Strong, black and bitter-sweet, Arabic coffee offers a robust flavour. In the UAE, coffee was traditionally prepared in copper pots on beds of coal in the desert. Today, aside from the cooking implements, the method remains largely the same. Ground beans are boiled rather than filtered before cardamom and saffron are added to complete the distinctive flavour of the brew. It is then drunk from small, espresso-style cups and often accompanied by sweet dates to help offset the sharpness of the beverage. The coffee is served in many hotels and most Arabic restaurants across the city.

Abu Dhabi is an open, friendly business and cosmopolitan capital city. The emirate welcomes everyone from across the globe and people here are very open to engage with. My top recommendation for first time visitors is the Big Bus tour. The tour is offered in eight different languages and runs all day around the city, taking in the best landmarks. Abu Dhabi is rich in culture. The Sheikh Zayed Grand Mosque is the emirate’s most important masterpiece and visitors can take advantage of excellent guided tours. Elsewhere, Heritage Village offers a fascinating insight into the history of the UAE and how locals used to live as Bedouin in the desert. Visiting the attraction is also an excellent opportunity to pick up some unique local arts and crafts as a souvenir to take home. If this is your first time in the Middle East, take a trip into the Arabian Desert and drive over the towering dunes before heading to a camp for camel riding, a barbecue dinner, shisha and belly dancing. A number of companies offer desert safari experiences. If time is limited, why not try the 30-minute Seawings tour leaving from Yas Marina which gives guests an aerial view of the emirate’s famous landmarks, plus the Corniche, Saadiyat Island and Yas Island. My absolute must-do recommendation is to experience a lap at the world-class Yas Marina Circuit in an Aston Martin or Formula Yas 3000. Evenings are just as exciting as the days in Abu Dhabi. For restaurants, I can’t think of a better option than Angar at Yas Viceroy Abu Dhabi. The authentic Indian cuisine, cooked with a contemporary twist, will leave you dreaming about it for days. I recommend trying the butter chicken, onion bhajis and karare phool gobi. I enjoy living here because it gives me an opportunity to engage with various types of guests, from royal families to celebrities, while boasting about the amazing things the city has to offer. It is a city of business, leisure and pleasure rolled into one.
Take a break from shopping in The Galleria at Bentley Bistro & Bar and treat yourself to European fusion cuisine – described by the general manager as French-inspired haute comfort food – in a homely yet elegant setting. World under water Dive down into the depths of the Arabian Gulf to behold a scene of startling beauty and explore the eerie shipwrecks that lie scattered on the sea bed

Beneath the sparkling turquoise waters of the Arabian Gulf lies another world waiting to be explored and, with temperatures still soaring above ground, there’s no better time to dive down and explore the cool, shadowy depths of the ocean. Discover the diverse aquatic life that thrives in these parts on a coral reef dive in Fujairah or for an adventure further afield, join a wreck dive and explore the sunken ships and aircraft that rest on the sea bed off the country’s shore. Old fishing dhows that once travelled between the UAE and India bringing in spices, fabrics and other goods and vast oceangoing liners are among the vessels that have met an end in the region’s shallower seas. One of the best known is MV Dara, off the coast of Dubai. The passenger liner famously sank on April 10, 1961, following an explosion believed to have been deliberately set off by rebels. The inevitably spooky nature of this wreck dive is intensified by the knowledge that 238 people lost their lives as the ship went down.

There’s also MV Hannan which lies at 12 to 22 metres deep and is thought to have sunk while working the Abu Dhabi oil fields in 1986. Experienced divers can access the bridge and accommodation areas of the small coastal vessel, which rests on its port side. A good spot for treasure hunters, divers have stumbled across objects of value belonging to the unfortunate passengers aboard when the boat went down. The wreck is also known for its resident stingrays and eagle rays, in addition to other species of fish. MV Jasim and MV Ludwig were once used by the UAE armed forces for target practice and both now rest at the bottom of the sea at a depth of 27 metres. MV Jasim broke into three main sections and rests on its port side. Experienced divers can access the wreck through the bridge via a number of hatches and explore the engine room and accommodation cabins. There’s also an intact propeller in the stern here as well as an abundance of marine life such as hawksbill turtles, barracuda, snappers, puffer fish and rays. MV Ludwig, on the other hand, is almost intact despite evidence of an explosion that blew a huge hole in the bridge. Divers can explore the bridge section, the crew quarters and the engine room.

