Among the stars —— Montblanc’s new StarWalker collection is more than a writing instrument, it’s a call to reconnect with the planet

On July 20, 1969, American astronauts Neil Armstrong and Buzz Aldrin went down in history as the first men to land on the moon and this year marks 50 years since this milestone moment in history. Commemorating these first steps on uncharted territory, Montblanc has launched a new StarWalker collection which expresses the wonders of space exploration. But given the need of our times, the new launch also serves as a reminder to preserve and cherish the planet. Speaking at the launch at the Lone Star Museum in Houston, Texas, Montblanc CEO Nicolas Baretzki said: “As the world prepares to celebrate half a century since the first person walked on the moon, space exploration remains as fascinating and awe-inspiring as ever to people everywhere. “With this StarWalker campaign, Montblanc is giving people a taste of the emotion astronauts experience as they look at the Earth from space and feel that unexpected longing for home.” Rendered in precious black resin, the writing instrument recalls the vast dark expanse of space. The Montblanc emblem lies on a translucent blue dome inside the crown and evokes the Earth as viewed from the moon, while rising above the lunar horizon. The polished platinum-coated cap and barrel represent the astronaut while the angled clip cover and dome

resembles the shape of a space rocket. And finally, the cap screw mechanism on the forepart and cone is similar to an astronaut securing their helmet to a space suit before setting off into space. The summer months are the perfect time to soak up the UAE’s wealth of cultural sites, many of which are dedicated to preserving its heritage. The country is home to some incredible museums, art galleries and heritage areas, with even more on the way. Through vast collections of historic artefacts, visitors can join the dots to better understand the UAE’s journey from a Bedouin settlement to global metropolis. One of the newest cultural attractions to open to the public is the stunning Qasr Al Watan and it is here that visitors will have the chance to learn more about the nation’s legacy. Housed within Abu Dhabi’s Presidential Palace complex, Qasr Al Watan is a working palace that hosts official state visits and summits as well as the Federal Supreme Council meetings and the UAE Cabinet meetings. Within the palace walls, visitors will be able to explore a collection of fascinating exhibits, artefacts and manuscripts that shed light on Emirati governance, the UAE’s vision for the future as well as contributions from the Arab world to various intellectual fields including science, arts, humanities and literature. One of the most striking features of the palace is its remarkable architecture and design. Grand white domes, striking chandeliers, expansive courtyards and lush gardens define the structure while traditional touches in the décor pay tribute to Arabian heritage and design. Even the doors are hugely impressive. Constructed from solid marble with hand-carved designs in 24-carat gold, each one took an estimated 350 hours to complete. With a guided tour, visitors can experience the artistry and craftsmanship of the structure by exploring the different zones of the palace.

Must-see zones THE GREAT HALL Located at the heart of Qasr Al Watan, The Great Hall features a huge dome that is one of the largest in the world. Ornately decorated, there are four art installations inside, constructed of mirrored cubes, showcasing the room’s intricate design. SPIRIT OF COLLABORATION Federal Supreme Council meetings and summits of organisations such as the Arab League, the Gulf Cooperation Council and the Organisation of Islamic Cooperation are hosted here. THE PRESIDENTIAL BANQUET Banquets in this hall are reserved for official occasions and to extend Emirati hospitality to representatives of close nations and allies. PRESIDENTIAL GIFTS The exhibition here showcases a collection of diplomatic gifts the UAE has received from foreign dignitaries during state visits . HOUSE OF KNOWLEDGE Browse through a collection of well-preserved historical artefacts and rare manuscripts from across the Arab world spanning several centuries including The Birmingham Qur’an and The Atlas Manuscript on Astronomy.

One of the most striking features of the palace is the remarkable architecture and design For visitors looking to delve deeper into the history of the region and the world, Qasr Al Watan houses a library boasting a collection of more than 50,000 books, a total of 483,937 titles and 16 million items contained in a digital library. Currently on showcase until September 30 at Qasr Al Watan Library is a collection of well-preserved pre-Hispanic codices and ancient manuscripts dating back to third century Mexico on loan from several institutions around the world. Guests can bring their tour to a close with the spectacular light and sound show, Palace in Motion, which takes place every evening at 7:30pm for a duration of 15 minutes. The show, projected onto the building’s façade, narrates an inspiring tale about the UAE’s past, present and future, the aspirations of Qasr Al Watan and the nation’s vision.

