Twenty minutes before each performance, American singer Joyce DiDonato is already on set. Around her, the aftermath of war is strewn across the stage, setting the scene for her search to find tranquillity in a world mired by destruction. “In the midst of chaos, how do you find peace?” asks DiDonato, who made her Arab world debut in Abu Dhabi with a performance of In War & Peace: Harmony Through Music on January 24. “Each concert is a gruelling journey,” DiDonato told Concierge ahead of the event, but it’s one the multi-Grammy Award-winner feels privileged to undertake. “My hope is that our message will resonate deeply here and amplify the mission of this ambitious festival,” added DiDonato, who uses her art to search for serenity. Speaking about the Abu Dhabi Festival, which got underway last month, DiDonato said: “I have been following with great interest as this young, but potent festival has taken shape. It is clear, through its mission of cultural inclusion and influence, that it is now one of the major players on the international scene.”

The event brings more than 500 international artists from 17 countries together for the region’s largest cultural extravaganza. “This enthralling performance of In War and Peace: Harmony Through Music could not have been more perfectly timed as the UAE enters 2019, the Year of Tolerance,” said Her Excellency Huda Alkhamis-Kanoo, Founder of Abu Dhabi Music & Arts Foundation and Artistic Director of Abu Dhabi Festival. “Tolerance is something each of us would do well to increase in our lives, no matter our cultural background, for it helps us to understand and appreciate one another, and opens the doors for dialogue and diplomacy.” As always with this event, which has been running annually since 2004, the programme features a diverse mix of genres and styles to encompass the varied interests of audiences in the cosmopolitan emirate. High-profile performances by world-renowned artists run alongside a rich programme of events showcasing young stars from the region and further afield. “From its very beginning, the Abu Dhabi Festival has always sought to make the arts accessible and relevant to people of all backgrounds and ages,” Alkhamis-Kanoo said, emphasising the festival’s commitment to bringing “the very finest world-class artists to these shores, inspiring our youth to explore their own talents and abilities.”

The programme features a diverse mix of genres and styles to encompass the varied interests of audiences The 2019 line-up has been chosen to reflect the festival’s central theme Culture of Determination, as it partners with the Special Olympics World Games Abu Dhabi to celebrate those who overcome the odds to make a positive impact on society. “Music and arts transcend all boundaries, and provide fantastic opportunities for people of determination to express themselves, experience joy and increase their self-esteem,” said Peter Wheeler, CEO of Special Olympics World Games Abu Dhabi 2019. This year, the creativity of Korea is foregrounded in a series of performances celebrating the art and culture of the country. A different nation is chosen as the ‘country of honour’ for each festival, highlighting close diplomatic ties between Abu Dhabi and its friends worldwide, including India (2018), Saudi Arabia (2017), France (2009, 2016), Italy (2015), USA (2014), Spain (2013), UK (2012), Belgium (2011), Poland (2010), Lebanon (2008, 2006), and Egypt (2007).