Another popular site is the resting place of an old cement barge that sank in 1971. The vessel went down when it ran into bad weather en route to Dubai and currently sits upright at a depth of 12 metres. There’s plenty of scope for some fascinating underwater photography here. The framework of the bridge and cabin is still in place, as is the original cargo of cement bags. The remains of the engine can also be seen alongside a rich variety of fish that have made this their home, including snapper, bream, hammour, angelfish, batfish, sea slugs and butterfly fish.

Most UAE wrecks can be visited only by certified open-water scuba divers and the sites vary in terms of depth and current strength, so personal skill and certification levels should be taken into account when choosing a trip. A great site for divers of all experience levels is the area around the reef buoy just north of Ruwais, Abu Dhabi. Here, at an average depth of 11 metres, there are two sunken pilot boats, an overturned barge and three huge anchor blocks positioned almost like guard towers. The depth means there’s suitable light for photography and divers can spot barracuda, angelfish, sweetlips, hammour and hawksbill turtles swimming around the wreckage. Nearby is Sir Bani Yas Island, bestknown for its wildlife park and on-land conservation projects. It is also a great launch pad for a large number of wreck sites, many barely explored. Once considered an underwater junk yard, time has turned the area surrounding the island into a deep-rooted artificial reef teeming with marine life. Gasha Island Wreck

is the shallowest, at between one and four metres deep. The small supply ship, which lies half in and half out of the water can be visited by snorkellers as well as divers. Not much is known about the ship’s sinking except that it ran aground during low tide 40 years ago. Marine life in this secluded spot includes angelfish, snappers and silver biddies and above the surface Socotra cormorants can be spotted sitting on the exposed decking. More experienced divers can also pay a visit to The Pearl, a 30-metre-long shipwreck situated a few kilometres from the coast, 12 metres under water. The vessel’s middle section is mostly collapsed but the captain’s cabin is still intact and divers can peer through the hull to view the inside of the ship. The Green Star Award-winning Al Mahara Diving Center organises trips to the wrecks off the coast of Abu Dhabi and Sir Bani Yas Island. According to Kathleen Russell, PADI course director at Al Mahara Diving Center, Abu Dhabi is ideal for diving enthusiasts as the water temperature is never too cold or too hot. “Exploring the underwater environment is always exciting as every dive brings new discoveries, even when

returning to the same site. There is always a plethora of marine life and plenty of coral and sponge growth on the wrecks, which makes a colourful underwater vista for photographers and videographers. We have professional PADI dive centres in Abu Dhabi and on Sir Bani Yas Island, where instructors take beginners on open-water dives or accompany advanced and experienced divers out to the hard coral areas and wrecks.” The nearby emirate of Fujairah is another key scuba diving destination in 5,6,7&8 Underwater in the UAE

Free diving offers an exhilarating way to explore the waters surrounding the capital without the encumbrance of scuba gear. Divers duck down, one breath at a time, to visit the ocean floor in a practice that has deep roots in the history of the region. The pearl divers of the 18 th and 19 th century, who were fundamental in bringing wealth to the region were free divers who foraged for pearls on the ocean floor with only a rope to pull themselves down. FreedivingUAE is the only company in the region that provides a professional education in free diving. Based in Abu Dhabi, instructors run AIDA courses every month as well as weekly pool sessions for both beginners and experienced free divers. As Nicolas Largueze, instructor, FreedivingUAE, explains: “What makes free diving stand out from other sports is the fact that, beyond requiring you to push your physical limits, it demands, above all, that you push your mental boundaries. It requires you to be at one with the sea and with yourself. It is a feeling that’s hard to convey if you don’t experience it yourself. Italian champion Umberto Pellizzari used to say ‘you scuba dive to look around, you free dive to look within yourself’.”
the UAE. Located about three hours’ drive from Abu Dhabi, the coastal waters contain several reefs dense with marine life plus two famous wrecks, Inchcape 1 and Inchcape 2. As these ships were artificially sunk, their attraction lies in the sea life that surrounds them. Inchcape 1 was sunk in 2001 and settled upright on the sea bed 30 metres down. Shoals of jack, yellow snapper, porcupinefish, scorpionfish and lionfish swim around the wreck all year round and occasionally barracuda and seahorse can be spotted. Although the current can be strong, this is worth visiting just to meet the pair of large honeycomb moray eels that have made the wreck their home. Inchcape 2 lies at 22 metres and is longer than Inchcape 1. Its location, close to the Martini Wall reef, means that sea life thrives here with scores of moray, mollusks, boxfish and crabs to see. This wreck is perfect for underwater photography as colourful corals have propagated the ship creating a stunning backdrop. Both Fujairah sites are suitable for advanced divers and those with special training. Dubai-based dive centre Al Boom Diving organises regular trips to these wrecks. The Arabian oryx is a medium-sized antelope with long, straight horns and a tufted tail. Native to desert and steppe areas of the Arabian Peninsula, a safari drive through the sands affords a rare opportunity to see the endangered animal. Artistic reflection With its rich history and ultra-modern developments, Abu Dhabi is a melting pot of artistic inspiration. Concierge chats to three local artists about capturing the capital on canvas Words by

