In focus Image: Niels van Gijn/JAI/Corbis Subject: Rub Al Khali The Rub Al Khali is one of the most inhospitable places on the planet. Known as ‘The Empty Quarter’ in English, it is the largest uninterrupted sand desert in the world, covering an area the size of Belgium, France and Germany. The Rub Al Khali stretches into Abu Dhabi’s Al Gharbia (Western Region), where one of the world’s tallest sand dunes can be found. Tel Moreeb, which means ‘scary mountain’, is higher than the Eiffel Tower. A trip to Al Gharbia and the towering red dunes of the Rub Al Khali is a highlight on any visitor’s itinerary. J e r o m e R o d r i g o, c h i e f c o n c i e r g e at t h e C r o w n Plaza Abu Dhabi, gives his r e c o m m e n d at i o n s f o r v i s i tors looking to discover the c u lt u r a l s i d e o f t h e e m i r at e I’ve been working in Abu Dhabi for 28 years and have seen many big changes in that time. When I first moved here, there were no traffic signals, only roundabouts. There were few buildings and they were only five or six floors high. There were no big malls, few cars and few tourists. It was a quiet place with not much to see and do. I have seen the evolution of the city into what it is today. For visitors who want to learn about the history of the UAE, I recommend visiting Heritage Village on the Breakwater near Marina Mall as it provides an interesting glimpse into the traditional aspects of desert life. Visitors can see a campfire with a coffee pot, goat’s hair tent and a working example of the falaj irrigation system. To experience the local culture, I suggest visitors take a trip to Al Ain, about 160 kilometres from Abu Dhabi, where they can see a traditional camel market and witness the way camels are bought and sold. They should also visit the museums, which show life as it was in the UAE, and Al Jahili Fort which was recently restored. Al Ain is home to date plantations and oases, giving it the name the ‘Garden City’. While in Al Ain, take the scenic drive up Jebel Hafeet, one of the highest mountains in the UAE, and admire the view from the top. At the foot of the mountain is Green Mubazzarah, a park with natural hot springs. 40 years: time to reflect As the UAE marks a great milestone, Concierge looks at the incredible achievements of this young nation
Q If you want to learn about the history of the UAE you’ll need to dig a lot deeper than 40 years, because the earliest known habitation in this area stretches as far back as 5500 BCE. However, it was a historic day on December 2, 1971, when Sheikh Zayed bin Sultan Al Nahyan, Abu Dhabi’s ruler from 1966 to 2004, and Sheikh Rashid bin Saeed Al Maktoum, the ruler of Dubai from 1958 to 1990, formed a union between their emirates and the neighbouring sheikhdoms of Sharjah, Umm Al Quwain, Fujairah and Ajman. Ras Al Khaimah joined the following year. Prior to the agreement, the seven emirates had lived in relative harmony, united for many years through a treaty with Great Britain, which earned them the name, the Trucial States. Under the agreement, which was signed in 1892, the sheikhs agreed not to enter into any relationships with foreign governments or to dispose of any of their territories, except to Great Britain. In return, the United Kingdom offered protection to the Trucial States in the event of attacks by land or sea. It was a successful partnership, but in 1968 the UK announced that it would be ending its protectorate over the Trucial States, which left the area open to attack. In order to maintain security, Sheikh Zayed and Sheikh Rashid reached out to their neighbours and in 1971 they signed the agreement, which signified the creation of the United Arab Emirates.

Fast forward to today and it’s clear that the rewards have been reaped. Billions of dollars have been spent on improving the infrastructure of the country and this year the UAE was ranked 14th in the world for doing business in a survey published by the World Bank Group. The last decade in particular has seen rise to various high-flying projects, not least last year’s unveiling of the world’s tallest tower – the Burj Khalifa (measuring 828 metres) in Dubai. Abu Dhabi’s achievements have also been impressive with world-class developments such as Yas Island (the emirate’s entertainment destination), Saadiyat Island (which will be home to the Guggenheim and Louvre museums) and Masdar City (a hub for all things clean, green and environmentally friendly). The UAE is also home to two of the fastest growing airlines in the world – Dubai-based Emirates, the largest airline in the Middle East, and Etihad Airways, the national carrier of the UAE, based in Abu Dhabi. Between them the airlines cover the globe and operate, on average, around 3,500 flights a week.

Rich history The combined union brought together thousands of years of rich history and heritage, and even at the time of the formation, the United Arab Emirates was regarded as a rich country. Traditionally the economy was rooted in pearl diving. Fishing and trading also supported the financial system, while further inland money was made though date farming and camel herding. However, the First World War had a severe impact on the pearl industry and that, combined with the economic depression of the 1930s and the Japanese invention of the cultured pearl, resulted in a few very difficult decades for the area. Fortunately, in the early 1960s things began to look up when the first oil company teams arrived on these shores and carried out preliminary surveys. The first cargo of crude oil was exported from Abu Dhabi in 1962 and Dubai followed in 1969. Two years later the United Arab Emirates was formed and revenues were being ploughed back into the country.

Let’s celebrate With all this in mind it’s not surprising that for the last month the UAE community has been abuzz with a variety of patriotic events. The theme of the celebrations, ‘Spirit of the Union’, is in line with the memory of Sheikh Zayed. Often referred to as the nation’s ‘founding father’, Sheikh Zayed believed passionately in the union of the UAE and his spirit remains infused in many aspects of the nation’s heritage. Known for his respect for education, enthusiasm for the environment and above all, his desire to see the region progress, the National Day programme has included many community-based activities and projects that will satisfy long-term goals within the region. The main aim of the spectacular events has been to encourage residents and guests of the UAE to celebrate the nation’s achievements, rich heritage and multicultural society. And the good news is that the fun isn’t over yet because the celebrations conclude on December 2 with the official ceremony at Zayed Sports City in Abu Dhabi. Yas Marina Circuit will also play host to a vibrant parade featuring 5,000 UAE-themed cars, flags, musical performers and live entertainment on December 1. It promises to be an event to remember.

