Editor’s note Dubai is often referred to as a city of contrasts. From its cultural districts that radiate with rustic, old-world charm to its mega malls and ultra-luxe leisure proposition, the emirate prides itself on its diverse appeal. This month Concierge shines a light on two of the UAE’s main offerings, sports and culture. First, we head to the capital as Abu Dhabi Art returns with a more expansive and eclectic programme than ever before. Read about the festival’s main attractions on page 28. Similarly, Dubai Design Week, offers a city-wide lineup of exhibitions, workshops and public talks. Find out more about the many firsts that are occurring at this year’s fair on page 34. As our focus then shifts to sports, the 2018 Formula 1 Etihad Airways Abu Dhabi Grand Prix rightly becomes this month’s most-talked-about event. Fans from across the globe will descend on Yas Marina Circuit to catch the season finale and several after-race concerts. Turn to page 42 to discover more about the now iconic day-to-night race and the ongoing battle between two of the sport’s current greats. Slowing the pace down a bit, the UAE’s maritime history and the modern art of sailing come into play on page 48. Learn about the nation’s proud dhow building legacy as well as the best sailing spots in the emirates. Our photo essay then, on page 52, presents some of the region’s best outdoor activities. Keeping you up to date on the most sought-after dining haunts, we interview director of culinary and F&B at Palazzo Versace Dubai on page 74. Then turn to page 77 to read our review of Epicure at Meliá Desert Palm Dubai. If the magazine leaves you feeling inspired, book your next experience with us by visiting myconcierge.com.

Worth a thousand words ——

Abu Dhabi Art returns to the capital this month for its 10th edition, promising a packed programme of engaging exhibitions, creative workshops, public talks and live performances

In recent years, the UAE capital has attracted the world’s attention to its thriving arts and culture scene, captivating both art lovers and artists alike. Thanks to the development of Saadiyat Cultural District, the last decade has borne witness to Abu Dhabi’s inspiring transformation into a notable art hub, welcoming talent from all across the globe to contribute to its ever-expanding cultural ecosystem. While the opening of Louvre Abu Dhabi in 2017 put the emirate on the map, the upcoming launch of Zayed National Museum and Guggenheim Abu Dhabi is touted to cement this position even further. But that’s not where this chapter begins. In fact, it dates back a decade (even before the UAE’s love for all things art hit the spotlight) to when the Department of Culture and Tourism – Abu Dhabi (DCT Abu Dhabi) launched the capital’s first-ever art show in 2009. Attracting international crowds in increasing numbers year after year, Abu Dhabi Art Fair goes beyond the traditional notion of an art exhibition. The public event brings a diverse programme to the UAE capital every November with exhibitions, workshops, seminars and live performances taking place over the course of four bustling days. And with an inclusive and engaging concept, unlike other art shows of its ilk, Abu Dhabi Art has carved a niche for itself in the Middle Eastern artistic community, making it a must-visit for aficionados.

The 10th edition of Abu Dhabi Art Fair dovetails with the first anniversary of the opening of Louvre Abu Dhabi, returning to Manarat Al Saadiyat from November 14 to 17 to offer a creatively crafted experience that captures the growing influence of the local, regional and international cultural landscape. With more than 40 galleries from around the world set to participate, showcasing ambitious installations and site-specific works, the exhibition will cater to an estimated audience of 20,000 visitors. For the attending galleries, Abu Dhabi Art provides an excellent networking platform – a gateway to the art community in the region. HE Saif Saeed Ghobash, Undersecretary of DCT Abu Dhabi, says: “Given its exceptional depth and the quality of its programming, Abu Dhabi Art adds impetus to our efforts to promote the emirate as a cultural hub that is uniquely centred between East and West. Once again, we present an event that breaks the traditional boundaries of a fair, contributing to the global cultural scene while at the same time presenting our national identity and artistic contribution.”

For artists, both established and emerging, the fair offers an invaluable opportunity to exhibit their work on a global stage, promising huge exposure to an international audience. As for those visiting, Abu Dhabi Art presents the perfect chance to soak up the abundance of artistic inspiration and tap into the city’s impressive cultural offering. Among the many highlights of this year’s fair is the return of one of its main sections. The Focus sector sheds light on icons that have shaped the contemporary art stage and will be curated by Dr. Omar Kholeif. The Gateway sector also makes a comeback under a new title, Structures of Meaning | Architectures of Perception. This section explores visual art with installations that touch upon the built environment and languages, and will showcase some of the finest works by 15 international artists including Abdullah al Saadi, Abigail Reynolds, Imran Qureshi, Rachel Whiteread, Hajra Waheed and Lantian Xie.

