The concierge was once the gatekeeper who held the keys to the house, greeting guests as they arrived and attending to their needs. In the 12th century, concierges appeared in the castles and palaces of Europe where they remained important members of the household staff for centuries to come. Then, as now, concierges were to welcome and assist guests throughout their stay. Today’s castles and palaces are luxury hotels, where concierges continue their ancient traditions, being the central point of contact for information and assistance. Concierge magazine is your reference for all that Dubai has to offer during your stay. Whether it is activities and places to visit or souvenir shopping and local cuisine, we have it all covered. Our upfront Essentials section showcases the top events this month and vital visitor experiences, while informed features provide an invaluable insight into the Middle East’s most cosmopolitan destination.

In focus Image: NPI archive Subject: Arabic calligraphy One of the highest art forms in the Arab world, Islamic calligraphy can be seen throughout the UAE, decorating walls in mosques, adorning ceramic dishes and even woven into carpets. Calligraphers typically use reed or brush pens, an ink pot and a sharpening tool. They hold the pen with the middle finger, forefinger and thumb, and apply only the lightest pressure to create beautiful patterns with the 28 letters of the Arabic alphabet. Browse the shops at Souk Madinat Jumeirah, Souk Al Bahar or Khan Murjan and you will find many excellent examples of this revered art form.

I have been living in Dubai for 20 years and have seen a great deal of change in the emirate. When family come to stay, we tend to do more traditional and cultural activities such as visit Jumeirah Mosque and Bastakiya, the oldest and most charming part of the city. Bastakiya gives an idea of how people used to live with old houses featuring wind towers. The Sheikh Mohammed Centre for Cultural Understanding in Bastakiya offers walking tours in the area. It also hosts cultural breakfasts and lunches each week where visitors can eat Emirati food and chat freely with locals. One of the things I love most about Dubai is the variety of nationalities living here. It’s such a friendly place. Just walk around any shopping mall and you will see people from so many different countries. My favourite mall is Mall of the Emirates because it’s close to my house and I can sit with a hot chocolate and watch Ski Dubai, the Middle East’s first indoor ski slope. The Dubai Mall is another excellent shopping centre and offers something for everyone regardless of budget. Even if you don’t want to splash out on designer labels you can still appreciate the high-end brands by walking down Fashion Avenue. There is always so much more to do in Dubai’s malls besides shop. This month is Ramadan, when Muslims fast from sunrise to sunset. During this time, my family meets at my brother-in-law’s house to break the fast. We all take food with us and lay the dishes out on the table. My favourite dish is saloona, a wet curry made with meat, fish or vegetables and served with bread. We break the fast with dates and milk or water and then usually pray before going back for the full iftar meal. Ramadan is a peaceful time that’s about giving and becoming closer to God.

Several tour companies operate air-conditioned cruises in these majestic vessels and serve tasty cuisine as you take in the surrounding sights and sounds. Alternatively, take the time to visit the dhow wharfage on the Deira side of the Creek where there are scores of boats laden with cargo as diverse as car tyres, spices, rice, washing machines and microwave ovens. Sailing to and from Iran, India and the east coast of Africa, the dhows have been plying the region’s seas for hundreds of years.

Observing Ramadan Ramadan is a rewarding, spiritual time in which Muslims fast from sunrise to sunset and practise great self control. With the holy month spanning much of August this year, what better time to explore its fascinating intricacies?
Ramadan is the ninth and holiest month in the Islamic calendar, the month in which Muslims believe that
Allah chose to reveal the Qur’an to the Prophet Muhammad. For Muslims, Ramadan, which this year is expected to start on August 1st with the sighting of the new moon, is a deeply spiritual time of year that marks a personal journey in which they seek to become closer to God. Muslims increase faith through the act of fasting during Ramadan, abstaining from eating and drinking between sunrise and sunset. They also recite the Muslim profession of faith, perform ritual prayers five times a day and donate time, food and money to charitable causes. With the aim of pleasing the Almighty by helping others, controlling emotions such as anger, lust and envy, and refraining from gossip and physical intimacy, they cleanse their soul.

