Sometimes guests arrive late in the night and want to explore the city after hours. Although many places will be closed, I would recommend hiring a car and driving past the Spice and Gold souks in Deira, through Shindagha Tunnel past Heritage Village, the Dubai Museum and Bastakiya. These areas around Dubai Creek are the oldest in Dubai, and Bastakiya in particular is worth visiting with its restored wind towers and traditional Arabian architecture. Guests can walk along the banks of the Creek and enjoy the nighttime atmosphere. I would then drive through Jumeirah past the Burj Al Arab, The Palm Jumeirah and Dubai Marina to get a good feel for what Dubai looks like. I would stroll along The Walk at Jumeirah Beach Residence in the marina. The strip has a nice atmosphere with lots of hotels, coffee shops and restaurants that close around 3am. On one side of the The Walk is the sea and the other side high-rise buildings. The Walk is relaxed and has a different feel to anywhere else in the rest of the city. There will be many pubs, bars and clubs open until 2 or 3am. Neos on the 63rd floor of The Address Downtown Dubai has excellent views of the Burj Khalifa and Downtown Dubai. Other good nighttime venues include Buddha Bar at Grosvenor House Dubai in the marina and My Bar here at the Dusit Thani Dubai.

The seamaster ploprof 1200M In 1970, Omega launched the Seamaster Professional 600, one of the most robust and seaworthy divers’ wristwatches ever manufactured. Affectionately called the ‘Ploprof’, (the first letters of plongeur professionnel, French for ‘professional diver’), the watch has been updated and relaunched. Water resistant to 1,200 metres, the Ploprof not only has a bi-directional locking bezel, but also comes with a brushed mesh, shark-proof bracelet. The watch is equipped with a co-axial calibre 8,500. Its case cannot be mistaken for that of any other watch with the screwed-in crown, located at 9 o’clock, positioned under a protective buffer allowing freer wrist movement and preventing any unintentional manipulation. At 2 o’clock is the characteristic bezel-release security pusher with an orange anodised aluminium ring. Pressing the pusher allows the bezel to be rotated in either direction and then locked firmly in position, ensuring that it cannot be accidentally shifted during a dive. The Ploprof has an automatic helium escape valve located on the side of the case at 4 o’clock. This feature allows helium atoms to escape during decompression and is particularly useful for professional divers operating from diving bells. The oversized minute hand, which plays such an important role for divers, is crafted from orange anodised aluminium for legibility.