In celebration of the Year of Tolerance, we take a look at local initiatives championed this year to promote acceptance for all

With over 200 nationalities living peacefully together in the seven emirates, it is only fitting that 2019 should be declared the UAE’s Year of Tolerance. People from all over the world, hailing from different faiths and cultures, call the emirates their home. This makes the UAE the ideal example of a tolerant nation. HH Sheikh Khalifa bin Zayed Al Nahyan, President of the UAE, said it was a logical continuation of the Year of Zayed and expressed that instilling the values of peace and tolerance carries on the legacy of the late founding father. It comes on the back of many initiatives already taking place, including the World Tolerance Summit. The event was held in November last year in Dubai and world leaders supporting the message of harmony were in attendance. At the time, HH Sheikh Mohammed bin Rashid Al Maktoum, Vice President and Prime Minister of the UAE, and Ruler of the Emirate of Dubai, posted on social media: “Tolerance is synonymous with the UAE. It is a fundamental value of our people and an essential element for our development and prosperity in the future.” At the summit, HE Sheikh Nahayan Mabarak Al Nahayan, Minister of Tolerance, announced that the UAE was launching the Global Tolerance

Alliance, which would see the country co-ordinate with individuals and organisations internationally to promote peace. The ghaf tree was chosen as a symbol of the Year of Tolerance because of the great significance the tree bears in the UAE’s cultural heritage. For the early Bedouin tribes, the ghaf tree served as a meeting point for community gatherings and discussions. This was seen as a manifestation of communication and solidarity. One of the biggest markers of the Year of Tolerance so far was the visit of Pope Francis in February. The pontiff spoke to an audience of around 180,000 people at Zayed Sports City Stadium in Abu Dhabi; his opening words: “peace be with you”. This historic moment also marked the first papal visit to the region. Soon after, the Special Olympics World Games Abu Dhabi 2019 followed. Although the event was planned long before the Year of Tolerance was announced, it was a sign to the world of the UAE’s promotion of inclusivity and rights for all. More than 7,000 athletes from 170 countries registered to compete in 24 summer sports, along with 2,500 coaches and 20,000 volunteers. It was the first-ever Special Olympics World Games held in the Middle East or North Africa. Embracing religious tolerance, 2019 will also see construction begin on the region’s first traditional Hindu stone temple, believed to open in 2020. The development on the 13.7-acre plot of land at Abu Mureikha is a sign of allegiance with the country’s Indian population, one of the largest expatriate communities in the UAE. Earlier last month, the oldest Christian site discovered on Abu Dhabi’s Sir Bani Yas Island in 1992 was opened to the public by the Minister of Tolerance and the Department of Culture and Tourism – Abu Dhabi Chairman HE Mohammad Khalifa Al Mubarak in the presence of a number of priests and archaeological experts. “Tolerance is synonymous with the UAE. Embodying gender equality, in December last year, the president passed a decree stating that for the 2019 elections, women must comprise 50 percent of the UAE’s Federal National Council. Currently, there is a 20 percent body of women among the council’s 40 seats. The move won praise from UN Women, which supported the policy and recognised its far-reaching message for the future of Emirati women. Continuing the Year of Tolerance, the country will see a wealth of new measures, including educational programmes that first began in 2018 such as Champions of Tolerance, a project to empower students as leaders of the movement towards greater inclusion.  theyearoftolerance.ae

Louvre Abu Dhabi announces four major exhibitions for its forthcoming season that examine the role of art in an ever-changing society

As temperatures in the region continue their upward spiral, the change in pace becomes a lot more palpable across the emirates. But for Louvre Abu Dhabi, the summer months will be a busy period as the museum gears up to usher in a new season dedicated to all things creative. As director Manuel Rabaté puts it, the upcoming season of art exhibitions and live performances at the Saadiyat Island museum will be the “boldest and most extensive programme to date”. Come September, the theme of Changing Societies will take centre stage at Louvre Abu Dhabi with the launch of four new exhibitions that explore how the arts have acted as a witness to key moments of change in society throughout history. Inviting you to embark on a journey from the Islamic Middle Ages through to the 20th century, the showcase is accompanied by an enriching cultural programme with live performances, immersive installations, music, poetry recitals and family events. “Our new and exciting season is designed to pioneer different ways to engage the museum’s diverse audiences, offering them innovative experiences and a deeper understanding of the universal themes presented in our permanent galleries,” says Rabaté. The museum will also update its permanent showcase for the season as part of its annual rotation. From September, the galleries will proudly display new highlights such as the People’s subject to the King of Eg ypt on the base of a statue of Nectanebo II from the fourth century BCE, the Head of a chevalier in armour