RAMADAN RITUALS To those unfamiliar with Islam, Ramadan has its own distinctive ambience and while daily life continues, there are subtle differences that every visitor will experience. Working hours are curtailed and shops may close for prayer times, so be aware of the slower pace of life and adjusted hours of operation. Also, to be respectful to those observing the rituals of the season, nonMuslims are expected to refrain from eating, drinking or smoking in public during the day, and to dress modestly. Ramadan is a social season and everyone, not just followers of Islam, can get involved in Ramadan-related activities. Friends and families gather each evening to enjoy iftar (the meal over which the fast is broken) and celebrate their blessings. Visitors to Dubai are encouraged to experience an iftar buffet and sample the full range of Middle Eastern cuisine. For more information on iftars, their cultural significance and the dishes you can expect to eat, turn to page 36.

Seyam, fasting during Ramadan, is one of the five pillars of Islam together with shahadah, sincerely reciting the Muslim profession of faith; salat, performing ritual prayers five times a day; and hajj, the pilgrimage to Mecca. Zakat, giving alms (or charity) to the poor and needy, is another. Visit any of the city’s shopping malls throughout the holy month and it’s likely you will see charity stands dotted around the main thoroughfares. Ramadan is a time of giving and Muslims donate money, clothes and food to charities. Visitors who would like to participate in the spirit of Ramadan might like to give larger tips than usual to their waiter or taxi driver.

LEARNING ABOUT ISLAM The end of Ramadan is marked by a three-day holiday called Eid Al Fitr (expected to fall on August 31st), which begins with the sighting of the new moon. The first day of Eid is spent with family, although traditionally the senior member of the household will pay courtesy visits to prominent elders or local sheikhs to wish them Eid Mubarak (a blessed Eid). For the rest of the Eid break many families take short trips together to other emirates. Although most retail outlets and restaurants are open for business as usual, it’s good to call in advance and check. For those with a limited knowledge of the Islamic faith, a guided tour around Jumeirah Mosque is an excellent educational experience. The local guides are fun, friendly and extremely approachable, encouraging questions and factual discussion on Islam and Ramadan.
22 | 23
Respecting Ramadan • Refrain from eating, drinking or smoking in public during the day in Ramadan, even inside cars • It is considered polite to cover shoulders and legs • The only live music played during Ramadan is traditional Arabic music. Dancing is not allowed • Most businesses and government offices will close between 2 and 4pm • Iftar, the meal over which the daily fast is broken, is held around 6.30 to 7pm depending on the time of year and when the sun sets • Supermarkets and shopping malls are normally open during the day and have extended hours at night – sometimes until midnight or even later

RAMADAN_DXB_AUG11.indd 22
The tour, which runs every Saturday, Sunday, Tuesday and Thursday at 10am and costs AED10 per person, offers an intriguing and charming insight into local culture and religion. Guides discuss ablution, the mosque, Islam and rituals during the holy month. A little over an hour’s drive away in Abu Dhabi city is Sheikh Zayed Grand Mosque, the largest in the UAE and a must-see on any trip to the capital. While breathtaking from the outside, it is simply stunning inside. As one of the most visited buildings in the UAE, Sheikh Zayed Grand Mosque is not only a place of worship and Friday gathering, but a place of learning and discovery through its education and visitor programs. Its ‘doors’ are open to everyone. Throughout Ramadan, guided tours take place at 10 and 11am each day to encourage cultural understanding. The complimentary tours, which last approximately 45 to 60 minutes, are led by Emirati guides who will show you around the mosque interpreting the architecture, artistic elements and Islamic culture. Visitors are advised to arrive approximately 15 minutes before the tour time and meet one of the visitor experience coordinators. General visiting hours are 9am to noon, daily.