In addition to these inspiring displays, other highlights come in the form of the Beyond section, which aims to make art more accessible to all by bringing it into the public arena. A series of large-scale installations, sculptures and site-specific commissions will be exhibited across historic locations in the capital for two months after the event, giving the public an opportunity to enjoy some of the most groundbreaking pieces from the fair. This year’s display will include works by talented young artists Ahmed Saeed Al Areef Al Dhaheri, Dhabiya Alrumaithi and Taqwa Alnaqbi. With such a packed and varied itinerary, it is easy to see why Abu Dhabi Art Fair is one of the biggest events on the capital’s cultural calendar. And as the organisers prepare for yet another exciting season, the emirate paves the way forward, creating a greater impact with its increasingly global presence.

ReUrban Studios Workshops, Dubai Design Week 2017

Grand designs Concierge meets Rawan Kashkoush, creative director of Dubai Design Week, to chat about the upcoming festival The arrival of autumn signals a shift in Dubai’s creative calendar. The emirate begins to buzz with new exhibitions, gallery openings, art events and more – and the biggest of them all is the annual Dubai Design Week. This year’s edition, which takes place from November 12 to 17, will be the biggest ever, with more than 120 institutions set to participate in around 230 events taking place at Dubai Design District (d3) and various locations across the city. Given that the 2017 edition saw more than 60,000 visitors descend on d3 alone, you can expect a creative celebration quite unlike any other. The week will feature a packed schedule of exhibitions, commissioned installations, talks, tours and workshops. If that sounds like a lot to keep track of, never fear – 2018 will also see the launch of the first-ever Dubai Design Week app, created to help visitors navigate their way around, personalise their schedules and even receive notifications for hot new launches and events that they won’t want to miss. And it’s set to be a festival full of firsts. The same week will see the long-anticipated opening of Jameel Arts Centre, the first contemporary arts museum in Dubai, as well as the inaugural Fikra Graphic Design Biennial in Sharjah, the first event of its kind in the region. For Rawan Kashkoush, creative director of Dubai Design Week, the event is an opportunity to showcase not just the emirate but also the surrounding region to the rest of the world. “Here in Dubai, we are privileged to have governmental and commercial support for our creative endeavours, which a lot of our neighbours in the Middle East, South Asia and North Africa don’t have. So it’s great that we can provide a platform for these areas and function as a gateway to the rest of the world.” Aljoud Lootah, AlAreesh Collection, Dubai Design Week 2017

Kashkoush has been with Dubai Design Week since its inception in 2015, and her enthusiasm for the event is palpable. “One of the things I find so exciting about Dubai is that there is this freedom to experiment, because the leader of the emirate, His Highness Sheikh Mohammed Bin Rashid Al Maktoum, is so supportive of innovation. I think designers can feel confident, particularly those in a niche industry, that Dubai is a good place to begin their careers, fine-tune their skills and develop creatively.” Downtown Design, a key aspect of Dubai Design Week, is one example of how creatives in the city are being supported. From November 13 to 16, you can browse more than 175 local and international premium design brands at the limited edition collection design fair, which functions as the retail platform of the show. “It puts money in the pockets of designers – at the end of the day, we are trying to build creative careers and really give them legitimacy,” notes Kashkoush.

Dubai Design Week also looks to the future with its Global Grad Show

As well as supporting creative careers, Dubai Design Week also looks to the future with its Global Grad Show, the world’s largest exhibition of graduate design projects from universities across the globe. “It’s a must-see exhibition that asks the question, ‘what are our problems and what are the designers of the future trying to respond to, today?’ It brings together the culmination of 12 months of research and dedication.” Sustainability is a key theme throughout the festival and the popular main stage talks in Dubai Design District will include a variety of keynote speeches and panels on how to future-proof the cities of the region and preserve not only resources but also their culture. For those who feel inspired to embrace their own creativity, the week will feature a series of theoretical and practical workshops. “We have something called The Making Space and it’s a place to get really hands-on and tactile with your creativity. We have sessions for both adults and children.” Kashkoush believes that this, the fourth edition of Dubai Design Week, may be the best one yet in terms of regional talent. She is excited for this year’s regional design showcase Abwab, which means ‘doorway’ in Arabic. “It’s an annual exploration of different themes through design. This year, we are exploring the theme of storytelling and how design can be a vehicle for cultural exchange and communicating particular messages and ideas, through physical experiences and interactive exhibitions. “We’ve challenged five design teams to collaborate for the first time on a particular topic or idea. It’s an exciting way to push people to be themselves but also learn to work together.”

