Editor’s note Considered a destination of contrasts, juxtaposing luxury living with a rich cultural heritage, the United Arab Emirates is an intriguing place to visit and this month sees much of its diversity come to life. The holy month of Ramadan is expected to begin on May 17. This is a special time that will see Muslims across the UAE, and the world, pause and reflect on their faith. In honour of this spiritual occasion, our photo essay on page 38 presents some of the emirate’s most iconic cultural sites and religious landmarks. While, on page 26, to celebrate the Year of Zayed, we take a look back at one of the UAE’s most beloved figures. Take a break from exploring the city to browse for the latest collections in designer fashion and accessories. We provide plenty of style inspiration in our Shop section, including a closer look at the chic collections from Swiss watchmaker Rado, on page 56. A melting pot of cultures then sets the scene for an eclectic selection of culinary treats. We chat authentic Arabic fare with Aseelah’s sous chef on page 70, while traditional Thai cuisine is the focus of this month’s review on page 72. Be sure to turn to page 76 for our roundup of hot new restaurants and must-try dishes. If the magazine leaves you feeling inspired, book your next experience with us by visiting myconcierge.com.

Montblanc has released two new chronograph models inspired by Minerva’s extraordinary heritage Minerva pocket watch

In the world of luxury watch brands, an impressive heritage is par for the course. But even by the high standards of haute horology, Montblanc still stands out from the crowd. This year, the beloved German maison celebrates the 160th anniversary of its in-house manufacture, Minerva, along with 20 years of the Star Legacy Collection. In honour of this occasion, Montblanc has released two new chronograph models inspired by Minerva’s extraordinary heritage: the Star Legacy Automatic Chronograph and the Star Legacy Rieussec Monopusher Chronograph. The Star Legacy Automatic Chronograph is a modern reinterpretation of a classic design – one that, with every detail, pays tribute to Minerva’s legacy of meticulously created chronographs. Powered by an automatic movement of the Calibre MB 25.02, the Star Legacy Automatic Chronograph is aesthetically flawless: the sleek numerals and subtly curved glass are reminiscent of the Minerva pocket watches. The numerals are encircled by a railway minute track, with blue leaf-shaped hands, a minimalist white dial and filet sauté guilloché lines that capture the light while also emphasising the Montblanc emblem. The intricate details of the timepiece are complemented perfectly by a handsome sfumato blue alligator strap. The eye-catching sfumato effect is based on a painting technique inspired by the great masters of the Renaissance, who layered their paints to create subtle transitions between each colour and tone. The strap itself was created in the Montblanc pelletteria in Florence, where all of the maison’s quality leather goods are painstakingly handcrafted by skilled artisans using centuries-old techniques. Then there’s the Star Legacy Rieussec Monopusher Chronograph, another re-imagining of a timeless design. This timepiece takes its name and inspiration from Nicolas Rieussec, a French watchmaker, who, in 1821, pioneered the first inking chronograph, a fascinating creation that recorded elapsed time using actual ink. This modern reinterpretation of the design mimics Rieussec’s system and updates its classic aesthetics for the modern customer. The influence of Rieussec’s original inking chronograph can be seen in the two rotating vertically-aligned

discs on the dial that serve as 60-second and 30-minute counters, which turn below a blue fixed double index. The silvery-white dial is beautifully offset by blue leaf-shaped hands and silver chronograph discs, while the off-centre hour circle and domed titanium turning discs create a visually interesting three-dimensional effect that nods to the Minerva pocket watches of old. The winding rota is skeletonised, so you can see the in-house calibre MB R200 that powers the watch at work. Meanwhile, the black numerals are slimmer and sleeker than in earlier designs, surrounded by a railway minute track. A date display at 6 o’clock adds a finishing touch. Like the Star Legacy Automatic Chronograph, the Rieussec-inspired watch also boasts the same fashionable sfumato blue alligator strap, created by Montblanc’s master craftsmen in Florence. The extra hand in the main time display can be set to a second time zone, making this the perfect fashionable accessory for the discerning jet-setter. Discover the collections at Montblanc boutiques at The Dubai Mall or The Galleria on Al Maryah Island 02 6764776.

A man of the people ——

The late Sheikh Zayed bin Sultan Al Nahyan is one of the nation’s most beloved and cherished figures, and in celebration of the Year of Zayed, we look back at his enduring influence You can’t go far in Abu Dhabi without seeing a mention of Sheikh Zayed bin Sultan Al Nahyan. As the country’s first president, and a notable figure in history, he is recalled everywhere you look, in the names of roads, mosques, universities and bridges. But it’s not just the tributes of his people that entrench the charismatic leader in national memory. Evidence of his influence is woven into the very fabric of the country, in the quality of life enjoyed by its residents and the groundbreaking structures admired by the world. This year marks 100 years since the birth of Sheikh Zayed, who passed away in 2004, and to commemorate this national occasion, His Highness Sheikh Khalifa bin Zayed Al Nahyan, President of the United Arab Emirates, declared that 2018 will officially be known in the UAE as the Year of Zayed. It’s a momentous tribute that is befitting of the nation’s founding father.