As any art lover will testify, Abu Dhabi has its finger firmly on the pulse of the international art scene. With works by Picasso, Pollock and Warhol whizzing in and out of the capital for highly publicised exhibitions and the soon-toopen Louvre Abu Dhabi creating a buzz, the city is now giving New York, London and Berlin a run for their money in the art capital stakes. Yet, while the international boxes are being ticked in abundance, there is also an emerging local art community consisting of talented homegrown creatives who have made it their business to present the UAE capital on canvas. Youâ&#x20AC;&#x2122;ll see them out and about around the city, hunched over their easels or buried in a sketchbook, as they toil away to immortalise Abu Dhabi with each brush stroke. Three such artists include: Andrew Field, who has made a name for himself with his dramatic oil paintings inspired by the coast; Julia Ibbini, whose multi-layered masterpieces present abstract snapshots of the city; and Emily Gordon, whose fascination with certain architectural aspects of the Arabian and Byzantine cultures, particularly Arabic doors, has made her a household name among enthusiastic art appreciators in the UAE. Concierge caught up with them to talk about creative inspirations, their latest projects and why the capital, with its ever-changing skyline, continues to enthrall.

Andrew Field is a British-born abstract landscape painter, whose work predominantly consists of renditions of Saadiyat and Yas Island beaches. “I moved to Abu Dhabi 10 years ago, but I have been visiting the capital since the early ’90s. While Abu Dhabi has a rich and varied landscape, I have always been drawn to the coast because I like the way the colours of the sand and the water marry together with the horizon. As a painter, my work serves to record places of natural beauty before they change through manmade processes. “Right now I’m working on a series focusing on the East Road Corniche. What attracts me to this spot is that it’s a part of the city, with the exception of the new Eastern Mangroves Hotel & Spa by Anantara, that has changed very little over the years. The only difference from my early visits is the skyline in the distance, which has obviously changed a lot over time. However, the mangroves and the sea channel leading towards the city have remained largely unaffected by its modernisation.

“From a painter’s perspective, the best time of day to see the coast in all its beauty is at midday when the tide is shifting. You can see a whole spectrum of breathtaking colours from reds and violets through to blues and greens all merging together. I like to paint all year round but ideally when the weather is cooler, it is better because I can spend longer periods of time exposed to the elements. I still paint in June and July, although I do have to start earlier and can often be found out and about at 5am as the sun rises. Alternatively, I go out very late in the evening as the temperature is cooling. “If I get the chance, I would really like my next project to be Sir Bani Yas Island and other remote islands that are preserved. The only thing I dislike about painting on Yas Island is the continuous problem of littering. If more areas around Abu Dhabi were protected, this problem would start to disappear.”

Jordanian artist, Julia Ibbini, creates Abu Dhabi-inspired digital collages layered with varnishes, paints, crystals and pins. “My work could be classified as somewhere between digital, assemblage and collage. Basically, I manipulate paintings, drawings and photographs using computer programmes. Each piece is then printed onto archival papers and reworked with inks and paints. On some larger pieces I also add pins, beads and threads. “I have lived in Abu Dhabi for 28 years, but despite growing up here I still find the landscape quite spectacular. My largest piece to date is called Coast and it is part of my Ode To The Sea series. It took me six months to complete and was inspired by my frequent kayaking trips off Abu Dhabi Corniche. I tend to head a few kilometres out into open water and turn back and look at the skyline. From there, I get my inspiration. What began with a few small studies of the sea, the movement of the waves and the contours created by light reflecting on the surface, became one of the most complex collections of work I have attempted so far. Coast was recently acquired by the Fairmont Bab Al Bahr for their art collection and hangs permanently at the hotel. “I live in the city centre on Hamdan Street. I love this area because it’s vibrant and buzzing at all times of the day. I tend

to go out early in the mornings with my sketchbook and a cup of tea, just as the sun is coming up. I always tell people that there is nothing quite like a sunrise in Abu Dhabi, especially in the winter when the weather is perfect. “As an artist, it is my goal to document that experience with a piece of work and, going forward, I would like to create a series which looks at the desert as a point of reference. I’m fascinated by that particular landscape, so I think that may be the inspiration for a future series of work.”

