Editor’s note The UAE is now well into the swing of the new season with a slew of fresh events and attractions vying for attention, and, as always, we bring you a round-up of the best experiences in the country, the region and beyond. In this issue, we celebrate with German watchmaker, A. Lange & Söhne, as the maison marks 25 years since the launch of the iconic LANGE 1 timepiece, a milestone that’s also honoured as the rebirth of the brand. Interspersed through the pages, you’ll find A. Lange & Söhne models that have made their mark in the horological universe, before we present key moments from the brand’s history in the photo essay on page 48. Thanks to icons like Louvre Abu Dhabi and Dubai Opera firmly establishing their presence on the region’s cultural scene, there are plenty of opportunities to immerse yourself in this community. One of the biggest highlights this season is the UAE debut of Andrew Lloyd Webber’s classic, The Phantom of the Opera. South African actor Jonathon Roxmouth, who plays the lead, talks to us about the journey of stepping into the shoes of the famed phantom on page 30. Expo 2020 Dubai is undoubtedly one of the UAE’s most talked about events, and this month, we celebrate one year to go with a special feature on page 40. If you’re hoping to make the most of the drop in temperature, we present our pick of the seven wonders of the emirates on page 34, sure to provide itinerary inspiration to travellers looking for more to explore. Then, we bring you the latest culinary news and reviews, and also detail our experience at the steakhouse Suhail in Qasr Al Sarab Desert Resort by Anantara on page 68. Finally, on page 76, we venture further afield to the land that was once only a backpacker’s secret as we recount our recent travel tales in Georgia. If the magazine leaves you feeling inspired, book your next experience with us by visiting myconcierge.com.

CANVAS TIME FOR CULTURE For millennia, man has turned to the skies for guidance. In the Middle East alone, the movements of the sun, stars and moon influenced the lives of the Bedouin people whose very survival depended on accurately reading celestial signals. These elements are woven into the very fabric of modern Arabia even today, and the moon, in particular, occupies a prominent place in local culture. Sharjah Museum of Islamic Civilisation pays tribute to lunar traditions with this stunning mosaic, depicting the night sky and the signs of the zodiac, inside its dome. A deep astronomical connection is at the heart of A. Lange & Söhne’s Saxonia Annual Calendar timepiece which accurately charts the movements of the moon. If kept running, the moon-phase display must be corrected only once every 122.6 years.

Through the labyrinth —— Discover the charms of old Dubai as you lose yourself in the maze of alleyways that is Al Fahidi Historical Neighbourhood – a tribute to the emirate’s past
Visiting the quaint quarters of Al Fahidi Historical Neighbourhood feels like taking a step back in time. Gone are the record-breaking skyscrapers that dominate the emirate’s skyline, replaced instead by traditional structures fashioned out of stone, rustic courtyards and wind towers. Intertwined narrow alleys and cobbled pathways – punctuated with creek views – fan out in every direction, inviting you to lose yourself in Dubai’s beating cultural heart. For a glimpse of life in the emirates as it was years ago, there is no substitute for a visit to Al Fahidi Historical Neighbourhood. But it is not only its traditional architecture that offers insight into the region’s past. Peppered throughout the labyrinthine district are museums, art galleries and kiosks that showcase traditions practised in the days gone by. And it is here that visitors can discover the nation’s humble beginnings and gain a deeper appreciation for the local way of life. Built with traditional materials such as stone, gypsum, teak, sandalwood, palm fronds and wood, the architectural structures found in Al Fahidi Historical Neighbourhood span decades, from the early 19th century to the 1970s.

As you meander the lanes, you’ll notice that most of the buildings have been ingeniously recreated to mimic the days of old. But they seamlessly blend in with the original structures left behind. Feel free to explore at your own leisure and pop into the museums, galleries, cafés and arts and crafts shops lining the streets to make the most of your visit. Previously known as Al Bastakiya, the district has always played a crucial role in the country’s economy. Its prime position along Dubai Creek, with the Arabian Gulf, only metres away, allowed international trade to flourish in the region, transforming the UAE from a humble fishing and pearl diving village to a global metropolis, known for its record-breaking structures and penchant for luxury. Even today, this cultural sanctuary is a status symbol and occupies a strategic position adjacent to the diwan of Dubai’s ruler. Winding through these streets tells a story of the nation’s past that joins the dots to its present, an immersive tale that can only be truly experienced with a visit to this fabled district.