Korean Symphony Orchestra
An exploration of the rich cultural history of Korea will begin on March 7 with the Korean National Ballet’s highly acclaimed adaptation of Giselle. When the troupe first formed in 1962, few people had heard of Korean ballet. Known at the time as the National Dance Company of Korea, they saw the opportunity to build a name for ballet at home and showcase Korean talent. By 1973, they had renamed themselves the Korean National Ballet, going on to become a foundation in 2000 with a plan to make an impression on the world. Today, the company has toured the globe, establishing the prestige of Korean ballet in the US, Italy, Russia, China, Japan, India, Indonesia, Laos, Colombia, Canada and elsewhere.
Paris Opera Ballet
The creativity of Korea is foregrounded in a series of performances celebrating the art and culture of the country The Korean journey continues with a performance by the Korean Symphony Orchestra on March 8 conducted by the acclaimed Chi-Yong Chung with a solo by the celebrated pianist Jae-Hyuck Cho, whose skill has been described as “nearing perfection with extraordinary breadth of expression, flawless technique and composition, sensitivity and intelligence, insightful and detailed playing without exaggeration”. Elsewhere in the programme, Welsh bass-baritone Sir Bryn Terfel, flamenco star Sara Baras, artist Justin Kauflin and jazz pianist, composer and producer Quincy Jones will be entertaining audiences throughout the month. Towards the end of the festival, the Paris Opera Ballet will perform Jewels, a three-act ballet by George Balanchine inspired by the artistry of jewellery designer Claude Arpels. Several special commissions add to the unique flavour and global reach of the festival. Following DiDonato’s performance in January, audiences in Berlin gathered to watch Giacomo Puccini’s masterpiece La Bohème in a co-production between Komische Oper and the Abu Dhabi Festival 2019.
Throughout the year, the festival supports the celebration of regional talent through its Arab Artists Abroad programme, which included Palestinian-Jordanian pianist, Karim Said, who made his solo debut in October 2018, and Syrian clarinettist and composer, Kinan Azmeh, who will perform in Berlin in May. This year, audiences in Abu Dhabi can attend the launch of Omar Kamal’s latest album before the Palestinian singer embarks on a world tour supported by the Abu Dhabi Festival with performances in the US, Canada, UK, France, Germany and Oman. Speaking at the press launch at Emirates Palace, where many of the events will be staged this month, Alkhamis-Kanoo remarked on the first 15 years of the festival and the role it has played in establishing Abu Dhabi as the capital for arts and culture in a rapidly evolving region. “Today, the festival enters its 16th year and we are all proud of its status as one of the leading, most prominent culture and arts festivals in the region and the world beyond.” abudhabifestival.ae

Art of the matter ——
A star on the region’s cultural scene, the spotlight turns to Sharjah as the emirate prepares to host the 14th edition of the Sharjah Biennial from March 7 to June 10
While Dubai and Abu Dhabi have been getting their fair share of art-related headlines these days, Sharjah has championed the UAE’s art scene long before many of the other emirates’ cultural districts began to take shape. In fact, 2018 marked 20 years since UNESCO named Sharjah the Cultural Capital of the Arab World, and 25 years since Sharjah’s ruler, His Highness Sheikh Dr. Sultan bin Muhammad Al Qasimi, founded the Sharjah Biennial, an international art exposition, now overseen by his daughter, Sheikha Hoor Al Qasimi. Today, Sharjah is home to a sprawling arts and culture district that encompasses more than just a single gallery. You could spend hours wandering through the arts

The 14th edition will feature nearly 90 established artists from around the world area with its alleyways, paths and passages, in and out of buildings based on the traditional architecture of the region. Every corner turned seems to reveal a new gallery, painting or display to discover, set against the backdrop of sand-coloured walls and wind towers, with modern artists’ studios and contemporary exhibition spaces blending in seamlessly with the emirate’s local architecture. Located in the Sharjah Art Area, the Emirates Fine Arts society is a nonprofit that dates back to the 1980s – another example of the city’s longstanding dedication to preserving and promoting the arts. The organisation, which has close ties with Sharjah Art Museum, was originally conceived as a way to support and 28

showcase local and international talent within the region. One of the ways in which Sharjah has firmly established its place on the global contemporary arts scene is through the Sharjah Biennial. Every two years, some of the best artists and curators in the world flock to the emirate to participate in this growing cultural expo, with this year’s event taking place from March 7 to June 10. The 14th edition will feature nearly 90 established artists from around the world, along with 60 new commissions and many never-before-seen artworks. Showcased across three main exhibitions, this edition’s thought-provoking theme is Leaving the Echo Chamber – exploring the ways in which modern technology and monopoly news sources have created an inescapable ‘echo chamber’ of information. The art festival will include film screenings, music, performances and a variety of educational programmes to suit guests of all ages. sharjahart.org Sharjah Art Foundation

Leading exhibitions JOURNEY BEYOND THE ARROW – CURATED BY ZOE BUTT Aiming to give deeper context to the movement of humanity and the tools that have enabled or hindered its survival, in this exhibition, artists reveal the generational impact of a range of physical and psychological tools whose representation and meaning has shifted. MAKING NEW TIME – CURATED BY OMAR KHOLEIF In a world that’s seen as constantly on the go, where social images and technology are instant, this exhibition poses the questions – how do we slow down and “experience the experience” and how do we make “new time”. LOOK FOR ME ALL AROUND YOU – CURATED BY CLAIRE TANCONS The exhibition, primarily comprised of new commissions, offers an open platform of migrant images and fugitive forms concerned with the “alternative dispossessive and repossessive disposition of diasporisation as an aporetic phenomenon of the contemporary”.