“My speciality is a type of artwork that has taken me many years to develop. It combines Arab ethnic elements with contemporary collage and a final three-dimensional effect. The process involves applying many layers or resin, acrylic, paraffin and gold leaf with individual artworks applied to each layer. “As someone who is passionate about architecture, I love the bold and contemporary skyline of Abu Dhabi. However, my favourite part of the city has always been Al Bateen, the old dhow yard behind the InterContinental Hotel. It is sometimes referred to as the oldest inhabited area of the island, but it closed a few years ago in order to make way for the marina development. Another favourite spot

is the Al Ghazal Golf Club near the airport where you can see archeological diggings and a wide assortment of wildlife, including hares and dhobs which are large lizards. “I’ve noticed lately that tastes in the UAE art scene have certainly developed. Many more people now are open to abstract and experimental work, as opposed to a few years back. “My latest collection of paintings depicts Arabic doors. I became interested in them during the late ’70s when I was living in Saudi Arabia. I started collecting old doors and windows, mostly from Yemeni carpenters. Then, when I arrived in the UAE 25 years ago, I was able to collect several that had been abandoned and left with construction debris. The building owners thought I was loopy to be scavenging their cast-offs but, from there, I developed a fascination for the shapes, colours and designs. As an artist my aim is to communicate this passion through my work.”

The autumn/winter 2014 runway shows in Paris, London, Milan and New York presented a number of key trends and looks that can be stylishly recreated with a little help from Abu Dhabi’s top malls and stores. As brands across the city raise the stakes on dressing for cooler temperatures, it’s time to leave the pastels and florals of spring/summer 2014 in the back of the wardrobe and invest in the latest autumnal styles. Concierge explores the novel trends from an array of luxury labels that are guaranteed to propel your clothing collections into the new season.

Material girls From fur and plaid to velvet and metallic, designers were unafraid of exploring every possible textile option for the autumn/ winter 2014 season. However, each brand approached these key materials with its own individual panache. When it came to utilising fur and faux fur, Alexander McQueen made an impact with bold shaggy coats and dresses, while Roberto Cavalli exhibited a Bohemian rock ’n’ roll feel with unbuttoned shirts and tight trousers teamed with furry outerwear. Fendi – no stranger to fur – opted for a more feminine approach. A more subtle nod to the trend came from both Marni and Givenchy with their shrugs, while at Nina Ricci, furry coats in feminine shades made a chic accessory.

Plaid made an appearance across several designer collections. Vera Wang used tartan to create coats, dresses, skirts and shirts in a romantic gothic vibe, while Isabelle Marant used the cloth in tomboychic baggy trousers and shirts designed to be worn as blazers. Models at Vivienne Westwood and Nina Ricci sashayed down the catwalk wearing touchably soft velvet. Elsewhere, bright metallic materials shone through at Valentino, Chanel and Prada.

Burberry Prorsum covered dresses with oversized leaf and petal prints Seasonal silhouettes A number of key shapes and styles were exhibited repeatedly during the autumn/ winter 2014 runway shows. While coats and trenches played their seasonal roles on the catwalks, fashion houses played around with silhouettes of cloaks and capes. Inspired by the enchantment of fairy tales, Dolce & Gabbana championed the cover-up with modern-day Little Red Riding Hood-style hooded capes garnished with animal motifs. Valentino followed a more sophisticated path with slick thigh-length capes in seasonal hues, while designers who didn’t embrace the cape made up for it with layering and statement scarves. Burberry, in particular, took a ‘bigger is better’ approach by accessorising a number of looks with huge patterned scarves. As temperatures drop, knits come out and this year no one demonstrated this recurrent trend better than Céline. Long and lean was the predominant feel and the brand’s turtle-neck jumper dresses and knitted flares caused a stir among the world’s fashion elite. Marc Jacobs opted

for a chunkier silhouette with oversized knits taking the trend to new proportions. Breathing new life into fashions of times past, a number of houses drew inspiration from the 1960s. This was seen at DSquared2 where swing coats, mini skirts and bowler hats took centre stage. Gucci channelled the decade with A-line dresses and button-up coats paired with matching knee-high boots.