Early years

The youngest of four sons, Sheikh Zayed bin Sultan Al Nahyan was born in 1918. His father, Sheikh Sultan bin Zayed Al Nahyan, was the ruler of Abu Dhabi from 1922 to 1926. In those days, the capital was a far cry from the wealthy emirate it is today and its people, even those who belonged to the ruling family, lived by simple means. A time before the discovery of oil, the mainstays of the economy were fishing, pearl diving and agriculture, which produced enough to live on but meant that there was little extra, and so the country remained undeveloped. At the time, formal schooling was rare and the young sheikh took basic lessons in reading and writing, in addition to classes on Islam. Much of his time was spent in the desert with the Bedouin tribes learning about their way of life and the environment. He was taught the traditional practice of falconry, which remained a passion for the rest of his life, and developed a love and respect for Arabian horses. In 1946, Sheikh Zayed became the ruler’s representative in the Eastern Region, where the city of Al Ain is located. He quickly established himself as a capable leader, who was willing to lead by example. The sheikh wanted opportunities for the people of Al Ain and set up the first modern school in the emirate, which he funded with his own money. He also encouraged friends and relatives to contribute towards the development of the region. A big believer in conservation and the environment, Sheikh Zayed had the falaj water transport system rebuilt, providing irrigation for the oases and other agricultural developments. As a result of his efforts, Al Ain is today often referred to as the ‘garden city’ and the ‘oasis city’.

Ruler of Abu Dhabi

Although oil exploration had continued in the Gulf for many years before it was discovered in Abu Dhabi in 1958, it didn’t bring immediate wealth to the emirate. The ruler at the time, Sheikh Shakhbut bin Sultan Al Nahyan, was unsure whether the revenue would continue and chose to be frugal rather than pour the money into the development of Abu Dhabi. However, his brother, Sheikh Zayed, believed that the money would offer great opportunities to the emirate and, inspired by his ideas, the ruling Al Nayhan family put him on the throne in 1966 to carry out his vision of developing the emirate. As Sheikh Zayed wisely said: “Real wealth is the hard work that benefits both the person and the community. It is immortal and eternal and becomes the value of the person and the nation.” He channelled vast sums into the construction of schools, healthcare services, an airport, seaport, housing, roads and a bridge linking Abu Dhabi island to the mainland. Just a year later, the British announced that they would withdraw from their treaty with the Trucial States, which included the sheikhdoms of Abu Dhabi, Dubai, Sharjah, Ajman, Fujairah, Umm Al Quwain and Ras Al Khaimah. The agreement ended on December 1, 1971, and the next day, the United Arab Emirates was formed. Sheikh Zayed was appointed the president of the new country. Together with the ruler of Dubai, Sheikh Rashid bin Saeed Al Maktoum, he had been instrumental in establishing the federation.

Sheikh Zayed continued to spread Abu Dhabi’s oil wealth not just within the emirate but also throughout the country. He invested heavily in education, believing it to be the key to a successful future. “Building good citizens is more difficult than building factories. Sophisticated nations are judged by the level of their population’s education,” he once said. He was also passionate about the environment and wildlife, and established not only the Al Ain Zoo but also the Arabian Wildlife Park on Sir Bani Yas Island. The survival of the Arabian oryx, a species declared extinct in the early 1960s, can be attributed to the successful breeding programme here. Today, more than 500 Arabian oryx roam free on Sir Bani Yas Island. A firm believer in peace and stability, the sheikh showed that same compassion towards people. He exhibited a widespread tolerance of other religions and was greatly respected by expatriates in the UAE. He also sought to bring greater peace within the Arabian Gulf and the broader Arab world with his humanitarian and aid efforts throughout the region.

