to the dramatic centrepiece: a huge, man-made yet life-sustaining tree, reaching five storeys from floor to ceiling, and the largest of its kind in the world. “The Green Planet was created to transport people into the very heart of a tropical rainforest,” says Jean Marc Bled, general manager of Leisure and Entertainment for Meraas Holding, who operate the venue. “By giving them such a unique and immersive experience, we hope to showcase science in action and instil a sense of appreciation among visitors – helping them to understand our ecosystem better in order to preserve it.” Bringing the rainforest to the desert was no small feat; every element had to be taken into consideration, with nothing left to chance. “Meraas contracted some of the best companies in the

world for this unique project,” says Bled. One of the most challenging aspects of the project was building the man-made tree. “Creating the raw structure was a complicated geometric exercise that required our team of architects, engineers and habitat designers working closely with the horticulturalist to ensure the correct angle and orientation for every single branch. The process was a very delicate balancing act; we used 3D modelling software systems to develop a series of branch knuckles, each with its own specific geometry for its location on the tree. It all came back to mapping the solar gain within the environment, even considering the angle of the sun as it changes from season to season.” Visitors begin their journey on the ‘flooded floor’, a room that mimics the flooded rivers and streams of a typical rainforest using water tanks filled with freshwater species of fish, including catfish and stingray (on some days, you can even spot the biome’s biologists diving into the tanks to hand feed the animals). From there, you will be guided to the top floor, namely, the canopy, before beginning your descent via a winding path alongside its periphery, meeting the forest’s resident tropical animals and their handlers along the way. Each visit to The Green Planet is unique. Because it’s such a natural environment, it follows the same rhythms as a real rainforest - the animals that are most visible in the morning are different from the species that come alive as the sun sets. can be found throughout the centre, ready to answer any questions and even facilitate interaction between visitors and the animals. For biologist Sarah Stevens, working at The Green Planet is a dream come true. “In other wildlife facilities, your focus is quite singular, but here, everyone gets involved in all aspects of the biome - you might spend your morning diving in the fish tank and your afternoon handling the snakes or feeding the sloths. That’s what makes the job so interesting and fun, because no two days are ever the same. It’s hard work at times, but you can’t have a bad day when you’re constantly surrounded by animals.” Make no mistake, the animals are the biggest draw. Some of the notable species include a large-billed toucan, colourful chameleons and a beautiful pair of highly intelligent bright blue macaws. Some of the smaller exhibitions are equally fascinating, from the rainbow-coloured snakes to the butterfly display, where you can see the evolution from caterpillar to chrysalis to butterfly in real time. The two resident sloths are the centre’s sleepy celebrities. This pair of crowd-pleasers that can most often be seen draped from a tree branch, hanging off the railings and usually catching forty winks. The sloths spend an average of 17 hours a day asleep, so visitors might not see them at their liveliest. Most recently, and to coincide with the centre’s first birthday, the rainforest welcomed two new residents: a pair of Tamarin monkeys, housed in the brand new monkey enclosure. And there are plans underway to expand the rainforest population even further.
