Experience A day of spa pampering
Don’t know where Swedish starts and shiatsu ends? A few days in Dubai will fix that. With an array of first-rate spas, such as the Mandara Spa at The Monarch Dubai, this is the ideal city to indulge in some five-star pampering. Whether you’re keen on massages, facials, scrubs or wraps, there’s a treatment to suit every type of traveller. When people are visiting on business they don’t always have time to experience Dubai’s tourist scene. However, there are plenty of activities that give you a slice of Dubai life without eating into busy schedules. The Big Bus Tours covers old and new Dubai in just two hours. During the day, this hop-on, hop-off facility with a guided commentary allows one to visit all the must-see places such as Dubai Museum and Palm Jumeirah. If time is limited to evenings, I recommend booking in for a nighttime desert safari (turn to page 116 for details). This offers the ultimate Middle Eastern experience, from dune bashing and camel rides to henna painting and belly dancing. Eating alone can be daunting, so for a bite to eat try Souk Al Bahar near The Dubai Mall. The dining options are endless and the views of The Dubai Fountain are so stunning, you’ll soon forget you’re dining solo. For photograph opportunities, the Dubai International Financial Centre is amazing. The futuristic architecture looks really effective by night. If you have a weekend free, the Hajar Mountains, located 100km south of Dubai city, is one of the region’s beauty spots. Four-wheel drive vehicles are the best way to explore, so if you don’t have access to a sturdy car, speak to your hotel concierge about hiring a tour guide.

Newly built and known for its decorative mihrabs (ornamentally embellished indoor prayer areas), Al Farooq Omar bin Al Khittab Mosque is one of only a few mosques in the UAE open to non-Muslims , so it’s definitely one to add to your tourist trail. 18

Does it take you five hours to get dressed, or do you insist on cleaning your footwear with fine Champagne? If the answer to both is a resounding ‘no’, but you do wear a business suit, at least you have one thing in common with the godfather of modern garb, Mr Beau Brummell. If the name sounds oddly familiar, that’s because the British dandy’s moniker has been immortalised in popular culture from ballads to the big screen. In the 1800s, Brummell popularised the full-length trousers, jacket and neck tie ensemble that has over the years morphed into the modern suits we see and wear today. At the time, his radical dress sense and attention to grooming etiquette may have made Brummell an oddity, but few these days would argue with his belief in bathing daily (though some might doubt his usage of Champagne).

