Mohammed Bin Rashid Library
Literary lighthouse ———
Spread over one million square metres, the newly opened Mohammed Bin Rashid Library is the largest cultural centre in the region with more than 600,000 titles spanning 300 subjects
Intricately designed to resemble the shape of a rehl – the traditional wooden stand used to hold the Holy Quran – the Mohammed Bin Rashid Library is the latest addition to Dubai’s long list of attractions. More than half a decade in the making, this one-billion-dirham project became the largest cultural centre in the region and the biggest library in the Arab world when it opened its doors earlier this year in June. Overlooking Dubai Creek, this seven-storey structure champions one of Dubai’s most ambitious cultural initiatives, which was to establish a lighthouse of knowledge, culture and creativity. Spread over one million square metres, it houses more than 600,000 titles spanning 300 subjects, with the objective to expand its collection to millions of books from around the world.
The Mohammed Bin Rashid Library was announced in 2016, during the UAE’s National Year of Reading, and it brings to life the vision of His Highness Sheikh Mohammed bin Rashid Al Maktoum, Vice President and Prime Minister of the UAE and Ruler of Dubai. The creation of this stunning space was an important part of a series of initiatives to promote and encourage literacy and reading in society. In today’s technologically-savvy world, the library aims to stimulate a passion for books among those living in the UAE, and the youth in particular, by offering free access to one of the largest collections of books in the region, other knowledge resources and reliable sources of information. One of the most important objectives of the Mohammed Bin Rashid Library is to shine a spotlight on Arabic literature, culture and heritage. To this end, the library offers free access to both modern and rare Arabic literary works, including old texts that can only be accessed in this state-of-the-art space.

Mohammed Bin Rashid Library
The Mohammed Bin Rashid Library is comprised of ten main sections: general, young adults, children, information, maps and atlases, media and arts, business and periodicals as well as the Emirates library and a division for special literary collections. In addition to the physical inventory, the centre provides access to an endless variety of ebooks and other digital media. There is also an audio book library, which is a fantastic resource for everyone and is especially useful to the visually impaired or those with reading difficulties. Furthermore, the library is also expanding its range of Braille books. While the variety is endless, retrieving a title could not be easier as the library is powered by artificial intelligence, which means that once a title has been requested, a robotic vehicle locates the book among thousands of shelves and delivers the book to the reader at the information centre. On the topmost level – the seventh f loor – visitors will find the Treasures of the Library exhibition. On display is an impressive collection of rare and old books, atlases and manuscripts, some of which date back to the 13th century. The inventory includes unique copies of the Holy Quran, early print editions of literary classics and Latin translations of scholarly works from the Islamic Golden Age. Among the rare exhibits is the f irst edition of Atlas Maior of Blaeu, the crowning achievement of the famous 17th-century Dutch cartographer Johannes Blaeu. It was published in 1662 in 11 volumes and contains about 600 individual maps. The exhibition also includes the f irst edition of Napoleon’s Description de l’Égypte, an encyclopedic record of Egyptian antiquities and Egyptian history in the 18th century.
Treasures of the Library exhibition
The library aims to stimulate a passion for books among those living in the UAE The exhibition also showcases rare f irst editions of Arabic periodicals, a collection of autographs by famous world personalities and traditional tools used for calligraphy and bookbinding. Outside these inspiring halls, the library is also home to an amphitheatre, the Languages Garden (featuring pillars etched with the words of the ruler) and a café that is spread over two f loors. During the cooler months, the outdoor spaces will host intimate programmes and performances that will cater to the emirate’s cultural community. mbrl.ae

The UAE capital’s thriving arts and culture scene has captivated both artists and art lovers from around the world. Thanks to the continuous development of Saadiyat Cultural District, the last decade has borne witness to Abu Dhabi’s inspiring transformation into a notable art hub, welcoming talent from all around the globe to contribute to its ever-expanding cultural ecosystem. While the opening of Louvre Abu Dhabi in 2017 put the emirate on the global art map, the upcoming launches of Zayed National Museum and Guggenheim Abu Dhabi are set to cement this position even further. But that’s not where this chapter begins. In fact, it dates back more than a decade to when the Department of Culture and Tourism – Abu Dhabi launched the capital’s first-ever art show in 2009 – Abu Dhabi Art. Taking place in the UAE capital every November, Abu Dhabi Art features a diverse programme of exhibitions, workshops, seminars and live performances. The 14th edition of the fair returns to Manarat Al Saadiyat from November 16 to 20 this year and is set to be the largest to date, with creatives from 78 galleries from around 27 countries in attendance. The festival’s reach, however, extends far beyond the five days of the event as Abu Dhabi Art is merely the culmination of a year-long public engagement programme that sees art installations, exhibitions, talks and events taking place at different locations in the capital throughout the year.