For those visiting Dubai Design Week for the first time, Kashkoush recommends starting and ending in d3. “Don’t forget to explore ‘vertically’ – there are so many studios and galleries in the upper floors of d3’s buildings with lots of free talks and workshops on offer. “And don’t miss our series of architectural tours, a brand new event for 2018, taking place across the city. One of these is a tour of the brand new Jameel Arts Centre, led by the architect who designed it, Christopher Lee of London-based Serie Architects. “Finally, I would also love it if everyone checked out ‘Ways We Eat’ our specially designed walking food tour of Karama with Frying Pan Adventures on November 13. You’ll learn how food culture affects the cutlery you use, the way you sit and more. It’s all about learning what it means to be a designer by way of being human.” For more information

Camerata Salzburg Orchestra

The sound of music ——— Abu Dhabi Classics returned to the emirate last month for an exciting new season of sensational musical performances The soulful strains of the violin ushered in a brand new season of classical music in the UAE capital last month. The prestigious Camerata Salzburg Orchestra took to the stage at Emirates Palace Auditorium on October 12 with violin virtuoso Renaud Capuçon for a performance to remember. Celebrating the evolution of music through the years, the ensemble presented popular works from the Viennese Classical Period to the New Music Era including Mozart’s Violin Concertos 4 and 5 and Satie’s Gnossiennes – a fitting opening to yet another exciting season of Abu Dhabi Classics. Now in its ninth year, Abu Dhabi Classics has successfully carved a niche for itself as one of the nation’s foremost music festivals. With an ever-expanding roster of internationally acclaimed artists and growing audiences, each year, the programme brings soul-stirring experiences to audiences in the emirate. The current season promises to outdo previous events with a packed line-up that’s not to be missed. Among the many artists and acts set to perform in the capital over the next few months, there’s one name that’s already making history. Abu Dhabi Classics will play host to a world-renowned Bayreuth Festival production, marking the troupe’s international opera debut – the first outside of Germany. The artists will bring Richard Wagner’s acclaimed production The Valkyrie to the UAE for the first time, led by Wagner’s great-granddaughter Katharina Wagner herself. It is well-known that obtaining tickets to a Bayreuth Festival production is no easy feat, with waiting sometimes extending for up to 10 years. But fans in the UAE can now enjoy this once-in-a-lifetime opportunity to catch the iconic musical drama at Emirates Palace Auditorium early next year. Also set to perform this season is renowned French harpist Xavier de Maistre, who will welcome audiences with two captivating performances later this year at Manarat Al Saadiyat and Bin Hamoodah Fort in Al Ain. The festival will also see Chinese pianist Ran Jia returning to Abu Dhabi in 2019 for a solo recital and La Scala Academy Rising Stars gracing the stage at Emirates Palace Auditorium for three engaging ballet performances. With so much on offer, the current edition of Abu Dhabi Classics is sure to hit the right note with the capital’s musical crowd. La Scala Academy Rising Stars

Chasing greatness ——

The Formula 1 Etihad Airways Abu Dhabi Grand Prix has taken on extra significance for fierce rivals Lewis Hamilton and Sebastian Vettel as each driver attempts to secure his legacy

When it was announced in early 2007 that Abu Dhabi had won the rights to host a Grand Prix, few would have predicted that the race would take on such significance or that two Formula One rookies would go on to dominate the sport for the next decade. At that time, both Lewis Hamilton and Sebastian Vettel were taking their first tentative steps into the sport and there was little indication that the UAE capital would consistently stage the closing race of the season. Yet, just two years later, Vettel would storm to victory in the final race of the 2009 season and the very first Grand Prix to be held in Abu Dhabi. The German driver was concluding his debut season with Red Bull Racing and his triumph at Yas Marina Circuit saw him finish second in the Driver’s Championship – an astonishing effort from the then 22-year-old. This impressive victory on Yas Island was a sign of things to come as Vettel dominated for the next four years. It was also the start of a love affair with Abu Dhabi as he secured two wins and a podium finish in the following four seasons, the most memorable of which was his triumph in 2010. Once again it was the final race of the season, but this time there was a chance to be crowned world champion. Despite heading into the race trailing championship leader Fernando Alonso by 15 points, Vettel qualified in pole position and charged to victory, beating the Spaniard and claiming his maiden world title in the process. It was an astonishing end to a dramatic season and perfectly demonstrated why Abu Dhabi was so keen to host the season-ending Grand Prix. For Vettel and Red Bull Racing, the celebrations ran long into the night. But for Hamilton, who finished the race in second and saw his record as F1’s youngest-ever world champion eclipsed by the German driver, it was the beginning of a long-running duel with Vettel. In the years to come the rivalry would intensify and Yas Marina Circuit would so often prove to be a crucial battleground as both drivers looked to win more world titles. The following season Hamilton claimed his first victory in Abu Dhabi in the penultimate race of the season, but it mattered little with Vettel winning 11 races that year and wrapping up the Drivers Championship with four Grand Prix races remaining. In 2012 and 2013, there was further triumph from the unstoppable German driver as he became a quadruple world champion. Red Bull Racing took the chance to celebrate this remarkable feat in the UAE, with former F1 driver David Coulthard performing doughnuts on the helipad of the famed Burj Al Arab Jumeirah hotel.