from 13th-century France as well as an Emesus vase dating back to Syria at the end of the sixth century and the beginning of the seventh century, all on loan from Musée du Louvre in Paris. The museum will also display some of its latest acquisitions made during previous exhibitions held during the year, such as the iconic work by Rembrandt van Rijn, Head of a young man, with clasped hands: Study of the figure of Christ, which made its debut at the Rembrandt, Vermeer & the Dutch Golden Age: Masterpieces from The Leiden Collection and the Musée du Louvre exhibition. As the museum prepares for its upcoming showcase, the summer months are also a great time to discover what else is in store at this cultural hub. Explore the movement of art through the ages as you journey along Louvre Abu Dhabi’s permanent galleries boasting 600 masterpieces from the third millennium BCE to the present time. Equally worthy of your attention is the structure these are housed within. Standing beneath the filigreed dome, you’ll find yourself transported to another realm, with rays of light piercing through its layers, casting dapples across the interiors. The little ones joining you will also find plenty to keep entertained at A Costume Adventure, a new interactive space that will open on July 9. Here, young art enthusiasts will enjoy the chance to learn more about the costumes of characters found in some of the museum’s artworks and dive into historical wardrobes.

The show must go on ——— Withdrawing its decision to disband, the NSO Symphony Orchestra will continue to create musical magic across the UAE

In April last year, the NSO Symphony Orchestra took to the stage at Emirates Palace Auditorium in Abu Dhabi to bow out in style with a musical spectacle to remember. The ensemble’s annual concert titled A Night at the Movies… The Final Curtain was to be its closing performance, after which, the orchestra would depart from the public eye. But thanks to an outpouring of support from patrons after the show, and much to the delight of the UAE’s classical music community, the troupe withdrew its decision to disband and will continue to captivate audiences across the country with special events and private performances. Led by conductor and musical director Andrew Berryman, the NSO Symphony Orchestra has delivered some of the most memorable live music performances in the emirate including programmes designed to take the audiences on a journey through the evolution of classical music and the most popular cinematic scores of all time.

Renowned guest artists have also joined the ensemble during their performances over the years. One of their last shows, A Tribute to Frank Sinatra, featured a 17-piece band of international musicians and singers. The talented troupe performed popular tunes by the iconic 20th-century singer including classical renditions of Fly Me to the Moon, Sway, My Way, My Funny Valentine and That’s Life. Janet Hassouneh, founder and executive director of NSO Symphony Orchestra, says: “For the past eight years, we have endeavoured to present rich orchestral concerts with exciting and challenging music programmes that have delighted music lovers in the UAE, all organised with a small team of part-time supporters. “Obviously, this level of organisation requires an enormous amount of hard work, dedication and goodwill, which we could not sustain. Our musicians, however, would like to continue playing together and I will devote

Dates have been consumed in this part of the world for thousands of years and were a vital lifeline for the early Bedouin tribes. Their high nutritional profile provided an essential source of sustenance against the odds in the desert. Still revered in the region today, the fruit remains a regular feature at mealtimes and has become synonymous with the culture of the UAE. Even at the time of the breaking of the fast during Ramadan, a date is often the very first food consumed with water. For a long time, local tribes relied on dates for food. But in this region, this power fruit is more of a tradition that is based on necessity as well as religion and their cultivation dates back centuries. In Al Ain and Abu Dhabi, large swathes of land are given over to date palm plantations, a number of which are estimated to have been there for several thousand years. There isn’t a longstanding tradition of commercial farming in the UAE. It’s only very recently, however, that the fruit has begun to be mass produced. Most of the farms here are small family-run entities that were started about 40 years ago as part of a social welfare programme designed to settle the roaming Bedu people. Once established,

the farms were used to distribute surplus income from oil to the people via government-financed development and support initiatives, most of which have since been dismantled. The result today is that many of the country’s nearly 25,000 date groves are hobby farms and, while some fruit goes to commercial markets, much of the yield is still consumed by the larger family or used as animal feed if the quality is poor. Now, the UAE capital is looking to develop this natural resource and the Abu Dhabi Farmers’ Services Centre (ADFSC) is working to reform the capital’s farming system with the aim of encouraging local date producers to harness the massive earning power of their product. The heavy use of water is of particular concern to experts at ADFSC who point to a general misconception among local farmers that the more water lavished on date palms, the better. Many of the farms use water to excess, which is disastrous for the health of the trees and the quality of the yield. The soil structure here is extremely fragile and, when over-saturated, cannot retain the nutrients necessary for the date palms to thrive.