Art Dubai 2018, courtesy of Photo Solutions
The 2019 edition of Art Dubai is all set to captivate audiences with an impressive creative offering sourced from more than 90 galleries across 41 countries. Returning to the grounds of Madinat Jumeirah, the 13th edition of this eagerly anticipated event will take place from March 20 to 23. When Art Dubai first launched in 2007, the UAE’s art scene, while ambitious, was still very much in its infancy. But the fair’s success, year on year, and the city’s burgeoning local arts scene, only goes to show that the UAE is now a force to be reckoned with on the global stage – a melting pot, of sorts, for amateur and established artists from around the world. In fact, Art Dubai itself has been instrumental in expanding the region’s artistic presence internationally.

Not only is it home to a number of emerging and established galleries, but the area has become synonymous with homegrown cultural initiatives and inventive public spaces. From painting sessions at The Jam Jar and film screenings at The Yard to shopping for quirky interiors at The Odd Piece, there’s plenty to pique your interest. On March 19, Alserkal Avenue will be hosting a free-to-attend Galleries Night, from 6pm to 10pm, allowing visitors the chance to view the art hub’s latest exhibitions. alserkalavenue.ae

2/24/19 2:55 PM
On March 30, more than 60,000 spectators will gather at Meydan Racecourse for the world’s richest day of horse racing. First held in 1996, Dubai World Cup has transformed into a major international event, not only attracting the finest thoroughbreds and equestrian enthusiasts, but also a stylish trackside crowd who are eager to revel in the electrifying atmosphere. The culmination of the Dubai World Cup Carnival, which runs across 10 weeks from early January to the last Saturday in March, Dubai World Cup will see top-calibre horses from across the globe descend on Dubai to compete for a staggering prize fund of US$35 million. Throughout the day, there are nine group races, but it is the final race of the card that has become the most prestigious. Carrying a purse of US$12 million, the Group 1 Dubai World Cup is the richest horse race in the world. Won by the now Hall of Fame thoroughbred Cigar in its inaugural running, the race has become so competitive that no horse has ever triumphed on more than one occasion in the 23-year history of the hotly-contested sprint. Even
the highest earning thoroughbred of all time, California Chrome, was only able to triumph on one occasion, storming to victory in 2016, one year after being surprisingly beaten by Prince Bishop. In fact, each year, the Dubai World Cup becomes that much tougher as the leading owners, trainers and jockeys all vie to be part of the action. However, there has been plenty of success over the years for Godolphin racing, the horse racing stable owned by Sheikh Mohammed bin Rashid Al Maktoum, Vice President of the UAE and Ruler of Dubai. The Godolphin stable has recorded seven victories in the prestigious race, including last year when Thunder Snow shocked the racing world with a conclusive victory by more than five lengths. This was a huge surprise as American hall of fame trainer Bob Baffert’s West Coast was the firm favourite heading into the meet. While the Dubai World Cup may culminate in its namesake race, throughout the meet there is an exciting schedule of races, including the Dubai Gold

Cup, UAE Derby and the Dubai Sheema Classic, which has a sizeable prize fund of US$6 million up for grabs. Aside from all the action on the track, there is also an incredible hospitality offering within Meydan Racecourse’s impressive mile-long grandstand. From private terraces with unbeatable views of the track to premium lounges where guests can savour meals and beverages, there is ample opportunity for those looking to enjoy the meet in five-star luxury. The First Class Lounge and Falcon Suite are also exclusive venues that offer fabulous views of the track, while the Premium area in the grandstand is perfectly positioned opposite the finish line and boasts a variety of food and beverage kiosks. There are also some great options for those seeking a closer look at the runners and riders ahead of the races. The Breakfast with the Stars package is staged on Meydan Racecourse’s Apron during morning track-work and features a lavish breakfast buffet, live commentary and interviews with trainers and jockeys. Similarly, the Winner’s Circle Restaurant provides guests access to the Parade Ring Lawns, allowing them to get a close-up view of the horses that have emerged victorious. Of course, like all great meets around the world, the revelry off the track is as much of a draw as the races themselves. And at Dubai World Cup, the fashion