When it comes to colour, autumn/winter 2014 is to be a season of contrasts. Icy pastels from Marc Jacobs and Miu Miu sparkled on the runway, while bold winter brights injected fun into the collections of Chanel and Diane von Furstenberg. Pink was a particularly popular hue at Chanel and Christian Dior while Valentino 8
and Tom Ford made a statement with a rainbow of reds. Some designers, on the other hand, chose to reinvent last year’s colour clash trend. To master this daring look, the fashion-savvy should take note of Prada and Dior who combined hues within one look in a beautifully jarring, yet well thought-out, manner. 9
Touch of style Texture played a key part in the latest trends and a special focus on stitching techniques was prevalent across the board. Heavy embroidery and embellishments using precious crystals and gems covered the surfaces at Chanel, Valentino and Marc Jacobs, while Dolce & Gabbana – a label usually fond of statement prints – encrusted jewels on Medieval hoods. The latter also reveled in embroidering, fixing material flowers and animals onto dresses and coats and sewing key silhouettes onto stylish separates. With texturing, the ageold sewing practices of patchwork and quilting reappeared through Valentino, which cut and pasted materials together in a highly contemporary fashion.

Dolce & Gabbana, Louis Vuitton and Valentino all exhibited their takes on winter blooms, while other brands took inspiration from the animal kingdom. Full-length leopard coats reigned supreme at Céline, while the autumn/winter CH Carolina Herrera collection featured stylish leopard separates. Elsewhere, stars and intergalactic prints featured across the collections of Diane von Furstenberg and Alexander McQueen, creating a cosmic trend that can only hint at the future of the fashion scene.

The Garrard success story began in the 1700s when the f ledgling company was already crafting opulent tiaras and sceptres for the British royal family. The brand’s reputation for qualitative craftsmanship quickly garnered worldwide acclaim which in turn saw its customer base rapidly expand to include European royal families, tsars of Russia, sultans, Chinese emperors and emperors of Japan. “Garrard has had the honour of working with royalty all around the world and to this day we still design and make an incredible range of pieces for various royal family members across the globe. Garrard pieces have always been viewed as beautiful contemporary designs for the times and revered for the incredible craftsmanship in the making of whatever the piece is; whether it’s jewellery, decorations and metalwork or trophies,” says Deardorff. While the brand’s initial roots lie in the creation of silverware, it has for many decades been primarily devoted to the production of jewellery and high jewellery. The brand’s first commission for the British royal family was for Frederick, Prince of Wales, in 1735. Deardorff explains that the company’s initial link with the royals was in
part due to the conveniently based location of its original London headquarters, paired with the brand’s already excellent reputation for creating fine silverware. Thanks to the success of the first commission and many others which followed, Queen Victoria appointed Garrard to the position of Crown Jewellers in 1843. The brand continues to serve the House of Windsor, among many other monarchies, to this day. During the 1800s and 1900s, Garrard crafted pieces for queens from almost every monarchy in Europe. “We’ve made a significant number of crowns. Some of the most majestic tiaras seen over the centuries were made by us and are still worn by

While many commissions have remained private, others have played a part in history. In 1905, Garrard was requested to take the British monarch’s Sceptre with the Cross – created for King Edward VII’s coronation in 1902 – and insert into its head the largest diamond ever found; the Cullinan 1. This striking diamond, also known as the Great Star of Africa, boasts more than 530 carats and the piece is now on display in pride of place at the Jewel House in the Tower of London. More recently, when Prince William proposed to Catherine Middleton, the Duchess of Cambridge, he presented her with a blue sapphire engagement ring. This ring bears special significance as it was the same piece Garrard crafted for Princess Diana when Charles, Prince of Wales, proposed to her at Windsor Castle in 1981. As a result of the exceptional quality and craftsmanship of each piece, it is not uncommon for classic Garrard creations to be rotated and brought out to be worn during special

occasions such as coronations and other monarchical ceremonies. “A couple of weeks ago, the Duchess of Cambridge wore a tiara that Garrard made in the 1800s for an evening event. Three queens and two princesses have worn that tiara so far, that I’m aware of,” says Deardorff. Renowned pieces such as those worn by world-famous royals have cemented Garrard’s regal status and secured the brand’s place in the history books for decades to come. However, royals are not the brand’s only customers. Just over a decade ago Garrard unveiled its first consumer collection of necklaces, bracelets, earrings and rings entitled Wings. The line, inspired by angels, celebrated the company’s 10th anniversary in the high-end consumer jewellery market last year with a special limited edition in a more contemporary style than the original collection to appeal to a modern clientele. Besides Wings, there are two other key jewellery collections: Entanglement, inspired by the motif of the Cambridge Lover’s Knot tiara made for Queen Mary of England in the early 1900s and Tudor Rose, featuring floral motifs taken from a traditional emblem from the Tudor dynasty. Every year the brand adds a new piece to each collection with options in rose gold, white gold and yellow gold. Prices range from US$4,000 (AED15,000) to US$250,000 (AED918,000). In the UAE, Damas plans to release one new collection annually. Garrard also offers beautiful high-jewellery sets for the more discerning customer, wedding collections and bespoke jewellery suite sets that can be flown around the globe for potential buyers to select from.