As part of ADFSC’s Date Improvement Program, a team of dedicated experts travel from farm to farm educating workers and owners about best practices including proper irrigation techniques, in addition to offering fertiliser and pesticide spraying services. Slowly but surely, ADFSC is making headway, as one by one, the local farmers begin to appreciate the economic potential of their date palms and consequently take better care of them. Larger varieties, such as the glossy Medjool dates, an import from North Africa, fetch the best prices on the market while local tastes tend towards UAE varieties including Khalass, Khenaizi, Fard and Dabas. Here in the UAE, Khalass dates are the most planted and popular as the warm, dry conditions are ideal for cultivation. The date farming cycle begins in January when the palms begin to produce flowers and are ready for pollination. In March, when the fruit starts to appear, farmers thin the stalks by hand to ensure a quality yield. At different times of the year, the crop is at risk from a variety of pests and diseases and must be sprayed regularly. After this, the fruit is covered with protective nets until harvest time in

July or August, when farmers deftly scale the palms using only a rope for leverage while gathering the sweet fruits of their labour. Date palms in the UAE grow up to around 30 feet in height and, if properly cared for, carry on producing dates for up to 150 years. One of the most significant changes in date farming since Bedouin times has been the introduction of modern drip irrigation to avoid over-saturating the soil. These methods have resulted in favourable conditions for the trees and have helped prevent plant diseases and also avoid essential nutrients being washed away from the soil, which means healthier crop growth. With over 100 varieties of dates grown in the country alone, there’s a lot for visitors to discover. The Fruit and Vegetable Market at Mina Zayed often sells seasonal varieties or, alternatively, visitors can purchase beautifully packaged boxes of luxury dates from specialised boutiques such as Bateel and enjoy them dipped in chocolate, sprinkled with nuts or stuffed with candied orange. A growing number of date-themed products, such as date mustard and date jam, offer multiple ways to enjoy this delicious fruit and provide the ideal gift to take home for a taste of Arabia.

Christian Lattmann talks about the importance of Jaquet Droz’s 281-year-old legacy as he shapes the future of a brand that combines art, precision and innovative movements

To truly appreciate a Jaquet Droz creation, it is important to get up close and study it in detail. It almost feels like time stands still while admiring the impressive feat that is a Jaquet Droz timepiece. Perhaps, that’s exactly what the watchmaker was going for. Take, for example, the newly introduced Magic Lotus Automaton. As CEO Christian Lattmann puts it: “It’s the most complicated dial we have ever created.” And even by Jaquet Droz’s exceptional standards, this timepiece is a mechanical marvel. Like many of its earlier creations, nature serves as the primary source of inspiration for the new Magic Lotus Automaton. The hand-painted white mother-of-pearl dial depicts a zen garden featuring lotus blooms floating seamlessly above the water and a Koi carp swimming through it. Emerging through this tapestry of fauna and flora is an onyx subdial reminding the wearer that this is indeed a watch. “But one look at the movement and the timepiece is not just a watch anymore, it becomes a visual masterpiece, a precious piece of art that tells a story,” says Lattmann. The complicated dial movement resides on a peripheral disc which has been beautifully painted to resemble a lake. When you engage the pusher, the disc begins to rotate, mimicking the gentle flow of water. The carp then dips in and out of the lake and under the lotus leaves with its tail swishing back and forth. But perhaps the most impressive of all is the manner in which the circle of life is represented by the lotus flower during the four-minute automaton process. Depicting the change in seasons, from spring to summer, autumn and winter, the flower changes colour each time it passes below a lotus leaf while floating along the lake. As the flower begins its journey around the dial at nine o’clock, the yellow sapphire at its heart evokes spring. As it moves beyond 12 o’clock, the gemstone is replaced by a blue sapphire and then a ruby at around six o’clock, before it finally emerges once again from beneath the lotus leaf with a yellow sapphire, just in time for spring.