Beyond the fair A key part of the event’s year-round schedule is the Beyond: Emerging Artists programme. An annual initiative that launched in 2017, it provides three emerging UAE-based artists with a platform to develop their practice and realise ambitious art projects. The selected artists are chosen by a guest curator each year, under whose mentorship they undertake a year-long programme of workshops and studio visits, which leads to the realisation of a project for the Abu Dhabi Art fair in November. The works remain on exhibition to the public for several months beyond the fair dates. These inspiring commissions touch upon a number of pertinent issues that are of relevance to the socio-cultural context of the UAE as well as the current discourse within the global arts community. This year, Abu Dhabi Art has announced Abed Al Kadiri – a multidisciplinary artist and co-founder and director of Lebanon-based publisher Dongola Limited Editions – as guest curator for the programme. Al Kadiri has mentored three UAE-based emerging artists, Majd Alloush, Sarah Al Mehairi and Mohamed Khalid, and their commissioned works will be exhibited at the fair in November. Each artist will present their unique perspective on the notions of borders, home, man-made territories and geographical mapping, with a special focus on artists’ books. Dyala Nusseibeh, Director of Abu Dhabi Art, said, “Our annual Beyond: Emerging Artists programme seeks to propel UAE-based artists forward on an international level, enabling them to create ambitious new work with guidance from the guest curator and with funds and opportunity provided by the Department of Culture and Tourism – Abu Dhabi. Having Abed Al Kadiri curate this year’s programme is extremely exciting and we are all looking forward to seeing what emerges from this wonderful collaboration.” “I am very excited to be curating this year’s Beyond: Emerging Artists programme,” said Al Kadiri. “In this edition, I hope to spark a deep conversation that weaves the works of the three artists together while approaching the exhibition

with a new perspective by focusing on the practice of an artist’s book making. I am very happy to be working with the passionate young artists I have selected for this edition, who are embracing this challenge head-on. Each one of these artists has a strong individual voice that is rooted in contemporary concerns around negotiating land and borders, and the notion of home. I am looking forward to the conversations we are going to generate.” Despite coming from diverse backgrounds and employing differing artistic practices, each of the three selected artists explores themes of identity in their work. Alloush explained: “In my work, I find myself studying borders as a concept, content and medium, by exploring geopolitics and social and environmental issues. I find myself rethinking the term ‘digital cartography’ and the meaning behind cartography in general. I hope to produce works that investigate the idea of borders in-depth, dismantling and questioning the idea of these lines that divide us.” The second chosen artist, Khalid, added: “Abed and I have been having interesting conversations about the individual and how feelings are translated into work and vice versa. My practice looks into the individual, using mundane materials and trying to coax out their metaphorical potential.”