OMEGA LADYMATIC Launched in 1955, the Omega Ladymatic was one of the brand’s first self-winding watches and featured the smallest automatic movement Omega had ever made. The legendary name has now been revived with a family of co-axial chronographs equipped with one of the best series-produced, mechanical watch movements in the world. Academy award-winning actress and brand ambassador Nicole Kidman (right) says, “Interest in the quality of a watch movement isn’t gender specific, women have the same interest in its performance as men do. The Ladymatic addresses that perfectly.” The watches feature polished 34mm cases with a distinctive ceramic ring between an outer decorative wave and the inner case body. The cases are crafted in 18-carat red or yellow gold or in stainless steel. They also come with a choice of polished or snow-set diamond-paved bezels, ideal for evening wear.

Words by Amanda Tomlinson
OUDH Wander through the malls and souks in Dubai and chances are you will smell the distinct aroma of oudh. A resin found in agarwood, oudh is often burned with the tree’s bark, creating an aromatic smoke that wafts through the air. Its most basic form, however, is a strong-smelling oil that is sold in beautiful and delicate bottles and dabbed on the skin like perfume. Arabic perfumeries are plentiful in the city’s malls and shopping areas and while they all stock ready-made blends, some can also tailor a perfume to suit. Then it’s simply a matter of choosing your favourite bottle. The strong-smelling substance may not be to all tastes, but it serves as a nostalgic reminder of a visit to the UAE, one which will linger for a long time.

SWEETS Never has the saying ‘sweets for my sweet’ been more appropriate than in the UAE where a huge percentage of the population has a wicked sweet tooth. A wander through the city’s malls will uncover sweet shop, after chocolate shop, after cupcake shop. The ‘original’ sweet however is the date, which is grown in abundance
in the UAE’s oases. Packed full of energy and highly nutritious, dates are a popular gift during Ramadan as they are one of the most common foods used to break the day’s fast. There are many shops selling a variety of dates, including the decadent chocolate-coated treat, but one of the best is Bateel, which can be found in malls and modern souks throughout the city. If dates are not to your liking, why not take home a box of Arabic sweets such as baklava and nougat. Syrupy sweet with typical local flavours of pistachio and rose, the treats are sure to be a hit with family and friends. Chocoholics aren’t forgotten either and the UAE is home to the first producer of camel milk chocolate. Said to be low in lactose and more nutritious than cow’s milk, Al Nassma camel milk chocolate could prove to be a healthier alternative. The chocolate comes in standard bars of varying sizes as well as cute camel shapes and a boxed ‘camel caravan’.
for a more local shopping experience, visit the gold souk where you can haggle with vendors once you find your desired treasure GOLD One of the world’s most precious metals, gold has long been traded in tax-free Dubai. The city’s shopping malls are home to many reputable local jewellers which stock everything from delicate earrings and rings to elaborate pieces that would not look out of place on members of the royal family. For a more ‘local’ shopping experience however, visit the Gold Souk in Deira or the indoor gold souk at The Dubai Mall where you can haggle with vendors over your desired treasure. If you can’t find what you want, simply ask to have it made. Alternatively, purchase a souvenir gold bar from the gold vending machine in the world’s tallest building, the Burj Khalifa. The Gold to Go machine can be found on the 124th-floor At The Top viewing platform and on the ground level. Machines are also in Galeries Lafayette at The Dubai Mall and at the entrance to Ski Dubai in Mall of the Emirates.