Each animal receives an impeccable level of care that ranges from being hand-fed by the biologists to participating in detailed training programmes to ensure they are being intellectually stimulated, and to help them become at ease with human interaction. Both the animals and their handlers undergo rigorous training to ensure the safety of both, as well as that of their visitors. Stevens describes the animals as ‘ambassadors’ for their species; they bridge the gap between their own exotic homelands and their adopted home in Dubai, introducing visitors of all ages to an unfamiliar ecosystem in order to communicate the message of conservation and encourage a sense of global awareness. The Green Planet is entirely eco-friendly, with carefully monitored water sources and timed lighting systems to minimise waste. The building has received the global LEED certification (Leadership in Energy and Environmental Design) and is fully compliant with Dubai Municipality Green Building Regulations and Specifications. The temperature and humidity levels are carefully monitored to ensure that the exotic flora and fauna can thrive at all hours of the day. Visitors will soon be able to experience the centre after dark too. “We will soon be launching a unique experience allowing our guests to camp in The Green Planet overnight,” says Bled. “This will include a personal guided tour and campfire stories. AT THE TABLE ——— Sofitel The Palm, Dubai’s executive chef Olivier Chaleil discusses culinary influences, inspirations and crowd-pleasing menus
At Sofitel The Palm, Dubai, French Polynesian design meets Middle Eastern hospitality. Much like the hotel, executive chef Olivier Chaleil has been influenced by a variety of cultures, having lived in such diverse locations as Bali, Istanbul, Mauritius, Vancouver and Taipei. But despite his colourful background, the French chef is adamant about sticking to a clear vision and classic cooking methods. “I believe in respecting a strong culture and culinary identity. I don’t like fusion food - it’s ‘confusion’ food,” he explains. “It can be interesting and fun, but you have to respect the classics. That has to be your base, and after that you can modernise the recipes.” It is true that each restaurant at the luxury beach resort has its own strong identity. Moana specialises in seafood and is renowned for its weekly Ocean Brunch. It’s clear from Chaleil’s tone that it’s one of his favourites. “My vision came from looking at the demographic of our guests and analysing what they would want. We have a lot of British and Russian visitors, so I decided to have plenty of fresh sushi, sashimi and ceviche, big platters of seafood and crowdpleasing curries from all over the world: India, Sri Lanka, Thailand, and even some French-inspired hot pots.” Porterhouse Steaks & Grills is a classic steakhouse that serves up delicious cuts of meat. Chaleil raves about the Porterhouse brunch, which features live cooking in an open kitchen, and mouth-watering dishes served straight to the table. “It is fabulous, you must come and try it,” he insists. “Hong Loong is our Chinese restaurant, while World Eatery is more like a café with a very nice international menu. Then we have Maui, our beach restaurant, and Laguna, which is attached to Moana and is like an upscale beach restaurant. And of course, we have Manava, the all-day dining restaurant.” Then there’s Olivier’s, the recently renovated lobby lounge, which now bears the chef’s name and is clearly the product of a very strong creative vision. “In Olivier’s, we try to make everything pretty. I see this as being a place predominantly for our female guests, so every dish is colourful, small and beautiful to look at.” Chaleil revamps his menus at least twice a year, and tries to source local produce wherever possible, but it isn’t always easy. “Of course, we can source
a lot of seafood (in the UAE), but I think in Dubai we import too much. That’s understandable though, as it isn’t easy to grow much in the desert.” The resort’s menus are based on what diners want, not what the chefs want to serve. “When we plan a menu, it’s very much according to the needs and tastes of our guests. And after years and years of experience, it gets easier to anticipate what they will want.” Despite the property’s already stellar dining offering, Chaleil is not resting on his laurels and has plenty more innovative plans up his sleeve. “We have a new restaurant in the pipeline, but the concept is top secret. We are also planning a new kids-led brunch at World Eatery. We want the food for children to be well-designed: no silly omelettes with a ketchup smile,” he insists. “There are also plans for a beach party, mostly aimed at outside guests. We have one of the nicest beaches on the Palm, and we want to make the most of this.” Chaleil has always loved the way that food brings people together. “I have always liked the conviviality of food, friends, and everyone around the table. That’s why I chose this business.” He admits, however, that there’s much more to being a chef than just cooking. “These days, chefs have to do everything - marketing, finance, planning, taking care of your staff to make sure your team grows and succeeds. I believe that I’m at the top of the game, and it’s my responsibility to make sure my staff gets there too. “I’m responsible for more than just the quality of the food; I have to think of the bigger picture, I need tricks, gimmicks and interesting concepts to draw guests in. Being a chef means being an entrepreneur. “My typical day begins very early in the morning, with lots of testing, tasting and planning. As an executive chef, a lot of my work is planning for the future. Right now, I’m already planning for next summer. I always work six to eight months in advance - Christmas is already planned for, of course!” And what does an executive chef cook for himself after a long day in the kitchen. “Soup and a salad. I’m very boring. DUBAI CREEK, SOUKS AND DUBAI MUSEUM The heart of the city, the Creek is a stunning spot to catch a glimpse of authentic Dubai. See dhows (traditional boats) ply their trade along the waters while early morning visitors will see fishermen at work on the river banks. Also in this part of the city is Dubai Museum, which makes for a fascinating day out with interactive displays and exhibits charting the emirate’s history from its pearl diving days. Stop by the gold, spice and perfume souks for some traditional treasures before leaving this vibrant area.