The Beyond: Emerging Artists programme, part of Abu Dhabi Art, provides three UAE-based artists with a platform to realise ambitious art projects In conclusion, Al Mehairi said: “Being on this journey with fellow artists and friends is special and gives us a unique space in which to be challenged and to grow together, both as a group and individually. I’m particularly excited to work with the scale and new forms in my practice and, through the process, have it translated into an artist’s book.” abudhabiart.ae 21

When Alexander Bain displayed his invention of the image telegraph – known today as the fax machine – at the Great Exhibition of 1851 in London, it set a precedent for future World Expos. In the years to follow, the international fair would go on to become a platform for humankind’s ingenuity, ambition and entrepreneurship. A hub for inspiration, inventions from the television to tomato ketchup made their debuts at these events while landmarks, such as the Eiffel Tower in Paris and the Space Needle in Seattle, were especially built in the host cities and unveiled during the fair. And on October 1, 2021, the mega event marked its first edition on Middle Eastern soil with Expo 2020 Dubai. Preparations for the mega event began in 2013 when Dubai won the right to host the international fair. In the lead-up to its opening, the landscape of the emirate and the nation transformed drastically as a host of new attractions, from Ain Dubai to the Museum of the Future, launched during its run. The event itself cemented the UAE’s presence on the global stage as one of the most diverse World Expos, bringing almost 200 country pavilions to Dubai to champion innovation, culture and a theme of togetherness. Across 180 days, the Expo site in Dubai South hosted more than 30,000 events, from cultural performances to live entertainment showcased on the world’s largest projection surface – Al Wasl Dome. Such was its success that in the six months that passed from October 1, 2021, to March 31, 2022, Expo 2020 Dubai recorded 24,102,967 visits from residents and international travellers combined, with many high-profile names in attendance, from heads of state, beloved celebrities as well as international, regional and local royalty. Expo 2020 Dubai’s well-timed opening during the UAE’s landmark golden jubilee year in 2021 was a cause for celebration befitting of such a global event. But moving forward, it is the legacy of the event that will now take the country into its next 50 years. Although plans for Expo 2020 Dubai’s legacy were first unveiled even before the fair began, it was just a few weeks ago that Dubai saw the official opening of this master Expo legacy project.

A city of the future Expo 2020 Dubai now lives on as Expo City Dubai. This new zone was inaugurated on October 1, 2022, on the occasion of Expo 2020 Dubai’s one-year anniversary. When the project was first announced earlier this year, Sheikh Mohammed bin Rashid Al Maktoum, Vice President and Prime Minister of the UAE and Ruler of Dubai, said: “This new city will be home to an extraordinary new museum, a world-class exhibition centre and the headquarters of cutting edge and fast-growing companies.” A green, tech-enabled city of the future, Expo City Dubai is driven by sustainability, innovation, education and entertainment. The site retains 80 per cent of its original infrastructure, with most of its iconic architectural features continuing to entice visitors. This means that visitors will be able to walk through the stunning Al Wasl Plaza and be mesmerised by the images projected on its iconic dome, enjoy aerial views of the entire site from the Garden in the Sky observation tower and run up the walls of the stunning water feature. As for the three thematic pavilions, the Opportunity Pavilion will become the Expo 2020 Dubai Museum, highlighting the history and impact of World Expos. Meanwhile, the Mobility Pavilion and the Sustainability Pavilion will host interactive educational experiences. The Women’s Pavilion, dedicated to female changemakers, and the Vision Pavilion, which honours the vision of the emirate’s ruler, will also remain major highlights at Expo City Dubai. Country pavilions that will continue to draw visitors to the site include the Saudi Arabia Pavilion, which won the best pavilion award at Expo 2020 Dubai for its interactive digital mirrored screen, and the falcon-inspired UAE Pavilion. Referencing the local tradition of falconry, the pavilion’s dome comprises more than 25 feather-like panels, which resemble a falcon at rest when the panels are closed. When they open up to reveal the solar panels inside, it mimics the falcon taking f light.

A new entertainment venue Expo 2020 Dubai saw some of the biggest stars in the entertainment world enthral audiences with captivating performances. The line-up is set to continue with the site hosting similar events in the months ahead. Cultural and educational experiences will also be on offer for visitors of all ages. Other leisure facilities will include a mall for those seeking retail therapy and numerous sports venues, which will not only host international tournaments but also enhance fitness facilities for the active community in Dubai. And finally, in keeping with Expo 2020 Dubai’s culinary focus, dining establishments at the site will continue to offer f lavours from around the world.