ART Whether it’s for investment purposes or to decorate a home, a piece of art can serve as a useful and beautiful postcard from Dubai. There are numerous galleries throughout the city displaying and selling works by established Emirati artists as well as pieces by up-andcoming young stars. While choosing an art piece is a deeply personal task, the staff at the gallery will be able to offer information on the artist, their background and their work. Another unique and popular treasure to take home is Arabic calligraphy, whether it be verses of the Qur’an on canvas or in the form of jewellery. Names written in Arabic and worn as pendants have become popular UAE souvenirs.
SHISHA Smoking shisha, or flavoured tobacco through a water pipe, is a popular pastime in Dubai. Enjoyed by men and women in groups and couples, shisha has been a tradition in the Middle East for centuries. The tobacco is available in flavours such as double apple, grape or mint, and much more unusual flavours such as cola and chocolate. The water pipes come in various sizes and colours, and can be bought in souvenir and traditional gift shops throughout the emirate. Less expensive versions are also stocked in many supermarkets. Choose your favourite colour and design, and select a few flavours of tobacco. Be sure to pack the pipe with lots of padding for the journey home, however.

dishes At dusk Anyone with a love of Arabic food is in for a treat this month as hundreds of lavish iftar buffets are served across the emirate. With hommous, grilled meats, freshly baked breads, soups and a whole host of other delicious Middle Eastern cuisine, the iftar is a true feast for the senses. But these full-scale, often opulent affairs represent much more than a hearty repast. Iftar is the meal over which Muslims break their daily fast throughout the Islamic holy month of Ramadan, which this year is expected to fall around August 1st, depending on the sighting of the new moon. During Ramadan, Muslims seek to become closer to God by following a set of religious and spiritual observations. The most visible obligation
is fasting (sawm) between sunrise and sunset. After sunset, Muslims traditionally break the fast with a date and some milk before enjoying harira (Moroccan soup) containing lentils, coriander, tomatoes and dried figs. Soup is considered a key dish at iftar as it is easy to digest and gives almost instant relief from the day’s fasting. Many iftars serve one clear and one creamy soup such as vegetable, chicken, spinach or cauliflower. These are traditionally followed by cold mezzeh such as fattoush (salad mixed with fried pita bread), hummous and moutabel (a smokedaubergine dip). Then comes the hot mezzeh often comprising sambusek (fried pastry stuffed with cheese or meat and spices) and kibbeh (a mix of ground meat and bulgar wheat). Both are popular throughout the Middle East and a must for anyone in search of authentic regional cuisine. However, the highlight of any iftar is the main course. Ouzi, for example, which consists of lamb covered with liquid and cooked on a bed of rice, is often the pinnacle of the meal and many consider that iftar just wouldn’t be the same without it. Ouzi is big and flamboyant, but it’s also a delicious, traditional dish that conveys the warmth of home.
throughout the holy month of Ramadan, Daily fasting is required of Muslims but, as dusk falls, a lavish feast of traditional Arabic cuisine awaits

DRINK TO THAT And what of beverages? Alcohol is forbidden in Islam and never more than in the deeply religious and spiritual month of Ramadan. So what refreshments can one expect? Rose-flavoured milk and kamardin, an apricot syrup, are traditional refreshments. So too is jallab, a syrupy drink made from dates, grape molasses and rose water. This sweet drink is usually served with crushed ice, floating pine nuts and raisins. Tamarhindi, a popular form of date juice, is another favourite. Fruits are the cornerstone of beverages during Ramadan. Look out for brightly coloured creations from blended smoothies to non-alcoholic cocktails. Those with a sweet tooth are catered for too as a range of exotic desserts are also served. Treats such as baklava (a rich, sweet pastry with chopped nuts and syrup or honey) and moghrabiya (panna cotta cooked with milk and
pistachios) are wonderfully indulgent at the end of the evening’s feast. And no iftar is complete without trying basbousa (an almond paste cooked with rose flowers and decorated with almonds) together with regional favourite umm ali (an Arabic version of bread and butter pudding). Ma’amoul (shortbread stuffed with date puree) is also popular and Emiratis often present the sweet to friends and family throughout Ramadan. As Ramadan draws to a close, Eid al Fitr begins after the sighting of the new crescent moon, this year expected to be around August 30th. The charitable theme continues throughout this three-day celebration and Muslim families give meals to deserving causes. Iftar is all about hospitality. As the evening progresses, the occasion traditionally becomes more festive as friends and family members arrive to socialise well into the night.