CA NVA S / YEA R OF Z AYED

The legacy continues

Speaking at the Year of Zayed announcement, Sheikh Khalifa bin Zayed Al Nahyan, President of the United Arab Emirates, said: “The Year of Zayed is a great national occasion when we proudly share memories of the life of the founding father, and his gift to us of deeply-rooted values, principles and traditions that have become part of our Emirati identity.” With this in mind, throughout the year, a series of events and initiatives are taking place across the emirates. From poetry readings, calligraphy competitions and photography exhibitions, to student street parades and commemorative art, such as that emblazoned upon Dubai’s Emirates airline, there is no shortage of creative ways to honour this great leader. Accordingly, Sheikh Mohammed bin Rashid Al Maktoum, Vice President and Prime Minister of the UAE, followed the president’s declaration, by adding that the Zayed school of leadership and management had inspired the government to launch the UAE Centennial 2071 – an ambitious government strategy to be a world leader by the year 2071, in four main tenets – education, economy, government development and community cohesion. Sheikh Zayed’s well-known spirit of generosity has also seen the launch of several humanitarian projects, from financial aid to medical donations and educational funding. In an effort to further improve working conditions, officials have said that over 100,000 workers will be provided with legal education this year by the Abu Dhabi Judicial Department. Speaking at the inauguration of the Founder’s Memorial, Sheikh Mohammed bin Zayed Al Nahyan, Crown Prince of Abu Dhabi, said: “The Founding Father will continue to inspire current and future generations with his humanity, leadership and wisdom,” – an aspirational sentiment that rings true across the many fantastic projects taking place throughout the Year of Zayed, and no doubt for many years to come.

In his honour A recently opened, permanent national tribute to the late Sheikh Zayed can now be found along Abu Dhabi Corniche. At the centrepiece of the Founder’s Memorial is The Constellation, a stunning artwork crafted in Sheikh Zayed’s image from a total of 1,327 geometric shapes suspended from 1,110 cables. Illuminated by more than 2,000 lights, this celestial display is a symbol of the founding father’s guiding presence over the nation. The lush gardens that border the memorial, with more than 100 million trees, also reflect the sheikh’s love of nature.

Throughout the year a series of events and initiatives are taking place

Who doesn’t love a classic good-triumphs-over-evil tale? Add to that a spectacular combination of music, dance, drama and action, and you have yourself the winning formula for a successful Bollywood production – one that takes you on an emotional roller coaster ride with every change in sequence. And that’s exactly the experience you are promised with Dubai Parks and Resorts’ Broadway-style musical, Jaan-e-Jigar, performed at the Rajmahal Theatre at Bollywood Parks Dubai. In this riveting two-hour tale, masterful storytelling meets a larger-than-life world that champions the magic of the Indian film industry. Fans can count themselves in for a treat! Set in the fabled town of Ishqabad, the story chronicles the journey of two brothers, Jaanbaaz and Jigar, born to the royal family. In a cruel twist of fate, the siblings are separated at birth, only to find themselves reunited years later. Together, they join forces to unearth the series of events that led to the kingdom’s fall from grace, and restore its former glory. Stringing the spellbinding plot together are a number of toe-tapping song-and-dance sequences. The gripping tale is brought to life by eight key characters, all of whom have received high praise for their noteworthy performances, in addition to 54 other supporting members of the cast. From the noble king, Salamat Shah, and his sons to his treacherous sister Marjaani, whose thirst for power knows no bounds, the contrasting personalities of every character shine through effortlessly. Completing the remarkable ensemble are Gulpari and Jharna, the two leading ladies who play love interests to the brothers; Nashook, a conniving jester and Jugnu, the king’s loyal guardian. Adding the perfect element of cheer to the intense stage drama are all the elements of a Bollywood blockbuster – energetic dance numbers, a powerful background score and colourful costumes. Watch in amazement as the charming young princes brave every hurdle along the way to emerge victorious, winning over the hearts of their subjects and the audiences, too. But the excitement doesn’t end there. To make your experience at Dubai Parks and Resorts even more entertaining, every spot you book for the show also gives you access to the theme park itself. So be sure to head over earlier to Bollywood Parks Dubai to explore the destination’s many attractions including the interactive rides and stunt shows. End your evening on a delicious note with a meal at Mughal-e-Azam, the fine-dining restaurant within the theme park that champions traditional Indian cuisine inspired by recipes from the 16th and 17th-century royal kingdoms.

Going local ———

Meet The Locals co-founder Abdulla Matar gives us a glimpse into the emirate’s past while sharing the inspiration behind the cultural tour group