Sustainability first Expo City Dubai has unveiled a new blueprint for a better life with its sustainability-first ethos. In keeping with its eco-friendly environment, cars are not allowed inside. Most of its zones are completely pedestrianised while soft mobility options, including buggies, scooters and bicycles, are available for people to move around with ease. The use of single-use plastic is also prohibited inside the city, encouraging people to reduce, reuse and recycle. The site will eventually comprise 123 LEED-certified buildings, epitomising the highest levels of sustainable design, construction and operations. These buildings will be fitted with smart metering systems and sensors to monitor energy consumption as well as the efficiency of power, light, water and climate conditioning systems. One of the biggest takeaways of Expo 2020 Dubai was that even in the face of extreme adversity – the pandemic – the world was able to come together to create something of this magnitude. And Expo City Dubai will reiterate this message as it continues to build the foundation of a new hub based on innovation, creativity and opportunity, that will inspire every resident, tenant and visitor to contribute to the world in positive ways. expocitydubai.com 33

SHOP A. LANGE & SÖHNE S i nc e 2 0 0 9 , t he Z E I T W E R K family of timepieces from German watchmaker A. Lange & Söhne has been delighting horology enthusiasts the world over. And this year, on the 28th anniversary of the brand’s rebirth, the maison has unveiled the second generation of this ingenious creation. Available in two editions – platinum and pink gold – the all-new ZEI T W ER K impresses w ith its enhanced technical capabilities and aesthetic appeal. A moment in time —— German watchmaker A. Lange & Söhne has unveiled the second generation of the ZEITWERK – one of the house’s most prominent creations
Since 1841, the historic Five-Minute Clock perched high above the stage of the Semper Opera House in Dresden silently drew the world’s attention. It was conceived by master watchmaker Johann Christian Friedrich Gutkaes, who was tasked with building a chronometer that would be easily legible even from the rearmost seat. Together with his apprentice and son-in-law Ferdinand Adolph Lange, he developed a clock that displayed the time digitally in five-minute steps, which was quite unlike anything the watchmaking world had ever seen. The prominent stage clock was as admirable as the productions that played out below its commanding presence. That is until tragedy struck down the opera house and its famous clock during the Second World War. Yet, its legacy was such that the reconstruction of the theatre also involved the making of a new FiveMinute Clock, which continues to delight visitors from all over the world to this day. For German watchmaker A. Lange & Söhne, the Five-Minute Clock is inextricably linked to the brand’s storied heritage. In the early 1990s, the maison paid special homage to the clock in the Lange 1. The outsize date of the model and its unusual asymmetrical dial design was a first in the world of horology, and, for years, this unconventional approach remained synonymous with the house’s aesthetic. Then, about two decades later, the brand transposed the unusual idea behind the Five-Minute Clock to yet another masterpiece – the very first ZEITWERK model that was introduced in 2009.
A milestone moment When the ZEITWERK was under development, the maison’s engineers questioned everything except the mechanical paradigm. The result was nothing short of extraordinary: a mechanical watch with a digital display and a compelling technical concept. For horology purists who could never imagine wearing a digital watch, the ZEITWERK remained appealing, thanks to its unique functional principle with mechanically powered, precisely jumping numerals. Its unveiling also saw the introduction of the time bridge (which is now an instantly recognisable A. Lange & Söhne feature). Rendered in German silver, it is one of the most prominent signature elements of the dial and constitutes the stage for all time indications, with the apertures featuring the large hour and minute displays arranged from left to right. Since 2009, several iterations of the ZEITWERK have been introduced, all of which have stood out in an incredibly competitive horological landscape for their sheer technical excellence and classic aesthetic. To this very day, the clear, avant-garde display of time in the ZEITWERK models remains peerless. It underscores the maison’s ambition to constantly redefine the limits of technical feasibility. Following this maxim, the brand’s watchmakers have once again taken the watchmaking world by storm with the introduction of the new ZEITWERK.