Looking good in a suit is so much easier when you go for the right cut, the best cloth and appropriate style for your shape. Dubai has a long tradition of fine bespoke tailoring and there are dozens of reputable craftsmen to be found, especially around the Textile Souk in Bur Dubai and Karama. However, in recent years the sartorial stakes have been upped in the emirate with an influx of high-end tailors opening bespoke boutiques, which cater to a plethora of well-heeled residents and
executive guests. The suitmaking skills now available are impressive. The word ‘bespoke’ originates from the 17th century. Once a gentleman had chosen his preferred cloth, it had ‘been spoken for’. It is also important to stress the distinction between ‘bespoke’ and ‘made-to-measure’. Bespoke clothing does not use an existing pattern and is created from scratch to your size and taste. Made-to-measure, on the other hand, means that suits are adjusted from an existing template. While this can be sufficient, bespoke is best.
Dubai’s finest With 40 years in the business, Leonard Logsdail was the youngest tailor to have a workshop on London’s famous Savile Row. Now that expert touch is available in Dubai at the Logsdail London atelier in Al Quoz (04 3233148). There are three levels of service available. An off-the-rack suit, which can be altered to fit, will cost around AED4,000. Next is a bespoke suit measured in Dubai and created according to your preference of style and fabric, which will cost
around AED9,000. Top of the range is the Signature Suit which will be measured, cut and fit by Logsdail himself, flying in and out from New York. This level of attention and expertise will see you pay around AED17,500 to look a million dollars. Ascots & Chapels (04 4270124) has a proud history dating back to 1871 and recently opened three bespoke outlets here in Dubai: at Souk Al Bahar, Dubai International Financial Centre (DIFC) and Dubai Marina Mall. Made to measure If you don’t have the time or resources for a bespoke suit, many gents’ high-end fashion brands offer a made-to-measure service. Dunhill is known the world over for men’s apparel and accessories, a range that was originally conceived by Alfred Dunhill to accompany the booming motor industry. Having dropped the ‘Alfred’ and undergone something of a rebranding in the last decade, Dunhill is again viewed as a wardrobe staple for the discerning gentleman. Ready-to-wear suits, shirts and trousers are available in store, but there is also a made-to-measure service offering a great deal of options, from lapel size to number of buttons. Sounding like a casual surfers’ café, the culinary truth is far different, with a menu dedicated to some of the finest fresh produce on the planet. Visit in the evening for dinner and enjoy a walk through the pristine grounds of the One&Only Royal Mirage. Tranquil and sophisticated, this stroll sets the tone for the meal ahead. Whether you’re dining indoors, out on the terrace or down in the private beach pavilions, the décor and ambience seamlessly blend casual with formal – so while the seating and table settings might be simple, the service and attention to detail is polished to perfection. While most beach bars rely a picture postcard view, Beach Bar & Grill wins plaudits for the fine menu. For a light starter, try the selection of Arabic mezze, consisting of hommous, fattoush, baba ganoush, brilliant moutabel and an inventive Moroccan carrot salad – all served with labneh and pita bread. Another must-try is ‘The Beach’ platter. Shimmers Few places in Dubai can match this littleknown beach restaurant for surroundings and atmosphere. With its secluded setting, among the palm trees on the beach, and spectacular view of the Burj Al Arab and Madinat Jumeirah, Shimmers shines at night. Blessed with a multitude of dining options, here is a culinary gem made for romantic diners who like to share shisha on majlis-style seating, down on the sand. The menu is relatively simple and quite snacky in essence; soups, wraps, sandwiches and pasta make up the bulk of the bill of fare. But while the dishes aren’t complex, they’re they’re extremely well done. The tasty barbecued delights are not to be missed and there is also a new afternoon tea option that has been introduced. Wavebreaker Located on a prime beach strip, the Hilton Dubai Jumeirah is another established property that has benfitted greatly from the emergence of ‘New Dubai’. The hotel now enjoys a fabulous location at the heart of The Walk – Dubai’s coast-hugging outdoor shopping and dining destination. Wavebreaker is a relaxed dining and drinking spot that ticks all of the boxes. The dress code is beach chic, the menu is simple, the location is right next to the shore and overlooking the Palm, Jumeirah. Barasti At times, itâ&#x20AC;&#x2122;s hard to explain to visitors the enduring appeal of Barasti. Other beach bars have come and gone over the years and while finer places exist, none are as popular as this relaxed beach-side haunt. Of course, the development of Dubai Marina and Jumeirah Beach Residence has no doubt helped, but Barasti has taken the whole concept of a laidback sundowner destination, with a sideline in bar food, and made it its own in Dubai. Weekends are a particularly busy affair at Barasti and the party gets started early with revelers enjoying brunch and afternoon drinks, so be well prepared if you are intending to dine. The lively atmosphere is bolstered by live DJs, theme nights and drinks promotions, which run throughout the week. Recently, more of a lounge area has been added, with relaxed sofas and moody lighting giving the bar a more upmarket appearance. On the food front, expect the expected, but with some five-star flourishes. For instance, the Barasti fish and chips comes with a tasty tarragon green pea puree. For millennia pita bread has been a mainstay on Arabic menus and long may it continue
As one of the most cosmopolitan cities on the planet you’d be hard-pushed to find a national cuisine that is not represented in Dubai. But if you’re keen to experience Arabic dining (a rite of passage for all UAE visitors) you won’t be disappointed by what’s on offer. Rich flavours and spicy aromas are synonymous with Arabic cuisine, as are piles and piles of fresh fluffy white pita bread – a staple Middle Eastern food. The background of pita has many versions in historic literature, but its exact genesis remains unknown. Various cultures have claimed ownership, but most accounts point towards the Middle East as the originator. What we know is that it is one of the oldest recipes known to mankind. The 10th-century Arab cookery book, Kitab al-Tabikh by Ibn Sayyar al-Warraq includes six recipes for pita and experts believe the bread’s history extends back a further five thousand years. While the recipes and cooking techniques have doubtlessly evolved over the millennia, by and large pita has remained true to its original serving style. “In Arabic households pita is traditionally used to scoop up food,” explains Mokhtar El Kaholy, head chef at The Palace – The Old Town’s Arabic restaurant, Ewaan. “For breakfast we eat it with cheese and for lunch and dinner it’s served on the side of a main dish. It’s not customary to use cutlery as the typical way to eat it is to rip it apart with one’s hands.” In terms of ingredients, pita bread recipes differ from region to region but the basic elements are flour, water, salt, sugar, butter and yeast. The sticky, wet dough is sculpted into rounded balls and placed in the oven, where (depending on the temperature) it can be transformed in as little as three minutes into a golden brown, puffed pocket. “There are many different ways to cook pita,” says El Kaholy. “I take the traditional ingredients and combine them with other elements, such as ghee (clarified butter) and yoghurt.” Undeviating in tastiness, it’s no surprise that pita is such a dominant part of the Arabic diet. But what of the anti-carb brigade? In an age when carbohydrates are seen as the route of all diet downfalls are the days of pita numbered? “Never,” says El Kaholy emphatically. “Bread is a huge part of the Arabic culture. We share it with family and friends and it is served at every meal. Mothers teach daughters their culinary skills, which are passed on from generation to generation. Ultimately, it’s rooted so deep in our traditions it will never change.”