Sheikh Zayed Bridge is the newest of four bridges that connect Abu Dhabi Island to the mainland. Opened in November 2010, the eight-lane bridge is almost 900 metres long and can withstand wind speeds of 160kmh. The bridge was designed by Iraqi-born British architect Zaha Hadid, who is also designing the Performing Arts Centre, which is due to open in a few years in Saadiyat Island’s Cultural District. When opening the bridge, UAE president Sheikh Khalifa bin Zayed Al Nahyan said, “The bridge which bears the name of our father, the late Sheikh Zayed bin Sultan Al Nahyan, is more than a link between two points. It is a symbol for the continuous development process started by the late Sheikh Zayed and evidence of our determination to pursue the goals of Plan Abu Dhabi 2030 [a long-term strategy that protects cultural heritage while still developing the emirate].” 26

Way out west Abu Dhabi’s remote Al Gharbia is the ultimate destination for any visitor looking for an off-thebeaten-track adventure or a relaxing holiday away from it all
Q Boasting serene, undulating deserts, more than 350 kilometres of pristine coastline and countless uninhabited islands, Al Gharbia is a vast area of wild beauty largely untouched by human hand. The region accounts for more than 80 percent of the emirate of Abu Dhabi and almost three-quarters of the entire UAE landmass, yet it remains largely unknown to many visitors. However, Al Gharbia – formerly known as the Western Region – is undergoing dramatic changes which are transforming it into a world-class tourist destination, the scale of which is nothing short of spectacular. As the cosmopolitan capital city of Abu Dhabi morphs into a bustling metropolis of high-rise hotels, mega malls, a Formula One race track and internationally renowned museums, sparsely populated Al Gharbia offers an array of natural treasures to tempt visitors seeking a more off-the-beaten-track adventure. Travellers looking for the ultimate desert experience can visit a luxurious Arabian-style retreat set amid the towering dunes of Al Gharbia’s Empty Quarter or attend festivals dedicated to the region’s unique culture and heritage. If that doesn’t whet the appetite, why not try a game drive in the emirate’s largest nature reserve to see exotic animals roaming freely, scuba dive in the aquamarine waters of Al Gharbia’s untouched coastline, or discover ancient archaeological remains dotted around the region?

“Al Gharbia is a unique part of the UAE, where the desert meets the sea, and is renowned for its authentic heritage – the Bedouin generosity and hospitality,” says HE Mohamed Hamad Bin Azzan Al Mazrouei, director general of the Western Region Development Council (WRDC), the organisation responsible for developing and promoting the region. One of Al Gharbia’s biggest attractions is its size which makes for a supremely varied destination. Nestled on the edge of the Liwa Desert, Al Gharbia’s main town, Madinat Zayed, is renowned for its history, culture and heritage where local Bedouin traditions are still very much alive. Mirfa meanwhile is famous for its natural harbour where dolphins, turtles, fish and other marine life can be found, and for visitors who enjoy the laidback beach life, Al Gharbia offers mile after mile of untouched coastline. Liwa on the edge of the Empty Quarter (known in Arabic as the Rub Al Khali) is home to some of the world’s tallest sand dunes. It’s also the base camp for the annual Abu Dhabi Desert Challenge, which forms part of the international off-road World Rally Championships. History buffs will find plenty to keep them busy. Previously a Bedouin settlement, Ghayathi is of particular historic interest – fossils dating back eight million years have been found near the town and are thought

“There is no doubt that Al Gharbia offers visitors to the Arab world a taste of true culture and heritage that is still found within the region today. Our annual festivals, which trace their roots over centuries, bring to life the very essence of Emirati heritage in a way in which visitors can understand and experience our culture,” explains Al Mazrouei. The highly popular Al Dhafra Camel Festival, which includes a camel beauty pageant, will be held from December 17 to 28 at Madinat Zayed. Millions of dirhams in prize money is up for grabs to the owners of the winning camel beauties. Other attractions include a traditional souk, camel auction and competitions for traditional handicrafts, poetry, date packaging and photography. Head to the Tel Moreeb International Festival in January for an event at one of the tallest and steepest sand dunes in the world. Here competitors attempt to drive customised four-wheel drives up the dune amid a festive atmosphere.
As the weather heats up in April and May, the region’s water lovers head to Mirfa on the coast for the Al Gharbia Watersports Festival. The 10-day event centres on kitesurfing, kayaking and dhow racing with big prize money up for grabs. The Liwa Date Festival in July showcases the region’s love of this hardy tree and its fruit. Competitions are fiercely fought with attractive prizes on offer.

Island paradise One of the first tourist attractions to open in Al Gharbia was Sir Bani Yas Island, part of the Desert Islands project. Currently being developed by TDIC (Tourism Development and Investment Company), the island boasts Arabia’s largest animal breeding project and includes a 3,500-hectare wildlife park teeming with free-roaming creatures such as Arabian oryx and sand and mountain gazelles, as well as freeroaming predators and scavengers such as cheetahs, hyenas and caracals – all of which can be viewed on game drives.