A. Lange & Söhne ZEITWERK
The all-new ZEITWERK On October 24, 2022, on the 28th anniversary of the brand’s rebirth, A. Lange & Söhne presented two new versions of the award-winning ZEITWERK. Available in platinum and pink gold, the mechanicaldigital watch has evolved, thanks to the new L043.6 calibre which has doubled its power reserve to 72 hours. Powering the minute-by-minute progression of the large jumping numerals is a precisely controlled reliable calibre with seven patents. The revolutionary design concept has also been subtly reworked, enhancing its expressive style. The new ZEITWERK has a case diameter of 41.9 millimetres and a height of 12.2 millimetres. The pink gold edition features a black dial, a time bridge made of untreated German silver and a black alligator leather strap, while the platinum edition has a rhodié dial made of solid silver with the time bridge rendered in black rhodium and a dark-brown alligator strap. Finally, the colour-matched hands round out the harmonious design.
A glimpse into the movement The ZEITWERK has a patented mechanism with three jumping numeral discs that make a glance at the watch a special experience. The hours and minutes are displayed in large-format numerals from left to right on the curved time bridge. Beneath the surface, the underlying mechanism switches the three discs – each displaying the hours and the digits of the minutes – within fractions of a second. At the top of the hour, all three discs are simultaneously advanced by one increment with such precise choreography, making it nothing short of admirable.
A. Lange & Söhne has once again taken the watchmaking world by storm with the introduction of the new ZEITWERK A contemporary complication Creating the lucid and innovative display of the ZEITWERK presented the house with an enormous challenge as they had to fit the mechanism in the limited dimensions of a wristwatch and at the same time, provide enough energy to produce the synchronised switching movement. This called for a highly precise setting. Anthony de Haas, Director of Product Development, explained: “To switch the discs of the jumping numerals mechanism to forward on time every minute, the movement requires much more energy than a classic time display. Not only are the numeral discs very heavy by watchmaking standards, but they also have to be quickly accelerated and braked again. This calls for considerably higher forces than the uniform rotation of a pair of hands of much less weight. The greatest amount of energy is needed at the top of the hour when the movement advances all three discs at the same time.” This challenging operation is handled by the patented constantforce escapement. As a multifaceted device, it also assures that the movement is powered by a uniform amount of force and benefits rate stability.

Technical excellence While these challenges were already intelligently mastered by the first-generation ZEITWERK, the new generation goes a step further with the refined calibre L043.6. The patented barrel design with two mainsprings allows the power reserve to be doubled, which means that, when fully wound, the new models have sufficient energy to perform 4,320 minute jumps or, more precisely, 72 jumps with all three discs, 360 jumps with only two discs and 3,888 jumps with only one disc. Another improvement is the simplif ied setting of the hour. A pusher at four o’clock can now separately advance the display, which is particularly useful when the time zone changes during a trip. The pusher is inverted, which means that nothing happens when it is pressed but the display switches forward when it’s released. The integration of a pusher for correcting the hour indication was first introduced in the ZEITWERK DATE. To enable the correction independently of the switching cycles of the time indication, a patented vertical clutch uncouples the hour ring from the jumping numerals mechanism each time the pusher is pressed. The setting of the minute indication in both directions is performed with the crown at two o’clock. In its second generation, the ZEITWERK also features an oscillation system with its own balance spring and patented beatadjustment system. It oscillates with a frequency of 18,000 semioscillations per hour (2.5 hertz). As with all of the manufactory’s calibres, the artisanal finishing of the 451-part movement complies with the house’s most ambitious standards. With a glance through the sapphire-crystal caseback, connoisseurs can admire the hand-engraved balance and escape-wheel cocks, the solarised winding wheels, the 59 jewels and the intricate, straight-grained remontoir bridge that accommodates two recessed, screwed gold chatons.