The man behind the mask ——— As Andrew Lloyd Webber’s classic, The Phantom of the Opera, makes its Dubai debut this month, award-winning actor Jonathan Roxmouth shares an exclusive behind-the-scenes glimpse before donning the mask of the phantom
The lights dim, the curtains are drawn and silence takes over. With eyes fixed on the stage, every member of the audience feels a sense of anticipation, eagerly awaiting the series of events about to unfold. But to the man behind the curtain, it’s a completely different story. He leaves himself behind to step into the shoes of a whole new character and transforms, ready to mesmerise every spectator with a gripping tale. For South African actor Jonathan Roxmouth, there are some very big shoes to fill. As the lead in The Phantom of the Opera, the tenor believes portraying the titular character in Andrew Lloyd Webber’s classic is his career’s biggest highlight. No ordinary production, The Phantom of the Opera is regarded as one of the greatest musicals of all time. With over 30 years of stage success, it is a sensation
around the world. And when this iconic production comes to Dubai this month, on October 16, audiences will be able to see why. “I’ve done quite a few shows now, but I’ve yet to see a musical that does what this one does to an audience,” says Roxmouth. Adapted from the 1910 novel by French author Gaston Leroux, The Phantom of the Opera tells the tale of a Parisian opera house believed to be haunted by an entity known as the Phantom, a disfigured musical prodigy who lives inside the theatre. First staged at Her Majesty’s Theatre in London on October 9, 1986, starring Michael Crawford and Sarah Brightman, the show went on to win a string of top awards. In January 1988, the actors took the show to Broadway and repeated its success. Year on year, the musical adaptation continues to win hearts across the world, but what makes it so enduring? The two-and-a-half-hour performance sticks devotedly to the original composition. Its booming drums, progressive

rock and dramatic organ recitals are all seamlessly woven around balletic choreography and elaborate gothic-inspired costumes. “The timelessness of the music and story has stood the test of time,” says Roxmouth. “Aside from updating the technology we use, the show has remained unchanged. The audiences, too, have evolved around it by passing the story down through generations as something to see together. My grandfather passed the Phantom down to me and I will do the same with my future generations.” Since the age of 16, Roxmouth has harboured the dream to play the Phantom. And with this touring show, he realises it for the second time. With his inaugural portrayal of the Phantom, Roxmouth became the youngest English language lead to take on the role. Now, eight years on, he brings life experience to the part and more confidence in carrying the boldness of the Phantom on stage. “Some things are now second nature to me whereas there are other aspects to the role that I find new, thrilling and also heartbreaking. It’s like therapy every night,” says the actor whose physical stature embodies the immense character of the Phantom, complemented by his haunting tenor tones. “Something very interesting happens when you put the mask on. You’re hidden and, therefore, normal rules and consequences don’t apply anymore. You behave differently. The change is instant because there’s a safety in the anonymity of it. It’s almost like a superhero putting on his mask and assuming a secret identity. I am bolder when I put it on. I feel more in control.” But he also admits that two and a half hours in this intense, dark character is heavy. “I’m instantly out of character once the curtains close. I cannot hold on for any longer than that. It is an extremely personal role and the performance is emotionally draining. Of course, it’s rewarding but I do feel like a bare wire sometimes, extremely vulnerable and open when the mask comes off. It’s a mind game, which I find utterly fascinating. This is the essence of theatre, after all.” Roxmouth also adds that transforming into the Phantom has led to deep self-reflection. “He has been dealt a very difficult hand. He makes it work in his solitude but he is human and therefore lonely. This role has opened my eyes to the fact that it isn’t natural for us to be alone. We need people.”

Welcoming the world ——
Set to open a year from now, Expo 2020 Dubai will be a six-month celebration of creativity, innovation and culture from every corner of the globe
It’s been nearly six years since Dubai won the right to host the World Expo and HH Sheikh Mohammed bin Rashid Al Maktoum, Vice President and Ruler of Dubai, promised that the emirate would “astonish the world” with its offering. Since that declaration, details about the event have gradually been revealed and there is a growing sense of excitement, especially given the city’s propensity for the extraordinary. And with just one year to go until Expo 2020 Dubai opens its gates on October 20 next year, the world’s eyes are set on the emirate. Those behind the scenes are buffing up their offering to welcome the millions of people from all around the world expected to visit. Taking place every five years, the World Expo serves as a launchpad for innovative ideas and creations. Dating all the way back to the inaugural edition with London’s Great Exhibition of 1851, the six-month celebration has seen the unveiling of the Eiffel Tower, the Seattle Space Needle, the first television and even Heinz Tomato Ketchup. Similarly, Expo 2020 Dubai hopes to be a platform for more iconic launches. Not only will the event be a showcase for some of the world’s most forward-thinking innovations, from healthcare to sustainability, but it will host intellectual gatherings and conferences, competitions and more. The platform will also see the brightest minds in the world get together to solve some of the biggest challenges facing the planet today, from food shortage to climate change, under the theme ‘Connecting Minds, Creating the Future’.