According to HE Mohamed Hamad Bin Azzan Al Mazrouei, director general of WRDC, the Western Region was renamed to place it firmly on the world map with a distinct and original identity, while maintaining the region’s true spirit. “To promote such a vast area as the ‘Western Region’ was not suitable for a local, regional or international audience, as it could be anywhere in the world. Al Gharbia means ‘west’ in Arabic, and is the name commonly used by UAE residents for years due to its geographical location. Therefore, the name simultaneously preserves the traditional values of the region in Arabic and English while making it more attractive for business, investment and tourism.”
Visitors can also enjoy hiking, mountain biking, sailing, kayaking and snorkelling, while next year a watersports centre and equestrian centre will open. Home to the world’s first zero-emission public buses, Sir Bani Yas Island is a legacy left by the country’s first president, the late Sheikh Zayed Bin Sultan Al Nahyan who was passionate about the environment and its conservation. Those who wish to stay on the island can book accommodation at the luxurious Desert Islands Resort & Spa by Anantara.
Decadence in the dunes Hidden deep in Al Gharbia’s interior, another holiday hotspot is Qasr Al Sarab Desert Resort by Anantara. Translating as ‘mirage palace’, the luxury retreat on the edge of the Liwa Desert is a unique oasis hideaway. Managed by Thai hospitality group Anantara, Qasr Al Sarab is the first luxury resort in the Liwa Desert and features 140 guestrooms, villas, a traditional hammam spa, private pools and outdoor terraces set amidst lush landscaping. The hotel also offers unique desert activities, including camel rides and excursions into the Empty Quarter.

Step back in time Trace Abu Dhabi’s history and Bedouin culture at Heritage Village

Abu Dhabi is a thriving modern metropolis, with towering skyscrapers, five-star luxury hotels, exclusive beach clubs and malls lined with designer boutiques. But at its heart, however, is a tradition rich in culture with inhabitants determined never to forget their heritage. To learn about Abu Dhabi’s unique past and traditions, a visit to Heritage Village on the Breakwater is a must. Not only does it offer an insight into the emirate during Bedouin times, it’s a great place to observe the city’s skyline and stunning Corniche. One of the highlights at Heritage Village is a strip of shop-like buildings where craftsman demonstrate skills and trades in areas such as carpentry, leather, glass-making, pottery, boat-making and fashioning daggers and swords.

Visitors can also see the ancient falaj system in action. In historic times, the Bedouin tapped into the underground water supply and transported it through a series of manmade channels, enabling irrigation of crops and improving the quality of life for those living in the desert. Across from the falaj model is a small museum with artefacts and historical photographs of Abu Dhabi before oil was discovered. Among them are images of huts, Al Hosn Palace, children at school, dhows, forts and camels. They depict a life in Abu Dhabi very different to modern times. Other displays include jewellery and clothing, tools, cooking and storage utensils, weapons and currency from across the Middle East.
While at Heritage Village, visitors can wander through a re-creation of a house built from tree fronds. Typical of a coastal house, it has an example of a barjeel, or wind tower, which was one of the first forms of air-conditioning. The tower, which rose around five metres above the roof, worked by catching breeze through vertical shafts on all four sides. The air would cool as it travelled down the tunnel and into the house, improving air circulation and lowering the temperature. At the other end of Heritage Village is a re-creation of a desert camp, which has camels and a souk where visitors can buy souvenirs and witness the region’s traditional retail services in action.

my LIFE IN ABU DHABI Kawthar Bin Sulayem, CEO of KBS Communications, talks about the cultural side of life in the emirate
1
I have lived between Dubai and Abu Dhabi all my life, but made Abu Dhabi my permanent home in 2008. It is a great place to meet interesting people. It is quiet and allows more time to spend with my family and friends. I am the CEO of KBS Communications, a boutique PR agency specialising in projecting UAE/GCC values to the international market. With the massive sporting events and development happening in the region, I have realised the need for educational PR that can help business owners provide better communications. This month the UAE celebrates 40 years. It means a lot to me on a personal level and as a business owner as well. Forty years of union and working as one team to benefit the UAE and its people – and by people I mean everyone living here – is quite an achievement for such a young country. When I see the pride in the people celebrating and participating in the parades and other events, it makes me happy.
} 1 Sheikh Zayed Grand Mosque 2 Saadiyat Story
The UAE has been home for many nationalities and they have played a major role in its development over the past 40 years. This makes our National Day celebration an international one. I spend National Day with family and friends. We usually have lunch or dinner together and discuss the country’s background with our older family members. Then we head to the parade, which is always fun. In my spare time, I enjoy meeting my mum for coffee. I also love reading about sports, especially Formula One. I enjoy doing community work, travelling and photography. For visitors who want to experience the cultural side of Abu Dhabi, I highly recommend Sheikh Zayed Grand Mosque and the Saadiyat Island exhibition at Manarat Al Saadiyat. In the future, visitors will also be able to go to the Zayed National Museum, which will house belongings of the late UAE president and educate them about his life.

On the high seas Abu Dhabi is set to make history as the first Middle Eastern port in the gruelling, round-the-world Volvo Ocean Race
Q Words by Amanda Tomlinson
In generations gone by, Abu Dhabi’s people made a living from the sea. They fished it for food and income, and pulled shiny pearls from its depths. Their traditional wooden dhows crossed its length swapping goods from neighbouring countries. While pearling and fishing may have been replaced by oil as the country’s main source of income, Abu Dhabi’s affinity with the sea continues. The emirate has more than 200 islands – some inhabited, some merely desert – and while there are now luxury yachts cruising the Gulf, dhows are still plentiful. With this rich maritime history and traditions that still run deep, it seems a natural choice for Abu Dhabi to be included in the Volvo Ocean Race, a gruelling round-the-world yacht race for hardcore sailors.