A. Lange & Söhne ZEITWERK
A. Lange & Söhne ZEITWERK
Aesthetic brilliance The most prominent feature of any ZEITWERK model is the time bridge. In the new timepiece, this feature was subtly reworked to make more room for the subsidiary seconds dial at six o’clock. In the scale of the power-reserve indicator on the opposite side, harmoniously positioned above the time bridge, the last 12 hours are now marked in red to clearly indicate that the tension of the mainsprings is gradually waning. The sapphire bearing jewel for the ones- and tens-minute ring to the left of the two indications is a refined detail that also builds a bridge to the movement. In most cases, rubies are used for bearing jewels, but in this case, A. Lange & Söhne’s watchmakers chose this colourless, transparent precious stone for aesthetic reasons. In developing the new mechanical-meetsdigital ZEITWERK timepiece, A. Lange & Söhne defied convention in more ways than one. Just as unusual as the watch are the people behind the timepiece as a team of predominantly younger, particularly talented watchmakers were chosen to develop this new concept.

At the turn of the 20th century, travel was beginning to boom, with people navigating the world more than ever before, setting off on new adventures aboard majestic ocean liners, aeroplanes and luxury trains. The advent of these new forms of transportation in the early 1900s meant that a quill sitting in a pot of ink was no longer practical to those who wished to stay connected to their craft while on the go. Writing instruments which travelled in their owners’ pockets and bags, therefore, rose to prominence. Recognising this major shift in the way people moved, Montblanc set out to create some of the most sought-after writing instruments of the time, perfectly complemented by a range of leather goods to accompany those who embraced their new-found mobility. Fast forward to the present and the way we move has drastically transformed. Yet, Montblanc’s spirit of innovation could not be more relevant. Whether it’s in an electric car, on a private jet, during your daily commute or while endurance training on a race track, moving through life with style and purpose means having finely crafted companions to accompany you on this journey. And with Montblanc’s latest On The Move line, you can take luxury with you wherever you go. Highlighted in the maison’s new campaign is a cross-category collection of contemporary products for life on the move, which are brought together to articulate a new vision of mobility at the heart of the brand’s DNA.

“Montblanc has always understood the power of mobility, to move freely not just physically, but moving ahead to grow and ultimately thrive. With this new campaign, we are encouraging a new generation of Montblanc customers to get out and move with passion, curiosity and style, as they pursue what truly matters to them in life,” explained Vincent Montalescot, Montblanc’s Chief Marketing Officer. The new campaign is helmed by renowned actor Cillian Murphy, who is seen navigating the world in a direction that differs from everyone else’s, whether it’s in the roles he chooses or the highly acclaimed performances he delivers. His bold decisions serve as a fine example, with the underlying message – the way we move inspires the mark we make – effortlessly shining through. Cillian said: “It’s easy to question whether you have taken the right direction in life and wonder what might have been if you had taken another path. While the way we move certainly defines us, this campaign ultimately reveals that if you do what moves you and really means something to you, then you are likely travelling in the right direction.” In the campaign, Cillian is seen sporting the Montblanc Extreme 3.0 backpack with the proprietary climbing-inspired ‘M’ lock. Further products featured include a StarWalker BlackCosmos writing instrument, the new Summit 3 smartwatch and the 1858 GMT watch.

If you’re anything like us, you’ll find your diary swiftly filling up for the festive season. With family gatherings, holiday parties and other social affairs keeping our calendars packed, those shopping lists get equally bigger. Naturally, everyone wants to look their best this season and jewellery is the perfect way to elevate any look. And given that presents are also exchanged during the celebrations, there couldn’t be a better time for a little holiday indulgence. Homegrown brand Mahallati Jewellery is a local favourite not only when it comes to festive jewellery, but all year round. Mehran Mahallati, Vice President of Mahallati Jewellery, said: “Our items are very high-end and sometimes people come into the shop just asking for a bag or a box with the Mahallati Jewellery logo on it. For them, it’s like owning a blue Tiffany box. The packaging is iconic. In a way, it’s a status symbol.” Impressive collections of jewellery – from elaborate diamond necklaces to ornate diamond rings – draw crowds of shoppers to Mahallati Jewellery’s boutiques across the city at The Dubai Mall, Mall of the Emirates and Dubai Marina Mall .