Organisers expect the Middle East’s first-ever expo to attract 25 million visits, equivalent to the population of Australia. Around 70 percent of visitors are expected to attend from outside the UAE. The country’s first-ever event of this scale, it will also see the largest proportion of international visitors in the 168-year history of World Expos. With 192 nations represented, there will be festivities across the cultures during the event’s six-month run. In addition to National Days, there will also be special celebrations including Christmas and Diwali with unity at the heart of the event.
One of Expo 2020 Dubai’s major events will be a UAE premier – the launch of the first Emirati opera. It will be yet another cultural milestone for the country, which in recent years has seen the launch of the likes of Louvre Abu Dhabi and Dubai Opera. Written by local talent and performed by a global cast, ‘Al Wasl’ explores the UAE’s rich heritage and innovative spirit. E N T E R TA I N I N G AC T I V I T I E S
While the event will address serious topics surrounding the world’s biggest challenges, there will be no shortage of fun-filled experiences. One feature, for example, will enable visitors to try a game of high-stakes pinball with the ‘Mini-Earth’ ball at Terra within the Sustainability Pavilion. The pavilion, on the whole, is designed to take visitors on an emotional journey through forests and oceans, encouraging participants to reflect on their relationship with nature. LANGE 1 in platinum
In the mid-1800s, German clockmaker Ferdinand Adolph Lange founded a new watch manufactory, Lange & Cie., in the town of Glashütte. His purpose was noble – to bring wealth to the impoverished people of Saxony through the creation of a new industry. Little did he know that this landmark moment would forever put his hometown on the map as the birthplace of German watchmaking. As the company grew, so did their popularity. Some of their earliest handcrafted pocket watches were recognised as extremely advanced for their time. But tragedy fell in the mid-1940s when the company’s main production building was destroyed during World War II and the land that housed the workshops was eventually expropriated, taking the brand off the grid. But for a maison that led the industry in its heyday, this did not signal the end. After the fall of the Berlin Wall and the reunification of Germany, Walter Lange decided it was time to reintroduce the family name to the horological universe. He took over the house in 1990 with German-Swiss entrepreneur Günter Blümlein as his partner, sharing his great-grandfather Adolph Lange’s vision to craft the world’s finest watches.
Four years later, the LANGE 1 timepiece was born under his leadership on October 24, 1994, and this date has gone down in history as a milestone moment for the brand. The LANGE 1 was presented as part of four new watches, marking the brand’s debut collection after its rebirth and was very well received. It was an exciting time for the industry as the timepiece brought with it something completely new and unique. All the world stopped to take notice. Featuring a revolutionary dial arrangement, it was the first watch with an outsize date display and off-centre dial for hours and minutes. The asymmetric design was inspired by the famed Five-Minute Clock at the Semperoper opera house where, for 175 years, the clock above the stage displayed the time in a unique double aperture. Bearing all the hallmarks of a classic A. Lange & Söhne timepiece, the LANGE 1 also boasted a three-day movement and a three-quarter plate. It was the perfect balance between aesthetics and innovation that would serve as a benchmark for future timepieces. This ushered in a new chapter for the maison.

In the years that followed, the LANGE 1 family grew, building on the success of the original watch with new models. Now, 25 years later, the foremost LANGE 1 model is still recognised as one of the 20th century’s greatest timepieces. That is why, its aesthetics and movements have remained unchanged. Its popularity turned the LANGE 1 into the cornerstone of the watch family which currently features nine models. They come in various case diameters and are manually wound or self-winding. Additional functions have been introduced over time, such as a second time zone or a unique combination featuring a tourbillon and a perpetual calendar.

Special edition LANGE 1 “25th Annniversary” launched in January 2019
During SIHH 2019, A. Lange & Söhne announced that in honour of the iconic LANGE 1 on its 25th anniversary, the watchmaker would release a new take on existing models within the LANGE 1 family every month of the year until October, limited to just a few watches per edition. The LANGE 1 “25th Anniversary” became the first timepiece to be introduced as part of the limited edition run in January this year. An iteration of the original award-winning watch, it is rendered in white gold and limited to 250 pieces. Special features of the timepiece include a deep-blue printed argenté dial with a recess, blue date numerals and a hand-engraved balance cock with blue lines.
Another prominent feature of the watch is the engraved hinged cuvette crafted from solid white gold. The engraving depicts the Lange headquarters in Glashütte that dates back to 1873, the names of Walter Lange and Günter Blümlein and a relief engraving of the inscription “25 YEARS LANGE 1”. This new limited edition model, including other timepieces of the 25th anniversary series that followed in the months ahead recalls the historic event that put A. Lange & Söhne back on the map of international precision watchmaking in 1994. Each of the models, rendered in white gold, pay tribute to the key milestones in the journey of the LANGE 1 and its family of watches.