Since its early days as a humble fishing village, the UAE has undergone a major transformation to become a modern metropolis. From record-breaking structures to renowned leisure destinations, the nation is home to some of the most recognisable architectural marvels on the planet. Although these attractions take pride of place, locals will tell you that no visit to the emirates is complete without immersing yourself in the Emirati way of life. And while there are numerous ways to do so, there’s no substitute for exploring the destination through local eyes. That’s where Meet The Locals comes in. The brainchild of Emirati entrepreneurs Abdulla Matar and Khadija Behzad, the cultural tour group was founded to encourage interaction between the local community and visitors to the country as well as expatriates. Although fairly new to the country’s tourism scene, the start-up has already come a long way, even winning an award for its concept, which aims to bridge cultural gaps. “Our country has one of the most diverse mixes of people on earth. It is a global hub and a vibrant centre for travel and trade,” says co-founder Matar. “But there is far more to our land than sun, sand and shiny buildings. Each of the seven emirates that make up the UAE boasts their own marvels and as guardians of this rich heritage, we love to take people on a journey to explore the very attributes that make our home special. And that’s why we founded Meet The Locals.” For the Emirati tour guides who make up the group, it’s all about creating opportunities that encourage people to connect. “That’s how our experiences are designed,” he says. “All of our tours offer a warm and welcoming environment for people to make themselves at home, enjoy our Emirati hospitality, ask the questions that have always been on their minds and engage in honest conversations.” Journeying through the emirates with a Meet The Locals tour guide is a fascinating experience. From exploring museums in Sharjah to discovering Dubai’s modern attractions, every experience promises to take you off the wellworn path to gain an insight into the nation’s past and present. Matar tells us that while on tour, your guide will share lesser-known anecdotes and nuggets of information that you won’t find elsewhere.

Old Souk Dubai

While on tour, your guide will share lesser-known anecdotes and nuggets of information that you won’t find elsewhere Among the many experiences offered, the Old Dubai tour is a must, especially for first-time visitors. As Meet The Locals puts it, “It’s an invitation to step back in time as you meander through the peaceful streets of Al Fahidi Historical District, experiencing the sights, sounds and smells of old Dubai with your Emirati guide.” Here, you can interact with other locals, listen to stories about life in traditional courtyard homes and also visit places of historic interest including the Dubai Museum within Al Fahidi Fort, the Coin Museum and Dubai Coffee Museum. Talking inspiration, Matar says that it all ties in with the concept of Emirati hospitality. “We are following traditions we’ve learned from our parents and grandparents, creating a unique culture of hospitality. We always make our guests feel welcome and we treat them like one of us. We invite them into our homes and our lives and ensure they take a piece of our heritage back with them.”

This Ramadan take a trip back in time and enjoy a sumptuous sunset feast in the heart of the Arabian desert Visitors are welcome to travel to Dubai during Ramadan – in fact, it can be one of the best times to visit the city and a wonderful opportunity to join in the lavish iftar buffets and celebrations that occur every evening. One of the most authentic ways to experience iftar is in the middle of the desert, with Platinum Heritage offering a look back at how the region celebrated Ramadan over 50 years ago. Listen to stories from local Bedouins about the UAE’s cultural heritage and learn a little more about the holy month of Ramadan. Discover the desert from the sky ——

Head up high for the ultimate aerial adventure and once-in-a-lifetime memories Hot air ballooning is on the top of many travellers’ bucket lists and it’s easy to see why Dubai is one of the best places in the world to experience this exciting activity. Gazing at the vastness of the desert at 3,000 feet is especially magical. You get to spot native wildlife such as camels, Arabian oryx and gazelles. The sun rising over the landscape is truly breathtaking, as the sunlight reflects a range of hues across the sand dunes. Dubai is also the only place in the world where you get to fly with falcons. Falconry is strongly rooted in the cultural heritage of the UAE and witnessing these majestic creatures soaring around the balloon basket in full flight while you float above the desert is a truly special sight. After the hot air balloon ride, you get to feast on a gourmet breakfast of smoked salmon, eggs Benedict and more in a traditional Bedouin camp in the middle of the desert. During the summer months of June through to August, hot air balloons aren’t able to fly due to the change in air temperature, so this May, don’t miss the chance to experience this ultimate adventure. In the moment ——

Rado True Stratum

Rado True Blaze

When it comes to design innovation in the world of horology, few brands can compete with Rado. After all, it was Rado who pioneered the very first scratchresistant watch, the DiaStar 1. Released in 1962, the groundbreaking model brought a then unheard of combination of hard metal and sapphire crystal into the industry. The same timepiece is still sold today, although, as Rado CEO Matthias Breschan notes, the now-iconic design, reborn as 2011’s D-Star, has been updated to reflect new innovations in technology. “The design has moved on from hard metal to ceramic, because the latter has so many advantages,” he says. “As well as being scratch resistant, the material is also hypoallergenic, extremely light and very comfortable to wear. The ceramic surface adapts to the temperature of your skin and, perhaps most importantly, it keeps its beauty for many years.” This last point, about durability and timelessness, is integral to Rado’s philosophy and its place in the industry. Breschan is passionate about the emotional power of watches. To him, a watch is more than a merely functional object and in fact, is much greater than the sum of its parts. “Our watches keep their beauty, from the first day to the first decade and beyond. They are built to endure. That’s why when you give someone a watch, you’re offering them a very strong emotional message.” It’s a fact that goes some way towards explaining the resilient popularity of Rado particularly in the Middle East, where it was one of the first luxury watch brands to focus on having a presence in the region. This was partly due to the same pioneering spirit that produced the DiaStar 1: a desire to boldly go where few others have ventured. Then there is the fact that culturally, there is a strong gift-giving custom in the Middle East. “The region always has been, and continues to be, very important to Rado. We are one of the leading watch brands in the Middle East and I truly think this is linked to the strong emotional value that our watches have as gifts,” Breschan adds. As a result of this connection to the region, a stunning collection was unveiled exclusively in the UAE during Dubai Design Week in November last year. The Rado True Designers’ Collection features limited edition timepieces created in collaboration with a handful of carefully chosen artists. What’s arguably most interesting about this collection is the fact that none of the designers have any know-how or experience when it comes to watches. “We wanted to work with creatives from different industries that had nothing to do with the world of horology, people with a completely fresh perspective. Because of this, they were able to bring us ideas that made them strong in their own worlds, helping us to create something truly innovative.”