The brand also offers some delicate options alongside its more extravagant pieces, such as the necklace of f loating diamonds. It’s a distinctive design, where the string of precious gems has been meticulously set onto the chain in such a way that they appear to f loat in place, rather than be held together by prongs or settings. The overall effect is ethereal. Equally stunning is the brand’s Braille Blocks collection, produced in partnership with The Rashid Centre for the Determined Ones, featuring dainty designs with Braille lettering created in glittering diamonds. One of the house’s latest collections – the Yellow Diamonds line – is captivating jewellery enthusiasts all over the region. The collection features natural yellow diamonds, which are extremely rare as only one in every 10,000 carats mined is of a pure yellow hue. The colour itself is uplifting as it evokes sunshine and stands for cheerfulness, optimism and happiness. Mahallati Jewellery is known for meticulously sourcing the rarest and f inest gemstones for each piece, making it a popular choice for shoppers in search of bespoke and unique designs. Even the stones used in everyday pieces are rated highly on the GIA scale for their exceptional colour, clarity, cut and carat weight. It is little wonder, then, that their customisation services are highly sought after, not only by everyday consumers but also by luxury shoppers from abroad and even visiting royalty. Concierge caught up with chef Akmal Anuar of 11 Woodfire and chef José Avillez of Tasca to discuss their recent Michelin wins and culinary passions Chef Akmal Anuar
Jumbo prawns
Hokkaido scallops and foie gras skewers
Chef Akmal Anuar Growing up, Akmal Anuar always knew he wanted to be a chef. From spending decades in the food and beverage industry, honing his craft, to opening the Michelin-starred 11 Woodfire on Jumeirah Beach Road, his success is driven purely by hard work, passion and the people he cooks with and cooks for. “People are one of the reasons I enjoy what I do. People who work with me see their future and customers who dine at my restaurant become my friends.” Highlighting his culinary philosophy, he said: “Food must taste good – it’s as simple as that.” And as effortless as his approach seems, there’s plenty going on behind the scenes to make this possible.
“We work extremely hard as a team in the restaurant. And, of course, anyone would point to their hard work and dedication, but I believe it goes beyond that. Winning does not happen overnight. There is a story and genuineness in what we do. “We are grateful to the Michelin Guide and to Dubai for this historic achievement. This accomplishment has given us a lot of motivation and energy, and it encourages us, even more, to do better every day.” Nestled in a standalone villa on Jumeirah Beach Road, 11 Woodfire operates with a clear goal, said the chef, and that is to be environmentally friendly, waste-free and simple. “We treat everyone as if they were guests in our home. Food is prepared over a wood fire. Everything is served simply and naturally. We use oak wood and seasonal ingredients from ecologically responsible vendors.” Chef Akmal believes that one of the factors that sets the restaurant apart is its creative use of vegetables. “What most restaurants forget is to celebrate vegetables. We have an array of seafood and meat dishes available on the menu but one thing we miss out on is how good a vegetable can taste if it is done properly. Something I’m very proud of is our chlorophyll dish, which features only green vegetables from the land and the sea. It contains raw, grilled, smoked and pureed elements, which gives the dish a lot of texture and f lavour.”

Chef José Avillez
“Cooking is an act of service; I love being able to share my passion for food with others”
Chef José Avillez No stranger to Michelin stars, Chef José Avillez’s first encounter with the most prestigious honour in the culinary world was in 2009 while serving as Executive Chef at Restaurante Tavares in Lisbon – and that was just the beginning. Hailing from Portugal, the talented chef went on to open his own restaurant – Belcanto – which was awarded its first Michelin star in the same year while the second star followed two years later. A rare find on the emirate’s multicultural dining scene, Chef José’s venue, Tasca at Mandarin Oriental Dubai, became an instant favourite with the city’s food-loving crowd. And we weren’t surprised with the venue’s first Dubai win.