Meet the team
Everest of sailing The Volvo Ocean Race started in the Spanish port of Alicante on October 29. Six teams left for Cape Town, South Africa, on November 5, however at the time of going to press, three (including Abu Dhabi Ocean Racing) had retired from the first leg due to damage. On December 11, the six teams will set sail for Abu Dhabi and are expected to arrive on New Year’s Day. Among the teams are hometown heroes Abu Dhabi Ocean Racing, skippered by seasoned sailor Ian Walker, a double Olympic medallist who has previously competed in the Volvo Ocean Race as well as the America’s Cup. He will be drawing on this extensive experience during the nine-month, 39,000-nautical mile journey. “The Volvo Ocean Race is mentally and physically exhausting. The whole project is quite daunting but it is easier to comprehend having done the race before,” says Walker, one of the world’s leading helmsmen and tacticians. The race has been dubbed the ‘Everest of sailing’ and it’s easy to see why. It passes through four of the world’s most treacherous oceans and seven continents, racing day and night for 20 days at a time between ports.
Each team has 11 professional crew and each person has been tasked with a different job in addition to sailing duties. There are two medically trained sailors on board along with an engineer, sailmaker and non-sailing media person. This is extreme racing. Crews have to make do with freeze-dried food as no fresh produce is taken on board. They contend with temperatures ranging from -5 to +40 degrees Celsius, yet take just one change of clothes. Hunger and sleep deprivation is common.
Azzam Abu Dhabi Ocean Racing’s yacht is called Azzam, which is an Arabic word meaning determined. The stateof-the-art vessel weighs about 14,000 kilograms and is the height of a 12-storey building from the base of the keel to the top of the mast. She is almost as long as two London doubledecker buses.
Abu Dhabi Ocean Racing is the most intercontinental team ever assembled for the Volvo Ocean Race, representing seven nationalities and five continents. Heading the team is the UK’s Walker, who is joined by fellow countrymen Robert Greenhalgh as watchleader, navigator Jules Salter and Simon Fisher. From the southern hemisphere are New Zealand’s Justin Ferris as helmsman/trimmer and onboard sailmaker, and watch leader Craig Sattherthwaite, as well as Australian Wade Morgan as bowman. Reserve Paul Willcox is from South Africa. From the USA are helmsman/trimmer Andrew Lewis and media crew member Nick Dana, with Irishman Justin Slattery as bowman. Completing the team are Emirati sailors Adil Khalid, the UAE’s first sailing Olympian, and reserve Butti Ahmed Al Muhairi, who comes from a long line of dhow sailors. The duo, who will be competing in the Volvo Ocean Race for the first time, beat 120 Emirati hopefuls for a place in the team.

Destination celebration Opening for two weeks from December 31, Destination Village is a specially designed 55,000-squaremetre focal point for Abu Dhabi’s leg of the race. The size of eight football pitches, it has been built opposite the Abu Dhabi Corniche to host the yachting fleet and many thousands of fans. With free entry, Destination Village will have a fully packed entertainment programme with exhibitions, shows, simulators, hospitality, game zones, restaurants and cafés, sailing academies, shops and concerts. Among the highlights will be The Ride, a stateof-the-art simulator that emulates the feeling of being on board a Volvo Open 70 yacht at speed in extreme conditions while being bombarded by strong winds and spray. The Dome is a 40-seat interactive 3D cinema, while the Grinding Challenge allows visitors to pit their strength against friends on the same pedestal grinders used by crews on board. Destination Village will open with a huge New Year’s Eve concert by British rock band Coldplay. There will be fireworks and all manner of fanfare before the teams begin arriving the following day amid a sea of cheering fans. In-port racing will take place throughout the first two weeks of January giving residents and visitors a chance to see the yachts and teams in action. Abu Dhabi is aiming to make this a fortnight to remember, so get your sea legs on and book your berth now.

Jewels in the sand With elaborate designs and brightly coloured precious stones, Arabic jewellery is as bold and eye-catching as it is expensive
Q Awash with world-renowned, international retailers, the UAE is a magnet for anyone looking to buy expensive jewellery. Whether it’s a dazzling diamond necklace, statement solitaire ring, a jewelencrusted brooch or set of precious earrings, there is a huge range on offer and something to suit all tastes. Simple and more understated western designs are in abundance, as well as elaborate Indian styles. But the most opulent and lavish are the ones designed for the Arab market. Jihad Sibai, brand manager at Dubai-based Levant Jewellery, says, “These are exceptional, handcrafted pieces that are usually personalised and made of 18- or 21-carat gold or 925 silver. They tend to feature precious stones such as emeralds, rubies and sapphires and come in elegant jewellery sets. Sets usually comprise a necklace, ring, earrings and bracelet and sometimes a matching watch. The defining feature of Arabic jewellery is its bold design. Pieces are usually bright and colourful as they incorporate coloured precious stones and yellow gold. They are also large in size and sets can take two to three months to make.

A special occasion
3
Particularly lavish sets are worn at weddings both by the bride and guests. They are also worn to important parties, family get-togethers and celebrations during Eid Al Fitr, the three-day festival that marks the end of the Holy Month of Ramadan. Raed Baker, chairman at Liali Jewellery, explains, “Weddings are definitely an occasion to flaunt a lavish set of jewellery, either as a guest or as the bride. “Rings are important in Arabic jewellery as the fingers are always exposed. The traditional diamond ‘diblas’ are usually used as wedding bands. These comprise a large single ring that is broad and ornate or can also be a set of two rings, one studded with a large centre stone or a cluster of stones and the other a touch band that complements the design of the main ring.”