The limited edition timepieces boast several hallmarks of the original watch including an argenté-coloured dial in solid silver with printed deep-blue numerals and hour markers, blue date numerals and a blue alligator leather strap with a grey seam. Key touches added to the LANGE 1 family in the 25th anniversary edition run include a bigger dial for the GRAND LANGE 1 and an updated look with a white-gold case. A striking interplay of silver and blue hues features on the dial of the LANGE 1 MOON PHASE. The LANGE 1 TOURBILLON PERPETUAL CALENDAR is differentiated from its older siblings with the addition of a tourbillon behind the dial and a perpetual calendar indication. And the GRAND LANGE 1 MOON PHASE anniversary model brings the moon into sharp focus. Every piece introduced this year has recorded astounding success and as A. Lange & Söhne hopes to lead watchmaking innovations for the next 25 years, the iconic LANGE 1 model will continue to chart a course for the industry to follow.

A name synonymous with luxury, Van Cleef & Arpels has created a legacy encompassing exceptional craftsmanship. Championing designs that are bold, daring and extravagant, it’s little wonder that the French maison has long been considered the jeweller of choice to society’s elite. Each Van Cleef & Arpels creation, from the delicate Frivole collection to the decadent Le Secret, draws from various elements found in nature and art. The performing arts, in particular, have always held a special place at the house. Several collections have been introduced over the decades celebrating the maison’s love for the opera. Paying homage to the house’s enduring relationship with the world of performing arts, two milestone moments were celebrated this year. Firstly, the launch of the Romeo & Juliet collection brought William Shakespeare’s timeless tale of the starcrossed lovers to life in new, awe-inspiring ways. Unveiled during Paris Couture Week, it features a line-up of elaborate clips, earrings, necklaces and bracelets that nods to the grief-stricken world of the Montagues and Capulets. Distinctly Van Cleef in its settings, each piece boasts elaborate constructions and an abundance of gemstones, presented in a variety of styles to create striking patterns. The ornate work evokes references to the city of Verona with its famous balconies and overflowing fountains. But the most figurative pieces are the Romeo & Juliet duo clips, which, thanks to remarkable three-dimensional craftsmanship, come alive in a scene from the play with Romeo presenting a bouquet of flowers to Juliet.

Alessandro Maffi
In August this year, the brand welcomed a new chapter in its three-year relationship with Dubai Opera with a new boutique at the emirate’s hub for all things theatre – Les Salons Van Cleef & Arpels Dubai Opera. Passionate about the origins of the maison’s fondness for the world of performing arts, Alessandro Maffi, managing director of Van Cleef & Arpels Middle East and India, says: “Van Cleef & Arpels began its intimate relationship with ballet and dance over 70 years ago. Louis Arpels, one of the founding Arpels brothers and a passionate lover of ballet and opera, pioneered the idea of precious ballerina brooches. “It is said that, after work, Louis Arpels used to leave the Place Vendôme boutique to go to the Opera Garnier as he was quite fond of ballet and opera. Driven by his passion, he prompted the creation of the first ballerina clips in the 1940s in New York. “He also passed on this fondness for dance and opera to his nephew, Claude, who invited American ballet choreographer George Balanchine to visit Van Cleef & Arpels’ 5th Avenue boutique in the early 1960s. This encounter reinforced our links with the dance universe and was the beginning of several fruitful artistic collaborations in the years that followed.” The new Les Salons Van Cleef & Arpels Dubai Opera boutique is not only a place to browse contemporary creations. It also houses the Patrimony Gallery – a first for the brand in the region – that showcases iconic pieces from early archives as
Romeo & Juliet collection – Giardino pendant
The most figurative pieces are the Romeo & Juliet duo clips well as statement jewellery designed by the house and worn by royalty and Hollywood icons. The gallery is located in the heart of the boutique, symbolic of the centre stage in an opera house. A lavish library completes the boutique, where visitors are invited to discover the rich history of the brand through special exhibits. Spread across an expansive space spanning 222 square metres, Les Salons Van Cleef & Arpels Dubai Opera embodies the very essence of the brand. Drawing from the maison’s creations, the boutique is designed to evoke elegance. The two-storey building’s façade is inspired by a drawing from the earliest Van Cleef & Arpels’ archives. Designed in 1929, it represents a box of jewels. During that decade, the Art Deco concept heavily influenced the maison’s creations and this shines through in the new structure. A metallic mashrabiya graces the façade, resulting in a flawless interplay of light and shadow. Inside, the staircase is