Spread across 7,396 yards and combining the great traditions of Scottish golf with an Arabian environment, The Address Montgomerie Dubai is consistently ranked as one of the Middle East’s top courses. It’s a testing game for all levels of golfer, but don’t be intimidated. With no handicap restriction, beginners as well as seasoned players are at ease on these perfectly manicured lawns. “The best feature of this course is that it challenges all levels of golfer,” explains Rhys Beecher, senior golf instruction manager. “We have a selection of tee boxes, which allows the course to play the appropriate length for the standard of golfer.” That said, there are some fiddly spots to look out for. The infamous 18th hole, which is a long par-5 surrounded by water is said to be one of the toughest shots on the course. Likewise, the sixth and ninth holes, which sweep round water hazards are also quite sweat inducing. “These three lakes have accumulated quite a few balls over the years,” says Beecher. For those who want to gain a deeper knowledge and improve their playing skills, the indoor swing rooms have the latest computerised video swing analysis, and short game practice areas are available to help you with everything from putting stroke to a major overhaul of your backswing. Sculptured around desert dunes, The Majlis was the first grass course in the Middle East. Known for its tricky holes, this is a place where grown men weep. “The third shot into the par-5, 18th is extremely difficult,” says Stephen Deane, head academy professional. “The player is faced with water and a narrow green, with the added pressure of peering eyes from the clubhouse.” The Faldo was designed by the legendary Nick Faldo and is also a popular spot with veteran players. The tickets have sold out and the grandstands are bursting with eager fans. In the F1 Village and Oasis areas, families are buying t-shirts to support their favourite driver and team. In the media centre, hundreds of reporters are glued to a giant cinema-like screen, feeding up-to-the-minute news of the race around the world. Itâ&#x20AC;&#x2122;s hard not to get excited. The unmistakable noise of a Formula One car, the anticipation, the buzz, the team tactics, celebrities, royals, concerts and parties. Welcome to the 2011 Formula 1 Etihad Airways Abu Dhabi Grand Prix, the event of the year.