43

CONC_UAE_NOV18_EXPERIENCE_F1.indd 43

10/24/18 4:27 PM

Just one year later the fortunes of Vettel drastically changed as he arrived in the emirate without a win to his name and with any hopes of a fifth championship long since extinguished. However, having made history by hosting the first ever day-to-night race in 2009, the Abu Dhabi Grand Prix would again deliver a Formula One first as double points were on offer in the final race of the season. This ensured that the tussle for the title would go down to the wire and once again a champion would be crowned at Yas Marina Circuit. But after years of success in the UAE capital, there wasn’t much Vettel could do with an eighth-place finishing having little impact as Hamilton produced a flawless drive to claim victory and earn a second world title. While the experiment of double points lasted just one season, the Abu Dhabi Grand Prix would remain the final race on the F1 calendar for the next four years. And with Vettel confirming a move to the legendary Scuderia Ferrari team, it seemed inevitable that the season-ending race in the emirate would see more title battles between the fierce rivals. Yet the clash many predicted has failed to materialise. In the past three years Vettel has arrived in Abu Dhabi with little to fight for and has been unable to add to his tally of victories in the capital, finishing in fourth place and third on two occasions. In comparison, Hamilton has had numerous reasons to celebrate. The Briton would win a third world title in 2015, ending the season with another impressive showing on Yas Island as he finished in second place. The following year he would round off his campaign with a third triumph in Abu Dhabi as he led the race from start to finish, showcasing his mastery of the challenging track. And then one year later, he returned with a fourth Drivers’ Championship already secured, despite the best efforts of Vettel who had to settle for second place in the final standings. Hamilton would take few risks as he cruised to second place, maintaining his impressive record in the UAE capital.

At the start of the current season and after a decade of domination from Hamilton and Vettel, with Jenson Button and Nico Rosberg the only other title winners in this time, the record book had them down as equals with four championships apiece. And as the season progressed, there was little to separate the two adversaries at the top of the standings. After 13 races, Vettel had won on four occasions and was just 17 points behind Hamilton, who had five victories to his name. The race for a fifth title and an opportunity to define their legacies appeared to be hotting up. Yet just five races later, Hamilton has a near unassailable lead thanks to four straight victories and a third-place finish at the US Grand Prix. The Briton (at the time of press) needs just five points from the remaining three races to win his fifth world championships, a feat that would see him draw level with the legendary Juan Manuel Fangio and second only to the great Michael Schumacher with seven titles. All that is left for Vettel this season is the chance to end on a positive note when the 10th edition of the Abu Dhabi Grand Prix takes place on November 25. Once a happy hunting ground for the German, it has been five years since he topped the podium and he will be desperate to reaffirm his dominance at Yas Marina Circuit. For while he may have lost the battle, the war with Hamilton is set to continue for many years to come. Both drivers have contracts with their current teams running until the end of 2020 and it would come of little surprise should Hamilton and Vettel continue to race beyond their current deals. Whatever happens in the coming years, however, one thing is certain; the rivalry will continue. And should Ferrari improve their car, then Abu Dhabi could be set for another title showdown.

Set sail ——

Dhow boat

From its rich maritime history to its modern-day marinas, the UAE is thriving as a world-class sailing destination