Rado Ceramica

Among the collaborators was Kunihiko Morinaga, an avante-garde fashion designer known for his work with photochromic fabrics, materials that change colour according to light exposure. The renowned designer co-created the Rado True Shadow, which uses photochromic glass to magical effect. The surfaces of the True Shadow are crafted from Rado’s signature hightech ceramic. When you’re in bright sunlight, the watch looks dark, with only the hands visible – everything else appears black. But once you step inside, in the absence of UV light, the shadow darkening the dial disappears, revealing a skeleton watch with its inner craftsmanship on display. If the True Shadow is distinguished by its chameleon-like ability to fade into the background and appear less complex than it is, the glittering Rado True Blaze is all about standing out. Another limited edition piece from the collection, it was created in collaboration with American interior designer and former model Sam Amoia, who’s known for taking a fearlessly innovative approach to designing furniture. “Sam came up with the idea to integrate the watch dial with powdered diamond. Unfortunately, if we’d actually produced the idea, it would have retailed for about US$40,000,” Breschan laughs. “So our challenge was to create the technology that could reproduce the Amoia effect, but at a lower price point.” The answer was a galvanic treatment used to recreate a finely textured surface that mimics the diamond powder effect. On closer examination, you can also see that the gold hour markers and signature have been placed on the underside of the sapphire crystal so as not to disturb the sparkling dial. According to Breschan, the galvanic treatment was a technique created specifically for this watch. Other creatives that collaborated on the collection include Polish architect Oskar Zieta, who designed the glossy Rado True Face; Swiss design studio Big-Game, who collaborated on the playful Rado True Phospho; and Austrian designer Rainer Mutsch, creator of the minimalist Rado True Stratum. While the True Line Designers’ Collection is unambiguously futuristic, Breschan also notes that Rado has seen a rise in the popularity of its revamped vintage watch designs, a trend he attributes to present-day politics. “In times of upheaval and uncertainty, people want objects that make them feel more at home and more grounded. A vintage watch is one of those things that makes you feel confident and secure.”

As Breschan notes, vintage-inspired luxury watches are having a moment. So it’s no surprise that the Swiss brand championed the stunning Rado Tradition 1965 at Baselworld 2018. The timepiece is a modern reimagining of a 1960’s classic timepiece inspired by the Manhattan skyline. Several updates have been made to bring it into the 21st century: the case is crafted from innovative PVD coated titanium, almost 40 percent lighter than stainless steel, with sapphire crystal for the glass. The tuning fork hour and hands and red anchor add distinctive details, while the leather strap is stylish and comfortable.

Rado True Shadow

“Our watches keep their beauty, from the first day to the first decade and beyond. They are built to endure”

The Rado HyperChrome Captain Cook Limited Edition is a great example of this, a limited edition, vintage-inspired timepiece based on a watch that Rado made in the 1960s. This time with a sleek leather strap (rather than ceramic) and an updated movement. Despite Rado’s nod towards nostalgic aesthetics, the brand’s sights are still firmly set on the future, especially when it comes to smartwatches. While Rado dipped its toe into the market with the release of 2013’s Esenza Ceramic Touch, Rado’s first ceramic watch to use touch technology, Breschan notes that the maison is busy at work to expand further into this market. “With our emphasis on materials and design, touch technology is a natural fit for Rado. Interestingly however, we’ve noticed that the rise in smartwatch popularity hasn’t impacted our sales of traditional luxury watches. People will always want timepieces that are more than merely functional.” Rado True Face

Scratch beneath the gilded surface of the region’s more contemporary retail offering to reveal a wealth of unique shopping experiences steeped in local custom

/ Local flair

With the aim of reviving some of the capital’s more traditional retail offerings and preserving the handicrafts that were once vital to its people’s fortunes, Sougha has changed the lives of many skilled Emiratis across the UAE. Meaning ‘a traveller’s gift’ in Arabic, Sougha is a social enterprise initiative by the Khalifa Fund for Enterprise Development. After a modest start in 2009 with just a handful of skilled Emiratis in the Western Region of Abu Dhabi, today, there are over 100 artisans involved with this admirable cause. The organisation sells handmade products, including brightly coloured bags, tapestries, bracelets and even phone covers. Head to Abu Dhabi’s Central Market at The Souk at World Trade Centre to browse a wide selection of Sougha products.