Dubai is one of the most exciting places in the world to live or visit. There’s so much to see and do, from beautiful beaches and soaring skyscrapers, to the buzzing dining scene and world-class shopping facilities. When it comes to must-sees, I would recommend a visit to Burj Khalifa. Not only is it the world’s tallest tower, it’s also where you’ll find The Dubai Fountain. Be sure to catch the famous dancing fountain show when a spectacle of music, water and lights creates a stunning scene. Burj Al Arab Jumeirah is one of the world’s most luxurious hotels, and is one of the most iconic buildings in Dubai which is well worth a visit while in town. Dubai Marina and JLT are fantastic neighbourhoods for exploring, whether you’re walking along the water admiring the yachts or enjoying a meal in one of the many restaurants and cafés. Once you’ve spent a day exploring the newer part of the city, there’s nothing quite like the contrast of a simple abra ride across Dubai Creek. Take one of the beautiful old boats from the Bur Dubai Abra Station and ride across the

creek for just one dirham at sunset, just as the evening call to prayer is singing out across the mosque minarets. Close your eyes and you could have travelled back in time to early life in the city. Once on the other side of the creek, the Spice Souk is the perfect place to buy exotic ingredients and fragrances. Another classic Dubai venue is Madinat Jumeirah. It’s like a contemporary reincarnation of an old Arabian city and is the perfect place for some relaxed, low-key shopping. A desert safari is also a must, where you can go dune bashing in a 4X4, watch a falconry show, get a henna tattoo, experience a camel ride through the sand and tuck into a magnificent feast of Middle Eastern cuisine all in an amazing adventure into the sands. For hidden gems in the city, the arts district in Alserkal Avenue is one of my favourites. Explore this maze of warehouses and you’ll find plenty of art galleries, design studios and even some cool, independent restaurants. If you love coffee, spend an afternoon at Dubai Coffee Museum in Al Fahidi Historical Neighbourhood. The memorabilia collection is astonishing in size and scope, with coffee grinders from WW1 made out of smelted bullets, and centuries-old brewing pots fromYemen, Egypt and Ethiopia.The coffee on site is brewed using the traditional Japanese siphon method and tastes delicious. Dubai is constantly evolving, with new entertainment attractions opening all the time. One of the best is IMG Worlds of Adventure, a theme park which features roller coasters, rides and other attractions based on popular Cartoon Network characters, Marvel superheroes and even animatronic dinosaurs. 3

Abu Dhabi Art is a dynamic multi-disciplinary arts platform that widens Abu Dhabiâ&#x20AC;&#x2122;s role as a cultural activator in regional and international spheres. Abu Dhabi Art supports the local art ecosystem through an annual fair and a year-long cultural programme. BEYOND: ARTIST COMMISSIONS The programme will introduce new artist commissions for Manarat Al Saadiyat, Abu Dhabi city and Al Ain. Established contemporary artists Manal Al Dowayan, Magdi Mostafa and Nasser Al Salem have been commissioned to create site-specific works which will be unveiled during Abu Dhabi Art 2017 and will remain in exhibition until January 2018. BEYOND: EMERGING ARTISTS Curators Mohammed Kazem and Cristiana de Marchi will present commissioned works by three emerging artists from the UAE in an exhibition at Manarat Al Saadiyat during Abu Dhabi Art and until January 2018. Shaikha Al-Mazrou, Alaa Edris and Jumairy have been selected as participants for 2017. GATEWAY The exhibition will draw curatorial connections between established UAE artists and their international peers. Chief Curator at New York University Abu Dhabi Maya Allison will curate the Gateway exhibition for 2017. TALKS Conceived by Guggenheim Abu Dhabi Curator Munira Al Sayegh, the Talks programme will focus on debating and documenting local and GCC-wide art histories and narratives. DURUB AL TAWAYA The performing arts programme curated by Tarek Abou El Fetouh, will see site-specific performances at Abu Dhabi Art and in different locations across the city. STREET ART Curated by Fabrice Bousteau, the programme will bring together local and international street artists, presenting artworks throughout the urban zones of Abu Dhabi.