While undulating desert dunes and glittering skyscrapers may be the first images that spring to mind when you think of the UAE’s landscape, the nation’s history is also indelibly linked to the ocean. The bond between man and sea has always been strong; both Abu Dhabi and Dubai originated as humble fishing villages, dependent on the ocean for survival. Before the discovery of oil, it was through sailing, trading, fishing and pearling that the region was able to grow, thrive and begin to make its fortune. These days, the UAE has maintained strong connections with its maritime heritage, while also drawing in the crowds as a contemporary destination for sailing enthusiasts. Visitors and neighbouring residents alike flock to the region for its year-round sunshine, relatively calm seas and pristine coastline. In fact, in addition to the annual Dubai International Boat Show, this year saw the capital host the first-ever Abu Dhabi International Boat Show at ADNEC Marina. It attracted more than 20,000 visitors across four days, further cementing the UAE’s status as one of the fastest growing leisure marine markets in the world. Today, the main modern sailing hubs in the UAE can currently be found at the Dubai Offshore Sailing Club, Dubai International Marine Club, Al Hamra Marina and Yacht Club and the Abu Dhabi Sailing and Yacht Club (ADSYC). Throughout the year, the ADSYC hosts regular dhow races, a national sport inspired by the region’s sailing traditions. Navigating a dhow is a much-lauded skill passed down through generations. Dhow races are quite the spectacle, too – there’s something unforgettable about the sight of the billowing white sails racing across the blue water. Meanwhile, in Dubai, the Dubai Offshore Sailing Club is the go-to destination for the emirate’s ocean-loving residents. Memberships at this club are extremely popular. There is usually a waiting list to join and to gain membership you have to prove that you’re an active sailor through a points system in ordered to be considered. Fortunately, sailing lessons are available and open to non-members.

Sailing is one of the most important national pastimes in the UAE

Al Hamra Sailing Club in Ras Al Khaimah is the newest addition to the UAE’s sailing scene. Located just a short walk from the well-established Al Hamra Marina and Yacht Club, it has been open for less than two years yet it is already a hive of activity for the area’s sailing enthusiasts. Instructor Philip Reeves, a British expat who moved to Ras Al Khaimah to manage the club, is on a mission to build a thriving sailing community here that not only serves the emirate, but the wider region. Reeves notes: “Although we’ve not been open that long, we already have our own sailing team that we enter into regional competitions. The prestigious Asian Sailing Federation (ASAF) Youth Sailing Cup Finals was held here earlier this year. We’ve also hosted a leg of the UAE National Championships for Sailing.” The national sailing competition involves a series of regattas held at different clubs across the emirates throughout the season.” Al Hamra is an idyllic location for a sailing hub, with a serene coastline that nevertheless gets enough of a breeze to power Ras Al Khaimah’s fleet of vessels. The sailing clubhouse is well equipped and provides a warm, welcoming base where the community can meet. Most of the lessons on offer are aimed at children and teens, but the adult sailing lessons are becoming increasingly popular in the club. At the weekends, residents from all over Ras Al Khaimah flock to the club to sail and to socialise (the clubhouse has a casual food menu and a licensed bar). Some even make the drive from Dubai every weekend to take part. Reeves has a number of plans to expand Ras Al Khaimah’s sailing scene even further, from teaming up with nearby schools to offer lessons, to encouraging Ras Al Khaimah’s Emirati residents to sign up and learn to set sail. “Sailing is one of the most important national pastimes in the UAE, and we need to recognise this heritage and celebrate it. That’s why I want to get more of the local Emirati residents involved in the club.”

Dhow building

Even for the absolute beginner who can’t tell their port from their starboard, the UAE is an ideal place to learn to sail. The wind speeds are well suited to both racing and relaxed sailing, while there are plenty of choices for both open and closed water sessions. Al Hamra Marina, for example, has an enclosed lagoon that makes for a very safe learning environment. Most importantly, when learning to sail its best to look out for a club or course that is certified by the Royal Yachting Association (RYA). This is the UK’s national body for all forms of boating and ensures that you’re receiving the best, safest training possible. Sailing in Ras Al Khaimah

Nothing beats an overnight dhow trip, where you sleep on the deck under the stars and wake up to the sound of the ocean all around you Further afield dhow cruises have become a popular pastime, particularly in Oman. These recreational cruises take place mostly around the Musandam peninsula, a stunning stretch of coastline that has been dubbed the Norway of the Gulf, thanks to its majestic fjords. There are a number of ways to experience these boats – Six Senses Zighy Bay offers a high-end option on its luxury dhow vessel, for one. However, many travellers prefer the more rustic dhow sailing approach. Daytime cruises are available, although nothing beats an overnight dhow trip, where you sleep on the deck under the stars and wake up to the sound of the ocean all around you. Most cruises involve regular stops in sheltered bays for swimming, kayaking and even scuba diving. While you may not be at the helm, it’s still a memorable insight into life at sea. Le Freak, c’est chic ——

Ulysse Nardin’s CEO Patrick Pruniaux talks innovation, new launches and the brand’s stirring #FreakMeOut campaign