Like all great meets around the world, the revelry off the track at Dubai World Cup is as much of a draw as the races themselves stakes are high with an annual Style Stakes competition awarding prizes to the trendiest racegoers, including Best Dressed Couple and Most Creative Hat. A prime opportunity for ladies to don extraordinary frocks and dapper gents to turn heads in their best suits, there is always plenty of sartorial flair on show both trackside and in the grandstands. “I started planning my Meydan Style Stakes outfit almost 12 months in advance,” said Alla Dimech, who was crowned Best Dressed Lady at the 2018 Dubai World Cup. “I knew it would have to be something extraordinary, different and very unique. My inspiration came from the desert; its breathtaking lines of the sand dunes and the colours of gold, tan and dull-green. I was also inspired by ancient Arabian history and the traditional Arabian costume. I knew that I had to make something special to represent myself, but also to respect the tradition and culture of the UAE. “In terms of my top tips for 2019; my advice is to be different, adventurous and think outside of the box. Elegance and class will never go out of fashion, so do not worry if you are not the most adventurous in trying new shapes and colours. You can still create the wow factor with accessories to express your own style and individuality.” With some of the finest thoroughbreds in the world competing for millions of dollars in front of an ultra stylish crowd, the eyes of the racing world will be firmly set on Dubai World Cup. So on March 30, Meydan Racecourse will undoubtedly be the place to be and be seen. dubaiworldcup.com

Also new this year is the Special Olympics zone, where visitors can learn more about the Games and the athletes that will be competing. Another major highlight of the Mother of the Nation Festival will be a series of performances by touring company Cirque du Soleil. Appearing in the capital for the first time ever, the spectacular production titled Bazzar will take place under an iconic big top on Yas Island. A breathtaking homage to Cirque du Soleil’s legacy, the show features a troupe of acrobats, dancers and musicians in what is sure to be an awe-inspiring spectacle. Running from March 6 to 16, it is the famed company’s 43rd original production. In addition to these exciting performances, the festival will highlight the empowering role of Emirati women in society. Desire for distinction ——
We catch up with A. Lange & Söhne CEO, Wilhelm Schmid, to discuss cars, craftsmanship and the next generation of watch connoisseurs
LANGEMATIK PERPETUAL in honey gold
From the moment Wilhelm Schmid took the role of CEO at A. Lange & Söhne in early 2011, he was entrusted with further developing the famous German brand. No easy task, given his background was in the automotive industry and that he was joining at a time when the luxury watchmaking industry appeared under threat from the push towards a digital age. While these challenges may have been daunting to many, Schmid simply saw them as a minor hurdle to be overcome. And several years since his appointment, A. Lange & Söhne is developing more complications than ever before and expanding its network of boutiques around the world. But how has the son of a car distributor and a former BMW executive managed to excel in the world of horology? “In retrospect, I would say that my background in the car industry was the best preparation for my current position,” explains Schmid. “This is because hardly any sector is more effective than the automotive industry in managing a global brand with an emotional appeal that builds on heritage, innovation, performance and design. “For me, watches and cars go together seamlessly. It is not without reason that so many watch lovers are also car enthusiasts and vice versa. At first sight, it seems that the fascination with them is rooted in their functionality, but what they have in common goes deeper. “Collectors often say that the most exciting aspect of cars and watches is the human factor: who designed the body or the case, who is the mastermind behind the engine or the movement, who was the previous owner of a particular treasure and, ultimately, where can I meet kindred spirits who share the same passion? “My love of motoring was handed down to me by my father and for as long as I can remember, I have seen watches as a natural complement to cars. Therefore, it was a stroke of luck when I was approached by A. Lange & Söhne because it allowed me to turn a hobby into a career.” With a background in the automotive industry, it is perhaps unsurprising that Schmid is unconcerned with the trend towards people purchasing smartwatches. Much in the same way car enthusiasts are still prepared to pay huge sums for stripped back performance vehicles that are largely handcrafted, luxury watch collectors seek complicated movements that require the work of skilful artisans.