/ Creekside adventure

As the first communities began to settle along Dubai Creek in the 18th century, the old city became a major port, where those from neighbouring countries arrived with their wares by boat. The clamorous scene thronged with all manner of merchants. Today, the marketplaces in Deira and Bur Dubai remain a hive of vibrant activity. With over 300 retailers vying for attention, Dubai’s Gold Souk is a major visitor attraction and the ultimate destination for all that glitters. Jewellers from around the world are represented here and the souk offers countless choices in all shapes, styles and colours. Beyond the Gold Souk, the labyrinthine markets that line the creek offer much to discover. Packed into narrow streets, the shop fronts of the Spice Souk are filled with every imaginable herb and spice available, offering a heady mix of aromas. Just an abra ride away, Bur Dubai Souk presents a wealth of treasures, such as colourful lanterns, hand-woven carpets, silk scarves and more.

/ Past meets present

For those who appreciate a less frenetic pace, elsewhere in Dubai, several retailers have embraced the authentic souk experience, with a modern twist. Souk Madinat Jumeirah and Souk Al Bahar have both been designed with a strong Arabic inf luence in a contemporary setting, offering local handicrafts with jewellery, art, gifts, clothing and interior brands for an eclectic shopping trip. Another of the city’s modern bazaars is Souk Khan Murjan at Wafi Mall. Modelled on an ancient underground souk in Baghdad, it brings together architectural influences from Egypt, Syria, Turkey and Morocco. The venue provides a creative community for artists and craftspeople, encouraging skilled individuals to break into the retail world and showcase traditional products. Peruse everything from bespoke calligraphy to oriental rugs and luxe pashminas. Over in the capital, Souk Qaryat Al Beri is a must-visit. Part of the ShangriLa Hotel, Qaryat Al Beri, Abu Dhabi complex, the popular souk features a blend of Arabic and Venetian architectural themes and a lovely mix of stores and stalls selling a variety of Arabian perfumes, antiques, clothes, jewellery and furniture.

The Central or Old Souk is a good place to start with its ramshackle cluster of stalls selling exotic spices, colourful throws and striking jewellery. A trip here offers a more rustic take on the souk shopping experience found elsewhere in the capital. Another place decidedly local in character is the Camel Souk, which offers a unique insight into Middle Eastern culture combined with an opportunity to witness camel auctions and see some of these prize animals with their owners. Souk Al Qattara in the city of Al Ain showcases handicrafts from local traders. Selling a variety of products from national clothing and perfume to incense and exotic spices, this weekend market takes place from October to May. Visitors can easily spend an entire day here as the souk is also linked to the redeveloped Al Qattara Fort, now home to a popular arts centre that features regular exhibitions and workshops, a library and cafĂŠ.

Feast of flavour ———

Aseelah’s Arabic sous chef, Rabeh Adel Amir, chats culinary inspirations, menu favourites and iftar plans

The old-world charm of Dubai’s historic districts is brought to life at Radisson Blu Hotel, Dubai Deira Creek. Making the most of its vibrant location – a short distance from the emirate’s traditional marketplaces and cultural landmarks – is the property’s signature Emirati restaurant, Aseelah. Known for its classic take on regional cuisine, the venue is a local favourite, especially during the holy month of Ramadan, when Aseelah assumes a whole new character to present a spectacular spread of delectable treats. Chef Amir tells us more…

For iftar, Aseelah will join the other dining venues at the hotel to host an extensive spread of over 200 dishes How did you discover your passion for cooking? When I was on summer break from school 17 years ago, I worked part time in a restaurant in south Syria. The head chef there told me that, while cooking any recipe, whether classic or contemporary, it is very important to add one’s signature touch to the dish. This prompted me to watch a lot of cooking shows and also help my mother prepare our family dinners. Since then, it has been my dream to run my own kitchen. What does a typical day at Aseelah look like for you? For the most part of my day, I’m shuffling between attending briefings or training my team. In addition to this, my role also involves conducting quality checks to ensure everything in the kitchen runs smoothly for us to craft memorable dining experiences for our guests. Where do you draw your inspiration from as a chef? Chef Uwe Micheel, the director of kitchens at Radisson Blu Hotel, Dubai Deira Creek, is my idol. It’s a privilege to be working with and learning from a culinary master like him. What makes the perfect iftar? There are two things to bear in mind when crafting the perfect iftar experience, the first being quality, as the meal should completely replenish those fasting and also keep them sailing through the hours to follow. The second is variety – an iftar with dates, soups, fresh salads, meats and rice with lots of juices makes for a truly special meal to share with family and friends. What can diners expect at Aseelah this Ramadan? For iftar, Aseelah will join the other dining venues at the hotel to host an extensive spread of over 200 dishes. Visitors can expect an endless variety of Middle Eastern and international cuisines with the highlight of the experience being traditional food from