The Ulysse Nardin #FreakMeOut ad campaign takes the idea of ‘a fish out of water’ to a whole new level. A tribute to the brand’s 170-year-old maritime heritage, the main shot shows a digitally enhanced great white shark, suspended in the air, “swimming” through the streets of Manhattan. The ad celebrates the unconventional and the unpredictable, terms that easily apply to the Ulysse Nardin brand. Although the Swiss manufacturer is renowned for its fearless approach to innovation in watchmaking, at the same time, Ulysse Nardin has maintained a strong connection to its heritage, crafting its luxe timepieces out of the same building in Le Locle since 1865. “I have always been fascinated by the mystique surrounding Ulysse Nardin,” says CEO Patrick Pruniaux. “Although we are well known to watch connoisseurs, the brand is not that familiar to the public. This campaign is one way of showing what we are all about.” Like the #FreakMeOut shark, Pruniaux’s own career path has also been quite unpredictable. While he was, for a time, well immersed in the luxury watch industry – spending nine years at TAG Heuer in sales and imports – he was wooed by Apple UK in 2010 to work on a mysterious new project that was kept tightly under wraps, even during his recruitment. By the time Ulysse Nardin hired him in 2017, he had worked on several key Apple launches, including the now-iconic Apple Watch.

Freak Out

“Apple is a true innovator, and so is Ulysse Nardin. Apple taught me that you can do anything you want with a product. And Ulysse Nardin has that same sense of ambition and imagination.” For Pruniaux, the introduction of the very first Freak watch in 2001 was a pivotal moment in Ulysse Nardin’s contemporary history. Launched by thenowner Rolf Schnyder, The Freak was unlike anything the horology world had ever seen before: a seven-day watch with no conventional case, dial or hand. Instead, a large boat-shaped bridge structure (another maritime reference) doubled as a minute hand. It was also the first-ever production watch to use silicon components. At the time, no other watchmaker had done something quite so out of the box. Public reaction ranged from curious, to baffled, to downright outraged. Today, The Freak is recognised as a pioneering timepiece and has since enjoyed numerous incarnations. When Pruniaux joined the company, one of his first decisions was to create a Freak collection that honoured the history of this outlandish model, thereby giving the new generation an updated range. One such result was the Freak Vision, which Pruniaux describes as “our laboratory on the wrist”. He adds: “The Freak Vision encapsulates many of the values of Ulysse Nardin, including our sense of boldness.” The latest model, the Ulysse Nardin Freak Vision Automatic, caused quite a stir when it was unveiled at SIHH 2018 earlier this year. Not only is it the first automatic watch in the Freak collection, but it’s also arguably the range’s most wearable incarnation ever, with a sleeker, more modern design along with a new 3D-carved upper bridge inspired by a boat’s hull. Another model that drew in the crowds at SIHH 2018 was the Ulysse Nardin Diver Deep Dive. Housed in a robust 46mm titanium case and bearing the distinctive hammerhead shark logo, the watch is water resistant up to 1,000 metres. Limited to just 300 pieces, it was designed with Ulysse Nardin partner, free-diver and photographer Frederic Buyle in mind.

“Fred was the very first person to test it underwater,” says Pruniaux. “As a free diver relying on minimal equipment, he needed something strong and reliable for his explorations. When you’re in a remote location without access to parts or batteries, your comfort and, most importantly, your safety depends on having the best equipment.” More recently, Ulysse Nardin also launched the Marine Torpilleur Military Semper Fortis, a diving watch inspired by the traditions and spirit of the US Navy. “The Ulysse Nardin man is an adventurer,” adds Pruniaux. “He explores his own destiny and creates his own personal odyssey.” Pruniaux could well be describing himself here. As a lifelong athlete who has spent years doing everything from skiing to running and martial arts like Krav Maga, he has always been the type of thrill seeker that the brand connects with. “You know, luxury these days is more about acquiring experiences than it is about acquiring things. So, when you buy a watch, you’re not just buying a timepiece, you’re buying a piece of the brand - the history, the values, the emotions and the experience that surrounds it. Pruniaux tells us that despite his time working with Apple, he has no plans to bring a smartwatch to Ulysse Nardin. “There would be no point in Ulysse Nardin making a smartwatch; I just don’t think it would bring any value to the customer. It would be nothing more than a marketing gimmick, which is the opposite of everything that we stand for. So I will not do it. “My aim as CEO is not to change anything about the company’s DNA. I just want to write another chapter of the same story,” he concludes.