Parmigiani Fleurier One-One-Five and Pershing Chronograph For its first complete collection of aquatic chronographs, Parmigiani Fleurier has teamed with Pershing, one of the most prestigious boatbuilders in the world. The two brands have produced the Pershing Collection, which features two lines: the limited-edition ‘one-one-five’ timepiece, available in 18-carat rose gold and 950 palladium, and the Pershing Chronograph, available in steel with four dial variants. The ‘one-one-five’ comes in two dial versions, tan and silver, each of 115 pieces, incorporating the self-winding chronograph movement calibre PF 190. It also has an hour and minute display, as well as chronograph seconds in the centre, a 12-hour counter, 30-minute counter plus the tachometer and large date indicator. The case is water resistant to 660 feet and has a rotary bezel. The non-limited-edition Pershing Chronograph comes with a graphite, silver, blue metal or amaranth dial. This steel-only piece is inspired by the silvery reflections of Pershing yacht hulls. It incorporates the new Parmigiani Fleurier ‘house’ self-winding chronograph movement calibre PF 334. Girard Perregaux Sea Hawk A professional diving instrument, the Sea Hawk Pro 1000m was launched in 2006 and is a certified diving watch. Featuring a hard-wearing rubber strap and rugged steel case, the watch has luminescent indices on the dial and the hands for instant readability, even underwater in poor light conditions. For optimal integration and wearing comfort, the crown is positioned at 4 o’clock and is protected by a crown shield. It features a unidirectional rotating bezel and helium relief valve, which prevents damage to the case due to helium seeping into the watch after a deep dive. It also comes with a safety folding clasp with rapid extension system to allow the watch to be worn on top of a diving suit. Longines hydroconquest The HydroConquest is ideal for divers and enthusiasts of the open seas. Fitted with the L667 automatic self-winding mechanical movement, the watch produces 28,800 alternations per hour and offers a power reserve of 46 hours. Its abyss black dial, embellished with a ‘big12’ and superluminova luminescent indices, shows the date, hour and minutes and has a subdial for the seconds at 9 o’clock and the counters of the chrono mechanism: 30 minutes at 12 o’clock and 12 hours at 6 o’clock. Take the weight off your legs at Al Bayt lobby lounge and indulge in a refreshing afternoon tea. Served from 2 to 6pm daily, the package includes a selection of finger sandwiches. Whether it’s egg mayonnaise, cucumber and mint on white bread, smoked salmon and creamed cheese on brown bread or chicken with chive mayonnaise on tomato bread, there is something to suit all tastes. The savoury treats are followed by freshly baked scones accompanied by strawberry jam and clotted cream. It is widely believed, however, that people in East Asia were brewing and drinking tea hundreds of years before. • Duchess Anna of Bedford, one of Queen Victoria’s ladies in waiting, is thought to have invented afternoon tea in the 1840s because she complained of being hungry while waiting for dinner, which was served at 8.30 or 9pm. She requested an afternoon meal of tea, thin sandwiches and small cakes be secretly brought to her boudoir. Cin Cin Visit this avant-garde bar and rub shoulders with residents and visitors alike. A popular venue, with intricate floor designs and contemporary furnishings, Cin Cin has become a true destination for the urban set. The Champagne selection also happens to be one of the best in the city with Moët & Chandon, Veuve Cliquot and, more unusually, Dom Pérignon all served by the glass. Look out for the latter’s vintage 2000. Meanwhile, conoisseurs with cash to splash might like to try a bottle of Laurent Perrier Rosé NNV or the 1998 Dom Pérignon Rosé Vintage. A baby grand piano nestled under the stairwell provides a live entertainment option. One of Oeno’s highlights, however, is the Champagne list, which is every bit as impressive as the outlet itself. first date For centuries, dates have been a source of nutrition and a symbol of hospitality in the Middle East. Concierge discovers that dates are not only a regional delicacy, but have a long and legendary history

Love them or loathe them, dates are relished not just in the Middle East, but the world over. With their dark, waxy skin and soft, sweet flesh, dates were sold extensively along the trade routes of yesteryear and played an important role in the lives of the Arabian Bedouin, who relied on the fruit as a premium source of vitamin C, carbohydrate, fibre and potassium. Today, dates are used as a gesture of hospitality to greet guests, to break the fast during Ramadan and as a sweet souvenir to take home to friends and family. To appreciate the relevance of the date palm to the region, take a drive into the heart of the country and the garden city of Al Ain. Located a scenic 90-minute drive from Dubai in the emirate of Abu Dhabi, the modern city of Al Ain is built around no less than five date-producing oases – Al Ain, Al Jimi, Al Qattara, Al Hili and Al Mutaredh – which together cover five million square metres and sustain around 375,000 date palms, irrigated by the traditional falaj system.