No matter the style of the piece, quality reigns supreme when it comes to materials. Deardorff explains that 98 percent of each piece is made up of precious stones, including diamonds, rubies, sapphires and emeralds, with pearls occasionally added depending on the design. “The belief that buyers have in us is critical and this is in part because we use very top-quality gems. For example, we source diamonds from all over the world. Russian diamonds are beautiful and, of course, there’s South African. We pick them out from auctions and they all go through The Kimberly Process, which is a system to ensure the stones have come from conflictfree areas,” explains Deardorff.

As well as the choice of materials, the craftsmanship poured into each piece is of vital importance. The jewellery is created in London where Garrard’s team of artisans is led by head designer Sarah Prentice. Speaking of the inspirations behind the latest Tudor Rose collection, Prentice says: “I felt the new collection needed a floral element but I also wanted to tie into the Britishness of the brand. Our three principles are Britishness, heritage and craftsmanship, so hopefully I’ve incorporated all three of these into the collection.” As well as upholding the brand’s ideologies, Prentice is also charged with bringing the notion of transformable tiaras back in vogue. Traditionally, tiaras were designed so they could be dismantled and also worn as jewellery pieces. Reflecting the idea in modern collections, Prentice has created a series of necklaces and tiaras that can be easily separated into cuffs, earrings and brooches, injecting versatility into each piece. In its forward-thinking designs and ambitious plans, Garrard clearly has an eye on the future. In recent years, the innovative brand has grown its presence to an additional 10 countries in less than three years, utilising the strengths of local partners. The company’s partner in the UAE, Damas, launched the brand at The Dubai Mall earlier this year and is set to build on that success and launch in Abu Dhabi later this year when Yas Mall opens. A testament to its incredible legacy, Garrard’s continued global growth echoes the brand’s beginnings, from humble silversmith to supplier of crown jewels to royal families around the world.

Interesting flavours, signature concepts and refreshed enthusiasm have arrived from all corners of the globe. Of the latest arrivals, some of the most notable include Market Kitchen at Le Royal Méridien Abu Dhabi and Koi Restaurant & Lounge at The Collection, St. Regis Saadiyat Island Resort. There have also been a handful of openings at The Galleria on Al Maryah Island, connected to Rosewood Abu Dhabi, including a branch by worldfamous Japanese brand Zuma. Concierge speaks to chefs and managers from the new establishments to find out what each venue brings to the local dining scene and why there are high hopes for their success.