What inspired you to follow this career path? “I have always dreamed of becoming a chef, and I’ve had to work hard to accomplish it. Back when I was living in Germany, it was difficult to secure a job as a chef in well-established restaurants, so I chose to start as a server and learn everything possible, from operations and service to the kitchen. At first my family didn’t encourage me to pursue this career, although this made me even more ambitious. Then after my first few successes, they began to realise how much I loved cooking and the catering at our family gatherings was sorted.” You describe yourself as an Iranian chef with German origins - how do those two nations influence your cooking? “Cooking is storytelling, and it’s been my wish to bring Iranian food to fine dining restaurants, sharing with guests the rich flavours of Persia and my childhood memories. While the cooking techniques are simple, mostly grills and stews, this made me more innovative with the presentation of traditional dishes. The other half of my DNA has made to love German food. I cook German food, but I love to eat it even more.” What food philosophy do you bring to Vanitas at Palazzo Versace Dubai? “The philosophy is ‘keep it simple’. Authenticity and simplicity are the elements that make Vanitas so desirable. Everything comes together here – the food, the ambience and the interior design. The attention to detail is very important and there’s nothing overpowering. It is a chic restaurant, simple, yet so elegant.” Dubai has many Italian restaurants, what makes Vanitas stand out from the crowd? “Besides the authentic Italian food, Vanitas was designed to recreate a ballroom feel on a smaller scale. The interiors are beautiful and intricate, you feel like you’re in a fairy tale. Dining at Vanitas is a true Versace experience, from your arrival to the last course. The crockery collection we use, the Medusa Blue Rosenthal by Versace, is a unique touch that our guests simply love. It is an intimate experience ideal for a day or night out. The restaurant also has a beautiful terrace overlooking Dubai Creek, it’s the perfect backdrop for a fabulous evening.” What are some of your favourite dishes on the menu? “I love the lobster ravioli and the beef carpaccio. These two dishes can be hit or miss in an Italian restaurant, but I strongly believe we’ve got them right.”

Lobster ravioli

If someone was new to your restaurant, what should they order? “We make everything in house, from pasta to the most sophisticated sauces and trimmings. I’d recommend our signature dishes – branzino in crosta di nocciole or risotto agli asparagi.” What are the two ingredients that you can’t live without? “Tomato and basil are very important in Italian cooking. They are always first on my kitchen checklist.” What is the secret to a perfect meal? “I think it is the hard work that goes into developing a recipe. There’s nothing more important than spending time perfecting a dish.” What makes a good restaurant? “Simplicity and authenticity are the new buzz words in the culinary world and I hope the emphasis on being over creative will disappear soon. I completely love this new trend that encourages chefs to go back to basics, focusing more on taste.” If you could escape to one city in the world for a weekend of eating, where would you go and why? “Picking just one is hard. I am happy to discover every culinary destination. I have so many memories related to good restaurants around the world. At some, I’ve experienced fantastic service, at others, memorable dishes. There are also places where I’ve had the best conversations and moments that I’ll cherish all my life. Every restaurant should enhance the guests’ experience not only by feeding them but also by leaving a lasting impression.” What are the best and toughest parts about your job? I have spent 15 years of my career working in Michelin-starred restaurants and professional kitchens are renowned stressful environments. It’s a harsh world, but, at the same time, the most beautiful one. It allows you to grow and learn and only the strongest survive in this field.” For more information

Quinoa and kale salad

Simply epic —— On our recent trip to Meliá Desert Palm Dubai, we discovered why Epicure is more than just a restaurant, it is also the ideal venue for a break from the city’s buzz

Pool terrace at Epicure

For some, it’s all about the food, and for others, nothing quite cuts it like a relaxing ambience. But if you’re looking for an exceptional dining experience that combines the best of both worlds, head to Epicure, Meliá Desert Palm Dubai’s all-day dining haunt. With a 25-minute drive from the city centre, the restaurant might not be the first spot on your radar when looking for a leisurely afternoon out. But, we beg to differ. In fact, the journey to the resort, through scenic winding lanes, sets the scene for a day to remember. It boasts the ideal oasis-in-the-desert ambience, and once you’ve made the trip, you’ll find it hard to say goodbye. Tucked away in a 160-acre polo estate, it is so lush, peaceful and green, you’d be forgiven for thinking you’ve traded the emirate’s buzz for secluded luxury in the European countryside. And while Meliá Desert Palm Dubai’s dining venues offer something for everyone, from indulgent Friday brunches to tipples with tapas on weeknights, we’d be remiss if we didn’t recommend winding down your week with a lazy poolside lunch at Epicure. Gourmet fare… check. Serene views… check. Cosy ambience… double check! What more could you ask for?

We visited on a Saturday afternoon and were able to grab a cosy spot at an outdoor table right by the pool, against the lush backdrop of one of the estate’s four polo fields. Most of our fellow diners, from couples and groups of friends to families with children, chose to make the most of their visit by enjoying pool dips in between chilled drinks and tasty treats, which is exactly how we would recommend you experience the resort. Epicure recently revamped their interiors (and also introduced a refreshing new menu), but the classic brasserie-style vibe remains. Think cosy furniture, plush leather booths, shelves stacked with books and plenty of indoor plants. An extensive bar counter and dessert station complete the setting. And with Meliá Desert Palm Dubai primarily being an equestrian resort, a nod to horses is present everywhere with artistic installations of these magnificent creatures and creative touches inspired by them scattered throughout the property.