Harvest time A leafy retreat from the midday sun, it is an educational experience to take a quiet stroll through the shady lanes under a dark green canopy. During the summer months, when the dates are ready for gathering, you can see the skilled labourers shimmy up the broad trunks with knife in hand, to harvest the crop. Dates generally take six to seven months to develop their sugary characteristics, before being harvested by hand. When the first date flowers appear, pickers inspect for any signs of disease and when the dates begin to form, the pickers return to thin the date branches, picking the fruit by hand to reduce numbers. This gives the remaining dates more room to grow, producing larger sized fruit with a different texture. Several weeks later, the dates begin to soften and mature. This is when they are most susceptible to disease and damage by birds. To protect them, pickers cover bunches with well-ventilated cloth bags, much like the olive-harvesting process. Different varieties of dates vary in sweetness, size and softness, but the stage at which they are picked also greatly affects the resultant taste and texture.
D at e ta l e s • It is said that a man was so distressed about the ugly, small, black fruits that grew on his trees that he appealed to the Prophet Muhammad who appeased his concerns by confiding that these were his favourite dates and blessed the fruits. Today, the small, black ajwah date is revered as the rarest and most expensive date available primarily due to Prophet Muhammad’s blessing attributing religious significance and value. He also said, “Honour the palm [as you would] your father’s sister.”
• From its broad fruit-laden branches down to the sturdy trunk, the date palm is also known as the ‘tree of life’. An ancient Persian hymn cites no less than 360 qualities of the palm and every inch of the tree can be used from the trunk as house-building timber and ribs of large leaves as crate material to fibrous rope and livestock fodder made from crushed date stones. • The Berbers of North Africa have a more emotive saying that stresses the uniqueness of the palm. ‘The culprit who would destroy a flourishing palm would murder 70 holy men.’
Sparkling date juice, usually a combination of apple juice and date syrup, is a refreshing beverage served as a welcome drink and as a celebratory toast for special occasions Balah is when the dates are still hard and have not ripened, but they are turning to yellow from green and they are sweet. Rhutab is when the fruit has turned from yellow to brown, but is still not fully ripe. When the rhutab is dried, it becomes tamr. Dates are also classified according to their fleshiness: soft dates (barhee, halawy, medjool), semi-dry dates (dayri, noor, zahidi) and dry dates (thoory). The soft dates are rich in glucose and fructose, whereas the drier dates have a larger percentage of sucrose. Up to 80% of the date flesh is sugar. Aside from their use as a fresh or dried fruit, with excellent storage capacity, dates are commonly used in confectionery items. Dates are mixed with Belgian chocolates to make date truffles, or marzipan, shortbread and pistachio to make fancy biscuits and other gourmet delicacies. There is even a date drink. WELCOME MOUTHFUL Many of Dubai’s top hotels will offer a traditional welcome to guests in the shape of coffee (gahwa) and dates, served on arrival. As per tradition, the coffee is never sweetened with sugar and instead fresh dates are offered as a sweet accompaniment to the aromatic beverage to refresh and sweeten the palate between each mouthful.

Who’s got dhibs? Dhibs is the natural syrup that comes from dates. It was discovered centuries ago while harvesting when the pickers of the day filled their burlap-woven sacks with dates and noticed that the pressed dates at the bottom of the sack secreted a syrupy substance. Today, jam and honey made from date syrup, as well as sweets made with date sugar rather than cane sugar are popular regional desserts. Known as the ‘fruit of the desert’, dates are also a valuable source of nutrition. In the heyday of Bedouin tribal life, dates were served with camel’s milk as a complete standalone meal. The fruit contains almost every nutrient required by the human body and some modern dieticians recommend dates to reduce the risk of heart disease.
As well as health benefits, dates have a religious significance and are mentioned in the Qu’ran and the Bible. Muslims use dates to break their fast during Ramadan because the fruit’s high sugar levels offer an immediate energy boost. Dates are common for daily consumption as well as for special occasions. For example, Indians traditionally give dates at Diwali as gifts to friends and family. Arabs buy larger platters of dates and related confectionary items, whereas Europeans tend to purchase smaller quantities – primarily for gift-giving. If you have a sweet tooth, sampling dates is a must on your list of things to do while in the region. But if you don’t have a sweet tooth, you probably have a friend who does and you’ve just found the sweetest gift to give.