ZEITWERK DATE
“I am convinced that if the current trend towards digitisation continues, and there is no good reason why it shouldn’t, there will still be an ongoing demand for fine mechanical timepieces, simply because they stimulate the mind and fulfil the desire for distinction, timeless beauty and lasting value,” says Schmid. “High-end mechanical watches are built and designed to last virtually forever, whereas most digital technologies that we engage with in everyday life will be obsolete by the time a mechanical watch receives its first service. The key to success is to know and understand the customer and his or her needs, and to never sit back and rest on what has been achieved.”
The German timepiece manufacturer will continue to produce elegant watches However, this does not mean that Schmid and his team are not looking at strategies when it comes to marketing A. Lange & Söhne to a younger audience. Traditionally, luxury brands relied almost solely on advertising on billboards or in magazines, but slowly they have begun to embrace a range of digital platforms, with Instagram proving particularly popular. The prominent ‘watchanish’ account run by Anish Bhatt, who brands himself a “horology and luxury digital influencer”, has 1.7 million followers RICHARD LANGE JUMPING SECONDS
and often features the most exclusive timepieces. Such is the popularity of his account that some of his wealthy followers will enter boutiques and purchase a watch simply after seeing it featured on their timeline. While this may be a rare occurrence, Schmid realises that the purchasing habits of customers are beginning to change. “We should keep in mind that the ‘digital natives’ are now in their twenties and will eventually appear as buyers of high-end watches in a several years’ time,” he says. “The current challenges lie mainly in the entry-level segment. I see much progress here, especially in the development of new product concepts. Based on experience, I am confident that the industry will use all the creativity and technical know-how at their disposal to come up with exciting new ideas. “But in our market segment, the vast majority of customers want to sense, feel and touch the watch before they buy it. They come to our boutiques and retailers to seek personal advice, see how it looks on their wrist and buy it locally. I would not rule out that the purchasing habits may eventually change. But when they do, we will be prepared.” While Schmid is ready to tackle this almost inevitable shift, one aspect that will never change is that the German timepiece manufacturer will continue to produce elegant watches that contain exceptional movements. The brand takes a great deal of pride in connoisseurs being able to identify an A. Lange & Söhne movement at first sight and the latest collection, launched in January at SIHH in Switzerland, perfectly showcases this meticulous attention to detail. “The distinctiveness and quality of our movements have the highest priority for us. After all, this is the backbone of our business model and the foundation

of our success,” adds Schmid. “Finding the right balance between complexity and aesthetics is a key requirement for every new development. That is why our product and calibre designers work hand in hand right from the beginning. “When it comes to design, we don’t want to be flashy. We rather respect our principles and take it from there. A new dial colour like the pink-gold dial of the 2019 DATOGRAPH PERPETUAL TOURBILLON must match our colour palette and a date display for the ZEITWERK must blend into the very specific dial layout. Ultimately, with movements decorated and assembled by hand, every A. Lange & Söhne watch is a truly unique piece.” LANGE 1 ANNIVERSARY

Back to basics ———
We catch up with director of culinary, Daniel Nuss, to find out more about what W Dubai – The Palm, one of Dubai’s hottest new properties, is serving up
Black garlic and almond hummus
Ahi tuna carpaccio
Tell us more about your beginnings and background in the culinary world. How did it all start? “I always wanted to be a chef, right from a young age. Helping my grandmother in the kitchen, I found a passion for the culinary arts. My career started in the Alsace region of France in a Michelin-starred restaurant, where I had the opportunity to work my way to the top, familiarising myself with the many different aspects of running a kitchen. The restaurant was well known so we had quite a lot of expert chef trainers coming through and each of them helped me develop my skills.” Who has been your biggest influence thus far? “I learned from everyone around me, but I gained the most from my travels. I’ve always been passionate about discovering hidden places across the globe, where only locals eat. I often find that I am one of the only foreigners eating at these venues. Experiences such as these have proved to be a real eye-opener. The products, the freshness and the varieties I’ve found are what influenced my cooking.”