Damas, one of the Middle East’s leading jewellers, headquartered in Dubai, has more than 100 years’ experience in designing, crafting and selling jewellery. Raj Sahai, the company’s director of retail, says, “We make some pieces at our manufacturing facility in Dubai, while others come from suppliers. “We make some of the exclusive and one-off products totally by hand and a lot of time and effort goes into making the design.” The company is particularly attentive to detail with an internal design
50
committee that discusses ideas and trends while research into consumer insights and gold prices is carried out. It takes Damas approximately six months to create a product from conceptualisation to the final stage during which time it must pass five layers of quality control standards before it goes on display in-store. The layers are design, casting, polishing, setting and final sign off. The company also scans every piece of jewellery with an X-ray machine to accurately establish the percentage of gold content.

At Liali, most exclusive pieces are designed and manufactured in Italy and the Far East. However, the company also manufactures customised sets in-house. Once the design is confirmed, it is converted into a detailed sketch, after which the size of stones to be used is decided and the overall piece is budgeted for. When the client agrees the budget, only then are the precious stones bought and a mock-up of the original set made. This comprises all the loose stones laid out in the agreed design, but not yet converted into the final piece. Once it is reviewed and fine-tuned by the designer and the customer, it goes into final production when the mount is made in precious metal and in which the diamonds and other precious stones are set. 7 Diana necklace from Levant 8 Liali Jewellery 9 & 10 Mosaico collection from Pure Gold

Baker explains, “Gold is the most favoured material in Arabic jewellery and is traditionally considered a symbol of enduring value, almost like a security or an insurance for women against difficult times. As sets have evolved, diamonds have taken more precedence over any other precious stones.” Sibai adds, “The cost of a set depends on the carat and clarity of the stones. A diamond necklace may carry a total of 58 carats and be priced at AED3.7 million. The same piece could be AED2 million with different stones, however.” The quality and quantity of stones can cause the price to rocket. Damas has many sets for AED1 million to AED5 million, but for high-end customers there are some that reach the giddy heights of AED20 million and above. Pure Gold, one of the fastest-growing jewellery retailers in the Middle East and India, hand makes most of its pieces in Saudi Arabia and Bahrain. They are mostly made for weddings and religious celebrations and feature brightly coloured precious stones set in usually 21-carat gold, or as seen in their Mosaico Collection 18-carat gold.

Instead of the standard buffet brunch, waiters deliver 15 different small dishes to the table. The menu changes weekly, but includes antipasti, pasta, risotto, pizza, chicken, meat and fish dishes and classic desserts such as tiramisu and panna cotta. The brunch costs AED145 including soft drinks, or AED190 with house wine and beer. Those who visit outside of the brunch times can make their selection from the extensive à la carte menu. Taste of the UAE Forget hommous, falafel and kebabs, the UAE has its very own melt-in-the-mouth cuisine just waiting to be discovered
Q
France has its escargots, England serves up fish and chips, Germany snacks on sauerkraut and the US is the home of the burger, but what does the UAE bring to the culinary table? Local cuisine is simple and relies on meat, fish and rice as basic staples, enhanced by the creative use of spices and other flavourings. It retains its down-to-earth origins and reflects the development of the country, as traders introduced exciting new ingredients to the kitchens of the fisherman, farmer and Bedouin. We rarely encounter the authentic Emirati dishes still enjoyed by local families today such as the exotic-sounding harees, thareed and regaag. The traditions of giving and receiving hospitality is a cultural value that is deeply embedded in the Arab world and the legendary hospitable nature of the Bedouin people required that any visitor was welcomed, refreshed and hosted for three days before they continued their journey. This naturally extends to food and drink, and any meal enjoyed with a local host will be a memorable one. From a welcoming cup of coffee – gahwa – before a business meeting to the partaking of a celebratory feast, and a whole roast lamb stuffed with fragrant rice (ouzi), it is as much about the experience and the symbolism as it is about the food.

To sample gourmet Emirati cuisine, a meal at Mezlai at Emirates Palace is a must. Chef Ali Salim Ebdowa is the country’s only Emirati chef and has worked in the finest hotels, including Dubai’s Burj Al Arab. He recommends visitors try his signature dish, lamb medfoun. “You don’t see this dish every day,” Ebdowa says. “Families would normally make it during Eid. It’s a once-a-year dish.” The roasted lamb shoulder with chick peas in tomato sauce is served with a sauce of dates, honey, vinegar, yeast, local spices and garlic. Mezlai is not out of place in the opulent Emirates Palace hotel. With high ceilings and large windows, the restaurant is bathed by light during the day yet cosy in the evenings. Arabian hospitality is at the core of the experience and diners are treated to Arabic coffee and dates in the majlis on arrival. The service is friendly and warm, and the food tasty.