The journey to the resort, through scenic winding lanes, sets the scene for a day to remember

The menu at Epicure is packed with classic comfort food – just what we’re looking for while enjoying a lazy poolside lunch. Although for those who prefer keeping things light, the menu also features several healthy but equally tasty options. We opted for a mix of the two, starting off with a hearty quinoa and kale salad, packed with carrot, pomegranate and crumbled feta cheese. This one’s sure to convert even the most ardent kale detractor. At Epicure, there’s no one cuisine that dominates the menu. It’s a mix of popular global flavours from the Mediterranean, the Far East, India, North Africa and, of course, regional favourites, which guarantees something to suit even the most selective diner. The chef’s selection of hot mezze was the next item on our table. Ideal for sharing, the platter has a host of Middle Eastern favourites including lamb sambousek, spinach fatayer, lamb kibbeh, falafel and cheese sambousek, served with garlic cream and tahini dips. For mains, we went for the grilled corn-fed chicken breast, served with spiced lentils and arugula, as well as a cheesy beef pepperoni pizza, which we simply could not resist on such a chilled day out. And to top off our meal with a sweet treat, we choose the dessert of the day – a marble cheesecake with mixed berries. After all that indulgence, you might not feel like doing much else but lounge by the pool, taking in the serene views. Although if you’d like to make the most of what Meliá Desert Palm Dubai has to offer, we recommend requesting an estate tour that takes you through the horse stables and provides a chance to get up close to the animals. You’ll be amazed at how extensive the resort is, with lush green landscape everywhere you look. It’s such a bold contrast to the city’s record-breaking skyscrapers and we can’t think of a better setting for an elegant hideaway.

Leyla Uluhanli The internationally acclaimed interior designer is in town to unveil a new furniture collection at Dubai Design Week and also launch her latest book

Dubai is truly unique! Holding the perfect balance between its cultural heritage and modern development, it’s the epitome of change. And this blend of traditional and contemporary, local and global, authentic and eclectic, is also a ref lection of my personal aesthetic as a designer. It is no coincidence that we decided to launch our Leyla Uluhanli Interiors Studio brand through an event like Dubai Design Week, where I’ll have the chance to showcase my new furniture collection to the world. It is one of the best ways to gain ground in a market so discerning. We’ve previously had commissions in Dubai, but this would be a full-scale entry into the industry here. As a designer, I find that there are sources for inspiration everywhere you look. I try not to limit myself to a specific style or aesthetic but rather draw from my personal life and heritage, the characters of my clients as well as timeless works by acclaimed artists. In recent years, Dubai has embraced some of the most interesting trends, shifting towards a more minimalistic approach, focusing on light, soothing colours as well as nature-friendly, landscape-conscious and sustainable designs. I admire the way that global design trends are adapted to the region’s intrinsic stylistic, visual and cultural complexity. The city stays true to its roots without lingering in the past and this is not easy to achieve. It’s amazing how this city is still undergoing rapid transformation. I come here mostly for business and each time, I find so many wonderful new things. The city grows more beautiful with each visit with changes to its formidable skyline, impressive coast and public spaces. This year, to commemorate the Year of Zayed, I will also be launching my book Mosques: Splendors of Islam in Dubai, which celebrates iconic mosques including Sheikh Zayed Grand Mosque as it is one of the most impressive holy sites in the world. I’ll definitely be spending a lot of time at Dubai Design District, so I can soak in the atmosphere and closely study the work of the best local creative minds. And I’m also looking forward to visiting the new Jameel Arts Center. I love staying at Jumeirah Dar Al Masyaf whenever I am in the city for its easy access to extensive leisure facilities, ultimate privacy and the beach, which I consider one of the best in Dubai. On every trip, I also make plans to dine at La Petite Maison, enjoying its choice of delectable French cuisine. I urge everyone who comes to Dubai to try and look past the bright and bold modern cityscape and soak in the rich culture. Look for traces of the local heritage in the architecture, grab a slice of the local food scene and experience it to the fullest. Hopefully, either my work or my travels will bring me back to Dubai soon. And regardless of whether I’ll be vacationing or working on a new project, I will always find time for two things. First, exploring the city’s public spaces and secondly, visiting the new museums and galleries, both of which are testament to the region’s tremendous progress. leylauluhanli.com