In the Know Throughout Ramadan you may hear a number of words and phrases repeated. Ramadan mubarak and Ramadan kareem are congratulatory greetings used on the first day of Ramadan. Suhour is the meal served just before sunrise. This is usually a light meal and is the last time a Muslim eats or drinks that day until the sun sets. Iftar is the evening meal directly after the sunset. At the end of Ramadan, people wish each other Eid Mubarak or happy Eid. This marks the beginning of the Eid Al Fitr festival and celebrates the completion of the month of fasting.
WHERE TO GO Virtually every hotel in Dubai will be serving iftar throughout Ramadan. One of the most traditional, however, is expected to be at the Jumeirah Beach Hotel, which has erected a sprawling, luxurious iftar tent complete with live cooking stations. All the traditional fare will be on display as well as some more unusual dishes from Iran and across the Middle East. On Sheikh Zayed Road, the Shangri-La Hotel Dubai, renowned for its excellent cuisine, is an annual favourite among locals. The Crowne Plaza Dubai is also worth visiting as well as sister property the Crowne Plaza Dubai Deira, which will be serving favourites such as hommous, shish taouk and kofta kebab. The Address Downtown Dubai, meanwhile, is putting on a particularly lavish spread with several live cooking stations, traditional coffee and dates.
IFTARS DXB_AUG11-4pgs.indd 40

In New Dubai, the Sofitel Jumeirah Beach, Mövenpick Hotel Jumeirah Beach and Dubai Marriott Harbour Hotel & Suites will be hosting fine iftar buffets together with the Radisson Blu Hotel, Dubai Media City. Sloane’s at Grosvenor House Dubai is welcoming guests to break their fast or simply enjoy the warm family atmosphere and generous buffet throughout Ramadan. Across the road, Le Royal Méridien Beach Resort & Spa is serving its regular à la carte menu as well as an Arabic set menu featuring hot and cold mezzeh, the traditional Arabic dessert umm ali and a platter of exotic mixed fruits.
Traditional iftar will be served in the popular Brasserie restaurant. Atlantis, The Palm, meanwhile, has a fully air-conditioned tent on the beach with fine food, shisha (hubbly bubbly) and spectacular views of the Palm Jumeirah. Closer to Dubai Creek, the Raffles Dubai, Park Hyatt Dubai, Mövenpick Bur Dubai and Radisson Blu Dubai Deira Creek all have excellent iftar buffets. Head to The Hyatt Regency Dubai & Galleria for a rare chance to sample Emirati food. Look out for harees, a mixture of ground wheat and meat, and ouzi meshwai, slow-roasted lamb and rice.

Al Dawaar Al Dawaar, located in one of Dubai’s most established fivestar hotels, is the city’s only revolving restaurant. With 360-degree views over the low-rise buildings of Deira, the Gold Souk, Dubai Creek, Downtown Dubai in the distance and the Arabian Gulf, this is the place to eat while taking in superb panoramas. The restaurant takes approximately one hour and 45 minutes to fully rotate, but it is only the floor that moves while the walls, windows and ceiling remain stationary. Place purses and keys on the window ledge and you will soon see your belongings edging towards the next table. Thankfully, Al Dawaar puts as much effort into the quality and variety of food as the technicalities of its surroundings. The restaurant offers consistently innovative cuisine throughout its international buffet. Try tempting appetisers and main courses from Europe, the Middle East and Asia and a lavish dessert buffet including ice cream, cakes, tarts, cookies and sweets. Anyone wanting a taste of local flavours should visit for lunch on a Friday when traditional Emirati dishes are served. They then enjoy cuisine such as biryani, grilled lamb, chicken and fish and harees, a dish made from wheat with lamb. Khabeesa, a traditional dessert made with nuts, flour and saffron, is another favourite. Traditional iftar beverages include jallab, a syrupy drink made with rose water and dates; erk soos, made with liquorice; and tamerhindi, a sour concoction made with tamarind. Last year’s tournament took place from December 2nd to 4th, with England clinching victory after a thrilling 29-21 win against Samoa in the final. As the opening tournament of the IRB Sevens, many of rugby’s powerhouse nations, including South Africa, New Zealand, England, France, Wales and Australia, fly in to compete for the Emirates International Trophy. The standard was raised even further in 2009 as Dubai hosted the Rugby World Cup Sevens. The men’s tournament featured a series of upsets including underdog Wales taking the Melrose Cup. Meanwhile, Australia won the first women’s competition to be held in a Rugby World Cup Sevens.