the region including Emirati, Lebanese, Syrian, Egyptian and Moroccan treats. We are also planning a special live barbecue station and shisha this year. As a chef, how do you cope with fasting during Ramadan? It’s very difficult to prepare a meal and fast at the same time, especially since you need to taste the dishes you’re cooking. But when you’re backed up by a trustworthy team of experts, who can step in and check the f lavour balance, you can make it work. What’s your favourite dish on the menu? I love the chicken margoogat, a stew-based dish with plenty of vegetables. I love preparing it as it’s always a favourite with our diners. It has the perfect balance of f lavours – spicy, salty and sour – bringing all the taste buds to life. The ouzi, prepared with a combination of rice, raisins and almonds, is also another favourite. What do you love the most about working in the UAE? I always tell myself I am lucky to work in Dubai because it is so multicultural. It is especially rewarding to serve traditional Emirati cuisine to first-timers, who love the dishes so much that they always ask for recipes after their meal. In fact, this prompted us to launch a cooking demonstration experience at the restaurant, where we take visitors through the process of creating a few Emirati favourites. It also serves as the perfect cultural icebreaker. When you’re not running the show at Aseelah’s kitchens, where do you enjoy dining? Apart from the restaurants at the hotel, of course, I love going to JBR for the sheer variety of cuisines on offer. Apart from Emirati food, I love trying different Italian, Thai, Indian and French food. Back home in Syria, my favourite restaurant is the Bawabet Dimashq, also known as Damascus Gate, which is the record holder for the largest restaurant in the world. For reservations

Pachaylen interior

Spice it up ——

Be transported to the heart of Southeast Asia with the exotic flavours of Thai cuisine when you dine at Pachaylen Tucked away on the ground floor of the Eastern Mangroves Hotel & Spa by Anantara, Pachaylen feels a world away from the hustle and bustle of the city. A lot of effort has gone into creating an exotic oasis, from the atmospheric low lighting to the décor and music. In fact, a hostess sits near the entrance playing the khim, a traditional Thai stringed instrument, which sets a deeply relaxing tone, and the intimate atmosphere makes this a perfect choice for date night. As you’d expect from a Thai brand as renowned as Anantara, the signature restaurant is all about creating authentic food and flavours that truly represent the Southeast Asian country. Even before we have ordered, we are treated to a Thai-style amusebouche, also known as miang kham. The server brings over a box filled with colourful ingredients, and shows us how to fold piper leaves into pouches before spooning in the tasty fillings, which include dried shrimp, peanuts, lime, coconut, chillies and a sweet, sticky sauce. We eat it all in one bite and it’s a riot of flavours, with just a hint of spice.

Pachaylen interior

After that, the starters set the bar high for the evening. We begin with the tood man poo kha onn, pan-fried crab cakes with a sweet chilli sauce and cucumber relish. The quality of the raw ingredients is clear; the texture of the meat is smooth with none of the bready fillers you get from lesser quality crab cakes, and the flavours are well balanced, with a nice crisp bite. The satay kai, grilled marinated chicken skewers served with a peanut dipping sauce, are not quite as addictive as the crab cakes, but they are a delicious interpretation of an authentic dish and the slightly chunky, just-spicy-enough dip gives it added depth. The chor muang, flower-shaped steamed chicken dumplings, are a deliciously light option. No Thai meal would be complete without sampling the soups and Pachaylen does not disappoint, with two very different but equally delicious broths. The tom yum kung is a winning dish, a hot and sour soup that showcases the strong, diverse flavours of Thai cuisine. This one had a healthy kick of spiciness, with juicy prawns, mushrooms, coriander, kaffir lime leaves and lemongrass, and tasted light and nourishing. The tom kha gai – chicken soup with mushrooms, galangal, lemongrass and chilli oil – had a similar flavour but felt more indulgent, thanks to the addition of coconut cream. This would be our recommendation for diners who are less familiar with Thai flavours and want a somewhat milder dish. Throughout the meal, the service is attentive yet unobtrusive. At one point, the chef even joins us momentarily to offer his own recommendations based on our palates and preferred level of spice. Pachaylen’s open kitchen is a nice touch, too, as you can see the kitchen team hard at work on your meal. The dish that the chef recommends without hesitation is the gaeng massaman lamb. Massaman curry traditionally tends to have a milder, sweeter flavour than other Thai curries, with a sauce that typically includes tamarind, sugar, peanuts, potatoes and lashings of coconut milk. Pachaylen’s version uses impeccably slow