While the majority of dishes that you may try as part of an Arabic meal are associated with Lebanese and Egyptian cuisines with a touch of other culinary influences, there are several dishes that are in essence Emirati. Rice, which has long been a highly prized commodity, is at the heart of most meals, either used as an accompaniment to savoury stews – saloona – with their thick tasty gravies, or as a flavourful dish in its own right, in the form of a taste-packed biryani or onion-scented vermicelli rice. Peanuts and potato chips are replaced by bowls of flavoured chickpeas (dango) and broad beans (barjilla) as healthy pre-dinner snacks. Forming the base of local cuisine is a spice mix called biz’har. A secret blend of ingredients, often personalised from family to family, this adds unique flavour to many dishes. The use of loomi, which are sun-dried lemons or limes used in powdered or reconstituted form, gives an intrinsically local flavour. Bread comes in many forms, both sweet and savoury. Regaag is a thin bread prepared over a griddle and drizzled with oil before being folded and eaten hot with fresh honey or filled with other items like chickpeas. Breakfast breads include mohalla, a flatbread eaten with honey and date syrup, and khamir, a thicker version. Another breakfast dish is balaleet, a fine egg pasta with onions, cinnamon, sugar and oil. Ramadan, Eid and other celebrations such as weddings are the time to enjoy dishes like harees and machboos which is rice, onions and meat seasoned with spices, salt and loomi. The ingredients are cooked together with the exception of the rice, which is added to the pot halfway through the cooking time, for a deliciously tasty one-pot meal. Another favourite, especially during Ramadan, is thareed, a dish in which saloona (a meat and vegetable stew) is poured over a bed of regaag pieces. Desserts don’t feature prominently on the menu, but lugamat is the local version of a fresh doughnut, with small balls of hot deep-fried dough eaten with date syrup. Khabeesah, which is roasted flour, water, sugar and saffron, and a sweet treat called asseada, made from semolina and saffron are also popular.
To make your own biz’har, mix together cinnamon, paprika, cumin, fennel, coriander, black peppercorns, dried red chillies, nutmeg, cloves, cardamom and turmeric powder.

LEISURE ISLAND Already one of the most exciting destinations in the UAE, Yas Island is an adventure that gets bigger by the day
Q Just 15 minutes from Abu Dhabi’s city centre and a 50-minute drive from Dubai is Yas Island, Abu Dhabi’s newest and most impressive leisure and entertainment destination. With a Ferrari theme park, Formula One circuit, luxury hotels, links golf course, marina and a yacht club – plus a mall and water park under construction – it’s a must on any visitor’s itinerary. Those with a love of speed can get their kicks on the world’s fastest rollercoaster at Ferrari World Abu Dhabi then get strapped in to a Formula One car as it speeds around Yas Marina Circuit at 300kmh. At a much slower pace, Yas Links golf course is one of the most picturesque in the region, while the island’s two spas take relaxation to a whole new level. The luxury hotels have some of the city’s finest restaurants, not to mention some of the best views. Why not find out what the fuss is about?

Ferrari World
Fa c t s & f i g u r e s
If the thought of riding the world’s fastest rollercoaster has you trembling with excitement, then Ferrari World Abu Dhabi is the place for you. Opened in November 2010, the attraction is the only Ferrari theme park in the world and is brimming with high-octane rides and attractions to suit both thrillseekers and those looking for less scare. The world’s largest indoor theme park, Ferrari World Abu Dhabi has been built under a distinctive red roof designed in the style of a classic doublecurve body shell of a Ferrari GT. Among its 20 rides and attractions is the world’s fastest rollercoaster, Formula Rossa, which accelerates to 240kmh and emulates the feeling of being in a Ferrari F1 car with coasters designed to resemble the iconic red vehicle. The G-Force experience takes passengers on an adrenaline-pumping ride up 62 metres through the roof and back down again. The view of Yas Island from the top of the tower is worth it for those brave enough to take the ride. For those who like their thrills a little closer to earth, there are state-of-the-art racing simulators just like the ones used
• S even football fields can fit in the 86,000sqm enclosed area of Ferrari World Abu Dhabi • T he volume of concrete in the Hoover Dam could fit inside Ferrari World Abu Dhabi • T he roof structure is more than 700 metres in diameter, or the approximate length of seven Statues of Liberty if they were laid head to toe • I f Ferrari World Abu Dhabi was turned upright, it would be the tallest manmade structure in the world at over 300 floors • T he Ferrari logo on the roof is the largest ever created and measures 65 metres long, covering an area of 3,000sq m. It could accommodate at least seven basketball courts • T here are 1,200 dining seats at Ferrari World Abu Dhabi • T he total roof area (200,000sq m) uses enough aluminium to cover 16,750 Ferraris • Ferrari World Abu Dhabi is the largest indoor theme park in the world • I t has the planet’s fastest rollercoaster, Formula Rossa, which reaches speeds of 240kmh
by the Ferrari racing team and a driving and racing school for junior drivers. At a slower pace, the V12 flume ride takes passengers through the heart of a Ferrari 599 engine or they can take a seat in a scaled-down 250 California Spider and journey past re-creations of some of Italy’s most famous landmarks in Bell’Italia. There is a display of Ferrari cars owned by collectors from around the world. The cars date back to 1947 and there is 7 even a waiting list of collectors wanting to display their treasured vehicles. These can be seen at Galleria Ferrari. Everything about Ferrari World Abu Dhabi is distinctly Italian, including the food. In addition to VIP lounges, there are two restaurants inspired by the Maranello experience, live food shows and a delicatessen serving customised fresh pizza and pasta. In fact, it is the first time that four chefs with Michelin-star experience have joined forces to work together under the one roof.