“This star is a source of great pride for me and for the whole team,” said the chef. “It’s amazing to be awarded a Michelin star in Dubai, in particular, as you can find a huge amount of very good restaurants in this city. It is also even more significant as this was the inaugural guide in Dubai and this is an important recognition of our hard work, determination, consistency and quality.” Chef José attributes his win to the quality of the products used at his restaurant, the mastery of the flavours, the precise cooking techniques, the personality of the cuisine and its consistency. “I do believe that Portuguese cuisine is one of the world’s best and I’m very happy to have the opportunity to introduce and share a bit of our amazing gastronomy here in Dubai. Tasca takes inspiration from a traditional Portuguese eatery that serves genuine food and drinks but with a contemporary twist. Here you will find a wonderful range of Portuguese classics from both the sea and the land. And while I love the whole menu – which is based on a sharing concept that takes diners on a journey across Portugal – the scarlet shrimp, bulhão pato clams, bacalhau à Gomes de Sá, piri piri chicken with smoked avocado cream, pan-fried pica pau and grilled lobster are must-try dishes.” Finally, giving us a glimpse into his journey, the chef said: “I’ve loved to eat since I was a child. That was what motivated me to become a chef. Cooking is an act of service and I love being able to share my passion for food with others. I really enjoy feeling the happiness of our guests.”

Salama Mohamed
Hatta Dam
From creating engaging content on social media to establishing a clean skincare line, Salama Mohamed is an inspiration. Here, the Emirati entrepreneur talks to Concierge about life in her vibrant homeland
Living in Dubai means being surrounded by thought leaders and experts striving to be the best they can be in their fields. It certainly creates a ripple effect, inspiring everyone who lives and works here, as they are reminded that determination and dedication are undoubtedly contagious. As an Emirati entrepreneur, I’m blessed to call a country such as this my home, where motivation, ingenuity and passion are highly encouraged and appreciated. I’m constantly inspired to move in a forward direction, aiming to reach my better self. I would describe myself as someone who is constantly evolving. I’m learning and growing every day, so the Salama of today is different from yesterday and will be different tomorrow. At an early age, I was blessed with vitiligo and sensitive skin and for as long as I could remember, I had been on the hunt for skincare products that would provide my skin with what it needed: nourishment, hydration and care. I eventually stumbled on Korean skincare and discovered the healing powers of Korean active ingredients and formulas. The saying goes, “necessity is the mother of invention” – and so I created and launched Peacefull purely out of necessity. Later, I realised that it was my calling to share the benefits of good skincare products that have a purpose with the global community, starting with my home, the UAE. At Peacefull, our messaging isn’t solely about selflove. At its core, the brand aims to redefine the modern standards of beauty and to highlight the importance of inclusion and representation. It has also been my creative outlet, one that perfectly blends my curiosity with my interest in skincare as a science. I am immensely grateful that Peacefull now plays a part in making people embrace themselves and grow comfortable and confident in their own skin. Being an entrepreneur isn’t easy. It presents a winding road of many ups and downs, triumphs and failures. You’re definitely tested as an individual. The hardships never deterred me though; they inspired me. I realised that my ‘to-do’ list is never-ending but as an entrepreneur with an expanding team, I still make sure to put myself higher on that list. There are no prerequisites to becoming an entrepreneur, just sheer determination, persistence, passion and, at times, self-awareness. My professional life aside, my leisure time is spent as an aimless wanderer. I hop in my car and drive with no specific destination in mind. I blast music, destress and focus on the open road. It is when I am truly the most inspired. I’m also a huge foodie and I love to eat. So if I’m not relaxing at home, then chances are I’m at a restaurant. Goldfish Sushi & Yakitori is one of my favourite restaurants in Dubai. As for attractions, Khor Fakkan and Hatta are prime places to visit during the winter. There’s also the Rain Room in Sharjah, which is an absolute must-visit in the UAE. The Grand Mosque in Abu Dhabi is also such a surreal place. And when I want to feel artistically inspired, I visit Louvre Abu Dhabi. Of course, my ultimate leisure is spending time with my family. My family is my everything. They are the source of my confidence and strength. I always know that no matter what the day brings, my family will always be there to pick me up. They are my biggest support system and that’s why I’m able to juggle different things throughout the day. peacefull.com