adorned with customised embellishments, adding a final touch of opulence to the space. “Everyone visiting the Les Salons Van Cleef & Arpels Dubai Opera boutique will have an unforgettable experience. It was our intent to bring an immersive and inclusive experience to our discerning customers from the moment they step in. “Apart from our premium selection of high jewellery, special editions and pieces will be showcased at the boutique. Regular exhibitions focusing on the patrimony will also be held. “We recently hosted the Delicate Dancers exhibition – a display of our finest ballerina brooches. Given that dance has been one of our favourite themes at the house, it was only fitting to dedicate our inaugural exhibition to our emblematic ballerina clips,” adds Maffi. Among other highlights this year, the maison successfully hosted the second edition of L’Ecole Van Cleef & Arpels. “Held in Dubai Design District, we offered up to 1,000 members of the public a range of jewellery design courses. We also hosted four new exhibitions over a two-week period delving into the world of precious jewellery. The school also raised over AED300,000 for Dubai Cares in funds garnered through the classes for adults and children. “As the only educational platform of its kind in the world, the objective was to stimulate and inspire aspiring jewellery designers
and artists, enabling them to discover all the secrets of jewellery making, from the first stroke of the pencil to seeing the finished piece in your hands. “After the great success we had in Tokyo, Hong Kong and New York, we wanted to select a city that represents global dialogue and understanding. Dubai is a cultural melting pot, ideal for reaching out to people from a variety of backgrounds and hence it was the perfect location for us. The school helped to push the boundaries of our designs and opened new dimensions of exploration and creativity for our artisans.” Discover more at the Van Cleef & Arpels boutique at The Dubai Mall 04 4252740 and The Galleria on Al Maryah Island 02 6432088.

Downtown feast ——— Gautier Gaschi, executive chef at Address Boulevard, tells us what makes the hotel a signature dining destination in the heart of Dubai’s bustling Downtown district
Collection room, The Restaurant at Address Boulevard Bar terrace, The Restaurant at Address Boulevard
There’s always something excit i ng cook i ng up at Address Boulevard. Nestled in the heart of Downtown Dubai, the hotel is home to an array of culinary concepts promising f lavours from around the world. At the helm is chef Gautier Gaschi who brings more than 20 years of expertise to his role as executive chef. Having worked at several Michelin-starred restaurants across Europe, he oversees the culinary operations at the hotel and works behind the scenes with an expert team to deliver a distinctive dining experience. Tell us about your journey as a chef and how it all began? “I have been fascinated with cooking since the age of seven. As a little boy, I enjoyed helping my grandmother and mother in the kitchen. Their traditional cooking methods have greatly influenced my culinary style. My French heritage has also
contributed to my skills in the kitchen. I come from Alsace, where food is celebrated as an integral part of the local culture.”
Patagonian toothfish
How would you describe your signature culinary style? “This is what I’ve always been taught – you put simplicity together with authenticity and you have the winning formula for every meal. That being said, cooking a simple recipe is not as easy as it might seem because all you have are a few ingredients to create a dish that’s full of flavour.” As executive chef, what does your typical day at Address Boulevard look like? “I oversee all the culinary operations at the hotel and work with a great team at The Restaurant at Address Boulevard. It’s our signature dining venue and we work to deliver an exceptional experience to every guest. My role also involves ensuring everything from in-room dining and treats served at the lobby lounge to catering for banquets flows smoothly. Presently, we’re also getting ready to raise the curtain on two new concepts at the hotel and I’m working with the team to curate an exciting menu overflowing with innovative dishes.”

What inspires the culinary philosophy at The Restaurant at Address Boulevard? “For us, it’s all about quality food prepared with simplicity, creativity and consistency. We cater to all types of palettes and we have food for every mood. The interiors of the restaurant are also designed as such to deliver a dining experience that surpasses the ordinary. When we launched The Restaurant at Address Boulevard, we became the first hotel in the region to introduce the concept of dining in a space designed to resemble a home. Guests can enjoy a refined gourmet experience in the Dining Room. The Library is a great spot to catch up on meetings, while the Game Room and Music Room offer a dynamic atmosphere for socialising. During the cooler months, the outdoor terrace serves as the ideal corner for al fresco meals. The idea behind it was to make sure that every guest feels comfortable, as though they were dining at home.”
What’s the one dish that guests simply have to try? “It’s hard to pick just one. Every dish is amazing. But the roast chicken with truffle and foie gras is one of our most popular menu items and you’ll definitely want to come back for more.” What keeps you busy when you’re not behind the scenes in the kitchen? “Family is a priority and when I’m not at work, you’ll find me spending time with my kids. I especially enjoy cooking for them. Pasta with a simple tomato sauce is one of their favourites and I love preparing it. I also enjoy taking my bicycle around the city. Dubai is home to numerous cycling tracks and if you’re looking to get active outdoors, it’s one of the best ways to make the most of your time.” For reservations or more information 04 8883444 or dine.adboh@emaar.ae