That is our success story.” Boasting a legacy that spans 281 years, Jaquet Droz is one of the oldest Swiss watch brands. Throughout his prolific career, founder Pierre JaquetDroz was always creating something new. He surrounded himself with artists and together they created scores of clocks, watches and music boxes with ornamental finishings which were exceptional for their day. Droz loved nature and drew inspiration from everything in his surroundings from the birds and butterf lies to f lowers. “This remains a source of inspiration for our creations even today,” explains Lattmann. “What we take from the past is this passion for nature and the core values of our brand. “If you have the best product at the end of the day, everything else is easy” which spans centuries. But there’s a long road ahead of us. And it’s this mix between our traditional values and the drive to keep up with the times by delivering contemporary styles that will guarantee success for years to come. “Our expression of creativity, inspired by the past, differentiates our brand from our competitors. But at the same time, the technical innovations that we pioneer allow us to bring these artistic creations to life. Of course, it all begins with the human touch. Before we begin developing every new line, we put together a team consisting of a designer, technician and artist. They brainstorm as a unit and come up with something unique. “The designer’s role is to push the artist to come up with something creative, the artist will illustrate unique ideas, while the technician might feel it’s impossible. But each player pushes the other to do better. “We are working with limited space because we are talking about a watch that’s only 43mm in diameter. Within this space, there are very small components. Also, the timepiece has to be shock resistant, waterproof and something that will last for generations. So while the team strives to push the levels of creativity and come up with something brilliant, we still have to respect these technical limitations.” The Magic Lotus Automaton certainly bears testimony to the intricate craftsmanship and teamwork that goes on behind the scenes. But this horological masterpiece was not the only one to make its debut last month. At an exclusive event in Dubai, the brand also raised the curtain on a few prototypes that will hit the market in October. The new line-up will include a Grand Seconde Chronograph with a new monopusher and a blue version of the Grande Seconde Skelet-one Ceramic, which was first unveiled in 2018.

Lattmann points out that Dubai was strategically chosen as the location for the launch because the Middle Eastern market is of great significance to Jaquet Droz. “Here in Dubai, art holds a special place in the local culture. In fact, while touring the city, I found that there is artistic inspiration everywhere you look, be it in the street art painted on the buildings in the old neighbourhoods or the stunning architectural wonders dominating the skyline. “But Dubai is also a hub for luxury products. People here know what luxury is and expect only the exceptional. That’s why it’s important for us to be present here and showcase our novelties. And it’s not only the locals we’re here for, it’s also the tourist we cater to. With more and more Chinese and Russian visitors flocking to Dubai to shop for luxury items, our presence in the GCC holds immense value as a gateway to connect with the rest of the world.” With every new product line comes a great deal of marketing effort to ensure the spotlight shines brightly on each stellar creation. But Lattmann says: “For Jaquet Droz, it’s more about letting our pieces do the talking, which is why we do not necessarily invest huge sums in marketing. In fact, the majority of our investment is dedicated to product development. We create, create and create a lot more and are constantly innovating; that’s what you need to survive in the industry today. “When I first took on the role of CEO at Jaquet Droz three years ago, Nicolas Hayek, the founder of the Swatch Group, gave me a piece of advice which I believe has seen us through the decades. Few brands can boast a heritage as glorious as that of Hamilton. Starting out as a predominantly American brand, making several appearances in Hollywood classics over the years, Hamilton took on a hybrid Swiss identity when it joined the Swatch group in 1974. Although championing prestigious Swiss precision, Hamilton remains American at heart and wows watch enthusiasts with stunning new collections year after year. But a few remain eternal favourites, be it the models worn by the American Army, Navy and Marine Corps during the Second World War, the Ventura timepiece Elvis Presley rocked on stage or the more recent appearance of the Khaki Field Murph in Interstellar in 2014. This year, yet another piece is set to make its mark in the cinematic universe with the release of MIB International. Read on as CEO Sylvain Dolla tells us more about the brand’s legacy. Hamilton is celebrating 80 years of Hollywood collaborations this year, how has 2019 looked for the brand thus far? “The first half of the year has been exciting with showcases of our 2019 novelties in Abu Dhabi, New York, Tokyo and Milan. But this year, our main focus is Hamilton at the heart of cinema. The last 80 years have seen some of our timepieces make appearances in more than 500 Hollywood movies. To mark the celebrations, we relaunched the Khaki Field Murph watch, which generated a lot of buzz in Interstellar.”