Entertainment island Yas Island has become Abu Dhabi’s ultimate entertainment destination. Not only does it have the world’s only Ferrari theme park, the state-of-the-art Yas Marina Circuit and the stunning Yas Links golf course, it also hosts some of the planet’s biggest performers and entertainers. While some of the most recent stars to perform on the island include the legendary Sir Paul McCartney, Incubus, The Cure and Britney Spears, the lengthy list of entertainers includes Janet Jackson, Prince, Aerosmith, Guns N’ Roses, Snoop Dogg, Tinie Tempah, Kanye West, Shakira, Stevie Wonder, Jamiroquai, David Guetta, Eric Clapton and Tiësto, to name just a few. The Yas Arena is a well-designed outdoor venue beside Ferrari World Abu Dhabi. In November 2010, it welcomed a capacity crowd of 45,000 for the Prince concert on the final day of the 2010 Formula 1 Etihad Airways Abu Dhabi Grand Prix. VIP areas, a roomy general admission area, large screens, ample F&B

outlets, plentiful parking and numerous amenity blocks combine to make it arguably the best concert venue in the emirate. Nearby is the Flash Forum, an airconditioned structure that has hosted events such as the NBA JamFest and SkyBar Abu Dhabi. Both venues host the highly successful Yas Island Show Weekends, a series of international acts designed to appeal to all ages. In launching the series last year, Ossama Khoreibi, chairman of Flash Entertainment, the event organiser, said
the concerts would position Abu Dhabi’s Yas Island as one of the world’s premier entertainment and cultural destinations. “Flash has designed the Yas Island Show Weekends to offer people another reason to keep coming back to this wonderful leisure destination each and every weekend,” Khoreibi said. “Through Aldar, which has seen the development and implementation of a world-class infrastructure, Yas Island is becoming an internationally recognised centre for events and entertainment.”

Yas Marina Circuit Host of the Formula 1 Etihad Airways Abu Dhabi Grand Prix, Yas Marina Circuit is an innovative track showcasing several firsts in motorsport design, spectator comfort and adrenalinepacked family days out. It is the only F1 track in the world to run through a five-star hotel, offering unparalleled views to guests staying at the 499-room Yas Viceroy hotel. The track has the longest straight (1.2km) of any current track in the F1 series with a unique run-off area underneath the West Grandstand where spectators
can enjoy a rare bird’s-eye view of any cars that spin out as they tackle the tight turn after the straight. Boasting top speeds of 317kmh and average speeds of 198kmh, the track features 21 turns and is one of the few motorsport venues to run in an anticlockwise direction, weaving around an impressive marina. These inventive design elements make Yas Marina Circuit a challenge for the drivers and a more intimate experience for race-goers. Want to experience Yas Marina Circuit for yourself? Visitors can get behind the

At the Yas Racing School, visitors can drive an Aston Martin GT4, a single-seat Formula 3000 or a Yas Supersport SST with expert tuition from the school’s drivers. For the ultimate thrill however, lower yourself into the passenger seat of a Formula One two-seater and hang on tight as the driver speeds around the circuit hitting speeds of 300kmh. More high-octane thrills are available at the Yas Drag Racing Academy where visitors can ride in a modified drag car that reaches 250kmh in under five seconds. Want to get behind the scenes at Yas Marina Circuit? Tours taking in some of the most exciting elements of the circuit are held from Tuesday to Sunday. Visit the pits and team garages, then take a look at the heart of the circuit, race control. Yas Links

For a more relaxed luxury sporting activity Yas Island presents the first links course in the Middle East. The championship course on the western shores of Yas Island features floodlit practice ranges, as well as a golf academy and clubhouse. Yas Links course has rolling hills, seashore green locations and 130,000 new mangrove plants lining the island’s western coast. Specialist golf course architect Kyle Phillips has designed this unique course in keeping with the traditional form of links golf commonly associated with the coastal towns of Scotland and Ireland, while incorporating the landscape of the region. Yas Links has a 7,450-yard par-72 course utilising five teeing grounds per hole with eight holes running along the coastline and all 18 holes offering Arabian Gulf views.

The Andalucía clubhouse has areas for relaxation after playing a round. There’s a sports bar, fine-dining restaurant, men’s and ladies’ locker rooms with steam rooms, a pro shop and an outdoor pool and croquet lawn with coastal views. “Fairways, tees and green elevations range from +1 to +8 metres above sea level. This, coupled with a rugged
finishing and the planting of native, wispy grasses, will allow the golfing enthusiast to drift back in time to how the original links courses were laid out through the redundant sand dunes that separated the open sea from the more valuable arable land,” says Chris White, general manager at Aldar Golf and a former PGA professional.

Stylish hotels The Yas Viceroy is the flagship hotel on the island and is also the most prominent feature of Yas Marina Circuit. Although it is the only five-star property on the island, other options include the Crowne Plaza Abu Dhabi Yas Island and Staybridge Suites Abu Dhabi Yas Island, in addition to four other hotels. With a fun, futuristic design and a racing theme that is carried throughout, the 499-room Yas Viceroy has seven restaurants and two bars, including Rush which is located in the bridge that crosses the circuit. Visit Nautilus for sensational seafood overlooking the marina, or Kazu for delicious Japanese cuisine.

One of Yas Island’s defining features is Yas Marina, a 142-berth facility capable of accommodating vessels ranging from 15 to 66 metres, with guest berthing for up to 120 metres. It is one of the most prestigious positions from which to watch the Formula 1 Etihad Airways Abu Dhabi Grand Prix and berths fill up quickly for this event each November. Yas Marina also hosts the annual Abu Dhabi Yacht Show, an exhibition showcasing luxurious super- and megayachts. This year’s event was held from March 24 to 26. The marina is served by the Yas Yacht Club which, in addition to the onsite management office and yacht brokerage and charter companies, has a number of restaurants and bars. Among them is the Monaco institution Stars ‘N’ Bars, an American-style sports bar and diner with a well-executed motor racing theme. Some of the world’s biggest names have dined and partied at Stars ‘N’ Bars, including Sir Richard Branson, Prince Albert of Monaco and King Juan Carlos of Spain.