Qasr Al Sarab Desert Resort by Anantara was recently awarded the title of the “World’s Most Instagrammable Hotel” by Luxury Travel Advisor. And a single visit to this retreat in the UAE capital is all it takes to discover why. As you make your way towards the Empty Quarter (or Rub Al Khali), the largest uninterrupted sand desert in the world, this picturesque resort rises up from the fiery orange dunes. Against this remarkable setting, the hotel offers three unique dining experiences. Expect a sumptuous spread for breakfast with dishes from all around the world at Al Waha. The poolside venue Ghadeer features Mediterranean favourites in a cosy, casual setting, ideal for a laidback lunch. Finally, Suhail stands out for its elegance and charm as the hotel’s signature steakhouse, and based on our recent visit, the culinary star of the property. Suhail redefines rooftop dining with its remarkable setting that overlooks the dunes of the Empty Quarter. And one of the best ways to take in the ambience is to visit before sunset, when cocktails are served from 4pm to 7pm, the perfect antidote to a bustling day spent exploring the desert. After you’ve had your fill of the views with your favourite drinks, head indoors, where the intimate ambience, characterised by traditional lanterns and candlelight, lends itself to a memorable dinner. During the cooler months, if you choose to dine on the deck, the scene around you transforms from colourchanging dunes at sunset to a thick blanket of glittering stars in the night sky. As you settle down for dinner, the first thing to arrive on your table is freshly baked bread, served with three buttery spreads – mildly spiced, parmesanf lavoured and lemon-infused. And before you tuck in, your server will reel you off the best menu choices while also explaining the restaurant’s “Sand. Fire. Salt.” concept which stands for the golden dunes surrounding the hotel, the flames that cook up the dishes on offer and the homemade salt blends that complement the flavours of premium meat. Accompanying the food is an extensive list of the world’s finest wines, sure to overwhelm even connoisseurs in the know. In fact, for four years running,

Suhail – private dining room
Pan seared duck breast
Suhail won the Award for Excellence by Wine Spectator for its sheer selection of popular and rare varieties, sourced from premium vineyards around the globe. To start off, our server recommended a light salad; clearly the best choice, given the decadence that followed. Full of flavour, the kale and seaweed salad is made up of edamame, quinoa, egg yolk and edible flowers, finished with a roasted sesame dressing. For your next course, Suhail’s soup selection is tempting, but we chose to skip it and make room for one of the restaurant’s signatures instead – a creamy tagliatelle flavoured with wild mushrooms and topped off with a generous portion of parmesan flakes. Mains see you taking a pick from the venue’s grilled favourites featuring premium meat cuts, from Australian Angus to Master Kobe beef. For pescatarians, there’s also whole sea bass cooked in banana leaves. Given the generous portions, mains are best shared, unless you opt out of starters. We decided to sample the Australian rack of lamb, which our server recommended we pair with the green peppercorn jus. Every bite was a delight, thanks to the juicy lamb, seared to perfection with a few simple ingredients to amplify the flavour of the meat. For sides, we chose the truffle mashed potatoes and sweet potato fries, although the asparagus hollandaise, green papaya salad and steamed seasonal vegetables make for wonderful guilt-free options. While your appetite is sure to be satiated by this point, we advise leaving room for dessert as Suhail’s sweet offering is definitely worth a try. To conclude the evening, we opted for the crème brûlée, the perfect end to a memorable meal, allowing you the chance to truly appreciate the restaurant’s serene surrounds in the heart of the desert as you savour every bite.
From the chef... “At Qasr Al Sarab Desert Resort by Anantara, we cater to a cosmopolitan audience with a wide variety of preferences. But quality produce remains a constant to deliver five-star dishes each and every time. We also make it a point to incorporate indigenous specialities on our menus by using locally sourced ingredients to pay homage to the rich culinary culture of the UAE.” – Chef Louis Badenhorst For more information or reservations 02 8862088 or fbsecqas@anantara.com

The former Soviet state may have gone from backpacker’s secret to mainstream favourite in just a decade, but this charming country in the South Caucasus is home to many hidden gems waiting to be explored

