BUILD A BASE

Not all pigs are the same. Heritage pigs are a breed of pigs that can be traced back to before industrial farming. Cochon 555 (p.53) is not only a culinary competition but a delicious opportunity to learn all about heritage hogs while dining on them. Five chefs cook 1,500 pounds of pork leaving no piece behind. All dishes are paired with wine, craft beer, and cocktails. In addition to the mouthwatering pork, drinks, and notable judges, guests will enjoy pop-up experiences every 20 minutes featuring ramen and rib-eye bars, a rum cart, dessert stations, and more. Luckily there is no such thing as too much pork, so make sure to also visit Baconfest Chicago (p.53). The cured meat madness is back with over a hundred chefs creating delicious bacon concoctions that will include dishes like Iberico bacon and foie gras parfait, barbecue bacon meatballs, bourbon-glazed smoked pork shoulder tacos, and bacon churros. Take a break from the pork and Chicago Beer Classic. î