We are very successful with the youth especially when it comes to key moments in life, such as graduation or engagements.” What is Hamilton’s approach to the digital revolution in the watch industry? “Hamilton is embracing the digital revolution, but not with the help of smartwatches. Our aim is to be at the top of the digital universe, so we put a lot of effort into digital marketing and online campaigns. When it comes to our watches, we focus 100 percent on masterpieces that will last through the times and not become obsolete after a few years.” How does the brand balance its American heritage with Hamilton now being a Swiss company? “Our American heritage is definitely a strength as Hamilton is the only brand in the Swatch Group that has roots in the US. Our rich history and culture is a strong asset for us. It helps us define our brand, hence the tagline: American Spirit, Swiss Precision. The DNA of our brand is infused with this heritage and our creations reflect this unique character with timepieces like the Khaki Field line nodding to US military heritage and the Khaki Aviation watch, inspired by the beginnings of aviation in the country.” How significant is the Middle East market to the brand? “The Middle East market is important to us. Hamilton is the official timekeeper of Red Bull Air Race and we were present at the event in Abu Dhabi and Saudi Arabia earlier this year. This gave us the opportunity to interact with consumers of the brand. The markets here have strong affinities with bold character timepieces. The Khaki BeLOWZERO and Khaki Aviation watches are very popular with local audiences. Breaking tradition ——— We catch up with chef Akira Back to discuss his newly-opened venue at W Dubai – The Palm and discover how the former professional snowboarder came to open a chain of successful restaurants

Having been a successful snowboarder, what made you decide to enter the culinary world? “I pursued it for the same reason that I got into professional snowboarding, which was to be cool. I moved from Korea to Aspen when I was 13 and I didn’t speak English, so I was scared of everyone and wanted to fit in with the kids who were snowboarding. So I tried it and eventually turned professional. But I only did so because I wanted to bleach my hair, meet new people and have everyone think I was a cool guy. Then, when I decided to retire, I found another role model who owned a Japanese restaurant and I wanted to be cool just like him.” Did you have any previous experience with food, or at least cook a lot at home? “Not at all, I never cooked at home. I hadn’t even touched a knife so I was the worst student ever. I didn’t know anything at all. I was a nightmare for the chefs as I couldn’t even boil water to make pasta or noodles. I was a spoilt kid. I didn’t even do my own laundry. So it was tough to start with and all I did was wash dishes. I had knives thrown at me, I had to count grains of rice, there was all sorts of crazy stuff. It was hell for three years, but then I honestly started to love it.” When did you realise that you had some talent and could actually pursue a career as a chef? “I stayed in my first job for seven years and was even offered a partnership but I wanted to learn everything about cooking. So I travelled all over America and used different names because I would work, learn everything I needed to and then quit. I even worked at more than 30 restaurants in one small town, just so I could improve my knowledge. Then I went to work for Joël Robuchon and it was amazing as his restaurant had

“I don’t just think about the taste, making a dish visually appealing is equally important to me” Private dining room

Did you work under any other influential chefs? “I really learnt a lot from Nobu Matsuhisa, especially the way he controls a kitchen. Every day I thank him for what he taught me. And also Masaharu Morimoto, he is just an unbelievable chef. Working under these culinary greats was a wonderful experience for me because as a Korean native trying to break into the world of Japanese cuisine, I knew I had to be ten times better than a chef from Japan. They both taught me technique and how to be in control.” When did you decide to open your own restaurant? “I always wanted to launch a chain of restaurants but my first opening was Yellowtail at Bellagio Las Vegas just after I left Nobu. I didn’t know anything about running a restaurant and it was tough at first but we started to get some awesome feedback and that gave me more confidence. It’s still doing really well today, I only wish they’d let me call it Akira Back instead as seeing your name above the door is the best feeling in the world.” You now have several restaurants around the world and are opening eight this year alone, why did you choose Dubai? “I’ve always loved the city and have been coming here often for almost a decade. I knew it would be the right market for me and this hotel is perfect as everyone wants to open a restaurant on Palm Jumeirah. Also, Dubai is just like Las Vegas, in that, it’s a melting pot of cultures, so people are willing to experiment with different cuisines.” Tell us about the food on offer at Akira Back, what are some of your favourites on the menu? “I’ve combined everything I know and have learnt as I grew up eating Korean food but my technique is Japanese. So I have merged different methods to create a unique flavour. And I don’t just think about the taste, making a dish visually appealing is equally important to me, which is why there are different textures. Combined, this creates a lot of sensation. Everything is also meant to be shared because I want our customers to experience as many different dishes as possible. We have a shabu shabu (a Japanese hotpot) that is unlike anyone else’s, a spiced foie gras with a corn croquette and two sauces that I love, and a tuna pizza that everyone must try. Not only is the dish one of my favourites, but with each bite, you see some beautiful art on the plate that was designed by my mother. Her work is actually present throughout the restaurant and it has always been an integral design element across all my venues.” For reservations or more information  04 2455555