It is the world’s first and only day/night race, starting in the afternoon and ending after sundown. It’s a spectacular time of day as the huge red Arabian sun sets behind the West Grandstand and Abu Dhabi skyline. As the day turns into night, powerful floodlights keep the circuit illuminated so the drivers do not see any visible difference.

Each year, the Grand Prix attracts a sellout crowd of 50,000 people. On track, the world’s best drivers speed around the 5.55km Yas Marina Circuit, which wraps around a stunning marina and through the five-star Yas Viceroy hotel. Afterwards there are huge concerts, glamorous parties, gala dinners, family events and more. Those with three-day tickets are invited to go behind the scenes on November 10 and walk down Pit Lane. The action kicks off on Friday, November 11, with practice sessions, GP2, Porsche GT3 and Porsche Mobil 1 Supercup, before the Britney Spears concert for ticket holders in the Yas Arena. The stakes are raised on Saturday, November 12, as the F1 drivers vie for pole position during qualifying. GP2, Porsche GT3 and Porsche Mobil 1 Supercup take to the track as well, while Incubus and The Cure hit the stage in the evening. Race day brings fierce competition as the drivers battle for positions on the podium. Expect the finals of the support races, before the legendary Paul McCartney wraps up what will no doubt be an actionpacked weekend.

For those unable to secure one of the 50,000 tickets to the Grand Prix, there is still a multitude of ways to get involved. Bars throughout the city will be screening coverage from Yas Island and there will be a live broadcast with commentary at the F1 FanZone on the Corniche. Even if you’re not in Abu Dhabi on the Grand Prix weekend, you can still get into the Formula One spirit. Yasalam, which is the Arabic word for ‘amazing’ or ‘wow’, is a month-long programme of exciting events, concerts and activities across the city in the lead-up to the Grand Prix. On the Corniche, the F1 FanZone attracted 404,000 visitors over 18 days in 2010 with its schedule of community events. This year promises more motorsport fun with interactive simulators, remote-control car racing, driver signings, official Formula One team merchandise, podium photo opportunities, kite flying demonstrations and live outdoor screenings of the races.

Vettel’s dream run Red Bull’s Sebastian Vettel may have dominated the 2011 season, winning the driver’s championship in Suzuka, Japan, last month and claiming the record as the youngest driver to win back-to-back world championships, but can he win again in Abu Dhabi? As the only F1 driver to have taken the chequered flag at Yas Marina Circuit it certainly seems likely. Last year he claimed pole position and top spot on the podium in Abu Dhabi, scoring the world championship for the first time and snatching glory from teammate Mark Webber, Ferrari’s Fernando Alonso and McLaren’s Lewis Hamilton. In 2009 during Abu Dhabi’s debut Grand Prix, the young German started second on the grid and leapfrogged Hamilton on the first pit stop to take the lead and stay there. While the drivers and constructors championships have already been determined for the 2011 season, the battle is on to see whether someone can knock Vettel off the top of the Yas podium come race day. Will it be 2008 champion Jenson Button, the moody Spaniard Alonso, Aussie battler Webber or British hero Hamilton?