Equine empire
The Dubai World Cup takes sport in the emirate to a whole new level each March. Oozing glitz and glamour, the event is the richest horse race on the planet with a prize purse of AED37 million (US$10 million). Along with the Dubai World Cup, there are five further nailbiting Thoroughbred Group races and the full action totals more than AED95 million (US$26 million) in prize-money. The 2009 World Cup was the last to be held at Nad Al Sheba racecourse as the sport moved in January 2010 to Meydan, a new state-of-the-art development spanning seven million square metres and featuring a 60,000-capacity, world-class grandstand. As one would expect from Dubai, a city with more than its fair share of horse racing interest due to the world-renowned Godolphin Stables of the ruling Maktoum family, the racing season is more than just the Dubai World Cup, and visitors to the emirate should check local media for race meets throughout the winter months.

1 Some of Dubai’s malls are extremely big. To save time, pick up a map at the entrance so that you can find the stores you want to visit quickly. In most malls similar outlets are grouped together. 2 For a quiet and leisurely shopping experience, visit Dubai's malls throughout the week to avoid the weekend crowds. 3 When shopping in the traditional souks, be prepared to haggle. Vendors expect it.
4 Before buying gold or visiting the Gold Souk, find out the current market price of gold from your hotel’s concierge to ensure that you do not pay over the odds. 5 Some malls specialise in particular kinds of shopping, for example, home furnishing, luxury labels or high-street brands. Decide what you need from your shopping trip and pick the right mall for you.

Shisha, sometimes referred to as hubbly bubbly, is a water pipe used for smoking flavoured tobacco and can be found at cafés and bars across the city. This is an authentic and traditional souvenir that can be easily bought in Dubai. Tobacco and coals are also readily available.

The khanjar is the traditional dagger of Oman, carried by men in a sheath, decorated with silver and worn on a belt similarly decorated. Ornamental and sometimes very elaborate daggers can be found in Dubai’s souks; a great souvenir reflecting the region’s customs. Traditional Arab dress is also a popular memento for those wanting to take a piece of the Middle East home. Abayas, jalabiyas and kandouras are available to buy at souks and shopping malls alike. Gold is very popular with tourists visiting Dubai. The Gold Souk is a must for those looking to buy jewellery at affordable prices. Dubai’s souks have a huge variety of original and authentic souvenirs such as carpets, calligraphy art, scarves, Arabic oudh (perfume), wooden camels, jewellery boxes and glass perfume bottles. Vials containing desert scenes made from coloured sand are also a good souvenir to take home.

Reeaall? d The Gold Souk can be daunting, but don't be discouraged from taking the plunge. Smoking shisha (hubbly bubbly) is very popular in Dubai. The Middle Eastern water pipe, which is thought to have originated around 500 years ago, purifies and cools the smoke from flavoured tobacco heated on top of the pipe by coals. It costs approximately AED35 to AED50 to smoke and the most popular flavours are apple, mint, strawberry, apricot and grape.
87
Although relaxing and sociable, estimates suggest that an hour of shisha smoking equates to inhaling as many as 50 cigarettes. If you’re after an authentic taste of Middle Eastern culture, however, smoking shisha is a must. Just remember not to inhale too deeply, blow down the pipe to get rid of smoke build-up in the water and share your shisha amongst friends. This is a social tradition and to be enjoyed in groups or couples.