The first dish to grace our table was one of the main attractions on the menu – a fresh seafood platter on ice brimming with spiced clams, crab legs, mussels, oysters and salmon. You have the option to enjoy some of these raw or poached. Either way, it’s a delicious dish to get started with. so creatively served that it almost looked like dessert, and some incredibly delicious crab cakes that definitely leave you wanting more. Following all this indulgence, you’ll need some time before you’re ready to tuck into mains. Comprising five unique dishes, the selection takes you on a culinary tour around the Med with simple ingredients that pack in plenty of flavour. While you can choose to enjoy all five, we opted to try three of our favourite dishes from the menu (a move you might also want to consider if you’re saving room for dessert). First up was the mushroom fusilli pasta drizzled with truffle oil for that oh-sosummery flavour. With the roasted chicken and veggies, we felt the juiciness in every bite. And lastly, a simple dressing for the seabass fillet, served with roasted peppers and onions, allowed the freshness of the fish to really shine through. Although we missed trying these, there’s also a delicious Mediterranean bouillabaisse with fresh fish prepared in authentic Spanish style and a serving of grilled zucchini and broccolini to offset all the decadence. You know it’s time for dessert at Seagrill Bistro when the chocolate cake tray starts making its way around the room. Worth breaking the diet for, you can feel the magic in every bite. It’s likely you might only want to stick to cake for dessert as it is every bit a visual treat as it is a feast to the senses, but there’s also a portion of baked Alaska and an apple tarte tatin to share. We couldn’t have asked for a sweeter end to a memorable brunch. But, once the clock strikes five, you can take the revelry outside and keep the weekend celebrations going by ordering a few cocktails by the beach or pool while taking in serene views of the sunset from the comfort of your cabana. I feel very privileged to live in a city as dynamic as Dubai. The emirate always seems to be buzzing with energy and a “can do” mentality. So if you’re looking for an opportunity to grow personally and professionally, Dubai is the place to be. As a young city, it is open to everyone and everything, accepting even what may seem the most impossible of dreams. It is a place that is open to new ideas, championing everything that is innovative, new and futuristic in thought. There is something happening, changing or transforming every single day. As a creative person, I find this very inspiring. Living in a city that epitomises the largest, tallest and grandest as the norm, it sets a certain expectation for us to exceed in every possible aspect. It pushes us to meet above par requirements, set new standards for how we live and work and constantly reinvent ourselves. But with the requirement to be at peak performance day in and day out also comes the need to escape and unwind during our free time. If you work hard, you need to play hard, it’s all about balance and that’s the philosophy I live by. I find happiness and inner peace when I am spending time with my family and my kids, exploring new places, eating delicious food and experimenting with whatever is new to the city. Some of my favourite activities include desert safaris, skydiving and karting. Kite Beach has a lot to offer. It is a great place to spend a few hours under the sun with the sand, sea and dining outlets all providing the perfect combination for a memorable day out. As a nature lover, I would suggest going out into the desert to take in the beautiful backdrop of dunes. And with the stunning coast, the emirate offers plenty of unique ways to enjoy the Gulf waters. Travelling throughout the UAE is sure to fuel your wanderlust. With seven beautiful emirates, each has something different to offer everyone, be it the mountains in Ras Al Khaimah, the cultural and Islamic heritage of Sharjah or the artistic inspiration found in Abu Dhabi, there is so much variety within such close proximity. Oman is also a wonderful place to visit. We are very lucky to be positioned centrally on the map. Not many people have the opportunity to travel so easily between the west and east.