Turtle Lake, Tbilisi
A decade ago, even the avid traveller would struggle to place Georgia outside of the United States. But in recent years, this charming country, straddling Europe and Asia, has become a favourable playground among explorers from the region and beyond. Endless mountainscapes, green valleys and streams of glacial overflow dominate the Georgian landscape while cultural icons, from churches and monasteries to ancient settlements, caves and vineyards await at every turn. But perhaps, one of the destination’s most striking natural features is its mountains. And this becomes clear from that first aerial glimpse of Georgia as your aircraft begins its descent into the capital city of Tbilisi. Lush peaks, both large and small, making up the Caucasus Mountains and engulfed in thick cloud cover, are among the very first sights to greet you upon arrival. Thanks to easy access to the quirky capital – Georgia is visa-free for most nationals and UAE residents – it’s no surprise that travellers flock to Tbilisi for a quick weekend getaway. But if you’re seeking an authentic adventure that goes beyond sightseeing, we suggest you arrive with more time on your hands. While the capital city is everything from chaotic to charming, a single day will suffice to take it all in. A walk through the hillside Old Town is a great way to discover the best of Tbilisi. As you meander down the cobbled streets, Georgia reveals its culturally diverse past, with churches, mosques and beautifully-restored buildings dotting the terrain.
We began our journey at Narikala, the ancient fortress overlooking the city. While you can choose to take a cable car up to the top, the attraction is best explored on foot. A short 15-minute hike to the viewing platform takes you through narrow lanes with locals selling all manner of wares from grape-infused ice cream to authentic souvenirs. And the effort is well rewarded as the entire city below unfolds at the top – think red rooftops, smaller hills, the Mtkvari river and modern icons like the Bridge of Peace. This vantage point also promises an up-close glimpse of the Kartlis Deda or Mother of Georgia monument, a proud symbol of the city featuring a 23-metre figure of a woman dressed in a traditional Georgian costume wielding a sword in one hand to ward off enemies and a bowl of refreshments to welcome friends. After you’ve had your fill of the views, ride the cable car to get back to the base on the other side of the city, where quaint cafés serving up traditional Georgian cuisine can be found in plenty. A paradise for foodies, local favourites such as khinkhali (steamed soupy dumplings filled with meat) and khachapuri (local bread stuffed with different varieties of cheese, sometimes topped off with meat) are ubiquitous. On the journey back, make a stop at Tbilisi’s famous sulphur bathhouses or abanotubani as it’s locally known. Ranging from public baths to more-private luxurious spa experiences, the water comes from Tbilisi’s natural sulphur springs and you can opt for a quick soak, scrub or a traditional massage.

If you’re looking to venture off the beaten path, a visit to Stepantsminda is a must. Still widely known by its old name, Kazbegi, this small town is famous for the iconic Gergeti Trinity Church that punctuates its skyline at 2,170 meters. But expert hikers will find Mount Kazbek calling. Popular among backpackers, the mountain’s snow-capped peak sits at a height of 5,033 metres and backs Gergeti Trinity Church. Local taxi drivers can chauffeur you up to the cathedral, expertly navigating steep bends around the mountain in a short span of ten minutes, but the hour-long easy hike is well worth the
views that greet you from the ancient chapel. Adventure seekers looking to traverse the lesser-explored terrain beyond this point can expect a nine-hour hike to the top of Mount Kazbek. After sunset, this sleepy town completely blurs out and all you’re left with is a quiet evening under the brilliantly-lit starry sky, ideal for an alfresco meal in Stepantsminda’s 15-degreecelsius summer weather. Several fine-dining restaurants at the base of Mount Kazbek serve up Georgian and Turkish favourites from hearty stews to succulent kebabs, perfect for a chilly evening.

Borjomi Central Park
Borjomi Central Park’s star attraction is its natural mineral water source overflowing with sulphur-infused groundwater The next stop on our journey, Borjomi is one of the country’s favourite spots, extremely popular among locals seeking a weekend getaway. Home to five-star wellness retreats, the resort town sits on a natural spring known for its healing powers and is frequented by people looking for relief from various health problems. Borjomi Central Park at the heart of the city is its calling card. Dating back to 1850, the park’s star attraction is its natural mineral water source, Ekaterina Spring, overflowing with sulphur-infused groundwater pumped directly from the earth’s depths. Here, you’ll find people queuing up for a glass of water or ready with empty bottles to take some home with them. If you walk upstream from this point, three-kilometres deep into the park, you’ll encounter the Adventure Trail that leads right to the Tsar’s Sulphur Baths. Home to the royal Romanovs in the 19th century, the attraction has been transformed into an open-air swimming pool with hot spring water filtering in and out. Once only accessible by Georgian royalty, the spring is open to the public today. So if you’re looking to take a dip in its warm waters, be sure to bring your bathers and towels along.