Past Dubai International airport and Mirdiff on Al Khawaneej road is Mushrif Park, 1,300 acres of natural desert parkland. Within the park is Mushrif Equestrian & Polo Club (MEC). Here, all levels and ages of riders are catered for, with group and private lessons available. “The park is fabulous,” says Lisa Roberts from the MEC. “It’s full of trees and wildlife and there’s lots of different terrain. It’s a natural ghaf [type of tree] forest, so it’s perfect for a tour.” An unusual experience on offer is the chance to ride under the moonlight. Every month, at the time of the full moon, the club organises an atmospheric night-time trip through Mushrif Park. Even complete beginners are welcome for these rides, an evocative, sensual experience. MEC also has two regular women’s coffee mornings, where ladies meet and have horse riding lessons (beginners or intermediate) before getting together for a coffee and a chat. “A lot of women meet in shopping malls. Emirates Equestrian Centre Best for: Desert hacking and riding lessons A few miles outside Dubai, near Bab Al Shams Desert Resort & Spa, sits the Emirates Equestrian Centre (EEC). It’s an idyllic setting for riding in the desert. The dunes stretch for miles around and those taking part in a hack can spot gazelles, lizards and other native wildlife. The EEC is an impressive, purposebuilt venue. What it lacks in proximity to the centre of Dubai it makes up for in facilities, which are excellent. There’s an international arena, as well as two indoor and two outdoor arenas, all equipped with floodlights. The facility is British Horse Society (BHS) approved; an important consideration for safety and the standards of its riding instructors. Staff can cater for all levels of riders, from novices to the more advanced and all are welcome. The main
disciplines are show jumping, dressage and eventing, which has become popular in recent years in the UAE. There’s even a cross-country course. The EEC can provide pony rides, lead rein lessons for children, child and adult group lessons and private lessons. Prices vary: discounts are available on prepaid cards where customers pay in advance for a number of lessons. Both EEC and Desert Palm maintain good relationships with top international riders, who frequently visit and offer tuition to advanced students.

Having lived in Dubai for 14 years I’ve witnessed a lot of changes. The city’s expansion has been phenomenal and like most things, the equestrian scene has developed dramatically. Dubai enjoys an excellent reputation as one of the world’s most sought-after destinations and the place to experience the best equine activities. For that reason we’re now seeing a lot of tourists visiting the area to watch and participate in tournaments. As well as competitions, there are a variety of horse-related activities to try. Stable tours are extremely popular in Dubai and a must-do and for those with children. Of course, not everyone has had experience with horses, so you can also book in for a horse riding lesson. It’s a great way to pick up skills and develop your confidence. Usually my weekends are about resting and spending time with my family, but I often go riding to refresh myself

and recharge my batteries. Desert horse riding is one of my preferred pastimes. There’s nothing like hacking over the sand. Tours run regularly and if you time it right (early or late) you can watch the sun set or rise over the dunes. I also enjoy watching polo and every Wednesday, Friday and Saturday (except during the hot summer months) Dubai Polo & Equestrian Club members play matches against each other. At least once a month we hold major tournaments and a nice way to spend an afternoon is to pack a picnic and watch the matches from the field. Visitors to Dubai should take the time to check out the equestrian scene, but only visit stables with good reputations. Your hotel concierge should be able to advise, but if you’re unsure, look at the overall cleanliness, temperature and building conditions of the stable, as this is often a reflection of how well the animals are being cared for.

Formula One came into existence in 1946 when the Fédération Internationale de l’Automobile (FIA) announced it as the premier single-seater racing category in world motorsport. The ‘formula’ refers to a set of rules and regulations to which all drivers and cars must comply and tries to ensure a driver’s safety while pushing the boundaries of the sport and creating a spectacle for audiences. It wasn’t until May 13, 1950, that the FIA organised the first official world championship for drivers using the Formula One rules. The championship was to be staged across six major circuits in Europe as well as the Indianapolis 500. Since then it has gone from strength to strength and become the richest sport in the world, with an increasing audience. It has taken more than 60 years to build F1 from a modest motor race to the billion-dollar business it is today.
The 1950s In the early Grands Prix of the 1950s, Italian teams Ferrari and Maserati were best positioned to win. French manufacturer Talbot and the UK’s BRM also competed along with a number of private cars, but it was Italy’s Alfa Romeo that dominated the 1950s season, winning all races apart from the Indianapolis 500. Italy’s Giuseppe Farina won the inaugural championship in an Alfa Romeo 158, with Argentina’s Juan Manuel Fangio taking the 1951 title in an Alfa Romeo 159. Both cars were built using only prewar materials and technology. Alfa Romeo withdrew at the end of the 1951 season after the Italian government refused to fund the development of a new car. With little competition from BRM or Talbot, Ferrari won the 1952 and 1953 seasons with Italy’s Alberto Ascari at the wheel. In 1954 Lancia and Mercedes-Benz joined, hiring Ascari and Fangio respectively. The decade’s racing scene belonged to Fangio, who won the title in ’51, ’54, ’55, ’56 and ’57 and is still known as the grand master of Formula One. Safety standards were low and the death toll of the decade was gruesome, resulting in the deaths of 15 drivers.