The tom yum kung is a winning dish, a hot and sour soup that showcases the strong, diverse flavours of Thai cuisine cooked lamb shank, swapping in sweet potatoes for more depth of flavours (and health perks), along with shallots and cashew nuts. It’s a decadent main course, with the meat sliding effortlessly off the bone. For something lighter, try the neua phas naam man hoi, a generous portion of stir-fried prime beef tenderloin, shiitake mushrooms, baby bok choy and oyster sauce. The beef shines through, and the light cooking keeps it tender and full of flavour, while the mildness of the veggies tempers the heavy kick of pepper in the seasoning. Traditionally, dessert doesn’t figure that highly in Thai cuisine, but Pachaylen’s menu does offer a few sweet treats, if you still have room. We recommend going for the classic, authentic khao niao ma muang, a Chiang Rai coconut sticky rice pudding with sweet Thai mango. The base of this dish is gelatinous rice cooked in sweet coconut milk, served with Thai mango. The fresh flavours of the tropical fruit pair well with the creaminess of the sticky rice, and it somehow manages to feel both light and indulgent, with a sprinkling of sesame seeds to add some crunch. For something a little less rich, you could also try the pon la mai ruam mit, a platter of exotic fruits with mango sorbet. As with all of Pachaylen’s dishes, it uses distinct flavours and simple ingredients to transport you to another world.

Located on the promenade level of Dubai Festival City, this stylish spot masterfully showcases French fusion fare. While the oh-sochic décor will create some serious interiors envy, Festival City’s cool laser and water show, from Wednesday to Saturday, serves up even more reason to visit.

Carla Conte

The founder and creative director of Brand Creative shares a designer’s perspective on life in the UAE Since I moved to Dubai from Canada 12 years ago, the emirate has evolved into a place that is at the forefront of design and technology. Given my creative background, it definitely feels like I am living the best life. I find myself continually inspired by the progressive attitude of the region with leading creative talent from all over the world developing projects that aren’t limited in terms of scale, budget and ambition. And with Dubai constantly evolving, there’s always something exciting to look forward to. My professional life is completely manic – I am involved in multiple branding and interior design projects at any given time, be it conceptualising the interiors for a restaurant in London or designing a salon in the UAE capital. But that also means travelling a lot within the emirates and around the region, giving me the opportunity to discover new places. I am always on the lookout for the latest restaurants and activities to try, and being in the business of creating and revamping brands, it’s great to see everything that’s out there. Exploring the UAE through the eyes of a designer is a real treat. Louvre Abu Dhabi is a must-see for its collection of artwork and the stunning architecture. Dubai Design District is also well worth a visit as there is a great programme of art-based events throughout the year, as well as some awesome cafés and boutiques to check out. The Courtyard in Al Quoz is my favourite place for a coffee, the vibe is calm and peaceful but it’s the décor that’s sure to win you over. The murals painted on 2nd December Street as part of the Dubai Street Museum project have transformed the buildings and really bring life to the area, making it a great place to visit. Be sure to also check out Dubai Opera. The structure is beautifully crafted inside out and it’s incredible how the interior can transform so seamlessly in accordance with the event being held. It really is a masterpiece and an impressive addition to the city. When I have some downtime, I love to indulge in a spa treatment or take a walk along the beach or around Dubai Marina. As a new mum, I often visit attractions that entertain young ones as much as they do adults such as The Dubai Mall and the City Walk district. I also love the fact that I can easily access the beach, mountains or desert at any time, all within the UAE. Having recently relocated to Dubai’s Arabian Ranches, you’ll often find me at Maison Mathis, a lovely Belgian restaurant known for its delicious wood-fired pizzas and the fun theme nights hosted throughout the year. In Jumeirah Lakes Towers, I really like Mythos for its relaxed atmosphere and the lovely terrace that makes you feel like you’re dining al fresco in Greece. Also in the area is a new favourite, Couqley, a laidback French restaurant with great food and plenty of charm. I often seem to lean towards European cuisine, it must be my half-Italian side. And in a vibrant city like Dubai, the options to experiment with food are endless. With Ramadan approaching and the emirate’s pace begins to slow down, it’s the perfect time to catch up with friends for iftar, especially as the offering gets better every year. I love how Dubai comes to life after sunset with sumptuous spreads on offer across the city. My favourite has to be Al Majlis at Madinat Jumeirah. The food is great, the décor is beautiful and the ambience is truly authentic, making it a winner on all counts and a must for anyone looking to soak up the serene vibe during this magical time of the year.