World-class cuisine With flavours from around the world, Yas Island’s restaurants and bars cater for even the fussiest of palates

Angar This delightful restaurant on Yas Island is known for its traditional Indian cuisine with a modern twist. Sample delights from Punjab, Maharashtra, Rajasthan, Gujarat and Goa, desserts from Bengal and Mughlai cuisine from Kashmir. Popular dishes include rogan josh, biryani and butter chicken, while the specialities of the house are favourites too. Try bakri boti, a lamb-based appetiser prepared in the tandoor and marinated using the chef’s personal recipe, then flavoured with star anise and mace. Vegetarians are well catered for with dishes such as karare phool gobi (crispy cauliflower), while the Bengali dessert, rasmalai, which is topped with fresh raspberries and gold flake sprinkles, provides a refreshing end to the meal. Angar’s defining feature is the show kitchen, which is decorated with beaten copper, complementing the warm red hues of the restaurant. Guests can watch the chefs as they make traditional Indian bread before cooking it in one of three tandoors. Chef Satish is originally from Mumbai, where he developed his knowledge of the various regional cuisines in India. Barouk For a taste of the Middle East, Barouk offers more than just authentic Lebanese cuisine. In the kitchen, the Arabic chefs carefully select their ingredients and prepare dishes that accurately reflect their countries’ culture and culinary offerings, while Barouk’s new chef Samer Josef Naifeh, from Syria, is keen to put his stamp on the popular restaurant. With 14 years’ experience, Chef Naifeh has worked in both Dubai and Abu Dhabi. His signature dish is lamb chop with hot baba ghanoush, however the extensive menu caters for all tastes. Start the meal with mixed hot and cold mezze, such as hommous, stuffed vine leaves, tabbouleh, fried halloumi and tajin koraydes (grilled prawns with spicy sesame dip and pine nuts). Then move on to the plentiful mains, with dishes such as mixed kebab platter, before finishing with some typical Arabic desserts. Entertainment starts around 9.30pm with a belly dancer and singer/keyboard player while shisha is available on the terrace overlooking the gardens for those who like to relax after their meal. Stars ‘N’ Bars The weather is warm and the days are relaxed, so why not make the most of it? More than a sports bar and Americanstyle diner, Stars ‘N’ Bars also has a shisha lounge which is the ideal place for stretching an afternoon into evening. Relax on comfortable white sofas and beanbags while enjoying all the favourite shisha flavours, such as apple, grape and mint, every evening from 5.30pm. The lounge area overlooks the Yas Viceroy hotel, Yas Marina and its collection of luxury yachts, and with its western outlook, it offers glorious views at sunset. Stars ‘N’ Bars’ regular menu is available at the shisha lounge, so guests can enjoy all the benefits of alfresco dining while eating their meal. Carrying a distinct sports theme, the menu features American beef with the burgers being the best sellers. Stars ‘N’ Bars opened on Yas Island in November 2010, introducing its unique style to the Middle East. Visitors will notice the race car and stadium seats, dining tables with encased sports memorabilia, a Formula 3000 car and signed Ducatti racing bike, not to mention the 30 plasma televisions showing the latest sporting matches.

Capital of culture Abu Dhabi’s Saadiyat Island will soon be home to the world-famous Louvre and Guggenheim museums. The Abu Dhabi government is spending over US$1 billion to bring these cultural landmarks to the emirate. They have also signed some of the world’s most renowned architects, including Frank Gehry who shot to fame with his design of the Guggenheim Bilbao in Spain, and Jean Nouvel, who designed the Institut du Monde Arabe in Paris. In addition, the Zayed National Museum will be designed by Lord Norman Foster, making the Cultural District the only place in the world to have buildings designed by five Pritzker Prize winners. The Louvre Abu Dhabi is set to open in 2013, while the Guggenheim Abu Dhabi will open some time later. Learn more about Saadiyat Island’s Cultural District at an exhibition at Emirates Palace which is open daily from 10am to 10pm. Entry is free. For more information, phone 02 6908207. Race crews are expected to arrive in the capital on January 1, 2012, with British rock band Coldplay performing at a huge New Year's Eve party to mark the start of the two-week event. The UAE has become a major force in powerboat racing and regularly unveils a top-class team to compete in the UIM Formula 1 World Championship which climaxes in front of thousands of spectators at the Abu Dhabi International Marine Sports Club by the Breakwater.

SHOPPING ETIQUETTE Women should make sure that shoulders and the top half of legs are covered in Abu Dhabi’s malls and souks. Keep in mind that the UAE is a Muslim country and respect its culture. Take care not to wear anything too revealing or suggestive. Comfortable, light clothing is recommended, but it’s wise to carry a wrap or jumper in shopping malls as the air conditioning can be chilly. Refrain from public displays of affection.

Smoking shisha (hubbly bubbly) is very popular in Abu Dhabi. The Middle Eastern water pipe, which is thought to have originated around 500 years ago, purifies and cools the smoke from flavoured tobacco heated on top of the pipe by coals. It costs approximately AED35 to AED50 to smoke and the most popular flavours are apple, mint, strawberry, apricot and grape. Although relaxing and sociable, estimates suggest that an hour of shisha smoking equates to inhaling as many as 50 cigarettes. If you’re after an authentic taste of Middle Eastern culture, however, smoking shisha is a must. Just remember not to inhale too deeply, blow down the pipe to get rid of smoke build-up in the water and share your shisha among friends. This is a social tradition and to be enjoyed in groups or couples.