The 1960s The 1960s were an era of British dominance, ushered in by Mike Hawthorn’s win in 1958. It was the time of Stirling Moss. Although he never won a world title, he is still considered one of the best British drivers of all time. The British Racing Green Lotus was the car of the moment and in 1968 the team drove the first cars to carry advertising. They arrived at Spain’s Circuito del Jarama in the red, gold and white colours of Imperial Tobacco’s Gold Leaf brand.
The 1970s The turning point for Formula One and the way it was managed came when Bernie Ecclestone purchased the Brabham team in 1971. With a seat on the Formula One Constructors Association (FOCA), he was soon making waves in the world of racing. In 1978 Ecclestone became president of the association and would be instrumental

in changing the face of F1 forever. Until then circuit owners negotiated with teams individually and even controlled their income. Shifting power to the association, Ecclestone masterminded ‘package deals’ in which circuit owners would have to surrender advertising track rights to have Formula One races meet at their track. Brazilian Emerson Fittipaldi became the youngest driver to win the championship at the age of 25 (this record has since gone to Fernando Alonso, Lewis Hamilton and most recently Sebastian Vettel). Britain’s Jackie Stewart rose to challenge his title and together they dominated the Formula One scene for the entire first half of the decade. Technological changes included the introduction of the aluminium sheet monocoque chassis in place of the spaceframe design and the introduction of ground effect aerodynamics to increase cornering speeds.

Brazil’s Ayrton Senna and Nelson Piquet, as well as France’s Alain Prost, dominated the 1980s with British teams Brabham, McLaren and Williams winning every title of the decade. By 1988, the focus was on the rivalry between Senna and Prost, which continued until Prost’s retirement in 1993. Yet theirs wasn’t the only infighting. With Ecclestone at the helm of the FOCA, war was waged against the Federation International du Sport Automobile (FISA) over the television rights and technical regulations. FOCA boycotted the San Marino Grand Prix in 1982 and threatened to create a rival version of Formula One until FISA handed over the television rights to races in 1981, placing the jewel in the crown of Ecclestone’s empire. The development of electronic driver aids started during the 1980s. Lotus began to develop a system of active suspension, which first appeared in 1982. By 1987, this system had been perfected and was driven to victory by Senna in the Monaco Grand Prix that year.

The Argentinean government eventually sponsored him to race in Europe after the end of World War II. He raced for Maserati and then Mercedes, competing in 12 Grands Prix and winning eight times. Ayrton Senna Born in Brazil, 1960 Ayrton Senna is considered one of the greatest drivers in F1 history. His debut race was the 1984 Brazilian Grand Prix in Rio de Janeiro and his first podium was second place at the Monaco Grand Prix in the same season. He claimed world championship titles in 1988, 1990 and 1991. Senna was killed in an accident in 1994 at the San Marino Grand Prix while driving for Williams Renault. Michael Schumacher Born in Germany, 1969 Statistically speaking, Michael Schumacher is the best racing driver of all time, with seven world championship titles and many driver records. He is the only driver in F1 history to have stood on the podium every race of a season (2002). He won the most races in a single season (13) in 2004 and holds records for the most race victories, fastest laps and points scored in a single season.