Koi Restaurant & Lounge Created in America but taking inspiration from Japanese traditions, Koi Restaurant & Lounge offers a sophisticated dining experience for all the senses. Set in a stunning location in the centre of The Collection, the contemporary restaurant is both distinctive and stylish. Asian-inspired décor reflects the elements of earth, fire and water and guests can choose to be seated in the main restaurant, the lively lounge or on the serene terrace. Diners are offered a unique blend of Japanese dishes infused with modern Californian accents. Manager Peter Baics says: “We respect Japanese traditions but we have refined and tailored them to exceed our local and cosmopolitan guests’ expectations in Abu Dhabi. Our executive chef Sang Lee works only with the best and freshest ingredients. It is challenging to source these from time to time but we never compromise on quality; certain components of the menu have to be flown in directly from Japan.” Some of the most popular menu choices include lobster tacos with mango salsa and yuzu guacamole and kobe filet mignon
toban yaki. “These dishes are popular, not just because of their authentic nature and the beautiful way in which they are served, but because their f lavours are subtle,” Baics adds. The restaurant also prides itself on stocking the largest collection of sake in Abu Dhabi. Market Kitchen Bringing a taste of America to the UAE, Market Kitchen will convince diners to cast out any preconceptions of the US’ fame for fast food and burgers and discover a whole other side to the country’s cuisine. In a striking setting akin to a trendy New York City loft, the new restaurant serves up North American and international fare with Arabian influences. Justin Galea, executive
chef, Le Royal Méridien Abu Dhabi, says: “We like to refer to the restaurant as a modern American kitchen, combining various techniques, flavours and ingredients to create unique dishes. Starting with the classics is our basis for building a menu and then we adapt some of the dishes to bring in local flavours, such as grilled lamb chops with date onion compote and chick pea fries.” Its chefs focus more on the quality and sourcing of ingredients than on the complexity of dishes and as such the menu is driven by seasons. The restaurant obtains a lot of its produce from local organic farms and its seafood from the capital’s Fish Souk. “Abu Dhabi has been waiting for a concept like this. Market Kitchen does not fit the profile of any other restaurant in town and is not pigeon-holed into one category. In essence, it’s a melting pot of cuisines,” adds Galea. Zuma Abu Dhabi As Abu Dhabi’s dining scene develops, brands that are already established in other locations are beginning to realise the potential of the city’s culinary scene. Zuma is one such brand. With an excellent reputation as one of the top fine-dining Japanese restaurants in Dubai, earlier this year the brand moved up the coast and opened its second UAE branch in the capital on Al Maryah Island; the self-styled ‘Manhattan of Abu Dhabi’. Ajaz Sheikh, managing director, Zuma Middle East and Turkey, says: “A decent portion of the success of Zuma Dubai can be attributed to loyal diners from Abu Dhabi, so we knew there was existing demand for Zuma in Abu Dhabi. The instant success of the restaurant, since opening just over three months ago, strongly reinforces this point.” Zuma Abu Dhabi incorporates a restaurant, lounge and bar in one stylish waterfront venue. Akin to other Zuma establishments around the world, chefs offer authentic Japanese cuisine inspired by the ‘izakaya’ dining concept whereby guests order a selection of dishes to share. “Dishes are created from one of three kitchens: the signature robata; the open-plan sushi
counter located around the main dining room; and the main kitchen which is hidden from sight. The restaurant aims to be the ultimate fine-dining venue in the region serving quality food and ensuring it is consistent with international Zuma standards,” says Sheikh. All the head chefs have worked with Zuma for many years so they know the brand inside out. As such, the menu features the company’s much-loved famous signature dishes such as miso black cod, spicy beef and salt-grilled seabass. Those familiar
COMING SOON Later this year, InterContinental Abu Dhabi will open two new dining establishments, Circo and Byblos Sur Mer. The restaurants, scheduled to open in October or November, will add a multi-cultural boost to the hotel’s already eclectic collection of restaurant offerings. Circo comes fresh from both New York and Las Vegas and will offer fine Italian fare inspired by Tuscany in a vibrant setting that resembles a European carnival tent. Byblos Sur Mer, on the other hand, will look more traditional but with a modern edge. Live Arabic musicians and belly dancers will entertain guests as they dine on Lebanese cuisine either inside or al fresco-style on the water-facing terrace. expectations. Kreaton Cutajar is the new head chef at 55&5th, The Grill. His ideas on preparing the perfect steak have been honed over a long career spent cooking high-quality cuisine. “The type of frying pan you use is a key factor. A heavy-based frying pan is best as it is capable of reaching high temperatures, which is essential to get a nice crust and keep the steak juicy. The cut of the meat you’re using also plays a key role. I prefer thicker cuts as it allows for more control on the cooking temperature. I like to baste my meat during the cooking process which gives flavour and keeps the steak moist at the same time. Lastly, right before serving, the most important factor to cooking the perfect steak is to let the meat rest for about five minutes. Rodeo Grill Following a recent refurbishment, Abu Dhabi’s very first steak house has reopened its doors. Speciality outlet chef, Kenneth Monaghan also says the secret to cooking the perfect steak is allowing sufficient resting time - two to three minutes - after removing it from the oven. “Seasoning with good-quality salt is vital too. At Rodeo Grill, our most popular cut is the Livingston tenderloin, which comes from 100 percent fullblood Japanese cattle. It’s a premium cut with amazing flavour and tenderness.” In Monaghan’s opinion, the best accompaniments for a good steak are potato, mushrooms and onion. “The earthiness of the mushrooms and the sweetness of the onions work very well with red meat. BOA Steakhouse The latest hot spot for a good steak dinner is BOA Steakhouse which opened its doors just before summer. The Los Angeles-based restaurant brings its own meat in from the US, where the chefs can be assured it has come from ‘happy cows’ before undergoing a dryage process for 21 to 40 days. “Of course, it’s all certified halal,” say Lee Mean and Philip Cummins, co-owners of BOA Steakhouse. Each steak is basted with a mixture of butter,