on the water Take to the water on Dubai’s new ferry service and discover the city’s most popular landmarks
Q The temperature outside may be scorching, but there are still plenty of ways to discover Dubai in air-conditioned luxury. One of the latest methods is via the Dubai Ferry, a new service launched by the Roads & Transport Authority earlier this year. Book your seat and admire the city’s greatest attractions including Dubai Creek, The World islands, the Burj Al Arab and The Palm Jumeirah. Iconic landmarks such as the Burj Khalifa, the world’s tallest building, and the World Trade Centre are also visible. With gold and silver class tickets available, the Dubai Ferry serves two routes. The first departs from Al Seef Station in Bur Dubai (next to the British Embassy) and sails to Jumeirah Beach Hotel and back again. The trip, which covers the older, more traditional side of the emirate, is cool and comfortable with deep, cushioned seats, arm rests and large windows to see all the key sights. The second route starts at Dubai Marina Mall Station and takes in the newer, more modern side of the city. Sail at the foot of towering luxury residences, past rows and rows of exclusive white yachts and into the open seas of the Arabian Gulf. As Jumeirah Beach and the Marina’s skyscrapers pass by, the ferry sails around and through The Palm Jumeirah before heading back to Dubai Marina Mall. Keen photographers eager to snap the perfect shot can venture onto the outside deck. Be aware, however, that the hotter summer months can bring a grey haze over the city. If I want to immerse myself in local culture, I visit Bastakiya in Bur Dubai next to the Creek. The buildings are old and my great grandfather and great aunt used to live in houses here. My great aunt’s home is now a guest house. My elder family members have lots of stories of playing in Bastakiya as children, running around the alleyways, laughing and having fun. In winter, there is a souk that sells handcrafted items such as jewellery, paintings and ornaments. I like to visit Bastakiya mostly for the souk, but even when the weather is warmer, it’s pleasant to walk around, admire the windtowers and traditional architecture and it’s interesting for visitors to stop by the Sheikh Mohammed Centre for Cultural Understanding. There are also art galleries and small shops selling traditional souvenirs like oudh, Arabic incense. Dubai Museum is close to Bastakiya. I like going here too. For only AED3 you can see life-like statues of girls in a school classroom, traders at the Spice Souk, pearl divers and camels.
The museum shows what Dubai was like before its development. If we have guests visiting from abroad we often take them here as well as Heritage Village, located at the mouth of the Creek. Heritage Village is a great place to see with souvenir shops and Emirati snacks prepared and served by local women. We visited once and there was a mock-up of an Emirati wedding. The bride had henna painting applied to her hands and some Emirati men performed a traditional dance with walking sticks. A cruise along Dubai Creek is a fun way to discover the more cultural side of the city too. Bateaux Dubai serves dinner as it sails past old landmarks such as the Twin Towers, the Etisalat building and the National Bank of Dubai. You can also rent private dhows from Al Boom Tourist Village. I love cuisine from all over the world, but especially Emirati food. I would recommend visitors try some local dishes such as harees, wheat with chicken or meat mashed together and served with cinnamon, and ouzi, a big rice dish served with lamb on top.
Jamaheer and Jawaher in Al Qusais are both excellent kitchens serving these dishes. I also recommend visiting Wild Peeta, a shwarma (popular Arabic wrap) shop run by two Emirati brothers. There is one in Deira City Centre shopping mall and another just outside the entrance to the World Trade Centre metro station. The snacks are healthy and the shops are easy to get to. Indian cuisine is popular in Dubai too. With my aunt, I recently opened Sapne, a restaurant on Jumeirah Beach Road, which serves North Indian dishes and an unusual dessert made of toast, honey, milk and cardamom. Most of the time though you can find me in The Ivy at Jumeirah Emirates Towers. I love the menu, particularly the Thai-baked seabass followed by sticky toffee pudding. I’m a big fan of all cuisines and enjoy eating at Rivington Grill in Souk Al Bahar and the Royal Orchid Thai restaurant in the Marina. They serve the best tom yum soup. I also like Smiling BKK off Al Wasl Road.

Shisha, sometimes referred to as hubbly bubbly, is a water pipe used for smoking flavoured tobacco and can be found at cafés and bars across the city.