The 1990s The cost of the technological advances of the 1990s put an end to many teams’ participation in the sport. Since 1990, 28 teams have withdrawn from F1, leaving the ‘Big Four’ – McLaren, Williams, Renault (formerly Benetton) and Ferrari – to win every world championship from 1984 to 2008. The FIA frequently changed the rules to improve on-track action, with result-manipulating ‘team orders’ banned since 1992. After the deaths of Ayrton Senna and Roland Ratzenburger in 1994, there was a crackdown on safety, resulting in slower cornering and other steps to focus on the driver’s skill. The results are controversial, with a decline in overtaking as a result, detracting from the excitement of the event, but no driver since Senna has died behind the wheel of an F1 vehicle.

It was in 2000 that Michael Schumacher started his record run of five consecutive world championship titles, all with Ferrari. After this landmark success, Schumacher retired in 2006, but has returned to the sport for the last two seasons. Since then, Finland’s Kimi Raikonnen, Britain’s Button and Hamilton and Germany’s Vettel have stolen the limelight and helped pave the way for a new generation of young drivers.

Hunters in harmony The bond between the falcon and the Bedouin has always been strong, based on the bird of prey’s ability to hunt game for food

The national bird of the United Arab Emirates, the magnificent falcon adorns every official document in the country. Prey caught by the birds helped to feed Bedouin families, contributing in a practical way to the survival of the nomads in a hostile desert environment. As a result, the birds are respected, admired and revered in local culture and people from all backgrounds keep and breed them. Hunting with falcons has been banned in the UAE to protect species such as houbaras (bustards) or karawan (stone curlews) – the natural prey which were becoming endangered species. Despite this, the husbandry of falcons still remains of paramount importance to local people and many falcon enthusiasts travel abroad on hunting holidays to Africa and Asia. The admiration of these majestic birds is passed from generation to generation. Hunting plays a less significant role, with enthusiasts often simply training and flying the birds for pleasure. Falcons think with their eyes. Because their eyesight is so sharp they can be upset by large crowds of people or unfamiliar places. Birds can be calmed by placing a hood over their heads, locally called a burqa. When they cannot see, they are immediately calmed. Training a falcon to return to the owner’s hand is a slow and instinctive exercise in bonding. The falconer begins slowly, allowing the falcon to roam for short distances. He uses a lure, usually a reward of food, to bring the falcon back. The two major breeds of falcon native to the UAE are the saker (al hurr) and the peregrine (al shaheen). The process of breeding and registering the birds is taken seriously. There are even falcon passports, aimed at stamping out illegal trade. Most birds are bought in August before the sport season starts in September. This marks the busiest time for breeders. Tall birds are prized, especially the gyrfalcon/peregrine mixed breeds. The gyrfalcon are revered for their good looks, but being Arctic birds are less adaptive to the heat of the desert. Breeding a gyrfalcon with a peregrine introduces stamina and the ability to cope with the harsh desert climate. Birds are measured for height, breadth and length from shoulder to tail. They are also analysed for athleticism. White birds and those with certain shades of brown are considered more beautiful among local falconers and are consequently more expensive. Deals are done, birds literally change hands and the falconry community prepares itself for a winter of sport.

Shisha, sometimes referred to as hubbly bubbly, is a water pipe used for smoking flavoured tobacco and can be found at cafés and bars across the city. This is an authentic and traditional souvenir that can be easily bought in Dubai. Tobacco and coals are also readily available. The khanjar is the traditional dagger of Oman, carried by men in a sheath, decorated with silver and worn on a belt similarly decorated. Ornamental and sometimes very elaborate daggers can be found in Dubai’s souks; a great souvenir reflecting the region’s customs. Gold is popular with tourists visiting Dubai. The Gold Souk is a must for those looking to buy jewellery at affordable prices. Dubai’s souks have a huge variety of original and authentic souvenirs such as carpets, calligraphy art, scarves, Arabic oudh (perfume), wooden camels, jewellery boxes and glass perfume bottles.