Colchis Fountain, Kutaisi
Georgia’s third most populous city (but perhaps the most charming), Kutaisi, was our fourth stop. Centuries-old cathedrals, including the oldest 11th century Bagrati Cathedral, contrast with modern architectural marvels, but somehow it all fits together perfectly. Its roads are bustling by day and night, and there’s an abundance of things to do from shopping the world’s biggest brands in the city centre to scouring local markets for coffee, spices and homemade wine. Georgian local candy, known as churchkhela, a candle-shaped bar made out of fruit pulp and stuffed with nuts, makes for wonderful edible souvenirs. Kutaisi serves as the ideal base to explore some of the country’s westernmost attractions. 20 minutes away from the centre lies one of the world’s biggest natural wonders, Prometheus Cave. It was discovered by a local explorer in 1984 and visitors today are able to traverse its 1.4-kilometre-long underground path on a 30-minute guided tour to discover the many different geological formations inside. The cave is a succession of six brilliantly-lit chambers with stalactites and stalagmites jutting out from the ceiling and floors. The walking path concludes at an underground lake, where you can either exit the cave or continue onwards by boat to find cave pearls and petrified waterfalls. Continuing on our day trip from Kutaisi, Okatse Canyon was next on our list. But it’s often overlooked given the winding drive up the mountain through narrow roads followed by an hour-long hike through mountainous terrain, sometimes over wobbly paths at the edge of the cliff. At the end of the hike, a 700-metre walkway, suspended by iron bars from the edge of the mountain, projects over the canyon. If you fear heights, be sure to skip this one as the view of the deep valley below the see-through footbridge alone

can make the brave go weak at the knees. But that’s what makes Okatse Canyon a spectacle. Once you’ve stepped into the territory, you leave the throngs of tourists behind and truly feel one with nature, cut away from the rest of the world. Perhaps the most breathtaking moment of it all is the culmination of the walkway into a viewing platform that hangs right in the middle of the canyon, offering views of the flowing water below. But if you’d rather skip the adrenaline rush, the nearby Kinchkha waterfall also offers some wonderful photo opportunities with great views. Down south from this scenic spot, you’ll find Martvili Canyon offering walking trails around a 300-metre long track through the trees and boat rides over a deep-green lake. While you can choose to swim and dive into the chilly waters, a boat ride will take you deeper into the attraction through striking gorges and caverns, quite unlike anything you’ve seen before.

Little Miss India, Fairmont The Palm
Kai Winkler Fairmont The Palm recently appointed Kai Winkler as General Manager. Read on as he tells us how Dubai has amazed him in the short span of time he’s been here
Dubai is an exciting lifestyle hub in the Middle East, offering the ideal work and social life balance to those who come here to make a living. The emirate is always on the go with constantly evolving infrastructure and connectivity. And a lot is still being done to promote Dubai as the ideal destination for global talent. I only arrived a few months ago and dived straight into my role as General Manager at Fairmont The Palm. But in this short span of time, Dubai hasn’t failed to impress me. I now understand why the city is exceptionally popular among expatriates. Almost every major international corporation seems to have a base here, offering plenty of opportunities to build a career. What also makes it easy to blend in is the multicultural environment, where people from all over the world are accepted. Lastly, the city’s safety and security are second to none. And so while many come here in pursuit of a higher standard of living, they end up making Dubai their second home. I’m looking forward to exploring everything the city has to offer. But having just started, I prefer spending a certain portion of my free time at the hotel to interact with our guests. That being said, the hotel itself has many facilities and balancing the long working hours with workouts at the fitness club, leisure activities and good food is always a good idea. Little Miss India is now my go-to restaurant. Since I started at Fairmont The Palm, the venue has become my favourite, thanks to the wholesome Indian dishes on the menu. And the quirky setting just adds to its wow factor. Venturing outside the hotel, the historic parts of the city by the waters of Dubai Creek have certainly caught my attention. It’s hard to imagine skyscrapers in the heart of the desert, but somehow, the past blends beautifully with the present, and the local culture and rich heritage fits perfectly with everything shiny and new. You can zoom through electric-powered cars on the streets, ride camels over golden dunes, hike through mountains and lush wadis or settle in for a luxurious spa treatment, all in the same destination. And with year-round sunshine and the stunning coastline, there’s never a dull moment in Dubai. The UAE capital also has a lot to offer. As a history and culture buff, Sheikh Zayed Grand Mosque in Abu Dhabi truly amazed me. And in keeping with the cultural theme, the neighbouring country of Oman is also well worth a visit. Just like Dubai, despite commercialisation in various parts of the country, it still retains its originality, allowing the local culture to shine through. fairmont.com