Tell us more about what it is like working in the kitchens at W Dubai – The Palm? “It is just fantastic! Look around you, who would not enjoy being part of such a vibrant destination. We have some very exciting venues including Massimo Bottura’s first restaurant outside Italy – Torno Subito – and Akira Back’s first restaurant in the Middle East, which celebrates Japanese cuisine with a dash of Korean essence. SoBe brings the Latino flavours of Miami to the emirate while our casual eateries Wet Deck and Liv highlight the brand’s passion for lighter, fresher offerings.” Avocado tartine

What is the primary culinary philosophy followed at W Dubai – The Palm’s restaurants? “To look after our products, keep it simple, cook with passion and be mindful of our environmental impact.” What’s the formula to the perfect dish? “A great dish has to be simple, perfectly cooked, seasoned properly and visually appealing.” Taste or presentation, what is more important? And how is the perfect balance achieved? “Taste always comes first! You have to understand what gastronomy is, learn how to balance a dish with its flavours and textures. You need to get the basics right, know your classics and perfect them. After that, the world is yours.”
Describe one of the best meals you’ve ever had? “It was in Japan in a Michelin-starred restaurant. A hidden gem in Tokyo, which seats only 14 people at the bar counter, it’s out of this world. The techniques, the temperature of the oil, the texture of the batter, the complexity of the flavours, every single detail is taken into account and the result is perfection.”
What is the best part about being a chef? “To work with great farmers, food producers and people who have the vision and understanding of true quality. Also, as a chef, you never go home hungry!”
Any tips for up and coming chefs? “Work with the best chefs you know. You need to work hard, learn, taste, ask a lot of questions and develop your own style.”
If there’s one person you’d like to cook a meal for, who would that be and why? What would you cook? “It would be the world-renowned French chef Alain Ducasse. He has a great palate, is straightforward in his approach and honest in his feedback. I would make him a classic French dish, as not many young chefs know how to cook from scratch anymore. You need to get the base right before you start working on your own style.”
Describe your culinary style in three words. “Clean, fresh and flavourful.” When you’re not behind the scenes in the kitchen, do you enjoy cooking at home? “I do! I love cooking anything my son requests; he is my number one critic and has a very good palate.” For reservations or more information 04 2455555

Raising the steaks —— On our recent visit to The Grill Pit, we discover how this Argentinean-inspired parrilla at Al Habtoor Polo Resort is fully embracing the spirit of the gaucho As a self-confessed steak connoisseur, there is nothing more enjoyable than discovering a restaurant that promises a traditional Argentinean experience. The South American country has earned a reputation for producing some of the best beef in the world, thanks to the largely grass-fed diet of the cattle. Known for being tender and rich in flavour, it compares favourably with Scotland’s famed Aberdeen Angus and even the renowned Wagyu from Japan. So when I arrive at The Grill Pit, I am understandably excited. The signature restaurant at the stunning Al Habtoor Polo Resort has taken inspiration from gauchos, the skilled horsemen that have roamed the Argentinean plains for centuries. In tribute to their way of life, the menu features classic dishes and the kitchen is powered by a parrilla. These traditional simple iron grills are fuelled by wood and allow meat to be cooked indirectly, as well as accrue a wonderful smoky flavour.
This means the kitchen exudes a wonderful aroma which can be fully appreciated if you are seated close to it. The dining room itself is decked out in dark woods and soft leather, with a mixture of intimate tables and large booths that are ideal for families. You’ll also discover a small, but well-stocked bar where you can enjoy an aperitif before the main event.

The Grill Pit
Beef tenderloin steak
The menu features classic dishes and the kitchen is powered by a parrilla Once seated, our server takes us through the concise menu and we decide to start with an avocado salad and a selection of empanadas. The salad is wonderfully light, thanks to the simple lemon dressing, while the peppers and asparagus have plenty of bite and a slightly charred f lavour having been cooked on the grill. The empanadas are also expertly prepared, with the pastry maintaining its flake and the filling wonderfully tender. The crab was particularly f lavoursome, while the chicken was classically paired with carrot and onion.
Having purposefully selected a combination of light starters, we could fully indulge when it came to the main course. We opt for the 300-gram beef tenderloin steak with baked potato and a béarnaise sauce, and the traditional matambre a la leche, which is an Argentinean form of beef brisket. But before the main courses could arrive, our waiter asked us to “choose our weapon”. We are then presented with a selection of criollo knives, which look as though they belong in the sheath of a hunter. These turn out to be more decorative as when the meat arrives, it is wonderfully tender and even the dullest of blades can easily pass through the beef. The tenderloin is thick yet simply melts in the mouth as it has been perfectly cooked to medium-rare. There is a hint of a smoky flavour yet it is very delicate and does not overpower the meat. The accompanying baked potatoes have clearly been cooked under the