The Park Bar & Grill The fundamental principles of simplicity and authenticity shine through at this award-winning steak house, where diners can rest easy in the knowledge that the steak, whether sirloin, tenderloin or rump, will be of the very highest quality. The crowning glory of the menu, however, has got to be the signature chateaubriand. Served on a wooden platter to reinforce the rustic authenticity of the homely French dish, this beautiful cut of meat comes complete with asparagus, potato gratin and a rich béarnaise sauce on the side (though the chef will happily add a few other sauces for diners who fancy some variety). “This dish is truly reflective of our authentic cuisine concept and the rich meaty flavour of the steak fits in perfectly with the natural
strong taste of the sauce and asparagus,” says Chef de Cuisine Maik Lilienthal. Aside from purchasing a good cut of beef, the most important factors to consider when preparing this, or any other steak dish, is to use top-quality charcoal, just the right amount of seasoning and allow a good resting time after cooking, Lilienthal explains. “Most people will take a steak out of the pan and serve it straight away but the trick is to leave it to sit for a while so that it retains the meaty taste. Although the UAE is a Muslim country, alcohol is permitted in several emirates including Abu Dhabi and Dubai. Wine, Champagne and spirits are available in most five-star hotels, but be warned, there is zero tolerance to drink-driving and being drunk in public is a crime, both punishable with a fine and, in more serious cases, imprisonment.
As a general rule, all hotels will add a 10 percent charge to restaurant bills in addition to the six percent fee levied by the government. Most menus state whether these taxes have already been incorporated or not but check with the waiter if it is unclear.

YAS WATERWORLD Yas Waterworld is the newest addition to the island’s impressive portfolio of sport and leisure attractions. Included among the 43 rides, slides and attractions here is the first hydromagnetic-powered six-person Tornado waterslide and the largest FlowBarrel 10 Double sheet-wave ride in the world.

FERRARI WORLD ABU DHABI The first ever Ferrari theme park is home to Formula Rossa, the fastest roller coaster on the planet, which reaches speeds of up to 240 kilometres per hour. Other rides include G-Force, which climbs up through the open roof, affording spectacular views of Yas Island, before hurtling 62 metres back to earth and the Fiorano GT Challenge, which offers an exhilarating simulated racing experience. SHEIKH ZAYED GRAND MOSQUE Built by the late Sheikh Zayed to help build a bridge between faiths and create greater cross-cultural understanding, the Grand Mosque is a must-see for any visitor to Abu Dhabi. The third-largest mosque in the world, this majestic structure is wrought from over 1,000 columns and 82 domes embellished with semi-precious stones, gold and marble. Inside, the spectacle is equally impressive with glittering chandeliers, spectacular floral motifs adorning the walls and a vast hand-woven Persian carpet in the main prayer hall.

I made the decision to move to Abu Dhabi from San Diego, California, where I’m originally from in 2003. It’s been 11 years, but it still feels like it was yesterday, even though so much has happened. There’s an endless list of reasons why I’ve stayed here for so long, but above all, I love that it’s such a multi-cultural society. Every day is a journey when I learn something new from the people around me; not only about local culture but about the heritage of all the different nationalities who call Abu Dhabi home. Guests from across the world visit Yas Waterworld and it’s a real pleasure to meet them and find out more about their home countries and traditions. In my free time I like to relax at home with my wife, play golf or go to the beach. I am a big fan of f low boarding and I sometimes practise at Yas Waterworld’s Bubble’s Barrel, which is the world’s largest surfable sheet wave. I also try to eat out at least once at weekends as the city boasts an enormous selection of fine-dining restaurants. My favourites are Zuma at Sowwah Square which is fusion Japanese at its finest, Rodeo Grill
at Beach Rotana, which serves the tastiest steaks in the city and Rozanah on Yas Island which serves great Lebanese food. Winter is my favourite time of year because the weather is perfect and reminds me of my home town. My favourite annual event is the Formula 1 Etihad Airways Abu Dhabi Grand Prix because it’s a week full of excitement and thrills spent trackside with friends and family. When I have visitors in town I advise them to spend time on the Corniche, tour the amazing Sheikh Zayed Grand Mosque, see Emirates Palace and enjoy the family-friendly attractions on Yas Island such as Yas Waterworld, Ferrari World Abu Dhabi and Yas Marina Circuit. Abu Dhabi has provided me with the opportunity of a lifetime – working at the best waterpark in the world – and has always been a special place to me. When I first arrived here, my initial impression was that it was a small and quiet city with limited outside influence. However, after watching it develop, I now see that Abu Dhabi has grown over the years into a modern, fast-paced metropolis and international business hub.