grill and have plenty of flavour thanks to a helping of melted cheese, though the serving size of two rather large potatoes proves too much for my dining companion. For my main course, there is almost no need for a knife at all, with the beef brisket simply falling apart when coaxed with the fork. Slow cooked in milk, the colour is almost off-white but the taste is exceptional as there remains a small layer of fat that melts with every mouthful. The vegetables have also taken on huge amounts of flavour thanks to being cooked on the iron grill. Perfectly charred and well seasoned, I have no problem clearing the plate and cannot help but dip every forkful into the vibrant chimichurri sauce. We are then coaxed into trying the desserts despite feeling suitably satisfied. We choose the panqueques, which are milk caramel crepes served with dulce de leche ice cream. Fully indulgent, this satisfies those with an extreme sweet tooth as both the crepes and ice cream are incredibly rich thanks to the caramel. We also try the budin de pan, a bread pudding that is paired with preserved figs and Chantilly cream. The lighter of the two desserts, it still packs in plenty of flavour and is a wonderful end to the meal. The Grill Pit promises to showcase the life of a gaucho and thanks to the traditional grills, fine cuts of meat and smoke-infused dishes, that is exactly what it achieves. The second-generation restaurateur and owner of Rüya Dubai tells us how to make the most of the emirate’s diverse dining and leisure offering
Rüya Dubai
With a Turkish restaurateur for a father – who has been in the business for more than half a century – I was always around food and often found myself in the kitchen. At the age of 12, I began my first job at his restaurant in Istanbul. I started out sweeping the f loors, but gradually worked my way through every single department, from the kitchen to purchasing and then accounts and marketing. Over the years, my passion for the culinary arts only deepened. My dream took me to New York, where I enrolled in one of the finest culinary schools in America. After graduating, I moved back to Istanbul to launch my first restaurant and now, I have opened a total of 20 restaurants around the world, the last one being Rüya Dubai’s outpost in London. One of my life-long dreams has been bringing Turkish cuisine to the global spotlight and Rüya Dubai stands for that ambition. After all, Rüya in Turkish means dream. Although we were planning to first launch Rüya in London, Dubai came along and now, when I look back, I believe it worked for the best. Dubai’s dining scene is vibrant yet competitive. Although the population here is not as dense as other global hubs, some of the world’s best restaurant brands are well represented. In fact, I visit every two months and find 20 new restaurants open, each of which offers so much to experience for every budget and taste. What makes restaurants in Dubai special is that they cater to an international community and different cultures. This makes it a lot easier to obtain feedback from all around the world in one destination. It’s this dynamic audience that helped make Rüya Dubai a model of sorts for the concept, thanks to the positive feedback we received from the local community and tourists alike. But there’s so much more to Dubai beyond food. In fact, my family and I love heading to the beach, especially during winter. And when friends visit, I always recommend a trip to the city’s many shopping malls and the world’s tallest tower, Burj Khalifa. I recently took some of my guests who were visiting from Greece to Palm Jumeirah, City Walk, La Mer, Bluewaters Island and JBR. And there’s still plenty more to explore! But for those looking to soak up the city’s dining scene, I’d, definitely recommend Rüya Dubai for a true taste of Anatolian cuisine. Anatolia is the peninsula that Turkey is situated in and it is where civilisation began. Our cuisine is an accumulation of all these cultures through the years from the Romans and Byzantines to the Ottomans. We have an extensive menu, packed with everything from meats and seafood to vegetarian and gluten-free options, which means you are guaranteed a completely different experience every time you visit. Do try the two-cheese pide from the Black Sea, because while I love every dish we have to offer, this one is my favourite! To know more about Rüya Dubai or to book a table ruyadubai.com.
